orks are overrated. In fact, we probably place too much emphasis on all utensils. Sure, table manners are important, but when talking about treats, sometimes it’s best to appreciate sheer goodness by using all our senses — touch included.

This week, I decided to switch it up a bit and marvel in the sweetest of treats made to be eaten with your hands. Now, I know it may not seem like the most refined thing to do, but let’s face it, being able to actually touch the food you’re eating really adds to the complete dining experience.

So, wash your hands and come along with me to feast on handfuls of alluring creations that’ll awaken your sweet tooth. I know you’ll be tempted by these

One sure way to my heart is through cupcakes, which are the sweetest of finger foods yet. Lucky for me, there are many bake shops around town that specialize in cupcakes, but Larry’s Bakery on Lawehana Street remains a favorite when it comes to satisfying my cupcake cravings.

Siblings Iris and Lance Yafuso are the masterminds behind this Salt Lake bakery and have what it takes to whip up marvelous cakes, cookies, doughnuts, butter mochi and, of course, cupcakes!

I recently met with Iris in her cozy bakery — a location you could say is the baker’s equivalent to Willy Wonka’s chocolate factory. There, we shared in exuberant cupcake conversation that would make your mouth water.

“We offer an assortment of cupcakes here,” Iris says. “We have non-refrigerated cupcakes — including chocolate, red velvet and vanilla flavors with a buttercream frosting — that are perfect for school parties. We also do a vanilla or chocolate cupcake with a Chantilly frost-

ing or dobash. These need to be refrigerated.”

or more than 20 years, Sushi King has served its throng of loyal subjects delectable creations. From salad to soup and, of course, sushi, the South King Street establishment rules when it comes to taste, quality and selection.

Those looking for a great meal are in luck as Sushi King is open daily for lunch, and stays open until 2 a.m. six nights per week as a dinner and late-night destination. What better way to cap a perfect evening than to enjoy a few bites (and drinks, if you’re in the mood) with the king?

Shu-Lee Kondo, owner and manager of Sushi King, took some time away from the busy eatery to fill in Dining Out on some of the keys to the restaurant’s success.

DO: What is it about Sushi King that keeps people coming back for more?

Kondo: We’ve been open for 20 years, and we have lots of variety. For the quality of food we offer, at such good prices, the customers are so loyal. You see so many familiar faces. Not only the adults, but you see kids faces when they’re small, and they come back when they’re grown up.

DO: What are some of your most popular dishes?

Kondo: The Chirashi Deluxe ($24.95). When you ask customers about this one, they know exactly what you’re talking about. The platter features all kinds of different fresh, raw fish and it looks so beautiful when it’s brought out. Also, the Hamachi

Kama ($16) is the jaw of the hamachi and is almost all meat. It’s broiled and served with lemon; that’s very popular with local people.

DO: How about some of your other seafood offerings?

Kondo: The Ahi Salad ($14.95) incorporates fresh pieces of tuna, and offers a healthy alternative for customers looking for that. Also, the Fresh Oysters ($7.25) are a favorite pupu item.

DO: How would you describe the style of cooking at Sushi King?

Kondo: Our style is very authentic.

It’s not trendy where you mix in contemporary American styles. It’s very, very authentic and we incorporate local flavors. The customers appreciate that, and they keep coming back for more!

DO: What have customers said about your hours of operation, especially the ability to come in for a hearty meal in the wee hours of the morning?

Kondo: We’re open seven days a week; we never close! We get pretty busy, and the customers know there’s parking available and we have a midnight special that is extremely popular. So, people love to come in late, especially on weekends.

DO: Are there plans to add items to the menu? Or do you take an “if it ain’t broke, don’t fix it” mentality?

Kondo: We’ve been offering the same menu for many, many years, and were trying to come up with some new items to surprise our local guests.

We’re working on it right now, and some to the items may include some healthy alternatives. We just keep on trying; we hope to keep the regulars coming back and to incorporate some new guests as well.

Healthy options at reasonable prices

n abundance of figure-friendly dishes that everyone can afford are on hand at 123 Wok. The restaurant has long been known for its healthy meals, such as the ever-popular Hot Pots ($8.99), made with natural soup bases. Since opening its original location in Singapore back in 1994, the restaurant has taken the same great flavors to Maui in 2004, and to its current location on McCully Street earlier this year.

Owner Wendy Ying Li takes great pride in the freshness and quality of the food she serves. “We never use MSG in any dishes, ever,” she says. “We always use a special blend of spices mixed with fruits and vegetables to bring out the original flavors of each dish.”

What’s more is that the chefs at 123 Wok go the extra mile by always using fresh meat and produce, as well as clean batches of leaner canola oil to ensure excellent flavor every time.

When it comes to appetizers, diners can’t stop eating the crispy Salt and Pepper Chicken Wings ($8.75) or the Crab Rangoon ($6.25), made with real crab meat. Vegetarians also love the Home-style Tofu ($8.75).

And whoever said it’s difficult to find healthy food that tastes good? Business people and students alike enjoy the Healthy Lunch menu, which allows customers to choose from 35 different options ranging in price from $6.99 to $7.95. Sweetening the deal, all entrees come with a spring roll, steamed rice, Chinese salad and a drink.

To offer additional healthy options at reasonable prices, Li came up with the popular Lunch Special menu. For only $6.99, you can choose three from 30 menu items to savor with steamed rice, lo mein or the soup of the day. Li suggests the Double Mushroom Beef, Orange Chicken or Mochiko Chicken, which is also the No. 1 item. “Once people try it, they come back and order the party platter,” she explains.

Don’t miss out on a great delivery deal either. Next time you are craving favorites such as Moo Shu Pork ($8.75) or General Tso’s Chicken ($8.95), place an order of $13 or more and receive free delivery from 10 a.m. to 9:30 p.m. within 4 miles of the restaurant.

Steamed sea bass fillet of fish ($12.95) This dish features boneless, fresh sea bass and is cooked in a ginger and onion sauce made with the chef’s secret spices. It also is available in a black bean sauce.

Shrimp with honey walnuts ($12.95) A Chinese classic, the creamy shrimp in this dish are lightly battered to crunchy perfection and accented by candied walnuts. Even when you take it home, the color and taste are as if you never left the restaurant.

o commemorate Oktoberfest, a 16- to 18-day beer festival held annually in Munich, Germany, restaurants in cities all over the world are hosting special celebrations.

And Waikiki’s Wailana Coffee House is no exception, as it’s planning a special menu that celebrates German cuisine.

The restaurant will serve items from its Oktoberfest menu this Friday and Saturday, Oct. 7 and 8, from 11 a.m. to midnight.

“It’s a fun menu for us and we started it about 10 years ago,” says Kenton Tom, the general manager at Wailana.

Four main entrees are featured on the menu. The most popular item is Smoked Ham Shank ($15.25), which is braised slowly with special seasonings so it’s tasty and tender.

The shank is served with a robust Dijon mustard sauce.

The special menu also features Bratwurst ($12.50) — authentic

German sausage, grilled and generously plated — and Smoked Pork Chops ($13.95), a large portion of grilled center cut loin chops.

“For all of the above items (Smoked Ham Shank, Bratwurst and Smoked Pork Chops), they are served with sauerkraut, German potato salad, Bavarian red cabbage and chocolate mint cake,” Tom says.

The Bavarian Breakfast Special ($9.75) is the last entrée featured on the menu.

This special is a combination of crispy potato pancakes, bratwurst sausage and two large eggs (any style), served with sour cream and applesauce.

“For this breakfast, we have German potato pancakes, which we normally don’t serve but we make special for Oktoberfest,” Tom says. “They are made with potatoes.”

Also included on the menu is

House Wine by the glass, Chablis, Rose or Burgundy ($3.75 each). Takeout options also are available.

Beyond its Oktoberfest menu, Wailana is known for its numerous breakfast entrees.

Especially popular are the eatery’s “All-You-Can-Eat” Pancakes Breakfast Special ($6.35), which includes all the pancakes one can consume served with two eggs and two strips of bacon (no sharing is allowed and customers are not allowed to take home leftovers). Another breakfast staple is the “S.O.S.” Special ($7.50) — available on Saturday and Sunday — which features creamed beef on toast served with two eggs.

Other popular early morning dishes are Old Fashioned French Toast ($5.75) — special egg bread stuffed with guava jelly, dipped in a rich egg and cream blend and served with whipped butter and assorted

syrups — and the restaurant’s signature Eggs Benedict ($9.85), a toasted English muffin served with smoked ham and turkey breast, poached eggs, hollandaise sauce and hash browns.

The restaurant’s Chef’s Daily Specials are customer favorites for lunch or dinner. These daily offerings — including the Mahimahi and Teriyaki Chicken ($11.25), Catch of the Day Ahi ($11.25) and Corned Beef and Cabbage ($10.50) — come with the customer’s choice of soup, salad bar or fruit cup that comes with the meal.

As depicted through its Oktoberfest menu as well as its regular menu, Wailana strives to provide customers with delicious dishes at reasonable prices.

“We cater more toward the local people,” says Tom of the eatery, which first opened in 1969 and has attracted both locals and tourists since. “It’s upscale casual dining and we give high value for your dollar — for breakfast, the average price per customer is about $8 and for dinner, it’s about $12.”

Although Wailana Coffee House only features its Oktoberfest menu annually, it offers specials and promotions throughout the year for other holidays and special events.

“We have promotions for all the major holidays,” Tom confirms. “So the next one coming up is Thanksgiving, then we have specials for Christmas and events like Mother’s Day and Father’s Day.”

ustomers always have a plethora of menu items to choose from at Kit n Kitchen, the Euro-Asian eatery located in Varsity Center. However, clients by the numbers have been ordering the restaurant’s four-course menu, of which there are three options.

“I would say the four-course (menu) is our signature thing,” says May Yiu, who opened the restaurant 11 years ago with her husband, Kit, and is one of the eatery’s chefs. “It’s a very good price ($20.95) for all the food you get.”

All three four-course menus at Kit n Kitchen are slightly different. The “regular” four-course menu includes a first course with the choice of Garden Salad, Milano Tomato Soup, Creamy Corn Soup or Creamy Mushroom Soup.

Customers then receive a combination of Escargot Wellington (escargot encrusted in a flaky pastry and baked until golden), Grilled Beef with Chimichurri (grilled beef with the restaurant’s popular Chimichurri sauce) and Garlic Basil Shrimp (shrimp baked with pesto basil garlic butter).

“You have two pieces of escargot in puff pastry, a few pieces of the beef and two more pieces of the shrimp,” explains Yiu. “The Beef with Chimichurri has been very popular for the past five or six years.

“In this second course, you get a little bit of everything.”

For the third course, customers choose from nine different entrees, such as the Roasted Lamb with Rosemary or Basil Salmon. This regular four-course menu has been offered on the menu for the past six or seven years.

The Napa Four Course menu was a result of one of May’s trips to Napa, during which she was inspired by the truffles she tasted.

“The truffle is 2 very popular in French-style cooking,” she says. “When I was in Napa Valley and I had some truffles, I said, ‘I’m going to go back and let people try truffles.’”

Under the Napa Four Course menu, customers start off with the Napa Tomato Soup. The second course features a Truffle Fountain — Black Truffle Crème, Prosciutto Melon and Garlic Basil Shrimp. For the third course, customers can opt for entrees including Beef Osso Bucco Milanese, Rosa Lamb Risotto and Rib Eye Steak.

“The way of cooking (for the Beef Osso Bucco) is really popular in Italy,” Yiu shares. “They use veal, but instead of veal, we use beef shank. The Euro-

This four-course option is soon to be added to the eatery’s menu, according to Yiu. “The Beef Carpaccio is thin slice of raw beef — it’s high quality, like filet mignon —and we sear the outside, and then it’s filled with spinach and onion and it comes with a balsamic vinegar,” Yiu says. “It’s a popular plate in Italy.”

The last portion in each of the 6 four-course menus is dessert.

“It’s not quite as popular as our Kalbi Short Ribs or Roasted Garlic Ribeye,” Canady adds, “but it’s up there.”

Let’s get it started ames and Lani Kealoha, and their daughter, Madonna Shiroma, are big fans of New Liu’s Chop Suey. The Kalihi residents often use their shopping trips to Kamehameha Shopping Center as a reason to stop by the family-run eatery for a long list of favorite pupus.

The Kealohas agree. Big enough for an entree but priced as an appetizer, the egg and flour batter keeps the shrimp moist, and the honey glaze is flavorful without being overpowering.

Owners Annie and Alice Yeung first opened the doors to this classy bakery and bistro/lounge in 1997 at McCully Shopping Center. Although, the menu showcases a vast selection of onolicious choices from its piping-hot bowl of Laksa to its freshest of salads and fresh-squeezed apple juice, it’s Panya’s incredible baked goods that will kick anyone off their diet. Yes, resistance is futile!

A simple and mess-free treasure that I adore are Panya’s scones, more specifically, the Blueberry Cream Cheese Scone ($3.15 each) and the English Orange Cranberry Scone ($2.20 each).

Personally, I have a soft spot for the English Orange Cranberry Scone, which is similar to an English Cream Scone, as it features English cranberry orange made with heavy cream and fresh orange zest for a richer flavor and texture.

So, if you’re in search of something with just the right amount of sweetness, stop on in at Panya for a scone and a cup of tea. Who knows? You may just have to make a tea party out of it! That’s something the royal family would definitely approve of!

Patisserie La Palme D’or It always excites me when I have the opportunity to pay a visit to one of my most admired patisseries — Patisserie La Palme D’or. Located at Ala Moana Center, this upscale eatery has a blend of French flavor and Japanese craftsmanship that never cease to amaze me. Owner Hiromi Tanaka brought this exquisite pastry concept to the Islands in 2006 and ever since patrons have been able to devour delicious treats without the added guilt (and hopefully without the added pounds!).

“We don’t use that much sugar and most items are low in fat, so it’s really healthy,” Tanaka explains.

This sounds too good to be true, doesn't it? Well, think again. Head chef Akiko Kimura utilizes only the highest-quality

ack when I Love Country Cafe opened in the late 1980s, it was a small operation that served up a few local favorites. But now, the restaurant’s menu includes an impressive array of options from an equally impressive array of influences. The eatery still offers local favorites, but now also includes salads, burgers, sandwiches, pasta and baked goods.

And a number of I Love Country Cafe’s menu items are healthy, homemade dishes. Owners Richard and Millie Chan derived many of their menu additions over the years from a desire to provide customers with healthy food and from a close, collaborative relationship with their regulars.

“When we first started the restaurant, my daughter was really young,” Richard explains. “And just like all responsible parents, we were trying to figure out how we can provide her with healthy food and a high-fiber diet.”

So the pair started by offering brown rice and green salad instead of macaroni salad with the plate lunches. This might be standard fare nowadays, but 20 years ago, I Love Country Cafe was ahead of the curve. And soon, with the help of the customers, Richard and Millie began expanding those options.

“A lot of times, my customers would come in and they would say, ‘Richard, can you do this for us?’ And I would say, ‘why not?’

Actually, they helped me to develop a lot of dishes,” Richard says.

“The Hurricane Special ($10.75) is based off of one of our customers who is a trainer.”

The Hurricane Special is fresh white meat roast turkey with poached vegetables and Okinawa sweet potato with brown rice.

Another customer-inspired dish is the Bodybuilder Special ($10.75), water-poached chicken breast, poached vegetables, served with brown rice, and has peanut sauce and soy-ginger on the side.

I Love Country Cafe also has a variety of salads such as the Sesame Chicken or Tofu Salad ($8.75) and the Cajun Shrimp and Mango Salad ($9.95). Richard says they also are always willing to adjust any of the dishes to accommodate customers’ dietary needs.

It’s this kind of attentiveness and collaboration with their customers that has yielded a dedicated set of restaurant regulars.

“Over the years, we have built a lot of nice friendships with a lot of people,” Millie says. “We become part of their family, and they become a part of our family, too, all because of the food that we offer.

“The whole philosophy is that we love our guests … and we always serve them foods that we love,” Millie says. “We become the kitchen away from home.”

It’s back to basics at Fendu

By Ali Resich ince Fendu Boulangerie opened in 2009, customers have been amazed at the many items it has to offer, from exquisite European-style pastries and rustic oven pizza, to the restaurant’s more recent melt-in-your-mouth panini menu.

Sometimes, however, it’s important to focus on the simpler things in life, like some good ol’ bread and butter.

The eatery’s name says it all, with “fendu” referring to a classic French shape — the split-loaf — and “boulangerie” meaning a bakery that specializes in bread.

The whiff of freshly baked goods greets customers who then face the difficult choice of selecting from a variety of specialty loaves offered every day or the Daily Bread Special option, all baked fresh every morning.

Actually, it’s safe to go with both, and you can start out with a loaf of the hearty Multigrain Bread with Flaxseed ($4.50 regular, $2.75 petit). Offered daily,

this all-in-one item is a wholewheat and rye bread packed with sesame seeds, oatmeal, sunflower seeds and flaxseeds.

Great as the base for one of the bakery’s sandwiches, this bread is “definitely one of our most popular,” says chef and owner Niel Koep, who enjoys it most as toast for breakfast.

Next on the sampling list is the Buckwheat Fig Daily Bread Special ($5 per loaf), offered every Sunday. Koep came up with the recipe himself, after experimenting with buckwheat pear bread he learned to make at The National Baking Center in Minneapolis during the mid-’90s.

“I really, really like figs so I took one of our country bread formulas and played around with the amount of buckwheat.

We tried some different types of dried figs and settled on the Black Mission Fig. It seems to have the best flavor and matches well with the buckwheat,” Koep explains. The rich and delicately sweetened loaf needs no

It’s more than great ingredients that make the loaves at Fendu Boulangerie so irresistible. “The bread we make here is natural, with no added chemicals and no conditioners,” says Koep. Not to mention the steam tube oven imported from France with a stone to make his breads truly hearth-baked. This modern version of a traditional baker’s oven is the perfect venue for the simple, yet high-quality breads baked to warmth and flawlessness by Koep and his staff.

The restaurant also offers different kinds of stir-fry items. All stir-fry dishes come with mixed vegetables, and diners can add Chicken ($8.95), Oven Baked Tofu ($8.95) or Garlic Mahi ($10.95) among other options.

Millie says that the Furikake Mahi ($10.95) and the Grilled Mochiko Chicken ($9.50) also are popular dishes.

And if you love I Love Country Cafe, you can get the restaurant to cater your next event. The catering menu includes appetizers like Vegetable Lumpia and

salads such as Pesto Pasta Salad, Romaine Caesar Salad and Mexican Salad. For entrees, there is a wide variety of meat, seafood, vegetarian and noodle dishes — including Macadamia Crusted Chicken Breast, Ahi Katsu, Kalua Pork, Fresh Roast Turkey with stuffing, gravy and whole cranberry sauce, Honey Walnut Tofu and Fettucini Alfredo. Desserts include Mango Mouse Cake and Crème Caramel Bread Pudding.

• In a flat pan, coat salmon evenly on both sides with seasoning to cure fish.

Let sit overnight or for at least four hours.

• Remove coated seasoning thoroughly from salmon, then slice salmon about an inch wide and 4-5 inches long. Set aside.

• In a mixing bowl, combine all crab mousse ingredients together and mix evenly. Make sure there are no leftover lumps from cream cheese.

• Lay down a piece of salmon, then add about one-half tablespoon of crab mousse and roll it over like a cigar.

Garnish with black tobiko caviar and fresh dill. Repeat until you run out of fish pieces.

Tip: you may serve this roulade on slices of cucumber or on crackers. It makes a perfect party appetizer.
