Opponents continue to organize against biogas plan

duplexed home on Line 86 east of Elmira suffered $300,000 damage in an early-morning blaze Aug. 17.

Woolwich firefighters were called to 6516 Line 86 near Northfield Drive just before 4 a.m. When they arrived, the second storey

of the house was engulfed in flames. The front of the house was empty but the homeowner said a husband and wife in their sixties rented the back unit. They were in the process of moving out.

Firefighters spent much of the morning searching the house for any sign that the couple might be

inside, although it was doubtful since two of the three cars they owned were gone. Police were able to track the couple down around 9 a.m. outside of the region.

ike Hicknell found a larger and more receptive audience this week for a presentation of his concerns about a biogas plant in Elmira.

Some 70 residents who turned out at the Woolwich Memorial Centre Wednesday evening heard him discuss possible traffic woes associated with trucks visiting the proposed location in the north end of town.

The public meeting organized by the Elmira Bio Fuel Citizen’s Committee (BFCC) was much livelier than the council meeting Hicknell addressed Aug. 10. It was the second consecutive Wednesday the group, which opposes the proposed biogas plant, has held a meeting to drum up support and to pass out lawn signs, more visible in town in the last week.

Strong turnout for new Elmira concert series

ast Sunday was a record-breaking night for Lynn Russwurm, as more than 300 people packed Gore Park to attend his 25 th anniversary concert, one of many Sunday night shows which have made up the summer showcase concert series at the bandshell these past few months.

Although the show was cut a bit short when the skies opened up and rain began pouring on the gazebo, the tireless musician, songwriter, producer and record collector was extremely pleased with the turnout.

“I couldn’t believe how many people came out that night,” he said of the show which featured emcee and musician Larry Mercey, Ron Toulthard on the steel guitar, Bob Trembley on the dobro, Russwurm on the bass and guest musician Al Heiser.

He estimated 90 per cent of the trucks travelling to and from the Martin’s Lane site would pass through the main intersection at Arthur and Church streets.

The company behind the plan to generate electricity using organic waste, Bio-En Power Inc., says the operation would see seven to 15 trucks daily, though opponents have been cit-

ing 80 trucks, the topend limit listed in the application process.

Hicknell, for instance, used a figure of up to 160 truck trips in his presentation, saying it was unclear if the 80 trucks were only counted as one way in or out.

In an interview, however, Bio-En president Chuck Martin disputed the traffic claims.

“As far as the traffic is concerned, I don’t buy the argument. There will be significantly less traffic than when that site had the feed mill, the pet food plant, the truck service and a

fuel depot,” said Martin. “The truck numbers are nothing like what they used to be.”

Moreover, land is zoned industrial – any industrial use is likely to bring truck traffic, perhaps far more than the proposed biogas plant, he added.

But traffic is not the only concern voiced by the residents’ group, which is also worried about odour and noise issues. Still in the early stages of organizing, opponents want to bring more pressure

A-MAZE-ING

> Gale picks plan for new church Members of Elmira’s Gale Presbyterian Church this week approved the design of a new building they hope to construct on Barnswallow Drive.

The church is still in fundraising mode for the project to move from the current location at 2 Cross St., which has been its home in Elmira ever since Robert Kenning donated a quarter-acre lot back in 1864. The church now endures modern challenges, including a lack of parking space, that have encouraged parishioners to explore the idea of relocation. Church officials have said that their timeline for the project is the spring of 2011.

any of us have been encouraged by a friend to give something new a try … though not usually on the scale of that undertaken by Murrel and Lori Brubacher. The couple has transformed some 10 acres of their Crosshill farm into a giant corn maze.

For years, Newton-area farmer Ernst Hofer has been creating corn mazes among the largest in North America. On deciding this year to take a break from the practice, he suggested the Brubachers try their hand at the family-friendly fall activity.

Murrel’s background in agriculture, combined with an entrepreneurial spirit prompted them to look for a new challenge by diversifying from the traditional family farm lifestyle.

“It has always been the reality for farmers that you have to be willing to take a risk and think outside the box if the family farm was going to be profitable,” he said. “We have enjoyed interacting with the public in the past when we operated

a chip wagon for local auctioneers. This is just one more fun adventure for our family and hopefully for all who visit us this fall.”

Now created more easily thanks to technology, corn mazes have become a popular outdoor activity for people of all ages. Not only an adventure – time spent roaming, following twisting paths and alleys to dead ends – for the daring and the young at heart, corn mazes also serve an educational purpose. The mazes are destinations for school field trips, giving students an opportunity to come to a farm and learn about the various aspects of agriculture and food. Navigating the maze also serves as a stimulating teaser for the brain, especially for those of us who are directionally challenged.

A fountain of knowledge, Hofer had plenty of advice for the Brubachers and good contact information regarding maze designing. They chose a cornucopia or “horn of plenty” as their first design since Waterloo Region is known for the quality, abundance and variety of foods produced here.

The maze was designed

by Damian Bradley of E. Lee Association, a landscape architect who has designed for Hofer’s Ontario Maze in the past. As Bradley walked through the field of foot-high corn with a handheld GPS unit creating the design, Brubacher followed on the riding lawn mower, creating the paths. The routes were then tilled weekly until no new growth sprouted. A map of the maze posted on the Brubachers’ website, www.waterloocornmaze. com, which also provides directions, hours and rates.

The fun seeker can participate in a scavenger hunt, and upon completion can enter his/her name in a monthly draw for “dinner for two” at Anna Mae’s restaurant in nearby Millbank. Each participant must correctly identify farm gate signs from Lobsinger Line hidden within the maze, with names and addresses recorded on lists provided. There are 12 postings, including garden produce, maple syrup, honey, eggs, summer sausage and home baking.

Completing the 10-acre circuit may take more than

one pass through the “maze of maize,” and will likely require a full hour to finish.

There are three distinct zones in the complete maze – shorter trails are an option. There is a large map available to each wanderer.

An exit sign is posted at the farthest point for those who become disoriented and need to exit before finishing the course.

Children, of course, must be supervised at all times to avoid losing a very young child within the maze. For those littlest adventurers, a straw bale mini-maze is available.

Large groups are advised to call ahead to reserve the volleyball set and campfire pit. The maze, which opens this weekend, operates Fridays and Saturdays 10 a.m. to 10 p.m. (last admittance at 9 p.m.) and Sundays 1-6 p.m.

Visits on other days can be made by arrangement.

If you desire the added challenge/adventure of doing the maze in the dark, you must bring your own flashlight.

The Waterloo County Corn Maze is located at 4960 William Hastings Line, Crosshill.

Police on the lookout for suspicious male AUGUST 11 >>4:38 PM | A 23-year-old

Kitchener man was driving his 2007 Ford on King Street in St. Jacobs when he was unable to stop in time and collided with a 53-year-old St. Jacobs man in a 2003 Mazda. No charges were laid and there was minimal damage to both vehicles.

AUGUST 12 >>2:25 AM | Police pulled over a 23-year-old man on Arthur Street South and charged him with ‘stunt driving.’ The man was driving at 140km/h in a maximum 80km/h zone. His driver’s license and vehicle were seized for seven days.

>>1:36 PM | An Elmira man

called police when he realized that the shotgun he purchased for target practice had been taken from his truck. The man had left the gun on the floor in the back of his unlocked truck and noticed it missing. Police are investigating.

resides on Snyder Avenue in Elmira called police to report that her house was egged.

She has a security system enabled with a camera and she noticed two males acting suspiciously at around 10:40 p.m. the previous night. Police are investigating.

15-year-old girl was walking her neighbour’s dog on a trail near Broadway Street in Hawkesville about 7:30 p.m. Aug. 13 when she was approached by a suspicious male.

The man asked if he could pet the dog and the girl said yes.

When he reached down, the girl noticed that he had removed the leash from the dog’s collar. She yelled

for the dog to run and both she and the dog ran back to her home.

The male is described as white, approximately six feet tall, 35 years old, with blonde hair, black shorts and a green T-shirt. Police scanned the area but did not find anyone who met that description.

Anyone with information is asked to call Division 3A.

When police ran a check on the license plates, it was found that the plates were not authorized for that vehicle and they were seized. The owner of the plates is being contacted.

a collision involving a motor vehicle and a cyclist. The vehicle was travelling eastbound on Bleams Road at Wilmot Centre Road in Wilmot Township and the cyclist was southbound on Wilmot Centre Road when the collision occurred. A 36-year-old woman from Baden was taken to a local hospital for treatment of non-life-threatening injuries.

Alcohol and speed were not factors. The cyclist was wearing a helmet at the time, which prevented additional serious injury. Police remind cyclists to wear proper safety equipment at all times while cycling. Family fun is key ingredient for annual Koinonia festival James Jackson

ugust many be waning, with a new school year on the horizon, but families can enjoy one of the final weekends of summer at the annual Koinonia Family Fest tomorrow (Sunday) at Koinonia Christian Fellowship in Bloomingdale.

The annual festival is Koinonia’s gift back

to the community, said event coordinator Crystal Kuepfer. It features free food, live music and dance from their in-house musicians, and lots of activities for kids and adults alike.

"We really do value family and our community – we just want to really offer something to them as a way of giving back,” she said. “To host a family event that the

wich council could do more to lobby on residents’ behalf, they say.

From Hicknell’s perspective, councillors should be vocal in opposition of the plant, contacting the government and the premier’s office directly rather than just making technical recommendations about the project.

Added Ed Speers, one of the BFCC organizers, “there is a role for them as councillors in addressing Queen’s Park, the government and Mr. McGuinty.”

The group will be holding another meeting Aug. 25, starting at 6:30 p.m. at the WMC, to plan its next steps in the battle.

Critics continue to expose Harper's weak points I

t’s little wonder the Conservatives are continually unhappy with oversight agencies, despite oft-repeated and never-delivered promises of transparency: most of what’s unearthed casts the Harper government in a negative light.

From Auditor General Sheila Fraser to Parliamentary Budget Officer Kevin Page, the prime minister has been waging a war on those who take him to task for the things his government does and does not do, despite promises and rules to the contrary.

Under scrutiny again right now is the so-called economic action plan. The stimulus spending on infrastructure has been more talk than action, but Harper still maintains he wants to wrap things up by next spring. That goes against the wisdom of many economists,

including Nobel laureate Paul Krugman who spoke on this issue last week, who see the possibility of a double-dip recession.

Moreover, much of money promised to municipalities has yet to be seen, partly due to the long leadtime involved in getting shovels in the ground, yes, but also to a certain slowness in Ottawa.

It would come as no surprise to many that the government is hoping to promise much and deliver little. You could call it election posturing – it is – but it also might have something of a placebo effect.

The economy, we’re repeatedly told, is closely tied to confidence: perhaps it’s more important to be seen to be doing something than actually doing it.

At the very least, that’s a convenient after-the-fact argument

To be sure, some of the cash is flowing. Woolwich and Wellesley townships have received millions for projects completed, now underway or soon to get going. And there’s no arguing the stimulus spending has been a boon as these and other municipalities tackle a growing infrastructure deficit.

But we should also look at what we’ll have when the economy picks up again: some new roads, bridges and facilities … and a massive deficit to remind us of what it cost.

Of course, we shouldn’t be surprised by the government’s choices. The last time Canadians

saw record deficits was under a Conservative government, one that advanced trickle-down economics, cutting taxes to the wealthiest while boosting spending, often on pet projects and measures designed for political gain rather than the common good. Sound familiar? It’s precisely what has happened under Harper. This despite the fact that he’s championed the opposite course.

Such ill-advised moves as cutting the GST by two percentage points – the economic impact was negligible – and ramping up spending in an attempt to buy a majority left the economy in poor position to deal with the downturn.

The economy will recover, but government measures will not have been the factor they could have been.

Chinese miracle a new cautionary tale W

ill the 21st century belong to China? For a while, perhaps – but only in the sense that it was said to belong to Japan in the 1980s. Looking back now, that seems ridiculous, but at the time best-selling books were predicting that Americans, not to mention the rest of the planet, would be reduced to virtual serfdom by the relentless high-speed growth of the Japanese economy. Then it stopped growing.

Official data published this week revealed that China’s economy has overtaken Japan’s this year, making it the second-biggest economy in the world. This followed last month’s announcement by the International Energy Agency that China is now the world’s biggest consumer of energy (and burns about half of the world’s total coal production).

Earlier this year China overtook Germany to become the world’s No. 1 exporter, and it now makes more cars than any other country in the world.

Indeed, it makes as many as Japan and the United States together.

It has more kilometres of highspeed rail, more mobile phone users, and more wind power than anywhere else. As long ago as 2007 it became the world’s biggest emitter of carbon dioxide and other greenhouse gases.

The milestones are zipping past so fast that it’s surprising that the Chinese are not suffering from a collective case of whiplash.

If the average growth rates of the U.S. and Chinese economies over the past quarter century continue for another 10 years (around 10 per cent for China, and about three per cent for the United States), then China’s economy will be three times bigger than it is today, and

That’s the magic of compound interest.

Better start learning Chinese, then.

But hang on. China is already the world’s second-biggest importer of energy (mostly oil and coal), and its biggest importer of minerals and other industrial raw materials. None of those resources is growing at 10 per cent a year, or even five per cent. If China’s imports of those goods grow at 10 per cent a year, then the share of other countries must shrink.

China still has an export-led economy, and these other countries are its customers. If commodity prices soar because of ever-expanding Chinese demand for raw materials, then how will those other countries earn the money to pay for Chinese manufactured goods? So the Chinese rate of growth must eventually slow down – but when?

The straight-line projection of current trends would make the Chinese economy bigger than that of the United States by 2020. You can still find economic forecasts which predict precisely that, but it is striking that most of the economic consultancies that make such forecasts now suggest that China will not overtake the United States until some time between 2027 and 2030.

That implicitly assumes that China will shift to a much lower annual rate

of growth in the near future: from 10 per cent to only five or six per cent.

However, no organization that is making a lot of money from the current orgy wants to spoil the party by spelling out exactly what might cause that sharp decline – so let us do it here.

Back in 1988, the last year of Japan’s 30-year boom, the land in the garden of the Imperial Palace in central Tokyo was allegedly worth more than the entire state of California, but that was just another way of saying “unsustainable property bubble.” The bubble duly burst, bringing down the entire Japanese economy with it – and it has stayed down for the past 22 years, achieving at best two per cent annual growth and usually much less.

The property bubble in China is reaching similar dimensions, with prices rising annually by 50 per cent or more in dozens of cities. When property bubbles finally burst – and they always do – they tend to do a great deal of damage. (Nobody say “sub-prime.”)

There is huge over-investment in China, often in state-sponsored infrastructure and housing projects motivated by considerations of “prestige” or by the opportunities they offer for cronies to make large sums of money.

(That is what caused the slump in the smaller Asian “tigers” like Thailand and South Korea in 1998.)

China’s wage costs are going up fast, and lower-cost Asian producers like Vietnam, Indonesia and Bangladesh are taking away the labour-intensive goods like clothes and toys that once drove Chinese export growth. Meanwhile, at the upper end of the market,

Gambling revenues easier than actual leadership P

ut the McGuinty government’s recent nods for mixed martial arts and online gambling into the bread-and-circuses category.

Throw in “cash grab,” and you’ve covered all the bases.

Editorial cartoonists have been having fun with the decision to allow ultimate fighting in Ontario, depicting Dalton McGuinty as trying to shed his wimpy image.

The move seems calculated: part revenue-generator (the province will get two per cent of the take) and part public distraction. Like the choice of online gaming, allowing MMA matches essentially concedes the fact the province wants a slice of that pie.

With hundreds of millions up for grabs, McGuinty can add to the coffers while attempting to keep the lid on other taxes, something he’s promised without always following through on.

Gambling is big business in the province. The Ontario Lottery and Gaming Corporation (OLG) runs a variety of lotteries, charity and aboriginal casinos, commercial casinos, and slot machines at horse-racing tracks. According to OLG figures, the Crown corporation generates some $3.8 billion in economic activity each year. About half that amount goes to health care programs, the operation

Other good works, such as the numerous community donations through the Ontario Trillium Foundation, which doles out about $110 million a year, are linked to gambling profits mostly to make us feel better about government-run gaming.

Gambling is still a controversial issue despite the fact many of us indulge in some form of it, even something as innocuous as buying a raffle ticket. Personally, I see little harm in the occasional flutter. Yes, there are those who are problem gamblers, but that’s a small minority – about 2.1 per cent of total gamblers, according to the Centre for Addiction and Mental Health. For the most part, gambling in Ontario is a voluntary tax – or a stupidity tax in some circles – that we pay with hope of getting something in return. Ideally something much bigger, which would offset all of that non-voluntary tax money we’ve paid out over the years.

By introducing online gaming, the province is hoping to take in a portion of the $400 million lost annually to offshore websites. In this year’s budget, OLG revenues were down by $83 million, mostly lower returns from slot machines, attributed to the rise of online gambling. The government expects online gaming will eventually generate another $100 million per year.

While returns from ultimate fighting matches will be much smaller, the idea is for Ontario to get a piece of the action. Again, keeping Ontarians’ money in the province.

That’s all well and good, but the expansion of gambling is symptomatic of a bigger problem: government reliance on the revenues.

It’s no coincidence that governments got into the once-taboo area of gambling back in the ‘70s, a time of economic trouble. Governments searching about for a new stream of money in a stagnant economy jumped on the gambling bandwagon.

With wages stagnant – a trend that started at that time and continues through today – many of us took to gambling as a way to strike it rich.

The parallels to the current situation are clear. In Canada, we amended the Criminal Code to allow for lotteries to raise money for the 1976 Olympics in Montreal. From

there, a greater reliance on gaming revenues led to an explosion of gambling opportunities.

There’s an ongoing debate about the negative impacts of gambling, with some studies showing we’ve already gone too far, most notably with video lottery terminals (VLTs).

Venturing into online gaming could lead to more of the negatives, so far largely curtailed.

Current gambling issues may be manageable. Growth may not. Of course, the internet puts the issue beyond provincial control – thus the move to capture some of the money that’s being spent anyway.

But, longer-term, we need governments to rely less on games of chance. They need to collect taxes in a more upfront way. To do that, they’ll need to show us the benefits of our remittances – most of the money goes to pay for important pieces of our quality of life. More immediately, they’ll have to prove to us that they won’t waste, steal or squander our money on their friends.

Rather than change the policies that got us into the economic mess we see today, governments prefer to provide us with spectacles and other diversions, boosting gambling revenues and other sin taxes. That might change someday, but don’t bet on it.

The Chinese population is aging

almost as fast as Japan’s, and China is as resistant as Japan to reinforcing the dwindling workforce by allowing large-scale immigration.

If the same inputs tend to produce the same outputs, then the Chinese economy is in big trouble.

That doesn’t necessarily mean that China also faces two decades of less than two per cent growth.

It does probably mean that it faces a very nasty slump in the next few years, followed by the transition to a permanently lower rate of growth.

Not such a terrible outcome, really: it’s still an amazing success story.

But it may threaten the regime’s survival, since its popularity – if that’s the right word – depends almost entirely on its record in delivering the economic goods.

no “rotten meat,” since all biomass material stored on-site was of plant origin. There was no odour from the liquid dairy manure; it was stored in a below-ground container. There were no odours emanating from the digesters; they were covered with a bio-filter. The odour from the liquid effluent storage tank was very mild compared to the odour that wafts through Elmira when the local farmers apply manure to their fields. In fact, I was pleasantly surprised by the lack of odour in the area near the input storage area and digesters.

The issue of noise from the generator engine was addressed by Mr. Van Berkel, the greenhouse operator. The engine is housed in an insulated container that within 15 metres sounds similar to an office building air conditioning unit. The noise levels tested and documented at the point of reception on the neighbouring residence were below MOE requirements.

Mr. Potma stated there will be “up to 80 trucks per day ... every single day.” This statement is incorrect. It distorts the facts provided by Bio-En Power Inc. The documentation pro-

vided by Bio-En clearly indicates that the average normal traffic volume will be 15 trucks per day, Monday to Saturday.

A Waterloo Region traffic study estimates the daily traffic volume at Arthur and Church streets at 12,500 vehicles, of which 300 were trucks.

The traffic increase from the biogas plant is negligible when compared to the traffic volume impact from the Church Street West residential development of 1,800 residences.

The traffic volume increase from the first year of this project will likely be 10 times that of the biogas plant truck traffic, with the potential of increasing to 200 times over the next 20 years.

I do not deny that the issues of odour, noise and traffic are real. I urge Bio-En Power to proactively address the issues that will affect the community within which they will be operating. The documents made available on Bio-En’s web site, if read carefully and thoroughly, do indicate that they are taking reasonable steps to do just that. As an Arthur Street South resident that will be directly impacted by the truck traffic, I will be

discussing further with Bio-En how they propose to address these issues proactively now and in the future should complaints arise.

Is Elmira the right location for a biogas plant? Why not? Why shouldn’t our community be on the leading edge of the new, environmentally conscious, green economy? The technology is proven and has been in use in Europe for many years. I do not believe the NIMBY attitude expressed in Mr. Potma’s letter is the attitude our community should support.

If Elmira Bio Fuel Citizen’s Committee supporters wish “to foster awareness and debate” as reported in the Observer, then they should stick to the facts and support their position with proper science and stop disseminating misinformation and using scare tactics in their efforts to block the proposed biogas plant. Open, honest discussion between all concerned parties, not sabre-rattling, will lead to a solution. I urge all Elmira residents to get the facts before jumping on the “stop the stink” bandwagon.

Let's stick to facts with biogas project To the Editor, After reading the letter to the Editor written by Derek Potma (Observer, June 5/10) regarding the proposed biogas plant, I feel I must respond.

I, too, attended the tour of the Vandermeer Greenhouse biogas plant. I was very surprised to see Mr. Potma’s comments on the tour.

My experience was very different.

The odours emanating from the outdoor biomass input storage area were noticeable only if you entered directly into the concrete storage bunkers. The odour was similar to that of a large organic compost pile.

Mr. Potma smelled “manure, rotten fruit, rotten veggies, rotten meat, and ammonia.” There was an odour of decomposing plant material, but only within the bunkers, and it was not objectionable. Five metres from the bunkers, the odour was negligible. The rotten fruit odour was from the peach waste pit on the neighbouring farm. There was

Councillors should act in our interest To the Editor, Sarah Potter, I would like to shake your hand for your letter in last week’s edition (Observer Aug. 14/10) concerning the effect of gravel pits on property values.

You made three excellent points, two of which concern Coun. Ruby Weber. That arrogant comment, and it was extremely arrogant, about “simply adjusting the tax rate to

9 OPINION maintain revenues” isn’t the only lame thing she has said where tax money was concerned. Several years ago, more stop signs were added to Memorial Avenue here in Elmira and when asked if she thought they would solve the speeding problem she remarked, “well if they don’t we’ll just remove them.” How completely foolish was that? The second point, and I agree, is that perhaps it’s time Ms. Weber be put out to pasture. It is obvious she doesn’t have the taxpayers’ best interest in mind. I do believe she enjoys the prestige of being on the council.

The third point was the proposed gravel pits. After the councillors have spent a fun filled day watching gravel trucks in Heidelberg, they can move to that small stretch of Northside Drive between Sawmill and Hawkesville roads in St. Jacobs.

Why not take the mayor along, as he just lives up the street?

For the full effect, take your lawn chairs. There are on average 70 trucks per hour from 6 a.m. to at least 6 p.m. five days a week and some Saturday mornings. That, councillors, is 840 engine roaring, brake squealing, dusty trucks a day.

It is impossible to sit outside or have the windows open in the house. Now get this: their taxes went up!

These folks in St. Jacobs and Heidelberg live with this day in and day out, year after year. The township may not have control over some things that happen in our community like the proposed biogas facility, which is a whole other can of worms, but they can certainly do something for the taxpayers in Conestogo, West Montrose and Winterbourne. Let us see if they have courage to stand up for the people.

ew business owner Randy Weber has learned a number of lessons from his predecessor, but the most important of all is this: keep it simple. Do good work and be honest with your customers.

Weber has been working as an electrician for RW Electric ever since he graduated from Elmira District Secondary School 12 years ago. He signed up for the tech class, became familiar with the trade and was hooked. “With this kind of job, every week is a bit different,” said Weber. “Some days you are called out to do a quick fix and then other times it’s a week-long installation.

You’re always learning.”

RW Electric was founded

by Beaupre and his brotherin-law, Wayne Forwell. They

took on Weber as an apprentice when he was just 17. Now it is Weber’s turn to take the reins and he hopes to maintain the great reputation that Beaupre and Forwell have created. He is even keeping the business name.

“It was pure luck that our initials are also his initials,” said Beaupre with a laugh. “I am glad to see that it will be continuing on.”

Beaupre has seen any number of changes to the industry in the 33 years since he founded RW Electric, but more so in the technology used than the methods employed.

“The biggest change for us has been the product line,” he explained. “How we install something now is the same way that we would have installed it 33 years ago – that hasn’t changed. But nowadays the industry is leaning towards electronics.”

Some things however have stayed just the same.

“Quality is still the most important thing,” he said, noting that quality, honesty

and good service are the keys to building a successful business. During the time of transition he also mentioned that he is extremely thankful to his customers and clients who have worked with him over the years and that he will miss the relationships he has made.

“What I learned from Ron is always to do the work efficiently and with integrity,” echoed Weber, who officially became the head of the company on June 1. “Being honest with the customer up front is extremely important for doing good, quality work.”

And with the honesty and integrity comes simplicity at RW. The company does minimal advertising and their clients are found primarily through word of mouth.

“We don’t even have a logo on the truck,” said Weber.

“Ron has an excellent reputation; everyone seems to know who he is, so he has never had to advertise.”

All kidding aside, it’s the Year of the Goat T

he United Nations says 2010 is the International Year of Biodiversity.

The nursing profession calls 2010 the International Year of the Nurse, recognizing the centennial year of the death of modern nursing’s founder, Florence Nightingale.

In the Chinese lunar calendar, this is the Year of the Tiger.

But in Ontario agriculture, there’s no question 2010 is the Year of the Goat.

Ontario farmers are catching up with the rest of the world by discovering the virtues of goats as livestock.

The province has long had a strong livestock sector, but goats were outsiders. Space was available, so people typically consumed meat from large animals that needed room to be raised on pasture or in barns – cattle, pigs and sheep, among them.

But with urban sprawl, space is shrinking. And while prices fetched for traditional Ontario livestock are making a comeback, they’ve been in the dumps for years. Some producers turned to goats.

Goats don’t require as much land, feed or water. They can produce meat and milk; the latter makes superb high-protein, low-fat chevre cheese that’s become trendy and highly sought by well-heeled North Americans. In fact, some of the best goat milk cheese is made locally. And although the sector is still quite young, Ontario farmers produce 30 million

Goat’s rising popularity has prompted food aficionados to dub it “the new black,” as it muscles in on items that have traditionally appeared on high-end menus. Even Ottawa calls goat one of Ontario’s hottest opportunities. And Ontario Goat, the Guelphbased commodity group representing the species, says goat is “farming’s new frontier.” Goat is hot.

But goat meat and milk is more than a fad or flavour-of-the-month, thanks mostly to demand from the province’s growing immigrant and ethnic population. Many immigrants have arrived from countries where goat is a dietary staple – for example, the Middle East, Africa, the Caribbean and some Asian countries. Some of those countries have semi-arid climates, which suits goats just fine, and position the animals well for climate change that leads to warmer temperatures.

The challenge is to meet demand and develop products that cater to more than traditional North American tastes, says Jennifer Haley, Ontario Goat’s executive director. But

that doesn’t happen without a plan, and resources.

Over the years, Ontario farmers have sensed the growing interest in goats, and geared up for production.

However, they hit a wall because they lacked the management techniques and genetics that would help them produce superior animals year round.

The industry has really been at a crossroads, and needed some help.

Ottawa heard the call. At the recent fifth annual International Goat Symposium in Stratford, Ontario, a $700,000 federal grant was announced for a three-year dairy goat pilot genetic improvement program.

The program will involve 15 goat farms. They’ll work on developing superior genetics, production and management activities that can be

adopted by the province’s 261 licensed goat milk producers.

At the centre of this effort is a new, virtual goat research centre involving the University of Guelph, Trent University, the Greater Peterborough Innovation Cluster, Ontario Goat and the Ontario Dairy Goat Co-operative.

Researchers will work with existing programs that have succeeded in making the province’s dairy sector and genetics industry one the world’s best – namely, CanWest DHI for milk testing and Gencor for genetic evaluation and artificial insemination assessment.

This is a great example of crossspecies cooperation, and shows yet another example of why it’s vital to have a strong research nucleus such as the one that’s been built around agri-food at Guelph – and now includes goats.

“She makes all the important phone calls, keeps the business side running,” said Weber.

And just in case Weber comes across a problem he doesn’t know how to solve, Beaupre is not far away. The longtime electrical guru plans to continue to work for RW Electric part-time, but now as an employee rather than owner.

“He is always there to answer questions or to lend some help if it is needed,” said Weber. “We are very grateful for that. It would be much harder to start the business without the foundation that he has set.”

With Facebook, Twitter, YouTube, iPhones, Blackberrys, iPads, Google and the internet in general, we have access to such a large amount of information at the touch of our fingers it can make your head spin.

A great resource to really appreciate the depth and truth to these statements is a video that you can find on YouTube by searching for “Did you know?” When I first was presented with this video, it really blew me away, yet at the same time didn’t come as a surprise. eather McCullough lives in a full house. The longtime Elmira resident shares her Arthur Street home with her husband Jim, her three children who come to visit, their dog Sophie, and an aquarium full of fish.

Oh, and don’t forget Bubba, Jasper, Bob, Mini-Me, Molly, Chocolate and Silver – a handful of the many Tonkinese cats who sit atop couch cushions, window frames, and the mantelpiece.

McCullough is one of only three people in Canada who breed and sell Tonkinese cats, a cross between the Siamese and the Burmese that she says makes a playful, inquisitive and affectionate companion.

“I have always been a cat person, but not always quite to this extent,” said McCullough with a laugh. “I saw a beautiful, champagne coloured Tonkinese peeking up at me from the cover of an issue of Cat Fancy magazine at the convenience store one day and just knew that this was the cat for me.”

Her family got their first cat when she was six years old and she has lived with at least one feline ever since. She began her business, called the S.S No. 9 Cattery, after the schoolhouse which used to operate where she now lives, in 1990. She found her first Tonkinese cat in Pennsylvania in 1992.

“Despite being a Canadian breed, there are not a lot of breeders in Canada,” she noted. “They are rare,

so we find that people come from all over the place to Elmira to get them.”

The first litter came during a thunderstorm by flashlight while McCullough was getting her daughter ready for her first ballet recital; the cats have not stopped surprising her ever since.

What to do with all those fresh-off-the-vine tomatoes?

T

his year’s hot, dry summer has produced amazing tomatoes, ‘a bumper crop’ according to reports.

And although we’ve had tomato recipes in this column before, the ones we are referring to now are the tomatoes coming from your own backyard. So many are being produced this August that bacon sales have hit an all time high as people try for the perfect BLT sandwich.

The perfect tomato requires only a pinch of kosher salt and pepper for the flavour to come through, no matter what the variety. Always keep tomatoes at room temperature when storing, away from direct sunlight.

If you have an abundance of backyard tomatoes, the best and most rewarding thing I did last summer was preserve them in mason jars. I didn’t go crazy with chopping and adding all kinds of spices. I just peeled them and shoved them in jars, so then in the winter, when soup and stew season hit, I could break out ‘fresh’ summer tomatoes, which made a

To peel ripe tomatoes, use a sharp knife to score an ‘x’ at the bottom; drop tomatoes into boiling water for 30 seconds to a minute, and then remove and plunge into ice cold water (otherwise known as ‘blanching and shocking’). This will enable you to gently remove the skin, and either freeze in bags or preserve in jars.

Finally, we’ve included two recipes here to use up those backyard beauties. Both are tried and true: Pico de Gallo, Spanish for ‘Rooster’s Beak,’ can be used for more than just nachos because it is less watery and Sauce Vierge, or ‘Virgin Sauce’ because the tomatoes are uncooked, is fantastic tossed with fresh cooked

Pico de Gallo Salsa

Sauce Vierge

>>2 cups of tomatoes, diced

>>2 cups tomatoes, sliced in halves or quarters

>>1 white onion, diced

>>1/2cup extra virgin olive oil

>>1/2 cup cilantro, minced

>>Juice of 1/2 lemon

>>Juice of 1-2 limes

>>1/2 bunch of basil, finely sliced

>>4 radishes, diced

>>1/4 tsp kosher salt

>>1 jalapeno, diced finely >>Salt and pepper, to taste

Mix ingredients together and let macerate for 30 minutes, which allows the juices to come out of the tomatoes to produce a sauce.

>>1 tsp sugar >>1 tsp oil

>>Chefs pasta or with seafood.

Mix all ingredients together; serve with just about anything from grilled chicken or steak, poached fish and, of course, nachos.

“Most people probably think we have two litter boxes, a dish of food, a couple of cats running around and that’s it,” said McCollough, who has welcomed more than 50 litters into her home. “When in reality we spend hundreds of dollars on their diets, we have to make sure each cat has had its proper shots, we spay or neuter each kitten and

ensure that they are well adjusted and sociable. It’s pretty much a fulltime job.”

In addition to the normal nine-tofive hours of a job, cat breeding carries over to the dinner hour when the kittens hop up on the counter to take a look at what is being prepared, and even into the wee hours of the night. The McCullough’s share their bed with three or four cats per night.

But as all-consuming as this sort of business can be, McCullough wouldn’t want it any other way.

Karyn has a few golden rules for the youth centre space, which patrons readily obey: respect each other and the property; help clean up; and no swearing.

able to entertain or help patrons with homework. Word processing suites are installed, but between IM, Facebook, YouTube and a host of internet games the kids are getting their online fix here. Things aren’t always what they seem Aaron Wilson had a few detours on the road to becoming a Muay Thai instructor

AN ALLROUND WORKOUT Aaron Wilson, whose own Muay Thai training led to a change in his life's direction, will be teaching the martial art in Elmira this fall.

t first glace, Aaron Wilson looks like the kind of guy that you would not want to meet in a dark alley. Judging by the many tattoos and the menacing muscular physique, most people would want to give him a wide berth. But the Elmira fitness instructor brings life to the age-old saying, don’t judge a book by its cover.

Wilson is a gentle giant who keeps his energy strictly for fights that happen within the ring at Pinacle Health and Fitness in Elmira, where he is the instructor for a new self-defense class called Muay Thai.

Like most competitive full-contact fighting sports, Muay Thai has a heavy focus on body conditioning.

Muay Thai is specifically designed to promote the level of fitness and toughness required for ring competition and training regimens include any number of activities such as running, shadowboxing, rope jumping, body weight resistance exercises, medicine ball exercises, abdominal exercises, and in some cases weight training.

Almost all techniques in Muay Thai use the entire body movement, rotating the hip with each kick, punch, elbow and block, making it a high-intensity cardio exercise.

“It’s a great workout,” explained Wilson. “It’s great for physical fitness, self defense, to build selfconfidence or at the higher levels, to compete in something like UFC

Although it disappoints him to say it, Wilson, at 31, is perhaps too old to get into fighting at the championship level now. In his teenage years, he had been heavily involved in exercise and body building when a car accident left his arm shattered and he was forced to refrain from exercising at the age of 17. To fill his newlyacquired free time, Wilson turned to drugs and alcohol.

“I got in with the wrong crowd of people and made one bad decision after another. There were some very low points for me, but I didn’t know how to get out of it.”

The destructive lifestyle stayed with him for nine years before he was able to break free of the cycle and achieve sobriety. He was working out at his local gym and taking swings at the punching bag one afternoon when a friend took note of his good form and suggested trying out the martial art. He began training at Mas Muay Thai in Cambridge and got hooked.

Kings pick up blueliner in trade with Guelph James Jackson

he Elmira Sugar Kings have acquired 20-yearold defenceman Cayle Creen of Waterdown from the Guelph Hurricanes in exchange for Elmira resident Shane MacDonald, a 17-year-old winger.

“This gives us a little bit of stability back there because we are going to be young on the back end this year,” explained Sugar Kings general manager Keith Stewart. “I like his size, and he’s probably going to see some power play time. He’s a steady guy,

nothing too flashy, but he’s steady back there and a big body. He knows how to play the game.”

Creen had three goals and six assists in 30 games last season with the Hurricanes, along with 45 penalty minutes. MacDonald had one assist in only 13 games

with the Kings last year, and 35 penalty minutes.

Stewart expects Creen to be a leader in the dressing room, tutoring the Sugar Kings young defensive core this year as well.

Stewart said Guelph approached him and showed some interest in the rug-

ged winger MacDonald, who was unhappy with the amount of ice time he received playing with the Kings last season.

In a written statement, the Hurricanes recognized Creen as, “a great leader in the dressing room and on the ice.”

But did my kids take the hint? No, apparently, they enjoyed the show and even howled back.

Back when I was that age, a wolf pack would have been all the excuse I needed. One minute there would have been howling and the next my parents would have met me at the door wondering how I managed to set a world sprint and hurdling record while wearing a tent.

That, of course, is right out of the yard camper’s handbook. Done correctly, the poles even remain upright and in tact.

If the wolves didn’t do it, the barred owl should have. That thing was practically perched on the branch above their tent. But it didn’t seem to faze them.

There was a point in the night when I tried to rationalize their abnormal behaviour by thinking that they must have banged heads in the dark, knocked each other unconscious and were suffering from concussions. Sure, it was a happy thought, but I knew I wan’t fooling anyone. As much as it shames me, my kids actually enjoy camping.

You see, some people – perhaps as high as one in ten – are just born with this predisposition and, as much as I’d like to believe otherwise, this cannot be unlearned. It’s simply part of who they are.

From here on in, life isn’t going to be easy for them. They will get a lot of name-calling and odd looks; they’ll probably be treated differently and might even be shunned on occasion. Eventually, however, I’ll start to treat them like normal again. Heck, they are my kids.

’m writing this as dawn is breaking and, quite frankly, I’m starting to believe that my kids aren’t quite normal. You see, they have slept overnight in the tent that they have pitched out in our yard. It’s a sad day indeed.

As any parent knows, this is not the kind of behaviour that anyone wishes for their offspring. That’s because a successful overnight camping trip on your lawn indicates that your kids are not seeing the big picture. It says that their decisionmaking capabilities are flawed too – let’s face it; they have chosen, of their own free will, to sleep directly atop several rocks and pointy sticks on the cold, hard ground rather than in their warm beds, which are less than a hundred feet away. They have chosen the annoyance and harassment of mosquitoes over a warm couch, their favourite television shows and easy access to the fridge. Frankly, I don’t know where we went wrong.

Typically, the expedition begins with high hopes, along with several tons of provisions, an ailing flashlight and a deck of cards. Chips, cheesies, drinks – my wife and I consume all of these things while playing Crazy Eights under the blankets in the comfort of our bed.

It is from here that we hold a silent vigil praying that the kids have the good sense to eject from the tent.

Last night, we were expecting a 10 o’clock arrival. That’s a respectable time that indicates that while your kids aren’t exactly Mensa material, they are smart enough to understand that tents should only be considered an emergency measure.

But no, my kids roughed it.

I thought the howling of the local wolf pack would have been enough to set them straight. God knows that those noble beasts tried. Starting around midnight, they howled and yipped at the tree line just down the hill while my wife and I high-fived

Muay Thai: Not just for hardcore training > CONTINUED FROM PG. 16 “Muay Thai gave me something else to live for at that time,” he explained. “I couldn’t be a good fighter in the condition I was in, so I needed to quit.”

And it wasn’t an easy path for the nowcompetitively trained athlete.

“When I first started in the ring I got beaten up for the way I looked,” he explained.

“People would hit extra hard because they thought since I was big and I had tattoos that I was going to be a good fighter, but I wasn’t.”

Now he has been sober for four years and has spent much of that time focusing his energy on training and honing his technique.

The class he instructs has caught the interest of about a dozen people who come to the gym each week to practice their fighting.

“People think you have to be hard as nails to do something like this, but you don’t.

It’s a fun workout. I can’t stress enough that this is not about going out and beating people up,” he said.

“You should never use this outside the ring unless you have to.

But it’s a great outlet for people who like the

feeling of fighting. It’s much better to get that energy out here rather than on the streets or at home.”

In addition to teaching at Pinacle, Wilson works part-time as a line cook at an Elmira restaurant and parttime as a dietary aid at Leisureworld in Elmira, serving meals to the elderly.

“People are often hesitant when they see me walking around the halls at Leisureworld.

I know I look a bit unapproachable, but once they get to know me, we become friends. I think my experiences have allowed me to be more appreciative of what life has to offer. Getting to work with different types of people at the gym and at Leisureworld makes me feel really fortunate. ” The self-defense classes are open to people of all fitness levels and the level of intensity is a choice made by the participant. Classes are being offered at Pinacle free of charge on Monday and Friday evenings until October, when a registration-based class will begin. Jeanne Renault Golf Classic raised $14,000 James Jackson

ore than 100 golfers who took to the links at the Conestoga Country Club last week raised $14,000 for family violence prevention programs.

It was the 16th annual outing for the Jeanne Renault Golf Classic organized by Woolwich Community Services.

“It was a really, really, really great turnout,” said LeighAnne Quinn, community resource coordinator at WCS. “The weather cooperated with us, all the golfers had an awesome time, and everything went great.”

The tournament commemorates the work of Elmira resident Jeanne Renault, who was instrumental in organizing the family violence prevention program.

Held Aug. 12, the tournament raised money through registration fees, a raffle and several other contests, such as a putting contest and a longest drive competition. The money will

be used to provide educational programs to school students aimed at providing healthy dating and relationship tips, and to provide support to victims of family violence.

“It’s all about conflict resolution, bullying, and those sorts of things,” explained Quinn.

“The key is to get into schools and talk to youth and children at their influential stage.”

The tournament also gave away $9,500 worth of prizes to

golfers, including two hot-air balloon rides, and a new Blackberry Bold. RBC and RBC Dominion Securities sponsored several hole-in-one contests as well, including one for $10,000 and another for a trip to Maui.

“But nobody won,” Quinn said with a laugh. “Maybe next year.”

He finished well back of tournament champion, 18-year-old Albin Choi of Toronto, who shot a final-round 66 (-6)

When external pressure drops, gas bubbles form in the blood, damaging the lungs within minutes and the nervous system within hours due to the blood losing nitrogen. A sudden pressure reduction can cause trapped air to explode the lungs within seconds. Concludes Clark, “It is possible to survive near-vacuum for up to a minute but only if you adopt a gentler approach and have intensive medical care standing by.”

Erratic weather calls for water conservation, says GRCA Katie Edmonds

T

opsy-turvy summer weather has meant lower water levels in some of the area’s lakes and rivers. So much so, that the Grand River Conservation Authority wants us to turn off the sprinklers, turn off the tap while brushing our teeth, and to take showers instead of baths in an effort to conserve.

Specifically, water users in the Upper Nith River area are being asked to keep an eye on water use after a drop in river flows in recent weeks. Rainfall has var-

ied greatly across the Grand River watershed this summer. Some areas have been drenched, while others, such as the Upper Nith, including the section of the river upstream of New Hamburg in the townships of Wilmot, Wellesley and Perth East, have had below-normal rainfall in the past month.

“Water is taken from that area by the municipal system, so we want to make sure that we are conserving whenever we can, especially when the weather is so unpredictable,” said GRCA spokesman Dave

Schultz.

As a result of the fluctuation, the Grand River Low Water Response Team has declared that the Upper Nith is in a “level one” condition.

That means that major water users are asked to cut consumption by 10 per cent.

“Typically in the summer, the majority of water usage is outside – sprinkling our lawns, watering our gardens, and playing in the water to keep cool,” said Schultz. “By abiding by the Outdoor Water Use Bylaw and only watering the lawn once per

week, we can keep some of our consumption under control.”

The bylaw is part of Waterloo Region’s conservation program and is in place every year between May 31 and Sept. 30. Major water users hold permits to take water issued by the provincial Ministry of the Environment. In the Upper Nith there are 14 permits, including seven held by the Region of Waterloo for its municipal drinking water systems. Other permits are held by agricultural irrigators, commercial and industrial opera-

tors.

“Low water levels can have an affect on a great number of things. We want to protect all the fish and insects that live in the rivers,” explained Schultz. “People don’t need to make extraordinary changes to their lifestyle, just get in the habit of doing things that you should be doing anyways.”

The Low Water Response Team is also monitoring flows in two other watercourses in the central part of the watershed. Levels have dropped in Mill Creek, which flows from

Guelph to Cambridge, and the Eramosa River, also in the Guelph area, but not to the point where level one declarations are required.

Usick, Ruth (Mrs. Stan) Went home to be with her Lord on Wednesday, August 18, 2010 at her home. Ruth (Boyko) Usick age 76 years of Elmira. Beloved wife of Stan Usick for 56 years. Dear mother of the late Val Ferguson (April 2008). Loving and energetic granny of Annastasia “Tasha” and K.J. Ferguson.

Daughter of Margaret Boyko and the late Michael Boyko. Sister and sister-in-law of Inez Stewart, Don and Mickie Boyko, Eleanor Vanderwater, Marion Boyko, Sherion and Larry Chemerika.

Predeceased by her brother Rudy, brother-inlaw Van Vanderwater. A memorial service to celebrate Ruth’s life and faith will be held at Woodside Bible Fellowship, 200 Barnswallow Drive, Elmira on Sunday, August 22, 2010 at 3 p.m. with Pastor Dan Allen officiating. Interment has taken place in Elmira Union Cemetery.
