FOREWORD All in the Cooking was first published in 1946 as the official textbook of Coláiste Mhuire Cookery School, Cathal Brugha Street, Dublin. It remained in use in schools and colleges throughout Ireland until the 1970s. It was updated and revised regularly, and a second volume, All in the Cooking Book Two, was released in the 1960s. We have chosen to reprint the third edition of Book One, which contained updates and additional recipes. The endurance and widespread popularity of the All in the Cooking books were always of enormous joy to me and my fellow authors. The Irish diaspora has ensured that they can be found all over the world. In my 97th year, I, together with my family, am delighted to see All in the Cooking in print again. I am so pleased to know that traditional Irish preparation and cooking of good food are enjoying renewed admiration, and I hope this book will also be appreciated by a new generation. Is mise le meas, Anne A. Browne (née Martin), Co-author of All in the Cooking, June 2015
On the following page is All in the Cooking’s original Preface, written by Kathleen M. O’Sullivan, the erstwhile principal of Coláiste Mhuire. Continued happy cooking!
