Me so This week, without further ado, me, myself and I went on a miso marathon at a few premier Ono, You Know, establishments known for their miso creations.

n honor of Breast Cancer Awareness month, I’ve recently set a goal to better my health and well-being. And on a mission to get there, I’m trying my best to work out in a way that I enjoy, and embrace foods that are nutritious and delicious.

While spending some time doing research on healthy foods, I stumbled across a statement made by the Journal of the National Cancer Institute which pleasantly surprised me, while in fact awakening my appetite — miso soup consumption is linked with up to a 50 percent reduced risk of breast cancer, while also aiding in the prevention and treatment of heart disease, hypertension and more.

Now, I’m not sure if these studies are totally accurate, but one thing I can guarantee is that my taste buds adore miso — it’s an absolute must-have! Miso is a traditional Japanese seasoning produced by fermenting rice, barley and/or soy beans, with salt and the fungus known as kojikin. Combining these ingredients results in a thick paste used for sauces and spreads, and mixing with dashi soup stock to serve as miso soup.

“Because our style of cooking has a great Asian influence to it, the miso is the most pronounced flavor of this dish,” he explains. “We use a red miso that has a much stronger flavor than white miso — and the drizzle also consists of sesame and other secret ingredients.”

Lastly, to enhance the dish, a spicy ponzu sauce is served tableside for your dining pleasure.

When it comes to selecting a main course, the miso lover in me goes straight for the Misoyaki Butterfish ($27). Believe me, there’s no second-guessing this dish, as it’s a signature item at Stage Restaurant. The fish itself is melt-in-yourmouth delicious, dressed in a savory Misoyaki sauce and paired ever so perfectly with sake-braised spinach, Kahuku corn, green onion coulis, a soy reduction and crispy garlic chips that distinctly add to the texture and flavor of this magnificent entree.

Also taking center stage here is an impressive wine list with more than 500 labels to choose from.

Stage Restaurant is open for lunch Monday through Friday from 11:30 a.m. to 1:30 p.m., and Monday through Saturday from 6 to 8:30 p.m. for dinner.

Located on the second floor of Honolulu Design Center, Stage Restaurant offers a chic and modern atmosphere that is pleasing to the senses, as it’s embellished in stylish hues, statement lighting, vivid artwork, and a wide array of eclectic furnishings from across the globe.

Executive chef Ron de Guzman raises the bar as he showcases exquisite culinary fusion, specializing in contemporary Asian-American cuisine. Chef de Guzman and the rest of his kitchen staff truly emphasize the importance of utilizing locally grown fresh ingredients.

Upon my most recent visit to Stage, I met with sous chef Tim Petersen, who presented me with Stage Restaurant’s top miso creations, including the everfamous “Wafu Style” Beef Carpaccio ($12) and Misoyaki Butterfish ($27).

aimalu Chop Suey Chinese Restaurant is Chinese in theory, with an abundance of local flair and a bit of American accents surrounding this iconic establishment. Call it historic, but in its almost 50 years of business in Waimalu Shopping Center, this reputable landmark, also known as the “House of Gau Gee,” is often beset by customers feasting on tasty Northern Chinese cuisine that over the years has become a local favorite. At times the Travel Channel will spark your interest between bites, as it plays on the two recently purchased flat-screen TVs mounted in the restaurant, and friendly staff will often catch up on a story or two with a loyal customer.

And while times have changed, Waimalu Chop Suey continues to please patrons with the same culinary experience they’ve known and loved, as the menu and some familiar faces remain the same. However, most recently, one may have noticed a particular change that has taken place: a switch in ownership.

At the start of this month, Jacky Wang has taken on the role of president and owner of Waimalu Chop Suey after previous owners Randy Yim, his older brother Dennis and their mother Violet retired

after a 49-year run. In fact, Randy’s late father Mun Cho Yim is the mastermind behind the eatery’s famous “bambucha” gau gee.

“It’s remarkable that one owner was able to stay in business for so long, especially with the downturn of the economy. I hope I can stay here for 50 years as well,” says Wang, who has been in the restaurant industry for the past 15 years, and also currently runs Kin Sing Chinese Fast Food in Waipahu.

Wang, who’s originally from China, set roots in the islands in 1993 with the hope of pursuing a career in sales, but instead quickly obtained a part-time job at a restaurant. With much persistence and dedication, Wang was able to work his way through the ranks from busboy, to server, manager and most recently owner.

“I really enjoy talking to customers, so even though the sales route didn’t work out, I’m still able to do what I love in the restaurant business,” he says.

“I took on the challenge of taking over this restaurant, and this is an exciting, new experience. It’s really important that we respect the previous owner and our customers, and maintain the tradition that has gone on for so long.”

and you’ll be overwhelmed with the vast possibilities, but if you’re a longtime customer, you’ll also notice that your favorites are still readily available. Today, head chef Yung Hoy Lee, who has worked in the kitchen for 25 years, is proud to continue to offer the restaurant’s mostrequested item.

“Everyone loves the Crispy Gau Gee ($9.25 for eight pieces) and I make 1,000 pieces of gau gee per day,” Lee says with a smile.

The gau gee offered here is quite possibly one of the largest on the island as the crispy outer pi (skin/wrap) is filled with ground pork and hints of vegetables, including cabbage and mushrooms. Customers also can request hot mustard sauce and sweet-sour sauce to pair with this restaurant specialty — and Wang’s favorite indulgence.

“I taste it every day to make sure it's absolute perfection. I have to make sure it's at its highest quality — I'm the taste tester,” he says with a laugh.

In addition to the original Crispy Gau Gee, Waimalu Chop Suey also offers Crispy Gau Gee Mein with Vegetables, Crispy Gau Gee with Vegetables, Steamed Gau Gee, Gau Gee Soup and more.

ster can be prepared in various ways — with ginger and green onion, black bean sauce or with salt and pepper.

“The main thing is that we keep the original menu because that’s what customers keep coming back for,” Wang states. “We’ll never take dishes off the menu, but we soon hope to add new items to bring in even more customers.

We’re taking things one step at a time.

“Customers rave about our Honey Glazed Walnut Shrimp ($11.25), saying the flavor is really tasty.”

Being that there’s something for every palate here, fans of Waimalu Chop Suey are giving great praise to the Live Dungeness Crab (market price), Seafood with Vegetables ($10.75), Steamed Fish Filet with Ginger and Onion Sauce ($11.50), Salt and Pepper Pork Chops ($9.25) and Combo Fried Rice ($8.50), as well — and that’s simply skimming the tip of the iceberg.

For those on the go, ordering takeout is convenient. Planning a party? Waimalu Chop Suey also caters and delivers (delivery is free of charge for orders of $220 and above).

Looking ahead, Wang is optimistic and hopes to preserve the longevity of the restaurant.

“My primary goal is to keep serving highquality products with great customer service,” he says. “I won't give up. I'm only looking forward.”

fter 19 years in business and more awards than you can count, 3660 On The Rise has distinguished itself as a Hawaii-dining landmark that offers fresh island products prepared with international flair. And that’s just the entrees.

The “First Flavor” portion of the menu lists 19 items that run the gamut from fresh salads and Crispy Fried Quail ($11.75) to oysters, foie gras and the king of all pupu items, Crispy Fried Calamari, which can be ordered alone ($10.50) or as part of the 3660 Sampler Platter ($18.95). If you’re with a group, this is the way to go. Chef de cuisine Lydell Leong says their two sampler platters — the other is the Cold Seafood Plate — is created to serve two diners but they are big enough for three or four to enjoy.

The sampler platter features Rock Shrimp Tempura, an Avocado Maui Onion Puree, the Crispy Fried Calamari, Short Rib and Foie Gras Tortellini topped with a Truffle Mushroom Jus,

Shichimi Seared Ahi and an Asian Slaw.

Everything can be dipped in the Toasted Garlic-Roasted Tomato Aioli that takes Leong and his talented staff two to three hours to make. This is one crazy good dipping sauce.

“If you take the time and effort, people can taste the difference,” he says.

Everything on the platter is how it should be. The Calamari and Rock Shrimp Tempura are light and crispy, and the Tortellini, forget about it! Good left an hour ago, these things are great! The avocado, ahi and slaw provide perfect taste and texture complements.

For those who prefer their samplers with a bit of a chill, the Cold Seafood Plate ($26) is a good choice. The heap of fresh seafood includes Ahi Shashimi with a Wasabi Soy Sauce, Oysters on the Half Shell with a Ginger Vinaigrette and Tobiko, Citrus Cured Wild Salmon, a Chive Crème Fraiche, and a Crab Meat and Cucumber and Wakame Salad. Need I say more?

On the lighter side, the Vegetarian Appetizer of the Evening ($10.50) is worth checking out. The dish changes almost daily, and includes a chef-inspired combination of nearly everything that can be grown in Hawaii, whether it is greens from Nalo Farms or vine-ripened tomatoes from the Big Island. The preparation can be just as varied.

“It can be steamed, fried, baked or even raw,” says Leong with his trademark smile.

No appetizer offering would be complete without some pork, and 3660 pays homage to the glory that is the Other White Meat. The Braised Kurobuta Pork Belly ($11.75) is seared for color and then slowly braised for five to six hours in sherry, pork stock, shoyu, tangerine peel, garlic, ginger and star anise. It is then chilled, sliced and fried crispy to order and served with Maui onions, grilled flatbread and topped with a light Jus. Hungry yet?

ince its opening a little over a year ago, El Charro Mexicano Aiea Restaurant has been serving a full menu of flavorful Mexican dishes. But now, it also offers a full bar and dancing.

In response to many customer requests, the restaurant recently got its liquor license and offers happy hour from 3 to 6 p.m.

Monday through Friday featuring discounted drinks and pupus, such as a Mini Sampler of appetizers (mini quesadilla, flauta, and taquito with sour cream and guacamole) for $8. Margaritas are $3.50 or you can get a pitcher for $15.

On Spanish Saturdays from 9:30 p.m. to 2 a.m., the tables and chairs are moved outside to make room for a DJ and dance floor. The kitchen is closed, but the bar remains open and a pupu menu is available. Customers also will be happy to hear that the air conditioner has been fixed.

“We wanted to do this for the community,”

says John Ramirez, who owns the restaurant with wife Sofia. “They can come to eat and dance.”

A breakfast menu also was recently added and is offered all day. Menu items are served mild, however, customers can request for hot sauce. Some of the popular dishes include the Deluxe Salad ($9.49) served with grilled chicken fajitas, onions, pico de gallo, bell peppers, guacamole, sour cream and cheese; and the Chile Rojo or Verde ($12.49) with slowly roasted pork in a red chili sauce or verde sauce made with green tomatoes, served with rice, sour cream, beans and a choice of corn or flour tortillas.

“These are family recipes of chef Gloria Orias,” adds Sofia.

“And it’s all dishes we like to eat.”

ocated in Ala Moana Center, Panya Bistro and Bakery’s trendy setting, chic decorations and variety of menu items make it a customer hot spot. When it comes to Panya’s uniqueness, owner Annie Yeung points out the eatery’s many services.

“We are the only food service that does things for bakery, dessert and food, so that stands out — our style and the quality (of our food),” says Yeung, who co-owns the business with her sister, Alice. “We first opened as a bakery in 1997 at the McCully Shopping Center.

This (Ala Moana location) is the first full-service restaurant location that we have with a full-service bar. You can enjoy home-cooking type comfort food on an international basis.”

Panya has menus for the bistro and bar, catering, bakery, desserts and cakes. The restaurant’s signature dish is the Laksa ($13.95), known as “Panya House Noodles,” according to operations manager Kiana Huang.

“The Laksa is a Malaysian-Singapore style noodle dish,” she explains. “We have our own recipe and it’s like a spicy seafood noodle.”

Other restaurant favorites include Baked Pork Chop with Egg Fried Rice and Tomato Sauce ($16.95), Thai Style Rib Eye Steak Salad ($15.95), Deep Fried Baby Octopus ($9.95), Garlic Toast

Crostini ($9.95) and Panya’s Homemade Gyoza ($7.95). Customers also request the Garlic Butter Tiger Shrimp Scampi ($13.95) and Panya’s variety of curries ($11.95-16.95) frequently.

“Our Baked Pork Chop is Hong Kongstyle; we use a healthy pork chop and we make our own gravy,” says Huang.

“The Thai Style Rib Eye Steak Salad is a different mix of vegetables with our homemade dressing. Our Gyoza is ground pork with chives and shrimp.”

Huang emphasizes the originality of the eatery’s recipes, as well as the quality of the ingredients used.

“Everything is homemade,” she says.

“We make everything from scratch — our breads for sandwiches, our burger buns, even our salad dressing. When we make our food, we also want to make sure it’s healthy … we use less oil but it’s still tasty. We are 100 percent zero trans-fat cooking and we change our deep-fry oil every day. We maintain the quality and consistency of our food.”

recipes also is evident in its bakery. The Hokkaido Bread ($4 for Mini Hokkaido Bread Package; $3.25 for Big Top Hokkaido Bread; $1.25 for Mini Hokkaido Bread) reigns as one of Panya’s signature breads because of its original recipe.

“Our Hokkaido bread is a sweet bread with no filling,” says Huang. “We have it as a family-size bread that is good for parties or catering. We also have an individual package that’s good for everyday breakfast or for a snack.”

Panya’s pastries are a mixture of sweet and savory flavors. The eatery still incorporates ingredients with less sugar into its desserts, but preserves tasty delicacies, as demonstrated with its signature Japanese Cheesecake with Crème Anglaise Sauce ($4.25).

“We have our original recipe from Japan, and this is something only Panya has,” Huang says. “Our Japanese Cheesecake is more fluffy, very light and doesn’t have much sugar.”

“Our shortbread cookies ($4.25) are always very popular,” adds Yeung.

When it comes to drinks and its bar

menu, Panya emphasizes fresh mixtures.

“We serve a wide range of fresh juices and we use the fresh juice to make martinis. We make the Green Apple Martini ($5) and Lychee Martini ($5) from real fruit juice.”

Desserts at Panya are creative delicacies, as Yeung promotes the importance of presentation.

“Other than our sliced cakes, we make tiny cakes for dessert platters,” she says.

“We also have mini desserts in a cup — it’s fancier and brings our desserts to the next level.”

In addition to its dine-in services, Panya also provides its customers with catering menus, available on its website.

“We have a set menu and (offer) fullservice catering on-site,” says Yeung.

“We start from $10-$18 per person.”

“From there, we expand our catering menu to a more customized service,” adds Huang. “If customers provide us with a head count, budget and what kind of food they’re looking for, we can customize the menu to fit (their needs).”

Classics deliver on flavor at Paesano

hile Italian food is often revered for its simplicity, the flavors produced are anything but simple. The authentic Italian cuisine at Paesano Ristorante Italiano is no exception, consisting of deeply flavorful and rich classics. The eatery has been a Manoa staple for decades, and since opening a second location in Aiea in 2008, the restaurant has gained loyal patrons all over the Island.

The combination of old-school recipes and thoughtful preparations gives Paesano’s dishes that extra burst of deliciousness. The New York Steak ($27.90) for example, features black pangrilled strip loin lightly seasoned to perfection and seared in a cast iron-skillet to create an especial-

ly crispy crust.

Succulent on its own, this steak is taken to the next level with the restaurant's homemade red wine sauce, as old as the establishment itself.

"What makes it special is that we use Merlot and Port mixed together, which gives it a little bit of sweetness," explains head chef and co-owner Gerry Quach.

The red wine is reduced along with butter, sauteed mushrooms,

caramelized onions, and a hint of the French shoyu, Maggie, to achieve that fathomless flavor.

The Linguini Chicken Anchovy Olio ($21.90) also will excite your taste buds. The chicken is panseared and baked with garlic and anchovies until golden brown and crispy.

Beyond Dumplings At Jin Din Rou

Bella divine ella Mia owner Ted Sung may not be Italian by blood, but he certainly has the characteristics of a traditional Italian restaurant owner. He fills his restaurants with an animated and boisterous voice, and smiles as he speaks passionately about his venture into the Italian restaurant business.

“I wanted to start a restaurant that was very family-style, family-oriented. We have very reasonable priced food with huge portions for the whole family.

You cannot beat our prices,” says Sung, who has spent the past 25 years developing property on Hawaii Loa Ridge and previously was the owner of Ted’s Drive-In, one of Hawaii’s original Korean fast-food chains.

“When you come here, this is like being in an outdoor European-style restaurant. It is a little different; we have nice open-air tables and lanai where people can hold private parties or functions.”

Suzukawa says the sauce is a bit spicier and thicker than what you’ll find in typical Chinese restaurants, not very sweet and full of flavor. To accompany your ma po tofu, if you just ask, they will stir up a meatless vegetable fried rice. The noodle dishes, such as Noodles with Vegetables ($9.99), although made with chicken broth, can be adjusted to your taste as well. Just ask, and they will substitute a vegetable-based broth.

After all, as the saying goes, the customer is always right.

in Din Rou has garnered quite a following for its Shanghai soup dumplings or Xiao Long Bao, which are typically filled with pork and chicken. But that’s not all you’ll find at the modern, stylish Taiwanesestyle eatery.

After chatting up manager Bob Suzukawa, we learned that they’re quite accommodating at the South King Street eatery.

Suzukawa assured us that although the Xiao Long Bao aren’t available vegetarian-style, Jin Din Rou will prepare some dishes to order for you, omitting the meat or fish. (Although, if we nudge the cooks a bit, maybe they’ll come up with a vegetarian soup dumpling, maybe substituting mushrooms for meat — hint, hint.)

Looking beyond the dumplings (for now), Ma Po Tofu ($9.50), always a favorite Chinese restaurant staple, is just as spicy-good without the pork, and the cooks are more than happy to leave it out.

Instead of ordering a set plate with all different combinations, you can actually go and choose the different types of ingredients you want to include in your meal,” says general manager Mark Mitsuyoshi.

What is my shabu shabu choice of the moment, you ask? Well, that’s easy!

Misoyaki Butterfish, udon and tons of vegetables swimming in a savory miso soup base, of course!

Hanaki offers a wide selection of soup bases ($5 each) perfect for your shabu shabu meal, be it Konbu (light, seaweedbased udon soup), Hanaki (light, shisobased with onion flavor), Miso (medium, traditional Japanese soybean paste), Sukiyaki (medium, shoyu and sugar), Spicy (heavy, beef-based special spicy recipe) or Curry (heavy, creamy curry flavored with milk). The establishment also offers a special Healthy Herb Soup as well with a refreshing blend of goji berries, dried dates, ginseng and special herbs.

“The miso shabu shabu soup base is actually one of our best-sellers, especially with the kids,” Mitsuyoshi states. “It (miso soup base) goes great with so many choices from our fridge, such as the prime rib, fish, clams, Chinese cabbage, sponge tofu and more.”

In my specific melting pot of flavors, the Misoyaki Butterfish ($5.50) is divine, as is the piping hot miso soup and fresh vegetables — including my favorites of mushrooms, spinach and bamboo shoots. Undoubtedly, I think we have a miso explosion on our hands, catapulting us to shabu shabu heaven!

Hinone Mizunone The constant flow of traffic bustling in and out of Hinone Mizunone on any given day has become routine for operations manager Eiki Tamaki and his staff, and for good reason. It only takes one bite of remarkable entrees such as udon, Japanese curry, Teishoku lunches and the tasty miso butterfish to have you hooked on this family-friendly eatery on South King Street.

I speak from experience! Everything

here is delicious, but if you’re a die-hard miso fan, you must sink your teeth into the Miso Butterfish Teishoku ($14.75), served with rice, miso soup, tsukemono and two side orders of your choice.

“We marinate our butterfish in a miso sauce for a day and a half,” Tamaki explains, adding that the sauce is made with a combination of white and red miso, otherwise known as awase. “The miso really soaks into the fish and it gives off a sweeter flavor. Miso also helps to preserve the fish, too.”

“There’s a high demand for butterfish, so we have a very limited supply — first come, first served,” he adds with a smile.

Of course, Miso Butterfish also is available as a side order for $11.75 for those with smaller appetites.

Now, if you haven’t noticed, a teishoku order isn’t complete without a bowl of hot awase miso soup to go with it. Just the soup alone has me drooling — so therefore, even if I’m not dining on

a teishoku lunch, I can order a bowl of soup by itself for only $1.50 — you can’t beat that!

“Our miso soup is very unique. It’s very filling and comes with won bok cabbage, bean sprouts, tofu and seaweed,” Tamaki says. “It really just depends on the ingredients that we have available.”

Although miso soup tends to be a bit on the salty side, miso, when paired with the fish, results in a sweeter taste.

“Locals tend to prefer to have their fish with a hint of sweetness, and the miso is able to make that happen,” he states.

Everything miso is so, so, so good at Hinone Mizunone, and don’t forget to request a bowl of the restaurant’s everpopular rice, cooked flawlessly in an old-fashioned pot, while you’re at it!

t’s just before noon on a weekday, and Nice Day Chinese Seafood Restaurant is bustling with excited chatter from its lunchtime crowd.

Dim sum carts filled with tasty treats like Steamed Char Siu Buns ($2.30), Bamboo Rolls ($2.50) and Look Funn Roll with Scallop ($3.75) roam the busy restaurant while servers deliver hot plates of noodle and chicken dishes to eager diners. But owner Lisa Lum remains unfazed by the crowd.

By Chef Chai Chaowasaree Ingredients: • 3 pounds of salmon filet (remove skin and bones) • 3 tablespoons freshly chopped dill • 6 tablespoons sugar • 3 tablespoons salt • 2 tablespoons grated lemon zest Ingredients for crab mousse • 1/2 pound crab meat • 2/3 cup cream cheese • 1/2 cup Mayonnaise • 1 tablespoon chopped celery • 1 tablespoon chopped onion • 1 tablespoon chopped chive tube • 1/2 tablespoon lemon juice • salt and pepper, to taste • Tobiko caviar and fresh dill for garnish

tablespoons chopped dill, sugar, salt and lemon zest in a mixing bowl. Set aside.

• In a flat pan, evenly coat salmon with seasoning on both sides to cure fish.

Let sit overnight or for at least four hours.

• Slice salmon about 1inch wide and 4-5 inches long. Set aside.

• In a mixing bowl, combine crab mousse ingredients and mix evenly.

Closed Sundays • Add about 1/2-half tablespoon crab mousse and roll fish over like a cigar before garnishing with black tobiko caviar and fresh dill. Repeat for each slice of fish.

“Our mission statement is just two Japanese words,” he says. “One is ‘kandou’ and the other is ‘kansha.’ ‘Kandou’ means to make people happy to the point where they’re moved emotionally.

‘Kansha’ is gratitude. I don’t know if there are a lot of restaurants that really try to make people happy, and that is one thing that we push — customers have to be happy.”

With an assortment of Japanese nabe — a term referring to many varieties of Japanese steamboat or one-pot dishes — as well as sukiyaki and shabu shabu options, customers are sure to be happy at Ichiriki. The restaurant first opened in Hawaii in 2006 on Piikoi Street — which Kazama refers to as the Ala Moana branch — and opened its second location this past June in Westridge, Aiea. The two loca-

tions are equally popular and crowded.

“The Aiea branch has more capacity, so there’s not that long of a wait,” he says.

“Noon is the most crowded time for lunch; for dinner, it’s 6:30-8 p.m.”

Ichiriki’s lunch and dinner menus are centered around the eatery’s nabe specialties. For dinner, the nabe come in single and kami portions, made for one person or more than one person, respectively.

“We specialize in nabe hot pot so that’s all we have (on our menu), aside from a few appetizers (Pipikaula Horensou $6.95),” Kazama says. “Our lunch menu is basically our dinner menu, including our biggest selling dinner items made a little bit smaller and at half the price.”

Customer favorites include the Mushroom Nabe ($24.95 dinner single, $51.95 dinner kami), which features a wide assortment of seasonal mushrooms along with bok choy, tofu, kuzukiri, abura age, chives, gobo, chicken, pork, sausage, tsukune meatballs and won bok cabbage served with ramen noodles and rice. Also popular is the Seafood Nabe ($28.95 dinner single, $59.95 dinner kami), a shoyubased nabe that comes with Madagascar shrimp, calamari, scallops, Chinese cab-

bage, bok choy, enoki, shiitake mushrooms, tofu, kuzukiri, abura age, chives, gobo, sausage, homemade tsukune meatballs and snow crab. The Ichiriki Nabe ($11.95 lunch; $21.95 dinner single, $45.95 dinner kami), however — made from Shoyu-flavored soup stock and served with 16 different ingredients — still reigns as the eatery’s signature dish.

“The Ichiriki Nabe is very clean tasting,” explains Kazama. “It has 16 different items — it’s got a little bit of everything, some seafood, some meat, lots of vegetables. It’s very healthy; nothing is cooked in grease. The Mushroom Nabe is great; mushrooms are expensive outside of the supermarket and in this one (nabe), you get four different types of mushrooms. It’s a good alternative to meat. Our Seafood Nabe is all seafood with a bunch of vegetables.”

Ichiriki’s newest additions to the nabe specialties include the Tomato Nabe ($21.95 dinner single, $45.95 dinner kami) and the Paitan Nabe ($21.95 dinner single, $45.95 dinner kami). While the Tomato Nabe features a tomato-based soup stock served with 16 different ingre-

dients, the Paitan Nabe is made with a pork broth soup.

“The Tomato Nabe is popular, but the Paitan Nabe is more popular,” confirms Kazama. “It’s (the Paitan) a pork broth; we usually use fish-based broths in our soups but this one is pork-based.”

Nabe entrées start at $11.95 for lunch and $22 for dinner. Kazama encourages customers to utilize the eatery’s senior discount, offered from Monday through Friday.

“Our senior discount is a 25 percent off for seniors 55 and older,” he says.

“We’ve been doing that since 2007 at the Piikoi location. That’s really popular with the seniors.”
