ments had it all. Some masterpieces were more decadent than others, but the common thread equated to a symphony of refreshing fruits that I simply couldn’t resist!

appy Sunday, Ono readers! So, being that your Thanksgiving feast probably lulled you to sleep for days, I would guess that if you’re anything like me, then you’re only now regaining full consciousness, slowly emerging from that zombie-like state, thanks to the intense kanak attack. It’s been said that the turkey itself is the culprit in after-lunch/dinner lethargy, but truth be told, turkey or no turkey, it’s common to feel the effects of the feast.

Therefore, while I still have mounds of Thanksgiving leftovers waiting to be devoured in the refrigerator, this week I had to keep it somewhat simple for the sake of my stomach — fresh fruit creations were what I was after. Berries, apples, lychee and more — you name it — the following Ono, You Know establishAbove: Stuffed after Thanksgiving, the editor can’t wait to take a sip of Panya’s refreshing Double Apple Juice ($5.75).

When it comes to freshness and quality, Panya Bakery, Bistro & Bar is at the top of its game.

Owners Annie and Alice Yeung work diligently day-in and day-out providing local diners with an eclectic EuroAsian fare.

And while I am a die-hard fan of the eatery’s Laksa, a Malaysian-style noodle dish complete with shrimp, fish cake, aburage, bean sprouts, corn, aromatic herbs and more, I was craving something refreshingly fruity and light — you know, the opposite of what a Turkey Day feast is all about? Enter Panya’s Salmon Sashimi Rainbow Salad ($14.95) and Double Apple Juice ($5.75). Executive chef Brian Chan, who has worked for the establishment for more than 12 years, has perfected the art of creating these masterpieces.

“The Salmon Sashimi Rainbow Salad is popular here,” Chan says, and in my opinion it’s an after-Thanksgiving must.

This exquisite dining option features fresh salmon sashimi, tossed with pickled ginger, pickled shallots, sliced apples,

cucumbers, tomatoes, crisp romaine lettuce and strawberries, topped off with won ton crisps, peanuts and sesame, dressed with a zesty wasabi shoyu sauce, which provides a flavorful kick for your palate. And, I must reveal that while the apples and strawberries give a vibrant color to this already remarkable dish, it’s that subtle sweetness that it also provides that makes this salad stand in a class all its own. You can’t go wrong.

Now, to quench my thirst, Panya’s Double Apple Juice is the ultimate choice and the epitome of freshness. Utilizing fresh green apples and pineapple juice, chef Chan tells me it’s all in the blending technique, thus creating one of the freshest juice blends my taste buds have ever witnessed. The contrast of tangy and sweet results in a superlative combination of tastes.

For the world-class foodie in you, make sure your flight path crosses the International Crepe Passport ($12.19), a magnificent dish comprising of your choice of crepe, two eggs and four pieces of meat. According to IHOP Kuhio assistant manager Greg Lewis, the Fresh Fruit Crepe is an IHOP classic.

ilton Hawaiian Village Waikiki Beach Resort will celebrate the holidays with its “Mele Kalikimaka” meals at its signature restaurants, including the award-winning Bali Steak & Seafood. On Christmas Eve and Christmas Day from 5 to 9 p.m., Chef de cuisine Matt Alleshouse will present diners with a feast for the kings.

Dining Out recently caught up with Chef Matt, who gave us a sneak peek into what to expect come Christmas. One thing’s for sure — it’ll be a very merry season for your appetite.

DO: What is the concept of Bali Steak & Seafood? What can patrons expect when they dine here?

Alleshouse: The concept of our restaurant is steak housedriven, but it’s a steak house with an island flair. What we try to do here at Bali is blend the best of both worlds. Obviously, we’re here on this amazing island, and we have all these wonderful sources of fresh and local fish, so we incorporate that into our menu, just as much as we incorporate our fine steaks as well.

DO: Are the holidays a great time for business here at Bali?

You folks are always doing your best to give back to the community, correct?

Alleshouse: Yes, the holidays are huge, not only just for Bali Steak & Seafood, but for the Hilton as well. We’ll be 2 running three to four different holiday parties.

And this year for Thanksgiving we went down to a homeless shelter and presented 500 to 600 meals there as well. I would say we served about 2,400 meals for

Thanksgiving alone.

In terms of giving back to the community, it’s a huge thing for me. I don’t just want to be a chef at a restaurant or a chef at a hotel, I want to be a part of the community. For me, getting involved with different things, such as helping to feed the homeless and also working with the local vendors and farmers, gives me that sense of community and gets me rooted a little quicker.

DO: As a chef, what kind of impact do you hope to bring to Bali Steak & Seafood?

Alleshouse: My philosophy is simple elegance — don’t overwork the great local ingredients that you have. It’s really a farmto-table philosophy that comes truly from the heart. I hope to soon be digging in the dirt along with the farmers on a Saturday morning and then coming back to work here Saturday night.

Here at Bali, and with our style of cuisine, if we’re going to use these elevated ingredients, then we’re going to use our creativeness and the techniques that we’ve learned along the way to enhance the ingredients, not mask them. You shouldn’t have to use additives or create flavors when it’s all right there naturally for you. I would say close to 75 to 80 percent of our ingredients are local products, but it’s my hope to get it to where we’re using 90 to 95 percent of local ingredients — hopefully one day 100 percent.

We always go to our local farmers first, they’re our No. 1 source, including Nalo Farms, Hibara Farms and MA‘O Farms.

DO: Christmas is just around the corner. What is Bali doing to celebrate the holiday season?

Alleshouse: Well, here at Bali, for Christmas we’re focusing on a four-course prix-fixe menu that will be available for dinner on Christmas Eve and Day ($75 per person). We also have a three-course tasting menu

You kind of get the best of both worlds. The adult menu begins with a choice between Kona Lobster Bisque with Lobster Fritters, and Hamakua Mushroom Boullion. The salad is either a Waimea baby romaine salad or Hirabara Farms mixed greens. For their entrée, diners can choose one from among seven choices: Filet Mignon with Béarnaise Sauce, Prime New York Steak with peppercorn sauce, Prime Rib of beef with au jus, Molokai Honey and Balsamic Pheasant, Lemon Grass and Butter Seared Island Snapper Filet, Baked Seafood Pot Pie with Scallops, Fish and Kona Lobster Cognac Cream Sauce, or Hauula Tomato Risotto with winter vegetables (for our vegetarians).

The prime-aged New York steak is seasoned with our own special spice mix, Kona sea salt and marinated in a garlic oil. Finally we top it off with a Gorgonzola and smoked Kona Sea Salt butter that's melted right over the top and served with a peppercorn demi glace. As for dessert, we’re serving the ever-famous Chocolate Hazelnut Yule Log with egg nog panna cotta and raspberry coulis. It’s a traditional Christmas dessert that we slice down. It's very fresh and delicious.

DO: You had mentioned a keiki menu. What can the kids look forward to?

Alleshouse: The kids are definitely not shorted by any chance. This year, the meal begins with Hamakua Mushroom Bisque and Hirabara Farms mixed greens salad. Keiki can choose among three entrées, including Petit Filet Mignon with Béarnaise Sauce, Grilled Chicken Breast with Herb and Garlic Roasted Potatoes,

DO: Is this Christmas meal something that’s done every year here at Bali Steak & Seafood?

Alleshouse: The Hilton’s always done holiday celebrations.

The holidays are always a huge event here, because the hotel always attracts so many people this time of year, and it would seem like almost a waste not to capture it. We definitely gear toward both tourists and locals — the more locals we see in here the better. For the locals, we do offer free validation when you dine here.

DO: Wonderful! Sounds like you love what you do. What are the rewarding aspects of your job?

Alleshouse: I would definitely say that I get to do something that I’m very passionate about, and I get to take that to a professional level and a global stage, so to speak. Cooking is something I’ve been doing since the age of 6, and I haven't looked back since. I’m very fortunate to be able to do something that I'm very much in love with.

aimalu Chop Suey, better known as the ‘House of Gau Gee’ to loyal patrons, has been feeding hungry tummies with Northern Chinese cuisine for nearly 50 years. New owner Jacky Wang assures that all the same local favorites remain and would like to encourage new patrons to try the eatery as well.

“We just want to thank all of our customers and let them know how much we appreciate them,” Wang says.

For more than 20 years, diners from all over Oahu, even outer Islands have flocked to 2 the restaurant to try their signature Roast Pork. Wang describes the wonderfully indulgent pork belly, complete with crackling skin, as “crunchy, tasty, moist … yummy, yummy!”

The ever-popular Char Siu and Roast Duck also are available, and all of these platters are perfect for holiday family gatherings. Call the restaurant (488.1616) for details on ordering these savory roasted meats.

While management at Waimalu may have changed, the same welcoming atmosphere lives on. After the lunch crowd has died down, you will find friendly staffers sitting in the back, molding the famed Crispy Gau Gee ($9.25 for eight pieces) daily.

Other local favorites include Honey Glazed Walnut Shrimp ($11.25) and Salt and Pepper Pork Chops ($9.25).

topped with a heaping portion of kalua pig and a poached egg doused in a Hollandaise sauce, and finally garnished with lomi salmon. The meal also comes complete with a side of fruit and your choice of a breakfast starch. As for the Chili Cheese Omelette, Franks says, it’s one of their simplest dishes. This irresistible omelette is filled to the brim with savory chili and melted Cheddar and Jack cheese.

“Customers usually hear about these dishes through word of mouth, and then they come in and request it,” Frank states. “And the Guinness Shake is really popular as well, but it’s only available at our Pearlridge and Waipio locations.”

Nothing fancy here, Big City Diner’s renowned shake purely consists of Guinness stout and chocolate ice cream.

says. “Popular chicken dishes include the fried chicken, mochiko chicken, furikake chicken and nori chicken. The nori chicken is fairly new.”

As the holiday season approaches, customers can take advantage of Fukuya’s catering menu. Customers can pick from a variety of chicken, salads and fish, some of which also are available on the eatery’s deli menu. Highly requested selections for catering include the assorted sushi trays — 43 ($29), 74 ($47) and 101 ($59) pieces — and assorted mochi trays, categorized in 40 ($26), 50 ($31) and 70 ($43) pieces.

“We can do holiday catering, from home parties to office parties, any type of catering,” states Iwahiro.

Even though Fukuya closes on Mondays and Tuesdays, Iwahiro says that catering services are available for large parties on those days.

“For walk-ins, we’re open from Wednesday to Sunday, but we have catering available after hours,” he confirms. “On Mondays and Tuesdays, we don’t have any walk-ins, but we do large functions.”

Customer favorites tend to be the shrimp tempura ($1.45), shoyu pork ($1.80) and assorted sushi, including nori maki ($4.60) and inari (75 cents for small, $1.15 for large). The specialty rolls — teri beef ($4.60), chicken ($4.60) and hot dog ($4.35) — and musubis, especially the shiso musubi ($1.15), are also 3 extremely popular.

“I hear a lot of people say, ‘I like that purple musubi,’” Iwahiro says, referring to the shiso musubi, which is rice sprinkled with shiso red powder. “Our mixed sushi also are always popular.”

Iwahiro states that many of the chicken dishes are popular during football season, as fans often order trays of mochiko and garlic chicken.

“Chicken sells really well, as does the shrimp, because they are easy to eat,” he

Fukuya Deli & Catering did not begin as a catering business.

Reflecting on the eatery’s history, Iwahiro recalls how Fukuya Deli & Catering — which first started in 1939 — originated as a two-person operation that closed as soon as the food ran out.

“Two people would come in the morning, cook, put it (the food) out and once it sold out, that was it,” he says. “Now, we keep producing as things go out — we keep making more tempura, chicken and everything. In the 1970s, it (Fukuya) already was transitioning into replenishing, so that took more manpower because you need people cooking while you’re selling.”

Around that time, Fukuya ventured into the catering business and started to expand into what it is today. Although Fukuya is still a

popular choice for catering, Iwahiro notes that the type of events requesting their services has changed.

“Back in the day, we did a lot of weddings,” he says. “Now, they (the weddings) are all at hotels; before, they were usually at churches. During the wedding months, we would be booked; three weddings every Friday or Saturday. That’s how it was, but then everybody transitioned and times changed … that’s why we started to do funeral catering.

(Now) we do a lot of funeral catering for the mortuaries.”

he appetizers at the Top of Waikiki are as stunning as the views from its lofty perch above the Pacific. The items, created by executive chef John Neff, are both simple and complex, and visually appealing. It’s not enough, he says, to simply put good food in front of the diners, he wants to impress. He’s done it.

The Coconut Shrimp with Pineapple Salsa ($15) is coated with a coconut and macadamia nut crust and served with a cold soba noodle salad with a sesame-miso vinaigrette. A restaurant standard for decades, Neff takes it beyond ordinary with a freshness and presentation that most places can only hope to achieve.

Another standard gone upscale is the Spicy Ahi Poke Stack ($13). Served with a Sambal and Shoyu sauce, crispy won ton skins, avocado crème, papaya slaw and micro greens with a kiwi-lime vinaigrette, the stacked appetizer is another example of Neff’s desire to wow the eatery’s healthy mix of visiting and local diners. The avo-

cado crème is a natural complement to the high-grade ahi, and when eaten with the won ton skins creates a creamy, crispy and slightly spicy flavor profile that takes poke far past the ordinary.

New to the menu are the Day Boat Scallops ($17) and the Camembert En Croute ($15).

Both are simply outstanding.

The pan-seared scallops are served with an Ewa sweet corn pudding, braised pancetta, and a Kamuela tomato and Maui onion relish. The slightly salty pancetta adds a nice counterbalance to the naturally sweet scallops, with each ingredient coming together perfectly when swiped through the corn pudding. Trust me, you’ll be looking for other things to sop up the remaining pudding. It’s that good.

Picking one item out of the 12 appetizer options as a favorite is not an easy thing to do, but there was something special about the Camembert En Croute that kept me going back for more.

mention that I devoured everything put in front of me.

It’s a hazard of the job.

The Camembert is wrapped in a puff pastry and served with a side of candied Cajun walnuts, Granny Smith apples, greens and grapes tossed in a pomegranate balsamic reduction. Each piece can be enjoyed by itself, but on Neff’s advice I sliced the Camembert and added a sampling of each ingredient. He was right. Each bite was a combination of creamy, sour, salty and sweet.

The pupus don’t end on the regular menu. Each night Top of Waikiki has two Happy Hours that feature $4 cocktails, wine and beer and $7 appetizers, which include BBQ Pork Sliders, Calamari, Braised Kalbi Ribs with bok choy and Maui onion kim chee and more.

Saturday night is live entertainment from 10 p.m. to midnight.

is the season for sharing — and that’s where Japanese nabe and veg’with nout Ichiriki restaurant come in.

Terri Hefner Nabe, a Japanese hot pot typically made with fish-based broth and filled with fish, beef, chicken, pork and vegetables, is popular for sharing any time of year.

And Ichiriki knows its nabe.

“We use fish broth in everything,” says co-owner Issei Kazama, when asked if Ichiriki offers any options for those who don’t eat meat or fish.

Oh, well, that’s that, I fret.

But wait. Kazama pauses, then continues: “We do get the occasional vegan who comes in, and for vegans/vegetarians we use plain water and seaweed, and then give

them ponzu sauce on the side for flavor.”

Yes! It’s not on the menu, so we’re happy to share the secret with Dining Out readers.

There’s a healthy dose of vegetables in the special vegetarian nabe ($19.95) — won bok, bok choy, gobo, chives, carrots — as well as kuzukiri (arrowroot noodles) and tofu and aburage for protein. And, Kazama notes, “lots of mushrooms,” including enoki, shiitake and shimeji. No oil is used in this preparation, so it’s light and clean-tasting, allowing the natural flavors to shine through.

Celebrating with food is part of all cultures, and on Christmas Day, Jade Dynasty Seafood Restaurant at Ala Moana Center is presenting its holiday favorites to the public with the Christmas Lunch Buffet.This buffet is exactly what may have coined the term feast.

A few items on the menu are Succulent Char Siu, Beef Chow Fun, Siu Mai (Pork Hash), Snow Crab Legs and Roast Duck.The buffet also will include Har Gau Shrimp Dumplings, cooked to perfection in a traditional manner that takes years to master.

“How we (in the

Chinese culture) decide whether the dumplings are good is how transparent it looks from the outside. If it is too solid it doesn’t really taste good, but if it has that transpar-

ent look, you know it will be good, it is not easy to make this way,” says owner Sylvia Liang.

ovember marks the one-year anniversary of Golden Duck Restaurant’s Kahala location on Waialae Avenue. The eatery — which was originally located on McCully Street — prides itself on serving a wide range of Chinese cuisine at reasonable prices and good customer service, according to manager Darlene Fong.

“At this location, we serve high-quality food at affordable prices,” she says. “The average price per customer can be as low as $7. Compared to other restaurants, we do a variety of Chinese cuisine, as well as local-style food. We treat our customers just like family members or friends; we treat them like royalty.”

To commemorate its first year anniversary, Golden Duck Kahala is doing a special promotion — the everpopular Chinese Chicken Salad (usually $8.25) and the Oyster Sauce Chicken with Cake Noodle (usually $9) are offered to customers for $5.99 each. counted price for Crispy Gau Gee, which is being offered at $5.99 for 10 pieces (originally $6.50 for 10 pieces).

The eatery also offers other specials that are not a part of the restaurant’s menu, such as an asparagus dish with a variety of accompaniments like scallops ($13.95), shrimp ($10.95) and beef, pork or chicken ($9.75).

When it comes to Golden Duck’s signature dishes, the Oyster Sauce Chicken ($8.25), Boneless Minute Chicken ($9.25) and Stuffed Duck ($9.95) are the more popular entrées. Frequently requested dishes also

include the Tenderloin Beef with Twin Mushrooms Sizzling Platter ($10.95), Steam Sea Bass (per piece; $11.95), Shrimp with Honey Glazed Walnut ($11.95), Chicken Salad ($8.25) and Oyster Sauce Chicken with Cake Noodle ($9).

“For the Steam Sea Bass, we use the best quality; it’s very tender,” explains Fong.

“Likewise, for the Tenderloin Beef with Twin Mushrooms, we use a highquality tenderloin beef.

Jumbo shrimp are used for the Honey Walnut Shrimp dish, and the sauce is cooked differently from other restaurants.”

Customers have the

option of ordering takeout at Golden Duck; currently, they can order any item off the takeout menu and receive 15 percent off.

“The takeout menu is the same as the dine-in menu,” says Fong, “and it’s 15 percent off the entire menu.”

In addition to its regular menu, Golden Duck offers dim sum from 10 a.m. to 3 p.m. The Hong Kong Style Custard Tart ($2.88) is one of the most popular dessert items.

“The Hong Kong Style Custard Tart is different from a regular tart,” says Fong. “We use a very thin crust and it’s not too sweet.”

Other popular dim sum items include the Siu Mai

($3.28), or Pork Hash, Steamed Char Siu Bao ($3.28) and Steamed Spinach & Shrimp Dumpling ($3.28).

With the holiday season rapidly approaching, Fong states that a variety of banquet menus are available for customers. These menus include popular entrées such as the Peking

Duck, Salt and Pepper Pork Chop and House Special Chow Mein.

While Golden Duck Kahala provides a variety of dining menus for its customers, Fong adds that the eatery also serves alcohol. It can accommodate a variety of parties, because of their services and banquet menus.
