et’s face it, the holidays are practically here — Thanksgiving is this Thursday — so why even think about dieting?! Why torture yourself silly this time of year when you can graciously accept all the rich and decadent cuisine before you? Well, that’s how I see it.

Holiday dining is so special to me for many reasons: For starters, it brings loved ones and friends close together to cherish the season, and secondly the bounties of delicious treats that grace the table taste so much heartier — maybe it’s all thanks to an extra helping of that one secret ingredient called love.

So, before the frenzy of holiday cooking gets into full swing, I took this week before Thanksgiving to enjoy a simple, yet sensational dish — macaroni and cheese. No need to get fancy here. Yet, as I began my search for some of the best mac and cheese around town, I soon noticed that many Ono, You Know establishments have taken this old-fashioned comfort food for the soul to a much grander scale, adding a bit of pepper and spice, and everything nice — not to men-

The name says it all, so it’s no surprise that Romano’s Macaroni Grill is home to one of the best comfort foods ever — Macaroni and Cheese.

Adored by both keiki and adults alike, this ooey, gooey, goodness is an allAmerican favorite here at this top-charted establishment, known for its Tuscaninspired Italian cuisine.

Executive chef Michael Longworth, who has 30-plus years of culinary experience, has helped pave the way for Macaroni Grill’s luscious cuisine since he came on board in 2005 when the restaurant first opened at Ala Moana Center’s Hookipa Terrace.

Grand portions are a guarantee when dining here, so bring along the entire family to tackle the feast. While there’s so much to choose from, including lasagna, pizza or penne rustica, the keiki are jumping for joy when it comes to Macaroni Grill’s delectable Macaroni and Cheese (4-ounce portion). You’ll find this favorite on the keiki menu (for ages 12 and under) for $8.59, complete with a soft drink and the sweetest of ice cream sundaes.

“We’ve sold about 4,600 orders of mac and cheese off of our keiki menu since the beginning of this year,” says general manager Kunani Blake. “I think that shows just how popular it is among the kids.”

Seriously, what’s not to love about mac and cheese? Yet, ironically enough, the Macaroni and Cheese at Romano’s Macaroni Grill is made with penne pasta,

not elbow macaroni.

“The penne pasta is mixed with our secret cheese sauce,” Blake says with a smile.

I couldn’t resist. I just had to take a bite, and it was nothing short of delicious, or should I say, onolicious?

“Macaroni and Cheese isn’t only just for kids, adults love it, too,” he adds. “It’s a dish everyone can identify with.”

Parents, let your child eat their kid’s meal in peace. I know they make the food look so ono, but not to worry, there’s a 10-ounce portion ($10.99) of this full-flavored dish just for you!

The Cheddar cheesy sauce is everything here — it’s creamy, rich and ultimately satisfying. I’m crazy about cheese, so, of course, I have to top it off with an additional sprinkle of Parmesan.

Do away with the smoke and mirrors.

RumFire Turn up the heat at RumFire at the Sheraton Waikiki, as it presents patrons with alluring flavors and its signature zest that’s showcased in its recently new and improved menu, emphasizing the best and freshest in local products.

Brett Villarmia serves as executive chef here, and says contemporary tapas are their specialty. He refers to RumFire’s new menu concept as “social comfort food,” quite fitting with the social comfort food of macaroni and cheese. However, RumFire offers a mac and cheese that differs from the norm. With a name like “Angry” Mac n Cheese ($8), you know it’s going to be good — and you know your palate can’t wait to take it all in.

“Our ‘Angry’ Mac n Cheese is some-

thing unique to us here at RumFire — it's like your traditional mac and cheese, only we utilize pepper jack cheese and cheese sauce finished with chipotle,” Villarmia says. “We basically made it RumFire-style and kicked it up a little by adding chipotle and other spices to it, and it also comes complete with a tomato-powder crust. It’s very hip.”

Hip indeed and zesty in every sense of the word. RumFire definitely puts the spice in life — that is, if you can take the heat. Personally, I have a high heat tolerance, so when I’m craving a sinful, yet hearty culinary masterpiece, this is my No. 1 pick.

ooters, an internationally acclaimed restaurant chain, is definitely something to give a hoot about. This casual beach-theme establishment, operated by Atlantabased HOA Restaurant Group, LLC, has more than 455 restaurants worldwide, including locations in 44 states in the U.S. Known for its exquisite Hooters girls, delectable all-American cuisine and ice-cold beer, Hooters makes sure each dining experience is an unforgettable one. The eatery not only reaches sports fans, who enjoy watching games here, but Hooters also reaches out to the entire community it serves.

Dining Out recently paid a visit to this famed establishment located in Aloha Tower Marketplace and chatted up Hooters general manager Abel Diaz, assistant general manager Alex Dahlman and director of marketing Tia Spence, who obviously love what they do. In between the fits of laughter and oohing and ahhing at all the marvelous dishes, we were able to truly take in all that Hooters has to offer. Fun is what it’s all about at Hooters, and the party won’t stop anytime soon!

DO: Hooters has made a name for itself worldwide. Please share some background on this established eatery.

Diaz: Hooters opened its doors in 1983 in Clearwater, Fla., and the com-

pany has been growing tremendously ever since. Today, we have Hooters locations all over the world, from China to Australia and South America. Hooters established a unique concept based on our Hooters girls, who are portrayed to be like the “all-American cheerleader.” Our Hooters Hawaii location opened 18 years ago in Aloha Tower Marketplace, and thankfully we’ve been able to stay put.

DO: Of course, Hooters is the ultimate place to be for everything “food, drink and football.” And there’s been so much talk about its world-famous chicken wings. What makes these wings so tasty?

Dahlman: Our head chef is Justin Morgan, and you can get your chicken wings ($10.99, 10 pieces; $19.99, 20 pieces, $37.99 50 pieces) breaded, or without the breading. Either way is popular now. Boneless also is just as popular as the bone-in wings. We have lots of different sauces, and you can get your wings at a variety of spice levels. They’re just good, oldfashioned chicken wings — deepfried. They’re delicious. We go through more than 20,000 chicken wings a week!

Diaz: Our sauces are the special ingredient that make our chicken wings stand out above the rest.

People can choose from 11 different sauces, including Mild, Medium, Hot, 3 Mile Island — It’s Nuclear, 911 Hot

— Call the Paramedics, Cajun — A Mardi Gras celebration, Samurai — Teriyaki-Style, Spicy Garlic — Vampires Beware!, Parmesan Garlic, Lemon Pepper and BBQ. Diaz: I’d definitely recommend our Daytona Beach Wings, a sweet and spicy treat that’s finished on the grill.

The Parmesan Garlic sauce is very popular, too. Blue Cheese & Celery ($1.99) go great with our chicken wings.

DO: Delicious! Hooters serves up some fantastic burgers as well that meat lovers can’t wait to devour, correct?

Diaz: Yes! Our Western BBQ Burger ($10.99) is one of the most-requested burgers, featuring a mouth-watering beef patty, complete with bacon, Cheddar cheese, onion tanglers and a zesty barbecue sauce. All of our burgers come with your choice of potato salad, baked beans, mac salad or cole slaw.

Spence: The Bleu Cheese Burger ($10.99) and Training Burgers ($10.99, 4 mini burgers) have been drawing in customers, and you also can build your own burgers here, which a lot of people opt to do.

Diaz: And no matter what you order as your entree, you have to order a side of Fried Pickles ($7.99). These lightly breaded, sliced pickles are very addictive. Not too many restaurants have

this, and we haven’t had any one person say that they didn't like our fried pickles!

DO: So, besides burgers and chicken wings, what else flies off the menu here?

Spence: We’re also known for our oysters (market price). People always call to see if we have fresh oysters.

Dahlman: Yes, we have our oysters flown in several times a week from Washington. You can order them traditionally on the half-shell, or you can also get them roasted which also is very good — so if you aren’t a fan of raw oysters you can get them cooked.

DO: What type of clientele do you cater to?

Spence: We cater to a wide variety of customers, from military to locals and tourists. Everyone comes in for

Diaz: Yes, football season is very good to us. Right now we’re showing all the football games on Saturdays and Sundays, and in order to give back to our patrons, we discount the wings and beer on Sundays. You can have domestic glasses and Big Daddy's for a low price!

DO: Hooters offers a full bar to help quench your thirst, correct?

Spence: Correct, we have a full bar now. When Hooters first opened, we only served beer. Now we have beer, liquor, wine — pretty much anything you want, we have it. From domestics to imports, we have it all. Here and there we’ll add new bottles to our collection to give customers something new, but our beers go with everything!

DO: While Hooters’ good food and ice-cold beer can’t be beat, everyone can't resist the Hooters girls. What

DO: Sounds like Hooters is the place to be to escape the stresses of life, and customers can remember their Hooters experience thanks to a wide variety of merchandise available at the eatery. What can customers expect?

Spence: Yes, we sell a lot of merchandise and come up with great shirt ideas. People like the traditional shirts, but we also throw in some fun things, like footballs during football season, for example. We have everything from shirts to beach towels, you name it! In fact, customers like to buy shirts and have the girls sign them and take it home to remember the experience they had here. We also have shirts for kids.

DO: What does the future hold for Hooters?

Diaz: We're hoping to open more locations in the future, possibly in Waipio, and we’re also looking to open a place in Waikiki. Tourists love the concept. In terms of the food, we’re working to add the loco moco to our menu.

Dahlman: We are a restaurant first and foremost. We want to serve delicious, hot food and ice-cold beer, and have sports playing on TV, but you can go anywhere for those kind of things. You can have sports on at home, you can get food at any other restaurant, but there’s no other place that has Hooters girls. We have a bright future ahead of us.

Succulent sauces t’s all in the sauce. Fresh Catch in Kaimuki and Kaneohe is known for its tatsy poke, seafood, meats and plate lunches, and now you also can make dishes like owner/chef Reno Henriques with the help of his new Fresh Catch Hawaii bottled sauces.

In response to numerous requests from customers, Fresh Catch started offering the bottled sauces about seven months ago with the first delivery to Longs Drugs store. It sold out quickly, as did the second shipment. So, it’s no surprise that in such a short time, the selection has grown to eight different types of sauces, and in addition to Longs, the list of retailers carrying it includes Times, Foodland, Walgreens and Tamura’s.

Also, just in time for the holidays, a special four-bottle gift pack is available at Fresh Catch, a three-bottle gift pack at Sam’s Club, and soon-to-be available in Costco as well.

Sauces available are Chef Reno’s Hawaiian Asian Blend, Saute Sauce & Spread, Smokin’ Hawaiian BBQ Sauce, Spicy Hawaiian, Original Savory Sauce, Black Magic, Tasty Poke Marinade and Creamy Salad Dressing.

“We have so many different flavors and it’s simple — everything is in the sauce,” says Henriques, who co-owns FC Sauces with brother-in-law Ona Souza. “You can cook with it or use it as a dipping sauce for already cooked foods, sandwiches, baked fish, fried foods and more. It’s a

At Fresh Catch, the popular Shoyu Ahi Poke, which is the store’s No. 1 seller, is made with the Tasty Poke Marinade. To make it at home, all you need to do is buy the ahi, cut it into cubes, add round onion and green onion (optional) and mix in the sauce.

“All the hard work is in the bottle,” says Henriques. “For our Spicy Ahi Poke, we use the Spicy Hawaiian sauce, for the Soybeans it’s the Hawaiian Asian Blend sauce and on our Salmon Poke it’s the Black Magic sauce. Our poke sauces are very unique because they have their own flavors. For the Spicy Hawaiian, we use fresh Hawaiian chili peppers where most people use Sriracha. And our Original Savory Sauce is used on the Ahi Katsu ($10.25), but we also put it on our Teri Furikake Baked Salmon ($10.50) and Crab Stuffed Ahi Roll ($11.50). It’s that teri-mayonnaise flavor and everybody loves mayonnaise. We also have a new Doritos Salad ($3.25) that’s made with the Creamy Salad Dressing.”

ith Thanksgiving being November’s biggest holiday, it’s no surprise that pumpkin is the flavor of the month at Napoleon’s Bakery. Thus, the bakery is featuring desserts and pastries that infuse the fall flavor.

Among these delicacies are Pumpkin Chiffon Pie ($9.75), Pumpkin Crunch Pie ($9.75), Pumpkin Delite Cake ($13.95; no sugar added), Pumpkin Pie made with Equal Sweetener ($9.95), a Pumpkin Cake Donut ($1.10) and traditional Pumpkin Pie ($8.25).

While the traditional Pumpkin Pie is offered daily, the bakery’s other pumpkin pastries are popular among customers, according to Jan Tsukazaki, general manager of Food Solutions International, which includes Napoleon’s Bakery.

“The Pumpkin Crunch Pie has a crunch topping that includes walnuts, butter, sugar and flour; it’s nice and rich,” she says. “Our Pumpkin Chiffon Pie is a chilled pie and it’s very light, but it has that same pumpkin and spice flavor that you get from normal pumpkin pie.”

The newest addition to the pumpkin-flavored desserts this year is the Pumpkin Cake Donut.

side,” Tsukazaki says. “It has those spices — cinnamon, cloves and ginger — that give pumpkin pie that good flavor. We roll it around in powdered sugar so it looks like a white doughnut, but it’s really pumpkin inside.”

Tsukazaki explains that desserts with less or no sugar also are available, such as the Pumpkin Pie with Equal Sweetener and the Pumpkin Delite Cake.

“The Pumpkin Pie made with Equal Sweetener is a baked pie, but it has a whipped cream topping and we don’t use any sugar in the crust,” she explains. “For people who have restrictions on sugar intake, that’s a good choice. We also have a Pumpkin Delite Cake that’s a sugar-free or no-added-sugar cake … it’s moist and delicious, so it’s another alternative for those who can’t have any sugar.”

While traditional Pumpkin Pie reigns as the bakery’s most popular pumpkin-flavored dessert, Tsukazaki says that the sales of no-added-sugar or sugar-free pies have increased.

“Although that’s — plain, regular pumpkin pie — always the most popular during Thanksgiving, there’s a percentage of people watching their sugar intake because of diabetes who appreciate the choice (of having

no-added-sugar or sugar-free pies),” Tsukazaki says. “So it (sugar-free pies) might not be for the whole family, but the whole family can still eat it because it tastes good. The main thing is that it still tastes normal, so we’ve seen sales (of these pies) increase.”

All these pumpkin-flavored pastries are available during Napoleon’s Bakery’s hours of operation at its Oahu locations only. Exceptions are the Pumpkin Chiffon Pie and the Pumpkin Cake Donut, which are the only items available at the Napoleon’s Bakery Kahului, Maui, location. Prices for the pastries are slightly higher at the Napoleon’s Bakery locations at Ala Moana, Pearlridge and Kahului.

If customers are not crazy about the flavor of pumpkin, Napoleon’s Bakery offers a variety of cakes and pies.

Among the bakery’s regular assortment are Custard Pie ($8.25), Chantilly Cake ($16.50) and Dobash Cake ($11.95).

“Custard Pie also is popular for Thanksgiving,” Tsukazaki says. “Most families will buy one of each — one custard pie and one pumpkin pie. Dobash is our top seller and is everybody’s favorite. For the Chantilly Cake, we cook the Chantilly icing from scratch with good butter, milk, eggs, sugar and vanilla — real quality ingredients.”

sticks with its original recipes and continues to provide customers with signature, homemade-type delicacies. The main Napoleon’s Bakery on Oahu, located in Waipio, bakes all the pastries fresh daily then sends them out to the bakery locations islandwide.

“We make that traditional pumpkin pie like your mom would have made at home,” Tsukazaki says. “We haven’t changed our recipe since the day we opened in 1983.

“We’re like that small, family bakery, except we have a lot of locations. It’s a lot of recipes from scratch and a lot of handwork — not all done by machines.”

nything that claims to be the haven for something sets a high standard for itself. And luckily for customers of Shiro’s Saimin Haven, the restaurant lives up to its lofty proclamation.

The family-run joint has a casual, welcoming atmosphere, and the servers are friendly as they dish out heaping portions of saimin. The restaurant, which has three locations in Ewa Beach, Waimalu and Waipahu, has been the go-to place for saimin since the 1960s. Shiro’s boasts an extensive menu, including 60 different saimin options, all of which were created by restaurant founder Shiro Matsuo.

Matsuo describes his dishes as oldstyle comfort food. And while many of

hen Shiro’s Saimin Haven founder Shiro Matsuo got his assignment as a latrine orderly while serving in the Army in the 1940s, he wasn’t sure what was next for him. All he knew was that despite his less than ideal job, he was going to be the best darn latrine orderly that they had ever seen.

“Whatever you do, give it your best shot,” Matsuo says as he recalls his early military days. And sure enough, his hard work paid off he was soon recognized by the sergeant of the mess hall and was asked to join the mess unit. “The boss encouraged me to learn from him about cooking,” explains Matsuo. He was then promoted to the cook’s helper and later a head cook.

Once his service ended, Matsuo set out to work in the restaurant industry, cooking in various restaurants in Hawaii and California, and teaching culinary arts at Kapiolani Community College.

But Matsuo had long been dreaming of owning his own restaurant.

When a space became available, he jumped at the chance, despite the fact that he had little financial capital to get the business off the ground. “It was the biggest decision I ever made in my life,” he says.

“But against all of these challenges, I followed my heart.”

He opened the first Shiro’s Saimin Haven in the 1960s, and now at 92, Matsuo is still full of energy and a passion for cooking.

The walls of the Waimalu location are lined with Matsuo’s poetry a series called Dear Hearts. Many of the Dear Hearts poems are positive reflections about life and following one’s dreams. Even in casual conversation, Matsuo is a poet. “You have got to have a dream,” he says, sitting in a booth at the back of his restaurant. “No matter how impossible it may seem.”

these saimin dishes have now become favorite meals in the Islands, that wasn’t always the case. When he first started out, “saimin was then just a snack,” Matsuo explains. “I thought, ‘why not make it a meal in itself?’ It had never been done before.”

So, Matsuo set out to create dish after dish of saimin menu items such as Nabeyaki Saimin with Shrimp, Chicken, Beef, Poached Egg, Wun Tun, Vegetables and Garnishes ($9.15), Mochiko Chicken Saimin With Wun Tun, Vegetables and Garnishes ($7.70) and Oxtail Saimin with Gau Gee, Vegetables and Garnishes ($11.95).

“Sometimes I get the idea when driving, or when talking with people, or even when sleeping,” he says. “Sometimes I will wake up in the middle of the night just to write down my idea.”

And while the saimin menu is huge, don’t miss out on Shiro’s other offerings. The fried noodle dishes include Country Fried Noodles with Pork Adobo ($9.30) with a perfect mix of char sui and Spam. Other options are BBQ Short Ribs ($9.30), Shrimp Burga on Bun ($6.80) and Grilled Mahi Burga on Bun ($6.95).

With all of these classic local favorites, Shiro’s has attracted a loyal customer base over the years, and Matsuo is extremely grateful for his patrons. On Nov. 22, Shiro’s Saimin Haven will hold a Customer Appreciation Day. Starting at 9 a.m., the first 100 customers will receive a handmade Wun Tun Sampler, which includes three pieces of Wun Tun in Dashi.

They also will get a copy of Shiro’s Dear Hearts: Common Sense + Realistic Thinking. Matsuo will be at the restaurant signing books from 9 a.m. to 10 p.m. All regular customers who are recognized by

servers will receive a Wun Tun Sampler.

After the pork is marinated, fried and finished in the oven, it is seasoned with honey and served with a spicy dipping sauce. By itself the pork is sweet, savory and just a bit smoky, but with the sauce — which isn’t as spicy as the menu suggests — the dish takes on an entirely different taste as the fresh garlic, lemon grass and chili sauce add yet another element to the flavor profile. It's a definite winner.

If you’re looking for some kick, and I mean “there-ain’t-enough-water-to-coolit-down” type of kick, order the Baked Garlic Chili Wings ($5.50) and tell them to add the sliced chilies. It’ll make you sweat, cry and wish you had ordered a second helping. Whether spicy or mild, the three-step cooking process ensures the chicken is moist and not the least bit greasy.

Two more choices that get high marks are the Fried Calamari ($4.95) and the Steamed Clams in a White Wine Sauce ($7.95). Owner Cindy Chong-Wong says a plate of calamari goes out with nearly every order, and it’s easy to see why.

The panko-crusted squid is lightly fried and very tender with a cocktail sauce that has all the taste you’re looking for, without hiding any of the calamari’s flavor. As for the Steamed Clams, well, just order it with some crunchy garlic bread and enjoy. The clams are fresh and the wine sauce is perfect for dipping. No need to say more.

delicious surprise has recently popped up in Moiliili. Shabu Shabu King, which opened just about three months ago, is a refreshingly new restaurant that reinvigorates shabu shabu.

At Shabu Shabu King, guests start by choosing a broth, as they offer 15 different types including kim chee, miso, healthy herb, spicy, vegetable and more.

You can taste the robust benefits of the Healthy Herb broth. Goji berry, red date, green and white onion, ginseng and longan combine and simmer nicely for a warm, nutritious base. Cost of select broths vary from $5.95 to $10.95, and you may select two different broths for one meal.

ne thing that’s ubiquitous to dining out is, of course, the menu — a guide to what the restaurant offers, providing sometimes in-depth descriptions of each dish. But although many menus provide an appetizing preview of what’s to come, others are almost curt in their presentation. For example, if you’re vegetarian, there’s one phrase that can quickly spoil your appetite: NO SUBSTITUTIONS. It’s a definite put-off, almost as if the eatery only wishes to cater to a certain part of the population instead of striving to please as many customers as possible. In this economy, that just doesn’t make much sense (or cents)!

While discussing the menu at JJ Bistro and French Pastry with owner JJ Luangkhot, we found that substitutions don’t bother him one bit. In fact, he says that all customers have to do is ask and he will adjust the dish, transforming a seafood or meat entree into a vegetarian delight.

“All of our pasta can be vegetarian,” he says, which includes menu items such as Khao Soi Luangprabang (Veggie: $7.95), a combination of fettucini and crispy noodles, carrots, potato and sour cabbage. It’s served with quail egg, but they will be

ith its location in Bishop Square, Café Che Pasta has been catering to the business crowd since 1985. The restaurant continues to serve as one of the area’s busier downtown lunch spots, according to owner and chef Marc Cohen.

“Main customers include people gathering for business meetings,” he says. “Our salsa night (on Friday nights from 10 p.m. to 2 a.m.) is a jam; there’s Latin food. We’ve had salsa night for about 20 years. Since it’s really hard to park downtown, customers park in the Bishop Square parking structure; there’s validated parking after 4 p.m.”

Café Che Pasta is known for producing all-natural, contemporary Mediterranean cuisine, specializing in artisanal foods, including pizzas, pastas and raviolis. The restaurant does not offer a traditional Italian menu, in contrast to many Italian restaurants in Hawaii that serve regional Italian cuisine. Instead, Café Che Pasta has

adopted a more international approach to Mediterranean food, specializing in Italian fare.

“The uniqueness of this restaurant is that we’re the only restaurant that hand-makes artisanal pasta,” says Cohen. “We have a vintage pasta making machine; artisanal pasta is handmade. It’s not fine dining (here), but it’s handmade food.”

Café Che Pasta provides its customers with a variety of signature dishes, including Bruschetta ($9.50), Confit Di Anatra ($15.50), Penne Al Limone ($11.50) — a combination of penne pasta, leeks and spinach sautéed in a lemon confit-fresh nutmeg cream sauce with Italian parsley and dried Italian cheeses — Canneloni Bolognese ($13.50) — handmade pasta crepes with Bolognese meats and vegetables, fresh Parmigiano and Mozzarella cheeses baked in a Tuscan tomato sauce, and Rigatoni Alla Salsiccia ($13.50), the eatery’s original sausage tossed with rigatoni pasta in a Tuscan tomato sauce. Other favorites include a large selection of salads,

such as the Insalata Alla Nicoise ($12.95) — olive oil poached ahi, new red potatoes, string beans, Roma tomato, anchovies, hardboiled egg, Nicoise olives, green leaf lettuce and mesclun greens with a Provencale vinaigrette — the Insalata Caprese ($10.50) — a salad with fresh Mozzarella, basil, crostini, balsamic vinaigrette and Parmigiano and Romano cheeses — and Insalata Mista ($13.95), served with chicken, shrimp and papaya.

“We hand-make all these sauces; everything is homemade,” explains Cohen. “We do serve a lot of seafood because we only use fresh, local seafood.”

Café Che Pasta also serves daily specials, which Cohen comes up with every day. A popular choice among daily specials is the Zuppa E Panino ($11.50), or soup and sandwich combination, and the Pesce Del Giorno ($17.95, fish of the day).

“I would say at least a third, if not half, of our customers order the daily specials,” says Cohen. “Five new daily

specials are presented each day; it’s all new every day.”

In addition to Cohen, the eatery boasts the culinary services of an authentic Italian pizza master.

“Chef Roberto is from Milan,” Cohen says. “On Friday nights, people stand in line and he makes the pizzas right in the window (with a pizza oven). He’s the only pizza master in Hawaii from Italy; he’s been here for 10 years.”

In addition to the restaurant’s authentic Mediterranean cuisine, Café Che Pasta’s artwork also makes it unique.

Customers will notice a variety of large paintings throughout the entire restaurant, which are changed monthly.

“I started this restaurant as an art gallery/restaurant, so we put a great deal of significance on the art that we put on the walls,” Cohen says. “We sell a lot of art … it’s not like the art is a peripheral aspect of the restaurant; the art is an essential aspect of the restaurant.”
