Staying in tip-top shape with
Beefy Burgers these days, I believe that I still live an active, energetic, carefree life. (OK, maybe genetics has something to do with my figure, too.) But what’s not care-free, however, are my cravings, which accompanied me this week as I successfully discovered and devoured some of the best “Ono, You Know” burgers this island has to offer. The Pipikaula Burger ($14) is the restaurant’s specialty, and I fell in love with the very first bite. Manager Bo Perez was kind enough to even reveal the hidden secret to this ultimate goodness. “We use pastrami in the sixounce burger and it’s mixed in with the ground beef,” Perez explains. “If you wish, it also can be served with bacon and cheese.” To top it all off, I like to add a substantial amount of Don Ho’s barbecue sauerkraut and Cheddar cheese to the mix to give it that superlative zing. Besides the onolicious patty and sauerkraut, the burger is filled with lettuce, tomato and onion, and comes with your choice of seasoned fries or onion rings — as do all burgers here. In the mood for a classic? The Cheeseburger ($11) has your name written all over it. Story & Photos by Jo McGarry s soon as Niel Koep touched ground on Maui more than 20 years ago, he knew he’d found the place he was meant to be. “I know it sounds weird,” says the softspoken chef, “but as soon as the plane landed, I knew this was it.” He spent more than 18 years on Lanai, opening the Lodge at Koele and then Manele Bay, all the while building a strong pastry, bread and dessert following. But it was a boyhood dream of owning his own place that kept nagging at him to move on. “When you work in a resort, it’s very comfortable,” he says. “I got sidetracked for a while, but the voice was always there telling me I had to do it, I had to open my own bakery.” He took the plunge 18 months ago and opened Fendu Boulangerie in Manoa Marketplace. Rave reviews quietly followed, and word started to spread of his divine sandwiches, exquisite chocolate croissants and huge selection of hand-

made breads. Walk into the sunny little boulangerie today and you can almost smell the love coming out of the kitchen, as the aroma of yeast, chocolate and freshly baked pizza give off their heavenly scent. I’ve always thought there was something irresistible about baking bread, and Koep agrees. “Bread is something that everyone understands,” says the New Jerseyborn baker, with a smile. “You don’t need formal training in food, you don’t have to be an expert to understand it. Other foods may be complicated or hard to understand, but bread is flour, water yeast and salt. It’s a simple thing, and if it’s made right, it can touch the heart.” Koep’s bread really is just flour, water, yeast and salt,

unlike the chemically enhanced, preservative-filled supermarket version you may have just had for breakfast. “There are no additives or chemicals in our breads,” says Koep, “and there’s no hydrogenated shortening either. We just use olive oil, vegetable oil or butter, along with flour and salt. A lot of customers looking for natural foods, better ingredients, are happy when they find that our food is baked fresh every day and in a natural way.” And at Fendu (the name comes from a traditional, half moon-shaped French loaf), fresh really means fresh. Anything left over on the shelves at day’s end is never resold. Koep and his small team begin a new batch of breads, pastries, desserts and heavenly cookies every day. The Manoa bakery is filled with baskets of bread and two glass cabinets that house a gorgeous selection of pastries and desserts. Koep knows almost all his customers by name, and as the doors open and close continuously throughout the day, there’s evidence of community spirit in small, everyday exchanges. “We do know many of our customers,” Koep says. “We see lots of them every day. And we’re grateful to the community in Manoa for supporting us during this first year or so.” Manoa residents are surely spoiled for choice as they peruse the menu of daily bread that includes Hearth Baked Whole Wheat Bread ($4.50), French Sourdough ($5), Multigrain with Flax Seed ($4.50), American Harvest ($5.50), Sweet Onion Naan ($5), a selection of baguettes and the popular fendu loaf. In addition, there are daily specials that include
offerings of Calamata Olive Bread, Walnut Raisin Cheese Bread or one made with Hamakua Farm’s mushrooms, in which rustic, crunchy crusts give way to light, airy, pillowy interiors. Each one of Koep’s breads is a testament to perfection. As the holidays appear, expect to see fresh, fruitfilled traditional breads and pastries appear on the shelves, like Christmas stolen — and expect them to disappear just as quickly. “Last year we sold everything we made,” says Koep, “so this year we’re starting early.” I’d call and order ahead if I were you. There’s no doubt that Koep will make a stolen that’s as good as any you’ve tasted. If he does run out, take comfort in a miniature cheesecake, chocolate cake or flaky, buttery croissants that are heavenly when dipped in fresh, hot coffee. Or make the trip to Manoa to try the pear mascarpone Danish or a chocolate mousse cup made with Valhrona chocolate and topped with a passion fruit sauce. And you can trust this talented baker to make one of the crispest, freshest pizza bases in town. In one corner of the bakery, a pizza oven, imported and rebuilt in Manoa, ensures a perfect crust. For anyone who seeks Parisian perfection when it comes to dough, then a pilgrimage to this truly delightful bakery is a must. “Bread and pizza go hand in hand,” says Koep. “We want people to be able to enjoy breakfast pastries, sandwiches for lunch and pizza for dinner, if they like. There’s a lot more to us than just a bakery.”

OceansApart When it comes to a restaurant with fabulous food and a superb view, no one does it better than Ocean House | By Jo McGarry
L
ong established as one of the picture-perfect sunset dining spots on Oahu, Ocean House has a new chef and a host of new dinner menu items. Still a place to enjoy cocktails at sunset and fish fresh from Hawaii waters, the restaurant at the Outrigger Reef on The Beach now boasts lamb, more steaks, chicken and chops. And there’s a new Grilled Double Cut Pork Chop that’s proving to be one of the most popular new entrees. We caught up with David Nagaishi, the restaurant’s general manager, recently to find out what’s new for dinner at the popular dining destination. JM: I’m guessing you haven’t removed the prime rib from the menu to make way for new

dishes, right? DN: (Laughs) No, never. It’s always safe here. Our slow-roasted prime rib is cooked for 10 to 12 hours; that’s what makes it so good. We have a number of different preparations at dinner, including the Ocean House Cut ($28.50), and the Alii Cut ($34.50) for those with heavier appetites. A new preparation of the prime rib is our Blackened Prime Rib. We serve the slow-roasted rib meat wrapped in Cajun spices, sautéed in an iron skillet to seal in the flavor and then finished with a sweet Creole sauce. It’s proving to be a big hit with customers. JM: Obviously when people come to a restaurant like Ocean House, they’re expecting to find fish on the menu. Have you changed any of the fish dishes? DN: A lot of our fish selections

have stayed the same, but we have added a Lilikoi Misoyaki Butterfish that is beautifully tender and melts in the mouth. Chef Craig Yasaka does a great job and his dishes are really getting a lot of great comments. We also have a new Fire Roasted Monchong, which is the Hawaiian pomfret, served with yuzu and an oyster cream sauce with ginger, cilantro and jasmine rice. One of our other new and very popular dishes is the Macadamia Nut Crusted Mahimahi, which is served with a coconut ginger cream sauce and drizzled with sweet chili. Our fish is always going to be popular — but we’re very proud of the new meat entrees, too. JM: Am I seeing lamb on the menu, and double-cut pork chops as well? DN: Yes, we’re serving Aus-

tralian Lamb Chops that are honey infused then grilled and served with a mint cherry sauce and Maui onion mashed potatoes. Another new and popular dish is proving to be the Grilled Double Cut Pork Chop, which is topped with a pineapple apple chutney and served with Maui onion mashed potatoes. JM: Why the change, when
the menu was obviously very strong already? DN: Well, all these years we have been seafood strong, and we wanted to round off the menu a little. By adding more steaks, lamb, pork chops, we’ve been able to add a more complete menu and still keep our prices very reasonable. JM: In Waikiki terms, you are
one of the most reasonably priced restaurants of all. DN: Yes, we always keep in mind that a lot of local people enjoy coming to Ocean House. It’s important to us to keep the prices affordable. With our view and our menu, we’re really unbeatable. JM: I know you get a strong local turnout on weekends. How are weeknights? A good time to come for a quieter sunset dinner?

DN: We are very busy Friday through Sunday night, and for some reason on Wednesdays a lot of locals come out for dinner. We’d love to see more local people come during the early weeknights. People are always so pleasantly surprised when they finally come for dinner. And when they see the view …

DN: Oh, our Island-Style Sashimi ($13.50) is wonderful, and our new Sizzling Ahi Carpaccio ($14.50) comes topped with Hawaiian salt, togarashi, Maui onions, radish sprouts and topped with sizzling sesame and peanut oil. It’s so good. JM: All good reasons to come and try Ocean House if you haven’t been in a while, right? DN: Yes, and then there’s our service. The aloha spirit lives on very strong in the Ocean House! As long as people come and have a good time, that’s what we want.

hen Billy Rattanasamay opened a central Oahu version of Paesano Ristorante Italiano two years ago, everyone was surprised — and perhaps no one more so than Rattanasamay himself. Retail pioneer Glenn Kaya, the owner of Waimalu Plaza Shopping Center, had been a regular customer at Paesano’s popular Manoa location for some time. One day, recalls Rattanasamay, Kaya told him about a vacancy at the shopping center, urging him to open a new location there. “I said, ‘I’m tired! All these years, I never have a day off on the holidays,’” Rattanasamay says. But Kaya persuaded him that a second Paesano location was a good idea, and

Thanks to owner Billy Rattanasamay, Paesano Ristorante is a reminder to customers of all that is great about Italian cuisine now Rattanasamay spends much of his time there, enjoying a much shorter commute from his Waikele home. Rattanasamay’s wife, Nila, helps runs the show in Manoa with their partner and longtime friend and chef Gerry Quach. As many of his regulars might attest, Rattanasamay has earned a break. Born in Laos, he came to Hawaii with his family in 1973 and began working even before 2 0 1 0
he graduated from McKinley High School. “My first real job, I worked as a dishwasher at Bobby McGee’s Conglomeration,” he says. “Then I had the chance to work at Michel’s at the Colony Surf Hotel. I was there for 15 years as a busboy and waiter.” The experience would help shape Rattanasamay’s career. At Michel’s, he got to know George “Cass” Castagnola,

an Italian restaurateur from New Jersey who had decided to expand to Hawaii; Rattanasamay helped the man launch his Manoa restaurant. By 1991, Castagnola had moved on. With wife Nila and old friend Quach, Rattanasamay took over with a new name: Paesano Ristorante Italiano. But he never forgot Castagnola’s lessons. “He was a master of cooking, but he also knew to use good ingredients,” says Rattanasamay. “He would choose the best-quality tomato sauce, pasta, ham …

Regulars now include Gov. Neil Abercrombie and Honolulu Star-Advertiser president and publisher Dennis Francis, Rattanasamay says proudly. For almost 20 years, neighborhood foodies have returned for delectably prepared dishes like Osso Bucco Alla Romana (small portion, $20.90; large portion, $26.90), the veal shank authentically served with a marrow fork; the Shrimp Scampi (small portion, $19.90; large portion, $24.90); Chicken Alla Sorrentino, with eggplant, cheese and mushrooms (small portion, $18.90; large, $21.90); and Rattanasamay’s own favorite: Salmon Gardiano ($25.90), pan-grilled Atlantic salmon with garlic, capers, baby Roma tomatoes and ginger in a balsamic reduction. The New York Steak (smaller portion, $20.90; larger portion; $26.90) is a specialty
3 at Paesano, and one of its bestsellers. “A lot of people don’t know that we don’t cook steak on the grill the way Americans do; we sauté it in a red wine sauce,” Rattanasamay explains. “It’s fry-pan steak, so everything is cooked fresh, including the sauce.” The Waimalu location’s menu is identical to that of its sister restaurant, and even includes the same deli selections — meatballs, sausage and three different pastas by the pound, red sauce by the quart — that enable diners to enjoy a fresh Italian feast in their own homes. Fresh bread is baked every morning, just as at the Manoa site. The larger Waimalu even has rooms for private parties, but still feels intimate and warm. For lunch at both locations, portions are scaled down and priced accordingly. Sandwiches such as Chicken Parmgiana ($11.90), Sausage & Pepper ($8.90), and Fish ($12.90) are popular in Manoa with the university lunchtime crowd, and are catching on at the Aiea restaurant. As word gets out in and around Waimalu about the fantastic “new” Italian place across from Safeway, Rattanasamay is vocal with his gratitude. “I owe my business to Michel’s; I learned so much from my boss (maître d’ Bob Clark, now retired) — not only about restaurants, but about life. And I have good employees. Without them, I would never have come this far. Many have worked for me for so long.” When he opened the Waimalu location, Rattanasamay gave shares in the restaurant to a small group of longtime employees. “It’s made my company stronger because everybody contributes hard work,” he says. “And now they’re so happy.” Though his children are at college now and his commute is shorter, Rattanasamay hasn’t slowed down much. “I don’t have time for golfing! We are a small restaurant and we spend almost all day long there, and that’s what makes it good.” D I N I N G

t is indoubtedly the place to go when dim sum cravings call. A Honolulu favorite, Chinatown’s Golden Palace opens at 7 a.m. and serves the least expensive dim sum in town. Once you’ve navigated the busy streets of Chinatown and found parking off Nimitz Highway (where a parking lot leads to a hallway that leads to the restaurant), you’ll find yourself in a commodious room that could be a movie set version of a Honolulu Chinese restaurant. Carts stacked high with baskets of carefully wrapped dim sum are frequently refilled during peak hours, while hot dishes and carts at the front of the restaurant enable customers to walk in from the street and help themselves to a variety of house specialties. At $1.69 per portion, Golden Palace’s dim sum is the cheapest in the city. Load up on a box or two for the office before you
start the day, or come for lunch and enjoy a snapshot of busy daily life in Chinatown. Seafood dishes are a specialty, and the restaurant offers dishes not commonly found elsewhere. Jelly Fish with Shredded Chicken ( $6.95), Baked, Sliced Squid with Pepper Salt ($7.50) and Salt and Pepper Egg Fish ( $7.95) lead off an extensive menu; salt and pepper shrimp, a variety of crab entrees and steamed live shrimp are all seasonally priced. Expect to see a lot of large groups celebrating here as the holidays roll along as the set meals for 10 are priced to please. This time of year signals a little more than just the start of the holiday season. At exactly 5 a.m. next Sunday, the gun goes off for the 2010 Honolulu Marathon, filling the streets of downtown Honolulu and Waikiki with thousands of runners, walkers and their supporters. In support of those brave enough to tackle the 26.2mile course, Wailana Coffee House has a three-day allyou-can-eat pasta menu Dec. 9-11. Owner Joanna Leong says she and brother Kenton began offering this special about 10 years ago so participants could enjoy a reasonably priced carbo-loaded meal during those crucial days leading up to the marathon. “I am not a runner, but years ago I did race walking and participated in many races or helped at various events,” says Leong, adding that although she has not attempted the Honolulu Marathon, she has been at the finish line to greet friends and family, including her son, John, and his wife, Julianna. “The event itself brings in many visitors to our state, especially participants from Japan, and the running path goes by our restaurant,” she adds. “This menu is for marathon participants as well as for everyone else who wants to carbo-load or just loves pasta to the max!” On the menu Thursday night is all-you-can-eat – See page 13 Kahala Mall 738-5696 (KOZO)

Gearing up for the Honolulu Marathon on Wailana’s menu

othing’s better than waking up to presents on Christmas morning, and boy, does Wailana Coffee House have a present for you. The restaurant will be open Dec. 25, serving all the flavors of the holidays to every good little boy and girl — and adults too! The Holiday Breakfast Special ($9.95) is Eggs Benedict Royal, toasted English muffin halves topped with smoked ham, turkey breast and poached eggs and smothered with a creamy, thick hollandaise sauce. The meal is made complete with the addition of hash browns, glazed peaches and choice of coffee or tea. Or choose from three Christmas Dinner Specials, available from 11 a.m. to midnight. There is a Prime Rib Roast ($16.95), which is coated with special seasonings before being slowly roasted to perfection and served with au jus and creamed horseradish sauce. Another holiday favorite is the Holiday Turkey with Smoked Ham ($12.95), served on a bed of macadamia nut stuffing, oldfashioned giblet gravy and topped with a grilled pineapple ring filled with cranberry sauce. Or go the unconventional route and try the Hibachi Chicken and Shrimp Kabobs ($13.95), a ginger, shoyu and smoked hickoryinfused chicken breast served with shrimp kabobs skewered with fresh mushrooms, tomatoes, onions and bell peppers. All dinners include choice of baked potato, mashed potato, french fries or steamed rice; corn on the cob; Wailana’s popular salad bar; bread pudding drizzled with chocolate sauce and topped with whipped topping; and coffee, tea or soft drink. Jump on the buffet line for flap meat

here’s much on the menu at Camellia Buffet to bring regular customers back weekly for lunch and dinner. Some come for the poke and the fresh sashimi; others for kalbi and spicy marinated pork. Now, children are happy to see island favorite orange chicken on the buffet line, too. But one of the best offerings at Camellia Buffet is certainly their flap meat. It’s not a wellknown meat, but one superbly suited to high heat and quick grilling nonetheless. Part of the
short loin, this inexpensive cut of beef is ideal for use in yakiniku-style cooking. Full of marbled fat and flavor, flap steak is similar to skirt or hangar steak. With the high heat from yakiniku grills, the meat grills quickly, yet stays tender. In fact, it’s best when cooked over high heat and to a temperature of no more than medium rare. Salt & Pepper with Fresh Kahuku Prawns by Chef Chai Chaowasaree | Serves 2 Ingredients: • 1 pound fresh Kahuku prawns • 1.5 tablespoons cornstarch • vegetable oil, for deep-frying prawns • 1 tablespoon chopped garlic • 1 tablespoon sliced red jalapeño pepper • 1/2 tablespoon salt and pepper seasoning (use one part garlic powder, one part sugar, one part fine ground black or white pepper and
two parts fine salt mix together) • 2 tablespoons chopped green onions Preparation: • In a pot or deep frying pan, heat oil to 350 degrees. • Toss prawns into cornstarch and remove excess cornstarch. Then, fry prawns until they are cooked, about one or two minutes, depending on heat of stove, or until shell is
crunchy. After the meat is cooked, set aside. • In a sauté pan on medium-high heat, add 1 tablespoon vegetable oil, garlic and red Jalapeno pepper, and cook for 30 seconds. Then add fried prawns. Sprinkle seasoning evenly to cover shrimp, add green onions and toss for 10 seconds before turning heat off. • Perfect with a bowl of rice.
