So, of course, this song Milkshake by Kelis has been stuck in my head for days, and this week, I had to take it upon myself to feature all things milkshakes!

Well, guess what? Lady Luck was on my side, as the following Ono, You Know establishments have once again brought me to their “yards” with their delectable milkshakes.

With five locations islandwide, Big City Diner first opened for business 13 years ago in Kaimuki under the direction of president and owner Lane Muraoka. Since then, a dedicated team of employees has come on board providing you with exceptional service and tempting cuisine, including the creamiest of milkshakes that pair perfectly with almost everything on the menu.

On my most recent visit to my favorite eatery, Waipio district manager Alex Pedi wasted no time in whipping up a couple of their most-requested milkshakes for me. I was seriously drooling over the irresistible Oreo milkshake and chocolate milkshake. I would simply call it milkshake madness at its finest!

“A good milkshake begins with good ice cream, and that’s why we use Bubbie’s ice cream,” Pedi says.

It doesn’t take much to make a magnificent shake, in fact a few scoops of ice cream, a bit of milk, and of course, a mountain of whipped cream, and you’re good to go. Oh, and we must not forget the cherry on top!

Big City Diner offers your classic flavors of chocolate, strawberry and vanilla, but also caters to eclectic tastes with raspberry, mocha and Oreo shakes. A small shake is priced at $4.99 and a large shake costs $5.99.

Nothing beats an epic meal like this, let me tell you — and here at Teddy’s Bigger Burgers you can feast like a king on a daily basis! Founded in 1998, this burger joint with a ’50s theme and a simple menu of burgers, fries and shakes has undoubtedly made a name for itself when it comes to quality food and customer service. All items are made to order, and Matt Stula, operating partner of the University location, says its extra thick shakes ($5.29 each) are some of the best by far.

1 “He didn't really get a chance to get the bakery to where he wanted it to be. But we’re doing our best to get it there. We’ve had our ups and downs, no doubt about it, but it’s our job to continue the dream of our dad.”

Those are the words of Iris Yafuso, who works diligently alongside her brother Lance, fulfilling a legacy all their own. Together they own Larry’s Bakery, a family-run business which first opened its doors in the 1960s at its original location in Waimalu Shopping Center (then known as Larry’s Waiau Bakery). Today, this famous bakery has planted its roots on Lawehana Street in Salt Lake near Target, and the man Iris speaks of is her beloved father Larry, for whom the bakery is named.

“My dad died suddenly in 1979, when I was 9 years old,” she says. “He had a massive brain anuerism, so he was here and gone the next day.

And as far as recipes go, nothing was really written down — it was all in his head.”

Larry’s Bakery is home to its famed cinnamon bread, chantilly cake, apple and

coconut sticks, cinnamon twists and Dobash cake, to name a few — all classics, according to Lance.

“Luckily my brother Keith and I were older, so we were able to help in the bakery when my dad was around.

We actually had the opportunity to see everything in the works,” he recalls.

“We still have dad’s picture up in the main part of the bakery so he can watch over us,” Iris says with a smile.

“After dad’s passing, my brother Keith would dream about dad’s recipes, and we knew it was a sign to keep the bakery going strong.”

Living lessons that guided them from the beginning, the Yafusos are well-aware that consistency and persistence, combined with every ounce of hard work, is the recipe for success. They were quick to learn that trials and tribulations only make you stronger.

“As a family business, you basically do what it takes to survive. We had to change with the times,” says Lance, who demonstrates a keen business sense and is a professional cake decorator at that. “The business changed when all the markets started offering bakeries as well.”

Larry’s Bakery initially made its mark as a retail bakery, prior to establishing itself as a wholesale bakery for 10 years. Most recently, the iconic establishment reverted back to retail, and despite the long hours endured on a regular basis, the proof is in the pudding.

The Yafusos and the rest of their dedicated team start their workday before the sun, with a start time before 4 a.m., and from then on it’s non-stop baking until 1 p.m. when the bakery closes, only to prep for the next day.

deliveries, to checking orders, to helping customers,” Iris states. “We still do wholesale deliveries to Don Quijote, The Waianae Store and Tamura’s Waianae. Pearl Country Club also carries our cakes and pies, and Sizzler restaurant uses our cinnamon bread for its French toast.”

And although scratch-baking has become seemingly obsolete in today’s world, here at Larry’s Bakery scratch-baking is the real deal — no frills.

“The custard in our long johns and Danishes is all homemade, even our frosting is scratch-baked,” Lance explains. “We continue to produce favorites from 30 years ago, while also thinking of new items every day.”

Known for its irresistible assorted pastries and cakes ($13 each), including white chantilly, Dobash and dream cake, Larry’s Bakery plays an essential role in satisfying your sweet tooth and providing the perfect treat for your next party or get together. In fact, Iris and Lance already are anticipating the rush of the holiday season. According to Lance, Larry’s Bakery easily

sells 3,000 to 4,000 deep-dish pies for Thanksgiving alone.

Loyal customers can’t wait to get their hands on the delectable apple, custard, pumpkin, or the ever-popular pumpkin custard pie.

“It's hard to come by original mom and pop bakeries that are still family run,” Iris says. “My mother, Irene, who soon will turn 80, still comes to the bakery every day and mans the oven in the morning, frosts the cakes, cooks the rice and writes all the invoices.

“We also have a lot of family friends who work here,” she states, referring to baker Milton Isimang, whom she’s known since the age of 18.

Isimang previously served as a cook for the Halekulani and since joining Larry’s Bakery this past February, he already has been deemed creator of the establishment’s premier butter mochi and pumpkin butter mochi.

“Iris, Keith and I were brought into the business, but we didn’t want to force it upon our kids to also be a part of it,” Lance says. “But surprisingly, they just ended up joining the business — it’s

natural for them.”

In fact, you’ll often find the younger generation taking orders, boxing items and restocking the pastry case. To get the best variety of items, it’s highly recommended that you place your order before noon. In addition to baked goods, local favorites such as bentos ($3 white rice, $3.50 fried rice) and Spam musubis ($1.50 white rice, $2 fried rice) also are available. All bentos come complete with your choice of white or fried rice served with scrambled eggs, two pieces of bacon or three pieces of Portuguese sausage.

So, as each bento is carefully prepared, each cake frosted, each pie baked, and with the perfect amount of sugar sprinkled atop each pastry, a father’s legacy lives on.

“You really have to love what you do — and we do,” Iris exclaims. “We always want to be involved with the bakery and be in the middle of it all.

“That’s really the only way that I think it can work. The main ingredient in everything is always love.”

hoi’s Garden strives to serve up dishes that not only taste good, but also are good for you. In concocting dishes, owner Hyosook Choi tries to create healthy, nutritious menu items.

Choi explains that traditional Korean dishes are typically very healthy. “In Korea, we are concerned with health and wellbeing,” says Choi. “So I am always thinking about all healthy foods … And that's what I hope the customers will eat.”

The Stone Pot dishes are among the healthier options, says Choi. These are served with organic black rice and beans. The Stone Pot Rice also doubles as a nutritious soup. Choi explains that the rice becomes hard on the bottom of the pot, which can be made into a sweet soup when combined with berry tea. Plus, the stone pot meals come with a variety of side dishes that allow limitless refills. “It’s popular right now,” Choi says of the stone pots. “The locals really like it.”

Another nourishing option is the Ho Pak Pumpkin Mochi Rice ($15.95), which Choi says is quickly becoming a customer favorite. The dish features a medley of berries, nuts and seeds embedded in mochi rice. The best part is that the dish is served inside of a half-pumpkin, which complements the rice perfectly.

Plus, Choi says, the spiciness of many of the dishes is a good way to get rid of germs. But for those who can’t handle the heat, most of the dishes can also be toned down to accommodate the more mild palate.

“We are trying our best to help our customers eat healthy food,” says Choi.

Such concern extends also to the restaurant’s quality customer service.

The staff is helpful and friendly, and Choi can often be seen wandering the restaurant to check up on her customers. “We are trying to give the best customer service that we can,” she says.

Choi is always in the kitchen, thinking up new dishes. She says that the restaurant typically debuts at least a couple of new dishes each year. “I have a lot of ideas for making the food,” says Choi. Currently, she’s cooking up new treats for the new year.

uch of what adds to the gratifying tastes of the food and dishes at Hy’s Steakhouse in Waikiki is the dim lighting, the antique aesthetics and the tradition of the seemingly lost art of fine dining. Hy’s general manager Bob Panter recently commented on what makes Hy’s a unique niche restaurant.

“I think it is the fact that we are one of the few restaurants that do table side service, not only for dessert but caesar salads, spinach salads, carved rack of lamb at the table and also chateaubriand, among others,” says Panter, who has been with Hy’s Steakhouse for 34 years.

One of the most elegant, fanciful and delicious ways to top off any meal here is to try Hy’s specialty flambe, Bananas Foster ($13.25, feeds two people). Skillfully crafted bananas foster is a savory masterpiece of butter, brown sugar, crème de banana liqueur, dark rum, lemon juice and cinnamon along with two healthy scoops of Haagen-Dazs ice cream and bananas.

This continental dessert is finished at your table as the dark rum is used to spark and ignite the flame which highlights the elaborate dessert’s taste and presentation.

“It is my favorite, as I am a sweets person, and it goes great with our Graham 20 Year Tawny Port, it is a nice complement,” adds Panter.

For the last 15 years, A Catered Experience has sold the Hot Oven Roasted Turkey Package, according to catering manager Ron Hattori.

Customers must pre-order the package before Thanksgiving Day, as it has soldout during the past couple of years. A Catered Experience usually sells about 900 packages every year.

“Nine hundred (packages) is close to our limit,” Hattori says. “The final week (of Thanksgiving), we do a countdown (of the packages).”

The Hot Oven Roasted Turkey package features entrees, appetizers and desserts characteristic of any traditional Thanksgiving meal. An 8-10 pound tender, moist, whole roast turkey is packaged hot, fully cooked and ready to eat. Also included in the package are poultry gravy (4 pounds), real mashed potatoes (4 pounds), stuffing (3

pounds), cranberry/pineapple relish (1 pound), dinner rolls (one dozen) and a Napoleon’s Bakery Pumpkin Pie. Simple reheating instructions are provided for the accompaniments (gravy, real mashed potatoes and stuffing).

For those who want to add to their Hot Oven Roasted Turkey Package, a variety of accompaniments (in addition to the ones already included in the package) are available. These additional items include an uncut maki sushi roll ($4), Napoleon’s Bakery Custard or Apple Pies ($7.50 each) or two pounds of Chicken Nishime ($12), a Japanesestyle stew composed of chicken, konyaku, carrots, lotus root, taro balls, bamboo shoots, gobo and shiitake mushrooms, simmered in an Osakastyle broth. the dinner rolls ($4.50/one dozen), real mashed potatoes ($6), poultry gravy ($5), stuffing ($7.50) and cranberry/pineapple relish ($3). “(The maki) sushi is the No. 1 most popular additional accompaniment to the package,” Hattori says. “Nishime, gravy and pies are also popular.”

Customers can pay for their Hot Oven Roasted Turkey Packages using checks or credit cards; cash payments must be made in person at A Catered Experience’s Waipio office. Call A Catered Experience at 677.7744 to make arrangements.

The Hot Oven Roasted Turkey Packages are available for pick-up on Thanksgiving Day (Nov. 24) from 8:30 a.m.-2 p.m. at the Hawaii Okinawa Center parking lot, located at 94-587 Ukee St. in Waipio.

“Go to the Okinawa Center, and in the parking lot, we will have a tent set up,” Hattori says. “Just drive in; you don’t even have to get out of your car.

Show your receipt to our staff and we’ll load the package for you.”

The Hot Oven Roasted Turkey Packages are just one of many services available through A Catered Experience. The company has been meeting the needs of Oahu families for more than 25 years through its catering services. Kit’s spice of life ppetizers seem to confuse many chefs and restaurant owners. In the rush to be the first to pair exotic flavors with old standards, they forget that food is best when it’s simplest. Kit and May Yiu, owners of Kit n Kitchen, don’t have this problem. Their entire menu is simple, fresh and delicious. Even the pupus.

A perfect example of their less-is-more approach is the Exotic Sandy Wings ($5.95). The wings are fried and topped with roasted garlic. That’s it. No sauce, no dry rub, no greasy residue, just juicy chicken. The simple preparation and presentation has been enough to make the dish the most popular pupu item on the menu for 10 years.

“My customers would probably walk out if I took it off the menu,” says Kit with a laugh.

Another long-time customer favorite is the Garlic Grilled Beef ($8.95). The boneless short ribs are sliced and served medium rare and topped with a chimichurri sauce — an Argentinian salsa made with olive oil, parsley, garlic and mild peppers. The beef is tender and juicy, and the chimichurri sauce adds a perfect splash of freshness and seasoning to the dish.

($8.95) is blanched and grilled to preserve tenderness and served with a garlic shoyu sauce. If you haven’t tried it, beef tongue is incredibly soft with a mild flavor that goes well with all manner of dipping sauce or simple salt and pepper.

Kit n Kitchen is offering two new menu items that are definitely worth trying. The Calamari Risotto Pocket ($9.95) is baked in wine and tomato sauce. The stuffing, a vegetable and tomato risotto with Parmesan cheese, is garden fresh and surprisingly light. For those looking for an appetizer with a kick, the Szechuan Spicy Clams ($9.95) may be just what you are looking for. As Kit says, “it’s not sweat pouring down your face hot, but it will make your lips tingle.”

Wherever your individual heatindex is set, (mine is right around preschooler) you’ll enjoy the clean, spicy garlic flavor. Regular customers also have discovered that the sauce is great on pasta, so take home the extra if you haven’t already sopped it up with the garlic toast that comes with the dish.

If the clams haven’t satisfied your craving for dipping sauces, the garlic herb butter sauce that comes with the Escargot ($5.95) just might do the trick.

The escargot is soft, buttery and slightly salty. In other words, it’s delicious.

People don't often think about having soup as an appetizer, and that would be a mistake at Kit n Kitchen. Diners have a choice of eight soups that run the gamut from Russian Ox Soup ($4.95) to Mediterranean Veggie Soup ($4.95). I had the Mushroom Soup ($3.50) with a French-Style Puff Pastry ($1.95 extra), and walked away satisfied yet ready for another bowl.

Unlike a lot of cream-based soups, Kit’s is light, and the pastry just adds to the enjoyment of a simple food done right. But that’s what they do. Gourmet food without pretension. That’s true even with the Osso Bucco that takes a day to make. But we’ll leave that for another section. Osso Bucco, you know?

f you were looking for a way to express the word “health” visually, the Vegetable Shabu Shabu dinner plate at Shabu Shabu House does it up with an overflowing harvest-load of freshly cut, raw beauty. You know the shabu shabu deal: You come in and are seated at a table with a pot of water. It’s basically do-ityourself dinner but without the prepping or cleanup mess. Order the Vegetable Shabu Shabu set ($15.95) and out comes a plate with udon noodles and tofu, accompanied by a much larger plate laden with crisp reds and oranges — red bell pepper, tomato, kabocha pumpkin, carrots — and every shade of garden green — broccoli, green bell pepper, watercress, zucchini, choi sum and Chinese cabbage. “It’s for one person; it’s an individual order,” he laughs, adding “Of course, it comes with a side of rice, too.”

Then he describes exactly how the process works: “You have your hot pot right there with the water inside, or you can order vegetarian broth — just vegetables, no fish oil or chicken stock.

When the temperature goes up, you put the vegetables inside.

“We have two vegetarian sauces. One is ginger with onion and the other is sesame. Both are homemade from a secret recipe.

There’s no msg, it’s all natural. You cook the vegetables, take them from the pot, dip them in the sauce, and that’s how you eat shabu shabu.”

Kishi notes the Japanese way is to eat the udon noodles at the end of the meal.

Chef James “Kimo” Akaka has been serving holiday meals for the past decade. A perfect addition to any feast, Akaka says his meats are not too smoky, are evenly cooked and have a lot of flavor.

“I personally like to eat smoked meats,” he said. “It’s a clean way of cooking and it tastes good.”

Akaka, a 1978 graduate of Saint Louis School, previously worked in the kitchens at Spago, Bellagio hotel and Sandy Valley Ranch in Las Vegas. He returned to Hawaii in 2002 and opened his catering company. More recently, he has been providing his popular smoked dishes on a regular basis out of a lunch truck parked at 438 Kamakee St. (near Nordstrom Rack) Tuesday through Friday from 10 a.m. to 2 p.m. His mobile smoker is right in front, along with a crowd of loyal customers.

Ingredients: • 2 tablespoons unsalted butter • 4 extra large Aloun Farms sweet onions • 1/3 cup dry sherry (or 1/4 cup brandy) • 6 cups beef broth • 4 sprigs fresh thyme, tied with kitchen twine • 1 bay leaf

• salt and pepper to taste • 4 pieces small baguette, cut 1/2inch thick • 8 ounces shredded Gruyère cheese (about 2 1/2 cups) Preparation: • Remove center part of the onion and keep about three outside layers. Keep onion whole as it will be used as a bowl later. Slice the interior of the onion into small pieces.

• Place butter in pot, add onions and a pinch of salt. Cook on medium heat for about 15-20 minutes or until the onions start to caramelize, then deglaze with dry cherry or brandy. Keep cooking on low heat for about 10 minutes. Add a cup of beef stock and cook until the broth evaporates. Add another cup of beef broth and cook for another

10 minutes. At this point the onion should have a dark brown color.

• Stir in the remaining 4 cups of beef broth, thyme, and bay leaf, scraping up any final bits of browned crust on bottom and sides of pot.

pon entering Keo’s Thai Cuisine in Waikiki, one would immediately notice the restaurant’s casual, yet elegant atmosphere with a tropical garden ambiance. Customers will then acknowledge the bronze statues and stunning floral arrangements — comprising of orchids and other Hawaiian flowers and plants — that complement the pieces of artwork displayed throughout the restaurant. The décor ranges from Thai art to local pieces, including original paintings, embroidered tapestries and woodcarvings. The eatery’s atmosphere, coupled with its modern interpretation of classic Thai cuisine, contributes to its popularity among locals and tourists alike, according to owner Keo Sananikone.

tance of all major Waikiki hotels — the restaurant has served a variety of locals and celebrities for the past three decades. The eatery’s past patrons include former U.S. President Jimmy Carter and his wife, as well as two princesses and former prime ministers of Thailand.

Keo’s Thai Cuisine has presented customers with a high caliber of classic Thai cuisine since 1977.

Sananikone’s restaurant has won numerous awards, including “The People’s Choice” by Honolulu magazine and “America’s Best Thai” by Bon Appetit and Gourmet magazines.

“We’ve been in business for 35 years,” Sananikone says. “It is the biggest and oldest Thai restaurant in Hawaii.”

Keo’s Thai Cuisine originated from Sananikone’s desire to open a restaurant serving

authentic Thai food. He remembers attending high school and college on the Mainland and not being able to find many Thai restaurants. When Sananikone came to Hawaii in 1975, he decided to open a restaurant serving Thai food, prepared with authentic spices and ingredients.

For those who have never experienced Thai food before, Sananikone says his restaurant serves as a good introduction to the cuisine.

“We can please almost everybody, from vegetarians to children with limited taste palates,” he says. “Our food is cooked to order — it can be really spicy or very mild.”

The Evil Jungle Prince ($12.9516.95) reigns as the eatery’s signature dish. This original recipe — available with seafood, chicken or vegetables and tofu — is the restaurant’s most famous

dish, combining coconut milk, red chili and fresh basil, served on a bed of chopped cabbage.

“We call it ‘evil’ because it’s hot; ‘jungle’ because the herb — sweet basil — usually grows by itself in a natural setting in Asia (like the jungle), and ‘prince’ because it’s a dish fit for a prince,” Sananikone says.

Other popular dishes include the Fresh Summer Rolls ($8.95) — a mild combination of steamed chicken, shrimp, rice noodles, mint, parsley, carrots, cucumber and fresh spices rolled in fresh rice paper — and the Sa-Teh Chicken ($9.95), spicy peanut Sa-Teh sauce served over chicken on a bed of chopped cabbage. The restaurant also is famous for its variety of curries.

Besides its original recipes, Keo’s Thai Cuisine is unique because of its authentic ingredients and spices. Many of these

spices are grown locally on the restaurant’s farm, along with Thai fruit trees, vegetables, flowers and herbs.

“We have our own farm,” Sananikone says. “Most of our spices and herbs are grown organically on our own farm in Mokuleia. Our curries are made from scratch.”

Although Keo’s Thai Cuisine only opens for dinner, Sananikone mentions its sister restaurant — Keoni by Keo’s — is located on the same street, and opens for breakfast, lunch and dinner. Sananikone recommends that customers seeking Thai food for lunch visit Keoni
