n enticing and exhilarating dining experience awaits patrons at Panya Bakery, Bistro & Bar, where both the decor and cuisine sparkle. Owners and sisters Annie and Alice Yeung have been on a whirlwind journey since opening Panya’s initial location at McCully Shopping Center in 1997. Today, with four locations under their collective belts, they’re set to celebrate another well-earned anniversary — 14 years in business — by offering up an array of exciting new menu items and special promotions.
Dining Out recently met up with these talented sisters, who, even after 14 years in the restaurant business, still have a whole lot of culinary magic to offer their customers.

DO: Can’t believe it’s been 14 years since Panya first opened shop. Take us back in time to the birth of this popular eatery. Annie: Panya started with a bakery at the McCully Shopping Center in 1997. The following year, we opened a café-style concept, and added some soups and salads — basically light meals — to the menu. Then we moved to Ala Moana Center in 2003, and the Queen Street location also served as our headquarters, where we still do all the baking of our products. Five years later, we opened a downtown location in the Remington College courtyard on Bishop Street. The Royal Hawaiian Center location then opened the following year. Now we have four locations.

DO: How would you describe the food served at Panya? Annie: Authentic international cuisine is what we serve here, and we each have added our favorite dishes to the menu. Alice: We serve a wide variety of comfort food. We use no MSG, and our food is generally very healthy and fresh, and you can get everything here, be it breads, pastries, soups, salads, curry, noodle dishes, oxtail, desserts, drinks, pupus — everything! We have a special bond, and we’re usually on the same wavelength and have the same direction of where our business is headed and how we want things to be. Together, we have a great attitude when it comes to running our business; we take it seriously and put our hearts into it. Panya is our life!

igger portions, reasonable pricing and local flavor. When asked to summarize the essence of Golden Duck Chinese Restaurant, owner Aaron Fong emphasizes these three qualities. “Our average price range per customer is $8,” Fong says. “Also, 90 percent of our customers are locals. Our food is different from other restaurants because of the style — it has a more local style and is more local tasting.” Golden Duck Chinese Restaurant, which was originally located by Aloha

Stadium, moved to McCully and then moved once more — after Fong became the owner in 1992 — to its current location on South King Street. Last year, however, the eatery’s newest location opened in Kahala, located on Waialae Avenue. While Fong operates the Golden Duck on South King Street, his brother-in-law oversees the Kahala location. “Our (latest) branch opened last year in October,” Fong says. “I did not make many changes to the King Street restaurant (after I became owner), but there have been many changes in the Kahala restaurant.” One of the main differences between the two restaurants is the menu. While
the Kahala location offers the same popular entrees as does the South King Street location, it differs slightly in that it offers a greater variety for the customer as well as a larger dining space. “For the Waialae Avenue location, we have more seafood — like lobster and Dungeness crab — and a live seafood platter,” Fong says. “The restaurant on Waialae Avenue is also bigger.” Unlike the restaurant on South King Street, Golden Duck Kahala serves liquor through its wine/beer bar. This is a recent addition to the establishment, according to Fong. “We are serving liquor and drinks (at the Kahala location),” he confirms. “We started that two months

Among the most popular dishes are the Minute Chicken Cake Noodle ($7.95), Duck Noodle ($7), Chicken with Bittermelon ($8.25) and Shrimp with Honey Glazed Walnut ($11.25). Of all the entrees, the Minute Chicken Cake Noodle is the most requested. “The Minute Chicken Cake Noodle is our signature dish; it’s very popular,” Fong says. “The pan-fry cake noodles itself are one of our most popular items.” While Golden Duck is the busiest during the weekends for dinner, Fong says that the restaurant’s different specials continue to attract the crowds. Golden Duck’s specials, which change daily, include entrees such as Roast Duck & Ginger Chicken on Rice ($7.50), Chicken Oyster Sauce Noodle ($7), Chicken Chow Fun ($7) and Roast Duck Wo Mein ($7.50). Golden Duck offers catering services as well as 4 takeout options. In fact, Fong acknowledges that take-out is just as popular as dining in the restaurant itself. “We have a lot of takeout orders,” he says. “We do 50-50, dine-in and takeout, and the menu is the same.” While Fong admits that Golden Duck on South King Street is more

We’re changing the menu a little more and introducing something different.”

For starters, the Pei Pa Tofu ($13.95) showcases a simple, soft-silken tofu, which is then mixed with minced shrimp and Virginia ham. This magnificent paring is then quickly deep fried and served over a bed of spinach, with a zesty cilantro topping. “This is a real healthy dish, especially because it is not greasy. We use yellow soybeans, which do not have much cholesterol or fat content, so it is a special dish for
healthy people,” says Hee Hing general manager David Koc. With the origins of tofu dating back nearly 2,000 years ago to China, it’s safe to say that this traditional vegetarian dish has evolved over the centuries. In fact, a variety of options are now available for meat lovers. “Pei Pa Tofu is a very traditional Chinese dish. It has a little crunch on the outside, but is still soft and tender inside,” adds Koc. Other tofu choices at Hee Hing include Ma Po Tofu, Golden Fried Silky Tofu, or the restaurant’s specialty Medium Fried Tofu, served in a taro basket with vegetables.

Kozo Sushi The ahi addict and sushi lover in me couldn’t be any happier with Hawaii’s premier choice for takeout sushi. Kozo Sushi’s magnificent array of ahi samplings has long been a classic for any party or celebration. My favorite sushi pick has got to be Kozo’s Dragon Maki ($6.99), which offers
the perfect combination of sweet and spicy. This zesty masterpiece is a feast for all the senses, and features eight pieces of shrimp tempura maki paired with fresh lettuce and seasoned with a sweet teriyaki sauce. It’s then topped with fresh ahi, masago, green onions and sesame seeds, drizzled with an extra bit of teriyaki and spicy sauce to give it an added kick. The Dynamite Maki ($7.25), a shrimp tempura maki with ahi and masago, topped off with barbecue potato chips, sesame seeds, green onions and drizzled with a spicy sauce with wasabi mayo is also among my favorites. Trust me, you can’t just take one bite without wanting more — you’ll be hooked on this ahi cuisine. Onaga with Spinach Risotto By Chef Chai Chaowasaree saute pancetta until lightly browned. Add garlic and shallots, and cook until golden. • Incorporate pineapple, vinegar, sugar, ketchup and sweet chili, and let simmer until consistency has reduced into thin syrup. (Use chicken stock if needed to fully cook pineapple.) • While sauce is reducing, season and pan sear the onaga skin side down until crispy, then flip and finish.
Spinach risotto: Ingredients: • 4 8-ounce onaga fillets • 1 cup diced pineapple • 20 ounces diced pancetta • 4 tablespoons sugar • 2 tablespoons rice wine
vinegar • 1 tablespoon ketchup • 2 teaspoons sweet chili sauce • 1 tablespoon minced garlic
• 1 tablespoon minced shallot • 1 tablespoon vegetable oil Preparation: • In a pan, add oil and

Plating: Place risotto in center of plate. Set fish on top and glaze the fish with the pancetta-and-pineapple mixture. Drizzle sauce around risotto and garnish with sliced green onions.
