The Look “I chose this outfit as I had a pool cocktail party followed by nightclub event on the same evening so I wanted something cool and comfortable but bright and fun that wouldn't look out of place at either venue. I put loose curls and a quiff in my hair to add volume.” Accessories “I love animal prints, which is why I added the belt and shoes in leopard print. Fashion Loves Brand: Carvela for Kurt Geiger shoes; they always have a great funky range with the highest heels.

Designer: I love so many designers but at the moment my favourite is Monique Lhuillier who I discovered recently while shopping for wedding dresses. Her range is very simple, chic and feminine.

Spring Summer Trend: Nude clothing with fluorescent accessories — I love the two opposite ends of the spectrum coming together.

Buy: I just bought the most amazing Carvela for Kurt Geiger black hoof wedge sandals from Harrods. Very Lady Gaga! Place to Shop: London because you have everything you need all pretty much on one street. I also love Bali for the little boutiques scattered over the island — very individual, one-of-a-kind pieces.

Emma’s Favourites Club/Bar: Block 338 is always a favourite. Great outdoor area for when the weather is right and always good tunes inside when it's time to dance. I like Mei & Yu for when I want to go to a friendly bar without having to leave Amwaj. Restaurant: I love Masso in The Palace Hotel — their Foie Gras is to die for!

Celebrity: Leonardo Dicaprio — I've never seen one of his films that I didn't think was absolutely excellent so I always look forward to his new releases.

Holiday Destination: Hawaii! My husband and I are planning on taking our honeymoon there. I've always wanted to go and I recently introduced my husband to surfing so he's really keen too. Quote: "These things happen." 24

I

know what some of you are thinking right now. We have all waited a year for Ramadan to debut its return and just like this summer sauna sun, here it is! This month sees the return of daytime fasting, no loud music, no drinking or smoking in public (probably about time we all stopped anyway) and no sneaky coffee breaks out of the office. This isn’t my first summer Ramadan — having lived in Oman for 10 years, I can safely say Bahrain is a much cooler place to be. So, if you have all been doing your homework and taking the advice from the Ohlala! team, you will all be fit and ready to tackle it headstrong… and if you haven’t, then I wish you luck! Despite the heat, many of us still have to train and work outside, so make sure that you’re rehydrating at the same rate that you are sweating (and no, a double caramel full fat latte from Costa, or beverages of the wheat or grape variety — do not count! Opt for spring water or juices instead) The last thing you want is to end up with severe sunstroke and an aching set of kidneys!

July in a Nutshell This month is already panning out to be one of the busiest. One of the main themes this summer is ‘giving’. Having featured the Palm Association before, it is fantastic to see so many people giving up their time to help others in need. There 26

Qatar was recently shaken to the core by a tragic fire that claimed 19 lives. Still reeling from shock and grief the community is pulling together to raise funds for those that died. Lisa Travell talks to residents Liz Husain and Khalifa Haroon about the Little Angels Ribbon Appeal. 28

O

n the morning of May 28 the residents of Qatar started their day as normal. Children were dropped at nurseries; the same routines repeated, just as they had been countless times before. But this day, which started just like any other, was to change the lives of so many forever. Indeed the events of May 28 will change Qatar itself forever. The fallout from this tragedy has also affected other countries in the Gulf, as shocked people and companies now move to take extra measures to ensure that this dreadful event will not be repeated. That day 19 people lost their lives in Villaggio Mall, 13 of those that died were children, with triplets and three siblings among them. What started as a small electrical fire in Nike was to prove fatal to all trapped in the nursery, Gympanzee, on the first floor of the mall. Two of those that lost their lives were brave firefighters attempting to rescue the trapped children. Doha is a small community and we all know someone affected by these tragic events. Even those not directly affected have shared the outpouring of grief that has engulfed Qatar and the surrounding region these past weeks. We have all hugged our own children and realised with a mixture of relief — and a degree of guilt — that could have been us. We have all felt a certain inadequacy, a need and want to help, even in some small way. Liz Husain and her friends Samantha Taylor and Susie Scarlett have done just that. In conjunction with Khalifa Haroon, Founder of iLoveQatar.net (ILQ), they have launched an appeal to raise money by making and selling purple ribbons for the families of those that lost their lives that fateful day. Liz has five children of her own and speaks of the emotions she felt when the news broke. “It was just so heartbreaking. I couldn’t stop thinking about the innocent children, the teachers and firefighters, and your thoughts immediately go to the families as well. Words cannot express the grief and heartbreak they are going through.” It was this tide of emotion that prompted Liz to start the ribbon campaign. “Everyone was just so moved by the tragedy and it was the need to offer love, support and comfort for the families that really started it all. I know money cannot bring their loved ones back but families of people like the teachers and firefighters need the support as their loved ones were often the sole breadwinners. I contacted ILQ and together we planned as to how best to do this.” Khalifa has been key is helping set up the campaign and indeed played a significant part in reporting the tragedy. "I'm proud that iLoveQatar.net can keep giving back and continue to support the community. “When we first heard of the tragic events both iLoveQatar and DohaNews proved that citizen journalism is something that's very important in keeping everyone aware and connected. My role in all of this was to help support community initiatives, and I think that

the Little Angels project is one that shows how big people's hearts can be. “Extra big thank you to Liz for putting this all together and doing all the hard work. I'm glad that we could be a part of that,” says Khalifa, expressing his admiration for Liz. Liz hopes that these ribbons also prove to be a tribute. “By wearing a ribbon we remember them, each one of them. The colour purple was chosen in remembrance of the little boys and girls, and we remember the teachers and firefighters for their dedication and bravery, like the Purple Heart. Purple also symbolises calm and comfort, which is my hope for the families as they face this most difficult time.” Ribbons are available at the majority of schools but with the summer break upon us Liz is now focusing on other organisations. “We hope to reach out to more people, to sell through individuals or companies etc. You can find more details on our Facebook page or on Twitter,” she says. All funds raised will be divided and sent through the relevant embassies or direct to the families. Liz has been amazed at the show of support they have received to date and sums up the community of Doha. “The outpouring of love and support from everyone shows how much we care. “Art which is decorated and fake is hypocritical”

T

he project “Shanty” speaks volumes about the differences in the modern world between the extremes of wealthy and destitute. The video is set in an impoverished area and shows the challenges that five characters face whilst struggling with poverty and its influence on their daily lives. Faisal elaborates on the inspiration behind the project. “I wanted to illustrate that one of the major issues in the world is scarcity. There is a massive gap between the rich and the poor, and it is getting bigger. This social divide caused by disparity of wealth is one of the major problems across the globe, and because of it, many people are forced into drugs and prostitution. Poverty has a way of manipulating the individuals into slums.” The video-installation aims to show true art, an art that does not hide, as Faisal believes, “art which is decorated and fake is hypocritical“. Due to Faisal’s fresh perspective, this artistic piece of work has a unique way of educating and graphically depicting previously glossed over issues that affect a large portion of the earth. The characters portrayed are forced to follow different paths in order to maintain themselves in the most severe conditions. However, each one is united through poverty — they all walk down the same long, narrow and impoverished alleyway. When they reach the end of the path, they knock on the glass in an attempt to catch the attention of those on the other side. The glass symbolises the obstacles they face and the divide between those who reside in the shanty and the rest of society. Only by smashing the glass can they become re-engaged with the rest of civilisation. When asked about the objectives of his work, Faisal tells Ohlala! “I hope this project will help people. I am not saying it will solve all their problems; art does not always find the solution, but it can raise awareness. “What has always provoked me is when I see reality being made to look completely fake and distorted, as if we were all wearing horse blinkers. One of the roles of art is to portray a realistic depiction of the reality, the truth of all truths.” It is without doubt that "Shanty" lays bare an authentic picture.

The hard-hitting reality is visually given life, thus making it difficult to ignore — one of the outcomes that Faisal intended for the project to achieve. Faisal has been a long time campaigner against factitious advertising. One of his previous works, "Distorted Reality" featured him wrapping rough canvas around his head and body, contorting his posture, twisting his limbs and covering himself in folds of fabric to the point of near suffocation. The metaphor behind this idea is that reality itself has become warped and distorted. “People are manipulated by advertisements, ”Faisal says, “You see young girls who become anorexic, as they strive to mirror the unachievable perfection of the female image portrayed in the adverts they see in magazines, when the actual reality is that these photographs have had Photoshop techniques applied to them to make the women look better, slimmer and more attractive. It is a distortion of the truth.” We asked Faisal what advice he would give to young aspiring artists. “Don’t believe everything you hear as some advice may not be in your best interests. Be sincere, be yourself, and have faith in what you do. Art which is not truthful will not be remembered.”

Bold and courageous in appearance and colour, they leave an indelible impression while embracing today’s empowered woman.” ust turning 24 with a wealth of experience already under her belt, Bahraini Sofia Al Asfoor is a genuine, determined successful designer and entrepreneur. “While growing up in Bahrain there were very little opportunities for creativity, but I was inspired by my father Mohamed Al Asfoor, who is my idol, and the brand he created Designer Shaik. He also gave me the opportunity to travel and attend universities around the world until I found my true passion.” Having completed an Art and Design Foundation course at Kingston University in the United Kingdom, Sofia then travelled onto Milan, where she studied Womenswear and Textiles. Her third port of call was Parsons in New York, where she completed a semester of Design and Management, before completing her studies at the London College of Fashion, where her concentration fell on the design and production of leather goods and handbags. “I have been working on my creations since my year at LCF in 2009. I decided to move forward on this exciting journey by opening my company last November when I attended the entrepreneurship program with UNIDO (United Nations Industrial Development Organisation). It has been a rollercoaster ride ever since!” Sofia’s company, simply named Sofia Al Asfoor, is a unique find on the island. The bags, which are set to be launched at Saks Fifth Avenue after Ramadan, are all Arabian inspired and stem from her ambition to create art using leather. She tells us, “The collections allow the consumer to enhance the statement of one’s self with distinctiveness as an expression of their true sense of style and prestige status. The bags are designed to satisfy one’s needs and made to exceed clients’ expectations with their quality manufacturing and premium leathers. Bold and courageous in appearance and colour, they leave an indelible impression while embracing today’s empowered woman.”

This young lady, who definitely seems to understand the many intricacies of the luxury market, says, “I am constantly reaching for new opportunities whilst bridging the gap between the old and the new. I strive to keep tradition close to heart but the future even closer.” With an ever-increasing demand for fashion in the Gulf, it is refreshing to meet a member of the younger generation, so determined to leave her mark. “My primary goal is to offer products with the cultural values they embody; blending tradition with innovation as well as kindling dream and fantasy.” The bags, which are all distinctly recognisable by the trademark 3D pyramid design, “act as a shield of protection in today’s high-pressure world.” The idea was actually born after a trip to Selfridges in London, where a piece of artwork in the window display created a spark of genius in Sofia’s mind. The Exotic Shield Collection is strictly bespoke designs with certified exotic leathers ostrich and croco lined with lamb leather. And Sofia’s personal style? “Forward with appreciation for the past; I like to channel what most would describe as 'edgy' but for me it represents originality. I suppose that's why I love vintage and heritage too, for its detail and authenticity. Power is how a woman chooses to present herself and her style ultimately defines that power.” With a host of ideas for the future, there is no stopping Sofia. “I am all for female empowerment, especially in this part of the globe. Having just released her fourth album Let It Break, Gemma Hayes talks to Ben Whittaker about the change of direction in her musical career and why TV and cinema have proved to be the way forward for her writing abilities.

Celebrity Scoop ven though she could arguably be cited, as one of the best female singer/ songwriters of her generation, Gemma Hayes has never really gained the commercial success her talent deserves. Now into her second decade of music, this thirty-something artist has lost none of the ability that has made her such a darling with the critics. Unlike so many of her contemporaries there is an unpretentious honesty to her voice that has drawn comparisons with the likes of Joni Mitchell and Beth Orton. With the release of her fourth album — Let It Break — we see a more mature and accomplished artist who has lost none of her desire for her craft as Gemma tells us. “The industry has changed so much since I first started my career and although there are a number of new channels to promote yourself as an artist — such as the Internet, TV and movies — it is no less challenging. “I have always found myself drawn to atmospheric music and although that isn’t the most commercial approach to take, at this stage in my career I want to produce material that is more rewarding to me as an artist. I love cinema and Let It Break was written with cinema in mind.” Her first single, Shock to the System is a well crafted, haunting love song that grows on you and forms one of the many highpoints on the album. Gemma’s passion for words and music shines through as she tells us, “I love the writing process and because a lot of what I compose happens to sit comfortably in the realm of indie movies, I consider each song to be a mini-story, so there is a symmetry to the method.” A lot of Gemma’s music is now heard on TV shows such as Vampire Diaries and Pretty Little Liars and this is becoming a medium that showcases artists who may not take the traditional route to success through radio and music TV. “It’s funny in a way,” she admits, “whilst my songs don’t get played as often on the radio, I hear them so much more now — especially in the States where I’m based at the moment.” Irish by birth, Gemma Hayes was born in Ballporeen, Tipperary, where she grew up in a very musical family as one of eight children. “Dad was a pianist and he used to play to us. In my teens I would also often play the piano as a way to relieve the boredom of life in a small village. “By the time I moved to Dublin I was working part-time during the day and then playing in as many clubs as I could in the evenings to get myself out there,” she adds. “Obviously the Internet wasn’t the proficient tool for circulating your music it has become today,

so catching the eye of a roaming music executive was always the priority.” Gemma looks to return to LA because she believes the city to be the “hub of all that is going on in the business” but it also happens to be the place where her current partner lives, and it has been a struggle being away for so often. “It’s been intense trying to have a long-distance relationship and I am keen to get back to the States on a permanent basis. I seem to spend a great deal of my life in transit — I guess that goes with the job to some degree because of the amount of touring involved. “To be honest I love travelling and touring gives me the opportunity to meet new fans in their own countries as well as experience a little bit of the flavour of their individual cultures. There are still quite a few places in the world I’d like to visit and I’m definitely keen on the Middle East. That’s one place I’d like to do a concert. I’m certainly open to any invitations,” she finishes with a smile. Still passionate about her craft, Gemma concedes that the older she gets the simpler everything becomes for her in the music business. “The industry is a machine and you just need to learn how to manage it. My music has never let me down and I am at my best when I’m composing but the trick to longevity in this business is to do it because you want to. The day I stop loving my art is the day I probably look to switch careers!” Does she have any regrets? “Not so much a regret but I am sure that I would not release an album completely on my own again. That was just too hard and very difficult not to ‘drop the ball’. It takes a lot of energy to write, produce and market your work. The only thing I am certainly sure of is that I will always write — even if nobody listens — as long as I want to.” Outside of her career, is there anything Gemma would like to do? “I would love to finish my degree. I was studying history, sociology and psychology at Dublin University before I dropped out to focus on the music.” And what does she do to relax outside of her work? “Well, I am a bit of a fitness freak,” she confesses. “I have a fascination with nutrition and although I’m not quite as careful as I used to be, I’m still amazed at how food can affect people, and dismayed at how much advice people seem to ignore. California is all about health and beauty but the same can’t be said for the rest of America.” Gemma is currently doing a number of shows in the UK and has a warm affection for England, somewhere her first album did better than anywhere else.

Not so much an overly elaborate look (you’re among friends), but not extremely natural either: a few touches of colour on the face for a groomed look, and a few well-chosen stylish accessories with personality. If you are staying in a Luxury hotel? LP. Enjoy! OE. It’s a little bit more “civilised” here. You get dressed up in the evening! tretching the right muscles, for the best amount of time with the correct technique will allow your body to work and move in the right way. This enables you to be in a winning position to achieve great things whether it is fat loss, posture correction or athletic enhancement. Half the battle when it comes to stretching is simply doing it. Stretching can be boring for those who are not used to it. Choose The Right Stretches To stretch correctly it is useful to have a detailed knowledge of the anatomy. It is important to focus on stretches that will be useful to your personal makeup and any problems arising from exercise.

Stretch tight, restrictive muscles that pull your body into unwanted postures that over time will result in pain and discomfort. Ignoring these muscles and continuing to stretch only the muscles that are too long and weak will only serve to exaggerate the imbalances within your body. A highly skilled, qualified Personal Trainer will be able to provide a postural assessment and then create the most appropriate programme to suit your individual needs. Women tend to be tightest across the shoulders and chest, the hip flexors and quadriceps, and the calves, which is down to the stresses of everyday life, the natural design of the pelvis, and by wearing high heels, respectively. The stretches illustrated can help in starting to relieve these problematic areas. Hold It Holding a stretch for a reasonable length of time is absolutely essential, but many people ignore this vital point, stretching for only a few seconds per muscle. Make sure you hold the stretches on tight, restrictive muscles for at least 20 to 30 seconds. You could hold the stretch for longer without problems, but not enough time will do little for your health and fitness levels.

Technique When it comes to fitness, technique is paramount. People tend to neglect the correct form and without knowledge of the anatomy will be stretching the wrong muscles. It is vitally important to know the difference between right and wrong technique. Wrong technique combined with insufficient holding time is wasted energy. Make sure that you reap the benefits of stretching by getting an expert to show you. Seef Dental’s newest addition to its team of experts talks to Ohlala! about why dental health is vital to one’s overall wellbeing, and why children need to see the dentist from a young age.

A

dentist… is a dentist… is a dentist. Right? Well, Dr Patrick Bounassif will prove you wrong. One of the first things he talks to us about is how important it is for children to see the dentist from a very young age. A specialist in Orthodontics and Dentofacial Orthopaedics with experience spanning nine years in the industry, Dr Patrick campaigns against the usual advice given by most dentists to parents, to wait until children reach 14 or 15 years of age. “By that time, problems may have already developed for the child,” he says. His advice is for children to have dental treatment “as soon as parents see the onset of a problem such as teeth overcrowding, misalignment, etc.” Dr Patrick explains that if their dental problems are addressed when they are still growing, the dentist is able to work with the development stage of the teeth. Seeing the dentist early means that any problems children may develop in future may be prevented, for instance, the misalignment of teeth. It took the clinic two years for them to find someone of Dr Patrick’s calibre. He obtained his qualifications from St Joseph University in Beirut, Lebanon and from Tweed Foundation in Arizona, USA. Apart from his current stint here in Bahrain, Dr Patrick also operates his private dental clinic in Beirut; and along with other specialists, practices at two other polyclinics, also in Lebanon. Describing his specialisation, Dr Patrick differentiates Orthodontics as being focused on correcting the arch of the teeth, overcrowding or the discrepancy in teeth alignment (all of which are normally corrected through the use of dental braces). Dental Orthopaedics on the other hand is not merely correcting teeth overcrowding or misalignment. Rather, it looks at the bone structure, which conforms to the smile of the face so the procedure looks at the patient as a whole, with a treatment plan individualised according to each patient’s unique concerns. So what satisfaction does Dr Patrick get out of his job? “When I know that I have achieved my dental goals; that I was able to set the right smile for the patient, not just any,” he says. Dr Patrick says that he has always wanted to follow this career path. Having gone through medical school before he chose to pursue dentistry as a specialisation, he tells us, “I love dentistry more than any other field in medicine because it’s like architecture. I’d like to think of myself as a smile architect.”

If you have a large window, and not a high ceiling, it is always preferable to give the impression that your ceiling is higher. Choosing a fabric with bold vertical stripes will enhance the illusion of height, or if you prefer, put a vertical leading-edge border in a complementary colour on the inner side. By extending

If you want to dress your windows to impress, accentuate the feeling of height by avoiding cluttering the dropping of the fabric with the use of swags, tails and other embellishments. This could give your windows a very statuesque and majestic look. In modern architecture, bays and windows are often used by architects as statements of their style. If this is the case then it’s advisable to be simple and discreet with the fabric and colour of your curtains. Always value the architecture by adopting the “less is more” philosophy; it’s very important to keep the inside outside equation in symbiosis. Using a heavy print or pattern will lessen the intended statement and could clash with the spirit of the design. If you are a person who gets bored easily it’s also recommended to banish strong colours and heavy patterns and instead to favour light, neutral colours. This way you are unlikely to get as tired as quickly than you would with an overwhelming fabric.

With one billion Muslims around the world observing Ramadan, it certainly is the highlight of the year in the Islamic calendar.

his year, Ramadan begins on the evening of July 19 and ends exactly 30 days after on August 18. Please be aware however that these dates may vary. If you’re not a Muslim, you may not know what the holiday is about, so we’re giving you an easy guide to the do’s and don’ts, plus some extra tips so you’ll understand more about the Holy Month celebrations. Ramadan offers a lot of great principles — from being kind to those less fortunate, to consciously putting a cap on lying, through to purifying the mind, body and spirit throughout the month-long fast; all very inspiring principles — no matter what your religion. First, the basics. Ramadan is the ninth month of the Muslim calendar. The Islamic calendar is lunar not solar, hence, Ramadan begins on a different date each year — whenever the first glimpse of the crescent moon, in the ninth month, appears. Muslims fast during this period for an entire month and devote their time to worship and contemplation, focusing more on their faith and less on the concerns of everyday life. During the Fast of Ramadan, Muslims observe strict restraints on daily living. They are not allowed food or drink during daylight hours; smoking and sexual relations are also forbidden during fasting. At the end of the day the fast is broken with prayer and a meal called the Iftar. In the evening following Iftar, it is customary for Muslims to go and visit family and friends perhaps for a late evening Ghabga. The fast is resumed the next morning after Suhoor, which is the meal before sunrise. 64

Observing Ramadan Do’s Dress appropriately Both men and women must dress appropriately. Do not show too much skin and make sure hemlines and necklines are modest. Exchange Ramadan greetings It is customary to use the greeting “Ramadan Kareem” and at the end of Ramadan, during the Eid celebrations, “Eid Mubarak”. Respect those fasting The fast of Ramadan is a test of one’s patience — within themselves and others, a commitment to an idea or belief. As such, fasting can be an ordeal even for Muslims (but one that they welcome and adhere to out of religious commitment and the sense of umma or global community) and can affect some people’s temperaments; therefore be considerate towards the people around you. Accept invitations Be gracious and do go along if invited to an Iftar. It’s best not to go empty-handed though and desserts are always a good option to offer the host. Avoid eating or drinking in public places From dawn to dusk, no one is allowed to eat, drink, smoke or chew gum in public places as a sign of respect to those fasting. If you wish to eat or drink you may do so in private places. In some countries in the Gulf, one may face serious legal issues if seen consuming food or beverages in public.


Don’ts Do not play loud music Playing loud music at home or in the car should be avoided. Ramadan is a time for prayer and spiritual reflection therefore such things are considered disrespectful. At the time of Azaan (call to prayer), the sound of music or TV channels should be put on mute. Avoid driving during dusk At sundown people head home to end their fast, therefore if you are not required to be on the road, refrain from doing so and wait for half an hour. Do not swear, shout or get angry in public Swearing or any form of outrage is disrespectful to people as well as to the holiness of the month, as Ramadan is a time of patience and controlling emotions. Do not engage in public displays of affection It is against the customs of the country to engage in displays of affection in public, and even more so during the month of Ramadan. Do not offer food or drink Do not offer a Muslim food or drink during fasting hours, believing it to be an act of hospitality. However, they will understand and appreciate this gesture and not find it offending.

How Can Non-Muslims Enjoy the Spirit of Ramadan? The Holy Month is celebrated as a time for spirituality, reflection,

sharing and helping those in need. There are several ways in which non-Muslims can participate and imbibe the spirit of the month. Be aware of events and activities going on in your community and find out how you can join in. Help the needy Lend a hand to those who need it the most. You can hold a community charity drive to collect clothes, toys or books, etc. The collected items can then be handed over to charities. Remember, even the smallest good deed can go a long way. Hold an Iftar Ever thought of hosting an Iftar for your Muslim friends? Do so and enjoy every step of preparing this end-of-fast meal. Extend the invitation to those who are away from family and who have not eaten a home-cooked meal for a long time. IMPORTANT: Ensure that all food is halal. Try a one-day fast Try fasting for a day. Test yourself and see how you can control your needs and desires. It will also give you an understanding of what your Muslim friends and colleagues go through during Ramadan. Do some reflection The Holy Month is the perfect time to reflect and take stock of what really matters in life. Take a close look at your feelings, thoughts and actions. Focus on what changes you would like to see in your life and resolve to make improvements. How about giving up smoking?

Resting the Steak Once the steak is done let it rest for almost as long as it was cooked for, to allow the juices to return to their natural places. Optionally, you can brush the steak with melted butter to give it that added sheen. Side Orders Be the boss of your own side orders: Green salad, sautéed asparagus — anything goes.

Tips to Remember Use a heavy-based pan and ensure it is piping hot. If it isn't, you’ll end up with a pale grey, watery result. Never season a steak a long time before grilling or barbequing. Salt draws out moisture and natural flavour resulting in tough, dry steaks. To prevent curling when cooking, slice fat with a sharp knife or scissors at short intervals. Pat meat dry before cooking as damp steaks do not brown. Always use tongs to turn over the meat. By using a fork, the outer seal is pierced and flavourful, tenderising juices are lost. SEARED BEEF FILLET WITH THYME

Want a good steak? Buy a good steak! The first step is buying the right kind of meat. Visit your trusted butchery or supermarket and ask important questions, such as the origin of the meat, is it grass or grain-fed and which cut is best for the function you are planning. Try to learn more about steaks to ensure you always get the best cut available. Get the Right Cut Know your cuts. Which one would you prefer? Fillet, Rump, Sirloin, T-Bone, Prime Rib or Rib-Eye? The fat content of the steak and the cut you choose has a direct impact on the flavour and taste.

Imparting the Flavour Various methods can be used to season the steak, such as basting, pepper coating, rubs or you can choose a plain style. Basting requires dipping the steak in a barbeque sauce while pepper coating is the process of rubbing the steak with coarse salt, cracked black pepper and mustard seeds which serves as a taste enhancer. Rubs are spice mixes usually added to meat that is pre-roasted and finished on the grill like beef ribs. Rubs can also be used to add flavour to the steak prior to grilling them on an open flame. You can also opt to make a plain steak. This process only requires dipping the steak in stock to avoid drying out while on the grill. Degree of Cooking Rare: The meat is basically only warmed on the outside, the inside will still be cool, soft and very juicy. The colour at the centre will be blood-red and will become a bright pink towards the surface. Medium-rare: Meat is grey-brown on the outside and pink in the centre with no blood-red areas. Meat is tender, juicy and flavoursome. Medium: Meat is still a little pink in the centre and gradually becomes grey-brown towards the outside. When beef is grilled to medium, the surface is nicely seared. Texture is firm but the meat is still tender. Medium-well: Meat is mostly gravy-brown throughout with a hint of pink in the centre. Texture is firm and the meat has lost much of its juiciness. Well done: Meat is grey-brown throughout with no sign of pink in the centre. Texture is chewy and fairly dry. Turning the Meat Only turn once, two at most. The steak needs to be intact with all the juices and spices when served. Don’t stab the meat with a sharp object like a fork and leave it to cook. Minimal turning produces the best flavour and texture. Is it ‘Done’? Make a small incision in the steak. If the steak secretes natural juices then it is ready.

INGREDIENTS: 200g Tenderloin 15g Peppercorn 10g Sea salt 5g Mustard seed 100ml Extra virgin olive oil

50ml Lemon juice 150g Fresh lemon 50g Mixed greens (watercress, rockets) 20g Fresh thyme sprigs Parmesan cheese slices

METHOD: Grind the peppercorns and mix with the salt and mustard seeds with half quantity of the thyme. Rub the fillet lightly with some of the olive oil and coat it with the mixture of peppercorns. Heat a pan until very hot and sear the beef on all sides. Remove from the pan and leave to cool. Use a long sharp knife to slice the beef as thinly as possible. Place the slices on a board and press along them with the flat side of the knife blade to extend each slice. Place your beef on a serving plate leaving space in the middle. Season with salt and pepper and drizzle over with half the lemon juices. Toss the mixed greens with some olive oil and a little more lemon juice and fresh thyme. Place the mixed leaves on the middle of the plate. Top with the parmesan slices. Drizzle with olive oil and serve with fresh lemon wedges. Note: Parmesan cheese can be replaced by pecorino or crumble goat cheese. Master Butcher Peter Sass Peter Sass is the Master Butcher at The Butcher Shop & Grill. Whether it’s Big Ben, The Houses of Parliament, St Paul’s Cathedral, The London Eye or Madame Tussauds, there is something for everyone and more than enough to occupy a long weekend. However, while the sights and sounds might be common knowledge to many and the shopping highlights of Knightsbridge and Harrods or Oxford Street and Selfridges are also familiar, what is often less well-known are the better clubs, restaurants and hotels which make up this busy, eclectic city. London has some of the finest and most diverse bars in the country and whatever your personal tastes, there is sure to be one for you. One place of note is The Ice Bar — located in the heart of Mayfair — which provides visitors something a little different on their night out. Known the world over, the Absolut Icebar London is the first permanent bar made entirely of ice and offers visitors the chance to experience extreme temperatures — even in the height of summer — of minus five degrees. Everything — walls, bars, tables and even personal glasses — is made out of the purest ice. Because of the temperature, guests can only stay in the club for a 40-minute time period and everyone is given a designer thermal cape with hood to keep them warm during their visit. Every six months the bar is redesigned so each visit is likely to be a new experience. Just be aware that there is a long waiting list — especially around weekends — so book in advance if you plan to visit. It is sure to be a worthwhile excursion. If your tastes are for the more conservative and geared towards jazz music then there is probably no better known establishment in the world than the legendary Ronnie Scott’s Jazz Club in Soho, along Frith Street. Refurbished in 2008, the club has played host to some of the greatest names in jazz but the ethos to entertain has always remained the same. The restaurant offers a full three-course dining experience, although the menu is limited and tables need to be booked in advance. What it does very well is host live acts and you will nearly always find the place heaving with customers. It all lends to the atmosphere and certainly won’t be a night you’re likely to forget! If dance rather than jazz music is more your scene then why not pay a visit to the renowned Crystal nightclub. Situated close to Oxford Circus and refurbished at huge expense courtesy of Prince William’s friend Jacobi Anstruther-Gough Calthorpe (the lighting scheme alone was said to have cost in excess of £2 million) the venue is regularly associated with the rich and famous in London’s club scene. Entrance is limited and there is always a queue but once you do get inside everyone is treated on an equal footing. Since the club operates a policy of no VIP areas, you could quite easily find yourself rubbing shoulders with any manner of celebrities, so keep your eyes open. Drinks are priced at the top end and vintage Crystal Champagne clocks in at £33,000 a bottle. The Clermont Club has long been associated with the elite of London’s social set. Part of a Grade A listed building, the kitchens serve sumptuous dishes. Having been fortunate to sample some of the food lucky members and non-members alike can look forward to, I can certainly assure anyone planning to visit that they will not be disappointed. 72

Sticking with fine dining, no visit to London would be complete without sampling the delights of one of the capital’s best Italian restaurants. Run and owned by another Michelin Award Winner, Giorgio Locatelli’s Locanda Locatelli just off Marble Arch, a culinary feast awaits and it is well worth a visit, not just for the excellent food, but also to sample a wine list and service that is almost second-to-none. As with most places in this article, be sure to book in advance because last minute tables are a rarity at Locanda Locatelli. Of course, if you are here for the Olympics then the centre of attention will be around three key zones within Greater London — the Olympic Zone, the River Zone and the Central Zone. A huge amount of development has taken place around the capital and the opening ceremony will be taking place in a specially created area called the Isles of Wonder. Without doubt then, London is the place to be this summer. Just one word of warning: if you don’t have a ticket for the games, supply is minimal and advisors are warning against turning up in the hope of getting one. T

he French Revolution to some extent occurred due to the difference of wealth between the rich and poor caused by the horrific French economic conditions. The economy was suffering in 1789 due to terrible harvests, which were caused by bad weather and because of the country’s expenditure on the American Revolutionary and Seven Years Wars. This caused a food shortage and as such the cost of bread — part of a Sixteenth-Century staple diet — became far higher. The food price-hike meant that French citizens had little expendable income and therefore suffered terribly in the depression. Due to these circumstances the people rebelled against the monarchical structure, which had kept similarly high living standards before and during the depression, and in the first year, the storming of the Bastille occurred. The Bastille fortress was built during the Hundred Years War to protect the east side of Paris from an English attack. The castle was known to lock away political prisoners and to also have a large deposit of ammunition and weapons, which the revolutionary citizens would need to protect themselves from royal troops. On July 14, 1789 around 900 people gathered in front of the fortress to negotiate the transfer of the gunpowder that the Bastille was known to house. When negotiations failed, the battalion sized force stormed the castle. The commander of the fort Bernard-René de Launay attempted to surrender the fort to avoid killing multiple citizens with the castles cannons. Within seconds the drawbridge was lowered but instead of a ceasefire due to the recent submission, the French citizens continued to fight and dragged de Launay into the street and killed him. The capture and ultimate destruction of the fortress was seen as a massive step forward along the road to the modernisation of France. In contemporary politics France has a well-established semipresidential system of government, which is a structure with increased ‘separation of powers’. When governments adopt this, the aim is to limit the power that one man or organisation can have. For example, the French President is in charge of certain aspects,

such as foreign policy, whilst France’s Prime Minister is responsible for others, such as budgetary decisions. The relationship between the levels of responsibility between the President and the Prime Minister varies depending on the political relationship and party of the two figures. Although the Eurozone is not in standing as proud as it used to be in 2007, the French economy is a good deal stronger than in 1789. For example, France is now an economic hub for fashion, architecture, automobiles, perfumery and food. The country attracts aspiring designers of all trades from far and wide who intend to establish themselves as the next big thing in its capital. Events like the semi-annual Paris Fashion Week and Maison et Objet interiors exhibition are rivalled by few and are known by fashionistas, style hunters and interior designers all around the world. If the Parisian fashion designs are not eccentric enough for you, then the French food might be. Dishes produced in the country may be considered peculiar by some, but that does not mean they should be overlooked. You can try a wide variety of unusual foods such as Frogs Legs, Snails and Tête de Veau (calf’s head). However what also is true is that France is the producer of many worldwide favourite foods such as croissants, crepes, baguettes, numerous cheeses; and let’s not forget the ever-popular and abundant choice of champagnes, wines, cognacs and other beverages. Knowledge of French cooking has contributed significantly especially to Western cuisines and its criteria are used widely in Western cookery schools and culinary education. Various French gastronomic terms are widely used in the kitchens around the world and in the hospitality industry the various types of chefs are still called by the French names. The French gastronomy has been so influential that in 2010 it was added by UNESCO to its list of the world’s “Intangible Cultural Heritage”. This month Ohlala! helps to commemorate the Bastille Day with France by promoting it to the people of Bahrain, it is an occasion that should not be omitted as year-on-year the fireworks and the military parade get better and better. 75

Bahrain Economics & Bastille Excitement Ohlala! meet with The French Trade Commissioner of Bahrain, Frederic Mettetal, to discuss the Kingdom’s economy and to learn his opinion on the Bastille Day. have a problem, you can meet the right people without too much stress and they are always eager to help. “In regards to day to day activities, the first thing that I should mention is that in today’s world, we are heavily dependent on the Internet. People expect emails back nearly immediately, and as such, I spend most mornings responding to them. I also make sure I am up-to-date with the news and I spend much of my time networking with French businesses, every week I try to visit at least one Bahraini company related with French business. “It is quite a nice posting as the Kingdom’s economy is actually doing rather well, all macroeconomic indicators are good. We are slightly worried by the budget deficit; however this small economy sits much healthier than say, the Eurozone. The financial system here is very dependent on its oil resources because 80 percent of the fiscal income is still oil based, however what is good news is that the market here is increasing its diversification away from oil, the aluminium downstream projects, for example, with the increase of the capacity of ALBA, seem very promising. Another example more directly related with France is that I am currently working on the arrival of three new, large French businesses to the area, which will bring jobs and growth to the Kingdom,” says Mr Mettetal.

rederic Mettetal is a calm and collected individual; within minutes of meeting with him, it became obvious that due to his extensive career in the Foreign Service of the Ministry of Economy, he is clearly an asset to national industry and to the host country’s economy. “My target is to ensure that Bahrain becomes the hub for French businesses in the Gulf. I do this by convincing French companies to establish themselves here in the Kingdom, which brings jobs to the country and economic growth. When you look at this nation geographically, with its proximity to Saudi Arabia, you can see clearly that Bahrain has great potential. And, furthermore I have been told by many French companies that the country is an attractive option due to the quality of life it boasts but also for the vastly reduced costs of setting up enterprise here and the availability of skilled labour. Dubai for example, is approximately 30 percent more expensive for new businesses,” says Mr Mettetal. Part of Mr Mettetal’s role for the French Government involves relocation every few years to new regions. He tells us, “I have been posted in Africa, Central America, South America, The United States, Asia, Europe, and the Caribbean. Bahrain is my ninth assignment and the first one in the Gulf. “It hasn’t been difficult to settle in here. I was not totally unaware of what life was like over here as I was born in Morocco and I personally find Bahrain to be very nice, I have had a wonderful time thus far. “Because of my work I often relocate, so making new friends is a big part of the job, some countries have proved to be more difficult than others, but here I have not had any problems with meeting people, everyone seems very genuine and welcoming. “In terms of professional activities, everyone is easy to reach; however everything is not always rose coloured. But here, when you 76

Mr Mettetal tells Ohlala! that “The Bastille day is always something that will remain very important for French people, the day carries extra special significance when you are abroad, because expatriates may wish to hold these ceremonies as a connection with their home nation. Even if the people of France do not think about the Bastille Day constantly, it symbolises the French revolution, the modernisation of France and it helped shape the world that we currently live in, so those values are something that we ought to remember, and therefore the occasion deserves homage. We will have a reception at the Ambassador’s residence celebrating here. Many will be watching on TV the military parade that happens on July 14, it is the biggest military parade across the world, so it is quite a demonstration. Then after the parade, at night, the fireworks commence, which is always nice to see.”

July 14 is Bastille Day, the day in which France celebrates the overthrow of the Bastille. The date is truly symbolic in French history and represents the beginning of the French Revolution and modern France. For AXA Gulf, part of AXA International, similar themes are occurring. Jaguar XKR-S Coupe The XKR-S spells sportiness, performance, fluid aerodynamic lines and fun at the very first glimpse. And it’s not just about good looks — it is the most powerful Jaguar ever built and pays tribute to Jaguar's sporting heritage beautifully. The car that we had came in the French Racing Blue colour, which is unique to the XKR-S. The same sporty theme continues inside the car. Luxurious carbon leather seats with contrasting colour micro-piping and stitching cocoon you comfortably, creating the perfect atmosphere in anticipation of the ride to come. Once you press the start button you awaken the 550 horsepower engine bellowing under the bonnet and the excitement level starts to build up. The engine is a supercharged 5.0 litre V8, capable of taking you from 0 to 100 kilometres per hour in an amazing 4.2 seconds. You have to constantly reign in the urge to put the accelerator to the floor and let it rocket down the road! Although in all honesty, we did let it rocket… Driving it is a delight, the steering is at all times very responsive and the car is very agile with a fantastic grip. For a sports car the XKR-S is not the lightest one even with its aluminium body, but it feels very light to drive. The gearbox is controlled from a centrally placed drive selector knob, although you can also control it from the paddle shifters. There are different driving modes to choose from, with all automatic to sports mode.

Of course the XKR-S comes with an infotainment system with a touch screen from which you can control, for example, the navigation, Bluetooth and audio systems and you also have the rear view camera. Talking of the audio and sound — the Bower and Wilkins system is excellent. You can really blast it, but if you want to hear the lovely engine noises when you’re driving, keep the volume at a moderate level… The XKR-S comes with Jaguar's unique and highly advanced Adaptive Restraint Technology System, which can help to protect front seat occupants in the event of a collision. Within a fraction of a second, it is designed to assess the severity of any impact and, using weight sensors in the front seats plus sensors to detect the seat position and the seat belt status, deploy the dual-stage airbags in the most appropriate way. Some of the other safety systems are: pedestrian contact sensing system, emergency brake assist, electronic brake force distribution, anti-lock braking system, traction control (through engine and brake intervention) and dynamic stability control. Child seat anchor points are also available for the rear seats. Overall the XKR-S is a wonderful expression of the quintessentially British sports car — love it, and would be very happy to have one parked in my garage! Although it wouldn’t stay there much…

After so many annual film festivals being held all around the Gulf, for example Dubai and Abu Dhabi, it is time Bahrain joined them!” The event is set to start on July 12 and will last for three days in the new Naqsh Gallery in Al A’ali Mall. The aim is to display the local talent in Bahrain, whether it involves directing, producing or acting, as well as bring to light the film scene that already exists in the Kingdom. The event will show 40 films in an effort to celebrate the nationally talented film industry. Mohamed said “We wanted to do something different so we are converting two of the shops in the mall into cinemas to showcase our new films. People need to know that there is a very good film industry here in Bahrain but it is just somewhat undiscovered.” The event also aims to bring together the local community to appreciate the art of filmmaking. With so many budding filmmakers, producers and actors across the island, the Short Films Days will help those looking to improve their skills and knowledge. “And let’s not forget the coffee” said Mohamed. “The Naqsh’s Short Films Days will be sponsored by Nespresso which will serve its delicious coffee throughout the event.” So what is the main idea behind this unique event? “The idea is to create a buzz about the film industry throughout the country. For us it is important to showcase these specific directors involved in the event and to promote their work. Although some of them have done incredibly well internationally, the film scene in Bahrain is still to waiting to be discovered which means their work has not thrived as well over here.” MM Brand, the Communication and Design Company behind the idea, are expecting at least a thousand visitors to the event. In an attempt to bring that Hollywood touch to the Kingdom, the red carpet will be teaming with photographers while Social Media will be buzzing and tweeting the word around. To add an extra element, Naqsh will also be holding workshops where the weeks will be divided into separate themes including Caligraphy, Photography and Music. Children and adults are all invited to come down to try out new activities. The location itself is one of high calibre. Al A’ali Mall, known for its high-end brands, is set to busier than ever this July. According to Mohamed “It is the sort of area where people can have a coffee and while they do so, can interact with the cultural events that are going on around them and learn new things.” The event boasts a wide range of activities in the form of workshops, speeches and the chance to meet the directors face-to-face. Business DHL BAHRAIN MARKS WORLD ENVIRONMENT DAY

More than 45 employees from DHL volunteered to commemorate World Environment Day on June 5 by building an artificial reef off the coast of Bahrain. This effort was in line with DHL’s CSR program, ‘GoGreen’. 'm sick. Could be a virus. A never-ending cold. A sinus festival ongoing in my T-zone that seems too good to ever come to an end. Who knows. And because I don't believe in man-made drugs when it comes to the "body's purge", here I am... sticking it out with ginger teas and garlic/yoghurt concoctions until it finally goes away. My mother says this is "God's way of forcing people like you to rest." (ha!). My father says I should enjoy the ride, as this is [another divine] means to thoroughly "cleanse yourself". Also quite laughable, but he's a doctor so... can't argue. Perhaps all of the above come together to form a fairly believable diagnosis. I do need to rest. I never allow myself to do that. Colds are, in essence, your body's most natural detox (hence there being no cure), so who are we to interfere with that process? God is always on my side, so maybe He's decided to elongate this process so that I do, in fact, get some rest? Anyhoo. Moving on. As I pen this month's column from the realms of Dubai (while RESTING), let me tell you about my most recent outing: the "Miss India UAE" pageant. My dear friend's sister was a contestant so it was only right I show face and support. As my first full on Bollywood experience the overall show was pretty stunning. The colours, vibrance, music and dance... truly a beautiful thing to see. I also learned that corruption has no cultural barriers whatsoever (laughs out loud). I actually don't know if that's a laughing disappointment or hilariously relieving. It was clear that one of the contestants had no clue what she was doing. I was also told she disrupted rehearsals for the rest of the girls by continuously showing up late. She had no idea how to walk, or pose, and she tripped on her ball gown — twice. Miraculously, this same girl was announced as a sixth finalist. A sixth finalist in what was supposed to be the final five? Does that make any sense? No. Of course not. Corruption never makes sense. Speaking of corrupt things, looks like the "revolt" bug has finally been caught by Sudan. After 23 years of oppression and war mongering, it's kind of about time. I just hope the people have alternative plans in place. It's clear so many across the planet are now presenting (well, protesting) what they don't want, but is there a clarity on what is wanted? Is there a defined blueprint going forward, put together by those who fight for change so courageously? It's an interesting dichotomy. While I realise the privileged (and clearly blessed) among us are nicely distracted by pretty clothes, parties

and the irrelevance of Kim Kardashian, I do believe that sometimes, just now and again, Feath ers: Ju st... st we need to consider the unnin g "change" that so many are crying for, as well as our roles within it.
