t is hard to imagine that a decade has passed since Wynyard Hall opened as a luxury country house hotel. What started out as an untried wedding venue with a handful of guest bedrooms within a Georgian stately home has matured into one of the UK’s top hotels. There are now 19 bespoke bedrooms, five cottages with hot tubs, a two AA rosette fine-dining restaurant, an award-winning spa, and conference, banqueting and exhibition facilities. The Gardens and Parkland have been restored to create a fabulous visitor attraction. There’s an edible garden supplying home-grown produce to the hotel restaurant and the purpose-built farm shop and café filled with artisan and local foods and gifts. The Glasshouse boasts a luxury homeware and gift collection.

It is amazing to think all this has been achieved in just 10 years thanks to the vision of Wynyard Hall’s managing director, Allison Antonopoulos, and her father, Sir John Hall, who after buying the estate in 1987 embarked on an ambitious renovation programme that has saved an historic house from ruin and ensured a glittering future for generations to come. Our 10th birthday is a celebration of the achievements of the past decade, as well as the incredible near 200-year history of one of the nation’s great stately homes, and of the successes to come. I would like to thank our staff, the local community, and our guests for coming with us on our journey, for standing by our side, and for watching us grow and improve day by day. Celebrating a decade of Wynyard Hall Allison Antonopoulos reflects on the achievements of the last 10 years and looks to the future.

W

ynyard Hall was facing an uncertain future when in 1987 the entrepreneur Sir John Hall bought the centuries-old former family seat of the marquesses of Londonderry. The property developer and former owner of Newcastle United Football Club immediately embarked on an £8.5m renovation programme to return the 200-year-old Palladian mansion and 150 acres of parkland to its former glory, thus preserving one of the nation’s architectural jewels for future generations. It’s a journey that Sir John’s daughter, Wynyard Hall MD Allison Antonopoulos, has willingly accompanied her father on, and which 10 years ago saw her embark on her own ambitious quest with the transformation of the building

into a luxury four-star hotel and wedding venue. Since 2008 a further £10m has been invested in developing an award-winning Spa, the Grand Marquee event space, and a major visitor attraction with the restoration of the Gardens, Parkland and Glasshouse, which is home to a stunning homeware and lifestyle collection, and the opening of a Farm Shop and Café boasting a delicious array of locally sourced produce. To mark the hotel’s milestone 10th birthday, Allison reflects on a decade of remarkable achievements, reveals what makes this country estate so special, and looks to the future of a family business whose legacy at Wynyard is set to be every bit as glittering and historic as that left by the marquesses of Londonderry.

Are you very aware of your role as custodian of centuries of history? Yes, absolutely. Whatever we do, we always have the historical aspects of Wynyard to the fore. A big driving factor in developing it as a commercial venture was to safeguard its future.

vision to see the gardens transformed into a visitor attraction, while The Farm Shop, Café and Glasshouse were my contribution to his vision. I have always loved interior design and quality local produce, so it’s been wonderful to design and develop the retail areas.

How difficult was it to return this great Georgian mansion to its original grandeur? It has been quite a challenge. The hall was built on a grand scale, so everything has been a big task. Just the size of the State Rooms made the restoration a long process. It is still a 24/7 job, and our maintenance team and gardeners work tirelessly to ensure it remains immaculate. It’s lovely to hear people’s reactions when they enter the Statue Gallery or explore the State Rooms – they are always in awe of how exquisite everything looks.

Is it important that Wynyard Hall and the wider estate are seen as more than just a hotel? Yes and we now welcome over 100,000 visitors to the estate every year. We hope to increase this as we extend the gardens experience by opening up more of the woodland for walking.

And how challenging was it then to create a premier country house hotel? My parents were responsible for the original restoration, working for many years on the hall and parkland, so initially when I decided to turn Wynyard into a hotel it was all internal work. It was quite challenging to put the infrastructure needed into this age of building. The business has grown rapidly, especially since The Grand Marquee and Gardens opened in 2014-2015. The operational logistics of growing from a country house hotel into a large event venue and visitor attraction have been among the greatest challenges. However, with the right people in place, everything is moving forward. Was it always the plan to evolve into a hotel, spa, visitor attraction and event venue, as well as a much-loved wedding location? When I started, my thoughts were just on a wedding venue. Then it just grew organically. Guests needed bedrooms, a restaurant followed, the lounges were the ideal space for afternoon teas. It then made sense to transform the boat house into a spa. The corporate market enjoyed the use of the large State Rooms as the perfect setting for conferences, and coupled with the success of the hall as a wedding venue, the Grand Marquee as a large capacity event stage was a natural progression. It was always my father’s

How have you faced the challenge of establishing Wynyard’s identity during a period of so much change? It has been a challenge at times, but there have been constant factors within the brand that ensure consistency, our pursuit of high quality standards being the main one. Are there benefits to your customers in being an independent business? Yes, because we are able to respond very quickly to feedback and this enables us to develop quickly to meet customer needs. This is essential in maintaining our excellent standards. Hospitality is an unforgiving industry. What makes Wynyard Hall stand out? Our constant drive for perfection. What development at Wynyard Hall has made you most proud? The gardens, from the Marquee Garden to the Rose Garden and then the Edible Garden, Glasshouse and Farm Shop. It’s a great achievement by every member of the team. Was it always the plan that you would lead the Wynyard operation? No, it was a gradual, organic process. As a family, we recognised the need to find a commercial use for Wynyard to safeguard its future. It was my idea to turn it into a luxury hotel, I started to drive the process forward, and haven’t stopped! What do you hope the Hall family legacy will be here? To retain an historic asset whilst making it accessible for everyone to visit.

A few of my favourite things… Allison Antonopoulos selects 10 things that make Wynyard Hall such a special place to live, work and stay. 1 I never tire of the parkland and gardens that surround us, and the trees planted many years ago which envelop the estate. There is an inventory by Lord Stewart of the planting of 12,000 trees, including oak, ash, beech, spruce and elm. Many had specific uses as well as scenic beauty: oak for building material, chestnut for fencing, and ash for cart wheels and tool handles. 2 I admire Lady Theresa, the 6th Marchioness of Londonderry, who brought creative energy and vision to the development of the formal gardens. In 1912 she created a garden album which offers a fascinating insight into their design and planting. Her photographs bring to life the glory of the gardens then. Much of Theresa’s work was done from the garden house, known as ‘la paz’, which is Spanish for the peace. Beautifully furnished with comfortable chairs, marble tables and a cabinet filled with fine old china and cut glass, the house was perfect spot for a garden designer and extracts from her diary are on the walls of the visitor centre today. 3 We have three framed floor plans of Wynyard, showing in detail what all the rooms were used for and who lived where. It’s a bit like Downton Abbey. The basement shows jam stores, scullery maids’ bedrooms, a confectionery room, a game larder and a huge wine cellar, which still exists, alongside valet and boot rooms. Upstairs are lavish bedrooms and boudoirs belonging to Her Ladyship, with connecting rooms to his Lordship. 4 The private chapel, which was rebuilt after a fire in 1841 and opened for worship in 1849, is both grand and intimate. Designed by James

8

Brookes, it is filled with blue and white marble, a gilded ceiling, four stained glass windows, and an exquisite altar. Now used for weddings, in the past it would have been used by the family and estate workers. 5 Christmas at Wynyard is very special, and decorating the hall is a mammoth task. We start in time for the Christmas Fair in November, and it usually takes a week. We have 11 Christmas trees, which all need decorating, along with fireplaces, the staircase and table tops. 6 One of my favourite tasks, also at Christmas, is choosing all the delicious festive stock from the Farm Shop and decorations from the Glasshouse. 7 The Spa is one of the most tranquil areas here and has its own uniqueness. Converted from the former boathouse, it has unrivalled views across the lake. Sitting in a hot tub with a glass of prosecco overlooking the lake is a treatment in itself. It’s very quiet, and as we only allow a certain number of guests at one time it feels like you have the place to yourself. 8 I love walking my two pugs early in the morning through the valley when no one is around. If I’m lucky, I will get to see a family of deer in the distance, which is lovely. 9 I enjoy summer on the terrace overlooking the lake with a glass of wine and some tapas. 10 It is wonderful working with my daughter Sarah. We are particularly close and work incredibly well as a team.

A very British tradition Founded by a duchess and championed by the aristocracy, afternoon tea retains all of its original allure, some 180 years after it was created.

A

nna, Duchess of Bedford, is the person credited with introducing the ritual of afternoon tea to the upper classes in 1840 to help keep the hunger pangs at bay between lunch and dinner, which in those days wasn’t eaten until 8pm. Every afternoon she would sit down to a pot of loose leaf tea, bread and butter and cake. She began inviting her aristocratic friends to join her and soon afternoon tea captured the imaginations of her contemporaries. Afternoon tea became an increasingly elaborate social event with guest lists, white linen tablecloths, silver teapots, fine bone china, musicians and increasingly extravagant sweet treats. Wealthy women began dressing up for the occasion, which had a set time of 4pm to fortify those taking part in London’s fashionable Hyde Park promenade, when the aristocracy would mingle with politicians, judges, writers, artists and thespians of the day. Thanks to the Duchess of Bedford, afternoon tea is now as quintessentially British as croquet, cricket, Wimbledon, Pimm’s, picnics and warm beer on a hot summer day. We may no longer stop every afternoon at 4pm for tea and cake, but nearly 180 years after its introduction, this delectable addition to our dining repertoire has lost none of its allure. Synonymous with opulence thanks to its aristocratic roots –

perhaps one of the reasons why it has become indelibly associated with grand surroundings like Wynyard Hall – afternoon tea is now an egalitarian opportunity to indulge and spend precious time relaxing with friends and family. It’s also a chance for chefs to flex their creative muscles. Afternoon tea may traditionally consist of dainty finger sandwiches, scones with jam and cream, and delicate pastries, but that doesn’t stop Wynyard Hall’s chefs flaunting their artistic flair with delicate desserts and sweet treats, plus themes for Mother’s Day, Easter, Christmas, and events like Wimbledon, Chelsea Flower Show, and royal celebrations. Afternoon tea is sadly something of a novelty nowadays. But it has become so inherently linked to the British psyche that there are many abroad who still believe we all stop every afternoon at 4pm for tea and cakes. It’s a good excuse – if one is needed – to prove them right. Demi chef de partie Leanne Rogers reveals what makes Wynyard hall’s afternoon tea so special.

Senior chef de partie Colin McIlwain on why he loves being a pastry chef and the appeal of afternoon tea.

Why do you like being a pastry chef? The dishes produced in the main kitchen are fantastic, but what we do is more artistic. Cakes and pastries are so colourful and bring people such pleasure.

What made you decide to become a chef? My mum is a chef. When I was younger I used to help her at functions and realised I really wanted to be a chef.

What’s the best part about your job? Taking something simple and by adding a little garnish turning it into something amazing. I love taking things to the next level.

How did you get into the pastry side? It was about 18 years ago. I was working at Glasgow’s famous Ubiquitous Chip restaurant. The pastry chef went on maternity leave and I was moved over. I discovered I loved it.

Why do you think afternoon tea is so popular? It’s a chance to dress up during the day, meet with friends or family and enjoy yourself over an assortment of tasty treats. What makes Wynyard’s afternoon tea so special? The attention to detail, the location and the options. We do a traditional afternoon tea but also a children’s version with jelly, jam sandwiches, cakes and a milkshake served in a little milk bottle, as well as a gentleman’s with savoury pastries and sandwiches for those who don’t have a sweet tooth. It means the whole family can enjoy afternoon tea together. Everything is homemade, and we keep it seasonal so there’s always something new. I can’t think of anywhere nicer to have afternoon tea than Wynyard Hall. It’s the perfect stately home setting.

What is it you like? It’s more disciplined. You have to be very precise and follow the recipe exactly. Is afternoon tea a big thing for you? Huge! We serve about 600 a week. The Wynyard Hall afternoon tea is very traditional – I think it’s what people expect and want in a stately home setting. We do three tiers with finger sandwiches, fruit and plain scones and five different types of cakes and pastries: a fruit one, sponge, chocolate, tart and macarons. What is it about afternoon tea we love so much? It is so much more than just going for a quick coffee or cup of tea with friends. It feels really special.

Bees check in at Wynyard Hall There’s a buzz around Wynyard Hall these days – and it’s not just about the exciting developments taking place.

A

round 320,000 honey bees have taken up residence in the parkland. Their eight hives belong to Steve Jacklin and Prof. Phil Tetlow of Cleveland Beekeepers’ Association, and their introduction is part of Wynyard’s commitment to sustainable development. This has seen the creation of an Edible Garden supplying seasonal produce to the hotel’s dining venues and Farm Shop, and the planting of 3,000 roses in the Walled Garden. Natural wildlife habitats have been set-up in the parkland to encourage birds, insects, frogs, and native plants, and there is a commitment to support, where possible, local producers. Bees hark back to a gentler way of life in keeping with Wynyard’s historic setting. But these bees are also playing a vital role in maintaining the natural balance of the 150-acre estate. They are crucial for pollination. But disease and the loss of flower-rich habitats has seen their numbers fall. This has serious implications for food production and the flowers we all gain pleasure from. The Wynyard bees are helping to pollinate the

Edible and Walled gardens as well as the broader area, prompting a 20% increase in vegetable crops alone. And in return for being given free access to this idyllic environment, they are yielding their honey for use in Wynyard’s kitchens and to sell in the Farm Shop. Each hive produces 50lbs of honey, yielding up to 400 jars. With roses aplenty, wild flowers, tree blossom, and the Edible Garden all on their doorstep, the bees are not short of places to forage. Steve Jacklin says: “It’s a tangible sign to guests of Wynyard’s green philosophy, ensures the flowers are pollinated, encourages a good crop in the vegetable garden, and gives us a tranquil and safe place to keep our bees. And with diminishing bee populations, this is undoubtedly going to help boost numbers.” Prof. Phil Tetlow adds: “Wynyard’s parkland is a perfect environment for the bees. To have access to it is a coup. The honey tastes beautiful and it’s great that guests can eat it in the restaurant and get it from the Farm Shop.” Which brings a whole new meaning to Wynyard’s B&B package…

Farm Shop cultivates taste for fine foods Stocking a mouth-watering array of the finest local and artisan foods and kitchen essentials, Wynyard Hall’s Farm Shop has become a destination in its own right since opening in 2015.

verlooking the Walled Garden with its 3,000 sweet-smelling David Austin roses, the Farm Shop housed in the visitor centre alongside the Café is a very visible example of how Wynyard Hall is helping to support the local economy. Alongside a gorgeous range of Italian pastas, sauces and antipasti, you’ll find an impressive variety of specially chosen local foods gathered from across the North East and North Yorkshire. From handmade cheeses to gourmet sausages, award-winning relishes and sauces, jams, flour, pies, pastries, breads, chocolate, real ales and spirits, the Farm Shop within its eyecatching and rustic oak building is every good food lovers’ paradise.

And some of the food is so fresh you can actually see it growing just a few yards from the shop. A selection of fruit and vegetables nurtured and harvested in Wynyard Hall’s own Edible Garden is available to buy daily in season. This commitment to supporting local producers extends to the Northern Dales Farmers’ Market held on the third Sunday of every month in the shade of the Walled Garden, which regularly attracts more than 30 stallholders selling a delicious range of artisan goods. Local heroes Four producers championed in the Farm Shop reveal what makes them – and Wynyard – so special.

WILDON GRANGE Adam Guy has an impressive clutch of Great Taste Awards (the Oscars of the food world) to his name, covering his chutneys, balsamic vinegars and dressings. His association with Wynyard started in 2012 when he attended his first Christmas event, and he was asked to supply products for a cookery demonstration. So began a fruitful association with Wynyard, which in 2016 saw Adam invited to supply the Farm Shop, and has seen his condiments added to the menu in the Café. Adam says of the Farm Shop: “I think what they are doing to promote fresh, local food is fantastic. I am seeing the Farm Shop go from strength to strength, and I am always very appreciative of what they are doing to support local suppliers like myself.”

CRAGGS & CO Craggs & Co stumbled across spelt when a Michelin-star pastry chef asked the commercial wheat grower to cultivate a crop. Now the majority of Craggs & Co’s 2000acre farm in Sedgefield, County Durham, has been given over to its growing. Their 1kg bags of white and wholegrain spelt flours are now one of the most popular regional foods sold in the Farm Shop. The bags appeared on its shelves in 2017, but Craggs & Co’s connection with Wynyard goes further back. The land where the spelt is grown was once part of the Wynyard estate. MD Stephen Craggs says: “It’s nice for customers to know the flour was grown and produced just up the road on land that was once part of an estate that is now doing so much to support the local economy and suppliers.”

HUTCHINSON HOBBS With its own selection of local products sold in its retail outlet in Yarm, Hutchinson Hobbs was the perfect fit when the Farm Shop was looking for a meat supplier. The business, run by Alan and Barry Hutchinson, came highly recommended for working with local farmers and only sourcing and retailing the finest produce. Hutchinson Hobbs supplies the Farm Shop with homemade sausages, black pudding, dry cured bacon, gammon steaks, frozen pies and quiches. The Hutchinsons have nothing but praise for the Farm Shop. Barry says: “Like us, Wynyard is playing its part in maintaining the fabric of rural life. “It not only gives consumers more choice, it helps people identify with where their food is coming from.”

ACORN DAIRY It is at Archdeacon Newton 15 miles from Wynyard that the Tweddle family in 1998 converted Garthorne Farm to organic status and revived the tradition of the doorstep milk delivery. Two decades on and the range using milk from Acorn’s own herd of dairy shorthorn cross also includes cream, hand-wrapped butter and free-range eggs, all of which are stocked in the Farm Shop. The most popular line is milk sold in returnable glass bottles, Company director Caroline Bell says: “It’s nice to be linked to Wynyard. It’s a vibrant and welcoming farm shop stocking the best homemade and local produce, and in doing so is supporting a network of suppliers like us. “For Wynyard, it isn’t just a matter of buying and selling. The Farm Shop is an ambassador shouting out about the incredible culinary delights the region excels in.”

Just the tonic There’s a real passion for gin at Wynyard Hall with a curated collection that’s just the tonic for lovers of one of the world’s best-loved spirits.

I

t may have its roots in Holland, but the British have claimed gin as their own. From its illegal production on these shores in the 1600s, gin’s star quickly rose, and before you could say ‘ice and a slice’, it had attained blue-blooded respectability. The spirit would have no doubt been drunk when the marquesses of Londonderry held lavish social gatherings at their North East family seat, Wynyard Hall. Indeed, a regular guest was the 19th Century author Charles Dickens, who had a fondness for summer gin punch. Gin hasn’t had it all its own way, The popularity of lager and wine meant a whole generation missed out on its finer points. But now the drink has had a ‘re-gin-eration’. New craft distilleries are springing up. In keeping with its aristocratic past, Wynyard Hall has taken gin to its heart too, with Sunderlandbased Poetic License, Durham Gin and Masons Dry Yorkshire all on offer. There’s now an annual gin festival with more than 50 different tipples to discover, a special gin

event in Wynyard’s rose-filled Walled Garden, and sloe gin making workshops named by the Sunday Times as a Top 40 UK autumn day out. It’s no surprise to learn from Wynyard’s operations manager Tony Johnson that gin is the hotel’s most requested spirit. “Our guests love gin and have increasingly well-educated tastes. Gin is probably the most sophisticated and versatile of all the spirits. We have made sure we are active when it comes to following the trends and keeping up with the new names coming on to the market. “There seems to be no sign of the gin boom waning with flavoured gins and liqueurs shaking things up and keeping it fresh. “We’re riding the gin wave and we want our guests to experience that groundswell too. With the market growing and a greater variety of flavours coming in alongside the traditional ingredients, it’s about more than just G&T.” Chin-chin. Or should that be gin, gin? We understand Mark proposed on a romantic get-away to Scotland? I had no idea what Mark had planned. After a beautiful meal at the hotel we went back to our suite. On the way in I noticed vases of white lilies and roses in the foyer. Once we got into the suite there were hundreds of flowers. In my head I was thinking, ‘wow, this hotel really goes the extra mile!’ Mark got down on one knee and proposed. It was so romantic. He had taken almost a year to source the stone for my engagement ring, working with the jeweller. It’s beautiful. I smile every time I wear it. What was it about Wynyard Hall that made you choose it for your wedding? Location. We have three children and we wanted the day to be intimate with the people around us who had made a difference to our lives. Wynyard gave us that welcoming, homely, yet grand feeling. Visually, it is beautiful. Everything within the hall is exceptional. We wanted to be married in a church, so having the beautiful chapel there was the icing on the cake. The staff were also one of the reasons we chose it. What is your favourite room? Mark’s was the Mirror Room. He loved the grandeur. Mine was the Ballroom, where we had our wedding breakfast. The atmosphere was perfect. What was on your wedding menu? We had a bespoke menu. The chef sourced our steak from America. That was fantastic service. I can’t imagine many venues would do this. Were there any staff who particularly stood out? Our wedding coordinator was amazing from start to finish. It was a very personal one-to-one experience, and we formed a great relationship with her. The master of ceremonies was outstanding. His relaxed approach was exactly what was needed.

What did you do the day/night before your wedding? We entertained some of our family at Wynyard the day before. We arranged for the men to go shooting and the women had a day in the Spa. This was one of the best decisions we made. The men were picked up in Range Rovers and a beautiful picnic was arranged. The ladies went to the Spa and we had afternoon tea followed by our treatments. The shoot and spa day were the perfect start to an amazing weekend. Tell us about your dress, Jane I decided on a bespoke strapless lace and silk dress with a big skirt by Caroline Castigliano from her Knightsbridge store in London. I had two bridesmaids: my daughter Brooke, who was nine, and my sister-in-law, Leanne. Brooke wore an ivory silk and lace floor length dress. The top was made from the same lace as my gown. Leanne wore a dusty pink silk gown, very low at the back, with a full length skirt. She looked beautiful. What did the groom wear? A bespoke three-piece dinner suit from the Saville Row tailor Gieves & Hawkes. The date of our wedding was stitched into the inside pocket of Mark’s jacket. It was such a personal touch. Was there anything extra special about your wedding? Our eldest son, Jaimes, walked me down the aisle. I will never forget that moment. Having our other son, Isaac, and Brooke walk down the aisle with me will be something that stays with me forever. Would you recommend Wynyard Hall to other couples? Definitely. The wedding planner Wynyard Hall’s wedding coordinators offer their top 10 tips and tricks for ensuring your big day is the best of your lives. #1 Give yourself plenty of time to organise your wedding and think about the sort of service you want, set a date and book the venue. The latter is essential. Everything comes together around the location. Twelve to 18 months ahead is ideal. It sounds like ages, but you will be thankful for the breathing space. #2 Set yourself a budget and stick to it. It’s important to do the costings. Start with the big items like the venue, honeymoon, dress, band and photographer, and decide how much you can afford to spend. Factor in a contingency fund – usually 10% - to cover unexpected costs or extras you may decide to include. Keep track of your spending. #3 Don’t settle for off the shelf. We offer a first class personal service here at Wynyard that’s all about you and what you want. No wedding is too small or too big. Remember, it’s your day. #4 Get wedding insurance. Getting married isn’t cheap and life can be unpredictable. Hopefully, you won’t need it. But it’s something you shouldn’t leave to chance. #5 Decide on a guest list as soon as possible. How many you invite determines the size of venue and how much you will need to spend.

#6 Plan something special the day or evening before to celebrate with close family and friends. The day itself will go so quickly and you will have so many people to catch up with, it’s definitely worth planning in time to do something special with the people who mean most to you. The best are always in high demand. #8 Take a break – especially in the run-up to the wedding. No-one wants to find themselves suffering from wedding fatigue. It will mean you can sort out any last minute details and chill with each other, friends and family. #9 Don’t be late on your wedding day. There is this myth that the bride is supposed to be ‘fashionably’ late, but that’s not the case. I always say to be ready at least 30 minutes in advance. #10 Enjoy yourself. Alongside the Walled Garden, visitors can revel in the relaxed and informal design of the Wild Garden with its alluring selection of more hardy native winter flowering plants, and soak up the panoramic views and ethereal beauty of the delicate blossom trees, circular copper beech hedges and perennial borders in the Marquee Garden. Vegetable growers are invited to take inspiration from the Edible Garden which flourishes with seasonal produce destined for both Wynyard Hall’s two AA Rosette Wellington Restaurant and the Farm Shop and Café, before discovering the delights of the Victorian-inspired Glasshouse with its fabulous hand-picked luxury homeware and garden accessory gift collections. It’s in this area that a resplendent wire sculpture of one of the greatest racehorses of the 18th Century, Hambletonian, stands. Gardening’s a family affair for Mark All is rosy in the Wynyard Hall gardens as proud father Mark Birtle’s two sons have followed in his horticultural footsteps and joined him at the luxury hotel.

T

aking care of the grounds at Wynyard Hall is a family affair for head gardener Mark Birtle. Working alongside him are his two sons, Leo, 21, and William, 18. The trio are carrying on a Birtle tradition of working the land. Mark’s father was employed in agriculture. But it was horticulture that caught his son’s eye when he left school. And it’s a love Mark has passed on to his own children with he and his sons now tending to the 150 acres of parkland and formal gardens that make up the Wynyard Hall estate. These include the Walled Garden with its 3,000 roses; the Wild Garden with its hardier native winter plants; the Edible Garden bursting with seasonal produce; and the Italian-inspired Marquee Garden with its perennial borders. Mark heads up a four-strong team that also includes Assistant Head Gardener Paul Riding. It is the quartet’s job to ensure the grounds always look their best. It’s an undertaking Mark has been happy to carry out for the past 23 years. Team Birtle each have their own skills. For Mark it is the ornamental side. Leo is mad on machinery and William “has a fine eye for detail,” says his father. “Together, we are a great team.” How good is there for all to see. The grounds are a joy to behold. But ensuring the estate is

always looking its best is “a bit like painting the Forth Bridge. Just as you think you’ve got everything right, you have to start all over again,” admits Mark. Not that he minds. It is a privilege to be working at the hall – and to now be doing so alongside Leo and William is the icing on the cake. Both have grown up with Wynyard, but I never put any pressure on them to join me. We just all happen to love the outdoor life and gardening.” Mark’s proudest achievement has been the Walled Garden, on which he worked closely with landscape architect Alistair Baldwin. “That is pretty much the pinnacle of my career. It is a stunning example of good oldfashioned horticulture. “The work that has been achieved here has been astounding. I was brought in to restore the gardens and push back the years of neglect. Opening up the estate has been a pleasure. And one that has been made all the better by now working alongside my sons.” What’s his favourite part of his job? “Watching the roses burst forth and seeing the joy on the public’s faces. That’s more than worth all the hard work.”

Getting a taste for Wynyard Hall At Wynyard Hall the measure of how far food has travelled from plot to plate isn’t calculated in miles – it’s yards.

A

decade ago, food miles, farm-tofork, and sustainability were rarely used phrases. Now, they roll off our tongues like a wellbalanced wine as we become more aware of how our food is produced, where it comes from and the often staggering distances it has trekked to reach our dinner tables. But at Wynyard Hall you can be assured you are eating the freshest seasonal produce. The estate has gone back to its Victorian roots with the creation of a flourishing Edible Garden. And hotel guests and visitors can get a taste of the delicious fresh fruit and vegetables not just in Wynyard Hall’s two AA rosette Wellington Restaurant, but in the Café at the entrance to the Walled Garden and the Farm Shop too, with surplus produce available to buy and take home. The Edible Garden has been inspired by the Londonderrys’ former kitchen garden, which helped to feed a working estate that at its height employed 1,500 local people. Looked after by head gardener Mark Birtle and his team, the Edible Garden is a stunning 21st Century symbol of sustainability in action, providing not just fresh fruit and vegetables for use in the Wynyard Hall kitchens, but encouraging biodiversity, an increased understanding and knowledge of food production among visitors and guests, and a permanent and lasting legacy that will ensure the estate is preserved for future generations. Among the array of fruit and vegetables

grown here are artichokes, asparagus, beetroot, courgettes, onions, squashes, potatoes, parsnips, wild white strawberries and herbs. Unusual varieties of fruit and vegetables are also being developed. Sharing the same address as the hotel, Café and Farm Shop means the chefs only have a short walk to the Edible Garden, guaranteeing freshly harvested seasonal ingredients that are full of flavour. Menus can be tailored to truly reflect what’s ready for picking – both in the Edible Garden and from the wider 150 acre estate, with foraged ingredients such as wild garlic, berries and nuts also influencing the food offering. Mark says: “The Edible Garden is a true celebration of the seasons and means the Wellington Restaurant and Café can make the most of the fresh produce grown here on the estate, harvested at its peak and turned into delicious dishes that truly reflect the growing cycle of the year. “Freshness is everything. It is fantastic that if someone orders a salad in the café or soup or vegetables in the restaurant, all the chefs have to do is step outside, pick the ingredients, and know that within minutes they are being enjoyed by diners. “Having garden-fresh produce at their fingertips means the kitchen teams can ensure the menus are kept new and exciting, that food miles are kept to a minimum, and that we can all make better sense of the seasons, just as Nature intended.”

Walk this way Taking a walk in the ancient woods is the easiest way to enjoy the outdoors, get closer to nature and leave behind the hustle and bustle of modern everyday life.

he Woodland Walk at Wynyard Hall

provides a magical playground where children and adults can explore and create their own exciting adventures. The woodland track, recently restored as part of the estate’s long-term development plan, has been used by walkers for centuries. There are plenty of incredible historic features and artefacts to keep you entertained, from the stunning temples and follies to gravestones erected for Lord Londonderry’s prized greyhounds and family pets. A stroll through the historic wood reveals lots of clues about the lives of our ancestors, but you might also be lucky and spot bluebells, wild garlic or daffodils in the spring. Or maybe in autumn there’ll be a gnarled ancient tree covered in lichen or surrounded by fungi – perfect fodder for photography enthusiasts or creative little imaginations.

Look out for woodland mammals, birds and beasts while you walk. In the spring and summer, butterflies and bumble bees can be seen weaving between the foliage. As the days get longer, dormice, voles and hedgehogs come out of hibernation and rustle around in the undergrowth. After dusk, bats and badgers move out of hiding to search for something to eat. Frogs, toads and newts can often be seen by the edge of the lake. Brightly coloured dragonflies and damselflies whiz above the water. Woodland birds soar overhead. Deep in the undergrowth beetles scurry and spiders spin elegant webs between shrubby branches. What has determined your passion for design? It’s not something I am trained in, but I do have a great passion for it. When I started refurbishing Wynyard, my mother was a great source of inspiration. Having done numerous refurbs herself, she helped me and I would still ask her advice. It’s been a rolling programme at Wynyard from the State Rooms to the Farm Shop, but there’s been great enjoyment in being able to create different schemes. What inspires you? Visiting other venues, the internet, magazines and exhibitions, my favourite being the Maison et Objet show in Paris. Is there a place you are continuously drawn to because of the beautiful interior? Wynyard Hall’s Statue Gallery. I’m pretty sure that goes for the guests too by the look on their faces. It is very palatial with lots of blue and grey marble, a giant gold chandelier and wonderful stained glass. What has been your favourite part about designing the Wynyard Hall look? It’s something that has evolved. In the early days we went for a traditional country house hotel look. As the refurbishment is an ongoing process, it’s nice to add new, more modern touches in fabrics, cushions and paint colours. And your most challenging? The Spa. The setting was the first thing that inspired me, but it was the old Victorian boathouse. It was a long, thin building with two sliding doors, one side on land, the other opening onto the water. I had to learn about the spa experience and used a company to design the thermal area and customer journey, and then we set about choosing the rest. We built a decking area with hot tubs to extend the facilities and take in the amazing views. It was full of challenges, but was well worth it as it goes from strength to strength. Do you have a signature touch? I love accessories, lots of them. They can really bring a room to life.

What do you love to use when you are decorating a room? Farrow and Ball paints. I love the colours and they definitely work with a building of this age, but also in a modern environment. What is your philosophy on design and life? To be surrounded with everything you love and like and not to be led by fashion. If it’s your home, then it’s yours to do with as you wish and take pleasure from within it. How do you go about choosing the retail lines for the Glasshouse? We have certain suppliers we work with and we visit their showrooms regularly. It’s good to see the stock set out, which gives us ideas for retail merchandising and how the pieces can be mixed with other things. Ordering in advance is something we have learnt to do. It’s not much fun choosing Christmas stock in August, but it has to be done. I always visit the showrooms with my gardens manager Kelly, and Elaine, a member of our retail staff, who has a great eye for visual merchandising. We all have an input and it’s always about trying to buy a range of homeware that will suit everyone and every budget. What can I expect to find when I shop at the Glasshouse? Gorgeous gifts, homeware, stationery and items for the garden. Visitors to the garden are quite relaxed and have come for a day out, so they have time to browse and relax. I don’t think it is the same feeling as the high street. We have lots of regular visitors, so rotating the stock is important. ynyard Hall has been transformed from a private country estate to a much-loved destination open to all. Its development as a hotel, tourist attraction and event venue, has brought jobs, money and positive exposure locally and to the wider North East. More than 100,000 visitors now head to Wynyard annually, many travelling from beyond the Tees Valley with a large number coming from abroad. Recognised as a key driver in attracting business people and boosting tourism-related development, Wynyard won the 2018 North East Business Awards’ Teesside Tourism and Hospitality Award. Visitor numbers are expected to rise as The Gardens gain in popularity and the Parkland expands. Sir John Hall is a passionate supporter of the region, and Wynyard has provided the means to

extend this backing into Teesside. Since buying the Wynyard Estate in 1980, Sir John has invested over £15m in restoring and developing the Hall and Parkland. Local suppliers have been key to this restoration and regeneration. The business, which started with five members of staff, now employs over 200. Wynyard supports locally based artisan suppliers via the Farm Shop, Café, and Glasshouse, and events like the Festive Shopping Fayre and monthly Northern Dales Farmers’ Market. Catering and event suppliers have benefited from weddings and other events. And the launch of the Grand Marquee has seen a marked increase in suppliers providing services for private and business clients. From florists and linen suppliers to caterers and production companies, the expansion of Wynyard has brought great opportunities.

Tools for success It’s not just Wynyard Hall that’s marking its 10th anniversary. The hotel’s maintenance manager Alan Atkinson is celebrating a decade in post too.

A

lan Atkinson has been central to the Wynyard story for over a decade. Indeed, it would be fair to say he is the glue that holds everything together. Without him, Wynyard would not be the country house hotel it is. Yet, few guests will ever meet him or be aware of his role in ensuring their comfort. And he says that’s just the way it should be. As maintenance manager it’s his job to ensure the lights stay on, the toilets flush, the paintwork remains chip-free and, ultimately, the hall continues to show its best side. While guests come into contact with reception and restaurant staff, Alan is the one person who, while he is everywhere, is rarely seen. He laughs when this is pointed out. “Well, I suppose I do keep to the shadows, but I shouldn’t be seen around the hotel. Guests don’t want to see me changing a light bulb. It’s about working efficiently and discreetly.” He is modest about the part he has played in Wynyard Hall’s success, But when he describes the changes he has seen, it is apparent how important his input has been. “When I started the hall was just office space. Then it was transformed into a wedding venue with nine bedrooms. We’ve gone from that to 19 bedrooms, five cottages, a walled garden, event marquees, and the Spa. There have

been enormous changes, and I suppose I have played my part. I’ve done the painting and the wallpapering, helped with the plumbing and the electrics, laid floors, stripped things out and put them back.” Alan joined Wynyard in 2004. A former chauffeur at Newcastle United, Sir John Hall – who is life president of the club – brought him to Wynyard as his driver, before Alan moved over to maintenance. It’s a job he loves. “It’s a beautiful building, and it’s a privilege coming to work. How many other people spend their days working in such lovely surroundings?” His work isn’t confined to the hall. Someone has to keep the lawns mowed, the terrace tidy, pick up repair jobs at the Spa and Farm Shop and help to maintain the cottages. All this and more falls to Alan and his colleague, Ged Wentworth. If Alan could sum up his job in three words, what would they be? “Varied, enjoyable, fun.” And for the record, how many maintenance men does it take to change a light bulb? “One,” Alan says, with the air of someone who’s heard that joke before. Unless it involves one of the magnificent chandeliers in the entrance hall, of course. That definitely isn’t a joking matter, and is the one job Alan always prays is a dazzling success.

Wynyard’s winter wonderland Step inside an enchanted world of festive food, carols, colourful lights, shopping, celebratory parties, and even skating on a real ice rink, as Wynyard conjures up the magic of Christmas.

hristmas comes early to Wynyard Hall with its four-day Festive Shopping Fayre every November. Filling the main hall, Grand Marquee and an outdoor market complete with tepees and live music, this much-anticipated Christmas shopping extravaganza attracts more than 16,500 visitors drawn by over 150 stalls packed with the finest handmade gifts, jewellery, fashion and food. In the lead-up, the Hall, the Glasshouse, the Farm Shop and the grounds are transformed into a winter wonderland by the Wynyard team, led by creative MD, Allison Antonopoulos. In the hall stunning festive garlands adorn the stairwell, beautifully decorated trees fill the State Rooms, and sparkling displays highlight the already magnificent mantelpieces. Inspiring festive food, drink and gift displays fill the Farm Shop and Glasshouse, and huge Christmas trees are put up around the estate. Wynyard has become famed for its ice rink outside the Visitor Centre. A truly magical experience, children delight in learning how to skate, whilst adults grow in confidence after a

glass (or two) of mulled wine. In 2018 there will be a small festive market too. There are festive workshops, party nights, children’s activities, and Santa Claus takes time out to visit throughout December. Hundreds of people dine on seasonal fare in the restaurant, or indulge in Festive Afternoon Tea. Carol services take place in the Chapel, and the Royal Northern Sinfonia performs its baroque Christmas by Candlelight Concert in the Conservatory. With only 19 bedrooms and five cottages, guests arriving on Christmas Eve are in for a truly exclusive experience. With cream tea and bubbly on arrival, a place guaranteed at the Christmas Eve Carol Service followed by mulled wine and mince pies and a three-course candle-lit dinner, there really is no better way to get into the festive spirit. Christmas Day sees lunch served in the Restaurant and Conservatory, a visit by Santa and, for hotel residents, cheese and port served in the Wellington Bar during the Queen’s Speech.
