f you read last month’s editor’s letter, you will have noted that I’ve been a little pressed of late. I vowed (and beseeched you as well) to dial down the stress levels via the default calm that ensues during Ramadan. Lo and behold, that, I did. The intent is always perfectly placed year upon

year but never do I follow through. Now that the batteries are fully recharged, I am ready for more slow-paced days this summer. Best not to get used to it as come September, our fingers will be relentlessly tap dancing on our keyboards.

A Breath of FreshAir

Never has a brand garnered more intrigue than Paule Ka. The raw-edged and delicate cuts see a marriage of sophisticated style where the notion of grace is reworked to be punchy, unexpected and eye-popping. Visionary creative director, Alithia SpuriZampetti speaks to us of the confidence and contemporary attitude true to the Paule Ka woman and how Japan inspired the spring-summer 2017 collection.

W

hat inspired the SS17 collection? My main inspiration for the spring-summer 17 collection was Japan - its culture and aesthetic.

Who is the Paule Ka woman? The Paule Ka woman is a contemporary cosmopolitan girl with a busy agenda. Work, cocktails, weekend, travel and ceremony. The Paule Ka woman wants to be chic and comfortable in every occasion of her daily life, without giving up femininity and style. How technical vs. creative are you during the designing process? I would say I am more technical. I work in 3D, which means I draw the pieces. A mock up is made and my studio team work and rework on the mock up until the result I want is obtained. Once I am satisfied, we make the prototype that I can still work on. Choosing the fabric and how it will be worked is a very technical process. The Paule Ka presentations in Paris are typically very ethereal and production-like. Why is this important to you? With this kind of presentation, I want to give the opportunity to the audience to feel completely in the Paule Ka world and to take their time to discover and even touch the clothes. 30

Who in your career most influenced your trajectory and success? I worked for six years under Alber Elbaz’s direction at Lanvin before standing on my own feet. I learned a lot from Alber because he gave me the chance to be at his side and the opportunity to make mistakes. He has immensely influenced my way of working and I see him as my mentor. What’s your personal style for everyday wear? I like to feel comfortable at work so I often wear light trousers or long skirts with a simple top and ballerina pumps. Which country’s fashion are you most drawn to? Definitely France, I am a big fan of the fifties and sixties look. No country loves women’s clothes than France. What direction is Paule Ka heading to in the future? Next year (2018) will be a big year for us as it is the 30-year anniversary for the brand, so there will be lots of surprises and upcoming events. And who knows, maybe a show at Paris fashion week? On a general note, I will continue developing a new style vocabulary with new shapes and fabrics.

Can you describe your role as TUMI’s Creative Director? My role at TUMI has evolved over the years but it has consistently been the same. The design team is a small team that continues to develop solutions day in and day out and continues to fix issues and solve the ever-changing needs that arise with our customers. Tell us about your latest collection and why we should travel with TUMI in tow? For the AW17 season, we were inspired by the juxtaposition of New York; the city vs. country aesthetics. It’s here where we found inspiration between the differences in energy and the beauty in finding balance between the two. Who is the TUMI traveller? I think the customer who is carrying TUMI is either a current or future Global Citizen. They’re someone that is put together, they’re ambitious, and they’re someone who’s confident, that understands who they are and where they’re going. They appreciate not only the way something looks, but how well it’s made and how it works. What should any stylish, modern and fashion focused woman invest in? TUMI has always strived to understand its consumer and how they live their lives; whether it’s someone looking for a casual, yet beautiful travel piece or a multi-tasking CEO at a leading company who’s searching for a new bag for work. The more we are able to understand our customers, the more we are able to develop products that meet their needs and lifestyles. We’ve learned that our female customers have the same, if not more needs than our male customers—women want the same functionality that is offered in our male-driven collections, in a more understated and feminine silhouette; and we’re giving it to them. TUMI offers many collections for her to choose from such as our new Voyageur Leather and Mariella collections (to name a few!) that are fashionably versatile for each individual to use and style in their own personal ways. What can you say about fashion over function - especially with packed summer holidays where we need lots of space! TUMI is known for its strength, durability, quality, and function. As we set out in developing any collection, we ensure that every detail and design element that goes into it will help support these principles—all the while remaining on trend for what we see are the needs within the market. The most important part of a good design is to truly understand the user and their needs. The more that we can do to make the journey pleasurable, we should do it. This involves all aspects of the design function, quality, durability, materials and aesthetics. TUMI is very utilitarian in appearance. Would you ever go off-piste and create a vibrant, print heavy collection? We offer a variety of colour and prints across many of our seasonal collections - specifically within our hard side luggage (V3, Tegra Lite Max, 19 Degree) as well as our soft side collection (Arrive, Alpha Bravo, Voyageur, and Larkin). The use of colour and print is typically juxtaposed with neutral tones that infuse excitement into the overall assortment and sets the overall mood for the collection. What’s your favourite piece of luggage to travel with for a long weekend? Over the course of my tenure at TUMI, I’ve accumulated bags and accessories that span all of our assortments. For me, it depends on the trip I am taking. If I’m doing a quick business trip, I may stick with my trusted 19 Degree Aluminum carry-on or you can usually find me with a new prototype in hand when I travel. 38

Where are your favourite places to travel to in the summer and in the winter? During the year I am always on the move - so for the summer and winter I really enjoy being at home with my family since that’s the time when my kids are off from school. In the summer, we’re outside a lot whether that’s at one of their soccer games or at the pool. When it’s colder we like to go snowboarding. I’m still waiting for my youngest to join us on the slopes and my daughter is trying to get me into ice skating! What are some essential, maybe unusual, things you have to pack on any trip? I have my go-to items/uniform when travelling. It makes the trip much more enjoyable and effortless. Keeping it simple and flexible makes the trip much easier. But the must haves that I never travel without are my iPhone, SketchBook, pens, sunglasses, sneakers, and some music. What are your goals with TUMI over the next few seasons? My overall goal as the brand’s Creative Director is to continue pushing the brand forward and creating inspirational products. I’m really looking forward to all of the innovation that we’re engaging in and continuing to push our premium collections and our women’s business forward. I think there’s tremendous opportunity for us to surprise our customers with new and exciting products that are both fashionable and functional.

How do you pack your suitcase? Do you have a particular method or art to it? There are definitely differences to how I pack depending on the length of the trip. I travel a lot, so I have a pretty set checklist when it comes to packing: Don’t wait until the last minute to pack as you will tend to forget something important. Keep your colour palette simple, make sure you can mix and match pieces easily. Know the weather where you are going, this can make a trip much more enjoyable when you arrive. Bring plenty of power for your electronics. Layout everything you think you will need and cut that in half. We have a tendency to over pack. Stay calm, there are many bumps in the road when we travel; try and enjoy the journey even when things go a bit sideways.

Prep skin for makeup with Primer Radiance and massage onto face before applying foundation. Apply Candleglow Foundation in Butterscotch with a sponge. Press and roll sponge into skin to create a ‘second skin’ finish. For more coverage, apply more, only where you need it then apply Camouflage concealer. Use Translucent Loose Setting Powder and a puff to set foundation. Add instant colour to cheeks and eyes with Windflush Powder. This particular shade of coral is a soft veil of peach that is very wearable and awakens the skin; it gives the perfect amount of warmth that our skin needs after coming out of winter. Many peach and coral tones have too much white pigment that inevitably restricts who can wear it. Windflush leans more to neutral so it captures more skin tones. It is the perfect product to wear when your skin is transitioning from spring to summer before jumping into a bronzer. Just sweep Windflush across the apples of the cheeks and pull back towards the ear and fade out. If you have dark circles under the eyes, bring the colour slightly higher and cut in with a circular motion, just under the eyes, this will help neutralise some of the darkness. Finish the look by applying a wash of Windflush across the eyelids then add depth to the crease with Matte Eye Colour in Truffle with a crease brush. Line the eyes at the root of the lashes with Black Ebony Cake liner and finish the look with Extra Lash Sculpting Mascara in Black Onyx.

Apply SPF

It’s officially the summer holidays and if your bags aren’t already packed, now is the time to get sorted but first thing’s first. Luggage packing aside, the very act of flying depletes moisture from your skin and it’s super important to ensure you don’t arrive at your destination with dry skin, cracked lips, and an impending breakout. I’ve got you sorted to ensure you remain fresh-faced from one time zone to the next.

Use Products That Multi-Task

Apply Serum

Nothing ruins your hair light a long haul flight. Am I rights ladies? But a full-size aerosol spray bottle of your favourite formula won’t make it past security so instead, try a dry shampoo that comes in a powder formula to avoid the hassle of running out to buy the travel size. Just sprinkle a little bit at the roots and use your fingers to work it in.

Moisture is key so whether you prep your skin before you hit the airport or after the plane’s taken off, adding this one product into your skin care regimen will help your skin to stay hydrated. Using a serum under your moisturiser helps lock in extra moisture that you will need on a long-haul flight.

Thick Creams Are Your Friend

Apply a heavy moisturiser or even a night cream when you’re flying so that your skin soaks in as much moisture as it can and it will also help to create a sort of barrier. Then about 30 minutes before landing freshen up with a makeup wipe and apply a quick coat of makeup and you will arrive glowing.

SPF is super important, even on a flight, even though you are on the plane and not outside, you still need SPF on your skin as keeping your window blind open during daytime flights can cause skin damage, too. Apply a moisturiser with SPF pre-flight to protect your skin. Hand cream is a real saviour on a flight, lather it all over your hands and then use the excess on your neck. It also works as a great hair pick-me-up too for dry and static hair. Hydrating face mists are also a lifesaver to combat dehydrated skin mid-flight and this can work on your hands too not just your face.

Refresh With Dry Shampoo

Opt For Cream Make-up

Cream make-up products are more hydrating and are much easier to apply in your seat and take away the need for brushes. Pack a few key cream makeup products (concealer, blush and eye shadow) and everything can be easily applied using fingers or a Beautyblender from Sephora which saves space and makes it easy to reapply before landing. In what turned out to be a first in hotel experiences for us, it’s like every single person from the doorman to the bellboy, the concierge, the restaurant waiters, housekeeping, spa therapists and other members of staff we met, were all on the same page; happy, inviting, attentive and incredibly knowledgeable on all things Prague and Four Seasons. Also, this amazing hospitality was something we continuously saw and heard other guests praising, so service gets a huge tick!

A renaissance revelation

The 157 rooms and suites at this luxury hotel each offer an excellent amount of space, thanks to the unique layouts of the four buildings. We were to call the huge Renaissance Room home for a few days, and there was nothing but excitement upon entering. Firstly, this accommodation is the hotel’s largest guest room, being beaten only by the sprawling suites. You can tell that the room has been newly refurbished, however, what we loved about it was the fact that it still managed to reflect the architectural style of the Renaissance Building. High ceilings, tall, grand windows overlooking either the Monastery of the Knights of the Cross or the historic city centre streets, and traditional touches like Czech-style

For the love of food

There’s an overwhelming amount of Italian restaurants in Prague. Why? Well, we soon learn that it’s simply because the Czech people just happen to love Italian food. At the Four Seasons Hotel Prague, it’s CottoCrudo, a modern Italian restaurant, bar and lounge that flies the 5-star food flag. This is also the restaurant where you’re served breakfast. Now, let us reveal something. We’re not always ones to wake up for breakfast when travelling - sometimes you just want a lie-in, right? But, here, we were so in awe of the food and service at breakfast that we made it down every morning. Firstly, breakfast is served until 11am from a lavish buffet of local and continental favourites alongside a delicious a la carte menu. Try the mind-blowing Belgian waffles or the mouthwatering egg white frittata. In the evening, CottoCrudo is just as casually sophisticated. The menu is made up of Italian and Mediterranean dishes including fresh seafood, homemade pasta, choice meat cuts and artisan products from the Piedmont and Tuscany regions of Italy. Let’s dive into some of our favourites; the creamy Burrata was a big win at the table as was the creative and tasty red prawns with cabbage salad, parmesan cheese and hazelnut. The absolute standout was the Saffron risotto with roasted seabass, buffalo mozzarella and green pea purée - packed with flavours, textures and colour, this dish really took our breath away. For dessert, test (and treat) your taste buds with the chilled strawberry and rhubarb soup with sorrel ice cream and chocolate ganache - it’s just as good as it sounds! We have to give a huge mention to all the staff at CottoCrudo, who served us with the utmost professionalism, patience and the biggest smiles. A special shout-out goes to Martin who really went that extra mile every time; for sharing his insider Prague stories and always being so friendly and observant to all our food requests and social conversations. He made the start to our day much more positive and inspired!

Spa culture refined

panelling, hand-painted stencilling and a bohemian crystal chandelier, were all elements that kept us in good spirits every time we came back to the hotel after a day out discovering the city. Space is not the only thing that this room has. Luxury Asprey amenities are abundant in the large marble bathroom with a lovely, deep bath tub, spacious shower, excellent make-up mirror (ladies, you’ll be impressed), whilst the room has a refrigerated private bar, all your usual hot and cold refreshments and minibar goodies, a plasma screen with a good channel selection, and a fabulous seating and working area. Oh, and let’s talk about the bed - the down duvet and pillows were simply heaven to slip into after a day of walking - we slept like babies! We’d highly recommend this room for couples, friends and small families who want a taste of the traditional mixed with modern comforts.

Ava Spa had just opened a little before our trip to Prague and we were intrigued to experience the spa culture that the Czech are so famous for. Based on water and mineral rich products, exclusive facial and body treatments with moor muds are enhanced with a state-ofthe-art traditional Czech-inspired thermal baths menu. We tried the 50-minute La Boheme Massage, a relaxing head-to-toe treatment inspired by the Czech national tree. Sylva the therapist tells us that the treatment uses detoxifying and regenerating linden blossom oil as part of a soft massage, decreasing cold symptoms and encouraging healthy sleep. It was, honestly, one of the best massages we’ve had. Unlike your standard aromatherapy massage, Sylva really listened to our areas of concern and worked out all the troublesome kinks to leave us feeling completely invigorated. Intercontinental athenaeum athens

Out And About in Athens Centrally located within just a few kilometres to the Acropolis, the Parthenon, the Temple of Apollo and Plaka, The Athenaeum InterContinental makes staying in Athens a breeze. Entering the hotel, we are greeted by the ‘Blue Man’ art sculpture - a large blue glass man lit from within, holding what could be described as a break dancing pose. Throughout the hotel you will find many interesting sculptures, as the hotel’s owners also own a large art collection where they display certain pieces, within the hotel throughout the year. After a swift check-in at reception we are led to our spacious room. Once settled in, we opened the blinds to see an amazing view of the Acropolis which stood proudly in the distance during the day, but was even more spectacular as darkness fell over the city and the monument sat glowing on top of the hill. In the morning, we ventured into the historical neighbourhood of Plaka, with its beautiful cobblestone streets, colourful houses and

We spent the morning wandering around and then decided to head back to the hotel for a little R&R. Once back at the hotel we decided to cool off down by taking a swim in the 120-square meter pool surrounded by the terrace garden. After our swim, we visited i-Spa – Asian Spa, to unwind with one of their signature Asian style massages performed by highly qualified and experienced spa therapists who managed to release all the tightness and tension from the flight, followed by more unwinding in the beautifully designed steam rooms. Once we were feeling refreshed we ventured to the Acropolis, wandering through the ancient sites of the Parthenon, down to Dionysus Theatre, further on to the Temple of Olympian Zeus and finishing at The Arch of Hadrian. As the sun was setting we headed to the rooftop terrace on the 10th floor of the hotel, a spectacular way to end the day, soaking in the view of the setting sun across the city whilst gazing at the Acropolis. After a few cocktails; dinner was served inside the award-winning ‘Premiere’ restaurant. The gastronomic adventure began with a wax sealed envelope delivered to the table, inside were wafer thin pieces of lavash to be eaten with the first course. The meal was a visual delight created by Chef Michalis Nourloglou, each ingredient wearing a disguise, the fettuccini was actually squid, the bone marrow was really tender lamb fillet and the dessert was part of a plant. Each course was perfectly balanced with a combination of textures and rich flavours. www.ohlala-magazine.com

Travel Escapes Perched Atop Arriving from the high-speed ferry in Mykonos, we were greeted by our driver with a luxury SUV to transport us through the narrow winding roads to our private villa. Located 15 minutes out of the town centre our private 3-bedroom villa, one of the ‘Blue Villas’ extensive collections of luxury villas, situated on the hillside was the ultimate secluded paradise. The beautifully decorated living and dining room opened out onto a huge terrace with an uninterrupted view of the Mediterranean Sea. Downstairs the three bedrooms were equally spacious with beautiful traditionally designed bathrooms with a modern twist. Outside we had our own large private infinity pool surrounded by sun loungers and a huge outdoor entertaining area with an inbuilt table to seat 12, all with that incredible view of the sea. Once we had explored the villa we sat down with our private concierge Christie (the only Mykonos local to be a concierge on the island) who after getting to know our tastes explained what we might prefer on the island and referred us to the best beaches and restaurants. We ventured into Mykonos’ town centre and spent hours wandering the picturesque streets lined with the classic white houses adorned with coloured railings and beautiful flowers, stopping only to step into the quaint boutiques. For sunset, we visited little venice, luckily getting a seat by the water at one of the many restaurants to enjoy our delicious mixed drinks while the sky put on a show. The next morning our personal chefs visited our villa to prepare a traditional Greek breakfast for us, with plates full of tomatoes, fruit, olives, bread, eggs and an assortment of cheese all arranged for us to sit and enjoy that amazing view once again while relaxing in our own living room. The chefs explained that they can customise the menu to suit any taste and could also prepare lunch and dinner if we chose to stay in the villa for meals. On our final day in Mykonos we took one of Christie’s suggestions and headed to Scorpios, a beach club and restaurant built around a contemporary interpretation of the ancient Greek agora (market), incredibly designed with driftwood daybeds, wicker terraces and weathered stone walls all giving you the sense of being a world away from the chic white and blue colours of Mykonos. With delicious food and incredibly attentive staff Scorpios is a relaxed escape by day and vibrant social party spot at night.

The spectacular cliffs of Santorini greeted us as we pulled into the port aboard the high-speed ferry, a nerve wracking drive tightly winding up said cliffs while negotiating buses and cars was the start of our Santorini adventure. Once we reached the beautiful town of Oia (cue manic photo taking!) we easily found the entrance to our hotel: Hotel Santorini Secret Suites & Spa located on the main walkway. Luckily the staff were very helpful in carrying our luggage down all the stairs to our room as the hotel is situated on the picturesque cliffs covered in the classic white cave houses. Our room was spacious with modern decoration featuring touches of natural wood, a comfortable sitting area at one end and a large cosy bed at the other, divided by a tall wooden feature wall. The bathroom was exceptionally huge! The gigantic jacuzzi bathtub was big enough for four or more people. Stepping out of the room we found ourselves on our large private terrace with a spectacular view of the caldera, fitted with a private hot tub and sun loungers it was the perfect place to relax and watch the boats go by. We ventured down the stairs to the hotel’s infinity pool and bar, it was stunning! We spent the day relaxing on the day beds, drinking the most delicious cocktails and swimming in the warm water enjoying the uninterrupted view of the caldera. In the morning, we were welcomed by our made to order breakfast which we had filled out the night before and designated our delivery time - with so many incredible options on the menu we were overwhelmed! Each treat was tastier than the last. After feasting on fresh baked croissants, eggs benedict, local sausages, cucumber and tomato salad, fresh Greek yogurt, fruit and a bounty of Greek treats (the best loukoumades of our trip!) we decided it was time for some exploring! The hotel is perfectly located to walk around Oia and take in those picture-perfect views, we ventured over to Imerovigli and watched the sunset from Grace Hotel’s 363 champagne lounge. With chilled tunes and tasty canapes, washed down with Grace’s signature cocktail, the sun set front of us, turning every shade of red and pink. As our trip ended it was so hard to leave; it was made even tougher by the fact that the staff at Santorini Secret were so incredibly attentive, by the end of our three days we felt like old friends. In particular the hotel’s food and beverage manager, Manos, was there to help us with everything, he took time to explain the island to us, where to visit and where to avoid, arranged tours and restaurant bookings and even created custom cocktails for each of us.

After dinner aperitifs were expertly prepared at our table from the restaurant’s well stocked gin trolley, the extensive range of the juniper based beverages were mixed with various fruits and berries. I can confirm that on-trend gin craze is alive and well at MPW. Under the direction of Executive chef Gianluca, Frankie’s is back to its former glory with a renewed emphasis on fresh and seasonal Italian cuisine. All the classics like antipasti, pizza, pasta, lasagne, ravioli, tiramisu are featured on the menu alongside signature dishes, regular deliveries from Italy ensuring the authentic flavours. A wooden trolley laden with creamy buffalo mozzarella, seasonal colourful tomatoes and flavoured olive oils was wheeled to our table so my Caprese could be constructed by the chef, some may call this is a gimmick but I enjoyed the interactive experience. Talk us through her herbal teeth whitening treatment and how it works? The Herbal teeth-whitening has an active chlorophyll base ingredient (chlorophyll is a green pigment found in a plant). This is applied to the teeth and then activated through a safe light beam that is directed to it. This method is more effective if we do it three times for 15 minutes each time (the session will be 45 minutes in total), and the great thing about it is that it does not make the teeth sensitive as opposed to traditional and harmful teeth whitening procedures. How many shades whiter do you recommend? Each case is totally different, but each the teeth may be whitened from 8 to 10 shades in one session. What can patients expect to experience during the process? Some may feel a bit uncomfortable from having their mouths opened for 45 minutes but otherwise it is a non-painful procedure.

What results can patients expect and how will they differ from patient to patient? Just like we said, the teeth will become around eight to 10 times shades whiter. It will vary from patient to patient because each patient’s teeth may have different permeability and different enamel thickness. Is there any down time after the treatment? Absolutely not, patients could go back to their normal routine after the procedure. How can patients maintain their white teeth at home and how often should people come back to have it topped up? Patient may repeat the procedure every six months or one year. We also provide a free whitening kit to take home, so that the patient will do a maintenance session (at home) every six weeks which is very simple to follow. Tell us about your work with the Abu Dhabi Austism Centre? It was a pleasure for me to have spent time with the students of Abu Dhabi Autism

We caught up with Chef Heinz Beck, who after earning 3 Michelin stars for his fine dining at La Pergola, has become an authority on Italian cuisine for his “light and healthy Mediterranean cooking”.

T

he 54-year-old German chef who now has 11 restaurants around the world and holds several Michelin stars to his name, also authored numerous books, and projects with scientists concerning science of nutrition and digestion—a topic he is particularly passionate about. We had the opportunity to meet the godfather of Italian Cuisine on his last visit to Dubai and to talk about his Dubai restaurant Social and the future of fine dining. Is it named ‘social’ for a reason? How can you define Social? Because it’s a casual fine dining and not a formal fine dining concept. What we are doing here is a beautiful cooking of Mediterranean flavours, healthy and easy to digest. It is called Social because you can order many dishes to share a la carte, something which is not really possible with a more formal dining concept. So it gives a clear message: It is easy and we can accommodate different tastes or needs. So your restaurant in Dubai is more casual but does fine dining work in Dubai? Yes I think the demand is there. When we opened the restaurant we didn’t serve/propose any degustation menu but the demand is growing gradually throughout the years. Nowadays the degustation menu represents 30% of all dishes we prepare. The degustation menu is today part of the regular a la carte menu. The variety of guests is very large, like our menu is large as well. How many restaurants do you have around the world? Eleven restaurants which are all offering Mediterranean cuisine— two in Tokyo, two in Dubai, one in Portugal, five in Italy and we are just opening one in Monte Carlo before the summer. You are considered one of the godfathers of Italian cuisine. How would you define good Italian cuisine? First you have to define what is Italian cuisine because Italy is a very long country with French, Austrian and German influences in the north, Arabic influence in the south—the Arab-Greek legacy still lives on in the food culture of southern Italy. Montalbán said that Italian cooking is like Italy itself: It’s hundreds of cities with thousands of church towers. That’s like saying there are hundreds of cooking style with thousands of recipes. So there’s such a variety of cuisine, it would never be fair to nominate just one dish. I’m married to a Sicilian and I’m frequenting her family since 20 years and they explained where is this cooking coming from and its techniques. It is very important because Family and affection play a central role in the transmission of real Italian cooking and very old Italian traditions of cooking but once again my wife’s family is from Sicily only and nobody is Italy as a whole. What are a your signature dishes? There is no dish you will find in all the restaurants. Here now you will find the fagotelli carbonara or the delectable raspberry 1.1. We are

continuously changing the menu as per the seasons because working with fresh products is a must. Can we still find real traditional Italian cuisine in Italy? Nowadays, it is difficult to find some really good trattorias, especially in a big town like Rome. It is easier to find trattorias in small towns, or for instance if you go to Sardinia or in the Abruzzo mountains you should be able to find some family trattorias where the mum and the grandmother are still cooking. On the other hand are you ready to eat this kind of traditional dishes today? The are heavy and difficult to digest so not very convenient with our modern lifestyle. How much of a challenge is it to serve fine dining cuisine, while also focusing on healthy and nutritional value? Sixteen years ago, when I started working on health and foods with a research center in the university of medicine in Rome, some people thought I was crazy, but now everybody is talking about it—my dream becomes a trend. Out of all the fine dining chefs around the world I’m one of the most prepared as I have been studying ingredients, cooking techniques, combining menus and dishes in order to stimulate your stomach to digest better and to preserve

We still produce high quality food but our philosophy is to not only focus on high quality but also to help guests feel better. The German chef said that dining is not just about paying the bill, but it is also how you feel and wake up the day after. This should be the principle— we are what we eat so if you feed your body with high quality food your body will become more resistance. A big part of our diseases modern disease are related to wrong alimentation. I’m not a doctor; I’m a chef but I’m working with very most important professors of medicine to come with a lot a project about nutrition and alimentation. As you can see I don’t use the term diet as the it has a negative impact on the patient. The word “diet” comes from the ancient Greek, which means rule. In our society a sensation is very important, professors should come up with a new word with negative impact to the patient. What is your motto ? My motto is simple: Don’t stop before the good is better and the better is best. rego’s is one of the capitals most well-known restaurants thanks to its fun vibe, delicious food and attentive service. There are so many great options to choose from on the menu and the restaurant is always pretty much fully booked. The staff play a huge part in the restaurant›s success with their great knowledge and excellent service. Tucked away at the back of the Beach Rotana, the restaurant is busy and bustling so it’s recommended you book a table. In the cooler months the outdoor terrace is lovely but inside provides a nice experience too. We love the large rustic loaf of fresh bread they bring to you with chunks of fresh parmesan and olive tapenade. The menu is excellent with options including meat and antipasto plates, salads, pasta and risotto, pizza and mains such as veal Milanese and ossu bucco. To start we opt for the Caprese salad with heirloom tomatoes, taggiasca olives, basil pesto and the carpaccio of beef tenderloin, button mushrooms, rocket salad, parmesan, white truffle oil. Both are fresh and full of flavour and the perfect kick start to our Italian feast. We order two mains, the beef tenderloin and the sea bass. The prime beef tenderloin is perfectly cooked with a veal jus, roasted potatoes and steamed green vegetables. The sea bass is equally as good baked and accompanied by cherry tomatoes, olives, artichokes and flavoured with thyme. We are super impressed both dishes and both really hit the spot. The pastas and risottos on offer are definitely also worth a try along with the pizzas. There are loads of great desserts options too and you simply must try the traditional tiramisu and the Sicilian cannelloni and don’t forget to wash it all down with an espresso. There is such a pleasant atmosphere at this great restaurant and it works well for a business lunch or dinner with friends and as a couple. Mission : B ikini B ody You’ve worked so hard on sculpting yourself into shape but then you sabotage that dream body as soon as you hit the holiday buffet. Our resident columnist Lena Dobschall tells you how to maintain all that effort. We have all been there. The bikini body that we worked so hard for is basically gone by day two of our holidays. But why is this happening and how can we make it stop? For most of us the reason for slightly losing shape during the summer is a pretty simple equation: we’re in a holiday mood and calories don’t count anymore! But even for those who are strong enough to resist gelato and dolce, the struggle seems to be real. There are some obvious and some not so obvious pitfalls during our holidays. Let me point some of them out and give you a few hints on how to avoid them! My top 10 tips to keep your bikini shape even after the holidays:

Steer clear of buffets

Don’t ever book all-inclusive holidays! You will dig your own grave, or rather dig into a buffet three times a day. Buffets have two pitfalls: first of all, the food that is offered is almost never fresh and healthy! Obviously an oily and overcooked lasagna stays hot and tasty for a longer time than a freshly made salad or steamed vegetables (also: who has ever picked the steamed veggies from a buffet?!) Secondly, a buffet always makes you eat more than you normally would, because you want to taste everything and also you paid for all of it so why not use it!?

Stick to your normal eating habits! We usually don’t eat beans, sausages, pancakes, croissants and omelettes for breakfast all at once, so why should we do that during the holidays? The same goes for desserts. We normally don’t always eat dessert, but during the holidays we somehow always end up ordering something! Watch it ladies…

No extras: Make sure to notice and cut out unnecessary calories. When we go for dinner we only count the pasta dish that we ordered but what about the bread basket with aioli that we had while waiting for the pasta? Or the cookies that came with the coffee? If the waiter asks you if you want to have extra cheese on your pizza / fries on the side /crumbles on your icecream / sugar in your coffee... Say no! Cut the extras! The basics are more than enough!

Careful: drinks can be calorie bombs as well! We all know that soft drinks are not the best choice if you’re planning to make an appearance at the pool, but what about these drinks at night? Sugary cocktails easily have 500-600 calories per glass and let’s be honest: we never leave it at one glass especially not during the holidays! So order your drink as plain as possible: first of all this makes you drink slower, so one glass lasts a bit longer and you will most probably drink less on one evening, and secondly you’re saving calories on sugary juices and syrups.

GO sightseeing! Walk a lot! Don’t take the metro, bus, taxi or Uber! Put on a pair of sneakers and discover your holiday destination by feet! Walking burns around 200 calories per hour – a great way to compensate that ice cream or the extra glass of wine. And also - who knows what you could miss around the corner!

Get active on the beach instead of baking in the sun the whole day! Beach tennis or volleyball, swimming, snorkeling or just long walks in the sand are great to burn some calories without losing the fun factor. You can also create a little holiday routine, for example 20 pushups, 20 situps, 20 squats and 2 minutes rope skipping every day when you wake up every day before you go to bed. This might not count as a proper workout, but it will set good intentions for the day.

Preparation is everything

Most people already fail when they pack for their holidays. Bikini – check! Sunglasses – check! Workout gear - ? Let’s be honest: Most of us forget to put trainers and gym clothes on our packing list, but if you’re serious about your ‘mission: bikini body’ then preparation is everything and you should knock out every excuse for not working out.

Book two or three early morning activities in your vacation plan like a hike, a yoga class or a surf lesson. This way you are not only bound to be active, but also more likely to not overdo it the night before (those downward dogs don’t come easy with a hangover.) You would probably drink less and go to bed an hour earlier – et voila: only benefits!

“Before you judge me, make sure you’re perfect” Miss Ohlala resolves to turn over a new leaf by only offering advice to friends when asked.

A lady recently approached me to tell me that babies suffocate in slings. That sort of interfering advice is always unwanted. Aside from the fact that I didn’t consider it to be any of her business, I have read relevant advice on baby wearing safety and taken what I consider to be an informed decision to wear my baby in a sling. Unfortunately, it seems that from the moment you have a pregnancy bump, strangers will feel compelled to question your parenting skills and foist their opinions on you. A friend of mine was recently scathing of parents who brought a lunchbox for their toddler to a BBQ. It occurred to me afterwards that perhaps the toddler has a gluten or other allergy. She might even have a pathological fear of BBQ food. I know I shudder at the thought of cremated sausages which are common in BBQ season. Whatever the reason, I know it was not appropriate for us to judge the parents, especially without full knowledge of the circumstances. As a result, I’ve resolved to try to only offer advice to friends when asked, and to be less judgmental generally. I’m less than a week into my new resolution and have already struggled to refrain from giving unsolicited advice on numerous occasions. My first instinct upon hearing of someone’s difficulties is always to launch in and offer what I consider to be helpful solutions with the genuine aim of assisting others. I’ve come to realise that this approach can be patronising and annoying. When a close friend whatsapped me this week regarding a personal family matter, I forced myself to take a step back and realised that she is fully aware of the potential actions she could take and the merits of each, but what she needs from me is an outlet to rant. My role should be to listen and sympathise rather than assume the role of agony aunt. This resolution is proving much harder to keep than I anticipated! Food for thought.

I don’t take criticism well. Having recently received some unwanted and unsolicited advice from a family member that was hard to swallow, I am live to the fact that unwelcome advice can be very annoying and hurtful – especially when it feels more like criticism than help. In fact, “hard to swallow” is an understatement. On this particular occasion, I stormed out of the house in a fit of anger, took hours to calm down and swore never to forgive or forget such unsolicited comments. Getting unwelcome input from people you don›t know is plain annoying. Receiving the same remarks from close friends or family can feel mortally wounding. When there is something bothering you and you reach out to friends or loved ones for consolation, the last thing you need is a barrage of advice that leaves you feeling worse than before. We live in a very judgmental world. I know I am guilty of making snap judgments, particularly when it relates to parenting. And that’s not something I am proud of. Unless you are living a person’s life, you don’t know what decision is appropriate for them to take in any given scenario. 98
