appy Sunday, Ono readers! Following up on last week’s column on my New Year’s resolutions, let me just say that I’ve been working out at the gym at least three times a week to the point where my legs and arms feel like Jell-O — yet, I guess you can say that the pain is all worthwhile, right? And as far as healthy eating goes, I’ve increased my vegetable intake by multitudes and stay away from all carbs in the evenings. To be honest, I’m enjoying this new lifestyle, but it’s definitely hard work! Although, I have the dedication to maintain this health regimen, discipline is a whole other story. We all have guilty pleasures, especially when it comes to food, and

sometimes we just have to give in! So, this week, I gave in, in moderation, of course, to my favorite sandwich of all time — the BLT! The standard BLT is comprised of five ingredients: Bacon, lettuce, tomato, mayonnaise and bread (hence the name BLT). And to spice it up some, these ingredients can be altered according to personal preference, whether the bread be toasted, or by even adding an extra condiment or two. Yet, one thing’s for sure, this top-notch sandwich is delicious no matter what! Without further ado, bring your appetite and let’s go ahead and deconstruct a few of the most Ono, You Know BLT sandwiches at some of the best establishments in town!
Sam Choy’s Breakfast, Lunch & Crab When it comes to all-American and local favorites, celebrity chef Sam Choy makes it just the way mama used to, but with his own special twist. Here at his renowned eatery on Nimitz Highway, Choy draws in a crowd of both locals and tourists alike who want nothing more than
a taste of his mouth-watering signature creations, such as Fried Poke, Sam’s Favorite Burger, fried rice and more. Let’s make it clear that Sam Choy’s offers much more than merely breakfast, lunch and crab — there’s surely something on the menu for everyone to savor, no matter how picky an eater you may be. On my most recent visit to this happening eatery, complete with a brewery and an open kitchen where you can see your meal prepared right before your very eyes, I was craving nothing more than Da “BLC” Sandwich ($15.95). Comparable to your traditional BLT sandwich, Da “BLC” Sandwich is just as onolicious, if not more, when you add Sam’s own creative spin to the recipe. “Da 'BLC' Sandwich originated from Sam’s idea and personal recipe,” says general manager Jeffrey Gaspar. “It’s only available for lunch, but is one of our most frequently requested dishes.” Wrap your head — and mouth — around this: A toasted double decker sandwich, cut into fourths, on white or whole wheat toast, stacked high with crispy bacon, lettuce, tomato and a savory crab meat salad. “This is a Sam Choy’s original and has been on the menu since I can remember,” Gaspar recalls. And believe me, as hungry as I was, I couldn’t wait to get my hands on this outof-this-world creation, because whenever
you have bacon and crab in the same sentence, you know it has to be good! The addition of the crab meat salad to your typical BLT sandwich is over the top — in a great way. It just brings so much more to this already irresistible creation. “The crab meat salad consists of blue crab meat, some mayo and a touch of secret seasonings,” Gaspar says. “The taste speaks for itself.”

Big City Diner Big City Diner goes big on taste with a menu that offers just about everything under the sun. Providing a fun dining experience for the whole family, Big City Diner first opened its doors 13 years ago in Kaimuki under the leadership of president and owner Lane Muraoka. Now, with five locations islandwide, including eateries in Kailua, Ward, Waipio and Pearlridge, as well as Kaimuki, there’s no hassle when you want to upgrade your appetite to BCD status. Trying my best to be healthy, I was hit with a die-hard craving for some crispy, hearty, delicious bacon — and no, scattered bacon bits atop a pile of salad just wouldn’t cut it this time. devour strips upon strips of this guilty pleasure. Yet to have peace of mind, I thought why not keep it somewhat healthy and opt for a BLT sandwich instead of a bacon burger. There, now I can satisfy my bacon fix while also consuming some veggies. Perfect. “Our BLT sandwich ($8.99) is actually not on the menu, but by word of mouth it’s garnered a good reputation, and those who know about it frequently request it,” says chef Dennis Franks of the Pearlridge location. So, now that the secret is out, believe me, this is some good stuff. And after a couple days of hard-core workouts, I was beyond thrilled to be able to finally bask in the glory of marvelous bacon! Yum! Imagine layer upon layer of eight strips of bacon, four slices of tomato and two pieces of lettuce nestled safely within two pieces of Texas toast, and finished off with a spread of mayo. Sometimes it’s the simplest pleasures in life that are the best. The sandwich in itself is quite a meal, but, of course, this premier establishment goes all out by also offering a heaping mound of french fries and a pickle — American classics that we’ve all grown to

eel as if you’re on top of the world with a dining experience like no other as your taste buds soar to new heights. As Hawaii’s only revolving restaurant, Top of Waikiki has been presenting diners from across the globe with revolutionary cuisine that goes beyond the norm. Eclectic in nature, the enthralling three-tiered restaurant stands on the top floor of the Waikiki Business Plaza, and since its inception in October 1965, this award-winning establishment continues to present stellar meals with a breathtaking view to match. Top of Waikiki executive chef John Neff, who took over for former head chef Sean Priester in 2009, proves that decadent cuisine spans cultural boundaries as he infuses a variety of worldly cuisine into his menu. “I revamped the menu about three months ago,” JAN. 15-21, 2012
says Neff, who has more than 15 years of experience in the food service industry. “I want to give our guests a good variety of cuisine — there’s some hearty Italian dishes that I’ve incorporated into the menu, and I’m also really playing up island fusion,” he adds. “For example, I’ve infused many Asian flavors with French flavors. I just want to cater to all palates.” Open nightly from 5 to 9:30 p.m., this Waikiki landmark bustles with a full house, seating close to 200 diners on all three levels, where guests can take in a complete picture-perfect, panoramic view of Waikiki as the restaurant makes a full but subtle 360-degree rotation every hour. “I grew up in the kitchen. Cooking has always been a passion of mine. My mom is a good cook and my grandparents were good cooks,” says Neff, who was raised in Mililani and graduated
from Mililani High School. “Having grown up on Oahu, I know all the local flavors and have been able to incorporate that with the culinary experience I’ve gained on the Mainland. Using fresh, local ingredients is essential in my cooking.” Neff attended The Art Institute of Seattle, where he received his culinary training, and has an extensive resume at that. He’s associated himself with renowned chefs such as Roy Yamaguchi, Michael Mina, Anthony Amoroso and Chai Chaowasaree, having worked for Roy’s at the Westin, Seattle; Nob Hill; MGM Grand, Las Vegas; Fiamma, MGM Grand Las Vegas; and Chai’s Island Bistro. “I'm inspired by life experiences, especially eating out and traveling. My last big food trip was to Napa Valley, which inspired me to create some new dishes. I get bored easily, so it’s fun to change up the menu every now

and then,” he says. Neff is a master at transforming simple, everyday ingredients into dishes with five-star ambitions at affordable prices. “Before it was always about the view here at Top of Waikiki, but now I think I’ve brought the food up to par to where the view’s at. People are coming in here and are being blown away by the cuisine,” he exclaims with a smile. And Neff has much to be proud of: He along with his sous chef Sean Walsh and the rest of his highly skilled culinary team have transformed the menu into a culinary mecca all its own that is definitely worth sampling. A plethora of new appetizers await patrons, including Seared Scallops & Foie Gras ($19), Anise Braised Pork Belly ($14), Seafood Ceviche with Avocado & Grilled Ewa Sweet Corn ($14), Grilled N.Y. Strip Steak ($19), Camembert En Croute ($15) and more.

“I’ve also added a Garlic Shrimp Caesar Salad ($14) to the menu, which is now our bestselling salad,” Neff says. “I just want to take all different cuisines and bring them together, and find a way to make it taste good.” Neff also effortlessly creates beautiful renditions of Cioppino with Linguine, Herb Roasted Chicken, Braised Leg of Lamb Rigatoni and Blue Moon Braised Pork Osso Bucco — all new entrees to grace Top of Waikiki’s ever-evolving menu. Cioppino with Linguine ($38) hold its own as the best-selling pasta with seared day boat scallops, shrimp, fresh island fish, calamari, New Zealand mussels, and crab in a roasted pepper and tomato seafood broth with garlic crostini. corn bechamel and a caramelized onion jus, and Blue Moon Braised Pork Osso Bucco ($33), consisting of smoked bacon, lentils, apple confit, roasted baby carrots, orange gremolata and pork jus. According to Neff, the osso bucco pairs perfectly with Kunde Estates 2006 Merlot. With close to 100 varieties of vino on Top of Waikiki’s extensive wine list, wine aficionados appreciate the wine pairings for each entree noted on the menu. “I’m always experimenting with food and trying to make the restaurant better,” Neff says. “We’re doing some cool stuff here, and I can only hope for our cuisine to get better and better.” All fear of heights aside, Top of Waikiki keeps surpassing its limits; for the sky is the limit here, and there’s no where to go but up!

Gung Hee Fat Choy! Celebrate Chinese New Year (which this year takes place Jan. 23) with some delicious traditional Chinese dishes at Lung Fung Restaurant in Niu Valley. A popular item during New Year is Monk’s Food Jai ($10.95) which is a vegetarian dish made with bean curd, long rice, mushroom, tofu, cabbage, lotus nut, water chestnut, carrot, snow pea, bamboo shoot and topped with sesame seeds. “People eat this during Chinese New Year for good fortune and good luck,” says manager Eddie Ma. “Our Jai is a recipe from our chef “Mister Hu,” who is from Chung San, China.” While at Lung Fung, you’ll also want to try some of its signature dishes, such as Crab with Garlic and Chili (seasonal),

which is deep-fried to a crispy, flavorful taste; and Pot Roast Pork or “Kau Yuk” ($11.95), which has a soft texture that just melts in your mouth. “Our Kau Yuk is our chef’s specialty. It’s made in the way they make it in his hometown (in Chung San), which is very famous,” explains Ma. “The taste is a little sweet, and there’s not too much gravy. It’s cooked in the traditional Chinese style.” A special Chinese New Year Menu for 10 people is available for $178 featuring Seafood with Tofu Soup, Lobster with Ginger and Onion, Crispy Whole Chicken, Beef with Young Ginger and Pineapple, Steamed Fish Fillet with Ginger, Salt and Pepper Shrimp, Choy Sum with Meat Sauce, Garlic with Shrimp Fried Rice, and dessert.
Lung Fung Restaurant also offers lunch specials, daily specials and catering for all occasions. There is a private room that can seat 12 people, lots of parking and a full service bar as well. However, customers can bring in their own alcohol with a $1.50 corkage fee per person. For those who can read Chinese, Lung Fung Restaurant also has a Chinese name, which translates to Chung San Harbor Seafood Restaurant. “Lung is dragon and Fung is phoenix,” explains Ma, who took over the 30-year-old restaurant about nine years ago. “We kept the name Lung Fung, but about six years ago we added the Chinese name Chung San Harbor Seafood Restaurant. We are a traditional Chinese restaurant serving Hong Kong-style food.”

ocated beachfront in the Outrigger Reef Hotel, Ocean House presents patrons from across the world with spectacular cuisine and pristine oceanfront views as they dine on the shores of beautiful Waikiki. “We want our guests to feel at home here,” says dinner manager Chris Cole. “We have a variety of amazing items on the menu.”
The prime rib, for example, has been a staple here, along with the vast array of seafood dishes. However, there is one item in particular that’s no longer on the regular menu, but gives Ocean House’s signature entrees a run for their money. “Garlic Ahi Steak used to be on the menu and was one of our best-sellers,” Cole explains. “We took it off the menu to make way for a handful of new dishes, but our regular and loyal customers still request it.” “This dish is a favorite among our staff,” adds general manager David Nagaishi. Available for dinner, Garlic Ahi Steak ($31.50) features pan-seared ahi rubbed with fresh garlic, and doused in a succulent sauce comprised of
sake, oyster sauce and garlic butter. The upscale Hawaiian plate lunch-style eatery’s name may conjure up visions of our friends in the sea, but there’s much more in store for hungry diners — and it’s not the usual two scoops rice fare. There’s a sandwich on Hukilau’s lunch menu that stands out for those who choose not to eat fish or meat. Portobello “Katsu” Mushroom Sandwich ($12) features a large panko-crusted portobello mushroom topped with roasted red peppers, sun-dried tomato spread, caramelized onions, Brie, lettuce and tomato. It’s served with fries, and for an extra 50 cents you can substitute a ’Nalo
mixed greens salad. Or for $1 more, you can reel in some crisp sweet potato fries. “They don’t have to have cheese on it,” notes restaurant manager Emerson Lewis of the Brie. So if cheese isn’t part of your diet, just have them hold it, as there's so much more going on in this sandwich you won't even notice its absence. It’s a concoction that works deliciously with the panko crust complementing the smooth texture of the earthy mushroom, while the sweetness of the sun-dried tomatoes and caramelized onions give it just the right balance — everything goes together swimmingly. The close-knit staff at Eggs ‘n Things make for a creative cooking team, coming up with exciting new recipes all the time. “At night, we do a lot more experimenting. The cooks play around with all different types of loco mocos,” says Skedeleski. When it comes to the Hawaiian Loco Moco, “we tried this one and people loved it. We put it as a special at night and then eventually it became a regular menu item.” Another improvisational success, Paniolo Moco
($9.95) features a countrystyle white gravy in lieu of the traditional sauce. Like the inner circle of regulars who adore this mix of Island and Southern flavors, you’ll have to request this secret dish as it is only available at night and not on the menu. If you don’t have time for a sit-down meal, stop by the newly opened Eggs ‘n Things Waikiki Beach Eggspress for quick and delicious takeout versions of all your favorites. Customers will be pleased to know that earlier this week, the dynamic duo behind the European-influenced cuisine introduced a new late-night menu that allows diners the opportunity to enjoy meals through midnight every day of the week. The appropriately titled Owl Menu, which is currently available nightly from 9 p.m. to midnight, offers up many of the traditional menu’s offerings in addition to a collection of brand new dishes. “We had a lot of customers who would ask ‘how come you close so early?’” says May Yiu of the motivation behind extending the eatery’s hours. “When I told them we (previously) closed at 10 p.m., they would say ‘oh no!’ After too many times, we decided to open later. (fresh-hot Belgian waffles and syrup) and salty (crispy garlic chicken wings along with a creamy ranch dressing) served with a choice of roasted potatoes or rice. While the combination may seem odd at first glance, the dish is flying out of the kitchen window — much like the uber popular video game characters after which the dish is named. Sticking with breakfast-themed items available on the Owl Menu, Steak and Eggs ($11.95) provides the perfect late-night meal — especially following a University of Hawaii sporting event. The hearty plate features thin slices of grilled USDA choice beef topped with a zesty chimichurri sauce, and is served with fried egg and a choice of roasted potatoes or rice. hollandaise sauce that, as Yiu explains, incorporates more egg yolk than butter to give the sauce a vibrant yellow color and extra “hold” to encapsulate the stacked dish. “We focus on items that are light but will still fill you up,” she says when describing the traditional breakfast items. The culinary whiz spent months researching the new dishes to make sure loyal customers would not be disappointed. Another popular addition to Kit n Kitchen’s wide array of offerings is Kung Fu Soup Noodle ($8.95), a customizable noodle bowl modeled after similar dishes served in Hong Kong. Customers start by selecting a soup (Classic Shrimp or Szechuan Spicy) then picking a noodle type (Cantonese thin noodle, rice vermicelli or lo mein). Diners then choose two toppings from an extensive list that includes Shrimp Wanton, Beef Ball, Shabu Shabu Beef, Grilled Chicken, Fried Eggs and, of course, Spam. Customers also may add additional toppings for $1.95 apiece — a popular option with so many items to choose from.

“This type of dish has become very popular in Hong Kong; it’s one of the most popular street foods,” explains Yiu, who traveled to the region and worked in her friend’s restaurant for a month as a way to glean ideas for the new menu. “There are so many different items for customers to pick from. It’s a very good dish for the late night; it will wake you up!” Kit n Kitchen also has enhanced its crepes menu for the late-night crowd, providing even more versions of the French-style pancake made fluffy and thin. Crepes Tiramisu ($7.95) makes its debut on the Owl Menu, and the Italianstyle dessert offers up whipped egg yolks and mascarpone flavored with liquor and cocoa all wrapped up in a large, savory crepe. Add a dollop of ice cream, and enjoy the explosion of flavor that ensues. “I tried to think of what else I could put inside a crepe,” Yiu says. “I tried the tiramisu and, whoa, it was really good. I really like to play with different tastes and put them together. That’s science!” Oh, what a sweet science it is.

Jai takes center stage at Hee Hing

ew Year’s is not even close to being over. Jan. 23 celebrates Chinese New Year, a time of rituals, traditions, family and a celebration of feasting. With many meat dishes and sweets to go around, from New Year’s cake to jau gok and bakkwa (dried meat), we should all find time for some healthy and symbolic enjoyment with a plate of Jai. According to restaurant director Michael Lee, Jai translates to “enlightened vegetarian dish” or “Buddha’s Delight.” At Hee Hing Restaurant, its Jai dish

For example, snow peas represent unity, three ear fungus harmonizes longevity for you and your family, and black mushrooms welcome a new spring and symbolize opportunities. Also included is fried tofu, embodying a blessing of the house, as well as black moss, which harnesses good fortune and wealth. “A lot of vegetarians try our Jai, and although we have a lot of vegetarian items on our menu, we always recommend Jai
because it is the most traditional one we serve,” says Lee. Solely on Chinese New Year, Hee Hing pays tribute to the Cantonese style of Jai by adding oysters to the dish. This addition is said to bring a sense of added wellness to your home. Jai, or monk’s food, is served all day for $9.50. Would it be Chinese New Year without a little hearty, tasteful raucousness? ohnson Ma, manager at Seafood Village at the Hyatt Regency Waikiki, points a quick finger when asked of his favorite appetizer at the Cantonesestyle restaurant. Bacon Wrapped Shrimp and Scallops ($12.95) is encased in a crispy wonton wrapper, topped with an aioli sauce and is as tasty as it sounds. Sweet, juicy and large enough for two quality bites, the dish is a nice combination of flavor and texture. Seriously, this stuff is good! Another top-of-the-line pupu is Lettuce Wrap with Duck ($10.95). Made with fresh, roasted duck (a restaurant specialty), onions, carrots and few secret seasonings, the wrap has a mild spicy flavor that works perfectly with the fresh, crispy iceberg lettuce.
If pork is your pleasure — and when isn’t it? — Roasted Barbecue Pork ($8.50) is a must-try. The marbled pork is tender, slightly sweet, smoky and comes in a heaping helping that adds value to the mix. You don’t need an Anthony Bourdain pork fetish to enjoy the dish, just taste buds. Still not full? Try Golden Crab Claws with Shrimp ($7). Made with full crab claws, the crispy, battered, yet light pupus are stuffed with shrimp and a few other things Ma refuses to mention. Secrets make for good cooking, and Ma and his talented and attentive staff aren’t about to let the crab out of the bag. Shui mai can be found on nearly every local buffet line in the state and is a crowd favorite. However, the sad truth is that it’s rarely well-made. Too often used as a

cheap menu item, the traditional stuffed dumpling is often disappointing. Not at Seafood Village. Pork Hash Shui Mai ($5.25) is fresh, well-seasoned and not the least bit greasy. The addition of shrimp adds to the flavor profile while not overpowering the traditional taste of the dish. If you haven’t been to Seafood Village yet, lunchtime could be a good opportunity, especially if you like dim sum. And who doesn’t? The restaurant offers 36 types of the steamed dish, meaning there isn’t likely a flavor request it can’t meet. Don’t let parking worry you. There is plenty of validated parking across the street, and the hotel offers valet parking. If you go for dinner, reservations are recommended.

hoon Chun Chicken makes its customers feel right at home. The Kalakaua eatery serves up homestyle Korean dishes in a trendy, chic atmosphere. Manager Theresa Kim says that while Choon Chun Chicken’s dishes are primarily traditional Korean food — a style that she and her sister, chef/owner Sukhui Hong, picked up back home in Korea —

the cuisine also involves local influences. As its name suggests, the restaurant is perhaps best known for its chicken dishes. Kim says that Fried Chicken ($7.95 for half; $14.95 for whole) and Whole Chicken ($11.95) are two dishes that keep customers coming back. Another popular chicken dish is Fire Chicken with Cheese ($19.95), which features chicken cutlets bathed in a spicy and sweet sauce. Or, for

rowing up in Korea, sisters Theresa Kim and Sukhui Hong spent a lot of time in the kitchen. Their parents were successful restauranteurs who owned a traditional Korean eatery, and the girls grew up working and cooking to help out. These days, Kim and Hong — the manager and owner/chef, respectively — bring their lifelong know-how of the restaurant business to Choon Chun Chicken. When the pair opened the first Choon Chun Chicken location ten years ago, they started off modestly — their first restaurant had just a few tables and offered a relatively small menu. Today, Choon Chun Chicken has two locations and boasts more than 50 dishes. Some of those dishes, Kim says, are transplants from their parents' restaurant. “The Kalbi is something my dad used to make,” says Kim. “And one of his most famous dishes was the mung bean pancake, which we are going to have next month.” Kim and Hong also have brought their own fusion flair to Choon Chun Chicken. To cater to the local palate, Kim says that they have added more sweet flavors to their spicy sauces. “A lot of our customers would come and ask for sweeter foods, so we have made a lot of our dishes sweeter than before,” Kim says. Plus, Choon Chun Chicken’s signature spicy/sweet sauce is Hong’s original creation. “The popular sauce that we have is (Hong’s) own special sauce,” Kim says. “Nobody else even knows how to do it.”

With large booths tucked away in alcoves throughout the restaurant, Choon Chun Chicken can offer large parties in an intimate, lively atmosphere. Kim says that large groups frequent the restaurant, especially for Happy Hour, which takes place daily from 4 to 8 p.m. “We often have groups of eight or more people come in
for the Happy Hour menus in the evening,” says Kim. “They come in for beer and pupus.” Discounted menu items for Happy Hour include Fish Cake Soup, Seafood Jun, Whole Chicken and Fried Udon. Prices range from $5.99 to $7.99. Right now, the chefs at Choon Chun Chicken are busy cooking up new menu items. “We will have more pupu items, including ahi poke, a sausage dish and mung bean pancake,” Kim explains. According to Kim, Chef Hong is relentless when it comes to creating new menu items — she ensures that each new dish is perfect by conducting taste tests with her workers. Kim says that

A
t 4Kings Kitchen, customers can expect the royal treatment. The eatery, which will celebrate its one-year anniversary Jan. 20, offers a menu that supports local-grown products in unique dishes. “The fusion of food on our menu (makes this restaurant unique),” says owner Christopher Kegler. “Our menu is as organic as possible … that’s where we get our motto, ‘Hawaii Born, Hawaii Bred, We Support Local First.’ The menu’s a melting pot, a mix of Hawaii’s culture.” Kegler couldn’t use a better phrase to describe the menu at 4Kings, which ranges from Chef Kapo’s Mochiko Chicken ($11) to Local Style Beef Luau Stew ($11) — locally raised beef slow simmered for a day before being served. The Mochiko Chicken and “The Prodigy’s” Meatloaf with Brown Gravy ($11), inspired by mixed martial arts (MMA) fighter BJ Penn — grass-fed Big Island Ground Beef served with housemade brown gravy — used to be the eatery’s most popular entrées. However, the “Garden Isle” Bone-In Short Ribs ($14) — thick cut, bone-in short ribs from Kauai, slow braised for two hours with Otsuji Farms kale — now reigns as the eatery’s signature dish. “The braising (makes our short ribs the best),” Kegler explains. “It needs no knife — you pull the bone out, it hits your mouth and it melts.” Besides the attention it receives for its local flair, the eatery creates unique dishes fit for a king. The “Not Your Normal Loco” ($12) is a prime example, featuring the traditional loco moco with a twist. “Our ‘Not Your Normal Loco’ is a house-made fish burger with fresh ground mahi mahi and kim chee Portuguese sausage, and we serve it with a shiitake mushroom gravy with two eggs (your choice of style) on top of it,” says Kegler. with local fresh avocados with a garlic aioli — and a vegetarian option, “The Tyrant’s” Tofu Salad ($11), pan-seared tofu topped with sliced red onion, North Shore vine-ripe tomato and organic MA‘O greens, roasted garlic and Hawaiian Ogo Vinaigrette. The housemade salad dressings are unique as well — 4Kings boasts five different salad dressings, including the best-selling Roasted Garlic & Hawaiian Ogo, an oil and vinegar mixture with Kahuku Brown Ogo. To commemorate the restaurant’s first year anniversary Jan. 20, customers are invited to 4Kings’ “Re-Grand Opening” from 5 to 9 p.m. From that Friday on, the eatery’s in-house salad dressings will be packaged and sold, and mini orders — smaller portions of favorites like Mochiko Chicken and Red Wine Braised Chops — will be available for the first time.
“We’ll be introducing mini orders at our anniversary, and I’ll be giving them away randomly as samples,” says Kegler. The Re-Grand Opening is the same weekend as the Pro-Elite MMA event held at Blaisdell Center. Local favorites such as Kendall Grove and BJ Penn are expected to stop by the local eatery, according to Kegler. “I don’t want to put too many names out there, but I sponsor a bunch of fighters, so they (the MMA fighters) will be invited to come here,” he says. Although 4Kings has only been open for one year, Kegler says the eatery already has a regular following and wants to thank its loyal customers. “Our regulars are a mix of students, people from the mixed martial arts academies around here and residents from Moiliili,” he says. “They blow my mind; I just can’t thank them enough.”
