The Mongolian Beef, for instance, will always be a personal favorite and is a must-have at any family dinner.

“Here at On On, we serve a local-style Mongolian Beef ($10.95), with nice pieces of beef tenderloin and sliced onions sauteed in a tomato-base sauce seasoned with vinegar, soy sauce, and salt and pepper,” says manager Norman Wong.

And don’t be fooled by the name.

According to Wong, Mongolian beef has nothing to do with Mongolia itself.

“The term Mongolian Beef is actually an Americanized term that was used to refer to something exotic,” he explains with a laugh. “It’s always been on the menu, but our Mongolian beef is so different from what you would find on the Mainland. Instead of a spicy brown sauce, our beef is served with a tangy, but sweet red sauce — and it’s not very spicy.”

Yet, if you’re looking for something to raise the temperature on these cooler days, On On also offers Kung Pao Beef ($10.95), featuring spicy beef with vegetables, complete with a chili oyster sauce. Now that really turns up the heat!

A

s Hawaii's premier kaiten-style sushi establishment, Genki Sushi is rolling along, offering up some of the best sushi and local delights ever served on a revolving conveyor belt. This acclaimed establishment is perfect for those with a bottomless pit for a stomach or the most indecisive diner at that, as you can eat to your heart’s content with close to 60 captivating sushi classics to choose from.

Next April, Genki Sushi will celebrate 20 years of sushi excellence, and Joseph Bozzelli, chief administrative officer for Genki Sushi USA Inc., recently shared with Dining Out just how Genki Sushi is able to contribute to the world through the spreading of Japan’s sushi culture — which also has become a local entity all its own. In addition, we caught a glimpse of just what it takes to build a sushi empire unlike any other, and according to Bozzelli, it takes a lot more than just tasty sushi.

was founded by Genroku Sushi (the first company to come out with the kaiten belt), a Japanese company.

Genki Sushi headquarters is actually in Japan, where we have about 200 stores. We have 280 stores in Asia alone, and we’re growing like crazy. However, Genki Sushi opened its first store in 1992 in Kapahulu. It was actually located across the street from where Genki Kapahulu stands today.

Then, a few years after the lease ran out, we moved across the street to our current Kapahulu location.

Bozzelli: Currently we have 14 locations in the Islands — nine on Oahu, two on Maui, one on Kauai and one on the Big Island. We also have four locations in Seattle, and we’ll be opening up our first store in the Los Angeles market come February. Fortunately for us, we’ve been doing really well.

Dining Out//Cover Story//Genki Sushi different price options and we have about 60 items total on the menu for customers to choose from — that's including other items besides sushi, such as the Teriyaki Bowl, Soy Beans, etc.

Our signature items include the Spicy Tuna Roll ($2.80), as well as anything with your standard ahi/salmon. Over the past couple of years, our seared ahi and seared salmon have been very popular.

However, the Spicy Tuna Roll is our No. 1 selling item and it’s made from a Genki special recipe that we won’t reveal.

Other customer favorites include Stuffed Mushroom ($4.80), Garlic Chicken ($3.80), Onion Salmon Roll ($2.80), Ikura ($4.80), Spicy Tempura Roll ($4.80) and the Ultimate Trio ($4.80) featuring salmon, ahi and hamachi.

DO: Does Genki use a special rice for its sushi?

Bozzelli: Yes, we do. We use a special crop of California rice, and we have a special, highly guarded recipe that comes from Japan. This recipe is very important because the rice really is what makes the sushi. Of course, you can expect sushi vinegar and some other ingredients to season the rice as well.

DO: Will there be any specials that customers can look forward to this month, especially during the holidays?

Bozzelli: Yes, we do have a special that we just created.

It’s called the Holiday Roll ($4.80) and it features a tasty combination of spicy tuna, ahi and avocado drizzled with an unagi sauce and spicy sauce, and topped with fried onions and green onions. It will be available during the entire month of December.

DO: Who comes up with these wonderful and unique sushi creations?

Bozzelli: Well, credit goes to our district managers Dustin Hara, Ryan Shimizu and Amado Garlitos, who come up with the ideas. These guys, along with the director of purchasing, David Moon, work to come up with our menu and our different monthly specials. They are really the key components for keeping Genki local, and really help to keep Genki evolving.

Dustin Hara is one of our district managers and has been with the company for more than 10 years. He manages the Waikele, Ala Moana, Ewa and Aina Haina locations, and has been very influential in the direction that we’re going — he has very brilliant ideas.

Ryan Shimizu has been with the company for about 10 years as well. He manages the Waiau, Ward, Kaneohe and Kapahulu locations. Ryan also has been influential, however, more so with our production policies.

Amado Garlitos manages the Kapolei and outer island locations.

He has been with

support we get from the local community really makes it happen, along with our great employees. We have about 500 employees nationwide.

Lastly, David Moon is our director of purchasing, and he has been key in making sure we get all the raw materials that we need at the right prices. All of our raw materials predominantly come from Japan, but the ahi that we use is always local. We have shipments coming in at least three times a week, if not daily.

DO: The local influence is quite apparent in Genki Sushi’s creations. Wouldn’t you agree?

Bozzelli: Yes, at first the local influence at Genki was hard for Japan to concede to, but in time, I think they understood that it isn’t primarily the Japanese who are eating the sushi here, it’s the locals — 80 percent of our stores are located within local communities.

Local tastes, local ideas have all influenced our menu. We also have many local workers here, so over time it’s no surprise that Genki has really involved into a local company.

DO: Genki Sushi will celebrate its 20th anniversary next April. In what ways has Genki grown since its inception in 1992?

Bozzelli: Well, from our first store to our fourth store there was a wide gap of time between each opening, but from our fifth store on, we were opening up stores every year. We saw the most exponential growth between 2008 and now.

DO: What’s the secret behind Genki's success?

Bozzelli: The secret behind our success is definitely the product, and the concept, of course, adds to it. But the

Bozzelli: Of course, we’ll always be creating new and unique sushi. Right now, we’re in the process of experimenting more with our dessert items and also evolving our catering department that should be up and going sometime next year.

hen it comes to Northern Chinese cuisine, Canton Seafood Restaurant on Keeamoku Street caters to all appetites.

Digging in at Choi’s Garden VO

he blossoming trend toward eating healthier means that folks are becoming more conscious about what they put in their bodies. And many are discovering that not only is eating lighter, vegetable-rich meals good for you, but vegetables actually taste great! Even first lady Michelle Obama is working to plant the idea in people’s minds with her organic garden and her commitment to encouraging everyone to eat right for optimal health.

Stemming from this is that more and more restaurants are offering more low-fat, meat-free options.

When it comes to Korean food, however, healthy eating is longstanding. Koreans put a big emphasis on health, and attach importance to

each component of a dish. At Choi’s Garden, a yakiniku restaurant that specializes in traditional, homecooked Korean cuisine, there are two meat-free dishes that are quickly growing in popularity.

Ho Pak Pumpkin Mochi Rice ($15.95) has customers coming back for more. A half kabocha squash is filled with mochi rice topped with a mix of walnuts, pine nuts, raisins and dates, which brings out the sweetness of the kabocha. It’s a fun dish, since you can actually eat the bowl. Can you dig it?

“It’s very popular for vegetarians,” says cashier Tammie Chang. “You can really taste the sweetness of the pumpkin.”

for its hot stone pot dishes as well. Healthy Hot Stone Pot Rice with Dates, Beans and Sweet Pumpkin ($12.99) is a colorful concoction of purple rice, dates, sweet pumpkin and six different varieties of beans.

According to Chang, each type of bean is considered healthy for different parts of the body.

The purple rice — which, like brown, is more nutritious than white — sticks to the bottom of the hot pot, so when hot tea is added the crispy bits become a rice soup to top off your meal.

And, of course, they come with a variety of spicy banchan.

n anticipation of Chinese New Year this coming January, the staff at Seafood Village Chinese Cuisine in Waikiki is excited about perfecting a few of their favorite and most popular menu items.

Many tourists dine here during their vacation because of the eatery’s dedication to authentic preparation and taste, not to mention the pleasant atmosphere.

“What we like to say here is, come have a taste of Hong Kong in Hawaii. Many Chinese tourists become homesick for their own cuisine. They will come here every day,” says executive general manager Steven Matsuno, who has been working at the restaurant since 2008.

Lately, Seafood Village has been hanging its hat on three dishes that offer a taste unparalleled in the Chinese food circuit of Hawaii.

The Country Style Crab, served for $49.95, consists of a steamed hearty dungeness crab — which commonly hosts a slightly sweet flavor — served with a black bean garlic sauce.

“Our sauce is really good to put on rice or noodles. It is extremely popular and is certainly

A unique menu item that blends a local culinary favorite with a traditional Chinese spare rib dish is the Kalua Short Ribs, served for $18.95. It offers a plentiful helping of mini short ribs that pack a sweet, sour and slightly crunchy punch in each bite.

“We’ve been in business in Hawaii for 35 years already, and Keo’s is the biggest and oldest Thai restaurant in Hawaii,” says owner Keo Sananikone. “We have more than 100 variations of dishes, and everyone can find something they like on the menu.”

In addition to its regular menu, Keo’s Thai Cuisine will feature a Special Christmas Set Menu for the holiday season. The menu ($34.95 per person) includes an assortment of the eatery’s frequently requested appetizers, salad and entrées.

Featured appetizers on the Special Christmas Set Menu include the Spring Rolls — served with lettuce, cucumber, mint leaves and a vinaigrette dipping sauce — and Crispy Noodles. The Green Papaya Salad is a customer favorite, as it features fresh, organically grown papaya that’s shredded and mixed with red chili, tomatoes and fresh lime juice, then served with fresh cabbage and lettuce.

Customers can then select one entrée from a list including the restaurant’s signature Evil Jungle Prince with Chicken, Panang Shrimp and Scallops, Spicy Sweet and Sour Seafood with Mixed Vegetables, Snow Peas with Shrimp and Mushrooms, and Sirloin Steak with Shiitake Mushrooms. In addition, customers have a choice of jasmine white rice, sticky rice or brown rice.

“The Evil Jungle Prince is an original recipe,” Sananikone explains. “We call it ‘evil’ because it’s hot, ‘jungle’ because the sweet basil usually grows by itself (in a natural, jungle-like environment) in Asia, and ‘prince’ because the dish is fit for a prince — we use the best cut of meat, chicken and beef. Our Curry with Shrimp and Scallops — our

famous Bangkok-style Panang curry — is one of the most popular curries.”

The Spicy Sweet and Sour Seafood with Mixed Vegetables features a seafood medley of fish, scallops, shrimp and calamari, while the Sirloin Steak with Shiitake Mushrooms includes a high-quality piece of steak topped with mild shiitake mushroom sauce.

Sananikone emphasizes that the restaurant will be open for dinner on both Christmas Day and New Year’s Day. n addition to Romano’s Macaroni Grill’s wide selection of new menu items, the restaurant has other holiday treats, both for its guests and for those in need.

Instead of just taking a dinner break from shopping at Macaroni Grill, why not do some of your shopping here while you’re at it? “It’s feeding people who need food, when we make our living off of selling food,” Longworth explains, adding that the staff has been bringing in canned food donations, too. “It kind of works hand in hand. It’s nice to give some of that back.”

In addition to the Foodbank campaign, the restaurant also is continuing its MAC FUNDRAI$ER program, which allows nonprofits, schools or sports teams to host a fundraiser at the restaurant. On a group’s designated day, it will receive 20 percent of the proceeds from parties who say they are there for the fundraiser.

Macaroni Grill has a long tradition of supporting the community. “The community supports us, so we want to try to support them,” Longworth explains.

Both restaurant locations are open for the holidays. On Oahu, the restaurant is open Christmas Eve from 11 a.m. to 10 p.m. On the Big Island, the restaurant is open from 8 a.m. to 10 p.m. on Christmas Eve and Christmas Day.

Made with fresh chitarra pasta, this dish is a mix of rosemary ham, pesto, peas, ricotta salata and crispy prosciutto. Longworth says that this dish exemplifies “the styles and the way that they cook in Italy.”

With just a few ingredients, “you have a nice flavorful pasta that is simple and filling at the same time.”

Another new dish being unveiled tomorrow is Chicken Under A Brick ($19). This item features a sageroasted half chicken, which, as the name suggests, is cooked under a brick. It’s complemented by asparagus, roasted potatoes and diavola sauce. Another must-try is the Roasted Turkey Panini ($11). Made with turkey breast, pancetta, arugula, tomato, grain mustard and cia-

batta, this panini is the perfect lunch. And if you’re in the mood for salad, Macaroni’s newly revamped Caprese ($11) is a good option. With vineripened tomatoes, fresh mozzarella and basil, this dish is bursting with flavor.

In order to get in touch with more traditional Italian food, representatives from Macaroni’s Grill corporate division visited Italy last year to conduct research on Italian flavors and cooking styles, all while keeping the American palate in mind. Plus, the restaurant has long been getting some of its ingredients from Italy.

Macaroni Grill’s olive oil, pasta and tomatoes — key ingredients for many Italian dishes — are imported from Italy.

If you have favorites from Macaroni Grill’s current menu, don’t worry, they’re not going anywhere.

“We are still going to keep some of

Strolling through Chinatown, I had the irresistible urge to partake in some flavorful Chinese cuisine that was abundant in flavors and spice. Fortunately for me, my gigantic appetite led me to Golden Palace Seafood on North King Street — trust me, there’s no mistaking that golden dragon wrapping around the exterior of the restaurant.

As soon as I set foot into the establishment, manager Gary Lam quickly ushered me to a table in its decorative dining room, and it wasn’t long before a heaping portion of Mongolian Beef was placed before me.

“Mongolian beef is one of the most requested beef dishes here,” Lam says.

“It’s one of those dishes that caters to the taste of the majority of the population.”

Happy Day All smiles, I recently ventured to Kaimuki, eager to enjoy a meal at one of my all-time favorite family restaurants, Happy Day. Visions of dim sum, honey walnut shrimp and Mongolian beef danced through my head, and I couldn't wait to sink my teeth into forkfuls — rather chopsticks-fulls — of these prized Chinese dishes.

The Calamari Sicilian Style consists of tender rings of calamari served in a lightly spicy pomodoro sauce with pine nuts, currants and couscous. Every table is presented with fresh a Italian bagguette, which is perfect for cleaning up the bowl after all the calamari has disappeared.

A Happy Hour Pizza with Mozzarella and pomodoro sauce is a light complement to the Salumeria, a collection of four artisan cheeses, (from a choice of Percorino Romano, Gorgonzola Dolce, Cambozola, Ricotta Salata and Double Cream Gouda) and cured meats (Prosciutto de Parma, Speck, Mortadella, Salami Toscana and Hot Dry Salami) that is served with quince paste to counterbalance the salty, sour flavors of the meats and cheese. If you like your meatballs big — and who doesn’t? — the Polpettone al Pomodoro will be the best $5 you ever spent. Made with a combination of pork, veal and beef, and served with a pomodoro sauce and Parmesan cheese, the dish is surprisingly light, and the sauce naturally sweet from the San Marzano tomatoes Sayada uses in his dishes.

Eggplant is as an Italian ingredient as tomatoes, and Sayada uses it beautifully in his Melanzane Parmigiano. The eggplant is fried and topped with a spicy pomodoro sauce, and Parmesan and mozzarella cheeses. It’s delicious. The eggplant is firm and moist, and the entire dish speaks to Sayada’s belief that good food is simple food — simple food made from high-quality ingredients, that is.

Still not full? Try the Trio di Bruschette. The grilled pieces of Parmesan batar bread are topped with tomato and a tarragon vinaigrette. This is joined by golden and red beets baked with gorgonzola dolce with a balsamic

t Sushi Izakaya Shinn, it’s all about ambiance, unique dishes and wholehearted customer service. The eatery, which opened last December, features a Japanese tapas-style menu with many options for customers to try.

“We have a sushi counter and a robata (grill) counter,” says general manager Yuki Yamamoto. “Customers can watch while we make the sushi and while we grill items. We have (both) regular tables and wabi-style — Japanese tea room-style — tables.”

Yamamoto explains that the restaurant’s name emphasizes genuine customer service.

“Shinn is the Japanese word for hospitality,” he says. “It’s the soul, the heart. We serve our customers with our hearts. Izakaya is a general term for Japanese tapas-style.”

Sushi Izakaya Shinn’s menu has various categories of dishes, such as starters, cold dishes, salads, hot dishes, deep-fried dishes, seafood, robata (grilled dishes), sushi nigiri/sashimi, roll sushi/chirashi sushi, oden, pot dishes and dessert. When it comes to Sushi Izakaya Shinn’s signature dishes, Yamamoto points out the unique

Genkijirushi ($11) and the Hamachi Yuzukoshou ($14).

“Inside the Genkijirushi is an assortment of sticky items, including chopped tuna, okra, natto and some squid,” he says. “It’s a sticky dish, but it has very healthy items. Local people love the natto. (We serve Genkijirushi) with some wasabi, soy sauce and seaweed on the side, and you can make a handroll. The Hamachi is sashimi with wasabi and yuzukoshou (a citrus and vinegar blend) on top.”

Customer favorites among hot dishes include Grilled Lamb Chop ($12), Simmered Rock Fish ($10) and Kurobuta Kakuni ($7.50), or glazed pork belly. In terms of salads, the Watercress & Hijiki Salad ($6) is frequently requested.

“The Watercress & Hijiki Salad is very popular,” Yamamoto says. “Hijiki seaweed (black seaweed) is the most popular Japanese seaweed. Also popular is the Beef Tataki Salad ($12), which is seared beef served with mixed greens.”

Other popular dishes at the eatery include Black Cod ($12), or butterfish, and grilled items such as Grilled Beef

Tongue ($3.25), Chicken Wings ($2.75), Chicken Meat Balls ($2.50) and Grilled Rice Balls ($2.50).

“Locals like the black cod, or butterfish,” Yamamoto adds.

While the eatery does not fea- Grilled Lamb Chop ($12) ture monthly specials, Yamamoto says that daily specials are available. These specials include dishes such as Japanese Golden Red Eye Snapper ($18), Grilled Octopus Balls ($5.75) and Grilled King Crab ($22).

“Every day, it (the special) changes,” he says. “(These dishes) are not on the regular menu … especially popular are the Cold Tofu with Fried Fish Flakes & Spicy Sauce ($6) and the Simmered Pork Intestine & Mixed Vegetables with Genkijirushi ($11) Kimchee ($8.50), which is like a casserole dish.”

While the majority of customers dine in the restaurant, Yamamoto says that takeout options are available.

“The takeout menu is the same (as the dine-in menu),” he says. “If the customer requests, we can make takeout orders.”

Sushi Izakaya Shinn is most Hamachi Yuzukoshou crowded from 7 to 9 p.m. on week- ($14) ends, Yamamoto notes. For the upcoming new year, the restaurant is featuring a special known as Shinnenkai, or “new year gathering.” This celebration marks the Japanese tradition of welcoming the new year, and starting this month, customers can make reservations for parties of six adults or more for next month (January) and receive a 15 percent discount on their entire check. However, reservations for the January parties must be made before Dec. 30.

“Shinnenkai is our ‘Welcome to the New Year’ party,” confirms Yamamoto. “You need to make your reservation in December to qualify for the new promotion.”
