n honor of Mother’s Day (which is exactly a week away), I think it’s only appropriate that we start early and pay tribute to the many super women who gave us life. I know that I wouldn’t be the person I am today without my wonderful mother, who’s not only amazing but, if I may add, an absolutely awesome cook! Wanna know the real reason why I love food so much? It’s because I’ve been spoiled by my mom’s cooking! With that, I bring to you oyakodon, which literally translates to “parent-andchild donburi,” and other donburi variations of the sort. donburi is a Japanese rice bowl dish, in which chicken, egg, green onions and other ingredients are all simmered together in a sauce and then served over the hot rice. The name of the dish, “parentand-child donburi,” is believed to be a poetic reflection of the fact that both chicken and egg are usually used in the dish. So, if you’re wondering what’s the perfect meal for Mother’s Day, look no further than donburi — which you’ll find on the menu at some of the best “Ono, You Know” establishments.

laborate renditions of traditional and delectable pastas, along with other magnificent entrees tracing their origins to Italy, remain unsurpassed at Paesano Ristorante Italiano. Owners Billy Rattanasamay and wife Nila opened the restaurant’s first location in Manoa Marketplace in 1992, and in 2008, the couple opened a second eatery in Waimalu Plaza Shopping Center. Today, this authentic Italian ristorante features the perfect combination of excellent service and immaculate cuisine. With a team of nearly 40 talented chefs and staff dedicated to Paesano’s success, Rattanasamay and his staff prove that treating customers like family is as valuable as serving up culinary masterpieces. Dining Out recently sat down with Rattanasamay and Raenette Tanaka, general manager of 2 Paesano’s Manoa location, over a five-course meal to get the scoop on Paesano Ristorante Italiano’s success.

ago, the former sous chef of Michel’s, Khamtanh Tanchaleun, helped me get into the restaurant business. I started working as a busboy at Michel’s, and it was there that I met a couple who later opened Castagnola’s in Manoa in 1982. I became very good friends with them, and 10 years later when Castagnola’s closed, my wife Nila and I, along with my sister Siri Ky, opened Paesano. DO: And the rest, as they say, is history. Tell us more about Gerry Quach, who serves as executive chef at both the Manoa and Waimalu locations. Rattanasamay: Gerry has been with us since day one. He’s always at the restaurants and he really loves what he does. You can tell, as his passion is evident through his cooking. Gerry also has a great cooking staff that helps him.

island fish paired with Hamakua mushrooms, sugar snap peas, fresh tomatoes, capers and more. The broth itself is delicious, with lemongrass, saffron and tomato. The dish is served with garlic bread, however, you can have it with pasta instead, but Cioppino is usually popular for bread dipping. Then we have the Osso Bucco and Shrimp Scallop Alla Bolla ($28.90), which is a combination of our two most popular items. The Osso Bucco features veal shank with onion and tomato sauce. The Shrimp Scallop Alla Bolla consists of jumbo shrimp and sea scallop sautéed with peas and a wine and butter sauce, served with pasta. A lot of people request for both of these items on a regular basis, so we just thought why not just put it all together. The Sicilian Chicken ($16.90, small portion; $19.90, regular portion) is a classic dish with boneless chicken sautéed with roasted potatoes, bell peppers, onions and mushrooms, with a splash of white wine to bring it all together. It’s a very popular dish because people do like to have their chicken and potatoes from time to time.

A special on our menu is the Seafood Dori ($25.90), but it also can be served upon request. When we do serve it, it’s made with a homemade lobster sauce also featuring an assortment of seafood such as scallop, shrimp and clams mixed with garlic, onions, mixed bell peppers and spinach.

Hamakua tomato relish that we place atop the crab cakes is really good. When it comes to our crab cakes, we don’t put too much breading on it and instead of deepfried, it’s pan-grilled in a cast iron pan and baked in the oven for a bit. There’s a real fresh taste to this appetizer. DO: Wonderful! Speaking of great dining, what’s an authentic Italian meal without wine?

Tanaka: (laughs) We have an extensive list of wines by the glass and wines by the bottle. We have everything from champagne to Italian wines, American wines, French wines, Australian wines, DO: Paesano Crab Cakes ($11.90) and the list goes on. appear to be a popular choice at your restaurant. Why do you think that is? DO: Paesano’s Manoa location will be celebrating its 20th anniversary next Tanaka: Honestly, it’s the sauce. It’s a year. Tanaka: The food is just really good, I don’t know how else to describe it (laughs). But honestly, we do use a lot of fresh ingredients. I would say 95 percent of our menu is made-to-order. Everything from the marsala sauces to the picatta sauces are all made-to-order — so it’s definitely that fresh factor. Our meatballs also are made in-house with a combination of both beef and pork or just ground chicken — they both have Italian herbs and spices. As for our pasta, it comes directly from Italy. Our standard pasta is linguine as opposed to spaghetti. This way, there’s a bit more texture, as a flatter pasta. It just tastes better. But more importantly, I think the success behind the Manoa restaurant lies within the community. Billy and Nila were there every day from the get-go and are really able to connect on a personal level with customers. We try very hard to make everyone feel like family when they come in.

trip to The Pyramid Restaurant is like taking a magic carpet ride to a far-off land.

A

Located on Kapahulu Avenue near Pizza Hut and Peggy’s Picks, the Egyptian restaurant is an oasis set among the bustling traffic outside. Tables are swathed in rich fabrics of purple, green and gold, while music and enticing aromas waft through the dining room air. Enhancing the experience even further are hookahs, intricately decorated mirrors, folding screens and walls adorned with hieroglyphic etchings, giving one the feeling of stumbling across an ancient tomb of some long-ago pharaoh. “I decided to make the décor as Egyptian as I can,” says owner Tarek Guirguis, who was born and raised in Alexandria, Egypt. “People, they walk in and say, ‘Wow!,’ it's like they’re in a differ-

ent world. The atmosphere is totally different, it’s like you're not in Hawaii anymore!” The setting lends itself perfectly for the opulent eating expedition that awaits. Spanakopita, Baba Ghanouj, Mousaka, Shish Kabob, Farouge and Baklava are just some of the authentic Egyptian dishes found on the menu. A lunchtime allyou-can-eat buffet ($12.95) is stocked with a wide selection of some of The Pyramid’s most popular items: Tabouleh, Falafel, Greek Salad, Potato Salad, Fries, Hommus, Bamia, Shawerma, Chicken Shawerma, Basamati Rice, Pita and Rice Pudding. “It’s very close to Greek food,” says Guirguis of the health-conscious fare, which is prepared with heart-healthy olive oil and spices rather than fat and preservatives. “We use a lot of cumin, coriander, garlic, olive oil … Cumin is the most important spice we use in Egypt. It’s in almost everything. And then we have some other spices not many people know about, like sumac or zarta.” Sumac, Guirguis says, is made from

4 dried grape skins that are ground into a fine spice, and zarta is a combination of sesame seed, oregano, cumin, salt, pepper and other various spices. “We have lots of vegetarian dishes, too,” he adds, referencing the long list of appetizers like Fool Moudamis and Stuffed Grape Leaves that are made meatfree, along with three vegetarian entrees: the Sphinx, a combination of half Greek salad, spanakopita, falafel and hommus; Vege Mousaka, fried eggplant layered with tomato sauce and mushrooms; and Bamia, a stew of okra sauteed with onion, garlic and green peppers cooked in a thick tomato sauce over a slow fire. “We try to balance our menu between vegetarian and meat-eaters so there’s something for everyone,” says Guirguis. “We don’t have any hot dishes,” he adds. “We use a little bit of red pepper, but you cannot tell it’s hot. Our food is mainly mild — it’s not like Indian or Pakistani.” According to Guirguis, Egyptian and Greek food are nearly identical because of the countries' close proximity to each


inside feature other across the Mediterranean Sea. In fact, after Guirguis moved to Hawaii in 1989, the first restaurant he opened was The Greek Corner in Puck’s Alley. “I had the Greek Corner for five years, and people were complaining that I’m Egyptian and I have a Greek restaurant, so that's how I got the idea to open an Egyptian restaurant,” says Guirguis, who is three-quarters Egyptian and a quarter Greek. “We just celebrated our 15th anniversary in November, and we’re doing very good,” Guirguis adds. “The lunch buffet helps a lot. It’s very good for

customers. They taste the food and remember us, and any party or occasion, they come. # # or nearly 50 years, Pagoda Floating Restaurant has served as a local icon known for its fusion of cuisine and ambience. Surrounded by koi ponds, lush gardens and cascading waterfalls, Pagoda offers up a wide range of Asian, American and Hawaiian-influenced fare enveloped by a tranquil, natural setting. And, after a new management team took over in late December, the menu has undergone a makeover of sorts— more locally grown ingredients are incorporated in an effort to attract new customers while also keeping the regulars coming back for more. Executive chef and food and

beverage manager Jason Takemura is heading the transition, and while he says the process has involved a great deal of work, he takes pride in seeing customers enjoy themselves while dining in the unique setting. Takemura says that despite a change in ownership, the original staff was kept on in order to maintain as much continuity for customer service as possible. The chef, who diners may recognize from his work at the Hukilau in downtown Honolulu, 2 has made g r e a t strides to help everyone from back of the house staff to servers adjust to some of the changes, including incorporation of the new menu. on excursions to the fish auction and local farms to show them where their ingredients come from, and how the fresh products make such a noticeable difference in food quality, presentation and taste. “We’re aiming to bring the Pagoda back to what it used to be,” Takemura says. “We want to bring in a new crowd, and we’ve received a lot of good feedback so far. We were able to

keep the entire staff, and they’re an important part of Pagoda.” While the Pagoda still offers its iconic dinner buffet Wednesday through Sunday from 5 to 9:30 p.m., the restau3 rant has established a new breakfast and lunch menu — offerings that were discontinued years ago prior to Takemura taking over. The Eggs Benedict ($10) has become a favorite among the breakfast crowd, as has the Kalua Pig Hash ($9) that comes alongside a heaping portion of Paniolo potatoes sautéed with peppers and onions. really unique. Kumura has extensive experience as a sushi chef and his techniques are exquisite. The Salmon Ikura Donburi features sushi rice topped with ikura sitting among fresh slices of salmon. Kumura then finishes the dish off by garnishing it with diced cucumber and sprinkles of nori. “Customers also can ask to have their salmon smoked,” Kumura says, adding, “the salmon already has such a nice flavor, we didn’t want to mask it with sauces or anything — we want to keep it simple.”

Variety is the spice of life, and at Pho Kitchen, customers can count on an ever-evolving menu of one-of-akind dishes. “We try to make pho in different ways,” says Alex Chong, who runs the Market City Shopping Center eatery with wife Sandy Lin. “I personally like to make each dish my own, and we experiment many different times,” he adds. “I have 6,744 recipes in my mind, but not all of them we can make into pho.” Some flavor formulas that have made the cut include Oxtail Pho ($12.95) and Wonton Pho ($7.75), which has quickly become the restaurant's signature dish. “Nobody in the island ever had that before,” Chong says of the filling bowl of six pork and vegetable wontons served in a light broth.

n 2007, Alex Chong and Sandy Lin made the decision to transform their Market City Shopping Center photography lab and studio into a restaurant, a brave decision for the husbandwife team that had no prior background in the food industry. “We were in the photo business, and the photo business started P-HO,” jokes Chong, who still runs Alex Chong Photography out of his main office in Waikiki. “The photo lab wasn't really working in this area,” adds Lin, “so we thought, what are we going to do? We going to turn back, or are we going to turn it into another business?” Per the suggestion of one of Lin's friends, the couple decided to move forward and start up a Vietnamese restaurant. “Vietnamese food is very healthy, not too much oil,” says Lin. “And because we're Chinese, we always like soup! So we started up Pho Kitchen and try to bring some healthy kind of food for everybody.” Along with a wide selection of unique pho dishes, other popular items include Spring Rolls and Vegetables ($4.75), Shrimp Summer Rolls ($5.25), Sin To ($3.75) and BBQ Pork Chop & Chicken with Rice ($8.75). “We go out to eat most of the time, and besides Chinese food, the second favorite food we like to eat is Vietnamese food,” admits Chong of how they come up with ideas for their ever-evolving menu. “But we cannot make authentic Vietnamese food,” he quickly adds. “We have to change our tastes to fit in with the local community. “That’s why we call ourselves Pho Kitchen — there’s no limitations what we can make!”

“I think we still are the only ones who offer the Wonton Pho,” he continues. “People like it and it has become a very popular dish.” Oxtail Pho is another popular dish introduced for the first time last month. “It is a soup and it is a diet,” Chong laughs. “It supplies your body with energy. It benefits the blood circulation. It strengthens your bones and muscles. It is good for your kidneys. If you have waist and knee pain, it will be lessened.” To concoct the soup, the oxtail is simmered in beef broth until it is soft and tender, with onion, green onion, raw peanut, mushroom, carrot, cinnamon and ginger later added to the mix. The pho is served piping hot with a side dish of grated ginger and soy sauce.

“In order to bring out the flavors and take out the smell of the oxtail, we add two secret weapons: star anise and dried tangerine peel,” Chong adds. “And instead of Chinese mustard cabbage, we use green lettuce and carrots so people will concentrate more on the oxtail flavor than the mustard cabbage.” New to the menu this month is a Lion Head Meatball Pho ($10.95), an elegant chicken broth-based soup that contains Napa cabbage, green onion, minced ginger, sesame oil, egg and four mouth-watering pork and vegetable meatballs. “We make the meatballs by hand and deep-fry them first, then after that we use the chicken broth and cook it for around 10 to 15 minutes,” explains Lin, who helps create the recipes with her husband.

“The lion head meatball is a very, very famous Chinese dish,” adds Chong of the juicy-yet-crisp meatballs. “It is a symbol of power, happiness and family reunion.” All pho are made fresh every day and come garnished with fresh Chinese parsley, scallions and dry fried onion.

ometimes the authenticity of the cuisine gets lost in the brand when dining at a corporate restaurant, where bright lights and clever slogans are often substituted for simple, time-honored flavors. Romano’s Macaroni Grill, now an international sensation, does not fall into this trap. Instead, the restaurant stays true to its roots, honoring the fresh, simple and genuine flavors of the Italian Mediterranean coast. Since its inception in 1988, Romano’s Macaroni Grill has kept a few of the original dishes on the menu, one of which is Penne Rustica ($16.59).

“To me this dish (Penne Rustica) is Macaroni Grill. It has been with us since the beginning,” says Romano’s Macaroni Grill chef Michael Longworth. Like most meals from the Italian Mediterranean region, Penne Rustica is a celebration of food, created to captivate the taste buds and fill the belly. The dish begins with imported Italian penne pasta, succulent shrimp, roasted chicken and fresh prosciutto, which is typically found along the Mediterranean coast. A light-roasted garlic cream sauce and parmesan cheese are added before the whole dish is baked. “It really is a one-dish meal,” says Longworth. Although dishes are

often tweaked and adjustments are made to most menu items, Longworth assures that the Penne Rustica is right just the way it is.
