Wiston Estate Awarded ‘Winery of the Year 2018’, the beautiful Wiston Estate has been owned and managed by the Goring family since 1743. With winemaker Dermot Sugrue at the helm, we produce English Sparkling wines of exceptional purity and finesse from Chardonnay, Pinot Noir and Pinot Meunier grown on our chalk vineyard on the South Downs. We are extremely fortunate at Wiston Estate to be blessed with an abundance of ingredients on our land, from pheasants, partridge and deer, to apples, hazlenuts and wild garlic when in season. Our English Sparkling wines pair beautifully with them, so much so that we’ve held several Food & Wine Pairing Dinners in the vineyard this year to celebrate. Looking forward to Christmas, here are our recommendations to ensure your festivities are a sparkling success! Wiston Brut NV: With a crisp acidity and notes of green apple and lemon zest, this wine is the most versatile of all of our wines and is the perfect wine to celebrate opening stockings on Christmas morning or with nibbles at a drinks party. Wiston Estate Cuvée 2009: Cheeseboards tend to be a major fixture at Christmas and with Sussex producing some stunning cheeses, like Mayfield and Brighton Blue, there are many to choose from. Pair them with our Cuvée 2009, which has delicious notes of truffle, toasted hazlenuts and peach. Wiston Estate Rosé 2014: It wouldn’t be Christmas without a Roast Turkey or Christmas Pudding and our Rosé 2014 tastes sublime with them both. With cranberries, redcurrants, seville orange and gingerbread characteristics, this is always a staple at our Christmas celebrations. Wiston Estate Blanc de Blancs 2011: We are lucky to have plenty of delicious fish and shellfish just off the Sussex Coast, so why not treat your guests at New Year with a decadent Fruits de Mer platter? The ideal pairing has to be our Blanc de Blancs 2011, with its chalky minerality and creamy finish. This wine has also just won a historic BEST IN SHOW from Decanter World Wine Awards.

Charlie’s Trout 5 miles South-East of Salisbury lies the historic Longford Estate, 16,000 acres of England’s most beautiful countryside. Through the heart of the estate’s water meadows runs the Wiltshire Avon, with crystal clear waters fed by the chalk waters from the aquifers high above on the Wiltshire plains this is the perfect place for farming rainbow trout. Charlie’s Trout are reared in the fast moving waters of the farms raceways, where they benefit from a steady inflow of mineral rich and highly oxygenated waters coupled with nearly 50 years of good farming practices. “To produce the best product you have got to start with the very best ingredients” says Charlie Meyrick, founder of Charlie’s Trout. “We are incredibly lucky to work with such high quality trout”. All the fish are harvested to order twice a week, “We hold no stock whatsoever, everything is as fresh as it can possibly be” adds Charlie. Once the fish have been harvested they are taken down the road to a family run smokery where the father and son team prepare the fish by hand before smoking them over green Wiltshire oak. After 16 hours gentle smoking the fish are pinned and hand sliced before being packed ready for despatch. Using just green oak smoke and a minimum of salt the result is a mouth-wateringly delicate slice of succulent smoked trout. Simply Served with a twist of lemon and black pepper, in a salad or on homemade blinis, Charlie’s Trout is hard to beat!

KIMTA KIMTA is a community based organisation (therefore it is not a recognised charity and makes no profit) in the Kibera slum in Nairobi. Kibera houses over 1 million people, unfortunately work and facilities are scarce here and most families are reduced to living in corrugated iron and mud huts, with very little money and access to basic facilities such as food, toilets, healthcare and education. KIMTA believes education is for everyone and strives to offer a primary and secondary education to children from all walks of life. After a donation of ÂŁ500 from the Blandford Forum Rotary club in 2009, KIMTA was able to buy a small plot of land (approx 1/4 acre) and build its own basic building. This gave the children a safe place to go, away from the dangers of the streets. It has developed over the years and provides a place for children to study after school and receive extra tuition, which is run by volunteer teachers. Over the years we have managed to support and make a difference to hundreds of children in the slum and we hope to continue to do so. This year, the two donations from the POWS enabled KIMTA to buy the following: textbooks, underwear for the teenage boys and girls, 76 children to go on a school trip to the Safari Park, a television so that they can show the big football matches and charge a small fee to generate their own income. The Windlesham children also have the opportunity to choose whether they keep their Alpha sweets or donate the equivalent amount of money to go towards paying for a boy called Yusuf to go to school. The scheme has been a great success and allowed the children to take some responsibility and allow them to make a choice. A letter below from Vincent, the Chairman of KIMTA. Take this opportunity to greet you in the name of our Lord Jesus Christ, trusting you all doing fine. KIMTA is a community-based organization in the largest slum of Kibera Kenya that operates in two main areas education and sports, want to thank you for joining into our work as we make a difference in the children and the youth of Kibera. This year alone we have received two donations from your institution which has made big impact in our work. In addition, the fee support for Yusuf our form four student for four years I am very grateful and very happy for the partnership, may we serve together moving forward. God bless you, Vincent Kegode

Q: what’s my New Year’s resolution? A: to LIVE clutter-free

We can show you how to organise your home so that it becomes efficient, tidy, and welcoming. Children thrive in ordered, clutterfree environments, where everything has a place - a place that makes sense to the way you live. We can help you create that, and without sending anything to landfill. We have links with farreaching charities, so if you decide to remove any unwanted items, you know that they will benefit others, whilst freeing up space in your home and mind. help@chaosandkind.co.uk +44 (0) 774 898 3676 www.chaosandkind.co.uk Recycle, re-use, re-purpose.

Meet Emily Harrison Founder of

chaos&kind

Business woman, and mother-of-two, Emily Harrison, met with me to talk about her new venture; Chaos & Kind. It offers “a home re-organisation and de-cluttering service that helps people to allocate a place to each and every item in their home”, Emily tells me. Emily and her husband Guy own a Coarse Angling Complex in Kent, and also manage properties in London and Sussex, so time-management is vital, she admits. “Having a place for everything makes both living and working so much more efficient” and that’s how the concept of Chaos & Kind was created. Emily is obsessive about recycling and re-purposing, and wanted to ensure that the business operated an almost-zero waste policy. In contrast, she explains that she’s “actually a tidy person trapped in an untidy person’s body”, so by having places for everything, it forces her to live tidily. That’s why she’s so empathetic towards her clients, she explains. I asked her what the motivation was for starting the business, and she told me she was first inspired by watching the Netflix series “Tidying Up with Marie Kondo”. And after she’d finished applying the Japanese Tidy Consultant’s concept to every cupboard and drawer in her own home, she decided to create a tidy-formula of her own, and apply it commercially in order to help others “get back in control too”. In response to the question “so, what do you do for fun”, Emily tells me that she likes “gin, motorbikes and mountains; what else is there?” Mountains of clothes, I wonder? By Marie Harrald

2020 VISION: TRENDS THAT WILL SEE YOU THROUGH WINTER INTO SPRING Fashion is an excellent social barometer. With the rise and fall of hemlines, the social historian can interpret how people feel about the times they live in – and right now, it is clear the key trend is sustainability. As shoppers, we are being urged to buy items that are made to last, not landfill. That is not always easy with fashion. But it can be done, with our guide to the trends that are here to stay, long into the next decade. 1. Colour blocking This doesn’t mean a pleasing ‘pop’ of colour here and there, but boldly wearing one block of colour against a block of a totally different colour: say, a turquoise skirt, with a yellow blouse, ideally with bright red boots. The knack here is to pair colours that are the same depth of colour. Beginners are in luck, as this season’s key colour of brown looks great with loads of brights from orange to turquoise. A trend started by Balenciaga and still coming up on catwalks for spring, including Prabal Gurung. 2. Flats With Everything Once there were rules about what clothes were worn where and when. No more. This last decade has ditched convention, letting us team trainers or DMs with floaty dresses, and wear taffeta skirts with jumpers for day time. And this is not a passing fad, but rather a reflection of a growing informality in society, echoed in new attitudes to working practices and emotional honesty, among other subjects. 3. Revive La France Arguably the key look for autumn/winter 2019 is a revival of 1970s Bourgeoisie, characterised by breezy silk blouses, and A-line skirts or culottes over boots, teamed with tweeds, as seen at Celine and Balenciaga. Having first emerged at a time of economic insecurity, it is little wonder we are returning to it now. Ideally in chocolate and beige. 4. The Preppy If bourgeoisie is not your style, another easy look to layer up or strip back, as temperatures change, is the androgenous Preppy style created for Annie Hall by Ralph Lauren in the 1970s: V-neck sweaters, waistcoats, wide Oxford bag trousers and moccasins appeared at Etro, Longchamp and Lacoste, and will work through winter, with tweeds and superlong tailored coats coming off into spring. 5. 50 Shades of Beige Go head to toe in multi-tones of beige: stone, oatmeal, mushroom, camel, greige, even into pale butter pat yellow and gold. Layer it up for winter, topped off with a classic mac or shearling coat, and pare it back for spring. As seen at Balmain, Kenzo, Tom Ford, Dior, Jil Sander, Agnona and Burberry. 6. The Power Sleeve, Power Shoulder, Power Collar There are many different ways to make a power statement these days: choose from sharp and square shoulders in nipped suits (as at YSL and Givenchy), or the softly contoured volume of padded coats (as at McQueen, Bottega Veneta, and Balenciaga); alternatively go for a large mutton leg sleeve (as seen with equally Renaissance square necks at Y/Project, Simone Rocha and Preen) 7. That Seventies Style Squared off toes on shoes and boots are back (seen at Balenciaga), as are granny print dresses, and the stretched 70s disco collar. Easiest of all the Seventies accessories to grab now is a silk scarf, to be worn knotted at the neck or wrapped around the head, as seen at Missoni in the 1970s… and again at Missoni for 2020. 8. The Rebel Leather, studs, straps and chains recalling punk but refashioned for a woman who is slightly less disenfranchised but still has a cause. For inspiration, see bondage, corsets, and lots of leather at McQueen, Louis Vuitton, and Versace. NB For the first time in a long time, leather is still around for spring, especially lovely in bright colours at Bottega Veneta. So worth investing. 9. Check In Tailoring is back, and with that comes tweed and houndstooth (at Chanel and Dolce & Gabbana), as well as plaid and tartan (at Gucci and Dior) and polka dots too. Rest assured, whatever tailored jackets you wear for winter will still be in style to throw over lighter dresses come the thaw. 10. Made To Last However you are dressing, the key fashion to follow is sustainability. It no longer looks good to be wasteful. So buy carefully, choosing items that are made well, made to last, from companies that subscribe to the circular economy. Even better, go for something old - happily, with so many nods to past fashions, this is a great time to revisit vintage styles. As Orsola de Castro, cofounder of Fashion Revolution, put it: ‘The most sustainable garment is the one already in your wardrobe.”

Cabin Pressure Spirits We’re delighted to welcome Sussex based gin distillery Cabin Pressure Spirits to this year’s fair. Cabin Pressure are a husband and wife team based in Horsham. Thinking there must be a way to produce a more flavoursome gin, David (who will be at the fair), set about experimenting in the garden shed. A year later, it turned out he was right! He borrowed an approach from the science lab to produce gin at a much lower temperature. The result is an exceptionally smooth spirit with a superb depth of flavour. Now three years into their journey (but still working in the garden shed!), Cabin Pressure have a number of gins on the market, including a recent collaboration with local Michelin-starred chef Jean Delport (Restaurant Interlude @ Leonardslee Gardens). Pop along to their stall to hear the full story of life in the gin-shed and to try their brandnew Cold Brew Coffee Liqueur.

Christmas Puddinis By Hattie Bourner

INGREDIENTS Serves: 30 FOR THE PUDDINGS 125 grams best-quality dark chocolate (finely chopped) • 350 grams cooked and cooled Christmas pudding • 60 millilitres Cherry Brandy or Rum • 2 tablespoons golden syrup • FOR THE DECORATION • 100 grams white chocolate (finely chopped) 100 grams of red fondant • 150 grams green fondant • TOOLS • • •

Holly leaf fondant cutter Mini muffin pan Mini baking cases

METHOD 1. Line a baking sheet (that will fit in the fridge) with baking parchment and set it to one side while you make the mini puddings. 2. Melt the dark chocolate in a heatproof bowl suspended above a pan of simmering water, or in the microwave (melt for 30 seconds, take out bowl and give it a stir, place the bowl back in the microwave and repeat the process of cooking for 30 seconds, stopping, stirring and returning to the microwave until the chocolate has melted.) 3. Crumble the cold Christmas pudding into a bowl, add the Brandy (or alcohol of choice) and golden syrup and stir well till all is incorporated. 4. Pour in the melted dark chocolate and stir again: this will help to bind the mixture. 5. To make this step easier, put on a pair of those disposable vinyl gloves (sold in supermarkets) and pinch out small lumps of mixture and roll so that you have little rounds about the size of a chocolate truffle. You should get about 30 out of this mixture. 6. Place on baking sheet and cover with clingfilm and slot into the fridge to firm up. 7. To decorate, melt the white chocolate (in the same way you did the dark chocolate), then let it cool for about 5 minutes, to make it easier to work with, while you roll the red fondant into small balls (to evoke berries), and roll and stamp out the green fondant into miniature holly leaves. 8. Using a teaspoon, drip a little of the melted but slightly cooled white chocolate on each pudding, then arrange the berries and holly leaves on top to decorate. Tip: These can be made up to a week in advance and stored in cardboard cake boxes.

Porto’s Flowers This Christmas why not impress your family and friends with a beautiful table garland that you can embellish with your favourite flowers and embellishments. You will need: • Floristry Scissors •

Eucalyptus Cinerea

Eucalyptus Populus + Berries (tri)

Mossing Twine - Green

Floristry wire

Soft Ruscus TRI (Small Leaf)

I like using a few different varieties of eucalyptus as well as some simple, easy to find items like apples, ivy, but you truly can make this project your own. Try adding in pine cones or intertwining battery-operated lights. Whatever you choose, this is a project that immediately elevates a dining room table, a mantle piece or a stairway railing. Step-by-Step Guide to a DIY Greenery Garland Prepare your ingredients before you start constructing the garlands. Condition the foliage overnight before you start working with them and gather your tools, i.e. Florist Scissors and twine required. 1. Cut all the green stems to approximately 20—25 cm pieces. Prepare each stem by removing larger side shoots, but keep in mind it’s okay for this project to look natural and organic – you don’t want your garland over-manicured. Each stem should look a bit different and carry a unique shape with varying leaves, colours and lengths. Using soft ruscus and eucalyptus will provide volume and length to your garland. 2. Group stems. Grab five or six assorted greenery stems and wrap the paddle wire very tightly around the stalks of the bundle. 3. Join the stems to the twine. Next, wrap the wire tightly around the twine, attaching the greenery to the twine. Do not cut the wire just yet as you will need some excess to join your bundles together, but trim the twine as needed. 4. Create the garland. Make another grouping of greenery stems and wrap it to the twine using the wire, a little lower down that the first bunch. Continue in this way until your garland has reached the desired length. Remember to clip the ends of your stems and continue to prune as you see fit to help the bundle ends to all reach the same length. 5. Dress the garland. Adding flowers or other natural elements will provide the finishing touches to your beautiful garland. Intersperse red berries into your bundles to match your Christmas decor colour palette, as well as other items such as red apples, cinamon sticks and pinecones. Place the garland wherever is best in your home – on a mantle as I did or through the centre of your dining room table or a stairway railing to display.

Lorica Trust East Clayton Farm is a 120-acre property, located in Washington, West Sussex. It is owned by the National Trust, but is on-lease to the Lorica Trust for 99 years. The charity aims to support disadvantaged and vulnerable people, which is facilitated through land-based activities that take place on the farm. East Clayton Farm works with disengaged young people who are at risk of exclusion from school, developing a sense of self-confidence and responsibility, enabling the young people to thrive once back in a school environment. The farm has recently gained accreditation from ABC awards, allowing young people the chance to achieve land-based qualifications, giving them the opportunity to progress onto further education or training. Life at East Clayton Farm is heavily focused around the care of our livestock collection. Both feeding and mucking out often involves lifting and carrying heavy objects, such as feed bags and hay bales. The generous donation from the Parents of Windlesham School has enabled us to purchase a new industrial-strength outdoor trolley, therefore allowing our students to easily, and safely, transport these items around the farm. Many thanks to all who took part in fund-raising, it makes a huge difference and is greatly appreciated.

There has been a rumour that Father Christmas is dressed in red as a result of an advertising campaign by Coca Cola in the 1930s and previously Father Christmas always wore green. That isn’t true and there are drawings of Father Christmas wearing red one hundred years before this.

Robins are associated with Christmas because Victorian postmen wore red jackets and were nicknamed robins. Due to the popularity of Christmas cards, the two became associated and artists started drawing Christmas cards showing robins delivering cards in their beaks.

The first person to put candles in a Christmas tree was Martin Luther, having seen stars sparkling through the trees when walking home one evening and wanted to recreate the effect for his family.

“And there won’t be snow in Africa this Christmas time” sang Band Aid in 1984. Well they forgot Kilimanjaro, which has snow all year round on the mountain cap. It also snows regularly in South Africa but usually during July not December which is the middle of their summer.

Christmas Day is December 25th. Not everywhere. When the Gregorian Calendar was adopted to replace the Julian Calendar in 1582 to correct drift of the calendar with respect to the equinoxes, October 4th was followed by October 15th, giving a ten day difference, Further drift since then between the two calendars now makes the difference 13 days so Orthodox Christians celebrate Christmas Day on January 7th. Except the Armenian Apostolic Church, who celebrate Christmas on January 6th.

Press Release from Windlesham House School Announcement of New Headmaster The Board of Governors are delighted to announce the appointment of Ben Evans as Headmaster of Windlesham House School on the retirement of Richard Foster in summer 2020. Ben is currently Head at Edge Grove School, where he has been since September 2012, and has previously worked as Head of the British School Colombo (Junior) and as Deputy Head at Bramdean College, Exeter. Ben will be joined at Windlesham by his wife Alex, who is looking forward to playing a full role in school life, and their two boys, aged 5 and 8. They were attracted to the role by the opportunity to continue Windlesham’s development as one of the country’s top coeducational boarding schools. Ben Evans: “Alex and I are very much looking forward to joining the Windlesham community in September 2020. From our first visit to the school, we were struck by the warm and friendly atmosphere, the tremendous opportunities available to pupils and were hugely impressed by everyone we met. We are keen to build on the school’s long tradition and outstanding education and be part of its exciting future.” The Governors are very excited about Ben and Alex joining Windlesham and building on the wonderful contribution consistently delivered by Richard and Rachel Foster over the course of what will have been 13 incredible years. Douglas Moody-Stuart, Chair of Governors: “We very much look forward to welcoming them into the Windlesham community. Ben will bring a wealth of experience, dynamism and leadership to the School to build on Richard’s fantastic legacy”. Richard Foster: “Rachel and I are delighted with the news that Ben Evans has been appointed as the next Head of Windlesham. We look forward to getting to know him and his family well as we begin the all-important handover process during the course of the next academic year. Windlesham is such a wonderful family orientated environment and I believe that Ben and Alex have all the right credentials to take on the baton from us and lead this amazing school into a very exciting new era.” During the next three terms, Ben and Alex will visit Windlesham, while not diminishing their commitment to their final year at Edge Grove. They are very much looking forward to meeting parents, staff and other members of the school community. Nicola Fleming Wardrobe Consultant Nicola Fleming shares her thoughts on keeping a tidy and functioning wardrobe that will streamline your life and remove the daily sigh of disappointment that our ideal outfit hasn’t jumped out at us each morning! GOLDEN RULES: Do spend time sorting your wardrobe once a season minimum. It will save you time and money in the long run, so ask a friend (or me!) to help you make decisions on whether to keep or ditch. Keep a ‘To Buy’ list in your phone for each season to keep you focused when out shopping or browsing online. My rule when shopping is if I’m not wearing it tomorrow (unless it’s for a special occasion or a holiday) then put it down. You don’t need it or love it enough! Always have a spring/summer wardrobe and an autumn/winter wardrobe. Store the one that’s out of season in large blanket bags under the bed - you will have more room in your wardrobe and be able to see your clothes better. Thin velvet hangers, Perspex storage boxes, clear blanket bags and scarf hangers are well worth the initial spend and will keep your wardrobe organised without too much effort. If it’s peeled, bobbled, snagged or has been attacked by moths, put it in the bin regardless of how much you love it. WARDOBE MUST HAVES: Tanks in black, white and cream to go under clothes when they are too transparent or you are too cold, so useful all year round. Loved and treasured black boots for the winter, consider alternating between high and low heels each year, that way you will accumulate a great boot collection – go for timeless styles over the high fashion as boots are expensive and you want them to last. A pair of fashion trainers – practical and acceptable for so many more occasions than they used to be. Updated jeans in black, grey, and blue – look at the trends and go for it if you feel they could work of you. Classic cream and black knitwear – I know it sounds way too safe but accessorize and they don’t have to be. An elegant pair of black leather evening shoes that are comfortable but not 15 years old, yes you can tell! Nicola is a wardrobe wizard/consultant. Her styling services cost £80 per hour and she is offering Windlesham Fair visitors a 20% discount if they book a 3-hour session before the 15th January 2020. www.nicolafleming.com

Windlesham House School

Set in 65 acres of the glorious South Downs, Windlesham House School is one of the country’s leading co-educational prep schools offering world-class day and boarding for children aged from 4 to 13 years. Established in 1837 and is one of the oldest prep schools in the country. We provide children of all academic abilities with an opportunity to reach their personal potential in subjects and activities in which they show promise, from maths and science, languages, the arts and sports. Last term saw our best C.E. results ever with every child gaining a place at their chosen senior school with a record breaking number of scholarships across academia, sport, drama, music, ICT, Art and DT as well as plenty of ‘all rounders’. We send to around 35 different senior schools each year and take time working with the children and family to ensure that they go to the best senior school for them. Whilst academic excellence and success are a high priority, we think that it is important to maintain a very caring, family atmosphere at Windlesham through our unique pastoral care. We have a very talented and totally committed staff that make the happiness, security and personal development of each child their priority. Pupils flourish in a nurturing environment. Every child is involved in drama (acting, music, set design, sound and lighting) and sport at all levels. We have an extensive range of co-curricular activities where children learn new skills and our enrichment programme including a diverse range of outside speakers and workshops encourages pupils to stretch their imagination. Our setting gives us the opportunity for extensive outdoor learning including forest school, nature walks, bushcraft, camping in our tree houses and survival nights. Children make dens, climb trees and enjoy their rural surroundings. They learn about independence and interdependence and leave Windlesham well-rounded and prepared for senior school and the next stage of their life. We offer day, part and full time boarding options, a local bus service, wraparound care (from breakfast through to supper) and holiday clubs. Come and see Windlesham in action either on an open morning of a private visit. For more information, contact our admissions department on 01903 87470 or email admissions@windlesham.com

With Thanks An enormous thank you to everyone who has so generously advertised in our very first Windlesham Christmas Fair Programme. Every single advertisement placed makes a huge difference to the charities we support, and I know they would want to thank you. I have really enjoyed putting this programme together and speaking to all the lovely people that I have encountered along the way. It has been a great reminder of the kindness and generosity of people. I would also like to personally thank our printers, Oasis Empire who have held my hand through the process, I have never undertaken anything like this before and simply could not have done it without them! Thank you from myself and on behalf of our charities, all your help and kindness has meant more to us than you will know. Wishing you all the happiest of Christmases.
