Serves 6 3 Granny Smith apples 170 g/6 oz/⅔ cup apple and sultana chutney 115 g/4 oz/½ cup caster (superfine) sugar Preheat oven to 190°C/375°F/Gas Mark 5. Top, tail and core the apples. Fill the cavity of each apple with chutney. Place in an ovenproof baking dish, dust with half the sugar and bake until soft (about 30 to 45 minutes). Remove and preheat the grill (broiler) to high. Dust the apples with the remaining sugar and place under the grill (broiler) until golden. Keep warm until serving.

Chef’s note Using tart Granny Smith apples means the acid from the fruit cuts through the richness of the roast pork.
