ravel to any thriving metropolis such as New York City, Los Angeles, Chicago and San Francisco, and there you’ll find a multitude of ethnic dining options to satisfy your palate. Oahu, with a population of close to 1 million, also is renowned for its blissful array of cuisine that spans all continents, tastes and backgrounds — it’s really no surprise that the plethora of culinary masterpieces is endless. And as a culinary metropolis all its own, patrons can’t seem too get enough of Big City Diner, a hub for all things ranging from burgers to salads, local favorites and more that cater to each and every appetite.

Dining Out recently paid a visit to Big City Diner’s Pearlridge location where we met with president and owner Lane Muraoka and his friendly B.C.D. ohana over gigantic portions of unrivaled cuiO C T. 2 3 - 2 9 , 2 0 1 1

sine. As we sat on the patio, escaping the afternoon rush that bombarded the dining room, Muraoka accounted the many highlights of this premier establishment since its founding in 1998.

DO: How did the idea for Big City Diner come about?

Muraoka: Basically, we were looking to see what was yet to be offered in Kaimuki at the time. We liked the convenient location, but we wanted to offer something different that wasn’t already being done at restaurants around the area. We wanted to open a family restaurant that had a bit of a sports bar feel. Our Kaimuki location is in close proximity to the University of Hawaii and Chaminade, and we wanted people to come in before or after the games to enjoy the camaraderie and the food. Diners also can watch the game on our many televisions.

We currently have five locations islandwide. We opened our first location in

Kaimuki in 1998, and our Pearlridge eatery is our newest location that we opened in 2007. You’ll also find us in Kailua, Ward and Waipio.

DO: Today, you can find pretty much anything and everything your heart desires on the menu. Initially, what was the concept of Big City Diner? Was it primarily a burger joint?

Muraoka: Well, burgers were one aspect of it — we knew it was critical — but we also wanted a healthful aspect to the menu that offered salads, sandwiches and entrees, and, of course, breakfast.

DO: Delicious. Burger fanatics will be happy to know that burgers are a specialty here. Sandwiches as well, correct?

Muraoka: Yes. All of our burgers are 100 percent lean ground steak half-pound patties, cooked medium, and are served with skin-on fries, lettuce, tomato, onion, a dill pickle spear and mayo on a fresh potato bun. The BIG Burger ($11.99) is a classic, as it’s charbroiled with Cheddarw cheese, caramelized onions, bacon and California avocado.

As for sandwiches, a top-pick is the Malibu Chicken Sandwich ($10.99) with tender, flavorful chicken, fresh sauteed mushrooms, Jack cheese, California avocado with roasted garlic mayo, served on a whole wheat bun. w DO: Rumor has it that Big City Dinert

DO: Most importantly, what about desserts?

Muraoka: We have a variety of desserts, but a popular option is The BIG Sundae ($7.99), presenting diners with three scoops of Bubbies famous vanilla bean ice cream topped with chocolate and caramel sauce, Oreo cookies, whipped cream, mac nuts and chocolate chips. You also can order a “Not So Big” single scoop sundae for $4.29.

DO: Big portions are a guarantee at Big City Diner.

Muraoka: Of course! We don’t want anyone to leave hungry and we want to make sure people get their money’s worth. However, even though our portions are large, we do have a very healthful aspect to our menu — we can cater to vegetarians as well as those just opting to be healthy. For example, you can order a garden burger and ask for a poached egg or egg whites versus a fried egg. We do offer brown rice, and a lot of customers take advantage of that.

DO: It’s evident that there’s something for everyone here. Yes? Muraoka: Most definitely. Our goal is to please our customers, and in fact a lot of our menu options have evolved from requests or suggestions from diners here or our employees. If you have a

party of 12 and you have everyone from grandma and grandpa to a little 2year-old, everyone at that table will be able to find something that they want to eat. We really pride ourselves on the keiki menu.

DO: When people think of Big City Diner, what is the first thing you want to come to mind?

Muraoka: When people think of us, I want them to think warm, welcoming and comfortable. Customers can come in straight from the beach or straight from work. If you were to look at our spread of customers, we have senior citizens having breakfast and coffee, who may be sitting next to politicians discussing things happening in the state, and then we may have tourists from California who just finished a morning surf session at the beach.

DO: Promotions and specials are going on all the time here. Does this draw in a big crowd?

Muraoka: Oh, definitely! We have a Go Bows promotion. It’s a joint venture with the University of Hawaii’s athletic department to get more fans in the stands. If they go to the game, they can bring their ticket stub within 30 days of the date to be redeemed after 9 p.m. nightly. If you buy one entree you get 50 percent off the second entree with the purchase of two beverages.

Regarding specials throughout the restaurant, we have Big Game Mondays, Twitter Tuesday and Military Appreciation 'Thank a Trooper' Thursday, to name a few.

DO: Big City Diner is very active in social media. Tell us about your experience with Facebook and Twitter when it comes to promoting your eatery.

Muraoka: Through social media (such as Facebook and Twitter) we’re able to post different specials, and I think it’s definitely extended our relationships with our customers. Twitter and Facebook target a whole new community of people, especially with Twitter Tuesdays. People can follow us on Twitter @BCDLane and @BigCityDiner. They also can find Big City Diner on Facebook.

DO: What can people expect from the extensive bar?

Muraoka: Our smaller restaurants (Kailua, Kaimuki and Ward) have five to six taps. The newer locations (Pearlridge and Waipio) have 12. From there we offer 10 varieties of beer and 10 varieties of wine, and 25-ounce tiny beers. Our bar is open from 7 a.m. And when it comes to our drinks, the B.C.D. Famous Samurai Li Hing Margarita ($6.95) is a signature item made with Jose Cuervo Gold Especial. The locals love it!

DO: Big City Diner provides catering services as well, correct?

Muraoka: Yes, we do islandwide catering based out of our Pearlridge location, and we can provide our customers with anything from hundreds of little bentos to a full-on spread complete with a bartender, full-service waiters and waitresses, and we’ve even cooked at people’s homes. We’ve catered weddings, birthday parties —

practically everything from A to Z. We also do home deliveries.

DO: The restaurant has garnered much success over the years. You must be proud.

Muraoka: Yes. Our employees, management and customers are wonderful to work with and have really contributed to our success, especially Rob Nitta, managing partner of the Kaimuki and Ward locations. It’s really like a family here. During Christmas time, our regular customers bring presents and treats for our employees. We love to see our customers come in as children and years later bring children of their own to dine here. We even had one couple bring their newborn baby to the restaurant, straight from the hospital! It’s amazing that we have that connection with our customers.

DO: Where do you see your establishment headed in the near future?

Muraoka: We’re looking at opening more locations, so people can be on the lookout for that.

Hauntingly local treats ext Sunday (Oct. 30), Sam Choy’s Breakfast, Lunch & Crab adds a Halloween theme to its family-friendly Keiki Night with a keiki costume contest and free goody bags.

The restaurant will look extra spooktacular with festive decorations on display, ,and staff members will be dressed up as well.

On top of the treats will be tricks by strolling magician Alan Arita, who is a regular at Keiki Night every Sunday from 6 to 8 p.m.

For dinner, keiki meals (for children ages 12 and under) are free with every adult meal purchased. “Most of the dishes on our menu are Sam Choy’s original recipes,” noted Jeffrey Gaspar, general manager. Signature dishes include the Loco Moco made with half-pound homemade hamburger patty on a bed of rice and Sam’s special brown gravy, and grilled sweet onions ($10.95). There’s also Sam’s famous Original Fried Poke featuring wok-seared marinated Island fish ($11.95), and Macadamia Nut Crusted Chicken Breast with shiitake mushroom cream sauce and papaya pineapple marmalade sauce ($20.95).

There also are nightly specials, such as a 2 pound deep-fried Snapper for two ($45); and a variety of desserts including Macadamia Nut Pie with Ice Cream ($6.95) and a refreshingly sweet Lemon Custard Pie ($6.95). And, of course, the crab (Dungeness, Alaskan King and Snow Crab Clusters) is always popular and available for lunch and dinner.

The spacious restaurant can seat 230, however, reservations are recommended.

There’s also an on-site brewery with Aloha Beer offered in five different styles —

iners often forget Chinese food when thinking about pupu options. That’s surprising, considering the family style of dining that is a hallmark of Chinese cuisine means any menu item can become an appetizer.

From duck to dim sum, there really are no limits.

At Jade Dynasty Seafood Restaurant in Ala Moana Center, they’ve embraced this idea and have created dishes that are large enough to share and inexpensive enough to be enjoyed alone.

The Dynasty Stir Fry Pork Chops ($12.95) is marinated for 12 hours in lemon grass, basil, garlic and soy. It is then quick-fried to ensure a crispy skin wrapped around a moist interior.

The Chicken Wings with Ham Har Sauce ($6.95) is a nod to traditional Hong Kong-style dining that combines traditional Chinese flavors with Western influences. The wings are marinated in a white wine garlic, soy and shrimp paste sauce and then slow cooked until tender and juicy.

“We try to mix Chinese and Hong Kong styles to create our own distinct flavors,” says general manager Gary Chan.

That is never more evident than in the Baked Snow Mountain Char Siu Buns ($3.50). “It's our version of manapua,” says Chan. The truth is that is it much better. The buns are smaller than traditional manapua but contain the same amount of filling. A light, flaky skin is wrapped around char siu pork that is both sweet and creamy. Chan says he isn’t sure of the exact process his chefs use to make the dish, but they have gone as far as Hong Kong to learn how.

Another East meets West item is the Fried Fresh Fish Balls ($4.50). The swai fish (part of the flounder family) is fried and served with a sweet and spicy chili sauce. The dish is based on a Hong Kong

lunchtime favorite and has been embraced by hungry Ala Moana workers as well.

Then there is the dim sum, China’s ultimate gift to finger foods.

The menu contains dozens of choices that change about once a month.

“We change our menu because we want our return customers to have something new to try every time they come in,” says Chan.

Jade Dynasty Seafood Restaurant is located at Hookipa Terrace, on the fourth floor of Ala Moana Center. The restaurant is open daily from 10:30 a.m. to 10 p.m. While walk-ins are always welcome, a reservation isn’t a bad idea as the restaurant has quickly made a name for itself in the 10 months it has been open. Gov. Linda Lingle held a campaign event at the restaurant, and the Chinese Consul General in Los Angeles has been a two-time visitor.

“I guess we must have done something right for him to come back a second time,” joked Chan.

lthough Thanksgiving is about a month away, Hilton Hawaiian Village’s Bali Steak & Seafood restaurant is already promoting a special four-course holiday menu bursting with local fall flavors.

“That’s (Thanksgiving) the start of any hotel’s feature for the holidays,” says Jeffrey Vigilla, the hotel’s executive chef.

“For Thanksgiving alone, we’ll be serving about 4,000 meals total.”

Bali Steak & Seafood, renowned for its fine oceanside dining experience, utilizes a combination of local ingredients, seasonal flavors and the restaurant’s signature dishes to create its Thanksgiving

Prix Fixe Four-Course Menu ($75 for adults, $45 for children).

“The unique part of this menu is the signature touches that we put into each dish,” says Matt Alleshouse, the restaurant’s chef de cuisine and newest staff member.

“The menu speaks of Hawaii, but fall (flavors),” echoes Vigilla. “It’s (the menu) utilizing local harvest into fall type of cooking.”

The menu’s first course features a Roasted Local Kabocha Pumpkin Soup, served with Big Island Goat Cheese Whipped Cream. A Grilled Big Island Baby Romaine Salad with Candied Walnuts follows.

“We’re using the roasted local Kabocha squash (for the soup); it’s not your typical pumpkin,” says Vigilla. “A lot of our vegetables and products are from the

islands — the baby romaine is from a farm in Waimea and they grow smaller romaine lettuce for us.”

“This (the salad) features a unique cheese from Surfing Goat Dairy on Maui,” Alleshouse adds. “It’s a creamy, not-too-rich goat cheese. The unique part about that (salad) is we’re actually grilling the romaine.”

menu can choose from one of four entrées, including a Kona Sea Salt Brined Roasted Tom Turkey — complete with Baked Corn Stuffing, Fall Vegetables, a Cranberry Compote and Giblet Gravy — a Slow-Roasted 12-Ounce Prime Rib, the Pan-Roasted Kona Kampachi Fillet and the Island Vegetable Risotto, a vegetarian dish.

“You’re getting a choice of a little bit of everything,” says Alleshouse. “We’re going to do a twist on the turkey dish with cornbread stuffing, so it’s not your traditional bready stuffing. The 12-ounce Prime Rib is our Bali influence. We’ll do a cauliflower and potato puree with our Kona Kampachi. (For the Island Vegetable Risotto), we’ll harvest all the fresh vegetables, roast them and fold them into the risotto itself and serve it with a white truffle foam, which will feature rich, earthy flavors.”

Vigilla mentions that the restaurant’s use of local produce, as well as highquality products, makes it unique.

“The prime rib is seasoned with local sea salt from Kona,” he explains. “For this particular salt, the water is drawn up from the depths of 2,000 feet, sundried and hand-harvested. This (salt) is from pure ocean water and it retains a lot of the natural minerals. Our philosophy is to use sustainable resources — we want to make it work not only at Bali Steak & Seafood, but at the entire hotel.”

The Thanksgiving Prix Fixe FourCourse Menu wraps up with a Fall Bread Basket and a Dessert Tasting, including a Pumpkin Pie with Spiced Cream, a Spiced Berry Cobbler with Marscapone Ice Cream and a Ginger Cream Brulee.

“They’ll (customers) get a trio of desserts on the plate,” says Vigilla. “Our bread basket features a country cranberry bread and multigrain bread to tie everything together.”

have the option of ordering a Thanksgiving meal for four ($120), including several items from the Bali Steak & Seafood’s Thanksgiving menu.

The Waikiki Starlight Luau also is presenting guests with a unique Thanksgiving menu.

“The Starlight Luau is Sunday through Thursday,” says Vigilla. “It’s a unique rooftop luau dining experience, a full Polynesian show. It’s a traditional Hawaiian luau menu with the addition of the turkey, pumpkin pie and things that go along with Thanksgiving.”

In addition to all the on-premises Thanksgiving festivities, Vigilla brings a team to the IHS homeless shelter every year to produce a Thanksgiving meal.

“I’ll be bringing a team down there and cooking in the shelter’s kitchen,” he says. “We’ll be bringing 500 portions, everything from soup all the way to dessert. We’ll be personally serving all the tables there to make sure they have a great experience.”

agoda Restaurant, a hidden oasis in downtown Honolulu, has been serving up the best in Hawaiian, Asian and American food since 1964. Executive chef Jason Takemura has embraced the growing effort among restaurants here in Hawaii to incorporate as many local ingredients into the menu as possible. All the while, he experiments with local flavors and gets to know his customers, resulting in some of the best local grinds around.

And when loyal patrons speak, Takemura knows how to deliver. Wesley Park, a good friend and regular at Pagoda, wanted a dish combining local favorites Oxtail Soup and Ramen. Takemura went to work, eventually blending the traditional soup broth with that of another popular dish, the Kim Chee and Kalua Pig Saimin. Adding even more layers of flavor, shiitake mushrooms and shrimp dumplings complete the dish.

"He said you should put this on the menu, and it’s one of our best-sellers now," explains Takemura, who named the creation Mr. Park’s Oxtail Ramen ($12). This full-flavored dish contains ten3 der, braised local-style oxtail with fresh ramen noodles and vegetables.

“After dabbling with a few ideas, our owner Ron came up with this dish and it has really taken off, becoming one of our most popular dishes,” says kitchen manager Ric Kodama.

Lechon Kawali ($10.99) is pieces of pork belly fried in a kawali, or traditional Filipino-style wok. The crispy pork is then combined with an assortment of tomato and red, green and white onions. Everything is then mixed with Ige's specially made shoyu and vinegar sauce.

“I love this dish. You have to eat the pork with the onions and tomato, the citrus adds to the overall flavor,” adds Kodama. “We show a lot of football games and sporting events here, and this dish definitely goes great with beer.”

t’s only mid-October, but the chilly, rainy winter weather is already moving in. That means it’s the perfect time for a hot bowl of saimin. And what better place for saimin than The Old Saimin House?

This noodle eatery, once called The Saimin House, is the same that has delighted taste buds since the 1960s next to Tamashiro Market.

Now located on North King Street, The Old Saimin house has a new name and new location, but still offers

the same great dishes.

After nearly 50 years of business, The Old Saimin House still serves up oldfashioned noodles just like back in the day. “We hope to maintain the simple menu and style that our parents taught us,” says manger Lois Ikei, whose family has been running the joint for four generations. Ikei explains that the saimin noodles are “old-fashioned style,” which refers to the texture of the noodles. “When we cook the noodles, we try to keep

hat is now a local family favorite first started in the late 1950s as a small venue. Tomizo and Mitsue Ikei first opened The Old Saimin House near Aala Park with a little gas stove under a tarp tent. “There was a nearby gas station, and when that would close, they would pitch the tent and put up their stove,” says Lois Ikei. “They used to sell the noodles for 25 cents.”

The original recipe was the old-fashioned saimin that the restaurant still uses today. In 1962, the Ikeis moved their roadside attraction indoors to a location near Tamashiro Market, where it became a late-night hot spot for local bowlers. The hangout was stocked with a jukebox and games like pinball and Space Invaders. Today, The Old Saimin House is still a hot spot for those looking for quality saimin and other local favorites.

Many patrons come to relive the memory of the classic noodles from the past. “It's very nostalgic for some customers,” Ikei says. “Many customers who (visited) the restaurant in the 1960s are now bringing in their children or grandchildren.”

These returnees will be happy to know that the menu hasn’t changed much since then. “We like to keep our menu very simple,” Ikei says. “It’s comfort food.”

Regulars at The Old Saimin House can attest to the quality, old-fashioned style of the cuisine.

Customer Ken Ikeda told Ikei: “Recently, my family has been frequently visiting The Old Saimin House … as I miss the old style saimin that I knew growing up in Hawaii. I love the simplicity (and) the texture of the noodles.”

Another regular, Wayne Yasutomi, recently told Ikei: "I first acquired the taste for the The Saimin House’s Wun Tun Min when it was next to Tamashiro Market back in the late ‘60s. Through four generations, the family has kept the same great original recipe."

f you encounter people getting excited to see the color purple early in the morning, then you know that they are referring to the famous purple shiso musubi (cooked rice rolled in shiso red powder) at Fukuya Delicatessen & Catering, a Japenese deli located at 2710 S. King St. Fukuya is an okuzaya, which is a casual storefront restaurant serving carry-out Japanese specialities such as tempura, musubi, gobo, inari and much more. Prices for deli selections range from 55 cents to $3. Even if you don’t like Japanese food, your taste buds will thank you for localstyle favorites such as teri meatballs, hot dogs, tofu fish burgers and mochiko chicken.

Let it cool then cut in half, sideways, and set aside.

Sushi Ichiban provides its customers with a takeout menu, which differs from the dine in menu in one way — teishoku entrées for takeout do not come with miso soup or dessert. Customers prefer to dine in at the eatery, according to Kusaka, who notes that the restaurant is the most crowded on weekends.
