t is issues like this that really get me thinking about my own life. With Inspirational Women being our main theme this March, I have taken a step back and started to evaluate the wonderful moments and the epic fails so far. When I was about 16-years old Jack Russell, the author Don’t Tell the Bumble Bee”, told me that a human being only uses 0.03 percent of our potential. In the grand scheme of things, we all have the ability to be SO much more than we are now. But is it too late to change? Never. From now onwards, I will pick up that book instead of that magazine before I fall asleep; I will bookmark BBC News rather than Facebook as my homepage; I will take inspiration from those who haven’t had the easy ride in life and note their accomplishments. Perhaps I just needed to hear other women’s personal triumphs to realise that mine need to be worked on. March is looking up for Bahrain. The plans for the F1 are underway, where the island now has the chance to redeem itself once again, and like us, show its full potential. The one thing I am overly excited about is the Spring of Culture that is taking place throughout March and April. With acts coming to Bahrain from all over the globe, there is a show for everyone. Whether you want to be wooed over by the romantic sound of Julio Inglesias, wowed by Andrea Bocelli, memorised by the Tap Dog’s dancing talent, or witness

the theatrical performance of the cast of the Knuffle Bunny (a great one for the kids too), be sure to get involved at one or many of the events that are on offer. This year is set to be the best year yet. And, if you are looking for the ideal getaway, a chance to jet off for some much needed quiet time, check out the travel section. Having visited Nepal before a fair few years ago, these are four destinations that would be ideal to de-stress, relax and witness a culture that you may never have had the chance to appreciate. I have been busy spreading the Ohlala! name all over the Kingdom — not only are we now joined with X-Clusive as their official media sponsor, we are also partners with Bizladies, the American Women’s Association and Mums in Bahrain. Check out our website for their links and keep your eyes peeled for their upcoming events. That’s me for now!

resh and modern, Tagz white interior is awash with colourful accessories, and the window displays feature elegant Swarovski strands, while silk purple ottoman adorns the floor. The boutique focuses on a wide range of handbags — everything from totes to clutches and wallets in numerous styles and colours — as well as unique jewellery creations. We fell in love with Tagz’s trendy and well-crafted, luxe pieces by worldrenowned brands, such as Love Moschino, Longchamp and Ishraya — all exclusive to Tagz. The boutique is the perfect shopping destination for women to spoil themselves with affordable, contemporary luxury accessories. Chatting about how the concept of the boutique was conceived, Ali Alawainati, Department Manager of Retail Fashion at Ashraf BGDC says, “The group identified that there is a niche in the market with a big demographic on the island who cannot afford to overspend on a single handbag, but still wish to look great. Currently, not many stores focus on providing affordable, contemporary accessories that are as equally fashionable and well made as luxury products.” 28

It is seldom that you discover individuals in Bahrain who all share the same compassion to help others. The Palm Association however, is one organisation where each committee member is passionate and determined to make a difference. Zara de Haldevang talks to the charity’s committee and one woman, fortunate enough to receive their help, to find out more. The Palm Association Initially the brainchild of two expatriate ladies, Kirsty Shaheen and Jenny Sale, and founded in 2000, this charity has set the bar high in making considerable and permanent changes in the Kingdom of Bahrain. The committee is run solely by women, whose primary goal is to provide help and assistance to Bahraini families and individuals. Having established and maintained close relationships with local communities, the Palm Association has been able to utilise their resources where they are most needed. For each project, no matter the size, the women approach it with the same attitude where they are there ‘to make a difference’.

what accomplishment you make, somebody helped you.’ In each stage of my life there were great people who helped me, encouraged me, and pushed me to the next stage.” Although the University sponsorship is not an annual scheme, as it fundamentally depends on donations, there is great hope that it will be awarded to students in the future. Maryam adds, “The beauty of giving exceeds the beauty of taking. Therefore I hope that the graduates give back to their country in any way they can.”

Projects Throughout the past decade, there have been a considerable number of successful and ongoing projects. Their main venture has been “Feed a Family” where food parcels are sent to 155 families, often widows or divorced families, spread across the Kingdom. Each parcel‘s food is sourced from local firms in order to keep the costs low and contains the bare necessities, such as rice, oil, sugar and lentils. The Palm’s method is, “Hands on and practical; the Palm is not a handout,” according to Eibhlin Crosse, the Palm’s Chairwoman. University Student Sponsorship One of the charity’s chief focuses is education as it is, “The key to a rewarding and fulfilling life.” Following a one-off generous donation from Esterad, The Palm’s “Sponsor a Student Scheme” enables students, who are unable to afford higher education, to study at Bahrain University. Four graduates, who have recently earned their degrees from the Royal College of Surgeons Bahrain (RCSI), were fortunate enough to be chosen for this scheme, one being Maryam Darwish. Having been sponsored by The Palm Association to complete a Masters in Nursing at the Medical University of Bahrain — a branch of the Royal College of Surgeons in Ireland (RCSI) — Maryam decided that continuing with her education was her highest priority in life and is filled with gratitude about being made able to do this. ”I would like to thank Dr Anne Lindsay, the Director of Masters in Nursing at RCSI-Bahrain, for her great support and encouragement during the study period. Dr Anne is the one who introduced us to approach the Palm Association instead of taking out personal bank loans to pay for our studies.” So how has Maryam’s life changed since her scholarship? “I am proud to say that I am now working as a lecturer for the Healthcare Assistants (HCA) in RCSI-Bahrain. My sincere appreciation goes to Professor Charles Docherty, Head of Nursing and Midwifery, who designed the HCA course and gave me the confidence to run the course. To celebrate Bahrain’s largest series of art and cultural events, The Spring of Culture, worldwide acts are gathering together on the island to put on a spectacle like no other. Every act has its own tale to tell but for Tap Dogs, the history behind it and success stories stand out as some of the best. Zara de Haldevang delves into the dancing phenomenon that is Tap Dogs.

ost of us have all been lucky enough to watch a musical, whether it is an amateur production or perhaps a West End-esque performance. The thrill of watching a live show is one that cannot be matched. But what truly makes it more exciting is when you know how far the cast have travelled, physically and emotionally, to make it all possible. Tap Dogs is set on a construction site in the steel works town of Newcastle, just north of Sydney, Australia. The team is made up of eight members: six dancers and two musicians, who collectively combine their skills to create one spectacular, live theatrical performance. Reminiscent of the incredible and world-famous Stomp, Tap Dogs works with its beat, where the cast perform challenging acrobats in water, upside down and even jumping through scaffolding to bring their steel-works alive. Behind every success there is a story; what once started as a show of six young guys fifteen years ago, is now a worldwide phenomenon. Its creator and choreographer, Dein Perry, has travelled a long way from a garage behind his dance teacher’s house in Newcastle, where he and his ‘dogs’ first learnt to tap. Seventeen and minimal hope in pursuing his dancing career, Dein earned his union papers as an industrial machinist and later moved to Sydney to attempt to break through the barriers of show business. Dein’s big break eventually materialised after he was cast in the longrunning Sydney production of 42nd Street. With dancing now firmly running through blood, Dein went on to create a contemporary show based around the themes of his industrial experience. A small government grant, a reunion of his old friends, and Tap Brothers was formed. This new set-up was the start of amazing things to come. Having been offered the opportunity to choreograph the West End musical, Hot Shoe Shuffle with his group, Dein earned his first Olivier Award in 1995 and continued to go on and collaborate with designer and director, Nigel Triffitt from the Sydney Theatre Company to create Tap Dogs. 37

Art & Culture

“A global dancing phenomenon.” An instant hit when it premiered in January 1995, the revolutionary show became infectious; Tap Dogs success spread to the Edinburgh Festival and London’s Sadler Wells. In the past decade, the show has become somewhat of a masterpiece; as well as touring all over the globe, the team have appeared in over 330 cities on six continents and been seen by over 11 million people. And if those statistics aren’t impressive enough, Tap Dogs has also racked up some memorable milestones: An Olivier Award-winning, sixmonth run on London's prestigious Shaftesbury Avenue; conquering New York and America; winning over 11 international awards for the show's creators Dein Perry, Nigel Triffitt and Andrew Wilkie, including a Pegasus Award at the Spoleto Festival in Italy and an Obie in New York, and achieving a worldwide television audience of 3.4 billion when a thousand Tap Dogs’ performers appeared in the Opening Ceremony of the 2000 Sydney Olympics. Whether you are a fan of music, dancing or talent, this show is one not to be missed. Catch Tap Dogs at the Arad Fort on April 5 and 6 at 8.30pm. 38

Women in Power

A Global

Female Bond

On March 8 the world celebrates International Women’s day with the focus on connecting girls and inspiring minds around the globe. Women from all walks of life are capable of success, which comes in many forms. Fulfilment may be the reward of achievement and is gained by meeting and overcoming challenges. Ohlala! features just a few of the women on the island, who through ambition, hard work and determination are an inspiration in their own right.

A

nnually around the world, thousands of events occur not just on this specially dedicated day but throughout March to mark the economic, political and social achievements of women. Organisations, governments, charities and women's groups across the globe choose different themes each year that reflect global and local gender issues. If only there was enough page space to feature every one of the inspirational women, of which there are countless, that live, work and contribute to Bahrain’s community. For these women it’s clear that the words “I can’t” and “Impossible” are not part of their vocabulary, and in honour of all females worldwide, they prove that by making your own choices you can achieve your own personal goals. “A woman is the full circle; within her is the power to create, nurture and transform.” Diane Mariechild The founder of Think Pink Bahrain, Julie Sprakel orginates from Australia with an Australian mother and a Dutch father. From the age of four she had always wanted to be a nurse as she wanted to help others, and with that goal did whatever was in her power to experience many opportunities. She finished her BSc in Nursing in 1995 and worked at the largest public hospital in Sydney, in the Anesthetic and ICU departments before travelling to live and work in the UK. After further studies in the UK, she came to work in an ICU, within a Bahraini local hospital. Think Pink Bahrain was born from an idea about giving back. Julie was taught by her parents at an early age that, “You never know if your ideas will work unless you try them.” The inspirational thing about Think Pink Bahrain is that the team is made up of likeminded women with the same mission and vision, which they channel in the one direction. Everyone has a talent, what is rare is the courage to follow that talent. Think Pink Bahrain’s success is due to the support from the local community, but largely the inspirational women that make up the team. They each educate, support and guide people touched by breast cancer, and make a difference in their lives.

Not only does she hold a strong passion for work but one of her true loves in life is to meet and work with new people. Her love of fashion, art and people are not the only factors to push her to succeed in life — it is in fact the prospect of something new and exciting, which makes her appreciate and try harder every day. Fully understanding the difficulties for women in the business world, Nada describes her current jobs as ‘demanding but satisfying’ and advises women to continue to stay patient, maintain their determination and never forget their vision.

“Do not set yourself any limits. Pursue your passion and try not to fall prey to stereotypes of any kind. The sky is the limit!” For a woman who is yet to reach her thirties, Eman has achieved a lot in a field typically dominated by men. With a diploma in Aircraft Engineering from Australia, she found herself being the only female engineer in her batch sent by Gulf Air for training. Joining the airline in 2004, she has since pushed her limits by working with dynamic teams to improve her skills and capabilities on a daily basis. But why engineering? Eman has always had a dominating desire to take things apart and put them back together, so when the opportunity arose to apply as an apprentice engineer, she didn’t have to think twice. What really keeps her in this line of work are the constant challenges and teamwork. Her management team continuously offers it’s full support and fellow colleagues make work a ‘true pleasure’, ultimately leading to her increased commitment. An average day for Eman is far from an office desk job; when she isn’t changing wheels or checking pressure, she is ensuring aircraft safety and maintaining responsibilities that keep her mentally and physically challenged. And her words of wisdom? “Do not set yourself any limits. Pursue your passion and try not to fall prey to stereotypes of any kind. The sky is the limit!” www.internationalwomensday.com

“Embrace those that support and encourage you in achieving your dreams and fulfilling your vision. Never doubt yourself.” Having the achievement of being the first female captain of Gulf Air under her belt, Vanessa from Belgium depicts the ideal definition of a female role model. From the age of 16, after her school organised a ‘meeting day’ designed to engage students to discuss future career opportunities, the last career Vanessa ever imagined of having was that of a professional pilot. The idea, however, never escaped her mind, and her passion and continuous strive for excellence has resulted in life-changing achievements. Having completed her Air Transport Pilot Training from Sabena Flight Academy in Belgium and the USA, she started flying with Brussels Airlines as a First Officer on BAe146. As well as a current pursuit for an MSc in Air Transport Management from London City University, she is a member of the NinetyNines, an international organisation of women pilots and Guild of Air Pilot and Air Navigator (GAPAN). Now the first female captain of Gulf Air, a job she claims cannot be competed with, and describes it as ‘the ultimate job’, Vanessa has strong advice for anyone else looking to follow this line of work, “Embrace those that support and encourage you in achieving your dreams and fulfilling your vision. Celebrity Scoop

Secret Symphony Katie Melua has had an amazing string of hits since arriving on the music scene in 2003. As she prepares for the release of her fifth album, Secret Symphony, Ben Whittaker speaks to her about music, life and almost a decade in the business.

Celebrity Scoop

atie Melua has never let success go to her head, despite the fact that she is one of the best known and loved artists in the music industry. Born and raised in Georgia, Katie moved to Northern Ireland as a child and then to England as a teenager when her family relocated. “My life today is very different to how it was as a child, so I don’t tend to take anything for granted,” she says. “Living in Georgia I would sometimes have to climb five flights of stairs with water for the family, so my first experience of running water and a warm bath was almost as exciting as having my first hit single!” Katie was discovered at a Brit School showcase by producer Mike Batt who quickly signed the 18-year old to his own Dramatico label. Her first single, The Closest Thing to Crazy, was picked up by Radio 2 and played regularly by firm fan and the then breakfast show host Terry Wogan. His support raised her profile in the UK and when her album, Call Off The Search was released in November 2003, it entered the Top 40 Album Charts. “Things started to move quite quickly from thereon in. I got to perform on the Royal Variety Show and by January 2004 my album was number one,” says Katie. Call Off The Search went on to sell over 3.6 million copies worldwide and her star was certainly in the ascendancy. Three more albums followed, all major successes, and Katie went on to perform all over the world. By May 2011 she was number two in the under 30s rich list and had established herself as one of the bestselling international artists of her generation. With the forthcoming release of Secret Symphony, Katie’s enthusiasm and professionalism still shines through. This time there’s a broader, more orchestral flavour that she has wanted to achieve for some time. “The idea for Secret Symphony started after I did a concert in Stuttgart in 2008. I thought I would love to do an album with a full orchestra, and after my last tour, I discussed the idea with Mike who was very excited and supportive. I am really happy with the finished product. I hope my fans will enjoy listening to it as much as I enjoyed making it.”

With a tour planned to support the new album and a special summer event at Hampton Court also scheduled this year, Katie certainly shows no signs of slowing down. “I love touring and I love being on stage,” she tells us, “The hardest part is the travelling but when you have a new audience every night, with fresh faces responding to your performances, it brings a renewed impetus to everything you are doing. “It’s that feeling that brings a genuine sense of uniqueness to every gig.” Being a star has always been secondary to being a musician for Katie, and while fame has brought its benefits, it was never fame that drove her ambition. As a consequence, she has many interests that drive her. “My private life has always been very important to me and because of that I keep what goes on outside work away from the spotlight; that way it’s easy for me to remain anonymous a lot of the time. “I love being with my friends, and family is very important to me. When I can find the time, I also indulge in a spot of gardening and like to go to gigs.” So who inspires her and what is she listening to at the moment? “I grew up with an eclectic taste in music — everything from Eva Cassidy to Joni Mitchell to The Beatles made it onto my play list. In fact, I was on the Parkinson show in the early days with Paul McCartney and he was kind enough to compliment me on my work, which was a massive thrill for someone who had always loved his music with the band. These days I love everything from Keane to Coldplay and if I had the chance I would like to perform with Joni Mitchell.” So how difficult an environment is the music industry for a woman? “I’ve never encountered a problem. There are so many great female artists emerging right now that you’d have to say the future is pretty bright for female talent. However, I do think there is still some work to be done on the behind-the-scenes element of the business, where sadly men greatly outnumber their female counterparts.” Katie also recently announced her engagement to World Superbike racer, James Toseland. “We got engaged in December but when he asked me I really wasn’t expecting it, so it was the best present you could have for Christmas!” Secret Symphony is released in the UK on March 5 and Katie’s new single Better Than A Dream is released the week after. After nine months of feasting on unusual cravings, whether it’s pizza topped with lashings of caramelised banana or a jar of pickled onions on the hour every hour, you finally have your little bundle of joy‌ plus that not so little bundle of baby bump fat. Giving birth is a victory; losing baby fat can be a battle. Fear not! Ohlala! takes advice from certified strength and conditioning specialist and rehabilitation expert, Craig Bunting, Head Tutor at LIA-Qatar, the first full time Fitness Certification Academy in the Middle East. 78

S

leepless nights with a newborn can truly take its toll, and exercising after giving birth may be the last thing you crave. However, baby’s bump doesn’t just vanish when Junior leaves the womb, so what to do if you want that Yummy Mummy figure back? Can you safely slip on your trainers and work off those ‘eating for two’ days? The question is, “How soon is too soon?” C.B. It’s a fact that every woman’s body is different; and some will return to their pre-baby fitness levels quicker and with less effort than others. For those whom it might take a bit longer, it is vitally important to relax, take stock, and remember that with consistency and patience it will happen. There are some general guidelines to follow that will help those looking to get back into shape when the time comes. The stronger you are when you go into a birth, the faster you will recover afterwards. This is a good reason to try and remain physically active during pregnancy, even though for some women it can be tough. I highly recommend that caution must always be observed. Several postural changes occur during pregnancy, which can lead to back, hip and knee pain. Furthermore, hormonal levels also place the muscles and ligaments under more strain, which can lead to aches and sprains. After a natural birthing process, it is recommended that a six to eight week rest period be followed to allow the body to heal and recover. Caesarean births require more time and women are recommended to wait at least 12 weeks before starting back into exercise. In both cases, it is highly recommended to start slowly; focus on the body’s inner core muscles that help to stabilise the spine and protect against back pain and other dysfunctions.

A version of the Plank exercise Core Stability versus Core Strength: When I ask my students what exercise category ‘The Plank’ would fall into, the majority say ‘core stability’. Wrong! Core stability exercises barely stress the body. If the muscle(s) are working properly, you should barely notice the exercise at all. It can be compared to a low wattage light bulb; always on but not burning a lot of energy. There are few people who can do ‘the plank’ exercise and not notice it. Therefore, it’s definitely a core strength exercise — a good one to practice although one that takes more effort. Get lean: You can do this by building a good amount of lean muscle on your body, while safely and gradually decreasing your body fat. This causes your metabolism to skyrocket as lean muscle requires more calories to maintain than fat. Other benefits include an increase in strength and every one of us can benefit from being stronger. Exercise becomes easier and you’re less likely to suffer injury. A major contribution is nutrition; you cannot out-train a bad diet. If you are aiming to decrease body fat and tone up, you will need to study your current eating patterns and be willing to make changes. How much change will depend on how flawed your nutritional habits are (most of us are capable of convincing ourselves that our nutrition is better than it actually is). Bonus Tip: Always listen to what your body is telling you. Always exercise with caution when first getting back into the gym. If you experience any discomfort whatsoever, you should stop immediately and consult your GP for further advice and guidance. Helping Newborns

Dr Srinivas Akasam

Nothing can match the feeling of holding your newborn in your arms for the first time. But what happens if your baby enters the world in an unhealthy condition? Dr Srinivas Akasam, a Pediatrician from Bahrain Specialist Hospital, talks about the importance of neonatal weight gain and nutrition.

T

he most fragile moments for a child are the first few days after his or her birth, especially so if the child is born prematurely as specific nutritional goals must be reached. Babies born after less than 37 weeks in the womb, technically classified as ‘premature’, have very different nutritional needs than full-term births. Early births often require time in the neonatal intensive care unit (NICU), where they will be carefully monitored to ensure they are receiving the correct balance of fluids, minerals (such as 80

Ohlala! I March 2012 I www.ohlala-magazine.com

sodium and potassium) and nutrition until their bodies mature. The incubators keep the babies warm while the humidified air helps maintain the right body temperature and avoid fluid loss. One of the prime issues for newborns is feeding. When born before 34 weeks, the newborn often can’t feed from a bottle or breast as they have trouble coordinating sucking, breathing and swallowing. Newborns with breathing problems, very low oxygen levels, gagging, circulatory problems, blood infection or other illnesses may not be able to feed orally through

the nipple. Very sick babies must start to receive nutrition through a vein, as their health stabilises and they become bigger and stronger, breast milk or formula can be fed through a small tube inserted through the nose or mouth into the stomach, referred to as gavage feeding. A second important issue is a newborn’s nutritional needs. Preterm babies are prone to lose more water through their skin or respiratory tract. This is due to crucial organs, such as the kidneys, that have not had enough time to grow to control their water levels in the body. In order to reduce

the chances of dehydration, the NICU team keeps track of how much urine the baby is losing and makes sure the child’s fluid intake is necessarily supplemented. Dr Srinivas also emphasises the importance of breast milk from the baby’s mother. Research has proved that, “Breast milk protests babies against infections and sudden infact death syndrome (SIDS).” In the case when the own mother is unable to produce milk, donor milk from the milk bank is available to very high-risk babies. Unlike full term babies, premature neonates have not been in the womb long enough to store up the nutrients they need. For this reason, they are given a supplement containing vitamins A, C and D, folic acid, iron, calories and calcium; many babies must be continuously fed this after they leave the hospital. It is imperative for a baby to gain weight in the early stages of its life, therefore neonates are weighed everyday to make sure they weigh as least four pounds before they are allowed to come out of the incubator.

Cultural Cuisine Take your taste buds on a Southeast Asian journey through the authentic flavours of Thailand, Indonesia, Vietnam and Malaysia at the Wok, expertly cooked by Chefs from the region. Images by George Mathew

B

e transported to high-class Southeast Asia as you enter the Wok restaurant at Sofitel Bahrain Zallaq Thalassa Sea & Spa, with it’s richly textured décor, open kitchen, heavy teak tables, Buddha statues and authentic wood beam ceiling. The soft lighting, flickering candles, and relaxing Asian mood music, create an intimate ambience to ensure an enjoyable dining experience. Whether you wish to sit with friends and family on large, quality bench seating, enjoy the fresh air on the terrace, have a romantic evening on cosy tables for two, or enjoy some privacy in a room with sliding doors, Wok caters to all your needs. For a quiet evening or alone time, head down to the Wok on a week night. However, if you prefer the atmosphere of a bustling restaurant, your best bet is to dine on the weekends. Attentive servers in Asian-inspired dress will welcome you with warm towels and fresh Vietnamese rolls, while you browse the extensive menu, which they will be happy to guide you through, recommending refreshments to compliment your meal. The Sous Chef, who orginates from Vietnam, promotes the dishes from his homeland as the recipes focus on very fresh, healthy ingredients, which have medicinal properties and lots of flavour, but are soft on the palate without the fiery kick of other Asian foods. They are genuine, traditional Vietnamese and an integral part of the culture. To begin with we were served up freshly made Dim Sum of king prawns and bamboo shoot in translucent pastry and Seafood Siew Mai Dumplings topped with Wasabi Tobiko. They offer a tasty blend of textures — melt-in-your-mouth pastry, crunchy shoots and tender prawns and hammour — offset by the hand made sauces with fresh herbs and condiments 83

Fooding

Then followed Goi Vit, a Vietnamese salad of roasted duck breast with shredded banana flower, young papaya, and bean sprouts, marinated in a sweet and sour fish sauce. A beautiful combination of flavours and textures with the crunch of roasted nuts, fresh coriander and a little kick to the taste buds. Treated to a range of Wok specialties that really did taste as amazing as they were presented, we sampled Sambal Udang, prawns cooked in chilli tamarind and belacan, a Malaysian dish with a robust, distinctive flavour; Cha Ca La Vong, marinated sea bass in a mixture of galangal, turmeric, shallot, shrimp paste and sour rice with fresh dill, and a compliment of prawn crackers and fragrant herbs; plus Tom Hum Rang Muoi, deep fried lobster with salt, pepper and fragrant herbs. The latter two, deriving from Vietnam, we personally recommend for their fresh, aromatic flavours, which are a delight to the palate. We’re advised the lobster is only cooked in a little oil and separately from the other ingredients to ensure its dry texture and lively garlic tang. The sea bass is grilled over charcoal for a subtle smokey taste. If your appetite will allow, sample the traditional desserts. Xoi Xoi consists of warm sticky rice timbale garnished with fresh mango slices and crispy green sticky rice, topped with mango coulis, which is a firm favourite of the Ohlala! team, or you can’t go wrong with Indonesian banana fritters — delicious! 84

ot only is this recipe simple, but it’s healthier than regular truffles because of the special ingredients used. When sourcing the ingredients, buy the best you can afford in their raw, natural state. You can find them in most health food stores or in the health section of major supermarkets. Cacao powder is made from the ground raw nibs from the cacao pod with the fat removed and is not processed like cocoa powder. Real cacao chocolate is a superfood that’s packed full of powerful antioxidants that help neutralise free radicals from the effects of aging. It also contains micronutrients like potassium, zinc, magnesium, and iron for radiant skin, healthy hair, and strong nails. Moderation is still key as all chocolate contains caffeine, which triggers a stress response and surge of adrenal hormones. Maca, a root from the Andes, is known as an adaptagen because it increases our ability to handle stress by strengthening our adrenal glands.

METHOD Evenly oil 12 mold cavities with olive oil and place in the freezer to chill for at least 30 minutes. To test if it’s cold enough, drop a small amount of liquid chocolate onto it; it should solidify right away. To make the raspberry sauce, combine the raspberries, dates, syrup and water in the blender and blend well. Leave to one side. To make the liquid chocolate, place the coconut oil in a mixing bowl and whisk in cacao powder, mesquite powder, and agave syrup (if using) until smooth. Place a sheet of parchment paper on the counter. Pour the liquid chocolate carefully into the chilled tray cavities. Avoid spilling outside the molds. Let set for a few seconds, and then turn upside down to empty the liquid chocolate left in the molds on to the parchment. Then turn right side up. The molds should be lined with a thin layer of solid chocolate. Use a knife or spoon to clean the edges around the outside of each mold. Place the raspberry sauce carefully into the cavity of each chocolate mold. Pour on another layer of liquid chocolate to fill each mold to the brim and seal them closed. Place the filled tray in the freezer to harden for several minutes. Remove the mold from the freezer and turn upside down over parchment paper or a tray, and tap to release the filled chocolates from the tray. Enjoy immediately, or keep chilled in the fridge for up to three days. Recipe adapted from Ani’s Raw Food Desserts by Ani Phyo 87

Ultimate Destinations the Lone Traveller

Lao Tzu once said, “The journey of a thousand miles begins with a single step.” — How better than to take that single step on your own? The common perception of travelling has suffered a dramatic change over the past decade. For many, the idea of going solo is deemed as being ‘too scary’ but how do you know if you have never tried it? Zara de Haldevang checks out the top four destinations designed with your safety in mind. Nepal

For the active woman there is no better holiday to go on than one which involves adventure and exercise. Draped along the greatest heights of the Himalayas, Nepal marks the location where the heat of the Indian plains meets the ice-cold of the mountains. Known for some of the best trekking on earth, the country’s three great mini kingdoms, Kathmandu, Patan and Bhaktapur, are home to some of the most sophisticated urban cultures and world-class artistic and architectural heritage. Nepal stands as one of the few locations where you can trek for weeks without the need for a tent. One trekking magnet is the Abode of Snows, located in the Kathmandu Valley, where even the most novice of hikers can reach ultimate limits. Your search for an adrenaline kick doesn’t have to stop there; white-water rafting, kayaking and mountain biking are all available to travellers. If you are a fan of catching a glimpse of one of the Big Five, Chitwan National Park is really where you should go. Here you can trek on foot or elephant-back to view some of the most endangered species on our planet. Nepal stands as one of the most diverse and interesting countries to visit, where any and every traveller will already be planning their trip back to this exciting destination. 90

Vietnam

Vietnam is hands-down the most female-friendly travel destination in Southeast Asia. Known for their curiosity of the Western ways, the local people embrace travellers, so much to the point that many visitors consist of mothers and their children. What was once perceived as a problematic issue, the improved education system means that the language barrier poses little issue for English speakers. Perhaps the hardest factor for the lonesome traveller to overcome is the existence of poverty found in the tiny mountain villages; areas such as Sa Pa are the homes to indigenous hill tribes and still suffer greatly from a serious lack of wealth. If these sights are prone to evoke your sympathy, then sign up for volunteer work at an orphanage with the Global Volunteer Network, where you can really make a difference by helping those in serious need. Preparation is key when travelling to Vietnam. With the visa situation in constant disarray, it is safer to obtain a visa before arrival. Numerous online agencies can issue a visa but a letter of approval is also necessary to enter the country. Air is by no means the only way to enter the country; the bordering countries Cambodia, China and Laos all offer road and train networks accessible by foreigners. No visit to Vietnam is complete without seeing it from all angles, so make sure you spend some time at sea. This country is renowned for its untouched beauty, hidden heritage and breath-taking views — it would be a shame to not visit here while this lasts. www.globalvolunteernetwork.org/vietnam/ 91

New Zealand

Here’s a fact for you — did you know you are more likely to bump into sheep here than a human being? With an estimated 4.2 million people living in this country, this utterly unspoiled and photogenic destination is one that will literally leave you breathless every time you open your eyes. This isn’t just a place to visit to marvel at the incredible landscape, this is where you go to discover glaciers, bungee jump off hanging cabins, rent a camper van and drive for miles. New Zealand is also the spot to go for backpacking. You really have to give both islands enough attention as it would be a shame to miss out on everything it has to offer. Start in Auckland. To really get off the beaten track check out Stray Travel, a company that provides unlimited rides on their provided buses, so you can hop on and off whenever it pleases you. There are also accommodation options to accompany it, so you can pre-book hostels or lodges to ensure your get a good night’s sleep. Franz Josef, on the south island, is where the glaciers are and is truly worth your time. Make sure you check out Makarora, and of course, Queenstown before you hit Christchurch. Queenstown is the home of the Nevis Highwire bungee jump, the highest commercial bungee in the world at 134 metres above the Nevis River. Or perhaps try skydiving, mountain climbing, skiing and snowboarding (season permitting), hand-gliding… the list is endless. www.straytravel.com 92

Singapore

Western travellers have always been daunted at the prospect of visiting Asia due to the dramatically different cultures and languages found in every country. Singapore, however, is one location deemed as a safe, English-speaking and an easy-to-navigate island nation just off the southern tip of Malaysia. If this is your first time to the ‘Far East’, then you couldn’t choose a better spot. Singapore adores tourism with an abundance of events on offer throughout the year to encourage visitors to watch the spectacles and take part in different cultures. July sees the Singapore Food Festival and in the autumn, there is the Singapore Sun Festival; a celebration of music, art, literature, film, wine, food and wellness. So how about absorbing some of the heritage. No trip here would be fulfilled without visiting all the different ethnic quarters, including Malaysian, Indian, Peranakan and Chinese. ‘Hop-on, hop-off ’ bus tours really are the way forward as you have the freedom to spend as much time as you like at each stop. The Fountain of Wealth, which at 216 feet wide is the Guinness Record approved largest fountain in the world, is located in the Suntec City shopping mall and is a must see. The best thing about Singapore is the accessibility to travel on to other destinations. Flights are cheap and frequent, so Thailand is next on your cards (friends recommended), the fee is low and the experience unmatchable.

Diva Drives Beautiful lines, well-honed proportions and neat styling details make the Audi A6 a fine-looking sample of a German luxury sedan. Audi A6 2.8 FSI Quattro 2012

Indeed it is a great looking car — inside and outside. The car looks exquisite and feels expensive inside, thanks to choice materials and surfaces that not only look good but are also tactile and soft to the touch. Audi is a leader in automotive LED light technology, being the first car manufacturer in the world to introduce it, and it gives that extra oomph to the look of the car, but the A6 is more than just good looks. Powered by a fuel-efficient V6 direct fuel injection engine with 208-horsepower, it accelerates from 0-100 kilometres per hour in just 8.1 seconds, not lighting fast but quite respectable for a car of this size. The A6 is loaded with top-notch technology from driving systems and safety features to infotainment. Available systems include, for example, adaptive cruise control with Stop&Go function, automatic parking, head-up display, lane assist system, night vision with pedestrian detection, mobile WiFi hotspot, adaptive headlights, and the list goes on… The A6 boasts the Audi drive select system with four modes to choose from: comfort, dynamic, auto and individual. The individual mode means that you can control the steering, throttle and automatic transmissions behaviour to suit your desires. My personal favourite was the dynamic mode, which immediately gave a far sportier feel and more punch to the drive. The A6’s permanent all-wheel drive system ensures the car has a fantastic grip and agility, and paired together with the brilliant dynamic steering system, give the driver great confidence when tackling twists and turns. If you are one of those ladies who is not confident with parking, the automatic parking system comes in very useful. It searches for suitable parking spaces along the road or car park by means of ultrasonic sensors, calculates the ideal parking path and performs the steering action virtually automatically. The steering is initiated by the vehicle, the driver needs only to accelerate and apply the brakes; a clever piece

of technology that does the job. The MMI (Multi Media Interface) controls entertainment, communication and navigation functions via the dash-mounted popup screen; and a knob and buttons on the center console. The system boasts logical menus and crisp graphics with an attractive dash layout. Connecting my iPhone with the Bluetooth was very easy, and I could immediately listen to music from my phone and enjoy the excellent sound system. The A6 has a five-star safety rating and comes with plenty of safety features. It has dual front, front and rear side airbags and full-length curtain airbags that come into play if the anti-lock brakes and stability and traction controls fail to help you avoid the collision in the first place. My test A6 came equipped with front and rear parking sensors, blind spot monitors and a reverse camera, which are not only convenient but also great safety features. The reverse camera shows what is going on behind the car and the on-screen guide illustrates the vehicles projected trajectory. The blind spot monitors are also a great help. The system "watches" your blind spot for you and illuminates a light in the side mirror when a car is positioned where you might not be able to see it. If you signal to merge into that lane while the car is in your blind spot, the light will flash to catch your attention. The A6 is an ideal small family car. If you have young children it has the ISOFIX child seat mounting for easy installation of safety seats. The rear is spacious enough for older kids too, and the Wi-Fi hotspot facility will be a hit with them for sure. Audi certainly know how to design a car and the A6’s stylish and elegant exterior as well as well-appointed contemporary interior ambience are a testament to that. We like! Images by George Mathew

Horoscope

March Happy Birthday Ms Pisces

March is your month, so you can expect good things over the coming weeks that will help to improve the way 2012 unfolds for you. That doesn’t mean there won’t be challenges, just that you will be able to overcome them. Financially you could be called upon to help a family member who is in serious need of your assistance but it will mean executing some serious diplomacy if you are to keep everyone happy. The chance for a holiday break may also present itself around March 23, so make sure your passport is in date! On the work front, you may be given the opportunity to embark on a new venture that might require some investment on your part but could offer a big return, if you are willing to take the gamble.

February 19 – March 19

Pisces — at a glance

Pisces is one of the most creative signs in the Zodiac, which means they are both imaginative and understanding but also some times unrealistic and impractical. You are also very romantic and love any pursuits of the arts. Your sign loves the idea of love and you want to be wanted as a person. In a negative way this can sometimes make you a little needy and your loyalty can see you giving more than you receive. You are also a very sensitive person and do not like your family balance upset. As a consequence you do not reveal a lot of your private life to those outside of your close circle unless you really have to.

Romance could be a key feature for your sign this month as a trip away rekindles the fires of a relationship that has come under strain lately. Whether it’s a weekend or a week, time spent in a fresh environment will also help you develop fresh ideas, so all in all it will prove to be a positive experience. On the health front you may need to re-evaluate your diet so be sure to deal with the issue, otherwise it could cause further complications if left untreated. Finally, look for positive news in the mail around March 7 to really set up your finances.

TAURUS (April 20 – May 20)

March could be the month of transition for your sign as you look to move your career into a new direction for 2012. It might be a decision you have been contemplating for a while now and perhaps is a little overdue, but once your mind is made up, you should grab the opportunities it offers with enthusiasm. Financially you could have to restructure a business approach but this is going to prove a good thing in the long term. Lucky 13 is your number of fortune as is the number nine, so utilise them where you can.

CANCER (June 21 – July 22)

The time for being afraid of taking a chance has to be put behind you Cancer if you are ever to make any headway in your life and attain the success you crave — both at work and in a relationship. Where career is concerned you need to learn to speak your mind and the ideal opportunity will present itself to you in the second week of March, so do not run from the chance to make your mark. Missing out will see you having to wait a hell of a long time before you do so again. On the relationship front, a partnership, which has not been going well, needs to be ended before the two of you start resenting each other. You cannot stay with someone out of pity, and if that is your only motivation then you should get out now!

VIRGO (August 23 — September 22)

Finally, your stand out month is September in matter of finance.

Scorpio (October 23 – November 21)

This is the month that you change career and for many of you this will mean a stint in the limelight, so be prepared to step into the spotlight. For your usually secretive and internal sign, it could be the door that opens your personality up and brings a new sense of confidence to you. From here, luck will come to you in a red outfit with a white bird tattoo and could mean financial rewards if you are quick to react. Overall, it’s good news in all areas of your life so prepare for good times to illuminate your immediate future.

Capricorn (Dec 22 – January 19)

There will be many opportunities for you to make amends over the coming weeks for harsh words said in February, although effort and desire on your part are going to be required if you are to make any significant inroads. On the top of your list is career, with March being a crunch time for you to make a decision about where you are going and what you want to do. A change of job will be presented to you but if you don’t have the courage to take the chance then you may regret it later. On the home front a parent could be ill around the latter part of the month and you will need to take time out to look after them.

GEMINI (May 21 – June 20)

On the relationship front you might be pulled into line by a partner who is desperate for commitment from you and now might be the time to decide whether you want to move forward and take the final step or call it a day before things get too serious. The choice is yours. Health wise, you need to take care of yourself — especially if your work involves any heavy lifting or strenuous exercise since there are warnings of back trouble. Finally, think carefully about a business approach by a colleague who may not have their numbers quite right.

LEO (July 23 – August 22)

Hope will exist in all situations at all times, no matter how bad things may seem. Bear that in mind when you negotiate your way through this March. On the work front you could be offered a job abroad but for those of you who have family commitments you should think carefully, no matter how good the package might appear. You cannot ignore your responsibilities. In any matters regarding health you should be careful to guard against injury to your feet, especially near water.

LIBRA (September 23 – October 22)

A job offer you may have recently accepted will see you accepting a post — that although well paid — could be not only much harder than you had anticipated but also with a company who are much more unstable then you first realised. So, don’t go out on any spending spree before you are settled, otherwise you could be left with a whole lot of debt and no income to pay it with! On the relationship front, you may find that the strains of a serious commitment are taking their toll and what you honestly desire now is space to exercise your personality.

Sagittarius (Nov 22 – Dec 21)

A current relationship has reached its course and the new love you were seeking to pursue has been dragging his or her heels to such an extent that you are now feeling most disheartened. However, good things are predicted for you in the first six months of 2012 especially as a new career you have been waiting on finally kicks off and through this venture you will also discover the answer to all your emotional problems. All you need to have here is a little faith. On matters of friendship you should consider the feelings of a close companion who you have possibly hurt or even ignored over the last few weeks.

Aquarius (January 20 – February 18)

The obstacles that have hampered your progress over recent weeks will finally be overcome and you can look forward to a more fluid and positive period in your life starting from this March. The world will seem a much better place and you will discover things about your inner self that were previously smothered by your concerns. On the relationship front, you will find love and romance hitting an all time high as you get closer and closer to what can only be described as your true soul mate. Your partner means business here — for life — so only say “I love you” if you mean it.
