appy Sunday, Ono readers! One of the best things about the weekend is not having to set my alarm clock for the next day (relatively speaking). And although breakfast is easily one of the best meals of the day, I sometimes have to skip it simply because I adore sleeping in whenever I can. Therefore, I happily opt for brunch instead, a combination of breakfast and lunch, where I can have the best of both worlds! I love being free to indulge in all my breakfast favorites while also having the chance to feast on lovely lunch specialties.

So, knowing there are probably many readers who also don’t want to sacrifice sleep on a Sunday morning, I present to

By the time 10 a.m. rolls around on a Sunday morning (or any day, for that matter), my body is in desperate need to fuel up with immaculate cuisine. Let’s be honest, sometimes breakfast just won’t cut it and brunch is the only way to go.

Enter Kit n Kitchen. This top-notch Eurasian eatery, owned by Kit Yiu and his wife, Mae, offers diners some of the most tantalizing and delicious brunch options around. Take, for example, the unique Omurice ($10.95). This hearty omelette-like creation is a must-have for me. Imagine a heaping portion of island pineapple chicken fried rice, wrapped ever so nicely in a blanket of three extra large scrambled eggs. The omelette is then bathed in homemade tomato sauce and includes a choice of bacon, Spam, link sausage, ham or Portuguese sausage, and white or wheat toast on the side. It’s definitely a

ed Tsakiris, co-owner of Teddy’s Bigger Burgers, is a self-proclaimed burger junkie — meaning he eats, breathes and lives burgers every day of his life.

Tsakiris, along with co-owner Rich Stula, opened the doors to Teddy’s Bigger Burgers at the base of Diamond Head in 1998. Today, 13 years and five locations later, this renowned burger establishment continues to thrive here at home, having opened its most recent location in Westridge Center in Aiea. Teddy’s also is sprouting up in numerous spots across the globe.

Dining Out recently paid a visit to Teddy’s Bigger Burgers Aiea where Tsakiris and his team proved why this is the place to be when craving the allAmerican classics of beastly burgers, savory fries, and thick and creamy shakes.

DO: It’s obvious that you have a great passion for burgers. How did the idea for Teddy’s Bigger Burgers come about?

TSAKIRIS: Yes, I honestly love burgers, and I am a burger freak show. I’ve always made 1-pound burgers and cooked them up at home. So, one day,

soon after graduating from college, I asked my friend Rich if he wanted to open up a burger place and he said yes, and that’s how it happened. So we just started researching the simple concepts of the ’50s diners.

DO: It’s been 13 years since this burger establishment first opened at the base of Diamond Head. What can customers expect?

TSAKIRIS: Teddy's Bigger Burgers isn’t sophisticated by nature — it’s very simple. We provide the best quality product and let it shine on its own. We do everything from the belly because we love burgers. We have our specialty menus and feature board, but everything is based on our basic burger and then you can make it as crazy as possible with additional toppings.

We do have some suggestions in our employee favorites that we recommend to our customers because our employees really know flavor profiles.

DO: What would you recommend for a first-timer to Teddy’s who is indecisive about what to order?

they’re eating. The one thing that's consistent in the whole lineage of Teddy’s is that we always use ground chuck beef, potato buns and the best quality products. Our methods, procedures and mastery of serving burgers came with time. Some favorites here at Teddy’s 3 are our Teri Burger (Big 5 oz. $5.59, Bigger 7 oz. $6.59, Biggest 9 oz. $7.59) Spud Burger (Big 5 oz. $4.99, Bigger 7 oz. $5.99, Biggest 9 oz. $6.99 with spud topping 59 cents) and Monster Double Burger (Big 5 oz. $6.99, Bigger 7 oz. $8.49, Biggest 9 oz. $9.49). The Spud Burger came to be because I pile french fries on my burgers all the time — we just substituted the fries for a seasoned hash brown patty. It’s also our burger of the month — we always have a burger and shake of the month that we feature at every location.

The Monster Double also is a real superior product that we really take pride in, featuring two hamburger patties and slices of cheese. We have many combos (burger, fries and drink) available as well, starting at $7.99.

DO: Are you constantly thinking of new burger creations?

TSAKIRIS: Yes, we like to reinvent ourselves within our four walls and within our identity, and keep on flipping burgers and trying new flavors. But we still want to keep things rather simple. Company growth doesn't necessarily come from adding new items — sometimes less is more. It's all about executing, training and providing the best customer service.

The first seven years of business was all about perfecting the product. Our mantra is quality, service, cleanliness and value.

DO: What does the future hold for Teddy’s Bigger Burgers?

TSAKIRIS: We are now starting to franchise on the Mainland, primarily Washington and Oregon, and Japan. The

burger sector is really robust, and there’s a lot of success in this business if you have the right mindset. You get exactly what you put into it. There's a reason why we’re still here after 13 years. I love burgers and we wanted to create a place that was our favorite burger joint. Teddy’s really came from the belly and an appreciation for burgers, it didn't come from a business proposition — it’s what we coined “the burger approach to business.”

Million Great Things T he great thing about Korean cuisine is the healthy dose of vegetables typically served in and/or alongside each entree. The not-so-great thing for those who don’t eat meat or fish, however, is that meat is the star of nearly every dish on the menu.

Yakiniku Million, for example, a tiny Korean eatery conveniently located near Ala Moana Center, actually has meat in its moniker — “Yakiniku� translates to “grilled meat.� So why in the

world would a non-meat-eater venture into this place with such a meaty name?

The dish includes beef and is topped with an egg, but all you have to do is ask, and they’ll omit them. W

hen the husband-and-wife team of Patrick Chang and Sansane Pornchairattanakun opened Bangkok Chef nearly 10 years ago as a hole-in-the-wall eatery in Nuuanu, their goal was simple: Offer “simply delicious” hearty Thai food full of fresh ingredients.

Fast-forward to present day, and Bangkok Chef continues to epitomize the couple’s dream. In addition to the original Nuuanu locale, Bangkok Chef has an eatery in Manoa, and as of February, a full-service restaurant just off North Nimitz Highway. According to Chang, the new location offers the ideal mix of great food and customer service.

“We have received really good comments from customers so far,” says Chang as he takes a quick break from greeting customers and clearing tables during a recent busy lunch rush at the Nimitz location. “While the Nuuanu and Manoa locations cater to takeout orders, some people prefer to have a sitdown meal and share food with friends.

Now, we are able to cater to both.”

Chang also takes pride in Bangkok Chef’s menu that, while simple, offers a wide variety of tastes and authentic recipes the kitchen staff creates with pride. He says that “you can see the experience and passion for cooking.

Like my wife says, ‘you give your heart and soul to the cooking.’ That comes through in the food.”

The Pad Thai ($7.25) provides an example of Chang’s rationale as the dish contains a simple mix of rice noodles fried with egg, chicken, tofu, bean sprouts and chives tossed together in a house pad Thai sauce. The combination of flavors and textures have made the dish one of the most popular items on the menu because, as Chang puts it, “the most popular item is so simple, but

Another simple recipe that has customers coming back for more is the Cashew Nut Chicken ($7.25, add $2 for fish and $2.55 for shrimp). The dish incorporates sliced chicken breast stirfried with cashew nuts, onions and bell peppers. The Panang Pork Curry ($7.25, add $2 for fish and $2.55 for shrimp) is another “tossed” dish that combines the unique flavors of sliced pork loin, potatoes, lime leaves, peanuts and fresh basil with a medium-spicy curry and coconut milk sauce.

“It’s not extensive like some other restaurants,” says Chang of the menu.

“It’s simple and not confusing. When you look at the menu, you know what you want. That’s our goal: food that’s simple, affordable and delicious.”

Speaking of delicious, check out the Spring Rolls ($7.50 for six pieces). The deep-fried delights allow diners to delve into a combination of ground chicken, bean threads, carrot, black fungus, onions and taro wrapped in wheat flour paper and cooked until crispy and golden brown. hen it comes to describing Fendu Boulangerie’s “unique” factor, bakery chef and owner Niel Koep only needs one word: fresh.

“We are a bakery that specializes in bread,” Koep says. “We bake our breads and pastries fresh every single day. The main focus is to make products that are all natural. We add no chemicals and we use no hydrogenated shortenings.”

In addition, Koep explains that while the European-style bakery offers its customers smaller pastries, its products still exude rich flavors.

“For example, the portion size of one of our Danishes is one-third the size of what you’d typically find in a bakery in Hawaii,” Koep says. “In Europe, they eat a lot of rich things, but not in large quantities, not in large portions.”

Fendu Boulangerie opened in March 2009 in Manoa Marketplace. While the bakery specializes in breads, its menu has expanded during the past two years.

“We added more (items) on the savory side,” he says. “We added sandwiches, and after we added sandwiches, we added Paninis. Pizza was always in

the plan. We also added the Island Style Chicken Pot Pie (regular $9.50, petite $5.50).”

Because Fendu Boulangerie opens early, customers can start off their morning with an assortment of freshly baked pastries. Among popular choices are the Chocolate Croissant ($2) and the Lychee Streusel Danish ($2).

“The chocolate croissant is a croissant dough that’s cut into a rectangle with a strip of French chocolate inside,” Koep says. “Our Lychee Streusel Danish is also very popular. It’s a square of flaky Danish dough that has an almond cream, pastry cream and then the

The aroma of fresh breads also draws customers, who frequently choose to purchase Multigrain Bread with Flax Seed (regular $4.50, petite $2.75) or the Baguette (regular $3.75, petite $2.25).

The bakery’s name in itself signifies the importance of bread products. “‘Fendu’ is a classic French loaf of bread,” Koep explains. “There’s different shapes; fendu is a split loaf.

‘Boulangerie’ means it’s a bakery that specializes in bread.”

Koep says that the bakery tends to be the busiest during lunch, from 11 a.m. to 2:30 p.m. Customers can choose from a variety of Rustic Gourmet Sandwiches, such as the highly requested Curried Chicken Salad Sandwich ($7) — served on sweet onion Naan bread with fresh farm greens and tomatoes — and the Oven Roasted Smoked Turkey/Black Forest Ham Sandwich ($7), bacon, lettuce, tomatoes, provolone cheese and Dijon mustard atop a rustic bread bun. These two sandwiches are the most popular, according to Koep.

Rustic Gourmet Pizzas and paninis are available to customers as well. The latter was added to the menu recently; customers now have grilled options such as the Chicken Cordon Blue Panini ($8.50) — a tenderloin chicken sand-

wich with sweet onions, Gouda and Swiss cheese, fresh sage, tomatoes and Black Forest ham — and the Vegetarian Special Panini ($7.50), a whole wheat bread sandwich with balsamic vinaigrette dressing, Japanese eggplant, bell peppers, sweet onions, fresh tomato, herbs, fresh mozzarella cheese and Hamakua Farms mushrooms.

“We added them (paninis) about two months ago now,” Koep affirms.

In terms of desserts, customers can choose from delicacies such as the Lilikoi Cheesecake ($4.50 per slice) and the Valrohna Chocolate Mousse Cake ($4.50 per slice) to the exquisitely decorated Pear and Almond Tarte ($2.75), but two desserts in particular remain more popular than the rest.

“Our Mini Fuji Apple Crumble Pies ($5.50) and our Valrohna Dark Chocolate Dome ($5.75) are our two best sellers,” Koep says. “When it comes to signature items, though, our Curried Chicken Salad Sandwich and our Chocolate Croissant are probably what we’re best known for.”

While Fendu Boulangerie’s menu has expanded just a few months ago, Koep is already planning to implement further changes.

“We are planning on adding breakfast sandwiches and macaroons, which are a hot item right now,” he says.

Discover Bella Mia’s ‘super-duper’ dishes few months ago, a woman walked into Bella Mia’s in Kaimuki and asked to speak with owner Ted Sung.

“She came up to me and she said, ‘I would like to try your marinara sauce before I come to eat here,” says Sung. So he introduced her to his head chef, Joey Gonzales, who gave her a sample of the sauce. “And she says, ‘This is the sauce I’ve been looking for for the past 10 years,’” Sung says.

“Out of all the other Italian restaurants, we had the taste she was looking for.”

Bella Mia, which also has a pizzeria on South Beretania Street, offers New York-style Italian cuisine. Sung decided he wanted to start Bella Mia after tasting other Italian eateries around the island. “I liked the style 1 and I decided that I wanted to do a family-style Italian restaurant, but with really super-duper food,” he says.

The weekends are a busy time for Takemura and his staff, as an all-you-can-eat buffet ($25.95 adults, $12.95 children) is available from 10 a.m. to 2 p.m. every Saturday and Sunday, featuring a salad bar and a variety of hot entrees.

“We have everything here from breakfast items such as Eggs Florentine, French Toast and even a live waffle station and omelette station,” Takemura states.

However, when it comes to my ideal midday meal, aka brunch, Pagoda’s prime rib carving station is unbeatable by all standards, along with the crab legs, shrimp and vegetable tempura and tasty fish.

“Everything has been very well-received here,” Takemura says. “We’re also offering

higher quality fish as part of our brunch buffet.

For instance, we sometimes feature a whole steamed red snapper made Asian style with green onions, ginger and cilantro cooked in sizzling oil.”

Now, if you have an intense sweet tooth like I do, you’ll surely go gaga over Pagoda’s full line of exquisite desserts. According to Takemura, Pagoda has paired up with JJ Luangkhot of JJ’s Bistro & French Pastry to wow diners with Luangkhot’s decadent delights. t is hard to believe Canton Seafood Restaurant is located on the ever-busy, ever-congested Keeaumoku Street. With its high-roofed wood-slat ceiling and wideopen dining room framed with walls of art, the Chinese restaurant is a sanctuary from the rush of downtown Honolulu.

As soft music plays from overhead speakers, well-dressed waiters quickly bring out plates of food so beautifully arranged, they are almost too pretty to eat.

The key word is almost, because it is hard to resist the tempting smells of the food set before you.

And as fellow diners dig into their orders of sweet and sour pork, crispy beef and steamed seafood, it is soon apparent that people come to Canton Seafood Restaurant as much for the food as for the complete dining experience.

“We concentrate on quality, quality of the food and the total product,” says manager Peng Gong. “Also, because the economy is not too good, we try to make the price affordable.

But that doesn’t mean the quality is low — we always use the best quality of food.”

This commitment to true value can be seen in the daily lunch and dinner specials. Lunch specials start at $5.99 and are served between 10 a.m. and 2 p.m. While the Gon Lo Mein ($5.99) is always a hit, Gong says other items to try include the Beef Spicy Noodles ($6.99), Salt and Pepper Pork Chop Noodle in Soup ($6.99), Shrimp with Eggs Chow Funn ($7.99), Sweet and Sour Cabbage Stir Fried with Rice Noodle ($6.99) and Fried Spring Beans-Pork on Rice ($6.50).

Lunch plate options that come with choice of white or fried rice also are available starting at $6.50, as are side orders such as Fried Egg Rolls ($4.99), Young Chow Fried Rice ($6.50) and Crispy Gau Gee ($5.99).

“All of the vegetables, like the choy sum and Chinese broccoli, come fresh from the local farms,” Gong adds. Though they do use MSG, Gong says diners can request their dishes be made MSG-free.

“You can ask to make it how you like,” he says.

Dinner specials begin at $7.99 and are available to order any time of day. Currently, Live Maine Lobster is specially priced at $12.99 each, with most weighing well over 1 pound. Another seafood delicacy, the Live Crab is available for $18.95 per pound.

ince arriving on the Hawaii restaurant scene on April 10, Canton Seafood Restaurant has become a popular destination for those looking for a taste of authentic Cantonese cuisine.

“All of the Chinese people (who eat here) agree our Cantonese food is the best,” says manager Peng Gong.

Winning over locals, who may be wary of dishes like Roast Young Pigeon ($12.99) and Caterpillar Fungus Chicken soup ($6.99), has taken some time, but Gong says Hawaii residents have finally started to give the Chinese restaurant a try, delighting in dishes prepared in the traditional Cantonese way thanks to cooks who hail from the renowned foodie district.

“In China, Canton is very famous for food; people say, if you want to eat, go to Canton,” Gong says. “Our (head) cook is very good — he used to work at a popular Chinese restaurant in Hawaii years ago — and our other cooks are from Canton, so our food is very Cantonese-style — it is not chop suey- or mixed local-style.”

The food also is prepared family-style, so it is encouraged to order a few dishes to share among the entire table.

Gong suggests starting with what is undoubtedly the most popular item on the menu, the House Chicken with Flavor Sauce ($15.95/half).

“We are famous for this dish,” Gong says.

Crispy Almond Crusted Oyster with Crab Meat Béarnaise Sauce (4 servings)

Ingredients: • 12 fresh oysters removed from shell • 1 cup tempura batter • 1/2 cup bread crumbs • 1/2 cup chopped almonds • 1/4 cup dried parsley • pinch of salt, pepper, to taste • 1 cup Bernaise sauce • 2 strips bacon • 1/2 tablespoon chopped shallots • 2 cups spinach • 2 tablespoons Tobiko caviar, for garnish Preparation: • In a small bowl combine bread crumbs, almonds and dried parsley. Set aside.

• Dip each oyster in tempura batter, then coat with the almond-bread crumb mixture. Set aside.

• Preheat oil to 350 degrees and fry oys-

ters until they turn golden brown. Set aside.

• In a hot pan, sauté bacon until it turns light brown, add shallot and spinach, and cook for a minute.

• Plate some sautéed spinach on oyster shell and top with fried oyster and Béarnaise sauce.

• Garnish with caviar.

Ingredients for Bernaise Sauce: • 3 tablespoons white wine vinegar • 3 tablespoons chicken stock or water • 3 tablespoons dry white wine • 1 tablespoon minced shallots • 1 tablespoon tarragon (stem OK) • salt and pepper • 3 egg yolks • 2 sticks unsalted butter, melted in saucepan • 1/2 tablespoon minced fresh tarragon • 2 tablespoons chopped crab meat

Preparation: • In a small saucepan, combine vinegar, wine, chicken stock, shallots and tarragon, and simmer over moderate heat until reduced to 2 tablespoons of liquid. Cool and strain through a fine sieve.

• In the top of double boiler or a heatproof bowl, whisk egg yolks until they become thick and sticky. Whisk in reduced vinegar mixture and pepper.

Place the pan or bowl over a saucepan of simmering, non-boiling water. Whisk until mixture is warm, about 1 minute. (If mixture appears to become lumpy, dip pan immediately in a bowl of ice water to cool, whisk until smooth and then continue recipe.)
