t’s that time of the year again when our world seemingly revolves around a prolate spheroid called a pigskin.

Yes, football is back in full force with fantasy teams chosen and myriad fans proudly sporting their favorite jerseys at a stadium or in front of the tube. To be honest, I’m no expert on the game, but I do appreciate the spirit of competition and, more importantly, all the parties that go along with this festive season.

With that in mind, I’ve decided to pay tribute this week to my “starting lineup” of tailgate favorites — establishments worthy of kicking off any party the right way! So without further ado, down, set — and let’s go!

For the past 45 years many local families have made Kenny’s Restaurant at Kamehameha Shopping Center an integral part of their lives.

Personally, I can recall enjoying early morning breakfasts there as a child with my family.

These days, the Kalihi eatery has proudly become an essential part of tailgating season.

“We now have a tailgate special going on,” says Kenny's Restaurant’s assistant manager Leihulu Irvine. “We had a lot of customers who would stop here to eat before they’d go to support the UH Warriors, and we’d have those who would come to eat after the game.

“A lot of customers expressed to us that they’d like to take our food to their tailgate parties — so that’s how we came up with this special.”

Football and tailgating fans would agree that this is the best idea yet.

Popular items offered as part of the onolicious tailgate special are Kenny’s Korean Style Chicken, Chow Mein, Fried Rice, Egg Battered Mahi Mahi and Chinese Chicken Salad.

Speaking of fresh, the Chinese Chicken Salad is a winner and, according to Irvine, has always been a best-seller since the restaurant’s inception. Sink your taste buds into a forkful of this savory salad, featuring shoyu chicken, char siu, won ton chips, Chinese parsley and peanuts on a bed of crisp lettuce laced with a special sesame seed dressing.

“This is the first time we’re doing something specifically for our tailgating customers, and so far this special has been taking off,” Irvine states.

A Stanford University-educated teacher, Gimenez opened Max’s Restaurant in Quezon City, Philippines, after soldiers he had befriended during World War II kept coming over to his house for drinks. The café initially served chicken, steak and beverages, and the soldiers grew fond of the signature chicken that was — and still is — tender, juicy and crispy. Max’s became known as “the house that fried chicken built,” and the rest, as they say, is history. The restaurant expanded with chain

“Chicken was one of the items he offered to guests, and it became so popular that (Max’s) turned into a restaurant as a result,” explains Maly San Luis, managing director of Max’s in Hawaii. “That’s how the restaurant became famous: the chicken. Since then, especially in the past 20 to 30 years, the menu has expanded to include a full assortment of Filipino offerings.”

Max’s of Manila, as it is known abroad, has seen its popularity in the Islands continue to grow at its Dillingham Boulevard and Waipahu locations.

house for a wide assortment of favorites, including the everpopular fried chicken, cooked in its signature secret recipe.

San Luis sat down with Dining Out during a recent bustling lunchtime at the Waipahu restaurant to share a bit of insight into what keeps customers buzzing about Max’s.

DO: How would you describe the origin of Max’s cuisine as a whole?

San Luis: You have different regions, as with any cuisine, and I would describe Max’s as being more central, as is Manila.

It’s a combination of Chinese, Malay and Spanish — that’s

what Filipino food is. There are a lot of stir-fry dishes, but some of the ingredients are from Malay, and you have some Spanish touch to it — the same way the history of the Philippines came about (with multiple cultural and ethnic influences).

DO: What has helped make Max’s so successful here in Hawaii?

San Luis: It helps to have such a huge Filipino population, but we’re also offering something different from what is usually available. Most of what is available is the regional cuisine with more of a Northern (Philippines) influence, and (Max’s) offers open, inviting food options to those who may not be accustomed to the ethnic delicacies.

DO: What are some of Max’s most popular offerings?

San Luis: Of course, we have the chicken ($7.95 for a half chicken, $13.50 whole) that has become popular around the world. The Bicol Express ($13.95) is crispy pork belly served with a spicy, creamy sauce. Also, the Sinigang ($8.95-$9.95 for regular, $14.95-$16.95 for large) that is the tamarind-based sour soup and a staple in Filipino cooking, and it comes with various meat choices. There is even a version made with miso that comes with mahi mahi in it.

DO: With such a strong Filipino population here in the Islands, how has Max’s been received thus far?

San Luis: It’s been wonderful — better than we expected. We’ve gotten a lot of support in terms of acceptance as well as people choosing to host parties here. We’ve become a party cen-

tral. In general, it’s a family-oriented business, and it’s a good way for the younger generation, who is just being introduced to Max’s, to experience native cooking from back home.

DO: Describe Max’s potential for hosting parties and large gatherings.

San Luis: At the Waipahu location, we can fit up to about 185 people and at Dillingham, we can accommodate up to 150. We also have smaller private rooms at both locations that can fit parties from 25 to 35 people for anything from corporate presentations to meetings and family gatherings. Get 25 of your closest friends and family together — for Filipinos, that’s natural!

DO: Are there any upcoming specials that customers should be on the lookout for?

San Luis: This year, worldwide, it’s the 66th anniversary of Max’s. Every

year we try to do something on the anniversary date, which is Oct. 18, and this year we’re offering half off the Max’s Chicken on that day. The special is good for that day, and is available for both dine-in and takeout orders. In the past, we’ve run various specials, and the chicken goes like crazy. It’s our way of saying thank you.

DO: Do you recommend any specific dishes for those looking to try Max’s for the first time?

San Luis: We do have Combo Meals (ranging from $5.75 to $9.50) that come with chicken, and other choices — whether it’s pancit or lumpia. So, they can try out a variety of different items.

Also, in conjunction with the Haunted House next to our Dillingham location, we came up with a Snack Pack ($5.50) available after 5 p.m. through the rest of this month at that location only.

esserts at JJ Bistro & French Pastry in Kaimuki aren’t just delicious, they’re a taste of art.

From the front entrance, customers are immediately greeted by a display of 45 different sweet concoctions, including JJ’s signature Chocolate Pyramid and the popular Chocolate Lilikoi and Lady in Red Guava Bavarian.

Just one glance and you’ll be tempted to order dessert first. And that’s totally acceptable. After all, owner/chef Jinjie “JJ” Praseuth Luangkhot started his business creating desserts. He also makes pastries for Chai’s Island Bistro, Singha Thai Cuisine, Pagoda Hotel & Restaurant and Tsukiji Fish Market and Restaurant.

“My style is something very simple, yet it looks elegant and is tasty,” explains Luangkhot, who is the winner of the 2011 Honolulu Star-Advertiser Ilima Award for Diamond Head Theatre Show Stopper - Best Dessert.

JJ’s signature Chocolate Pyramid features a dark chocolate mousse made of a combination of three different types of chocolate, and comes with or without fresh raspberries. It tastes like a chocolate truffle that just melts in your mouth.

“I loved mathematics when I was a kid and that’s the reason I created the Chocolate Pyramid,” says Luangkhot. “It looks very simple, but with one missing number it won’t be the shape, and that’s one thing that was interesting to me when I came up with the mold.

Also, I just like to look at it. I’ve never seen the (Egyptian) pyramids, but whenever I look at my pyramids I feel like I’m 6 there. I just feel a connection.”

While JJ Bistro & French Pastry is known for its mouthwatering desserts, the restaurant also offers a full menu, including salads, soups, pizza, pastas and specialty entrees such as a Cheese Ravioli with Lobster dish for only $12.95.

In August, a special Afternoon Tea menu was added, and earlier this year, Luangkhot 1 opened Le Cacao Bistro, conveniently located next door. It’s a New York-style bistro offering more steak and seafood dishes, although customers can still order from a menu that naturally includes JJ’s award-winning desserts.

ot only does Anytime Café offer an international fusion of Italian, Chinese and American dishes, the restaurant actually brings in specialized ingredients from around the world to ensure it delivers a high-quality and unique dining experience.

Since opening in February 2010, the response to the Market City Shopping Center eatery has been great. “We are so happy that some customers, after they eat, bring their friends and family. If they feel happy, then they will come back and we have a lot of regulars now,” says owner Cindy Wong.

Shrimp Wonton Noodle in Broth ($7.95) The thin noodles and wonton wraps in this dish come all the way from Vancouver, the closest place Wong could find the right product with the perfect chewy consistency. After soaking up the flavorful broth — made from dried shrimp, pork bone and dried fish — with the imported noodles, you’ll want to add another batch ($2 extra) before sampling the Shrimp Noodle ($8.25) and Lo Mein-style ($2 extra) options.

Pork Chop Risotto ($12.95) The proof is in the pudding, or the risotto, in this case. In addition to the pair of pan-fried, seasoned pork chops that rest atop a mound of beautifully simmered Arborio rice, a third piece of pork makes this dish extraordinary. Wong especially loves the light tomato-broth base that brings all the flavors together.

Thai Style Pork Cheek ($6.95) A true rarity, you won’t see this dish in many places. “You can’t buy this cut of meat from the market,” explains Wong, who orders it fresh, directly from local meat companies. The cheek is then marinated in a homemade sauce, panfried and finished in the oven. The resulting unique eat is an unbeatably tangy and tender pork dish.

For families looking for a restaurant that provides their children with healthy, delicious and do-it-yourself dinners at reasonable prices, Hanaki Restaurant is the perfect destination.

fter nearly 15 years of offering items off a highly desirable buffet menu, Hanaki Restaurant decided to make a drastic switch last May and go shabu shabu. “(At Hanaki), we wanted to have a family restaurant and to have good-tasting food that’s affordable,” says manager Mark Mitsuyoshi. “We liked the idea of shabu shabu for many years now; it has more variety and it’s healthier. Your family can receive all the vegetable servings they need and the average price (per customer) is $12-$13.

Our shabu shabu has a great variety of different, fresh, locally grown vegetables, sliced meats and seafood.”

If customers opt for shabu shabu, they must first select the type of soup they want ($5).

Soup flavors range from the Konbu — light, seaweed-based udon soup — to the Sukiyaki, a heavier soup with shoyu and

sugar.

“These soups give the foods that you choose flavor,” explains Mitsuyoshi. “We have mild soups, stronger soups and spicy soups. The most popular soups are the Konbu, Miso (medium, traditional Japanese soybean paste) and Sukiyaki.”

After choosing their soup flavors, customers can choose a variety of ingredients to add to their soups. Each of these ingredients — meats, seafood and vegetables — are located in bowls or plates color-coded by price.

“We list our prices by container because it’s easy to understand; we have such a large variety (of items),” says Mitsuyoshi.

For the green bowls ($2.50), the most popular choices include Chinese cabbage, baby pak choy and the udon noodle.

Other available options include tofu, vegetable soba, bamboo shoots and ramen. According to Mitsuyoshi, the Inoki mushrooms are the most popular of

the red bowls ($3.50), which also offer shiitake mushrooms, lobster balls and ika fishcake.

Plates ($4.50) feature options such as clams, baby octopus, fish fillet, lamb and salmon.

“The prime rib and the sliced squid are the most popular choices (for the plates),” says Mitsuyoshi. “We have more than 35 types of meat and seafood and more than 40 different kinds of vegetables to choose from.”

For customers who are unsure of which ingredients to add to their soup, Hanaki offers suggestions located above the ingredients, based on broth type. For example, mustard cabbage, a variety of mushrooms, tofu, long rice and corn would be an excellent combination with a spicy soup base, whereas those with a Konbu base should choose ingredients such as romaine lettuce, choi sum, oyster mushrooms, udon noodles or broccoli for the best results.

“For some reason, the taste of shave ice is very refreshing after the hot soup,” he says. “Everybody seems to enjoy it. We also offer beer, wine, hot sake and premium iced sake.”

While the shabu shabu has been popular among customers, people still choose items from Hanaki’s a la carte menu. Two- or three-choice combination plates are available ($9.95 and $12.95), as are choices of various udon bowls or donburi meals.

“The shrimp tempura, chicken karaage and misoyaki butterfish are still our most popular hot food items,” says Mitsuyoshi. “We had them during the buffet time and people remember them. The Nabeyaki Udon ($12.95) — shrimp tempura, chicken, egg and vegetables — and Shrimp Udon ($11.95) would be the most popular of the udon bowls. And everyone’s familiar with the Chicken Donburi ($11.95), comprising tender chicken, cabbage, onions and egg.”

Although the majority of its customers dine in, Hanaki offers takeout options for items on both, the a la carte menu and for shabu shabu, much to the delight of its clientele.

“Practically everything is available for takeout,” Mitsuyoshi confirms. “We had some people make a list of things they want (for shabu shabu), we cooked it and they picked it up. pon entering Canton Seafood Restaurant, you might notice the eatery’s friendly staff, the bustling, efficient waiters or the comfortable, family-style atmosphere. However, the restaurant is well-known for its Cantonese cuisine, which has attracted both Chinese and locals alike.

“Our food is Hong Kong style, Cantonese style,” explains Grace Chen, who owns the restaurant with her husband, Gerald. “That’s why Chinese people love our food. It’s not like other restaurants; it’s not chop suey and mixed with local (flavors). Ours is authentic. Most of our cooks are from Canton and from the (former) Dynasty restaurant.”

Canton Seafood Restaurant originally opened in Chinatown eight years ago, but in April, the Chens relocated the eatery to its current location on Keeaumoku Street.

“This location is a little bit bigger than the one in Chinatown and it has attracted more people,” Grace says. “Our location is very convenient, close to Ala Moana and to town. We have our own parking lot available, and after 5:30 p.m., customers can also park at the Maui Divers’ parking lot next door.”

When it comes to the restaurant’s signature dish, Grace points to House Chicken with Flavor Sauce ($15.95/half).

“Chinese people (especially) love our House Chicken,” she says. “The sauce is already inside the chicken; it’s not like regular ginger chicken. The cook has a special sauce to make it.”

“The House Chicken with Flavor Sauce and the Deep Fried Flounder with Garlic ($17.95/whole) are definitely house specials,” echoes Gerald.

Other popular entrées include Deep Fried Flounder with Seasoning Herbs ($15.95/whole), Steamed Fresh Fish ($18.95/pound), Honey Walnut Shrimp with Mayonnaise ($12.95), Pan Fried String Beans ($9.95), Pork Chop with Salt and Pepper ($9.95), Chinese Broccoli with Dried Fish ($9.95),

Clams with Wine Sauce ($12.99) and Steamed Prawns with Garlic and Fun ($12.95).

“Garlic and green onion are steamed with the prawns,” says Grace of the last dish, “and then under (the prawns), we put the white, fat fun noodles.”

While locals tend to order “safer” dishes like the Deep Fried Flounder with Garlic, Roast Duck ($13.95/half) or Peking Duck ($16.95/half), Chinese customers often opt for more daring dishes, such as the eatery’s Caterpillar Fungus Chicken Soup ($6.99) or the Roast Young Pigeon ($12.99/whole).

“The local people don’t really eat the pigeon, but Chinese people say it’s the best in Hawaii!”

While many locals and Chinese customers enjoy their dining experience at Canton Seafood Restaurant, the eatery provides takeout options as well. Party menus are also available, designed for parties of 10.

The drive for some great appetizers ini Ryu had no idea what she was getting when she opened Newtown Drive Inn a month ago. Because the restaurant was located adjacent to the Newtown Driving Range in Aiea, she assumed her customers would be hungry golfers and the occasional lunch and dinner guest. To her surprise, the spot has been a community gathering place for some time, and those people have continued to make the restaurant a busy three-meal stop after she added some of her mother’s own Korean recipes.

Customer Oi Williamson of Kapolei says he doesn’t get to the popular driving and dining spot as much as he used to, but when he does, it’s the Kal-bi ribs ($8.50) that bring him back. The Spicy Chicken Wings ($7.75) also comes highly recommended.

Ryu first marinates the wings in white wine and then uses a dry rub of 5 garlic powder, black pepper, salt and mochi powder. After frying, she tops the wings with her secret spicy sauce. The result is a crispy appetizer that has a sweet and tangy flavor with just a bit of heat. A small side salad helps clean the palate between bites, and the two scoops of rice turns the appetizer into a meal.

ituated in the heart of Waikiki, Atlantis Seafood & Steak presents hungry visitors with upscale Island cuisine. The menu boasts an array of local catches as well as fresh seafood from neighboring shores. In addition to showcasing the best in local flavors, the establishment also allows tourists to enjoy the familiar American classics — from burgers to steaks.

Still, Atlantis may seem to be part of “the lost city” to many locals who rarely venture into bustling Waikiki.

But executive general manager Steven Matsuno believes now is the right time for locals to rediscover the area. In preparation for the upcoming AsiaPacific Economic Cooperation meetings next month, “a lot of the Waikiki improvements are starting to really look nice now,” says Matsuno. “It would be a nice thing for locals to see.”

While taking in the view, Hawaii residents and tourists alike can take in some delicious meals as well. To start off, feast your eyes on the impressively large Northwest Pacific Oysters ($13.95). Matsuno explains that these raw delights, which come from Washington, have become a very popular appetizer. “They’re brought in live, fresh, every day. Everyone really loves fresh oysters.”

For the main course, he recommends the restaurant’s best-seller, the Atlantis Garlic Rib Eye ($31.95), made from roasted meat that is cooked 2 with onion and garlic, then topped with Boursin and a sprig of rosemary. Its bursting flavor is matched only by the excitement of having an aromatic, sizzling platter arrive at your table.

“Everyone turns their heads when it comes out, and a lot of our visitors want to eat American steak, so it’s kind of the best of all,” says Matsuno.

lthough Broadway Seafood & Oyster Bar is much more than just oysters, it was a love of oyster restaurants that inspired owner Akihide Yonehama to start his own joint.

“I used to live in New York City for a long time, and there were so many oyster bars over there,” Yonehama says. “I often went to the oyster bars, and had this idea that I could start my own.”

Although similar venues may be common in New York, Broadway Seafood & Oyster Bar is an innovator here in the Islands. That’s in part because the best oysters come from fresh, clean, cold salt water — like Canada, Washington and New Zealand, where Broadway gets its supply.

Each oyster is intricately nuanced — flavor varies depending on where an oyster comes from and the seasonal changes in water temperature. One type of oyster that Broadway offers is the Stellar Bay Gold. “This was initially an oyster from Japan that was brought to Washington,” Yonehama explains. “It’s a good size and it’s very creamy and sweet.”

Yonehama says that the Kumamoto oyster from Washington is the most popular. Originally from Japan, this oyster is sweet and rich. “Everybody loves it,” he says.

Another popular option is the Penn Cove Select, which is also from Washington and has a crisp taste with a firm texture. “The Sunset Beach oyster is from Canada,” he says.

“It’s very refreshing, very briny, and is firm in texture.”

From now through the rest of the fall, Yonehama says oysters from New Zealand, along with the Sunset Beach from Canada, will have the best flavor.

No matter which type of oyster you go with, Broadway's chefs can prepare it any way you’d like — baked, steamed, deep-fried, smoked and, for the more adventurous palate, raw.

With its classic furniture, romantic lighting, Hy’s has an almost magical feel to it. This tranquil hideaway is the perfect place to dine for a quiet meal or celebrate a special occasion.

On a recent weeknight, a few customers chatted with friends over drinks at the bar, while others enjoyed leisurely dinners in the dining room. Among them was the Perez family — Marcela, Samuel and daughter Leilani. The family had two reasons to celebrate at Hy’s: It was their second anniversary as Hawaii residents and it was Marcela’s first year at her job.

Marcela: “I ordered the Filet Mignon ($40.95 for 7 ounces) with a baked potato, and I had a Crab Cake with Roasted Garlic, Pinenuts & Basil ($14.95) for an appetizer.”

Samuel: “I ordered the Onion Soup Gratineé ($8.95). And I wanted to try their Oyster Rockefeller ($18.95), since not too many people make that. I had the New York Strip ($41.95 for 9 ounces). I was really impressed. It’s a hidden gem … I just love the atmosphere.”

Mahi Mahi with Fresh Chutney

Ingredients: • 10 ounces fresh mahi mahi fillet • 1 ounce olive oil • salt and pepper, to taste Preparation: • Add olive oil in hot saute pan and sear mahi mahi on both sides. Finish in 350-degree oven for approximately 6-8 minutes.

Chutney Ingredients: • 3 ounces finely diced Maui onion • 6 ounces diced mango • 6 ounces diced pineapple • 1 teaspoon minced ginger • 2 ounces olive oil • 2 tablespoons sugar • 2 tablespoons apple cider vinegar • 1/2 teaspoon ground cumin • 1/2 teaspoon salt • 1/2 teaspoon de-seeded and minced jalapeno Preparation: • In a hot saute pan, add olive oil. When it starts to smoke, add onions, jalapeno and minced ginger. Saute until onions become translucent.

• Incorporate apple cider vinegar, sugar and cumin, and simmer until vinegar reduces to 1/3 of its volume.

• Blend in diced mango and pineapple, and saute well.

• Add salt, to taste.

Plating: • Place mahi mahi on plate and top with 3-4 ounces of pineapple mango chutney.

• Finally, garnish with micro greens.
