With only 84 calories (without tortilla strips), this zesty entree features a bowl full of piping hot vegetable broth, filled to the brim with a medley of ingredients such as tomatoes, onions, jalapenos, cilantro, fresh garlic and, of course, savory chunks of chicken.

“The jalapenos give the soup a kick — it’s really good, but surprisingly a lot of people aren’t aware that it’s on our menu,” Noel exclaims. “The soup also has 19 grams of protein.”

’ve been under the weather for about two weeks now, battling a bad case of the sniffles and an outrageous cough that won’t seem to go away no matter what I do. Per doctor’s orders, I'm on antibiotics and a variety of other over-the-counter cold medicines. Needless to say, all I want to do is sleep, and honestly I don’t really have an appetite, believe it or not. As the editor of Dining Out, that could be considered blasphemy, right? But the show must go on! No rest for the weary!

Million Restaurant Let’s count the reasons why we love Million Restaurant, shall we? First off, if you’re seeking out some of the best Korean food on the island, then you’re in luck — this family owned and operated establishment serves up a level of Korean authenticity that’s inevitably hard to come by. Sisters Cindy and Angela Park opened the doors to the eatery on Sheridan Street in 1989, and the restaurant has remained a staple for both locals and tourists alike.

And on these cooler days, Million has one-of-a-kind soup options to warm up your

palate and soothe any sore throat, including a soup and kal bi combo ($21) — a match made in heaven.

“The Spicy Buckwheat Noodle Soup and Kal Bi is a favorite combo,” Cindy says. “The Kal Bi comes to your table on a sizzling platter and each piece is very tender.”

Now, I’m not your pickiest of eaters, to say the least, however, Million’s Mountain Goat with Sesame Leaf Soup ($16.95) had me putting on a brave face.

Having never set my taste buds on morsels of goat before, I can honestly say I was quite apprehensive, but much to my delight Cindy was quick to put me at ease.

ilton Hawaiian Village Waikiki Beach Resort is wrapping up its 50th anniversary year in style and ringing in the new year with a bang of flawlessly edible works of art amid enchanting New Year's Eve celebrations, including a show-stopping performance by the Local Divas, comprised of singers Carole Kai, Nohelani Cypriano and Melveen Leed.

Dining Out recently caught up with Hilton’s executive chef Jeffrey Vigilla and Bali Steak & Seafood’s chef de cuisine Matt Alleshouse to get a glimpse into Hilton’s New Year’s feasts and festivities. And as 2011 officially comes to a close, once again, this powerhouse team saves the best for last!

DO: What can people expect from New Year’s Eve with the Local Divas? It’s bound to be a great show!

Vigilla: Hilton Hawaiian Village has long had premier headliners on New Year’s Eve, and this year is no different.

Year’s Eve Celebration at 9 p.m., and at 9:45, the Local Divas will take the stage and perform right into the new year. It’s going to be a festive atmosphere where everyone is jubilant and energized about welcoming in 2012.

DO: Most importantly, what can diners expect in terms of their meal?

Vigilla: For the Local Divas’ show, we’re offering an exquisite four-course menu that starts out with a Tuna and Avocado Tartare, and American Sturgeon Caviar, followed by a foie gras mousse terrine with pineapple and Maui onion chutney. The main course is a Filet Mignon and Kona Maine Lobster Oscar with béarnaise sauce accompanied by herb and garlic roasted potatoes. And the dessert is a Waialua Estate Chocolate Cake. We are offering a vegetarian option for this meal as well.

DO: What makes this show unique from other New Year’s Eve shows around town?

Vigilla: In addition to offering the dinner menu with the show, guests at the resort also have the choice of eating at least three other establishments right here on property, and that doesn’t even include our Waikiki Starlight Luau, which will be held at a special location of the Great Lawn on New Year’s Eve. That means we have four other venues right along Waikiki Beach that will offer special menus and dinner specialties that evening. We have our partner restaurants in the Rainbow Bazaar area as well. Combined with the holiday lights and the festive atmosphere, it’s a great way to say farewell to 2011 and welcome 2012.

DO: Chef Matt, what can diners look forward to this New Year’s Eve at Bali Steak & Seafood?

Alleshouse: Diners will be greeted

with a high-end seasonal, locally inspired menu. There will be two seating times on New Year’s Eve (6 p.m., $160 for adults and 8:15 p.m., $190 per person), and at Bali Steak & Seafood, we’re offering a wonderful four-course menu that gives diners the option to choose their entrée and appetizers. The second seating at 8:15 p.m. will feature an additional menu item from the 6 p.m. seating, and that is Kona Abalone and Kahuku Corn Chowder. And only at Bali Steak & Seafood on New Year’s Eve are we offering a children’s menu as well. The menu is priced at $80 per child, but it’s a great four-course meal that starts with Baby Hirabara Farms’ Romaine and Homemade Bacon Salad; Kona abalone and Kahuku Corn Chowder; for the entrée, children can choose from Petit Filet Mignon with Béarnaise and truffle sauce; Grilled Chicken Breast or Campanelle Pasta.

The dessert is a trio of Waialua Estate Chocolate.

DO: Wow, it sounds like there’s much to look forward to.

Who will be preparing these fabulous New Year’s Eve meals?

DO: What is Hilton Hawaiian Village hoping the new year will bring for its many culinary establishments?

Vigilla: New, more-refreshed menus featuring sustainable products, wine dinners, tasting menus and seasonal specialties. Look out for us at the Kapiolani Community College Farmers Market on a Saturday in 2012 for food demos, farm-to-table cooking.

Alleshouse: I’ll be kicking off the new year at Bali with my culinary twist of island farm-to-table ingredients.

iners are all about comfort food. Heaping helpings of non-pretentious fare at low prices served by a neighbor has made this simple style of dining a uniquely American experience. This is no different in Hawaii, where Big City Diner has been turning out just these sort of meals for more than 13 years — pupus are no exception.

The menu boasts 15 appetizers that range in size from quick snacks to full meals. One of my personal favorites is the Chili Fries ($6.99). How can you go wrong? Crispy fries topped with cheese and the Muraoka’s family recipe chili. It's not complicated, it’s just good.

Another simple standard worth trying is Calamari Tempura Strips. Panko-breaded and served with a Garlic-Wasabi Aioli, the fresh calamari is deep-fried tender with just the right amount of seasoning. The aioli provides a creamy, fresh contrast to the strips without overpowering the naturally mild flavor.

Nachos are a quick bites staple at any number of dining establishments, but unlike the heavy block of chips and cheese many places pass off as good eats, Big City's Chili Nachos ($11.99) are different. Made with homemade tortilla chips and chili, and topped with fresh tomato, sweet onion, green onion, roasted corn, sliced olives, Jack and Cheddar cheese, the heaping plate is surprisingly light and refreshing. Add in the fresh salsa and cilantro buttermilk dip, and you’ve got a meal that won’t leave you feeling heavy. Trust me, I devoured nearly the entire thing solo.

Perhaps most surprising is the Edamame ($7.49).

While the standard boiled and salted soybeans are tasty and fun to eat, Big City kicks it up a notch with the addition of a Hawaiian Spice Poke Sauce. The difference is amazing. The sauce adds a tanginess to the beans that you don’t usually find. Yes, the sauce does mean slightly messier fingers, but that’s just more flavor to savor. If that’s not enough, Ray Chan’s Island Style Poke ($8.99), the Wings ($8.99) and the Pupus New York Steak ($9.99) are more than enough to keep everyone in the family happy.

The two-and-a-half-hour scenic cruise departs from Aloha Tower Marketplace at noon and sails beyond Diamond Head, where passengers can view whales and their newborn calves while enjoying a Taste of Hawaii lunch buffet. On the menu are local favorites Teriyaki Chicken, Citrus Miso Glazed White Fish, Lomilomi Salmon, Tofu Poke, Hawaiian Salad with Kula Romaine, Three-bean Salad, IslandStyle Macaroni Salad, Namasu, Fried Noodles, Sweet Potato, Steamed White Rice with Rainbow Furikake and assorted breads and sweet butter. “During January, February and March we average three to eight whales per cruise or eight to 12 whales per day,” says Heide Weber, whale watch manager and marine biologist. “Our highest counts last year were several days of 16 to 17 whales on one cruise! We also had days with just one or two whales that put on a show with spectacular

breaches and tail slaps.

“Also, Star of Honolulu offers a Whale Guarantee: If we don’t find whales, a ‘whale check’ is offered so you can ride the same cruise again for free. I suggest bringing a light jacket in addition to the obvious camera and binoculars. We’ve got wonderful trade winds, and it’s nice and cool out on the water.”

he possibilities are endless at Camellia Buffet.

The yakiniku-style eatery, located on McCully Street, has been offering the best in Korean fare with its allyou-can-eat buffet ($15.95 lunch, $23.95 dinner) for the past 21 years.

Gyros ($14.95) — a subtle blend of lean roasted beef and thinly sliced lamb served with salad and pita — reigns as the restaurant’s signature dish. Other popular Greek specialties include the eatery’s Lamb Shank ($16.95) — a shank of lamb basted in the oven with Greek-styled rice, salad and pita — and Lamb Rack ($21.95), broiled Athenian-style to the customer’s preference and served with rice, salad and pita.

In addition to its regular menu items, Greek Marina features several everyday specials. Rizk explains that the Souvlaki Beef Shish Kabobs ($15.95) are exceedingly popular.

“It’s a shank of beef top sirloin marinated and skewered with bell peppers,” he says. “Our other daily special is the Mix Seafood Plate ($21.95), a mixture of shrimp, fish and calamari steak.”

The Souvlaki Beef Shish Kabobs are served with rice and Greek salad, while the Mix Seafood Plate is served with rice, Greek salad and pita bread. Rizk mentions that one more special entrée exists: The Baked Chicken Special ($13.95).

“The Baked Chicken Special is only on the weekends,” he confirms.

“It’s an oven-baked chicken breast with baked potatoes and served with rice, Greek salad and pita bread.”

Finally, customers’ Greek dining experience would not be complete without dessert. Greek Marina offers a variety of desserts, including Rice Pudding ($3.95) and the ever-popular Baklava ($3.95), a sweet pastry comprising layers of filo pastry and a filling of chopped nuts and honey.

This soup consists of tamarind broth seasoned with lemon grass and kaffir lime, mixed with your choice of chicken ($3.50), seafood ($3.75) or vegetables ($3.25). If you’re a seafood fanatic, your mouth will water as you feast on spoonfuls of salmon, scallop and shrimp. ith several locations in Japan and Taiwan, Jin Din Rou offers tasty Taiwanese cuisine infused with Japanese influences. The South King Street location is the first Jin Din Rou to come to the Islands.

“We love Hawaii and we wanted to bring something different here,” says manager Bob Suzukawa. “We make Taiwanese food, but we are a Japanese company, so we thought about how we can create a taste that is a mix of both Taiwanese and Japanese flavors.”

Suzukawa says that Jin Din Rou also has created a new, healthier style of cooking to cater to the Islands. “We are doing some new things to make our food healthier,” Suzukawa explains. “We don’t use MSG here. We don’t use much oil, and the oil we do use is a vegetable oil.”

Jin Din Rou also strives to provide its customers with the freshest as possible ingredients. “We make most of the food fresh,” he explains. “All of our vegetables — and most of our meat — are all fresh.

“We really focus on bringing quality taste and style to our dishes,” he says. That motto is evident not only in the taste, but also in the presentation technique of Jin Din Rou’s cuisine. Each dish is delicately prepared. If you watch Jin Din Rou chefs carefully roll each individual dumpling, it’s clear that food preparation is an art form here. “We really focus on making the presentation of the dishes more stylish and fancy,” Suzukawa says.

With good eats and an intimate atmosphere to match, Jin Din Rou is the perfect venue to enjoy a holiday party. Large groups can request banquet seating or a private room that seats 10 to 12 guests.

ainbow Drive-In has been a local staple since 1961, when Sejiu and Ayako Ifuku opened its doors to adoring patrons.

Today, the Ifukus’ son-in-law, Jim Gusukama, serves as vice president and operates the establishment.

Locals and tourists alike have long flocked to the famed eatery to see diverse menu items come together on one plate lunch. Shoyu Chicken ($6.25) and BBQ Steak ($7) remain among local favorites.

Speaking of cheese, if it’s part of your diet, Poppy’s menu of panini sandwiches includes Mozzarella, Tomato and Basil ($7.99) with sliced tomatoes, fresh basil and a generous 3 ounces of mozzarella. For those who don’t eat meat, it’s a combination made in heaven, as the creamy mozzarella and sweet tomato are complemented perfectly by the aromatic basil — all deliciously pressed together in a warm, satisfying sandwich.

“That’s really the reason we put the mozzarella panini on the menu,” says owner Rick “Poppy” Holloway. “There is diversity in the world! We try to make it taste as good as we possibly can. We first spread olive oil on the bread, and offer the choice of fresh or sun-dried tomatoes, and a real nice mozzarella. We prefer to use as much local ingredients as we can, so we use local basil from Glory Herb Hawaii in Mililani. It smells so good when we get it in.”

The Blue Hawaii Thai Chicken Katsu Curry is one of two of the restaurant’s signature dishes.

The other is Blue Hawaii Salad ($6.95), which features spring greens with balsamic dressing, potato chips and raw corn. Other popular items on the menu include the combination plates — cleverly named after the different Hawaiian islands — noodle dishes such as udon and ramen, and a variety of salads, including the Hot Spinach Salad with Bacon, Hot Dressing, Egg and Mushrooms ($6.95).

“Some people think, ‘The only place you can get a Hot Spinach Salad is at Hy’s (Steakhouse),” says Ribao, who has 36

years of experience in the restaurant business. “The only difference (between our spinach salad and Hy’s) is that we don’t do it tableside.”

The entrées at Blue Hawaii Sushi Bar & Restaurant — each of which comes with hot tea, rice, miso soup and house salad with ginger dressing — are not the only exceptional items on the menu. For dessert, Ribao says that Fried Ice Cream ($3.75) — with a choice of vanilla, green tea, chocolate or cookies & cream flavors — is quickly becoming the eatery’s signature dessert.

Besides the menu, the eatery itself is one-of-akind, as it’s a fusion of a sit-down dining and a sushi counter (kaitenstyle). The sushi menu provides numerous options for customers, including popular favorites such as the Rainbow Roll ($15) and Spicy Tuna Roll ($9).

While more changes may be in store for Blue Hawaii Sushi Bar & Restaurant, Ribao simply just wants to get the word out there: The eatery pro-

vides a fun dining experience with something for everyone.

“I want the community to know that we’re here and we’re ready to cater to you,” he says.
