Unwrapping the Joy of Shrimp Scampi means indulging in one of my all-time favorite dishes on earth — shrimp scampi. Yes, sinking my teeth into succulent pieces of shrimp flavored with an abundance of garlic and butter is all my appetite could ask for on this Christmas Day. So, without further ado, I share with you some of my favorite Ono, You Know establishments that serve up some of the best erry Christmas, Ono readers! By shrimp scampi you’ve ever tasted. ($9.95). The sight and smell of this dish alone will have your mouth watering, as the aroma of fresh garlic and butter is too much to bear — I just had to take a bite.

“This is a very popular dish here,” says Kit. “It’s one of those that you definitely can’t go wrong with.”

Intrigue your senses and enjoy every aspect of this dish, featuring six magnificent morsels of shrimp and two pieces of steamed broccoli swimming in a pool of savory garlic butter sauce. The meal comes complete with a side of toast that’s great for dipping, and you can add on a side of pasta for an additional $1.95. If you’re a seafood/crustacean lover like I am, then I promise you, you’ll absolutely love it! And it’s Christmas Day, for goodness sake, go ahead and spoil yourself silly with shrimp scampi that’s bound to make it on to your favorites list!

zesty garlic and lemon, and garnished with sprinkles of chopped parsley. Be sure to squeeze an extra bit of lemon juice to the dish for that additional burst of flavor.

And while my loyalty still remains with the Caprese Pasta, I must say the Shrimp Scampi Spaghettini is definitely a winner in my book — because, come on, what’s not to love when you have loads of carbs, savory butter, garlic and juicy pieces of shrimp all piled onto one dish? It’s pure bliss! And who’s counting calories at this time of year?

Definitely not me. So, bring it on — I’m ready to tackle the Shrimp Scampi Spaghettini and savor each and every bite.

that makes the dish. If you’re a garlic fanatic, you’ll simply adore the finely chopped slivers of garlic that add a bit of punch to the entree.

New Year, New Feast at Jade Dynasty

O

n the heels of its one-year anniversary this month, Jade Dynasty Seafood Restaurant has experienced a bounty of success as the premier restaurant to open in the U.S. as part of Paramount Banquet Halls, which currently operates more than 20 locations throughout Hong Kong.

This acclaimed 8,250-squarefoot establishment presents patrons with the tastiest morsels of avant-garde Hong Kong-style cuisine, and coowners Ave Kwok and Alan Ho have taken the art of authentic Chinese dining to a whole new dimension.

“We spent more than $3 million on this restaurant alone,” Ho says. “All of our custom-made décor was fabricated in China by skilled artisans and then shipped to Hawaii. If you look closely, you’ll see all of our furnishings are made from the finest materials, including granite and Italian marble, and even rich teak panels.”

But what’s even more impressive than the exquisite chandeliers that hang from

the ceiling and the extravagant horse statues that stand in all their glory as you enter the restaurant, is the decadent Happy New Year/Kung Hee Fat Choy menu available now through Jan. 31 ($398 for a table of 10/$238 for a party of six).

“Chinese New Year falls on Jan. 23, so this menu actually pays tribute to three holidays — Christmas, New Year and Chinese New Year,” says general manager Gary Chan. “It’s the second year that we’re offering such a vast menu — and we received such a wonderful response last year.”

The menu features a total of 10 luxurious dishes, resulting in a feast fit for royalty.

Imagine a spread that begins with an irresistible Dynasty Style Appetizer Platter and Imitation Shark’s Fin Soup with Chicken. For starters, the Dynasty Style Appetizer Platter includes heaping portions of roast duck, pork chop

with lemongrass, beef shank, pork shank and jellyfish.

“There’s five different appetizers to choose from because the Chinese believe that there’s five different kinds of fortune that come together for the new year,” Chan explains.

Once you’ve thoroughly enjoyed the appetizer, cleanse your palate with a hot bowl of steaming Imitation Shark’s Fin Soup with Chicken. The soup will tickle your taste buds with a piping hot chicken broth filled with a sympho-

ny of fish molded to look like shark fins, a variety of mushrooms, bamboo shoots, egg and tender pieces of chicken.

Next, patrons must prepare themselves for Steamed Fried Rice with Roasted Garlic, Live Lobsters with Garlic and Butter Sauce, Steamed Whole Fish (uhu), Sauteed Shrimp and Scallop with Honey Glazed Walnuts, and Braised Dried Oysters with Chinese Black Moss.

“We receive a shipment of live lobsters from our local supplier every day,” Chan says. “The oysters also are a signature item for Chinese New Year, along with New Year Good Luck ‘Jai’ that’s on the menu as well.”

Jai, otherwise known as “monk’s food,” is a vegetarian dish that consists of mushroom, long rice, cabbage and more. It’s a rather simple entree that’s believed to bring good luck. Speaking of good luck, Steamed Chicken — Dynasty Style has been nothing but a hit for the restaurant.

“Steamed Chicken — Dynasty Style is one of our top sellers,” Chan states of this savory chicken that’s steamed and marinated with a succulent wine sauce, and seasoned with salt, pepper and other

secret spices.

Finally, to complete the meal, enjoy the sweetest ending with Mochi Balls in Sweet Ginger Broth dessert.

“We’re known for hosting the greatest of parties,” Ho says. “The restaurant seats 350 guests and we host at least 20 parties on average every week, and especially with the new year and Chinese New Year approaching, we’re expecting a lot more bookings.

“We just brought in a new karaoke machine from Hong Kong in which our customers can select from 27,000 songs in Korean, Japanese, Chinese, Vietnamese and English,” he adds. “In the VIP room, we have a camera that’s facing the stage, so that we can see the performance from the room on the flat-screen TV. We also offer a projector, sound system and more for parties.”

And if all this isn’t enough, Jade Dynasty also is drawing in many diners with its unique dim sum options, available from 10:30 a.m. to 5 p.m. daily. Yi Xing Liu serves as the eatery’s own dim sum chef and has traveled to Hong Kong to receive contemporary dim sum training.

“Our most popular dim sum

On Jan. 22 (Chinese New Year’s Eve) Jade Dynasty will scare away evil spirits with a lion dance, in hope of bringing in only the best of luck this new year.

“In the new year I hope that business keeps improving — we’ve been very fortunate up till now and I hope that fortune continues,” Chan says.

ince opening its doors 31 years ago, Tony Roma’s in Waikiki recently “refreshed” its restaurant with an updated look and menu.

“This refresh has brought the dining room from the 1980s into the 21st century,” says general manager Grace Villagracia. “Over the years and with changing tastes, we knew that our flagship restaurant needed to appeal to a new generation yet still retain our original commitment to our Hawaiian heritage.”

Inside, customers will find new furniture, including tables, chairs, booths and lighting. The bar also has a new countertop and stools.

And special to this Waikiki location is the Hawaiian decor, such as surrounding hibiscus-etched mirrors, as well as a large Diamond Head-etched mirror at the back.

Also, the artwork throughout the restaurant has been changed from random paintings to photographs of old Hawaii.

“It used to be really dark inside,” adds Villagracia. “Now, it’s brighter.

The walls have a lighter color paint. Also, we took a wall down that divided the restaurant, so it’s more open.”

The menu has been updated too, but, of course, Tony Roma’s signature dishes are still available, including the Original Baby Back Ribs ($28.99 full slab, $24.99 Roma rack, $18.59 half slab) featuring tender, lean pork loin meat,

basted with Tony Roma’s Original or your choice of one of its other delicious sauces. Another signature dish is Shrimp Scampi Pasta (the most popular of the pasta dishes) featuring a generous portion of shrimp lightly sauteed with garlic, fresh basil, tomato pesto and a hint of spicy chipotle, served over linguine and topped with shaved Asiago cheese ($18.99).

And there’s the Grilled Mahi Mahi ($24.99) enhanced with one of four signature toppings (Sweet Thai Chili Sauce, Kickin’ Sauce, Garlic Scampi Butter, Tomato Pesto Salad) and served with rice pilaf and a fresh vegetable.

“Many people think we just have ribs,” says Villagracia. “But we also have seafood, steaks, pasta, even sandwiches and burgers. We also recently added flatbread and panini sandwiches.”

On Oahu, Tony Roma’s also has a location in Aiea, which has been open for 26 years and underwent renovations about four years ago.

Sushi Ichiban stays at the top E

ight years ago Sushi Ichiban chef Marc Kusaka escaped from a life of graphic design and website creation for the subtle creativity of sushi. He hasn’t looked back, and the evergrowing list of patrons of the Kaimuki eatery couldn’t be happier.

Sushi Ichiban has seen consistent growth since it opened in June of last year. Much of that has to do with Kusaka’s homemade sauces and his handling of delicate ingredients.

The pupu menu includes 15 items, but it’s the natto dishes that are a specialty. The Maguro Natto ($7.50) is made with diced tuna, natto, kaiware, bonito flakes, green onion and nori, and Ika Natto ($7.50) is similar but made with sliced squid.

“A lot of the items on the pupu menu used to be specials, but they were so popular we put them on the daily menu,” says the Pearl City High School grad.

another customer favorite, and is made with salmon roe and grated daikon. Kusaka gently washes the roe to remove excess salt that many places leave. “I like the cleaner, more natural flavor,” he says. The Mozuku

($3), which Kusaka describes as having a somen noodle-type consistency, is made from seaweed and sliced ginger in his freshly made citrus vinaigrette dressing. The Ankimo, another popular item, consists of monk-

fish liver with green onion, spicy grated daikon and ponzu.

Sushi Ichiban gets its fish daily from the United Fish Agency auction. The Japanese specialty fish are flown in twice a week, ensuring freshness for all menu items.

“Our challenge is to keep fresh product at all times. That’s why we don’t keep much fish in stock — so it will always stay fresh.”

Don’t let the fact that your dinner is being made by a former Web designer fool you, there are similarities. Sushi is about presenting something that looks simple but can take hours to prepare, much like the website that is simple to use but requires hours of code writing. Some of Kusaka’s seemingly simple sauces take 12 hours to make, but the only thing you may notice is how good it tastes. It is even open Christmas Day.

Cheers for the coffee crowd I t could be the holiday spirit, but business is brisk these days at the chic, modern coffee bar Kissaten. Of course, it doesn’t hurt that it’s right across the street from Ala Moana Center, especially at this time of the year, but there has to be more than just convenience at play here.

And there is. Kissaten in Japanese translates to coffee shop, but more a meeting place than just a café. And since it’s open 24 hours a day, seven days

t Uncle’s Fish Market & Grill, it’s all about fresh fish and family.

The eatery, which first opened in July 2007, sports a cozy, homey and authentic atmosphere on Pier 38 waterfront, where numerous photos and old fishing gear surround the interior. Besides its familyinspired décor and atmosphere, the restaurant is known for its fresh fish.

“The restaurant was made as a tribute to all those uncles in everyone’s life here in Hawaii, and the old fisherman uncles, too,” explains restaurant manager Sean Simpson.

“The motivation for starting Uncle’s was a tribute to our fishing history and our fishing culture here in Hawaii.

“Uncle’s is located on Pier 38, which also is where the Honolulu Fish Auction takes place, six days a week,” he adds.

“At the restaurant, the real focus is on the freshness of fish and we’re able to highlight that because the auction is right there.”

It’s no surprise that when it comes to the eatery’s most popular menu items, the fresh fish dishes are the frequent choice.

The Opakapaka Fresh Fish Plate (market price), topped with crab meat and served with white or brown rice and french fries, is a customer favorite.

Another is Uncle’s Famous Garlic Ahi ($17.95), sautéed and topped with green chilis and capers, and drizzled with Uncle’s mild spicy soy sauce and green onions.

“Uncle’s Garlic Ahi is a sashimi-grade cut of the fish,” explains Simpson. “We usually recommend that people get it medium rare and it really highlights the quality of the fish.

There’s no need for too much seasoning; it’s perfectly good seared. It’s almost like sashimi with a little bit of sauce on top.”

Other customer favorites include the Fresh Ahi Belly ($14.95), sautéed with a citrus soy sauce.

“We do it (the Fresh Ahi Belly) a little differently,” says Simpson. “Instead of it

being deep-fried, it has a citrus shoyu sauce on top and it’s slow cooked, so it’s really, really tender and soft, so people like that.”

When it comes to Uncle’s signature dish, Simpson is quick to note the Fresh Ahi Belly as well as Uncle’s Signature Ahi Poke Tower ($15.95), a tower of sashimigrade poke layered with guacamole and ahi tartar, topped with tobiko on a bed of rice and nori and served with tortilla chips.

In addition to its lunch and dinner menus, Uncle’s Fish Market & Grill provides a diverse sushi menu, complete with unique names and combinations. The sushi menu is now available to customers Thursday through Sunday.

“We’ve had sushi at Uncle’s for a couple of years, but it was only on Thursday nights (before),” shares Simpson.

“But we really developed the sushi menu in the past six months and made it a regularly featured item.”

The sushi menu at Uncle’s includes several different specialty rolls, of which the most popular include Poke on the Pier ($17.95) and Auction on

the Block ($15.95).

Auction on the Block features a crispy shrimp tempura, snow crab and kaiware roll topped with spicy tuna and avocado, while Poke on the Pier is a snow crab, avocado and cucumber roll topped with sashimi-grade ahi, fried ogo and kukui poke sauce.

“Poke on the Pier is a personal favorite of mine,” Simpson says.

Uncle’s Fish Market & Grill features different weekly specials, but to prepare for New Year’s festivities, Simpson emphasizes the eatery’s sashimi party platters, available to customers who are planning 2 gatherings of any sort.

“We have a large party platter and a small party platter,” he says. “We do that normally under our catering services, but this is a special deal. The small sashimi platter is $65 and it comes with 80 pieces of sashimi. The large platter is $85 and comes with 100 pieces of sashimi and 6 ounces of poke as well.”

he road to opening Saigon Pearl has been a long one. Back in 1982, within a building complex where Nordstrom now sits, Mai McDowell and her family opened a Vietnamese restaurant called Annam House.

“Originally, we were one of the first Vietnamese restaurants on the island,” says McDowell.

After a 15-year run, a few location changes and a brief hiatus; McDowell and her brothers Tai and Dung Khau came out of retirement to start anew with Saigon Pearl. Opened in August on Kona Street behind Ala Moana Center, the recent reinvention’s expansive Vietnamese menu — featuring vermicelli noodle salads (bun) and soups (bun nuoc), pan-fried noodles, rice plates, ramen, sandwiches, desserts and more — sets it apart from the rest.

fter being involved in the tourism industry for much of his life, The Fat Greek Waikiki manager George Stephanos is an expert at knowing what customers want. He also brings a passion for and knowledge of Greek food to the restaurant. A resident of Hawaii for the last 35 years, Stephanos is originally from a town in New Hampshire that had a tight-knit Greek community.

“When I was growing up in those neighborhoods, on Saturdays or Sundays, all your friends and your family would come over,” Stephanos recalls. “And there was always food and laughter, and a lot of talking.”

Stephanos says that The Fat Greek Waikiki aims to extend that kind of friendly, welcoming environment to its guests.

“We wanted to create that philosophy here,” he explains.

“When you come in, you are treated like you are a family member.

“It's a good quality of life — you enjoy your friends, you enjoy your food,” he says. “And we just want to share that with people, you know?”

With this kind of atmosphere, The Fat Greek Waikiki is an ideal place to kick off the weekend or celebrate the holidays. The restaurant provides validated parking at the Waikiki Marina. On Fridays, you can take advantage of three-hour validated parking so that you can enjoy the Hilton’s weekly fireworks show.

The restaurant offers Happy Hour from 4 to 6 p.m. daily, featuring discounts on selected menu items and $1 off beers and wines, including a number of Greek wines.

Healthy, Fresh Greek Eats

ith its vibrant décor and authentic cuisine, The Fat Greek Waikiki is like being whisked away for a quick getaway to Greece. The Fat Greek restaurants, which include two other locations and another on the way, is quickly becoming a local favorite for Mediterranean eats.

The Fat Greek Waikiki opened about a year ago, and this location offers both sit-down service and takeout.

Manager George Stephanos says that the sit-down style of the venue has allowed them to introduce a few new menu items, such as Cheese Saganaki ($8), which combines a tangy cheese with a gourmet mountain cheese. “We fry it up, crust it on both 14 | DINING OUT | DEC. 25, 2011-JAN. 1, 2012

sides, and lace it with a little brandy,” Stephanos explains. “And then when it comes out, we light it so it comes flaming to the table.”

Another new offering is Stuffed Sweet Peppers ($7), which includes sweet red and yellow mini peppers that are stuffed with feta cheese and shallots. The peppers are served with pita bread, and the two complement each other perfectly. This little treat joins other appetizers like Kalamari ($8) and Mussels ($8).

Popular dishes include Greek classics like Gyros ($9.95) and Falafel ($10). There’s also the House Special Shrimp ($12), which features garlic shrimp. The restaurant also offers daily

specials, including Couscous ($19.95) Monday, Lamb Shank ($19.95) Thursday and Moussaka ($15.95), which combines lamb, eggplant and vegetables accented with spices and Bechamel sauce, Friday.

The Fat Greek features healthy, fresh food. For Stephanos, featuring healthy ingredients is important for both taste and nutrition.

“I think it’s important just for quality of life, and I think people look for that,” he says. “And you can tell … when you bite into something fresh, there’s a big difference in the taste.” He says that the restaurant receives fish

and produce from local fishermen and farmers, adding that people are always asking for local ingredients.

“The kind of food that we put out is very important,” Stephanos says. “It’s not only the food, I mean obviously the taste is very important. But the presentation also makes a big difference here.

When something comes out looking good, it tastes even better.”

The chefs at The Fat Greek frequently try out new dishes. The daily specials, which are offered from 5 to 10 p.m., also include a week-by-week Chef’s Choice dish each Saturday.

Another recent menu addition is the Shrimp or Ahi Salad ($12.95).

Stephanos says that the staff is currently working on other new dishes, which will include more lamb and stuffed pepper items.

Another big change is coming for The Fat Greek: On Feb. 1, the restaurant will open a new location in Kailua.

The new menu items will be unveiled with the opening of the Kailua venue.

hen it comes to one of the highlights of Kobe Japanese Steakhouse and Sushi Bar, located in Waikiki, consistency is the first thing that comes to mind, according to restaurant owner and general manager Roy Nakamura.

“We’re going on our 39th year,” Nakamura says. “This is the only Kobe Steakhouse on Oahu, and it hasn’t changed much (since it opened). This eatery includes a lounge and sushi bar; the dining area is upstairs and downstairs.”

Kobe Steakhouse is known for its traditional teppanyaki style, a style of Japanese cuisine in which the food is cooked on an iron griddle.

“Overall, teppanyaki dining is a simple concept,” states Nakamura.

“The defining thing is everything is brought to your table in its raw state, so the product has to be fresh because it comes out raw.

The chef then prepares everything for you, from your vegetables to the steaks, chicken and seafood.”

Although he says the eatery does not have a signature dish, Nakamura says that one of the Kobe Steakhouse chefs constantly encourages customers to try the scallops.

“He’s (our head chef) proud of our scallops,” Nakamura says. “He tries to push our Scallops & Steak Combo ($34.95) — Nova Scotia scallops and tender steak — or Teppan Scallops ($29.95).”

Shrimp ($29.95) and Steak & Shrimp ($34.95). All dinners come with a Teppan shrimp appetizer, shabu-shabu soup, vegetables, rice and tea. Nakamura reveals that Kobe Steakhouse will soon release a new menu, which will remain the same overall as the current menu, but will include the re-introduction of an old favorite.

“On our new menu, we’re featuring the Kobe Rib-Eye Special ($34.95),” says Nakamura, of the tender, juicy 10-ounce steak dinner that includes a teppan shrimp appetizer, pickled vegetables,

shabu shabu soup, assorted grilled vegetables, bean sprouts and hot green tea. “The new menu is basically a reprint of the old menu … like I said, hardly anything changes here, but we’re hoping to release it before the end of the year.”

In addition to the dinein menu, Kobe Steakhouse features a menu for its sushi bar,

including a wide range of sashimi combinations and choices of nigiri sushi and maki sushi. While the restaurant only has dine-in services for its dinner menu, Nakamura says that customers can choose takeout at the sushi bar.

“The California Roll ($9) is always a popular one, and then there’s offshoots of that roll,” explains Nakamura. “The Rainbow Roll ($14) is basically the California Roll with pieces of sashimi on top, like the maguro, hamachi and salmon, mixed with avocado, so it’s a very colorful dish. The same is true with the Sixty-Nine Roll ($17) — it’s a California Roll with unagi on top of it. The Spicy Tuna Roll ($11.50) also is a popular one.”

Since March, Kobe Steakhouse has provided a special pupu menu from which customers in the lounge area can order.

“The pupu menu is Kobe Scallops geared a little ($10) more toward the locals, with the popular Ahi Poke ($10),

While Kobe Steakhouse is not promoting any monthly specials, Nakamura notes that the restaurant provides “Super Sunset Specials” nightly from 5:30 to 6:30 p.m., when select items — including Teriyaki Chicken, Daily Fish, Sukiyaki Steak and the Teriyaki Steak & Chicken Combo — are offered at lower prices.

“We discount some menu items; it’s generally $4 to $5 off a dinner,” Nakamura says.
