INTRODUCTION INTRODUCTION ABOUT BUTLERS CHOCOLATES Founded in 1932, Butlers Chocolates is Ireland’s premier family-owned firm dedicated to the craft of exceptional chocolate making. The company began when Marion Butler began creating luxury chocolates under the name Chez Nous in Lad Lane in Georgian Dublin. In 1959, it was taken over by Seamus Sorensen, who set about modernising and expanding the business. The chocolates became well known and loved throughout Ireland, particularly at the Horse Show and the Spring Show at the RDS. Seamus involved his children in the business at an early age. The next generation took over the reins in 1978 and the company is still owned and run by the Sorensen family today. BUTLERS CHOCOLATE CAFÉS The brand name changed from Chez Nous to Butlers Chocolates in 1984, at a time when there was a growing appreciation and desire in Ireland for indigenous goods and supporting local businesses. Butlers were originally available in upmarket gift stores and at Dublin Airport. The first Butlers Chocolate Café opened in a beautiful corner building on Dublin’s Wicklow Street in 1998. Butlers could now be bought and enjoyed in a new style of shop, a modern emporium specialising in all things chocolate, with the finest barista-served coffee, award-winning signature hot chocolate and the entire retail gift assortment. Each hot beverage purchased was accompanied by a free chocolate of choice, a signature element still loved by customers today. MR SEAMUS SORENSEN

Due to the overwhelming popularity of the original Wicklow Street store, more cafés were soon opened around Dublin, and they have since become familiar and welcome destinations for Dubliners and visitors alike. There are now several stores in Dublin city centre and environs, Cork, Galway and Limerick, with international franchises in New Zealand, the Middle East and South Asia. Butlers Chocolates are available around the globe, including in many high-profile airports and luxury food stores as well as online. The brand

has become established and well-loved in many corners of the world. The company has moved premises a number of times: from Lad Lane to Pearse Street to Sir John Rogerson’s Quay and, in late 2003, to its current home, a purpose-built state-of-the-art factory in Clonshaugh Business Park, North Dublin. In 2011, after many requests from chocolate lovers, the Visitor Experience opened, where people can visit and tour the home of Butlers to experience the delights of a working chocolate factory. BUTLERS CHOCOLATES AND THE ENVIRONMENT We at Butlers are mindful at all times about the environment and how the company’s activities impact on it. Recent years have seen many positive initiatives in this regard, including: • Sustainably sourced cocoa for all chocolates under the Cocoa Horizons Programme • Fairtrade coffee used in Butlers Chocolate Cafés • Solar power – the company has installed the largest solar panel installation in Ireland on an industrial premises, which generates 14 per cent of its energy needs • Zero waste to landfill • Actively sourcing locally and buying recyclable packaging with a programme to reduce/eliminate the use of plastic

C HEESE C A KE BR OWNIE S This easy tray bake will satisfy anyone looking for a delicious treat – a rich chocolate brownie studded with pieces of chocolate then topped with swirls of cheesecake. A perfect make-ahead bake. S ER V E S 1 2
Preheat oven to 180°C (160°C Fan/350°F/Gas Mark 4) then
100g Butlers 70% Dark
grease and line a 20cm x 30cm tin with parchment paper.
Chocolate Bar
Roughly break the dark chocolate into a medium-sized
125g butter, cubed
saucepan and add the butter. Place over medium heat, stirring
200g soft light brown sugar
occasionally, until the chocolate has melted and the mixture is

smooth. Remove from the heat and mix in the sugar and then

Chocolate Bar, roughly
In a small bowl, beat the cream cheese, sugar and vanilla

extract until smooth. Spoon the cream cheese mixture
180g full fat cream cheese
randomly over the top of the chocolate batter, then swirl into
40g caster sugar
the batter with a knife.
½ tsp vanilla extract
Bake for 35–40 minutes until just set. Leave to cool in the tin on a wire rack. Once cool, remove from the tin and cut into squares. Keeps for up to 1 week in the fridge in an airtight container.
