BIG EFFORT TO SAVE LIVESTOCK Arnold Bowman was milking cows in his barn north of Elmira on Wednesday evening when he became aware of a fire in the structure. He attempted to evacuate his animals, but the barn quickly became fully engulfed in flames; four cows, 10 calves, 500 chickens and three horses were lost in the fire that completely destroyed the building. More than 50 firefighters from three Woolwich stations were called out to battle the blaze. The fire is not considered suspicious, but an investigation is being conducted by the Woolwich Fire Department to determine the cause. Damage was estimated at $250,000.

Council braces for another assault on gravel pits Public meeting for West Montrose application scheduled for Tuesday night Steve Kannon

I

t’s likely to be standing room only again at Woolwich council chambers Tuesday night as the township hosts a public meeting for another controversial gravel pit application, this one in West Montrose.

Along with the Hunder Developments bid heard earlier this month, the Capital Paving proposal has provoked the largest public backlash. The sprawling project would bring gravel extraction close to the Grand River and the landmark covered bridge.

More than 150 people turned out for the May 4 meeting to protest plans for the Hunsberger pit immediately to the east of Conestogo.

Many of the same people are likely to return next week, offering up similar objections.

“Most of the complaints center on the three big issues: traffic, noise and dust,” said Jeremy Vink, senior planner with the township.

The two applications for large pits and a third at Jigs Hollow Road are all in close proximity, and will have an impact on Conestogo, Winterbourne and West Montrose.

Complicating the Capital Paving application, however, is the desire to extract gravel below the water table.

Vink said he expects to hear more arguments centered on the environmental impacts.

Letters of objection are already rolling in.

“I expect I’ll be getting more letters – most of the comments come in the day before for the meeting, and I get almost as many afterwards,” he said, noting many people in the audience at public meetings listen to speakers then use the topics discussed to formalize their thoughts.

As with previous gravel pit public meetings, many comments are likely to follow.

Among those planning to speak out are members of the West Montrose Residents’ Association, the BridgeKeepers, including Tony Dowling.

“We’re trying to get the troops out. We expect to see quite a few people at the meeting.

> Big turnout for Optimist gala The gala dinner and dance held May 8 at the village’s arena to celebrate the beginning of the new Wellesley and District Optimist Club saw a strong turnout. An estimated 400 people turned up to support the event, raising money for a number of different charities supported by the organization.

“You could hardly even recognize the arena,” said Wellesley Mayor Ross Kelterborn of the decorating job done by the organizers. “I have never seen it done up like that.”

lmira is a long way from the ocean, but for one night it will take on the flavour of the east coast, minus the tang of sea air, when the Kiwanis Club of Elmira hosts the 29th annual Lobsterfest May 29 at 7 p.m. at Lions Hall.

One-and-one-half pound Shediac lobsters are flown in fresh from New Brunswick on the day of the event, and steamed to perfection by the Kiwanis Club’s highly experienced team.

“There are two secrets – you need a big, fresh lobster and you have to cook it just right. Timing is everything.”

said Tom Hendrick, committee chair and founder of the event. “After cooking about 20,000 lobsters over 28 years, we seem to have it pretty well figured out.”

Beyond the food, the event also provides for a fun evening and supports many local community causes. Live “down-east” music will be played over dinner, with a DJ and dancing to follow.

Organizers anticipate they will cook between 800 and 900 lobsters throughout the course of the night. A cash bar is available.

This year, for the first time, the event will also feature raffles for several big sports prizes.

“Look for tickets for your favourite big league teams – the Raptors, the Maple Leafs, a weekend get-away package for Blue Mountain, sports equipment,” said Kiwanis member Tony Dowling.

“This is a new twist to Lobsterfest this year, and we expect it to generate a lot of fun and also raise additional money for our community causes.”

Unlike traditional raffles, the tickets for these prizes will be sold in a new format, with only 120 tickets available for each prize – making the raffle move more quickly, giving entrants better chances to win and raising more money for the cause.

The Kiwanis Club of

Elmira supports a variety of programs in the community, including the Kiwanis Music Festival, Kiwanis Santa Claus Parade, Meals on Wheels, Kiwanis Food Drive, Kiwanis Transit, and the new Woolwich Memorial Centre, among others.

This year, their aim is to raise between $10,000 and $12,000.

Health survey targets lifestyle of Old Order Mennonites Joni Miltenburg

A

researcher studying chronic illness hopes a survey of Old Order Mennonite farmers in Waterloo Region will help pin down the lifestyle causes behind diseases like cancer, diabetes and heart disease.

Kathryn Fisher, a PhD candidate at McMaster University in Hamilton, said the study is designed to test research that suggests people should eat less processed food, get regular exercise, drink alcohol in moderation

and not smoke. The existing literature also stresses the physical and mental health benefits of religion and family ties. “[The Old Order Mennonites] live what the literature says they should do,” Fisher said. “Some aspects of that lifestyle should, if the literature is correct, benefit them. We should see less of an incidence of chronic illness in that population.”

In April, Fisher sent out a 74-question survey to 2,000 Old Order Mennonites in

the area. The questions cover topics such as health problems, work, stress, community, religion and health care. More than 1,000 completed questionnaires have been returned already, a response rate over 50 per cent and far more than Fisher was expecting.

Fisher has been working on the study for the past year and a half. Most of that time has been spent building a relationship with the Old Order Mennonites and designing the survey with the help of the bishop and members

of the community.

The next step is to send out similar questionnaires to non-Mennonite farmers in the survey area who will serve as a control group. By surveying people who live and work in a similar environment but lead a modern lifestyle, Fisher will be able to gauge what factors contribute most to chronic illness.

> One-day blitz helps fill the larder Woolwich Community Services’ “Dig In” one-day food drive held May 15 collected 6,641 lbs of food from the No Frills store in Elmira and the St. Clements and Elmira Foodland stores, as well $621 in cash donations.

The WCS food bank provides a monthly food hamper to low income individuals and families living in Woolwich Township and the northern part of Wellesley Township. The food bank has experienced a 34-per-cent increase in the need for food hampers. The agency is looking for continued public support to meet the demand; items always needed include peanut butter, jam, crackers, canned fruit, Kraft dinner, sugar, flour and juice. The food bank is at 73 Arthur St. S., Elmira.

> A flippant point of clarification In the piece on high school rankings published last week, the Fraser Institute cites $182,900 as the average parental income of students attending Elmira District Secondary School. That number is considerably higher than Statistics Canada data for Woolwich Township, off by about $100,000, but the organization was unable to determine this week where their figure came from, or if the number was a typo. Most of us comparing our paycheques to the report likely prefer the latter explanation.

Woolwich Memorial Centre called police to report vandalism. In the newly poured concrete near the seniors’ centre, someone etched a vulgar drawing and a derogatory comment aimed at the police department.

Alongside the drawing was a graffiti tag. The cost of replacing the cement pad was estimated at $800 to $1,000.

More than $2,000 worth of jewelry and computer equipment worth $2,500 were stolen from the home. When neighbours were asked if they had seen anything suspicious, they reported seeing a silver- or tan-coloured SUV pull up in front of the residence and

The vehicle had moderate damage and the horse sustained a 12-inch cut on its chest and another on its hind legs. The horse was brought back to the barn where it could be inspected by a veterinarian.

The letter states that they need the person to provide their personal information to the author so that a large sum of money can be transferred overseas, with the local resident earning 25 per cent.

Police received several of these letters and are reminding local residents never to provide money or personal information to suspicious persons.

Wellesley students enjoy more elbow room

T

he boxes are unpacked, the books are on the shelves and students have settled in to the shiny new wing on Wellesley Public School.

The school officially opened its $3.2-million addition this week.

Renovations that started last April saw the entire front side of the school redone and 10 new classrooms added.

The students moved into the new classrooms in November and six portables will be removed this summer.

The addition includes space for a mini computer lab and a literacy room, with reading materials sorted by reading level and available to every teacher.

A

nyone who has used Woolwich’s enviable trail system has seen Ann Roberts’ handiwork … and that of the many residents who give their time to maintain the routes.

Now, a light is being shone on her work with a variety of groups in the township: she’s a finalist in this year’s Volunteer Impact Awards. Organized by the Volunteer Action Centre of K-W & Area, the awards recognize the contributions of volunteers in five categories. The centre received

more than 35 nominations this time around, paring the list down to 15 finalists.

Roberts is one of three finalists in the volunteer management category.

“We thought Ann was a very logical choice for the volunteer management position,” said Larry Devitt, Woolwich’s director of recreation and facilities, who put Roberts’ name forward.

As the township’s trails coordinator, Roberts works with volunteers as a matter of course, from the

Township of Woolwich Environmental Enhancement Committee (TWEEC) to the Clean Waterways group and members of service clubs. More than simply coordinating the efforts, she’s a hands-on participant, more a member of the volunteer squad than a boss, said Devitt.

“Ann is a tremendous organizer. She has a real genius for getting people to get involved in these things.”

When going through the nomination process, he found the volunteer groups eager to support the bid, writ-

ing letters of endorsement submitted as part of the application.

“People were really pleased to make comments about her. Everyone was glad to support her nomination,” he said of Roberts’ popularity.

Recipients of the 2010 Volunteer Impact Awards will be announced at a gala dinner on June 10 at the city hall in Kitchener. Awards are presented in five categories: business community partner, helping hands, innovative involvement, outstanding leadership and volunteer management.

Event looks to give girls a boost to their self-esteem Katie Edmonds

rade school can be a tough time for any child. Whether she is being teased in the lunchroom or simply has to face her class when she is having a bad hair day, elementary and middle school can present quite the challenge when it comes to maintaining a healthy self-esteem.

At Conestogo Public School, girls in Grades 2 through 8 can participate next weekend in an event called RISE UP - Raising Individual Self Esteem, a half-day workshop and seminar for girls and their mothers that explores the concepts of self-es-

teem, confidence boosting and resilience.

Juli Chinnick, one of the organizers of the event, has two daughters of her own in Grades 3 and 5.

“Self esteem hasn’t been a big challenge with my kids yet, but they are getting to the age where any day now, something could happen that could cause a problem for them,” she explained. “We (the organizers) thought it would be a good idea to put on this presentation and give girls and their parents the tools to deal with the issues when they come up.”

The day will be filled with activities and workshops discussing

topics such as proper skin care, how to build your child’s self esteem and how to identify your strengths. Organizers are encouraging mothers to participate as there will be valuable information for the parents on how to build confidence and foster self-worth in their children.

Chinnick and co-organizer Allison Gramlow heard about the event when they were talking to a mother and

daughter who attended a similar presentation in Fergus.

“They were just gushing about it,” said Chinnick. “They only had good things to say and it seemed like just such a fun day for both of them.”

The duo is hoping to have a turnout of around 60 girls, and they plan on running a similar event for boys in September or October if this one is successful.

“Everyone can use

a little boost of confidence and empowerment – both boys and girls,” said Chinnick.

“As parents, we went through those tough years but that was a long time ago. It is so helpful for parents to be on top of things and know how best to help our sons and daughters grow and deal with issues they are facing.”

The school’s parent council is sponsoring this event along with the Conestogo Optimist

Club; several other generous local businesses are offering this workshop at no cost to the families interested in attending.

The workshop is for girls in Grades 2 to 8 and will take place May 29 from 9:15 a.m. to 2:30 p.m. in the Conestogo PS gymnasium. Registration begins at 8:45 a.m. For more information, contact Juli Chinnick (519-664-1915) or Allison Gramlow (519) 206-0115.

“It really puts three schools at risk – the parochial school, Christian Foundation School in Winterbourne, and Conestogo Public School – and there’ll be a lot of students im-

pacted,” Dowling said of the truck traffic related to gravel operations.

As Vink noted, the potential environmental damage will be a hot topic. Experts working with the BridgeKeepers have already presented material to council indicating a pit at that location could have a detrimental impact on the naturalized areas near the bridge.

As well, they argued, the river is at risk, as are groundwater flows in the area.

While the township will have the public input on the two large pit applications, no decision is likely until next year, after the completion of a cultural heritage landscape (CHL) study, said Vink. That report will look at the potential impact of gravel pits on the cov-

ered bridge and the area surrounding it.

Woolwich has in place an interim control bylaw preventing any development in the West Montrose area while the CHL study is being completed.

That bylaw, however, has been challenged at the Ontario Municipal Board by The Murray Group, which has its own gravel pit application in the works.

then removed the Mennonites from that list to avoid muddying the results. That cut the numbers down significantly – eliminating fully half the names in Woolwich, for example – and she was left with 600 households.

It’s actually proven tougher to get non-Mennonite farmers to take part, Fisher observed.

Without the strong community ties and the organizational system of the church, it’s more difficult to enlist their help. She plans to mail out between 1,000 and 1,200 surveys, and she

needs at least 250 completed responses for the survey to be valid.

After all the survey data has been entered into a database and analyzed, Fisher intends to interview some of the Old Order Mennonites to validate the survey responses. She expects that the study will wrap up in the spring or summer of 2011. She plans to present her findings in a public meeting for anyone interested in the results.

Fisher notes that some Mennonites have adopted modern technologies like tractors, cell phones and electricity, and there are

questions in the survey to tease out those factors. Other aspects of the Old Order Mennonite lifestyle that may affect the results include education and literacy, a patriarchal society, and use of the health care system, particularly for health prevention and services regarded as nonessential.

The study isn’t intended to zero in on specific health issues, Fisher explained, but to give a broad overview of the factors involved in chronic illness. It’s a pioneering study, in a way; other health studies have

focused primarily on genetics and diseases that are over-represented or under-represented in the Mennonite population.

The Old Order Mennonites offer a unique opportunity to study the social and environmental factors behind chronic illness, Fisher said, because their lifestyle has changed little over the past 75 or 100 years.

“These diseases are diseases of lifestyle and changes in lifestyle,” Fisher said.

“When you look at the Old Order Mennonites, this is a lifestyle that has not changed.”

Not just history at stake in saving old buildings T

he debate over some of the old buildings at the former Lang Tannery site in Kitchener is yet another indication of how poor planning, architectural indifference and a disregard for history have made for blight instead of brilliance when it comes to our built environment.

The four old brick buildings at the centre of the latest controversy are certainly not the brightest architectural gems in the region, bereft though it is of much that falls into that category. But they’re much better than what’s proposed for the downtown site: a gravel parking lot.

To be fair, the developer’s overall plan for the site is a good one, keeping intact the main buildings. The idea is to offer a mix of business and social space. There will be offices for technology companies and those catering to the nearby university health sci-

ences facilities. And new restaurants and retail uses, with an eye to making the spot more than a 9-to-5 location.

But sacrificing the old one-storey buildings for parking, already an eyesore in Kitchener, is unwarranted.

Convenient to the developer, perhaps, but does not improve the core.

Kitchener council, however, seems resigned to the demolition, doing little to prevent it. The city claims it can do nothing, despite expert advice noting the municipality has the power to prevent the loss of yet another piece of history. The handwringing over the dreck that replaces demolished old buildings is a common scenario in the region, of course. Apparently, the message hasn’t sunk in, however.

What’s that line about those who forget the past?

offering the opportunity to repurpose them while maintaining the historic exteriors. That’s a useful and rapidly declining trait in these days of disposable architecture.

Along with being neither pleasing enough to keep nor built with craftsmanship worth retaining, today’s new buildings are often designed in such a way that they couldn’t easily be maintained and rebuilt in order to extend their lives.

The Lang Tannery project itself shows what can be done with old industrial buildings. The same is true of a host of other projects, from the Kaufman lofts to the buildings salvaged at the former Seagram distillery in Waterloo. In the townships, old mills have been turned into restaurants and shops, for instance.

prives us of the only structures with lasting aesthetic appeal.

Today’s factories, located in out-ofthe-way industrial parks and consisting of a steel skeleton clad in metal sheeting, are not candidates for repurposing, the lifeblood of an evolving community.

Older buildings, made of simple, workable materials – steel, wood, bricks and glass – can be made to last, and are much friendlier to the environment. That provides for cleaner living, the absence of the materials found in today’s sick buildings. And the structures are more durable, making them a better choice for the environment than continually demolishing and replacing them.

That’s what’s really at stake in the Lang Tannery debate, an issue with implications that reach far beyond downtown Kitchener.

Thailand democracy on the brink "T

he government does not want to negotiate, so I think many more people will die,” said “redshirt” leader Sean Boonpracong in Bangkok on Monday. “This will end as our Tiananmen Square.” Mercifully, it didn’t.

The danger was real enough. If the army had used all the force it had available in trying to clear the thousands of protesters out of central Bangkok, which they had occupied since mid-March, there would have been a massacre. And if hundreds of poor peasants (for that’s what most of them were) had been killed by the army, then it would have been trapped in power permanently.

If you commit a massacre, you have to stay in power. Relinquish it, and in a year or two you will be in a court charged with heinous crimes. So Thai democracy was at stake in Bangkok this week in a most fundamental way.

Fortunately, the army used much less force than it might have when it cleared the area on Wednesday (only six people killed), and the protest leaders avoided further bloodshed by surrendering.

One is tempted to say that this demonstrates the basic common sense of Thais, except that we have just had such vivid demonstrations of unreason from the very same people.

Two weeks ago Prime Minister Abhisit Vejjajiva had agreed to the protesters’ key demand: new elections this year. Instead of closing the deal, the protesters insisted that Abhisit also order the arrest of his deputy prime minister for having ordered an earlier attack on their encampment in which about 24 people were killed.

International Affairs GWYNNE DYER Abhisit refused, of course – and then cancelled his offer of elections this year as well. That is why another 40 people were killed in the past two weeks, and why democracy in Thailand ended up in real danger. The obstinacy of both sides needlessly prolonged a confrontation that might have ended in much blood. It was more by good luck than by good judgment that the Thais got through this phase of the crisis without mass killing.

But there was a lot of killing: 60-odd dead over a period of weeks, almost all of them protesters shot by the army, is certainly not a success story. The Thais went right to the brink of civil war over the past two months, and the crisis is not over. Abhisit has withdrawn his promise of elections this year, and shows no sign of reinstating it.

The “redshirts” who feel cheated by the political manipulations that put Abhisit in power have retreated from central Bangkok, but they are still very angry and they certainly predominate in northern and north-eastern Thailand, the country’s rural heartland.

They could seize control of much of it tomorrow, if they chose to do so.

The roots of this crisis are in the military coup of 2006, when the Thai army overthrew the elected government of Thaksin Shinawatra. Thaksin, an ex-policeman who became a tele-

communications billionaire, was not an ideal prime minister: his “war on drugs” involved thousands of illegal killings of dealers and addicts, and his response to unrest in the Muslim-majority far south was clumsy and brutal.

But he endeared himself to Thailand’s poor.

Thailand has been a democracy since 1992, but Thaksin was the first politician to appeal directly to the interests of the rural poor rather than just bribing their local village headmen to deliver their votes. He promised them debt relief, cheap loans, better health care, and he delivered – but that was not how the urban elite wanted their tax money spent.

A “yellowshirt” movement seized control of the streets of Bangkok, seeking Thaksin’s removal and demanding curbs on the voting rights of peasants because most rural people were too ignorant to make wise choices. After months of confrontation in the streets, the army took control in 2006, ejecting Thaksin from office – but it was not unequivocally on the side of the “yellowshirts” either.

The soldiers allowed a new election in late 2007 – and Thaksin’s supporters won again, of course. His opponents used the courts to dismiss two prime ministers drawn from the pro-Thaksin party for “conflict of interest” (in one case because the prime minister appeared on a television cooking show), and ultimately simply had the whole party banned and its members ejected from parliament.

Politicians want no part of real transparency T

he kerfuffle over how MPs and senators spend their office budgets has put the word accountability back into public view. The auditor general wants officials to come clean; the politicians say there’s enough oversight, refusing to divulge just what they do with some $500 million.

This is another case where Stephen Harper has broken his pledge to provide greater transparency: he’s done just the opposite since day-one. But it’s not only the government to blame, as the stinginess with public information about public tax dollars extends to all parties.

The public sees this as politicians looking to remain unaccountable.

We assume they’re trying to hide inappropriate spending. We’re probably right. As the Canadian Taxpayers Federation pointed out this week, the trust-us-everything-is-fine argument has been made elsewhere, with predictable results.

“Taxpayers are being asked to accept the word of politicians that their spending is all above board.

That’s what British MPs said before getting caught. It’s what Newfoundland and Nova Scotia MLAs said before they got caught. It is what the fox said while guarding the chicken coop,” says Kevin Gaudet, the organization’s federal director.

He’s right, of course. But this is just the kind of reaction we’ve come

From the Editor Steve Kannon to equate with accountability: some misdeed – or potential misdeed – is uncovered, the public reacts, politicians mouth platitudes about doing better, and then it’s back to business as usual. The bigger battle, however, involves forcing officials – government and corporate – to be proactive in their accountability, setting out the ground rules ahead of time and establishing penalties for noncompliance, all the while providing the public with full disclosure about their intents and actions.

Don’t hold your breath. That kind of accountability is definitely not what politicians have in mind.

Well, they have no accountability in mind, but it’s not the kind they even pay lip-service to.

Under the current system, most of what goes on with government at all levels is unknown to citizens. Typically, an initiative – be it a change in social programs, the construction of a new facility or spending cuts – is discussed in backrooms, unveiled to the public only when it’s more or less a fait accompli. There’s a pretense of public input, but typically

anything short of massive public backlash fails to deter government from pushing ahead with the plan.

Sometimes the ripples of discontent continue after the fact, too late to avert the unwanted changes but perhaps enough to worry politicians, especially in an election year.

But they count on our short-term collective memory and ability to be distracted by mindless diversions in order to maintain the status quo.

At most, there are inquiries and royal commissions, dragged on long enough for the public to become bored, moving on to the next issue.

None of that is real accountability.

In order to be truly transparent, governments would have to open up the process to public view from the get-go. Practically, that means revealing its intentions, which are not always aligned with the public good, and often in direct opposition to it.

It’s the sentiment behind the wellthought-out arguments of noted Canadian academic Dr. Ursula Franklin: “Whenever someone talks to you about the benefits and costs of a particular project, don’t ask ‘What benefits?’ ask ‘Whose benefits and whose costs?’”

History has shown that the benefits often go to a few, the costs to the rest of us.

Truly open government would not only reveal the backroom deals, lobbying and patronage that are the

mainstay of government, it would do away with much of it. Again, that’s not even in Harper’s worst nightmares when he talks about transparency and accountability, though never delivering on even the mildest versions of open government.

That bare minimum would involve revealing where the money goes, revealing the most egregious waste – the kind of stuff the public loves to rant about – and, just perhaps, letting some light shine on who benefits.

“Accountability and transparency in government spending seem obvious and a simple thing to accomplish,” says Gaudet. “With the high quality and low cost of today’s digital technologies, disclosing all of government spending should be technologically easy. However, it requires a willingness of those spending the money to be transparent.

And that is exactly what is lacking in Ottawa.”

Greater transparency could prevent the waste and graft we’ve come to expect. Real openness would go much deeper, revealing the real motivations behind spending priorities and other political decisions.

If officials in Ottawa don’t want us to know about their office budgets, they don’t want us even thinking about who really benefits from most of their decisions.

We could all do with a lot less salt in our diets  To the Editor, “Now is an appropriate time for some salty language” (Observer, Apr. 24/10) was interesting, and no doubt the authors of the article know their salt. Unfortunately some of the rest of us also know our salt and whether it is kosher, sea or iodine, it is still salt and it sends our blood pressure sky high, causes our ankles to swell and sometimes makes us nauseous.

Chefs Herbstreit and O’Malley state that salt is a fundamental ingredient in any dish, and unfortunately this is true. We know that salt is a preservative and extends the shelf life and we suspect this is the reason why food companies use so much. We have become so accustomed to the taste of salt that we no longer notice the overload. The level of salt in our food is probably the biggest key to a healthy diet or a heart attack.

Most of us remember our science class where we learned about osmosis. We peeled a small portion of the shell from an egg without breaking the membrane and put the egg in a glass of salt water. The water seeped into the egg causing the membrane to bulge. Osmosis provides the primary means by which water is transported into and out of cells. The turgor pressure of a cell is largely maintained by osmosis,

across the cell membrane, between the cell interior and its relatively hypotonic environment, according to Wikipedia. This is what happens when salty liquids seep into our body cells carrying foodstuffs with them.

Many of our elder seniors are overweight, and those who cannot tolerate spending hours in the kitchen need to have the option of going to the grocery store and buying healthy, nourishing food.

They especially need low-salt frozen entrees, with 200 mg or less per serving. Frozen foods do not need salt to preserve them and will keep several months if frozen properly.

Frozen foods also do not need MSG and other chemicals if good quality meats and vegetables are used. It is important to read the labels on the foods we buy, to check the sodium content and the portion size: 200 mg of salt per serving is the recommended amount.

Most seniors have cupboards full of cookbooks and could cook saltfree meals by omitting the salt. It is the preparation time that stops them. Instead of recipes that seniors or the physically challenged would never try, perhaps Herbstreit and O’Malley would do the research and find which companies have the healthiest entrees with the least amount of salt. Our own search has

found that President’s Choice Blue Label foods are starting in the right direction. They have less salt, less fat and excellent taste – but could still do better.

Some people need foods with fewer sugars and less artificial sweeteners as well. We need to get back to enjoying the true taste of food without all the additives. Why try to change normal?

Agency making progress on e-waste diversion  To the Editor, RE: “Paying for e-waste, but not seeing the benefit” (Observer, May 15/10).

Ontario Electronic Stewardship (OES), a not-for-profit, industryfunded organization, is proud of the progress we have made to-date in establishing an electronic waste collection and recycling program to keep toxic electronic material out of landfill sites.

In a little over a year, OES has put in place more than 600 collection points across Ontario where people can drop off unwanted electronic

items for recycling. That has led to more than 17,000 tonnes of potentially harmful electronic waste (including more than half a million TV sets) being diverted from landfill to OES-certified processors, who adhere to a set of stringent rules that ensure that this material is handled in an environmentally responsible manner.

Our mandate is to ensure that electronic waste – and the toxic components it can contain – doesn’t end up in Ontario’s landfills or shipped overseas for dumping with little or no regard to harm caused to people and the environment.

We are making solid progress toward our goal. This spring, we have already seen a 30 per cent increase in our monthly collection volumes.

And we have recently significantly expanded the range of unwanted products people can bring in to include cell phones, digital cameras and mp3 players, just to name a few.

t’s time to stop calling local food a trend.

In 2007, Alisa Smith and J.B. MacKinnon published The 100-Mile Diet, a book about their yearlong experiment with eating only locally grown foods. The book was a bestseller and popularized the idea of eating local – bypassing food that had been shipped over borders and oceans in favour of buying directly from farms and farmers’ markets.

The book may have given it a catchy title, but the concept has been around much longer. Foodlink Waterloo Region has been publishing its Buy

Experience and Product Knowledge included.

Foodlink’s marketing director, Anna Contini, noted the map’s listings have stayed largely the same for the past few years, but demand has picked up in recent years as the idea of eating locally has gained traction. They printed close to 40,000 copies this year, and people are eager to get their hands on it.

“It’s a highly sought-after commodity,” she said.

Contini noted that Waterloo Region is a mecca for shoppers looking for locally-grown and raised food, with the cities surrounded by farms offering a wide range of products and the

region dotted by farmers' markets.

Contini has also seen a resurgence in “old-fashioned” skills like canning, pickling and freezing, which allow people to extend the season for local food through the winter.

“I don’t see it as a trend,” Contini said. “It may have started as a trend, but it’s become more mainstream.”

Local farmer Stuart Horst agrees.

He sees more and more customers stopping by his on-farm market north of Elmira. His regular customers stop by weekly or twice a week to pick up fresh produce.

“There’s an increase this year again; we have almost yearly increases,” he said. “I think the local

Ontario’s farm sector ringing alarm bells T

he optimism that normally surrounds planting season is mired in a troubling forecast about Ontario farm income.

As farmers put their 2010 crops in the ground, Ottawa is predicting they could lose as much as $500 million when they harvest in a few months.

Granted, that’s the worst-case scenario. But even the best-case scenario has them deep in the hole. It could easily be one of the worst years ever for Ontario farmers.

The situation is dire. And make no mistake, it will not fix itself.

Farm groups such as the Ontario Federation of Agriculture are trying to sound the alarm bell and drum up support for relief from what president Bette Jean Crews calls a crisis.

“It’s not farmers’ fault, it’s not the government’s fault, it’s a combination of factors that made for a perfect storm,” she says. “Government programs exist that will get us through one crisis, but not a multitude of crises all at the same time.

The numbers are staggering and we need help.”

This perfect storm has been brewing for a long time. As far back as 30 years ago, grain wars between the U.S. and Europe set the global grain

That meant other exporting nations such as Canada had to do the same. Prices for farmers have been chronically low ever since.

More recently, in 2003, BSE resulted in closed borders to the United States for beef, and permanent damage ensued in the farm sector. The bad luck continued when H1N1 sent the pork industry into a nose dive. At about the same time, the U.S. instituted stringent and costly point-of-origin labeling laws, making it tougher to export there. Then, the world recession hit, followed most lately by late frost and floods. Add in high fuel and fertilizer costs, and the situation is unbearable.

Crews says farmers need a shortterm fix, as well as a long-term insurance program (something they dub a

The auction runs from April to October or November, and after it ends, there are a few farmers who have things like squash and potatoes that can be stored. Last year they were able to carry locally-grown produce until well after Christmas.

Pagett is hoping to expand local buying beyond produce in the future.

As the Buy Local map makes clear, local food means much more than produce; the map includes meats from beef to emu and rabbit, dairy, grains, preserves and syrup.

The map launches today (Saturday) at the Kitchener Farmer’s Market at 10 a.m. The map is available at local libraries, farmers’ markets and tourist information centres.

Crews believes the province supports long-term prospects for farming, and says both Ontario’s premier and its agriculture, food and rural affairs minister stand behind farmers’ goal of having long-term insurance.

For its part, the federal government has come through with significant funding initiatives for research, and sector development projects.

However, nationally, Crews says farmers in other provinces are in trouble too, and overall they need a $1 billion emergency payment “until we can get a long-term fix.”

That said, Crews believes the ultimate long-term fix is consumer support. She says farmers’ outlook would improve dramatically if consumers chose Ontario products that

could be priced fairly, reflecting all the costs of production.

Instead, consumers typically choose the low-priced alternative.

On the plus side, support is growing for local food. But it needs to happen at more than farmers’ markets, more than during a stop at a roadside stand, and more than when field crops and orchards are ripe. It needs to become a part of our culture.

Says Crews: “Consumers can choose what they want – either food they can trust from Ontario farmers, or imported food. Most countries understand the need to have a sovereign food supply. We’re not nearly concerned enough about that.”

Take a look at what happened to our manufacturing sector when we chose low-cost alternatives. The same thing could happen to food and farming. And it will be at our peril.

Eleven-year-old Evan Seip was walking along the path behind his Elmira home last weekend with his father, and the pair was appalled at what they found. Amongst the grass, rocks and reeds were pop cans, plastic bags and candy wrappers, lining the sides of the creek. And just beside the tin cans, beer bottles, yard waste, a road sign and several plastic bags filled with dog droppings were three small birds’ nests, looking out of place in their trashy environment.

“The creek is the main source of water for these birds,” explained Seip. One of the nests is home to a family of red-winged blackbirds and the other two have yet to hatch.

“All the garbage that builds up in there is polluting the water, and I am worried that it might start to make the birds sick.”

The duo does a bit of spring cleaning every year in the creek behind their

Brookmead Street home, and each year, they fill several garbage bags, said Evan’s father Lorne. “If it doesn’t belong in nature, we pick it up.”

But this year the impact of the trash was especially poignant for Evan, a Grade 5 student at Riverside Public School.

“I spend a lot of time outside with my friends. We go

“Even with the spotlight on the environment as it has been lately, people aren’t getting the message that they can’t just drop their cigarette butts on the ground, or leave plastic bags lying around,” said Lorne.

“It’s as though people as-

Lorne noted that he and his wife make a consistent effort to keep their property clean, but that it’s disappointing to see how people

sume that someone else will take care of it. It’s not their property so it’s not their problem.”

Evan is a part of the Junior Gardeners Club, a group of kids who spend time down at their garden on First Street – pulling out weeds, fertilizing the land and planting their own vegetables.

“At the club we learn that it is really easy to reuse a lot of our waste,” explained Evan. “A lot of things can be composted, and can actually be good for the earth if they’re put in the right places.”

The budding environmentalist is learning about where ‘the right places’ are for his trash, recyclables and compostables, but gets frustrated when others don’t seem to bother with theirs.

“If the garbage keeps building up in the creek, the water is going to get even more polluted and more animals are going to get sick,” said Evan.

“And it makes our town look bad – people won’t want to come visit here again.”

“We can’t hold the raccoons and squirrels accountable for the things they leave behind – that’s part of nature, it belongs here,” said Lorne. “We can however be accountable for ourselves, and people need to remember that.”

n June 5, the sounds drifting from Gibson Park will be positively medieval – shouting, swords clashing, the pounding of a blacksmith’s hammer and the cheers of a tournament crowd.

Elmira will play host to both King Richard, back from the Crusades, and an invading Viking king during the Robin in the Hood Festival, which will see the park overrun with knights, maidens, archers, jesters and jugglers.

This is the 10th year that the festival has been held in Elmira, and it’s a steadily growing event. A decade ago, there were about 50 people acting and organizing, and the festival needed only one side of the park. Now, the cast

Robin: Popular event has grown over the decade since its start > CONTINUED FROM PG. 16 numbers more than 150, and the spectacle includes a castle, siege machines, birds of prey, period vendors and craft demonstrations like the blacksmith.

“Over 10 years, we’ve come to take over the entire park,” said Sarah Heppler, promotions director for the festival.

The festival is the brainchild

of DJ Carroll, drama teacher at Elmira District Secondary School.

He had taken part in the medieval festival in Waterloo, and when he moved to Elmira, he brought his enthusiasm for the period and the event here.

The festival has also become an official not-for-profit organization.

The first day of the festival, June 4, is an education day for more than 1,000 Grade 4 students from across

the region. The Grade 4 curriculum includes study of the medieval era, and the students have a chance to see their history lessons brought to life.

Students are also a big part of putting on the show; Carroll has recruited from his classes and has also brought in elementary pupils as junior cast members. Old friends and members of the community round out the cast.

The fighters have been practicing since February, and the whole cast has been rehearsing since April.

The family-friendly event kicks off at 10 a.m. June 5. Heppler and her helpers are hoping for weather like last year, when the warm sunshine drew 1,500 people to the park.

The long weekend calls out for some summer staples W

e are not trying to jinx this weekend by talking about the potential for warm weather. We are Canadian, it is the May long weekend and right now snow does not seem to be in the forecast … we are still keeping our fingers crossed though!

This week we have two recipes for you: guacamole and black bean salad. Enjoy them with your favourite burger, steak or grilled chicken.

This guacamole recipe is dead easy: ripe avocado, lemon juice and salt – that’s it. This is how we enjoy it at our ‘work meetings’ where we sit around the table, talk food, and ‘eat avocado.’ There’s the good-foryou-fat in avocado that makes you feel like you’re getting healthier by the mouthful. You can make it your own by adding diced tomatoes, cilantro, lime juice, garlic, or even a little chipotle to add a bit of heat.

For the black bean salad, the added crunch of the pepitas adds interest, texture and extra protein to the salad, making it a great complete lunch as well. Pepitas are also known as roasted pumpkin seeds, and are a dark green colour. They are a classic Mexican addition, and can be found at health food stores.

Black Bean Salad Makes enough side dishes for 6

>>1 can of black beans, rinsed and drained >>1 small sweet onion, finely diced >>1 red pepper, finely diced >>1 jalapeno, seeds removed, finely diced >>½ cup frozen corn, thawed >>1/2 cup chopped fresh cilantro >>3/4 cup pepitas >>Juice of 2 limes >>4 tbsp canola oil >>1/2 tsp ground cumin >>Salt and pepper, to taste

Guacamole Makes about 2 cups

>>2 ripe avocadoes – this means that they are quite dark in colour, but still yield to some pressure

>>Juice of one lemon or two limes >>1/2 tsp of kosher salt Run your knife along the outside of the avocadoes, the long way; twist to open the avocado, and then carefully whack your knife into the pit, and twist carefully to remove the pit. Press the pit on your cutting board, to remove – don’t try to pull the pit off of your knife; Now make a cross-hatch pattern in the avocado with your knife and simply ‘squeeze out’ the avocado; Mix with the lemon juice and salt. This is a nice chunky version, which is great as is, or added to a lettuce salad (or even the above bean salad). Continue by adding the following to make a more classic guacamole, using a fork to mash.

>>1/2 cup chopped cilantro >>1 jalapeno, seeded and chopped >>1 tomato, seeded and chopped

Resistance adds another element to low-impact benefits of exercise in the pool

he Woolwich Memorial Centre is hosting a new type of fitness class this season, one which might challenge even the strongest swimmers. Tethered aquafit is a specialty class designed for those looking for a hardcore workout in the water.

Participants challenge themselves each class by trying to resist the pull of the water.

“It’s not about how well you can swim,” explained instructor Taylor Lavigne of the class. “Anyone can do it as long as they feel comfortable in the water, but it is a good workout.”

The class is similar to the regular aquafit classes, but now particpants are attached with a bungee cord to the

“One of the best things about it is that it’s low impact,” said Lavigne. “Because you’re in the water, it’s not tough on joints but it really gets your muscles working.”

Lavigne was certified to teach tethered aquafit two years ago and also teaches in Waterloo; this will be the first time the class has been made available to residents of Woolwich Township.

Teaching the class from the pool deck, Lavigne will lead the group through a series of exercises, pulls and stretches during the half-hour class.

In the Midget boys' division, Matt Bannon shattered records in the 1,500 and 3,000-metre races, both set last year by Preston High School’s Gavin Shields. Bannon shaved 6.55 seconds off the 1,500-metre race record with a time of 4:28.98 and ran the 3,000-metre race in 9:34.08, more than 18 second faster than the previ-

ous record.

The Grade 9 student also finished first in the midget boys’ 800-metre race and was the overall champion for his age division.

In the senior girls’ 400-metre hurdles, Madeline Charnuski broke her own record of 1:08.06 set at WCSSAA last year, shaving seven one-hundredths of a second off her time.

Good timing foils a wily rescue operation T

he trout season is barely a few weeks old and thus far, I’ve had one rod broken and just about lost another two days ago – in other words, 2010 is already turning out to be a banner year.

I know you probably have heard wives tales of anglers who claim to have fished for whole days without breaking, misplacing or provoking angry moose with their fishing rods – heck, I’ve heard of them too – but, between you and me, I still take a Doubting Thomas approach. I’ll believe it when I see it.

Oh sure, the incident of two days ago was slightly different, but only in that it didn’t involve a buddy, myself, a rogue ATV, a treacherous tree or even a wayward trunk or door. No, this loss would have been purely attributed to the malicious doings of a trout.

In fact, it actually showed so much planning, timing and flawless execution that I have come to believe that it was a military operation conducted solely by trout – a failed rescue, in fact.

Perhaps I should explain.

My buddy Bill (the man responsible for running over my last, expensive rod) and I were fishing for rainbows in this little lake I

I’m guessing that the signal for the full-scale assault would have been the splash of my rod hitting the water and the ensuing wailing and shaking of my fist to the heavens.

I’ve watched the Military Channel enough to know that the assault would have been fast but furious. The lead element of perhaps four highly-trained trout, would have thrown grappling hooks over the side of the boat

Not-So-Great Outdoorsman Steve Galea know. And, miracle of miracles, the bite was on.

I had already landed a chunky 18-inch stocker and kept it for dinner. Then, as we were drifting in about 20 feet of water, Bill hooked and landed one about the same size.

Naturally, we did what any red blooded anglers would do; that’s right, I posed Bill for photos that I could use to torment a buddy who always gets skunked at this particular lake. While I was taking the photos, however, my full sink line and woolly bugger were still in the water and unattended.

Suddenly, my rod bent and lunged towards the watery depths, yanked by a trout. Luckily, my fly reel caught the edge of the boat and hesitated just long enough for me to grab the rod right as that rainbow went ballistic and cleared the water. I fought the fish, another nice one, to the edge of the boat and then it spit out my fly and swam off.

and boarded, overpowering Bill (who is 82) with tail slaps and by knocking over his drink and fly box.

Obviously, by this time, I would have been in the water diving for my rod, so he would have been on his own. And while Bill was battling those trout, a second element – the hostage rescue team – would have secured the fish we caught and led them out of the premises.

Luckily, I grabbed my rod and so none of this ever came to pass.

But, I tell you it was a very near thing.

Unbelievable you say? Parts of the story are just not conceivable, you insist. No, it’s true – I actually hooked two trout.

An Accommodation Review Committee (ARC) with representatives from each school community, the city of Kitchener, the Township of Woolwich, the Waterloo Region District School Board and the community at large, has developed preliminary accomodation scenarios that will be presented at this meeting. This year’s track and field team is larger than usual; most years

they have about 30, but this year the team had 45 competitors.

Track and field always attracts more girls than boys, said coach Lisa Douglas, but this year a few more boys came out after the rugby team folded.

“We don’t usually have this many going [to CWOSSA],” she said. “We’re very pleased with the results this year.”

Band members find their Second Wind Local musicians to perform at Lions Club fundraiser in support of Wellesley school playground Joni Miltenburg

onathan Sauder first played with the band Second Wind when he was about eight years old.

His parents, Wendy and Brian, were friends with the band members and had been bringing him to their shows since he was five, smuggling him into bars over the supper hour. Jonathan had a natural talent on drums and one night, while playing in St. Clements, they brought him up on stage for a song.

When he was done, Jonathan climbed in his mother’s lap and said “Mommy, I’m shivering but I’m not cold.”

“That’s called a buzz, honey,” she said.

They’re called Second Wind, but the band has gone through three or four metamorphoses – this time with Sauder behind the kit as the regular drummer.

The founding members of Second Wind – Darrel Martin, Howie Brubacher, Daniel Kramer and Grant Snyder – are childhood friends who grew up in St. Jacobs and went to the Mennonite church, where they learned to sing harmonies.

In 1971, they formed a band called Pharaoh, rehearsing in somebody’s basement. They cut their performing

One by one, the band members fell away. But four or five years later they reunited and started playing again, mostly on weekends as they had young families by that point. A friend suggested that

Over the past decade, they played a few times a year, at weddings and parties. They picked up a fifth member along the way: Willem Moolenbeek, who plays harmonica and saxophone. In 2007, they finally got around to recording an album with the help of 40 or 50 friends who pitched

tal and he encouraged them to keep playing.

Inviting Jonathan to take over the drums felt like the natural choice. Jonathan had learned to play on Snyder’s first drum kit, and Grant had asked that his drums go to Jonathan when he died.

“We wouldn’t have tried to find another drummer. This just felt natural,” Brubacher

said.

Despite the generation gap between them, Sauder has slipped easily into playing Second Wind’s mix of classic rock, blues and country rock. They stir a few original songs into the set list, and they’re adding some new pieces to their repertoire – joking a song has to be at least 30 years old to qualify.

The Sauders’ basement is now the rehearsal studio as the band prepares for the Wellesley Lions Club’s annual fundraiser June 19. The chicken barbecue and dance at the community centre will raise funds for a new kindergarten playground at Wellesley Public School.

Harmony – and not just the vocal kind – is important to any band, Brubacher said. If it’s just five musicians playing together as individuals, the magic is missing. Friendship and the love of music has kept Second Wind going.

“Not many bands last this long,” Martin said. “We just like what happens when we get together, and we keep doing it.”

Official Plan Amendment Application 1/2010 and Zone Change Application 5/2010 Cameo Homes (KW) Ltd. Take Notice that in accordance with the Planning Act, R.S.O., 1990, as amended, the Township of Woolwich has received a complete application by Cameo Homes (KW) Ltd. for a proposed Official Plan and Zoning By-law Amendment as detailed below. Please be advised that Notice of a Complete Application does not indicate whether the municipality is in support of, or in opposition to the proposal. That determination will be made at a later date.

The Township of Woolwich will hold a Public Meeting, under Sections 17 and 34 of the Planning Act, to consider the following Official Plan Amendment and Zone Change application. No decisions will be made at this meeting; its purpose is to provide additional information to the public and agencies and to receive comments and information from them.

The Township has received Official Plan Amendment and Zone Change applications from Brian L. Shantz Ltd. on behalf of Cameo Homes (KW) Ltd. for the properties located at 30 and 32 Church Street West, Elmira and described as Plan 571 Part Lot 38 and Lot 37 (see Map 1). The properties are designated Residential and Ancillary Use, Church Street Policy Area and Restricted Land Use Area in the Township’s Official Plan and are zoned Residential / Commercial (R-6) and Flood Fringe (FF). The property at 30 Church Street West is developed with an office building and the property at 32 Church Street West is developed with a single family dwelling and accessory building.

The applicant is proposing to include a Special Policy to the Official Plan policies within the Elmira Settlement Area to increase the permitted net density on the subject lands from 60 units per hectare (24.3 units per acre) to a maximum of 105 units per hectare (43 units per acre).

The applicant is also proposing a site-specific zoning amendment to the current R-6 zoning provisions as follows: • to reduce the minimum side yard requirement from 7.5 metres to approximately 3.6 metres for the west side of a proposed apartment building; • to reduce the required off-street parking requirements from 1.5 spaces per residential unit to 1.1 spaces per residential unit for a total of 22 parking spaces; and • to amend the definition of amenity areas to include the interior common use areas and balconies for the proposed development for the purpose of satisfying their minimum amenity area requirement of 30 square metres per dwelling unit.

They depend, of course, on the player’s ability and the length of the hole, says John Wesson in The Science of Golf. Other factors are the protection of the hole by bunkers and the slope of the green.

The following numbers come from experiments to find the typical spread in the balls’ landing positions and rolling distances; probabilities obtained from individual players; and published estimates of the odds. Averaged over holes of different types and under different conditions of play, estimates are for 10,000-to-1 odds against a hole-in-one for most players most

Given this, how many have been hit over the years? Let’s assume 40 million golfers worldwide. If we take the average number of rounds as 400, with four par-3s per round, that makes a total of about 64 billion opportunities for a holein-one.

Based on the 10,000-to-1 odds, this converts to an estimated 6.4 million holes-in-one (64 billion/10,000). “This is only a rough calculation but it seems quite

likely that there have been more than a million successful cases.”

Q.

What’s the mathematical curiosity behind the survival of those pesky household cockroaches, despite humans’ efforts to swat them out of existence?

A.

Roaches are survivors, going back some 300 million years, reports the journal “Current Biology” in Science magazine. When threatened, most often they skitter away in some unexpected direction and disappear out of sight.

The choice of escape trajectory must be sufficiently variable that a predator cannot learn to predict it yet should exclude, in a nonrandom manner, running TOWARD the

source of danger.

Researchers recording the multiple-choice trajectories of five roaches responding to a wind stimulus -- not unlike a newspaper boom being lowered by a swatter -- found that the wily insects first turned away and then raced along one of four preferred routes at roughly 90 degrees, 120 degrees, 150 degrees or 180 degrees relative to the stimulus.

Moreover, these results tended to be similar across the 86-member cockroach colony.

“Though these routes are not random and are limited in number, they clearly suffice for the cockroach to live another day.”

Soehner, John D Passed away after a gallant struggle with many health issues on Monday, May 17, 2010 in his 71st year.

John Soehner of Elmira is the beloved husband for 45 years of Gael Soehner (nee Matthews); loved father of Heather Uttley and her husband Steve, Chris (Skip), and Jody and his wife Jenny all of Elmira; devoted grandfather of Kyle and Alexander Uttley, Phebe Fritz-Soehner, Danny and Desi Soehner; dear brother of Gladys Archibald of Alma and RuthAnn Rae of Waterloo. Also lovingly remembered

by his mother-in-law Pearl Matthews of Loring, Ontario. Predeceased by his parents Gertrude and Clarence Soehner of Floradale. John was the owner/operator of C. H. Soehner Insurance for over 45 years. He was a charter member of the Elmira Kiwanis Club and was still very active with the club. Throughout his life he was an avid supporter in many ways of minor hockey in Elmira/Woolwich. The family received friends at Dreisinger Funeral Home, Elmira, on Tuesday from 7-9 p.m. and Wednesday 2-4 and 7-9 p.m. Funeral service was be held on Thursday, May 20, at 11 a.m. at St. Paulâ&#x20AC;&#x2122;s Lutheran Church, Elmira. Interment will take place at a later date at Loring Cemetery.
