ren’t we lucky to live in Hawaii? Not only are we surrounded by natural beauty and perfect weather, but when it comes to ono kine grindz, our food is second to none. OK, I may be a bit biased being a local girl and all, but really, we have a fusion of foods that represent our vast multi-ethnic population. Take saimin, for example. It’s a noodle dish unique to Hawaii and developed during the plantation era. Inspired by Japanese udon, Chinese mein and Filipino pancit, saimin can be easily recognized as a dish of its own. From state fairs to schools to
sporting events and bon dances — saimin can be found practically everywhere. Hey, it’s even served at McDonald’s! The popularity of ramen in the Islands also is equally comparable. So this week, I took a step back in time and returned to an old stomping ground of my parents: Sekiya’s in Kaimuki. I also visited other islandwide eateries — some brand new — ready to serve up these steaming hot local favorites. And yet, no matter where my taste buds led me, I knew I was in for one “Ono, You Know” deli-

Prettii in Pink at f you’ve noticed the Waikiki dining scene has suddenly became a little bit more fun, you can thank a certain iconic Japanese character and an energetic restaurant owner. On Oct. 15, Makittii — the Japanese buffet restaurant offering 30 different kinds of sushi, a real Japanese breakfast and the Sanrio character Hello Kitty — opened for business to the excitement of children and those who remain a

child at heart, like its 60-yearold owner. “Mr. Makino is a kid at heart,” says Chris Mitchell, the general manager of operations. “He likes bright colors, he likes the characters and he just likes to have fun.” When Toru Makino approached Sanrio Co. Ltd. with the idea to feature its legendary characters in a Waikiki restaurant — a venture that would appeal to both locals and visitors alike who can’t get enough of the adorable characters — company offi-

Now, after months of planning and some $400,000-$500,000 worth of renovations, the eatery that features Tiki statues of My Melody, BadtzMaru, Monkichi and, of course, Hello Kitty, is ready for business. So are Makittii’s customers, who were already making plans before the restaurant officially opened its doors. “I had a woman call up and say she wanted to hold a graduation party for 250 people here,” says Mitchell. Birthdays are bound to be popular as well. The restaurant features a gift shop where customers can buy all sorts of Sanrio gear — including the Makittii Hello Kitty that is only available at the restaurant. Birthday boys and girls also can get a free gift and a photo with Hello Kitty herself. If you’re not much of a Hello Kitty fan but are excited about Japanese food, the restaurant

offers separate seating areas where the trademark pink and green give way to natural wood and Island colors. The restaurant also is very breezy, making it a comfortable environment any time of day. Makittii differs from Makino’s two other Oahu restaurants in that, from 7 a.m. to 9 p.m., it doesn’t close. Makittii offers breakfast, lunch, an afternoon tea and dinner service at
5:30 p.m. “Sometimes customers come in at 1:30 and they want tempura, sushi, salad, teppanyaki, and at 2 they can try the desserts,” says Makino.

Makittii In addition to the cakes, pastries and sandwiches common during an afternoon tea service, Makino has brought in a special tea from Taiwan that is available only at Makittii. “It not only tastes good, but it is good for you,” says the owner. The notion of healthy eating comes up quite a bit when speaking with the affable owner. No place is this more obvious than in Makittii’s breakfast menu. Breakfast buffets are common throughout the area, but rare is the hotel or restaurant that features an actual Japanese breakfast that includes traditional fare such as rice, miso soup, sweet beans, fish, noodles and vegetables. Add this to American breakfast staples including pancakes, sausage and even an omelette bar, and it’s unlikely you’ll leave hungry. Makino says his goal is to always make his new restaurant better than the previous one. To help with

this objective, he has brought in 15 chefs from J a p a n , including five who will be working on desserts alone. In addition, the restaurant has partnered with Hakkei and Gaan Express to add more options to the menu. Those options include boasting what is likely a first for Hawaii: a tofu bar that features seven different types of tofu. Makittii is located at the old Perry’s Smorgy on Kuhio Avenue, and has validated parking in the Miramar at Waikiki Hotel from 5:30 to 9 p.m. It’s $2 for two hours on Wednesday through Friday at dinner and all day Saturday and Sunday. Hawaii residents get an automatic 20 percent off their meals with valid photo ID for each person. Gift certificates also are available for purchase.

Lunch Sets, Great Bets at Sushi Ichiban
S
ushi chef Manny Nakasenh is getting used to customers asking if the prices on the menu at Sushi Ichiban are correct. “People don’t expect to find this kind of quality for these prices,” he says of the $8.95 lunch sets that have been attracting diners since the restaurant opened just four months ago. The lunch set prices are a deliberate effort to offer the best possible value to customers, and introduce new customers to some outstanding dishes. “We work with great vendors, and we shop around to get the best prices so we can pass the savings along,” says Manny. Enter the restaurant from the 11th Avenue parking lot, or from the main door fronting Waialae Avenue, and you’ll find an attractive, clean, welcoming dining room that seats about 40 people. The sushi bar dominates, and Nakasenh takes an obvious delight in preparing food while customers watch him at work. Among the most popular favorites on the current, specially priced lunch

menu are Chicken Katsu, Pork Katsu and Teri Chicken. And try the mochiko chicken for a taste of a local-style favorite done well. A Sushi Lunch Set serves as a great example of the quality and value offered at Sushi Ichiban. The $8.95 set includes two pieces of salmon, two pieces of ahi, two pieces of Thai snapper and one piece ika (squid) with tobiko. All sets are served with rice, tsukemono and house salad. The regular menu served at lunch
and dinner is also available daily, and includes fresh fish, steaks, chicken, udon and ramen, sushi and sashimi sets and even pasta. But at $8.95, the lunch sets are reason enough to rush over before word gets out.

Then I’ll ask if he can recommend anything “like this” to go with our food. Other guests are unaware of the “secret” signal, the waiter should immediately understand the price range and an enjoyable wine ought to be forthcoming. Try it out and let me know how it works. E
ach of our Hawaii-Korean restaurants has a signature style. Some offer rare meats in hot pots and stews; others, an Americanized twist on traditional food. At Camellia Buffet on McCully Street, the restaurant boasts a popular poke, fresh sashimi, spicy marinated pork, and a lesserknown meat superbly suited to high heat and quick grilling – flap meat. Granted, it’s not the most glamorous name, but this inexpensive cut of beef (part of the short loin), is ideal for use in yakiniku-style cooking. “The flap meat is what we serve at dinner time, as well as sirloin steak,” says Camellia Buffet manager Kelly Park. “People really like it.” That’s because the humble flap is full of flavor, similar to skirt and hangar steak. It’s best when cooked over high heat and to a temperature of no more than medium rare. That way you’ll get all the flavor without any of the toughness that comes with overcooking. And make sure the meat is sliced thinly and cut on the bias for the best way to maximize flavor and texture. It could easily be the signature meat for the unpretentious Camellia Buffet, a restaurant that’s been steadfastly serving simple, homemade food for 25 years. Park has been at the restaurant almost since the beginning. “I’ve been here almost 20 years,” she says with a smile, “and many of the staff have been here a long time, too.” She maintains that one of the reasons for Camellia’s longevity is that customers enjoy the food, but they also love the staff. “The customers come back because we have good food, but also we have a very warm atmosphere,” says Park. “We know all of the regulars, we know what they like and don’t like, and we always listen when they tell us what they want to see on the menu. They joke around with us, they give us advice. It’s almost like a family rela-

tionship.” Recently, customers have asked for a couple of new things, including dishes for children. “We noticed that people were asking more and more if they could have something for their kids,” says Park. “Not all kids like spicy food and vegetables, so we added orange chicken.” It might seem slightly incongruous amid the kim chee and cucumber, but the Chinese-influenced orange chicken with fried rice is a big hit with families. “We cook it all ready so the kids don’t have to wait to eat,” Park explains. “They love it.” You’ll find many of the vegetables, sides, sauces and meats common to Korean buffets on the Camellia line, including a seaweed soup with generous amounts of seaweed, red bean porridge, red beans and rice, rice and noodles. Newer menu items include Korean pancakes. “People like them because they are trying to eat more healthy,” notes Park of the pancake made with sesame oil, soy bean paste and seaweed. “It’s good for vegetarians, and it’s a healthy food,” she says, adding that the Korean pancake has been an instant hit with diners. Camellia’s kim chee is unique in its use of anchovy broth as a base instead of water. The anchovies bring a rich flavor to the kim chee before the other ingredients are even added. Homemade poke — spicy and tossed in a mixture of sesame oil and chili peppers — is the single most popular item on the buffet line, and in the evening sashimi is added to the menu. Camellia may be casual and unpretentious, but it can get a little crazy on the weekends. “People have to call to make a reservation,” says Park. “On the weekends it’s very busy, so we always advise people to call if they’re coming after 6:30.” Go at lunchtime if you want to check out the restaurant for the first time, or earlier on weeknights when the crowds aren’t thronging. Highly recommended from the buffet are the flap steak, sirloin, poke, short ribs and the spicy pork, and make sure to try the house red potatoes marinated in a shoyu dressing, along with the won bok kim chee and namul. “It’s a meat lover’s paradise,” says Park with a smile. “That’s why people have been coming back for more than 20 years.”

Sumo Ramen With six locations islandwide, Sumo Ramen is one of my top picks when it comes to all things “saimin,” or in this case, ramen. Owners Ken and Cindy Wong opened the Market City Shopping Center location in 2004, and they say business has been kind, thanks to loyal patrons and new dining enthusiasts. Sumo Ramen has a diverse menu ranging from curry to fried rice, to fried noodles, udon, cold soba udon, curry combos, appetizers — and, of course, ramen — be it spicy ramen or ramen combos. Whew! Take your pick. Being a noodle connoisseur myself, I had to opt for the Mochiko Chicken Ramen ($6.95), a localized fusion of tender mochiko chicken and authentic ramen. “Everything is made fresh, daily,” Cindy says. “Our soup base is traditional and popular among customers.” Locals also seem to relish in the Mochiko Chicken Plate (reg. $6.75, mini $4.50) and Chicken Katsu Curry (reg. $6.95, mini $4.95). The curry and ramen combos are strictly for those with a hearty, “sumo” appetite or just want to sample a little bit of everything. The ramen is served in a garlic-shoyu base with a traditional half-cooked egg. “We sell 100 of these a day on average,” he states. “It’s very healthy.” The Black Sesame Tantan Ramen also has benefits that support vascular and respiratory health, and helps to relieve cases of rheumatoid arthritis. I also appreciate that Ton Ton Ramen uses no MSG in its cuisine, which helps minimize the occurrence of migraines.

Butternut Squash & Lobster Bisque with Crispy Seafood Dumpling Serves 4 | by Chef Chai Chaowasaree Ingredients: • 4 cups diced butternut squash • 2 cups lobster stock (can substitute with vegetable or chicken stock) • 1 tablespoon vegetable oil • 1/2 tablespoon chopped garlic • 2 tablespoons chopped onions • 2 tablespoons chopped celery • 2 bay leaves • 2 springs fresh thyme • 1 cup heavy cream • pinch of pepper • salt, to taste (some lobster or chicken stock may already be salty)
AUTHENTIC KOREAN DISHES
Preparation: • In a soup pot with medium heat, add vegetable oil, celery and onion. Sauté for a minute, then add garlic
and sauté for 30 seconds. • Add butternut squash and chicken stock and cook about 15-20 minutes (depending on the heat) until squash is soft. • Add heavy cream, salt and pepper and puree in a blender until soup is smooth.
Crispy Seafood Dumpling Ingredients: • 8 spring roll wrappers • 4 medium-size shrimp, finely chopped • 2 scallops, finely chopped • 1/2 cup crab meat • 1/2 whole egg, beaten • 2 tablespoons chopped green onions • 1/4 tablespoon garlic powder
• 1/4 tablespoon onion powder • pinch of paprika • pinch of pepper and Aloha shoyu, to taste • 2 cups vegetable oil for deep-frying dumpling Combine shrimp, crab meat and scallop with one-half of beaten egg, garlic powder, onion powder, paprika, green onions, pepper and shoyu sauce until ingredients are well-combined. Scoop in one-half tablespoon of mixture and wrap with spring roll skin. Repeat for all wrappers. Pre-heat oil to 320 degrees and fry dumpling about 2 minutes, or until golden crisp. Set aside. When ready to serve soup, add a big dot of whipped cream and top with fried seafood dumpling.
