T

he hors d’oeuvres were still warming, the refreshing beverages still on ice, but Woolwich’s new mayor was already talking of rolling up his sleeves and getting to work on the business of running the township.

Still, Tuesday night’s first official meeting of the newly elected council largely focused on laudatory speeches and finger foods. Deliberating involved tea, coffee or punch.

Amidst the yuletide decorations of Lions Hall in Elmira, Mayor Todd Cowan and councillors Julie-Anne Herteis, Allan Poffenroth, Mark Bauman and Bonnie Bryant spoke only words of thanks to voters, colleagues and former councillors as they were sworn-in by Waterloo Region Chair Ken Seiling.

The ceremonies done, Cowan later said councillors would use the next month to get up to speed prior to council resuming regular sessions on Jan. 11.

"It's time to get down to work."

> WRDSB elects chair, vice-chair Kathleen Woodcock is the new chairperson and Kathi Smith the vice-chair following Tuesday’s inaugural meeting of the Waterloo Region District School Board.

This is the first term at the helm for Woodcock, who has represented Waterloo/Wilmot on the board for seven years.

Smith, a trustee from Kitchener, was first elected in 2000.

Elected by their fellow trustees, they can serve for a maximum of two consecutive years.

f Floradale Public School’s Grade 5 and 6 students had their way, their school’s parking lot would be covered in grass, there would be a solar panel covering the roof of the building, and the playground out back would be made of recycled materials.

This is what the students proposed to a panel of judges last week at the wrap-up of Capital Paving’s ‘Greenest School’ competition, and the idea was met with enthusiasm – so much so that Floradale PS took home the title and the grand prize of $6,000.

The call to environmental action was put out to students from across Woolwich Township at the beginning of this school year and Breslau Public School, St. Teresa School and Floradale Public School put together teams of students and teachers who stepped up to the plate. In September, Capital Paving approached a number of schools in Woolwich and challenged Grade 5 and 6 students to design the

ideal “green school.” Their design was to be energyefficient, environmentally friendly, and sustainable for years to come.

“What they came up with blew us away,” said Capital Paving’s George Lourenco.

“The skills the students showed us and the detail in their models far exceeded our expectations.”

During the finals, the schools presented their projects in three formats.

Each group presented a written description of all the ‘green’ characteristics their school design has to offer, and how each of those items positively impacts the environment. Then, they displayed their constructed model illustrating the green design. Finally, the students had the opportunity to show other schools a short video clip about the process of building their project and the creativity that went into the final product.

Floradale students made a video which explained their design and even included TV news-style clips of students being interviewed as

to why their school should be greened.

“We were able to integrate this project into our curriculum here quite a lot,” said Floradale PS teacher and project facilitator Jody House. “We did work on this project in a number of our classes: science, language, math and art. The students had to research environmental concepts and present them, which involves reading comprehension, critical thinking skills and oral presentation skills.”

The students each wore a number of different hats during the creation of their model and video. House said the enthusiasm from the students was extraordinary.

“They were really excited to work on this. They really liked the hands-on building experience of making the model and the real-life experience of interviewing other students for the video.

It was neat to see.”

Since Floradale’s renovation this past year, the students have had a bit of exposure to environmentally friendly building tech-

niques and they were happy to employ them on their own model. Some students looked to their social networks to get assistance with the project.

“My dad is a carpenter and I have done woodworking before,” said student Brent Sauder. “I built a playhouse in my backyard, so this was kind of like that.”

Now that they have won the contest, the Floradale group has shifted their focus from model building to reallife planning; their recycled playground dream might just become a reality with the money they have won.

“We have talked about a bunch of different ideas,” said House. “We would like to step up our recycling program, implement a composting system and put a focus on litter-less lunches so we can make less of an impact on the environment. The kids are really excited about being green.”

At the final competition, St. Teresa came in second place, winning a $1,000 prize. Breslau PS was third, collecting a prize of $500.

In one of their few orders of business on Monday evening, Wellesley councillors unanimously agreed to support a motion put forth by the municipality of Trent Hills to request that the Royal Canadian Mint produce a commemorative Highway of Heroes coin.

The coin would depict an image of Canadians honouring fallen soldiers from the bridges that span the section of the 401 dubbed the Highway of Heroes.

“The Highway of Heroes plays a significant role honouring our fallen Canadian soldiers,” said Mayor Ross Kelterborn, reading from the motion.

> St. Boniface seeks donors for fundraiser Gearing up for its only fundraiser of the year, St. Boniface School in Maryhill is looking for donations to its silent auction.

The school’s dance and silent auction is scheduled for Feb. 5 at WaterlooWellington Serbian Club, “The Maryhill Place.”

Proceeds from the event support initiatives at the school. In the past, money raised has been used to purchase items such as books, sporting equipment, teaching aids, mobile technology programs and computer-related items.

Proceeds also assist with the expense of student field trips. These items are beyond what the school board budget provides.

Driver loses clothes, gains a long list of charges DECEMBER 1 >>5:12 PM | Black ice caused

a collision which demolished the vehicle of a 20-year-old Elora woman who had just crested a hill on Sandy Hills Drive in Woolwich Township.

She tapped her brakes but spun out when she hit the ice and collided with a 2009 Chevrolet Expedition, driven by a 53-year-old Elmira man. His car suffered severe damage but neither person was injured.

No charges were laid.

>>5:27 PM | A car was

significantly damaged after colliding with a deer on Crowsfoot Road near Beitz Road. The deer was running southbound on Crowsfoot when it was hit. The deer ran off after the collision.

>>8:22 PM | An Elmira man

went for a walk in the evening and left his Bristow Creek Road garage unlocked. While walking, he saw a youth travelling in the opposite direction with beer bottles stuffed into his jacket. When the man went out to his garage the following morning, he

olice responded to a report of a Ford Focus travelling at a high rate of speed northbound on Victoria Street North and Ebycrest Road near Breslau about 1:40 p.m. on Dec. 4.

The Ford crossed into southbound lanes, where it collided with another vehicle.

The driver of the Ford, a 28-year-old Kitchener man, then disrobed and fled the scene on foot. The

The man was transported by ambulance to Guelph General Hospital, where he was pronounced dead by staff. Guelph-Woolwich Line at Paisley Road was closed for a two hours while police investigated. An 11-year-old boy, the lone passenger, was not injured.

man was driving a transport truck loaded with auto parts southbound on Arthur Street, approaching the roundabout

at Sawmill Road. The driver failed to merge properly into the roundabout and the truck mounted the embankment in the center of the roundabout.

Police attended and found one of the truck’s fuel tanks to be leaking diesel fuel.

Firefighters from St. Jacobs collected the leaking fuel and transferred it safely into barrels at the scene. An undetermined amount of fuel leaked into the soil. A Waterloo Region water services officer attended the scene for an assessment. The Ministry of the Environment was informed of the incident.

No other vehicles were involved, and there were no injuries. The driver of the truck was charged with ‘careless driving.’

>>7:00 PM | A truck parked in a

building on Lobsinger Line near St. Clements caught on fire, resulting in $40,000 damage to the truck and between $10,000 and $20,000 damage to the surrounding building. It’s believed a blown fuse caused a spark, setting the engine on fire, which in turn ignited the truck’s cab. Firefighters from St. Jacobs and Conestogo were called to contain the blaze.

His 2008 Jeep slid ahead and hit a 48-year-old St. Clements woman in a 1996 Jeep. The first vehicle suffered significant damage and the woman’s vehicle only had light damage. No charges were laid.

>>11:00 AM | A 33-year-old St. Clements man, the driver of a Mazda 3, was travelling eastbound on Line 86 near Wallenstein when he lost control of his vehicle on a patch of ice and struck the wooden guardrail.

The driver was not injured and no charges were laid.

Mapping out Woolwich’s economic future Agriculture, manufacturing and retail among prime targets identified early on in economic strategy process James Jackson

A

griculture, manufacturing and retail are the key sectors Woolwich should court in securing economic opportunities for the township, according to the preliminary findings of a new study.

The information was presented Wednesday night in Elmira at the first of two public meetings on the road to devising an economic development strategy.

“We’ve basically pulled several pieces of information together over the past

few months by speaking with stakeholder groups and members of the business community,” said consultant Dave Hardy of the early indicators.

His firm, Hardy Stevenson and Associates, has been retained by the township to lead the study funded by a federal grant.

The planners identified several key industries in the region that hold promise for the economic future of Woolwich, including agriculture and agribusiness, wholesale and retail trade, and

manufacturing.

“We went out and talked to the different sectors and asked ‘what’s going well, and what’s going not so well?’” explained Hardy. “It’s not the region’s plan, but the township’s plan for its own people, and the more people that we can get involved, the better.”

Wednesday’s meeting at the Woolwich Memorial Centre was a chance for the public to have its say on the direction the township should take. About 30 members of the community were out to

voice their opinions on the subject, with the topics ranging from public transit and roads, to the preservation of agricultural heritage and the continued promotion of the township’s entrepreneurial spirit.

“I think it is a very, very important process to give council and staff some direction on what the community wants,” said Steve Martin of Martin’s Family Fruit Farm near St. Jacobs. Martin sits on the stakeholder committee

St. Jacobs’ Best Western changes hands in an interview. “It’s a smaller market in terms of population, but it’s known on a global scale now, which excited us a lot.”

The Best Western St. Jacobs hotel, which has 188 rooms, is on Benjamin Road, near the St. Jacobs Farmers’ Market. The Destination Inn, with 104 rooms, is on King Street North near Conestoga Mall.

The two hotels employ about 70 people in total.

Although plans

aren’t final yet, Martin said he’s heard Palm intends to upgrade the St. Jacobs and Waterloo hotels into more luxurious establishments.

“I wish the new owners well,” said the former owner who is now looking to work in the alternative energy industry. “It has been a good run for us and we have gotten to work with fantastic staff and guests. It’s been a privilege to be part of the community.”

fter 13 years of hosting visitors at the Best Western St. Jacobs Country Inn and the Destination Inn and Suites, company founder Larry Martin is on the lookout for new opportunities following an announcement this week that a hotel development and management company with offices in Toronto, India and the United Kingdom have purchased the two Woolwich hotels.

Palm Holdings bought the Best Western St. Jacobs Country Inn and the Destination Inn and Suites in a deal that closed in October, and Martin says the timing worked out just fine for him.

“I had quite a large investor group which was aging,” he said of his reason for selling.

“We received an offer that was palatable and it was an opportunity for all of us to exit together.”

The group built the Best Western St. Jacobs Country Inn in 1998 and purchased and expanded the Destination Inn, an independent hotel, in 2005. The Best Western St. Jacobs was not a franchise, but was independently owned by St. Jacobs Country Inn, which paid a licensing fee and dues to Best

Western.

Palm Holdings is described by director Anil Taneja as a family-owned business that’s been in operation for three generations.

Including the two local properties, it owns three hotels in Canada, two under construction in India and two in the U.K. It also renovates and manages hotels in the three countries.

My favourite part is seeing friends and family get together in the restaurant, and serving them a good, wholesome meal.

“If you don’t do the planning necessary for the future of the township, you leave yourself open to nothing happening. If you don’t allow for future opportunities, you can actually take a step backwards.”

While discussion was varied, Elmira’s proximity to the major urban centers of Kitchener and Waterloo was raised repeatedly, from public transit to the perpetuated myth that Elmira is “too far away” from Waterloo – an idea that needs to change if the town is to attract more tourists and businesses.

Mark Bauman, one way of changing that mindset is for Woolwich to help in the transition away from our reliance on cars.

“I try to take the bus to council meetings whenever I can, but most times meetings end after the last bus,” he said. “We need to encourage the use of the bus and make it permanent. I want to turn it into a viable transportation alternative, and not one that is subsidized.”

One idea that was tossed around was to co-market with Grand River Transit, and Hardy mused that they could introduce the marketing slogan, “The bus runs both ways.”

Robin Martin, a café owner in Elmira, voiced her concerns for not only affordable housing in the area, but that with all of this economic development and planning, Elmira and the township as a whole cannot lose sight of what makes the region unique and a great place to visit.

“We can’t get stuck in the trap of lowering our standards in the types of business that we want to attract to the area, like Kitchener did several years ago in their downtown area,” Martin said.

After a lively discussion, Laurel Davies Snyder, the township’s economic development

and tourism officer, expressed optimism about the project.

“What I’ve heard is consistent with what our focus groups have been saying the past few months, and what that tells me is that we’re hitting all the key points,” she explained. “It’s important to go beyond statistics. We need these sessions to dig down below the stats and find out what’s going on in the township.

“Look at all these people who are still here talking and making connections,” she said, pointing to the 10 to 15 people who remained after the meeting to continue their discussions. “I love that.”

The next public meeting will be held on Jan. 20 at 7 p.m. at the WMC. Contact Davies Snyder at the township for more information or to become involved.

or the third year now, students from the firefighter program at Conestoga College are cutting their teeth in Wellesley Township.

Ten students arrived at the Linwood station Monday morning, ready to learn the ropes.

The intent of the program is to give students the ability to put some of the skills they’ve learned to practical use, said Wellesley fire chief Andrew Lillico.

“What they can’t do in a classroom is see what fire station life is like.”

Throughout the week students filled fire reservoirs as required by the municipality, learned how to use portable water pumps and pump re-

lay systems, and gained experience working on tanker trucks.

“A lot of them will become full-time firefighters in the city and not see tanker operations or portable pumps, so it gives them a little extra experience to see that kind of thing,” noted Lillico.

The students also performed a lot of behindthe-scenes tasks that many might not realize is part of the job description.

“It’s not just responding to emergencies,” said Lillico, who taught at Conestoga for about three years and whose son is also enrolled in the fire training program at St. Lawrence Prime Rib College in$25.99 Brockville.

The student’s week in Wellesley isn’t just for their own benefit, either. Lillico noted it provides a good experience for him and all the other volunteer firefighters involved.

“We see some new faces, and sometimes you get new ideas as well.

And it promotes Wellesley Township Fire Department,” he said, adding that he intends to take another group of students in April.

“And for us as instructors, you have to be really sharp and on your toes. It keeps our skills honed too.”

Now the real work begins for Woolwich council K

en Seiling had it right when he told newly sworn-in Woolwich councillors that the election was the easy part – the real work comes with taking a seat at the council table.

The Waterloo Region Chair’s remarks came as council members gathered Tuesday night at Lions Hall in Elmira for a bit of pomp and circumstance to mark the official beginning of a new term. When they meet again for real, starting in January, it won’t be over wine and finger foods.

Four of the five seats will be filled by newcomers, including Mayor Todd Cowan. They’ll discover just how difficult it is to put campaign musings into action when they’re faced with actual decision-making.

The stakes are much higher.

As with elected officials at any level, they’ll need to be cognizant of the fact they represent those who

voted for them, those who didn’t, those who neglected to vote at all and the interests of the township as a whole. Often, the needs, wants and priorities of those various groups will be in direct opposition to each other.

Yes, the hard part is yet to come.

Councillors are, of course, aware of some of the most pressing issues already on the table: gravel pits, biogas energy, Chemtura, the infrastructure deficit, rising operational expenses and levels of taxation outstripping inflation. Each of those will require council to take in a range of information and a variety of viewpoints. Decisions will not be easy.

The same is true of a host of other issues that are sure to arise over the next four years.

Where previous councils were more administrative, more often dealing with staff reports than setting a policy agenda, Cowan has promised a different course.

To that end, he expects councillors to be more attuned to what’s happening in the various departments, where they’ll provide more oversight. The idea is to develop more policies, which will in turn shape what staff brings to council in terms of reports and recommendations.

The change should be a positive one.

This is not a cue, however, for micromanagement. Cowan has already said he has no interest in that: staff will continue to operate the “busi-

ness” portion of the township. What should be different is the environment in which they’ll operate, one established by those elected to represent the will of the electorate, those who pay the bills and for whose benefit the entire structure exists.

With the campaigning and the inauguration behind them, the four new members – Cowan, Julie-Anne Herteis and Allan Poffenroth in Ward 1 and Bonnie Bryant in Ward 3 – now have about a month to get up to speed before council resumes sitting for real. The 2011 budget process is already underway, and that will be the most pressing issue after the holidays. The approach councillors take to prioritizing expenses should help set the tone for their term, letting Woolwich residents know just how serious they are about reflecting what’s important to the community.

Succession plan at heart of Egyptian election scam E

gyptian elections are always highly predictable affairs, but the second round of this year’s parliamentary elections last Sunday was completely pointless. The first round on Nov. 28 showed that the regime was going to suppress even the marginal role permitted to pro-democracy parties in previous elections, so the leading opposition parties simply refused to participate in the second round.

It’s hardly news that the Egyptian regime rigs elections: Egyptian voters are wearily familiar with that fact, and the turnout this time was only 10-15 per cent of the 42 million eligible voters. But the rigging has become embarrassingly blatant. The largest opposition party, the Muslim Brotherhood, whose members held almost one-fifth of the elected seats (88 out of 508) in the outgoing parliament, won no seats at all in the first round this time.

It had little hope of winning any in the runoff round either, so it declared that it was withdrawing from the whole charade. The next-biggest opposition party, the liberal New Wafd party, whose parliamentary presence looked likely to crash to two seats, did the same. But why, if it was already guaranteed to win, would the regime reduce the elections to a farce by eliminating even a token opposition in the new parliament?

The reason why is Gamal Mubarak, the second son of the reigning dictator, 82-year-old President Hosni Mubarak.

The latter keeps hinting that he is going to run for another term as president next year, 30 years after he inherited the job from the assassinated Anwar Sadat, but his health is poor and few Egyptians believe him. They think he is really going to push his

This would not be a first for the Arab world. Syrian dictator Hafiz Assad, who died in 2000 after 30 years in power, chose his son Bashar to succeed him. The ruling Baath Party did his bidding because it was safer than having an open power struggle that might jeopardize its hold on power.

When Libya’s dictator Muammar Gaddafy (already in power for over 40 years) finally dies, he too will almost certainly be succeeded by his son. But these are shameless one-party states.

Egypt is a more sophisticated place.

The Egyptian regime has always tried to maintain a democratic facade, even though all three of the country’s rulers for the past 56 years have been ex-military officers. Since Hosni Mubarak’s son Gamal has no military background, he especially needs some form of democratic process to make his power seem legitimate to the outside world.

What the Mubaraks do not need, at this delicate time, is a large and vocal opposition in parliament that will denounce next year’s presidential election as a disgrace to democracy. Yet that was what they were going to face if they didn’t rig this year’s parliamentary elections, and to do that they needed to change the rules.

The Egyptian constitution of 1971 required judicial supervision of elec-

tions (“a judge for every ballot box”), but this never happened in practice until 2000. That was when the Constitutional Court ruled that preceding elections had been invalid because no judges were present in the polling stations – so in the 2000 parliamentary elections, the judges did show up.

The presence of judges made it harder for ruling-party thugs to intimidate voters or even to stuff ballot boxes in the traditional manner. As a result, the opposition parties actually won significant numbers of seats in parliament in the 2000 elections, and even more in 2005. So in 2007 the regime changed the constitution: judicial supervision of elections was abolished.

It was back to the bad old days in this year’s election, with New Wafd candidates coming in first in almost every constituency. Even Washington, the regime’s main ally, said it was “dismayed” by the chicanery, but at least there will be no criticism from parliament when Gamal Mubarak is crowned as his father’s heir in next year’s presidential election.

There are those who argue that this will be good for Egypt even if it is undemocratic. Gamal Mubarak is a moderniser who has opened up the economy, they point out. And, besides, he represents stability. Egypt’s recent burst of economic growth, after decades of near-stagnation, could not have happened without him.

Sure, and Mussolini was a good thing because he made the trains run on time. The corruption and nepotism at the top of Egyptian society are breathtaking even by Middle Eastern standards, and the growth does not

Attack on civil liberties warrants repercussions A

word of advice for Dalton McGuinty: the next time Stephen Harper comes calling, tell him to go pound salt.

Actually, that’s good advice for every Canadian, but the Ontario premier has a particularly good reason to do so. Well, two, actually: the HST and the G8/G20 summits.

McGuinty’s agreement with Ottawa on the former has turned into the largest of his many political blunders, a public relations mess he’s unlikely to live down.

The summits, particularly what unfolded in Toronto, are in many ways more troubling. In a scathing report released this week, Ontario’s Ombudsman took the provincial government out to the woodshed for its role in Harper’s epic boondoggle.

McGuinty should have said no to any and all plans for holding the useless summits in this province.

At the very least, there should have been zero cooperation. Instead, as André Marin’s report shows, Queen’s Park joined in on the policestate frenzy, trampling all over the rights of Ontarians.

In using the obscure Public Works Protection Act to give police extraordinary powers, the government was complicit in the illegal acts that followed. The police will have to answer for the abuse of power displayed last summer, but the province helped lay the framework.

“By creating security zones to bar entry and by authorizing arrest, it

It was therefore in prima facie violation of the Charter as a matter of law, likely in ways that are not constitutionally justifiable,” Marin writes in his report, entitled Caught in the Act. “Regulation 233/10 worked to trip the powers of the Public Works Protection Act, thereby enabling the arrest and muting of protesters and others who had done nothing wrong.”

Clearly, the Ombudsman sees plenty wrong with what unfolded in June, from the invocation of legislation from the Second World War through to the lies told to the public and the failure to restrain police.

In the days leading up to and over the course of the G20 summit weekend, some 1,105 people were arrested – the largest mass arrest in Canadian history.

An estimated 20,000 security personnel were involved with security for the two summits, including private security guards contracted by the federal government. The staggering cost for hosting the events was estimated at more than $1 billion. The nearly 10 kilometres of security fencing around downtown

Toronto alone cost an estimated $9.4 million, Marin reports.

In the aftermath of the summit – which cost citizens their civil liberties and more than $1 billion of their tax dollars – we got nothing but arrogant responses from officials. Slowly, we got some backpedaling, but there was plenty of obfuscation and attempts to “deflect responsibility,” as Marin puts it.

The day after the Ombudsman’s report, McGuinty accepted responsibility for his government’s role in the G20 fiasco. The apology rings a little hollow, however, as it came only after the unflattering revelations. In order to carry any weight, the mea culpas will have to be followed by the appropriate resignations and firings. Perhaps even some criminal charges.

Toronto Police chief Bill Blair is the obvious first candidate to fall on his sword. He requested the powers under the Public Works Protection Act, and he failed to limit the abuses perpetrated under the act.

McGuinty did himself no favours when he said he continued to have confidence in Blair. The chief falls under city council’s jurisdiction, but the Premier can do something about those in the Ministry of Community Safety and Correctional Services who went along with Blair’s request.

“The Ministry simply handed over to the Toronto Police Service

inordinate powers, without any efforts made to ensure those powers would not be misunderstood,” reads Marin’s report. “More importantly, it was grossly unreasonable and unfair for the Ministry of Community Safety and Correctional Services to let Regulation 233/10 fly under the radar the way it did.

Apart from insiders in the government of Ontario, only members of the Toronto Police Service knew that the rules of the game had changed, and they were the ones holding the deck of ‘go directly to jail’ cards.”

There are some civil suits already underway in relation to the abuses at the G20 summit, but no criminal charges yet in connection with officials and organizers. Given the reluctance to hold inquiries about what was clearly misconduct, we ought not to be holding our breath for arrests.

For now, we’ve got two classaction suits in the works. One seeks $45 million for those wrongfully arrested, detained, imprisoned or held by police during the G20 summit. The other wants $115 million for those detained and arrested and business owners whose properties were vandalized.

Justice shouldn’t be left solely to the civil courts, however. Without serious consequences for those responsible for the G20 debacle, we’ll certainly see more attacks on our liberties.

What blood donors have meant to me To the Editor,  The holidays are always a special time of year. Amidst the excitement and the hustle and bustle of the season, it’s also a time to gather with your loved ones and build lasting memories.

As we head into the holiday season, one thing I often find myself thinking is how different my story could have been this year.

In March 1987, I was diagnosed with a rare blood disorder called Aplastic Anemia, which caused my bone marrow to stop producing blood. At the time a new treatment was being used called ATGAM, which was a serum that was

Pork producers find a friend in new venture Southwest Ontario Veterinary Services evolving with changes in hard-pressed industry James Jackson

T

he past four years have been a rollercoaster time for Ontario’s pork producers, who have experienced many more downs than ups as their industry has become rife with problems.

A combination of rising feed and fertilizer costs, the economic recession, the rising Canadian dollar, and the H1N1 fears of 2009 have created what some industry analysts have called the perfect storm of toxic conditions.

The situation has grown so dire that Ontario’s sow heard is down about 25 per cent — or 109,000 animals — from what it was in April 2004, according to Ontario Pork. And that is a big problem for producers in this region, as pork sales accounted for about $37.5 million in 2008.

So as the industry struggles to re-identify itself, many of the industries related to

pork – packers, transportation, even veterinary services – need to do the same, according to Dr. Martin Misener and Dr. Kevin Vilaca, two of the vets behind the area’s newest veterinary group, Southwest Ontario Veterinary Services.

“Through my career there was either slow expansion or boom expansion of the industry, but we’ve never seen the industry shrink,” said Misener, who has been a vet for 17 years. “It’s shrinking and struggling to be competitive with the United States, yet still maintain its deep-rooted family-based profile.

“It used to be that every farm you drove by would have beef and pigs, and even some of the dairy farms had pigs too. That independent small producer has disappeared to a great extent.”

That disappearance of the small, family producer is one of the reasons why Misener, along with eight other vets,

began the planning stages of Southwest Ontario Veterinary Services back in 2007, a group of vets which are solely based on servicing pig producers in, well, southwestern Ontario. They opened their doors on July 1st of this year, and are just now getting their feet under them.

“I wouldn’t necessarily call it up and running. We’ve been stumbling and skinning knees,” Misener said with a laugh. “We’re now at maybe a brisk power walk, heading towards a run.”

The concept is simple.

Southwest consists of nine vets based at four locations: St. Clements, Stratford, Ridgetown, and Listowel. It isn’t your typical veterinary office with x-ray machines, diagnostic tables, or charts on the wall, either. The sites are warehouses that store medical equipment and medicine for distribution to their customers, as well as administra-

tion services.

The group has become very specialized in pigs, and conducts on-site visits to farms with the primary focus of managing health-related issues at the farm level. They’re looking for ways to improve the production and profitability, said Misener.

Each site also contains a pharmacy for producers to come and pick up their own medical supplies for their animals, as well. Altogether, five independent veterinary businesses came together to form Southwest, which Misener notes has many benefits both for them, and their customers.

“We’re hoping that by focusing on all of our strengths, and minimizing all of our weaknesses, that as a collective we can do a whole lot more than we could as individuals."

the amount of geography that we cover,” added Vilaca.

“A traditional vet practice would cover a very short area around the base, but we will actually function out of any of our locations – we can cover southwestern Ontario and be anywhere, depending on the day.”

The business model also allows for greater flexibility for the vets, and can bring many minds together to try and solve a problem – instead of one or two vets like at a traditional office, they have nine vets to draw upon for help.

“It just makes for far more creative approaches,” noted Misener.

Overall, the group services between 1,000 and 1,500 producers, which represents approximately 200,000 sows.

– “It’s a little complicated to define because of ownership and barns,” noted Vilaca.

ivestock farmers are spending a lot of effort lobbying the government for more support for predator control, or for compensation for the kills these predators carry out. Sheep producers in particular have stories of coyote attacks on their ewes and lambs, and many say it’s getting worse.

For grain farmers, a big problem is rodents. With grain prices rising, it’s getting increasingly expensive for farmers to feed these freeloading pests, particularly mice and rats.

The Ontario Ministry of Agriculture, Food and Rural Affairs says each rat on a farm will eat, spoil or damage approximately $25 worth of grain per year. A colony of 100 rats will consume more than a tonne of feed in a year. That much feed costs farmers about $285, enough to get four pigs from the weaner stage, to market.

Farmers make nothing on pigs.

In fact, they’ve been losing piles of money on them for years. So they can hardly afford to be feeding rats.

Now, some farmers don’t want to admit they have a rodent problem.

Even though infestation can be overwhelming – a pair of rats and their offspring can produce an astronomical 20 million young in three years – the ministry says producers are reluctant to discuss rodent problems.

Simply put, “having rats” is embarrassing.

But the phenomenon, which becomes particularly noticeable in the winter when the heat-seeking rodents move indoors, is widespread. A new factsheet from the ministry, Rodent Control in Livestock and Poultry Facilities, points out more than 80 per cent of poultry and hog farms have rodent problems.

Misener – who had worked at Linwood Veterinary Services prior to Southwest – wanted to stay in the region when he was in the planning stages of the new business, which is why he chose to set up the location in St. Clements.

“To maintain some continuity with the customer base we didn’t want to just pack up and move out of the area.

This has been a fabulous area for me to practice as a veterinarian.”

As the pork industry struggles to emerge from under a cloud of uncertainty, Misener and Vilaca hope that Southwest Veterinary Services can be at the forefront of offering flexible service and help farmers meet these new and unfamiliar chal-

have to feel that way.

“Producers should not be embarrassed to admit they have a rodent problem,” says the ministry. “The probability is that mice or rats currently exist on your farm. The embarrassment and costs occur if something is not done to confront the problem.”

There’s more. Besides devouring feed, rats ruin up to 10 times more grain than they eat, contaminating it with feces, urine and hair. Plus, rodents are recognized as carriers of more than 40 serious diseases, including salmonellosis, pasteurellosis, leptospirosis, swine dysentery, trichinosis, toxoplasmosis and rabies.

And finally, they’re responsible for damaging wiring, wood and insulation. Larry Huston, a livestock and grain farmer near Thamesville, says once mice get into insulation, the R value plummets. And Canadian winters send them scurrying for someplace warm, but fairly isolated, such as a barn.

The ministry says rodent control requires an integrated pest-management strategy, and it’s not unlike the approach homeowners should take.

Populations grow when food, water and nesting sites are readily available, so the first step is to employ strategies that eliminate entry points, nesting sites, and food supplies and water. Keep them out in the first place, and you won’t have to control them. For farmers, that means rodent proofing farm buildings, reducing hiding places, and when all else fails, a population-reduction program of traps such as glue boards and baits.

Even the barn cat has a role, albeit limited.

“Cats may limit low-level mouse or rat populations,” says the ministry, “but if conditions are ideal for rodents, cats cannot eliminate a problem … cats will not be able to catch mice as quickly as they multiply.”

Rodents, similar to some insects such as cockroaches, are ubiquitous and likely eternal. But that doesn’t mean they can’t, and shouldn’t, be controlled.

“The whole industry has come together and it’s been one of the neatest things that has gone on in the past few years,” said Vilaca.

“There is a lot more unity and communication taking place, instead of working in a bubble, and saying ‘how can we try to solve this? Instead of dealing with it only on one farm, let’s do it province-wide.’”

Misener says that while some producers have found new and profitable ways of mar-

keting their products, such as niche markets like organic pork or farm-gate sales, other aspects of the industry need to change as well – including the services he and his fellow veterinarians provide.

“I’ve never seen grassroots producers come together to find solutions and look for good ideas like I have in the past four years, and it’s pretty neat to see how creative farmers can be about their own business. They’re good businessmen.”

lmira’s Kyle Uttley is a fishing fanatic.

“I wouldn’t want to say he’s obsessed, because it’s not an illness or anything,” said his father Steve with a laugh. “But he is very … passionate.”

A member of the K-W Cambridge Bass Masters Club, Uttley subscribes to six different fishing magazines, he watches the World Fishing Network any chance he gets and his bookshelves are piled high with instructional fishing DVDs. He has been known to get up at two or three in the morning to get a start on a long day of fishing.

“I have been fishing basically since I could stand,” admitted Uttley, who is now 17.

So when the opportunity arose to meet and go on a fishing trip with his fishing idol Dave Mercer, Uttley jumped at the chance. Mercer is a Canadian professional angler and the host of Uttley’s favourite television show, Facts of Fishing.

Recently, Mercer reached a milestone of 20,000 Facebook fans and to commemorate, launched a contest in which one lucky fan would be able to join him on a fishing trip.

An easy way to avoid serving dried-out turkey

R

oasting a turkey, a holiday tradition for many, is often a recipe that has been handed down from one generation to the next. This can be both a blessing (Grandma’s amazing stuffing) and a curse (overcooked, driedout turkey). Well, have the best of both worlds: use your traditional recipe, but prepare early and brine your turkey one or two days in advance.

Believe us, brining has changed our Christmas family feast ... and clients who have tried brining their turkey once won’t have it any other way.

Brining works like this: via the process of osmosis, water (or moisture), naturally moves to a less moist place. The salt actually changes the shape of the meat proteins to allow them to hold more juice than unbrined poultry. Salt actually makes each cell plump up. Brining is used mostly on lean meats, such as pork, chicken or turkey. Brining is the natural and extremely easy solution to dry meat. You can actually overcook your turkey and it will still be juicer

Here is a basic brine recipe that can be used for pork, turkey or chicken:

>>4 litres (16 cups) of water >>1 cup of kosher salt (you can buy Diamond

Crystal kosher salt, $4.99 for a large box at Vincenzo’s)

>>1/2 cup sugar (this balances the flavour) >>Optional seasoning: peppercorns, chopped rosemary or thyme, juniper berries, bay leaves, coriander seeds, garlic, and aromatic vegetables such as onion, carrot and celery, roughly chopped.

Combine all of the ingredients in a large pot and bring to a simmer, stirring to dissolve salt and sugar. Remove from heat and allow to cool to room temperature, then refrigerate until chilled (option: use half the amount of water and cool quicker by removing from heat and adding two litres of ice cubes). The amount of brine depends on how large your turkey is. The brine must cover the meat entirely. For an average 12-pound bird, we usually double this recipe.

Here are brine times: 10-15 lb turkey: 24 hours; 15+ lb turkey: 24-36 hours.

After brining, allow two hours or up to a day out of the salt (and in the refrigerator) so that it can rest to allow the salt remaining in the flesh to distribute itself evenly. Remember, brining acts as a preservative as well, so your meat or poultry will have a much longer shelf life.

A tip for large turkeys: Make your brine as usual and place in a large

clean cooler; add your turkey and top with ice, so essentially your turkey is covered in an icy brine. This solves the problem of not enough fridge space to brine your bird for 24 hours.

Once you are ready to cook your turkey, loosely stuff and roast as usual, except you will not need to season the bird with any salt. Remember to cook your turkey to 165°F (74°C), using an instant-read thermometer inserted in the thickest part of the thigh away from the bone, and then allow to rest for at least 30 minutes before carving.

Fitness: Enjoy the holidays, but keep your long-term goals in mind > CONTINUED FROM PG. 15 Tip #3: Eat before you go Do not arrive at parties on an empty stomach unless you want to end up overeating. Many times when you attend a party, the food is different from what you normally eat and you will be tempted to sample everything new that you see. Going to a holiday party with an empty stomach is like letting a child loose in a candy store. Drink a healthy protein shake before you go, or a nice big glass of ice water. There is no harm in trying new things, but making sure your tank is half full before

you go will allow you to make decisions based on your stomach and not on your eyes. You will probably still want to sample that five-cheese and salsa dip, but you won’t want to eat half the bowl.

Tip #4: Keep yourself active One of the key components to good health is exercise. We all know that, and it is more important over the holidays than any other time of year.

he Elmira Sugar Kings are sitting in the fourth place spot in the Midwestern Conference after an away-game loss and a home-game win this past week.

The team took to the road Dec. 1 to play against the Thorold Blackhawks, where they lost 4-3. They bounced back, however, to put on a show for the hometown fans with a 4-2 win against the Cambridge Winter Hawks.

The Dec. 1 game saw a feisty pair of teams match up against each other and

wrack up quite a few penalties.

The game was a close one as the points went evenly back and forth and the teams were tied up at three apiece at the end of the second period.

In the final frame however, Thorold played exceptionally, only letting the Kings get four shots on net while they managed to fire 10 – one of which was the game winner. Elmira’s Josh MacDonald had a strong game, scoring two of the Kings’ three goals. Both came on the powerplay.

> Score a goal, toss a teddy At Sunday’s Elmira Sugar Kings game, don’t be surprised if after the first goal scored the ice suddenly becomes littered with items thrown from the stands: that is the hope during the Kings’ third annual Teddy Bear Toss.

Teddy bears are to be in bags when they are tossed, and all the items will be sent to Woolwich Community Services Christmas Goodwill Program.

This year organizers are additionally collecting non-perishable items for the food drive at the game, which sees the Kings square off against the Listowel Cyclones Dec. 12. The puck drops at 2 p.m.

Mixed results at the start of Elmira bowlers claim EDSS girls’ volleyball season Zone C Triples crown Seniors bounce back from loss, but juniors still looking to find their rhythm he junior and senior girls’ volleyball teams have hit the courts once again at EDSS, with both off to a bit of a sluggish start to the year.

The senior squad has posted a 2-1 start to the season, but the junior squad has struggled, losing their first three matches to open the season.

It is a far cry from last year when both teams won their first three games coming out of the gate. The senior squad won their season opener against Waterloo-Oxford three games to one back on Nov. 30, but followed it up with a 3-0 loss to KCI on Dec. 2.

“That was a rough game last Thursday,” conceded coach Alex Derma. “It was a winnable game, but we were virtually beat by one player.”

a victory over Glenview Park on Tuesday, 3-1. The match was close, with games of 25-21, 2515, 19-25, and 25-23 for Elmira.

Derma knows that games like the one on Tuesday against fellow AAA teams are important, and that the team cannot take any of them lightly.

“Only three teams go on to CWOSSA in the AAA division, so every time you play them they are a bigger game,” he said.

Derma also believes that their strength this year is going to be the depth of his roster. He has two Grade 11s in

team of local bowlers is off to the provincial five-pin championships next month following their tournament win last weekend.

The team – Tyler Button, Aaron Arbuckle, Ben Straus, and coach Karl Jordan – won the Zone C Triples playoffs hosted by Elmira Bowl last Sunday.

The tournament consisted of three age groups – bantam (8-10), junior (11-15) and senior (16-20) – all bowling against one another in a three-game playoff scored according to “Pins-Over-Average,” or POA. Under POA rules, the bowler’s average in their league play is used as a baseline, and every pin they are over their own average is used to calculate the team’s final score.

“It’s the fairest scoring system for kids,” explained Jordan. “They just have to beat their own average. That’s why they do it that way.”

The Elmira team – whose combined average in league

play was 397 – bowled 456 in the first game, 523 in the second, and 483 in the final game to win the tournament by bowling a combined 271 pins over their average.

Jordan was proud of his entire team, but bantam player Tyler Button in particular, who bowled a whopping 189 pins over his average to lead the team to victory.

“This was his first tournament, and he was awesome.

He basically won it for us.”

It was Elmira Bowl’s turn to host the tournament this year and gave Jordan, the owner of the alley, the opportunity to show off his new synthetic lanes that were installed at the end of the summer. Jordan admits that his bowlers may have had a slight advantage over the other bowlers because of the new lanes.

“The other kids weren’t used to synthetic lanes, so that had a bit of an affect,” he said.

It’s the time of year when a man needs to get wood

I

n hindsight, this was probably the wrong sentiment to repeat to my sister as I spoke to her over the phone. I know this now.

That sentence, you see, takes on a completely different meaning to an urbanite who has never had to deal with woodstoves and the process of procuring fuel for them. Worse still, she works for a pharmaceutical company whose flagship product addresses the issue of erectile dysfunction – which, if I understand it correctly, is a psychological problem that people run into when trying to assemble any Ikea product.

Of course, I might be wrong.

The point is that there seem to be two kinds of people in this world – those who use woodstoves and those who have never had the opportunity to drop a heavy maple block on their big toe.

Well, I’m proud to say that I’ve mangled almost all my toes.

Even so, not enough is written

Not-So-Great Outdoorsman Steve Galea on how to achieve this level of success. So let’s strive for a little enlightenment, shall we?

First, let me say that, as far as I have been able to ascertain, there are two techniques of carrying in wood. The first involves walking over to the woodpile and returning with a manageable armful of wood. This is an old technique that has currently fallen out of favour in this fast-paced world.

The second method – and the one I tend to utilize – involves nervously approaching the woodpile and standing with your slipperclad feet directly below the most precarious section. There, you essentially begin a deadly game of

solid win and a near miss left Wellesley Applejacks coach Kevin Fitzpatrick with plenty to be happy about last weekend. A strong effort Dec. 3 in a 4-2 loss to Delhi was quickly followed by a convincing 6-2 victory over St. George.

by Jake Legein of the Delhi Travellers. The forward scored all four of the visiting team’s goals, to edge out the Applejacks. It took almost 30 minutes of back-and- forth play before the first goal was scored, but after Wellesley’s Michael Forster put the first marker on the board 7:55 into the second period, it was fast and furious from then on, with six more goals

before the end of the game.

“We played well together as a team,” said Fitzpatrick. “It was a close game.”

The first period was uneventful, with both teams having good power play opportunities and putting up more than 10 shots, but neither team was able to find the back of the net.

The second frame was where the crowded arena full of fans got their money’s worth with four goals scored in less than seven minutes – two by each side – keeping the game tied going into the third period. The line of Shawn Fitzpatrick, Corey Way, and Michael Forster came alive this period, with all three players contributing to both of Wellesley’s goals.

Jenga as you slowly remove block after block until you have a) caused a massive collapse of the pile that pins you for 127 hours or b) loaded your arms up so high that you cannot actually see where you are going and walk into a standing tree.

Either way, your toes are going to get it.

These days, I happen to be dealing with a particularly devious pile of wood, harvested, I’m guessing, out of some evil, magical forest.

The blocks from that pile actually lull me into a false sense of security until I feel in control and completely comfortable stopping at the door in order to take my shoes off.

All the while, I’m still desperately clinging on to the wood that I’ve liberated from the pile. That’s when one or more of those heavy chunks will decide to make a break for it.

You can’t blame them really. They know that they are headed to the woodstove. They understand that their chances of escape are slim to

none – even against someone, such as myself, whose IQ is relatively similar. That’s why they try to incapacitate me by destroying my big toe. It’s pure revenge, really.

They do this by hitching a ride on gravity and striking with blinding speed and deadly force. Usually, the sharpest corner leads.

If you really think about it from their perspective, this is the best strategy. If it works as planned, I concede defeat and take them back to the woodpile where they can live out the rest of their days in rustic peace. Even if it doesn’t, I will be slower in returning to the woodpile and rounding up their friends. At the very least, they can go to their demise, content in the knowledge that their bark is as good as their bite.

Let’s face it, if they take me out or merely condition me to fear their kind, I will probably turn to alternate sources of heat, like solar for instance – and get sunburned.

Yet, with only four shots on net by the Travellers, the evening’s star player, Legein, was able to add two more to cap a fourgoal night. With time running down, Wellesley was not able to tie it up before the buzzer sounded.

“We have a number of players out with injuries at the moment,” said Fitzpatrick. “But even with the really de-

pleted lineup we played really well. Everyone came out and worked hard.”

The following night, the Jacks travelled to St. George where that hard work eventually paid off.

They began the game on a strong note with a goal by Shawn Fitzpatrick on the power play just under five minutes into the period. Later, Eric Parr replied shortly after. St. George notched a goal of their own before the they headed back into the dressing room with Wellesley up 2-1.

During the second

period the team got frustrated by an inability to reach the back of the net, Fitzpatrick said of the frame in which only the Dukes were able to score a goal.

“We got out of that funk pretty quickly though, and we just ran with it from there."

It was all Jacks in the third, however, starting with Lewtas bulging the twine just 28 seconds in, assisted by Eric Parr and Matt Aspden.

The string of unanswered goals continued just a minute later, as Josh Herd scored one from Mark Hamilton and Justin Milne.

Wellesley kept the 4-2 lead into the final minute, when an emptynetter by Jake Steenson at 19:17 was followed by Ben Ahier potting one just seven seconds later.

Both goals were unassisted.

“It was an all-around 60 minutes of good effort,” said Fitzpatrick.

“Everyone came out and worked hard and we had good goaltending. I am happy with how the weekend went.”

Last weekend’s games put Wellesley in third place in the McConnell Conference. The Jacks play again on home ice Dec. 18 at 7:30 p.m.

After losing one of their best players from last season, second team all-star Jess Martin, as well as several other key players, Derma said his team is going to have to fight and scrape for every point.

“We need them to play gritty, gritty ball and to work for every point. Being able to get to every ball has to be our game plan.”

The junior squad hasn’t had the start to the season that they were hoping for. They were shut out three games to none in their season opener on Nov.

Nearly half the team is made up of Grade 9 students. He said the Grade 10s have shown great leadership in showing the younger players the ropes of high school volleyball.

and Glenview Park could have gone either way, as well. The scores of the KCI game were 25-23, 25-20, 19-25, 25-16 while their loss to Glenview was even closer, 2519, 25-21, 19-25, 25-20.

In volleyball one key play can change the entire momentum of a game, and some of the team’s early losses this season could be chalked up to the inexperience due to so many young players in the starting lineup.

“They pass really well, and move around the court really well, they just need to develop that killer instinct to be more successful,” said Meisner.

“I thought we played really well in Thorold,” said Kings coach Geoff Haddaway. “They are one of the top teams in the province and they have an excellent record at home. I think our problem was that we didn’t have that killer instinct. We were ahead there for a bit but if you don’t keep your foot on a team like Thorold in their own barn, it will come back to haunt you, and it did.”

The Kings turned themselves around and were the domi-

nant team at home last Sunday against Cambridge. It was simply a matter of time before they were able to pull ahead on the scoreboard. In the game that ended in a 4-2 win, Elmira finished with almost 40 shots on net, a hefty margin over Cambridge’s 23.

The King’s success was a full-team affair with each goal scored by a different player and excellent goaltending by netminder Matthew Smith.

The game got off to a bit of a slow start with only one goal scored

by Sugar King Clayton Greer just past the half-way point of the first frame. Both teams kept the period a clean one with only one pen-

alty apiece.

In the second period, Elmira continued to be the better team, allowing for more scoring opportunities, more shots, more puck possession – yet they left the period with a onegoal difference. Elmira’s Andrew Smith scored the Kings’ second goal 10 minutes in with a shot from the slot, but his effort was followed shortly by a nice one-timer by Cambridge’s Jeff Howlett.

The third frame saw the Kings keep the pressure on, with great fore-checking and back-checking that led to a pair of goals.

Both tallies came as a result of great effort to steal the puck, creating odd-man rushes

Despite working on the show for months now, she’s enjoying the yuletide feeling that’s been building this past week as the preparations come to a head. The snow has helped.

Sunday service takes on a classical Christmas twist

Drawing on its congregation, St. Jacobs Mennonite Church will perform Handel’s Messiah on Dec. 19. he Sunday before Christmas will be a regular worship service at St. Jacobs Mennonite Church. Well, except for a rousing rendition of Handel’s Messiah performed by a choir of more than 50 voices.

This is no simple concert, however, as the performance will take place as part of the Sunday service.

It’s an opportunity to bring

he walls of St. Teresa School in Elmira were covered with student artwork this week, but instead of the traditional Christmas trees and angel drawings, the posters shared a different message. Almost three dozen drawings hung on the walls with messages about substance abuse, each an entry in the eighth annual Knight’s of Columbus Substance Abuse Poster Contest, which wrapped up Dec. 6.

“With more and more encouragement of the use and drugs and alcohol, it is even more important for kids to be aware of the dangers and to stay away,” said Knights of Columbus member Matthew Griffin.

The students were given two months to prepare their art work and their posters were judged at an art fair by guest judges Guy Wakutz, Grand Knight of Council 8192 in Elmira, Waterloo Regional Police constable Adam Bott and Woolwich Mayor Todd Cowan. Three winners were chosen, based on age category and whether the poster submitted was focused on either alcohol or drugs.

The winners were Claire Hanley, 13, in the Alcohol Awareness 12-14 division; Kayla Mullen, 9, Drug Awareness 8-11 division; and Matthew Anstett, 13, Drug Awareness 12-14 division.

Each of the winners received a 1st place medallion, a certificate and a $30 cash prize.

ANIMAL CONTROL BY-LAW 75-2006

The Council of the Township of Woolwich passed an Animal Control By-law on November 14, 2006. The following are key points for dog owners:

• Every owner of a dog must license and register such dog with the Township of Woolwich

by April 15th or within 21 days of becoming the owner of a dog.

• The tag must be attached to the dog any time that it is off the property of the owner.

• All dogs must have a current rabies vaccination and the appropriate documentation showing proof of vaccination.

• At any time that a dog is off the owners property it must be leashed and under the control of a responsible person.

• The owner of a dog or person in control of a dog except a Guide Dog must remove and dispose of in sanitary manner excrement left by the dog anywhere in the Township.

• No person may keep more then three (3) dogs on one property without a kennel license.

•The owner of a dog shall not permit such dog to make any clearly audible noise which is likely to disturb the inhabitants of the Township.

The by-law also includes regulations for kennel operations and fines for all offences.
