Wines Of Turkey The Kavaklıdere Winery. Turkey's first and oldest private sector wine producer and was established in Ankara in 1929 by Cenap And. It has continuously progressed over the years to become Turkey's preeminent wine producer. The Winery, celebrating its 80th anniversary by 2009, has been carrying on wine production in Ankara-Akyurt Plant since 1987 and Nevşehir-Kapadokya Plant since 2003. Kavaklıdere is proud to have a product range consisting of 31 different kinds of wines. Through the principle of producing "Anatolian Wine from Anatolian Grapes" Kavaklıdere Winery has taken it upon itself to promote indigenous noble and new grape varieties suitable for wine production, and has won more than 400 medals in domestic and international competitions in 80 years. The winery follows a mission of “consistent and high qualified standard” by improving its technology, increasing its production and the supporting the vineyard owners theoretically and technically. Kavaklıdere Winery, in addition to rank at top as a wine producer, leads the way in national cultural activities as well. Sparkling Wine The story of Turkish wines Poised on the border between Europe and Asia and arguably part of the cradle of civilization, Turkey boasts a rich and ancient history ... and a key role in the early history of wine. Then called Anatolia, Turkey was home to cultivated vineyards and a commercial wine industry as far back as 6,000 years ago. Producers are in areas of the Marmara, Aegean Coast, Northeast (Narince, Tokat), Southeast (Öküzgözü, Bogazkere), Gallipoli (Bordeaux styles). Turkish Wines took a leap forward in the early 90's when imported Chardonnay, Sauvignon Blanc, Cabernet Sauvignon and Merlot from French vineyards. The Sarafin winery planted these in the Gallipoli Peninsula on of the Aegean Sea - the shores of Saros Bay to be exact - land which had been used for viticulture for hundreds of years. Winemaking history began in the geographical area where Turkey stands today. The oldest remains relating to winemaking suggest the land between Thrace and the Caucasian mountains was the site of the earliest winemaking. However, since those days wine culture has taken root in Europe and then moved on to the New World without returning to its home for a very long time. Wine-lovers in Europe and the New World have refined their choices and narrowed down a selected list of ''Noble Grapes'', and they have enjoyed these superb wines for centuries Turkey also brought the latest New World technology and waited for several years for the vineyards to mature, dreaming of the wines we would make.

Altın Köpük (Sparkling) Is the only natural sparkling wine in Turkey, is made of selected Emir grapes from the Cappadocian region. As a "Cuve Close" method, sugar and yeast are added to the wine for a second time, and the carbon dioxide, which makes the wine sparkling, is formed "naturally" during this second fermentation process. To obtain a fine and elegant foam, and a combination of fresh and dried fruit flavors, we keep the wine at least six months in the "cuve". Due to this process, Altın Köpük is a supreme natural sparkling wine, which emphasizes the meaning of celebrations as well as an excellent aperitif. Best when consumed at 6 degrees C.

Côte d'Avanos Sauvignon Blanc Produced with Sauvignon Blanc grown in Cappadocia using 'elevage sur lies' method. This wine is bright with pale gold and green tints to the eye, with citrus fruits, lichie and floral aromas. The palate is rich flavoured and creamy with good structure and balance, the finish is long and elegant. Grape: 100% Sauvignon Blanc Region: Cappodocia Viticulture: 30hl/ha yield. Harvested early in the morning by hand at maximum maturity. Vinification: Gravity flow method, fermentation in tempreature controlled stainless steel tanks. 'elevage sur lies' method (keeping the wine with the lees). Closure: Natural Cork Serving recommendation: A great match with oysters, scallops and other seashells, tartare sauced fishes, sea food linguini and goats cheese. Serve at 10 -12 Degrees C Jancis Robinson's tasting notes: Kavaklidere, Côte d'Avanos Sauvignon Blanc 2006 tasted in 2009. Though the varietal aroma seemed less marked than when I first tasted it this wine has an admirably sleek texture and attractive balance. Quite long. Good balane. Probably best drunk young.

Öküzgözü (Red). The grapes come from the Elazığ province, located on the Anatolian plateau at the north of the Taurus Mountains. The various sources of the Euphrates River in this region soften the normally harsh climate of Eastern Turkey. After aging in French oak barrels for 12 months, this wine reveals intense fruity flavors of raspberry and cherry mixed with an elegant "boisé". After two years in the winery, it has developed a very well balanced body with light tannins and reveals its "bouquet" after 4 years; it can age for up to 10 years. Öküzgözü is best served at 16-18 degrees C and is a perfect match with different dishes served with a cheese sauce, casseroles, red meat, grills, cheese and poultry.

Narince (White). Narince grapes are grown in three different vineyard regions along the Yeşilirmak River; Namely, Erbaa, Niksar and Tokat. The microclimate is milder than that of the Central Anatolian region because the mountains eparating the Black Sea and the plateau localize the weather. The soil is sandy or gravelly, which bestows a suitable environment for producing grapes for making supreme wine. Narince produces a wine that develops its own flavours after one year. It is the only local white wine that can be aged in oak barrels, because of its complexity of aroma and well-structured body. The developed bouquet of mature fruit flavours combined with fine oak flavours can easily last for four or five years. Due to its complex structure, it is a good match for starters and seafood in sauce and poultry. It is best when consumed at 8-10 degrees C.

Boğazkere (Red). The grapes come from a district named Çermik located at the northern part of the upper Mesopotamia plateau where the sources for the Tigris river reach the Taurus mountains. The milder temperatures here combined with a hot summer climate create very suitable conditions for producing dark red rich grapes. After aging in French oak barrels for 12 months, we get an elegant "Boise" besides fruity and spicy flavors. This remarkable and strong wine is stored for two years in the winery, but it can be aged for at least ten years and it is recommended to wait at least five or six years to get the "bouquet" and to soften the tannins. This wine is best served at 16-18 degrees C and it is a very good match with rich dishes of red meat.

Kalecik Karasi (Red). This developed wine is a result of extensive research into the viniculture and vinification of this grape. It is cultivated in the Central Anatolia region, close to the Kızılırmak River (in ancient times, this river "Halys" was an Important frontier between Asia and the Aegean region). The vineyard benefits from the microclimate of Kızılırmak, which is milder than the continental climate of Central Anatolia. This special prestige wine is complex, elegant, well-balanced, and has a lasting and charming aroma of red fruit. It can be aged for up to ten years. It is best served at 16-18 degrees C and it is a good match with any kind of red meat, poultry, cheese, and especially Chateaubriand.

Egeo Sauvignon Blanc, produced from the noble white grape variety “Sauvignon Blanc”, is delicious and long on the palate with herbaceous, mineral and citrus aromas. This new white wine of “Egeo” brand has a distinctive strong character due to its balance of high acidity with complex and rich flavours. It is best when served at 6-8° C and perfectly matches with grilled sea bass, shellfishes, sushi, sea food taglietelle and chicken with lemon. Egeo Cabernet Sauvignon is produced from Cabernet Sauvignon, considered as noble red grape variety for world wine production due to its high potential of quality and strong aroma character. This wine develops in bottle after being matured in French oak barrels for 12 months and it reaches a rich bouquet and becomes well- balanced. Yakut (Red). Made from Boğazkere, Öküzgözü and Carignan grapes, is a very pleasant and remarkably dry red wine. It is the best-selling red wine of Turkey. It is ruby red, rather bulky, light-bodied, broad and refreshing. It should be consumed between two and four years after production. It is a good match with any kind of meal with meat, and all kind of cheese except cheese with herb or fresh cheese. It is best when consumed at 16-18 degrees C.

Cankaya (White). It is the best-selling wine in Turkey. Çankaya, a blend of four different grapes from Anatolia, is a light-colored, elegant, full-bodied, and very fresh wine. It needs to be consumed within two years. It is best when consumed at 6-8 degrees C. It matches well with all seafood, fish, chicken, and all kind of cheese and it can also be taken as a full flavored aperitif.

Lal (Rose). Lal is produced from Çalkarasi grapes from the dry plateau of Denizli. As the grape is not particularly dark in colour, the juice is macerated for 24 hours. Then the fermentation is controlled at 18 degrees C, giving a lovely flavour of red fruit, especially strawberry. Due to the peculiarities of the soil and climate, there is a high natural acidity in the wine, which bestows very enjoyable freshness. It is best consumed within two years, at 6-8 degrees C.

Angora (Red). Angora Red which is made from Cabernet Sauvignon, Gamay and Cinsault grapes from the Aegean and Thracian region has a lively red colour and is praised by wine lovers as being a well-balanced, bodied, lightly spicy, fruity, long and fresh wine. It is best consumed within 2-3 years after bottling. It is a good match with any kind of red or white meat, and all kind of cheese other than cheese with herb or fresh white cheese.

Angora (White). The Sultana grape is usually consumed as desert grapes or as raisins, also produces a very pleasant fresh wine, Angora white. The strong fruity flavors of this grape appear in the wine very elegantly thanks to the climate of Denizli Region - a dry plateau at the junction of the Mediterranean and Central Anatolia. We advise you to consume Angora within two years to get the maximum intensity of the fruit combined with a good balance and freshness. It is best when consumed at 6-8 degrees C. It goes well with any seafood, and it can be consumed at any hour of the day with appetizers, or as an aperitif.

Rosato Rose Rosato is made from Çalkaası grapes from the dry plateau of Denizli. Compared to the average life of two years for an ordinary dry rosé wine, the ripeness of the Çalkarası grapes gives this wine a good concentration of flavours and richness that allow Rosato to age for up to four years. This wine has a dark pink colour, and an intense fruity aroma, especially strawberry. It has a good balance between sweet and acid that keeps its freshness during aging. It is best when served at 4-6 degrees C. Rosato is a good match with pasta, pizza, exotic and hot foods, fruit and pastry.


Karma Gamay - Bogazkere The unique aromatic qualities of the strong, full-bodied and tannic Bogazkere grape varietal, which embodies the soil and climate character of the Diyarbakır region in its spicy nature, renders the Gamay-Bogazkere coupage full-bodied and suitable for aging. In return, the Gamay grape varietal, with its distinct fruity character and lightness, balances the strongly tannic Boğazkere. The resulting Karma Gamay-Bogazkere is aged in 225 lt. French oak barrels for a period of 10 months to attain a complex yet smooth structure. With its full and fruity aftertaste, the Karma Gamay-Bogazkere invokes the aromas of blueberry, damson plum and toasted bread. Recommended with Plain / smoked / spicy cheeses, grilled red meat specialties, pizza, pasta dishes with meat and mushroom. Grape: Gamay, Bogazkere Region: Thrace, South eastern Anatolia. Storage recommendations: 6 -7 years following the vintage date under ideal storage conditions. Serving Tempreture: 16-18 °C Decanting 30 minutes prior to consumption is recommended. Karma Merlot - Bogazkere The Merlot grape variety, with its smooth, velvety flavor and fruity character, adds richness and smoothness to Karma Merlot-Bogazkere wine. On the other hand, the strong, full-bodied and tannic Bogazkere variety, reflecting the specific soil and climate conditions of the Diyarbakır region through its spicy character, delivers its unique aromatic qualities in Karma Merlot-Bogazkere. After 12 months of aging in 225 lt. French oak barrels, the wine stands out with its rich, smooth and fruity nature. The Karma Merlot-Bogazkere invokes the aromas of cherry, raspberry, cloves and violets. These two grapes of strong character complement one another and lend bouquets that strengthen by aging, and thus yield a balanced combination. Karma Shiraz-Bogazkere Karma Shiraz-Boğazkere is an immaculate blend of Shiraz and Boğazkere varietals. Originating from the city of Shiraz in Iran and cultivated in the Denizli Region of Turkey, the Shiraz varietal is renowned for its tannic, powerful and fruity wines. Reflecting its terroir characteristics, South eastern Anatolian Boğazkere varietal contributes to Karma Shiraz-Boğazkere with its full-bodied structure and spicy flavours. This wine is aged for 12 months in both French and American oak barrels, and ıt has a dark ruby colour as a result of long maceration. With its powerful structure and long finish, Karma Shiraz-Boğazkere invokes the aromas of vanilla, coffee, roasted hazelnut, dried plum and chocolate . SARAfIN took a leap forward in the early 90's when we thought "why not grow these noble grape varieties in the noble lands of wine-making?" They imported Chardonnay, Sauvignon Blanc, Cabernet Sauvignon and Merlot from French vineyards and planted them in the Gallipoli Peninsula on the shores of the Aegean Sea - the shores of Saros Bay to be exact - land which had been used for viticulture for hundreds of years. They also brought the latest New World technology and waited for several years for the vineyards to mature, dreaming of the wines they would make. In 1996 we produced our first wine and tasted that and subsequent vintages with great excitement. Their first wine went on sale in 1998. They knew that obtaining landmark quality in these varietals takes time, patience and understanding. Their patience was proved in the time we took to fully develop our vineyards. With hope our time and effort, and subsequent results, would lead the way for other similar ventures in Turkey and they feel proud to have initiated such a drive forward.

SARAfIN Sauvignon (White) Quickly adapting to its environment in Saroz region, Sauvignon Blanc reflects the regions climatic and soil characteristics to its taste very successfully. To preserve the unique characteristics, grapes get transferred to Doluca premises with specially cooled frigorific trucks. With its live and cooling fruity flavor, SARAfIN Sauvignon Blanc gives out various senses of flavors ranging from green apple, green plum to fresh green herbs.

SARAfIN Cabernet Sauvignon (Red) A varietal, which is made from % 100 Cabernet Sauvignon and aged in French oak barriques of 225 litres for 18 months, SARAfIN Cabernet Sauvignon has a full-body, complex bouquet and smooth texture. With a higher than average alcohol content, which is desired in Cabernet Sauvignons, Sarafin Cabernet Sauvignon could also be aged for a number of years.

SARAfIN Chardonnay (White) Ready for wine lovers. SARAfIN Chardonnay vineyard, only 1.5 hours away from Doluca premises is one of the strongest assets of SARAfIN project. Regardless of this close distance, still, all Chardonnay grapes are transported in frigorific trucks. To preserve its mild character, the Chardonnay grapes are crushed very gently. The malolactic fermentation that is normally used for red wines, were applied to Chardonnay grapes, which results in a wine with a “buttery� flavor. This flavor combined with the sophistication generated from aging for12 months in French Oak barrels, SARAfIN Chardonnay 2003 will last long on your palate.

SARAfIN Merlot (Red) A later addition to the Sarafin vineyards, Merlot has shown itself to be ideally suited to the Saros region. The gentle sea breezes cool the vineyard enabling the Merlot grapes to linger on the vine developing their own unique softness and giving a rich, fruity and long lasting flavour to their wine. Sarafin Merlot is aged for 12 months in small French oak barrels and the resulting wine is velvety smooth in character with a complex vanillary bouquet.


KAV (SPECIAL RESERVE) BOĞAZKEREÖKÜZGÖZÜ Kav Boğazkere-Öküzgözü is an immaculate blend of robust, tannic Boğazkere grapes from Southeastern Anatolia with Öküzgözü grapes from Eastern Anatolia that have a unique aroma and a crisp, fruity character. Kav is aged for 12 months in 225 lt. French oak barrels and is kept in bottles for two more years in order to attain its characteristic full body, rich bouquet and unique taste. With its long finish and powerful, tannic structure Kav Boğazkere-Öküzgözü invokes the aromas of clove, cinnamon, red fruits, violets and oak. Barrel aging 12 months in 225 lt. DLC CABERNET SAUVIGNON-MERLOT Cabernet Sauvignon, a world famous noble varietal, is known as “the king of red grapes”. DLC SHIRAZ DLC Shiraz emphasizes the unique characteristics of the Shiraz varietal, renowned for its tannic, powerful and fruity wines. Originally coming from the city of Shiraz in Iran, Shiraz grapes are cultivated in Denizli Region of Turkey. In order to express and preserve the delicate nuances of the varietal, the wine is oak aged for only 4 months. Powerful, balanced, and full bodied DLC Shiraz invokes the aromas of damson plum, raspberry and spices.

DLC KALECİK KARASI DLC Kalecik Karası emphasizes the unique characteristics of Kalecik Karası grapes, especially the fruitiness of this varietal, one of the favorites among Anatolian grapes, generally cultivated in the environs of Ankara Kızılırmak. This indigenous varietal yields easy to drink, smooth, medium bodied and fruity wines. The most aromatic wine of the DLC Series, DLC Kalecik Karası invokes the aromas and tastes of fig, rose and strawberry.

DLC SULTANİYE-EMİR DLC Sultaniye-Emir is an aromatic, crisp, smooth dry wine, acquiring its pleasant aroma from fruity, but acidulous Sultaniye grapes and its structure and strength from Cappadocian Emir grapes. To reflect the fruity characteristics of the varietals at their maximum, during the production of this wine the grapes were not exposed to the full pressing process and only the free-run juice was fermented. The smoothest wine of the DLC Series, DLC Sultaniye-Emir invokes green apple and tangerine aromas.

DLC BOĞAZKERE DLC Bogazkere is a rich and juicy blend of robust, tannic Boğazkere grapes from South eastern Anatolia and fruity and relatively less tannic Boğazkere grapes from Denizli region. In order to express and preserve the delicate nuances of the varietals‖ fruitiness, DLC Boğazkere is aged for 4 months in 225 lt. French oak barrels. DLC Boğazkere with its fruity and rich taste invokes dried plum, dried fruit pulp, and ripe cherry aromas.


ANTİK (RED) Antik Red is a luscious blend of three different varietals; acquiring its long finish and tannic structure from Boğazkere, it‖s powerful and rich aroma from Shiraz, and its fruity taste from Gamay. It is aged in our cellars for two years upon completing 8 months in French oak barrels to attain its characteristic rich bouquet, dark color and long finish. Buzbag Reserve (Red) This special wine is produced from the most eligible Öküzgözü and Boğazkere grapes grown in Anatolia. Owing to the “production in place” approach deriving from the Terroir philosophy and the high tannin content, it can be aged up to 15 years under convenient conditions. It is a full bodied wine with a long finish, leaving blackberry, cinnamon, dark chocolate, caramel, tobacco and fennel aromas on nose and plum, pomegranate and sour cherry flavours on front palate. Varieties: Öküzgözü, Boğazkere Produced at: Elazığ Wine Production Facility Alcohol Content: 13,5 % Service and Storage Recommendations: Suits best with spicy dishes, dishes dressed with tomato, heavy meat with sauce, fatty and hard cheese. While their roots imbue each grape with a rich and unique flavor, the grapes are caressed, ripened and made redolent by the sun, the wind and the rain. Kayra Imperial is a special wine that transforms the very finest of each year‖s harvest into wines designed for the true wine-lover. And who knows next year which grape will provide the richest and most enticing harvest, offering wine-lovers a unique enological experience… Kayra Imperial 2005 is a limited edition vintage, only 15 barrels selected from the finest, carefully selected Shiraz grapes. This limited production of Kayra Vintage series is created by the direct fermentation of Chardonnay grapes in oak barrels.Barrel fermentation provides a graceful entagration of barrel aromas with Chardonnay grapes and leads to a much balanced character of wine. Rich and creamy mouth filling texture is brought on by Sur Lies ageing and weekly battonage. Balanced acidity birghtens the spice and fruit essence and lingering oak tones finally finishing off with a quarry of minerality. Please enjoy this barrel fermented Chardonnay wine structured by Sur Lies ageing.

After the dry winter of 2006 the heat of August and September of 2007 ripened the Cabernet Sauvignon and Merlot to the extreme… A study of maturity presented in every bottle and a deep dark pool of concentrated fruit. Richness without heaviness, depth without being cloying. Lively wine, crisp acidity full of joy that matches with almost any dining experience.

KAYRA VINTAGE MERLOT Gem quality garnet red. Seductive aromas of a violet garden after a spring rain, black current and bay leaf jam Heady cassis with background notes of tar, procuitto, truffle and green peppercorn. A fireworks display of flavours, sweet concentrated fruits fill the senses of current, ripe figs, black cherries and summer plums. Complexing the fruits are hints of dried herb, toasty coconut and the lasting flavour of a fine Cuban cigar on the table next to a comfy old wingback. Palate covering texture, chewy silky supple tannin and lively acidity round out the wine. A fine example of what merlot can be, rich, supple, intriguing and captures my interest.

Terra Öküzgözü-Boğazkere Produced from the most harmonious grapes of Anatolia, Terra ÖküzgözüBoğazkere is an aromatic, full-bodied wine with a great concentration of red fruits flavours with rounded tannins from Boğazkere.

Buzbag (White) The legendary Buzbağ, born on the fertile soils of Anatolia, has finally found a matching partner: Buzbağ Beyaz, which is perfect choice for those who prefer white wine, with its strong body, complexity, rich flavor and pleasant taste. Buzbağ Beyaz, produced from the most outstanding Sauvignon Blanc, Chardonnay, Sultaniye and Emir grapes, is rested in French oak barrels for a period of 4 months before release. It has a strong character which balances Buzbağ Kırmızı. This special wine bears mango, kiwi, green apple, pineapple aromas on nose and vanilla and mocha flavours on the palate. TASTING THE WINE: Professional wine tasting is a serious activity which requires skill, experience and education. However, every wine-lover needs at least a minimum know-how in wine tasting in order to maximise the palate and wine pleasure. The tasting process will be your most important tool in determining the quality of your relation with a new wine. Tasting as many wines as possible will help to discover one‖s own flavour profile. During tasting, wines are observed by three senses and finally an evaluation is made. This observation consists of the following steps. The Appearance: The first step is also called as “visual inspection”. A small amount of wine is poured into the wine glass which will then be held inclined over a white background. Then the color, tint, clarity and brightness of the wine are observed while checking the sediments. The visual inspection is done by looking through the sides towards the middle part of the wine, the plurality of the tints in a wine can be considered as sign of quality and aptitude to ageing. The cloudiness indicates defects sourced by the production of the wine. Meanwhile the existence of sediments does not always suggest faults in a wine. The Aromas: The second step is the inspection of the effects that wine evokes on the nose. The most efficient sensual effect that indicates faults or qualities in a wine is the smell. The smells that the young wines bear are called as “aromas” as the smells of the aged ones are referred as “bouquet”. The fruit and flower aromas that can be found in wines are the characteristical aromas that come from the grapes. These aromas vary from one wine to another depending on the grape variety used in production. Additionally some processes of wine production contribute to the flavours a wine can bear. For instance, the malolactic fermentation adds a buttery flavour, as the ageing in oak gives aromas as vanilla, cedar and cloves. Under any circumstance, the human nose distinguishes first the bed smells. This goes the same for the wines: we first sense the unpleasant ragrances. The disturbing smells usually suggest faults in a wine. These include glue, burned matches, wet cloth, rotten egg smells. On the contrary, some fragrances, which can be found in aged wines and can evoke negative images at first (such as horse sweat, hay and leather), do not indicate any deficiency. As the 95% of the wines are produced as table wines and for immediate consummation, it is not very often that one meets this kind of fragrances. The Effects on your Palate: Once the appearance and aromas are inspected, the next step is to observe the effects that the wine evokes on the palate. For this, a big gulp of wine is taken. This gulp should not fill the mouth completely but should be sufficient to cover the whole tongue. The wine taken into the mouth is first “weighed” by the tongue. The feeling that the wine gives on the tongue is called the “body” of the wine. If the density of the wine is close to that of water, then it is a light bodied wine. As the feeling approaches that of e.g. oil olive, then the wine can be described as “full bodied wine.” Components such as acid, tannins and sugar are also evaluated. According to the intensity of these elements, the wine is described as soft or rough, pungent or round, bitter, sour or sweet. Finally, in order to complete the inspection at nose, the aromas of the wine are examined in the mouth. For this, the mouth is slightly parted and some air is sucked without swallowing the wine and the aromas are analyzed. The feeling that the wine leaves in the mouth after swallowing is named as “the finish” of the wine. Although it is described at the conclusion part, this aspect is also inspected on the palate. The Conclusion: Once all the steps are completed, we should decide whether the characteristics of the wine are well-balanced or not. Are the fruit, acidity, alcohol content and tannin balanced or do some characteristics dominate? If there is a balance, then the wine is considered as a balanced wine. The efficiency of the wine on the palate, after the swallowing, is measured by the lastingness of the fruit and flavours. The wines whose effects last more than 45 seconds are considered as wines “with a long finish”. These are quality wines. Those who last between 15-30 seconds have medium finish and those that last less than 15 seconds have a short finish. STORING WINES: 98% of the wines are consumed immediately after production, without being aged. In general white wines are not aged. The reds are aged more often, but still there are some exceptions, such as Chardonnay from Bourgogne, Chablis, Mersault, Sauternes from France, Tokaji from Hungary that are affected by noble rot, late harvest Rieslings from France and Germany and Icewines from Canada and Germany. The ageing period and the period before bottling when the wine is rested in oak barrels do not have the same objectives and same effects. Although there are some wines that are kept in barrels for long periods from bottling, this process is not called as ageing. The wines are aged in bottles.

Tekirdağ Rakı The story of Tekirdağ Rakı begins with the grape and aniseed that is used in its production arriving at the distillery. After the fresh grapes and raisins are cut into pieces in the cutting machines they are placed in tanks with water, and şıra, the grape juice, is prepared. Pure yeast is added to the şıra placed in tanks to start alcoholic fermentation. This process produces the ―suma', which carries the unique aroma of grapes which have been distilled until the alcohol content is 94,5 %. The mixture is then placed in traditional five thousand litre copper alembics and aniseed with high essential oil content is added, the quantity of which is determined by the oil content. The next stage is the isolation of the mid-product, which has the ideal softness and drinking characteristics. The rakı experts of Mey remove the head and tail product at just the right levels, and, following a second distillation, place the mid-product in ―Raki‖ - The Water Of Life oak barrels to rest. The spirits, born in the Anatolian lands, had been spread to other regions of the world and varied with the new production techniques. The distilled alcohol, once called “the water of life”, had been used in medicine and the spirits had become widespread in the Europe and the alcohol had started to gain a commercial value with the starting of 13th century.

In his book of travel, Evliya Chelebi had mentioned about 100 spirits workshops around today‖s Istanbul Galata and written “Diyar-ı rum-u gezdim, tarçınlı, naneli, ballı ve muzlu rakılar içtim.” (I have travelled the lands of the Roman Empire and drank cinnamon, mint, honey and banana rakis.). According to the researches, the spirits produced in the Anatolian lands and known as Turkish Raki dates back to at least 300 hundred years. During the Ottoman times, the spirits had been subjected to practices similar to tobacco products in terms of tax arrangements and had been a source of income frequently used during the financial crisis times or for the payment of the debts.

Altinbaş Raki (50% abv) Since 1967, Altinbaş Raki has been produced by using the highest quality grapes, aniseed and soft drinking water brought from the heart of alembic. Its taste comes from the high quality grapes used, the high alcohol degree of 50% and its drinking pleasure from the deep and nice conversations at raki tables. Although it has a higher alcohol degree compared to other raki brands, it has a characteristic which allows matching raki and food easy. Without losing anything from the experience and quality by years, with its renewed bottle, Altinbaş Raki continues to be the indispensable drink of those who know well where quality comes from.


Raki Yeni Raki. With the strength created by its centuries old history on the Anatolian soil it was born on, rakı continues to be the main drink of our dinner tables and entertainment life. Everyday, rakı is the guest of countless dinner tables in all quarters of Turkey and as the symbol of our entertainment culture and the wealth of our cuisine; it is also loved by foreigners who visit Turkey. Yeni Rakı is lot more than just a brand; in the eyes of its consumers it has earned a position synonymous with rakı itself. One of the most loved and consumed beverages of Turkey; Yeni Rakı has become an irreplaceable part of our entertainment and eating culture. Turkish Rakı is produced by distilling suma which has been mixed only with grape distillate or agricultural ethyl alcohol twice, in traditional copper alembics of 5000 lt volume or less, with aniseed that contains a high percentage of essential oil. With suma processed in seven different distilleries, an aromatic richness the twenty different types of grapes in its composition produce and the scent of green aniseed, Yeni Rakı has a unique taste. To manufacture suma, both fresh grapes and raisins are used. The 70cl 35cl 20cl 5cl main difference of Turkish rakı in taste and palate from the rakı produced in other countries derives from the aniseed that is used. In rakı produced by Tekel in the past and now Mey, and especially in Yeni Rakı, only aniseed grown in Western Anatolia which contains a high percentage of essential oil is used. In Yeni Rakı, 65 % of the alcohol comes from grape-based suma. It is very important to drink Yeni Rakı cold, which has a 45 % alcohol volume. . Rakı may be drunk straight, but the great majority of rakı drinkers prefer to drink it by adding cold water. As in the past, both with its palate and taste which is greatly appreciated by consumers and with the richness and depth of its cultural significance, Yeni Rakı continues to be one of the strongest symbols of social life in Turkey as one of the most consumed and most loved beverages of Turkey.
