ast I recall, it was just Halloween and now we’re already well into November — time is flying by quicker than we know! Now, I don’t know about you, but my taste buds seem to be changing along with the seasons. I find myself craving certain foods that I normally wouldn’t crave any other time of the year, one of them being squash. Quite random, I know, yet squash seems like the perfect ingredient choice as of late — it’s diversity is amazing. Butternut squash, for instance, is a winter squash that can be roasted, toasted and also pureed or mashed into soups, casseroles, pies and more. Yellow summer squash is just as popular, and highly regarded for its mildly sweet and watery flesh. So, this week, grab hold of your taste buds (thank goodness we don’t have to

As soon as I set foot in JJ’s Bistro & French Pastry on Waialae Avenue, I knew that I was in for a treat — literally. This well-known eatery has been enticing the appetites of many with its sinfully sweet pastries, all thanks to executive chef and owner JJ Luangkhot. This award-winning chef blends exquisite European flavors with local flair, resulting in impeccable dessert creations. And with more than 45 dessert items on the menu, ranging from the famous Chocolate Pyramid to the Chocolate Banana Confit, Chocolate Lilikoi, Banana Haupia and more, you can’t help but relish in the sweetest of fantasies. This week, just in time for the holidays, Luangkhot surprised me with a contemporary culinary work of art, perfectly highlighting squash at its finest. Enter Squash Custard with Chocolate Ganache ($5.25). “The holidays are a very special time of year, and I wanted to try something unique and different,” Luangkhot says. “Squash is very similar to pumpkin, so I thought it was a good substitute.” This monthly special, made especially

for Ono, You Know, is definitely worth trying, as a squash pie is hard to come by. The squash itself sits at the base of the pie, and it’s intermixed with the creamiest of custard. The dessert is then finished off with a chocolate ganache topping which adds an extra hint of zest to Luangkhot’s onolicious masterpiece. “There are so many ways to utilize squash in your cooking or baking,” he adds. “Squash soup is very popular, but I thought, why not try something new? Customers also will be able to find the Squash Custard Pie at Le Cacao Bistro, just down the street.” Finally, the holidays simply aren’t the same without a cup of eggnog! Max’s of Manila Last weekend, I had the privilege of attending the FAMES (Filipino American Multi-Ethnic Society) gala at the Hilton Hawaiian Village. The evening was fabulous, as I spent time with wonderful friends and helped honor talented and well-deserving individuals in our community. Needless to say, I left with a severe craving for my favorite Filipino foods! Undoubtedly, this week was the most opportune time to pay a visit to Max’s of Manila! Also known as Max’s Restaurant, this Philippines-based eatery takes pride in its renowned fried chicken and
Filipino dishes, and with more than 120 branches in the Philippines, and other locations nationwide, this restaurant has it all. I couldn’t wait to treat myself to pancit, adobo, Max’s famous fried chicken and, of course, Max’s house specialty of Pinakbet. “Pinakbet is the Ilocanos’ contribution to Filipino cuisine, and other items such as Kare-Kare originated from other parts of the Philippines,” says Elizabeth Joven, operations manager of the Dillingham location. – See page 12

t’s that festive time of year again when the air is beginning to get a bit cooler and appetites are growing eager with anticipation of Thanksgiving. This year, Zippy’s Restaurants once again joins hungry diners in welcoming the holiday season with its elite Thanksgiving Meals To Go Packages. Zippy’s has been an essential part of Hawaii’s ohana since 1966 when its originators Charlie Higa and his brother Francis opened the first McCully location, providing the best in local favorites. And as Thanksgiving day fast approaches, Zippy’s dedicated team of employees is working hard to put together a grand holiday meal all its own. With our mouths watering at the mere mention of moist and flavorful turkey with all the fixings, Dining Out recently joined Zippy’s marketing manager Jeanine Mamiya-Kalahiki at the table where she dished out all you need to know about Zippy’s Thanksgiving Meals To Go Packages — promising to make your Thanksgiving dinner one to remember. DO: How and when did the idea for Zippy’s Thanksgiving Meals To Go Packages come about? Mamiya-Kalahiki: We started serving our Thanksgiving Meals To Go Packages in November 1998. Back then, we had a department at select Zippy’s locations called “Zippy’s to Go.” The concept was to provide convenience to families by offering foods that are prepared and ready to reheat — the convenience of take home meals. It was designed for purchasing meals for small families. Then we wanted to do something for Thanksgiving, and this is when we started the Half Turkey Packages. In 2002, the Whole Turkey Package was added because of customers’ requests.

“We are always updating the menu — featuring different cooking styles — and we also follow the trends of what people like right now, such as healthy food with no MSG,� Ma says. “It’s hard to do 100 percent no MSG with Chinese food (because of the sauces), but we try to follow what customers like so they can request that.� Lung Fung’s innovative dishes set the eatery apart from others, according to Ma. “A lot of restaurants do really traditional (dishes) but I always try to do something new,� he says. “I always choose to ask the customer what they like; if people like it, we most likely put it on the menu.�

This theory of operating by customer feedback, coupled with the eatery’s banquet menus, led Ma to create a special, dine-in only “open menu,� in which customers can customize their own party menus. According to this menu, customers receive one free choice of either a lobster or an order of Walnut Shrimp with the purchase of any four entrees. “With the holiday season coming, we want people to choose their own menus for parties,� Ma says. “While we do have set banquet menus, this menu is more open; customers can choose their orders.� The “open menu,� as Ma refers to it, is categorized by appetizer, soup,
seafood, casserole, fowl, beef/pork/lamb and vegetable entrĂŠes. Customers can pick any four of these items to receive the free lobster or Walnut Shrimp. Appetizer choices include Crispy Gau Gee ($8.95; 10

We have a Pork Chop with Garlic and Chili ($12.95) and a Crispy Garlic Shrimp ($14.95). We make so many items with garlic chili.” While Lung Fung has always promoted its “open menu,” Ma encourages customers to take advantage of the free lobster or Walnut Shrimp
deal, especially as the holiday season approaches and people plan for Christmas parties. Not only does Lung Fung provide a variety of banquet menus — in addition to the “open menu” — but the eatery’s location is ideal for large parties, as there is ample free parking. “A lot of people choose from this special menu because of the lobster,” Ma says. “Some people don’t want to touch the shell because it’s too messy; that’s why we keep the option for people to have the Walnut Shrimp instead of the lobster. A lot of places sell lobster for $10.95 with the purchase of another dish, but we do it our own way here. It’s good to have a party here (at Lung Fung); you don’t have to worry about inviting a lot of guests (with all the open space).” For customers who opt to order from the eatery’s regular menu, Ma recommends that you view the complete selection on Lung Fung’s website. The restaurant has a huge selection of entrées, including many seafood dishes. “We are a neighborhood business trying to serve the neighborhood better,” Ma states. “We changed from a chop suey restaurant to one that features more seafood and Chinese cooking.”

One of Kaew’s Thai Villa’s most popular dishes, and one of Anuttsara’s personal favorites as well, is the Grilled Salmon Filet, Panang ($12.50). The dish features a succulent piece of grilled salmon, bathed in a panang sauce with coconut milk and full leaves of fresh basil that perfectly complement the slightly spicy flavors. Another popular dish is the Whole Fish (Pla Sam Rod), which is a whole deep-fried Red Snapper with the house special sweet and sour sauce ($25 to $30, based on size). he restaurant may have just opened its doors five months ago, but owner and chef Kaew Anuttsara brings years of cooking experience and knowledge to the kitchen. She first became interested in cooking while watching her father prepare meals as a child growing up in northeast Thailand. “I used to see my dad cooking, and I wanted to cook just like my dad,” Anuttsara says. “I loved my dad’s cooking.” As she got older, she started making meals for her family. She then went on to study culinary arts and has trained with some of the best Thai chefs. “I love to cook for the people,” Anuttsara says. “I love to see people happy when they eat my food.” In addition to her passion for cooking, Anuttsara also brings her love of healthy ingredients to her dishes. “I love fresh vegetables,” Anuttsara explains. “I don't like oil, and I don’t use MSG at all. I want my food to be healthier.” Kaew’s Thai Villa gets much of its produce from local farms. Anuttsara gets many fresh vegetables from friends and family who work on local farms. And, she goes to the farmer’s market daily to gather fresh ingredients. Anuttsara says that one of the healthiest dishes at the restaurant is the Tom Yum Soup that is served with chicken or vegetables ($8), shrimp ($10) or seafood ($13.50). Tom Yum Soup features kaffir lime leaves, lemongrass, cilantro, ginger, tomato and mushroom. “I just want people to eat fresh and healthy food,” she says. “These are simple dishes, but dishes that are fresh and taste good.”
Hit the jackpot at The Mandalay tional. The vegetarian roll that arrives in a bamboo steamer is more of a surprise. The plump dumpling filled with hunks of tofu, bean curd, black mushroom and baby corn is almost bursting from its cabbage leaf wrapping. A bite into that luscious bundle rewards the palate with an explosion of warm broth from the spongy tofu (we’re told it’s made from bean sprouts) and then there’s a crunch and a satisfying chewiness as your teeth hit the corn and the mushroom. At our request for something vegan for the main course, our host, owner Linda Chan, feels the challenge. She wants to offer us the popular mu shu dish, but there’s no way around the eggs. She finds a quick solution: Vegetarian Lettuce Wrap ($12.95, not on the menu, must be specially ordered). A plate of six rounds of iceberg lettuce and a dark plum sauce arrive accompanied by a heaping plate of something grainy-looking — it’s just a tan heap, no beautiful flourishes or variety in shape or color. My companion and I each grab a piece of lettuce, spread on a spoonful of the deep purple sauce, lay on some of the mystery filling and are rewarded with a

zesty mouthful of nutty flavors in assorted consistencies, followed by a delicate hint of wokfried smokiness. “The filling is water chestnuts, chestnuts, bamboo shoots and mushroom,” reveals Chan. “We stir-fry it with garlic and onion.” The lettuce is a lighter way than the mu shu wrap to hold it all together and the plum offers a delightful tang. In the end, we had both eaten to our content. With a toast of our tea cups, a few sips of the jasmine brew rounded off a great meal. We’d made a gamble and with Mandalay we hit the jackpot.

Kenny’s off the chart entrees By Alana Folen hen it comes to an establishment like Kenny’s Restaurant, which has been a staple in Kalihi for the past 45 years and counting, it’s rare to come across a special dish that has yet to be sampled by many. illion restaurant, a Korean dining institution for 25 years, may not sound like the place for pupus. Yakiniku, sure, but quick bites of goodness to share with friends? Sure. After all, what is Yakiniku other than selfprepared pupus? The appetizers begin as soon as you order. Each meal comes with a meal-in-itself collection of sides like potato salad, seaweed salad, kim chee raw crab, cuttlefish and bean sprouts. If this isn’t enough pupus for you, the menu runs the gamut from the familiar to the exotic. The crispy Fried Man Doo ($5), Cold Tofu ($5), Kim Chee Pancakes ($15), and the Fish Jun (a pan-fried eggbattered Mahimahi for $12) are easily recognizable as chopstick-friendly starter dishes and quite tasty. But how many places offer Frozen Sliced Raw Beef ($12) and Steamed Sliced Pig Feet ($17)? Don't worry, you don’t need to be Andrew Zimmern to enjoy these traditional and tasty treats. The Rice Cake with Spicy Sauce ($12) is a big-plate dish just right for sharing. But be careful, it is spicy. And I mean SPICY! The mochi-style rice bathing in Go Chu Jang (a traditional chili paste sauce) is tender and bursting with flavor. Did I mention it was HOT?

Million offers nine varieties of this popular rice dish, and I can tell you from experience, these things are good. The combination of meat — you can chose from chicken, short ribs, spicy shrimp or beef — vegetables, egg and rice results in a moist and fun-to-eat dish that is perfect for center table sharing. The best part, of course, is the crispy rice on the bottom of the bowl that adds a nice textural change to the otherwise soft bowl of goodness. Remember, pupus don’t have to be finger foods from a segregated section of the menu. Appetizers are about fun and sharing no matter their size, presentation or method of delivery.

inone Mizunone has been a growing favorite in Hawaii for nearly four years, and much of the reason is because of its dedication to serving home-style Japanese comfort food. “Home-style cooking to me is about having good times with friends and family in a comfortable place,” says operations manager Eiki Tamaki. Some of Hinone Mizunone’s popular comfort foods include Chicken “Ama-kara Age” ($11), which consists of crispy fried chicken seasoned with grated daikon and topped with a sweet ginger sauce. The restaurant also is known for its Sizzling Hamburger Steak which consists of ground beef and pork, touched with a demi-glaze sauce. What should be noted however are the new sushi additions to the menu which include Spicy Tuna Roll ($7.25), Salmon Roll ($7.50) and California Roll ($6.25). “This is local style sushi. We do specialize in home-style cooking, but we started to do a little sushi here, and local people love sushi,” says Tamaki. “The sushi is really starting to get popular, and people are starting to know that we offer it.” What helps Hinone Mizunone’s sushi dishes stand out is its trademark rice. “We’re known for our rice. We cook it in an old-fashioned pot, in the old-fashioned style. We have a rice warmer, but no rice cooker, so we actually have to time it and let it cook on high heat and then low heat, and let it sit and settle. Hawaii is a rice culture just like Japan, and that is the reason why we started to cook our rice like this,” adds Tamaki, who also points out that as of Nov. 20, Hinone Mizunone will be open daily for both lunch and dinner. “We’re not like some Japanese restaurants that close in between lunch and dinner, we like to stay open for our guests.”

Pinakbet ($8.95) is a splendid serving of mixed vegetables of yellow squash, bitter melon, eggplant, ong choy and okra sauteed in shrimp paste with tender pieces of pork and/or shrimp — similar to a stew. “We sell 20 to 25 servings a day,” Joven says of this dish which basically equates to a Filipino fiesta in your mouth. “It's very healthy and it's made fresh every day!” Vegetarians also will be happy to know that Pinakbet can be served with only vegetables. ealthy dishes infused with fresh flavors reign at Curry King, located in the food court at Ward Warehouse. The eatery, which opened Sept. 1, has wasted no time attracting crowds of locals and tourists with its Japanese cuisine dedicated to using natural ingredients.

“I don’t put MSG in my cooking,” says manager and chef Shane Young. “The thing about curry is you have to make it fresh. Although the eatery’s name is “Curry King,” its signature dish is the Paitan Ramen ($6.25). For any of the eatery’s ramen dishes, customers can choose either a miso base or paitan (white soup) base, but the Paitan Ramen 4 remains the most popular. “‘Paitan’ means ‘white soup;’ it’s a porkbased soup that simmers until it turns a natural white,” Young says. “There’s no artificial coloring, and no artificial flavor is added.” Curry King’s Paitan Ramen contributes to the restaurant’s uniqueness, Young states. “In the Japanese culture, the soup base is the most important ingredient of the ramen,” he explains. “That (the soup base) makes a ramen unique. In Hawaii, everybody likes shoyu ramen, but this (the Paitan Ramen) is something different and it’s healthy. (Here at Curry King), people can eat healthy.” Promoting healthy eating is part of Young’s vision for the restaurant, as many of the curry entrées are served with a tossed green salad, pickled vegetables and rice. “Our business features dishes that are fresh and healthy,” he says. “With the curry plates, I include a salad so people can eat something light. They have a meal, but they also have a salad, so it’s not an oily addition.” Curry dishes popular among customers include the Chicken Katsu Curry Rice ($7.55) and the Salmon Katsu Curry Rice ($7.55). The Sautéed Garlic Butter Salmon ($7.25) is another one of the eatery’s specialties. “We bread our katsu dishes right on the spot, right after the customers order it,” Young says. “We bread it right away so it doesn’t get soggy. People taste the difference; it’s crispier if we bread it (immediately).” While the menu at Curry King includes

a variety of ramen — Shrimp Tempura Ramen ($7.88) and Mabo Tofu Ramen ($6.88) — as well as Curry Rice dishes, Curry Ramen dishes, specialties like Pork Yakisoba ($6.55) and donburi entrees, Young is always looking for new dishes to add to his menu. “If I were to go to a restaurant, I would look for new things, so that’s my same vision — I want to put more items on the menu so people have a variety of new and different things (to choose from),” he says. In addition to expanding its menu, Curry King strives to draw customers with its reasonable prices. Currently, the eatery is featuring a Curry & Ramen Combo Set, in which customers receive a mini ramen, four pieces of gyoza and their choice of a mini curry plate. The choices for the mini curry plate include the Mini Croquette Curry, Mini Shabu Shabu Beef Curry and the Mini Spam Katsu Curry. “You get ramen, gyoza and curry for only $9.55, so that’s pretty reasonable,” Young says.
