Indeed, the comida is always flavorful and the service ever-so-friendly at Serg’s. Dining Out caught up with Arellano on a recent afternoon and discovered the vibrant culture of Mexico City is alive and well at the restaurant’s two locations in Manoa Valley and Waimanalo.

DO: What is the story behind Serg’s Mexican Kitchen? Arellano: We offer very authentic Mexican food, very fresh. Authenticity is absolutely key here. I was born in Los Angeles and grew up in Mexico City with my family. I was always in the kitchen with my parents and grandparents, who were always cooking up Mexican food. That’s all we cooked.

he aroma of flautas and savory carne asada permeate the air while the sounds and beats of festive music keep pace with customers filing in and out. At Serg’s Mexican Kitchen, there are always maravilloso scents, sights and sounds — thanks to owner and chef Sergio Arellano, who has created quite a stir among locals since first bringing a taste of Mexico to the Islands in 2009.

DO: As the executive chef here at Serg’s Mexican Kitchen, you offer quite a variety of exquisite dishes to customers. Share with us some of your specialties. Arellano: We have our famous Flautas ($9.25), which features a 12-inch flour tortilla, rolled and lightly fried. It’s then stuffed with your choice of shredded beef, chicken, pork carnitas, al pastor, or a vegetarian option. Finally, it’s topped with sour cream, avocado salsa and queso fresco (Mexican cheese). The Enchiladas ($8.95) also are a popular choice, with three rolled corn tortillas stuffed with your choice of meat, shrimp (additional $1) or made vegetarian style. Then we top it off with your choice of green or red sauce. Most of our dishes are served with rice and beans.

DO: Most menu options, such as the Pork Carnitas ($10.25), are derived from personal family recipes. Tell us more about this dish. Arellano: This family recipe is a tender pork shoulder, slow roasted with special ingredients. It’s also served with rice, beans and pico de gallo. Everything’s delicious here and super fresh. ing options, and you said Serg’s Mexican Kitchen is known for its authentic Mexican dishes. What makes your cuisine authentic? Arellano: Authentic ingredients! I don’t use anything from a can — all my salsas are made fresh and, of course, credit is due to Grandma’s recipes. I’ve been in the business for about 15 years, so I’ve also created some of these recipes myself. In addition to our specialties, we also have lots of appetizers and salads like Serg’s Nachos ($7.45) and Ceviche Salad ($10.25); tacos and burritos, such as Mexico City Style Tacos ($2.75 each) and Fish Tacos ($3.25 each), to name a few. Taco Tuesdays are set from 4 p.m. to closing every Tuesday — Fish Tacos are only $2 and all other tacos are $1.50.

so desirable among kamaaina? Arellano: I believe it’s the spices and most definitely the flavor. There’s a whole variety of flavors found in Mexican cooking, including herbs, oregano, cilantro and more. To me, Mexican food has a very special flavor, very fresh with that extra zest.

DO: Your Manoa restaurant seems to take customers to Mexico City without them having to leave home. Would you agree? Arellano: Yes. The outdoor seating here is reminiscent of the backyard of my house. People can bring their drink of choice, as it’s BYOB. In fact, you could say that this is Mexico right here (laughs). The Waimanalo location has indoor seating, but you’ll find the same freshness and quality of DO: What makes Mexican food food.

Saying ‘oui’ to JJ’s JJ alluring appetizers

Praseuth Luangkhot makes it a priority to serve all his favorite meals at his Waialae Avenue eatery, JJ Bistro & French Pastry. He insists that his confidence in and resulting pride from the popular menu derived from Laotian and French tastes and presentation techniques, come from the eatery’s 13-plus years of serving quality confections gleaned from fresh ingredients. “We began adding items one at a time, little by little,” Luangkhot says. “It’s a pretty good sign that you can see your market is expanding and accepts you. From pizza to pasta to a la carte (items), we just kept adding on and it went crazy!” The talented owner and chef has expanded his restaurant to include more square footage while also supplying hotels and other restaurants with his popular desserts and pastries. One can clearly see the passion in JJ’s eyes as he talks about some of his most popular dishes, including the Baked Lobster Avocado ($7.95). The dish, which JJ insists is the most popular off the appetizer menu (he calls it the “No. 1 hit”), features rich lobster meat with the chef’s special sauce covered with mozzarella cheese atop pieces of JJ’s freshly baked French bread.

‘Not your ordinary plate lunch place’

But at Kahai Street Kitchen, preparing gourmet quality food and serving it with the speed and portability of a plate lunch is right up the restaurant’s alley. Owner Nao Iwata can often be found in the kitchen helping prepare meals at the restaurant — which is nestled at the corner of Kahai and Kalihi streets — while also keeping track of the daily operation. “It’s not your ordinary plate lunch place,” remarks employee Ryan Leong as a customer looks at the extensive menu in awe. “The goal was to be different from everyone else.” While the day-to-day lunch service is important to Iwata and his staff, the owner’s goal is to continue expanding his catering business. “We would like to do lots more catering, so people can call and ask about everything from weddings to corporate events,” Iwata says. “We’re capable of serving up to 1,000 people, and the biggest event we’ve done is 1,200 people.” Iwata counts on the help of executive chef and soon-to-be part owner David Yamamoto for help with everything — from adding to and altering the menu to coordinating and tailoring catering opportunities. Iwata finds that his clientele represents a wide range of Oahu’s diverse population, and they all have one thing in common: They enjoy what Yamamoto calls Kahai Street Kitchen’s “par-

adise comfort food.” “I find that I have a lot of business owners, executives, lawyers, dentists and doctors, and downtown office (workers) come down to pick up lunch,” Iwata says. The Kalihi business, which launched in 2006 as a catering-only kitchen and has since expanded steadily, is located minutes away from a swath of industrial businesses including the Honolulu Harbor piers, and serves as a convenient spot to get great food at a reasonable price — no matter what you do for a living. “Basically what I try to do is offer items to fit their budgets, and cater to the customer,” Iwata says. “David is the brains behind all the food. He’s the creative side.” For those looking for typical plate lunch staples such as Loco Moco ($7.75), Garlic Chicken ($7.95) and Hamburger Steak ($8.75), Kahai Street Kitchen has you covered. Its regular menu also features an array of sandwiches including the hearty Kahai St. Hamburger ($7.50) and the Hot Pastrami Sandwich ($6.50). Additionally, the eatery also features a vast array of constantly rotating daily specials dreamed up by Yamamoto. Some of the culinary creations include: the Maui Potato Chip Crusted Mahi Mahi ($8.75); Seafood Pasta ($8.95) complete with fresh shrimp, scallops, fish and mussels tossed with linguine in a white wine cream sauce; Crab Cake Benedict ($9.50) that incorporates scrumptious crab and a lobster cream sauce with the traditional breakfast favorite; and a Pipikaula and Watercress Salad ($8.25) that merges the distinctive salty flavor of the meat with a homemade sweet Maui onion dressing atop a bed of fresh greens.

On a recent visit by Dining Out, Kahai Street Kitchen offered a pair of unique seafood specials both with their own mixture of flavor and texture. The Bubu Arare Crusted Opakapaka ($10.95) featured fresh fish coated in a layer of tiny arare balls, which create a distinctive crunch and seasoning combination when enjoyed. or delicious, authentic Vietnamese cuisine at reasonable prices, one does not have to look further than Pho My Lien, according to Walter James, a close friend and business partner with the restaurant’s owners, Tommy Dang and his wife, Lien Bui. “We give a good-quality meal, a

good-tasting meal and a meal that is bountiful at a very reasonable price,” summarizes James. Tommy and Lien, who have owned Pho My Lien for the past decade, came up with the restaurant’s name as a combination of their names and “pho,” a Vietnamese beef noodle soup often considered a staple of the Vietnamese diet.

“It’s ‘Pho,’ ‘My’ and ‘Lien,’” James explains. “‘My’ is for Tommy, but in Vietnamese, his name was My Dang, and his wife’s name is Lien (pronounced ‘Lin’).” Pho My Lien was originally located on Ala Moana Boulevard in Waikiki, but moved to Westridge Shopping Center across the street from Pearlridge last year. “We opened up (there) in midNovember, so we’ve been there a little over six months,” James affirms. Pho — pronounced “fa” in Vietnamese but often read as “fo” in America — is one of the eatery’s signature dishes. For $7.95, customers can place large orders of pho, which comes with an assortment of vegetables as well as up to five choices of meat, including beef balls and beef tripe. When asked what makes Pho My Lien distinct from other Vietnamese restaurants, James is quick to answer. “The pho … the taste,” he says, immediately. “Lien is a very good cook.” In addition to pho, the Crispy Spring Rolls, Summer Rolls and Green Papaya Salad are menu favorites. The Spring Rolls include ingredients such as chicken, shrimp and long rice, while the Summer Rolls feature bean sprouts, chopped

Besides the ongoing monthly specials, Pho My Lien advocates its reasonable prices through “Pho-to-Go Tuesdays,” which is a recent innovation. “Our slowest days are Tuesdays; that’s why we like to do our ‘Pho-to-Go’ (special),” James explains. “Our regular bowl of Pho ($7.95) is only $5.95 for takeout. We just started it (‘Pho-to-Go’) about two months ago; we’re getting a nice response on that.” While Pho My Lien has not altered its menu immensely during the past decade, Shabu Shabu — Japanese-style hot pot, with vegetables and meat cooked at each table in a simmering broth then dipped into various sauces — will be added in the near future, according to James. “We have electrical plugs into all the tables now and we have the pots; we’re looking to start that either late summer or early fall,” he confirms. While the restaurant’s monthly specials may change and new dishes may be added to the menu, the mission behind Pho My Lien remains the same. “We are giving you good portions of food at reasonable prices,” he emphasizes. “It’s (Pho My Lien) family-style eating, a family-style atmosphere … it’s a great restaurant built by two hardworking people.”

By now you’ve probably gotten your fill of pho, so why not try a taste of something new at Saigon House? Beginning tomorrow, the South King Street restaurant (located near Sherwin Williams across from the Hawaiian Humane Society) is introducing a brand-new soup called Mi Quang ($8.50). “This type of dish is very unusual and very unique here,” says Saigon House owner Mandy Nguyen. “We’re one of the very few who serve it in Hawaii.” Mi, meaning “saimin,” and Quang, the region of Vietnam from which the dish originates, is a rice noodle dish served with a hard-boiled quail egg, chunks of – See page 18

estaurant owners are a group of tough, determined individuals who roll with the current and find a way to keep afloat in the ever-changing culinary tide. So it is no surprise, after learning her personal story, that Mandy Nguyen is the owner of not one, but two very successful eateries: Bale Kahala Mall and Saigon House. “I’m a survivor,” says Nguyen, who was born in Southern Vietnam during the fighting and bloodshed of the Vietnam War. By the time she was 7 or 8, the war was over but life was still extremely hard, so her family decided to leave the country in hopes of finding a better life in the United States. However, the only way out was by boat. “Along the way we experienced the whole boat experience: storms in open sea, pirates,” Nguyen remembers of her terrifying travel across the Pacific. “You'd see the pirates with guns and knives — it’s not the same as the Disney movie, because they can kill you. We got mobbed nine times. There was rape, everything. The journey was a really hard journey. It was either you make it or you die.” After the family’s failed first attempt out — they landed in Indonesia only to be sent back to Vietnam, but their boat drifted onto an unknown island where they were jailed for several months — Nguyen, her parents and her four siblings eventually made it to Hawaii on their second go-round. “We had to start all over again, the language, the lifestyle — everything,” says Nguyen. “We worked really hard.” To make ends meet, her father began cutting hair and opened his own salon, while her mother started a lunch wagon, eventually purchasing the Bale restaurant on Fort Street Mall. “That's how I got exposed to food, through working with my mother,” says Nguyen. “Now I have a Saigon House, and since I’m Vietnamese, I try to bring all of the Vietnamese cuisine to the island and keep it authentic.”

Bean sprouts, shredded ong choy and shredded banana flower with lemon and jalapeno sauce come on the side. “You look around and everybody’s serving a lot of pho, and this is one of the things very few people are serving,” Nguyen says. “I discussed it with my cook and we said let’s put this on the menu, let the local people have a taste of the real, authentic Vietnamese cuisine.

“At Saigon House, we try to keep everything authentic,” she adds. “A lot of restaurants localize the dish; our style is to try to keep it as authentic as we can.” And while there is an ample amount of pho on the menu (more than a dozen different variations to be exact), other popular items at Saigon House include the Spicy Beef Soup ($9.25), Finger Shrimp ($8), Chicken Salad ($7.50) and Lemon Grass Chicken and Rice ($8.25). “That dish is ono, for sure!” Nguyen exclaims of the chicken and rice plate. “It’s the No. 1 seller right now.” The chicken is marinated curry-style with a special blend of Vietnamese spices, then sauteed with fresh lemongrass and served with rice and a side salad. “It’s fresh, and it tastes really nice with the rice,” Nguyen says. “It has a very fresh flavor.” For those seeking an extra dose of spice, condiments including hot sauce, hoisin sauce, Sriracha sauce, fish sauce and shoyu always are present on each table.

Sekiya’s keeping it hot with age-old noodle dish By Chris Fleck ekiya’s has been around since 1934, and for decades generations of families have been able to enjoy a hearty serving of their favorite noodle dish — saimin. Saimin — which has characteristics of Japanese udon, Chinese mein and Filipino pancit — is a simple noodle dish served in a warm broth, with vegetables and select meat choices. “It is an age-old comfort food for everyone, it is something everyone enjoys, something we’ve had since we were kids,” says Sekiya’s Restaurant and Delicatessen owner Joy Morihara.

“Sekiya’s is a family restaurant, so my grandparents made saimin, my mother, my aunts and it has just continued on with me,” Morihara adds. The speciality of Sekiya’s saimin dishes lie in the simplicity of the broth. Made from scratch, Sekiya’s mixes dried shrimp and char siu with vegetables and chicken broth. Served for lunch and dinner, Sekiya’s saimin is $4.75 for a small serving, $6.55 for a large and $8.65 for an extra large order. When it comes to saimin, Morihara has one suggestion: “You always have to get a barbecue stick with your saimin. Your saimin is not complete without it.”

Pan-seared Shrimp with Penne Pasta Macadamia Nut Pesto By Chef Chai Chaowasaree Pesto: • 1 cup basil leaves • 1/4 cup Italian parsley • 2 cloves garlic • 1/4 cup roasted macadamia nuts • 1/4 cup olive oil • 3 jumbo shrimp, peeled and de-veined • 3 cups cooked pasta of choice, pre-cooked • Shredded Parmesan to garnish • Roasted macadamia nuts, diced, to garnish • Roasted tomatoes, seasoned with salt and pepper and diced

Instructions: • Blend pesto ingredients in food processor while adding oil slowly. • Sauté shrimp in olive oil about a minute on each side, then add pesto and tomato. Toss in hot pasta, season with salt and pepper. • Top with Parmesan cheese and chopped macadamia nuts.

tableside @ ‘Lei Day for Japan’ at Aloha Tower hef Chai Chaowasaree of Chai’s Island Bistro recently collaborated with some of Hawaii’s finest chefs, including Roy Yamaguchi and Alan Wong, in support of Hawaiian Airlines “Lei Day for Japan,” a special fundraising effort to help the country in its recovery efforts following the recent earthquake and tsunami. The fundraiser took place at Aloha Tower Marketplace and also featured recognizable entertainers such as Kealii Reichel, Natalie Ai Kamauu and Jake Shimabukuro. Guests enjoyed exquisite cuisine from the 25 various food stations showcased at the event. All proceeds raised will go toward the Japanese Red Cross Society.
