W
hat started as just a hobby for Jina Mansour has evolved into a successful business. With a stand on the Pearl-Qatar and plans to expand in the offing, Jina is taking advantage of Doha’s rapid growth. The popularity of the Pearl-Qatar has definitely been a factor in her success to date. Jina explains why, “I only opened in April last year. I have many customers, American, French, Russian and Qatari. There are a lot of conferences here in Doha and everyone comes to the Pearl. They like to take back something a little oriental.” Jina came to Doha from Lebanon in 2003 and soon after started making her stunning pieces for friends and family, but this was set to change as she realised just how popular they were. “Around two years ago I started to show my pieces to people and they liked them and started to buy them. Then I started going to exhibitions; I wanted to test the market and I got a very good response.” Although she looks at magazines for inspiration Jina feels that her influences stem from yesteryear. “I loved my grandmother’s jewellery and I look a lot at the jewellery that was worn by Queen Elizabeth and Queen Antoinette. My pieces are vintage really, rather than modern.” Jina hand makes all of the jewellery with semi precious stones set in a base of gold plated bronze or copper. These beautiful stones are imported; Jina explains the process. “I import the stones from Brazil. I can specify the shape, choose the ones I want and they send me long threads of stones.” The beauty of Jina’s pieces is that they are unique, she elucidates, “No one stone is similar to another, they’re not like plastic, they’re completely natural. Sometimes I make two or three pieces and everybody likes them but then I can’t do any more, I want to reorder more stones, but they are all gone.” An array of stones are used in Jina’s jewellery including coral, amethyst, tiger eye, pearl, lapis lazuli, agate, turquoise, fossils, jade, mother-of-pearl, lava, sandstone, moonstone, emerald and ruby. Jina is happy to customise pieces and in fact has done just that for herself in the past. “Sometimes I make jewellery to match an outfit but mostly I already have all the colours!” she explains laughingly. “If I have the stones it’s very easy to make a piece, the materials are simple to work with. It takes maybe one hour. Sometimes I sketch out ideas or when I see the stones I think of a design. It’s mostly the stones that inspire me.” Jina’s designs were in the limelight in 2010 when famous tennis players, Kim Clijsters, Vera Zvonareva, Jelena Jankovia, Elena Dementieva and Samantha Stosur, in Qatar for a tournament, sported her jewellery at a formal dinner. Jina was incredibly excited at the time but she hasn’t let this foray into fame change her honest approach. “My prices are really reasonable. I could sell my necklaces for much more but I don’t want to, I’d rather sell more of them. I am still in profit so why put the prices up?” A collection of classic pieces, Jina’s jewellery is unique, colourful and fun to wear. “I’m conscious of designing each accessory in such a way that it can be worn both during the day with casual clothes, and then at night with a formal dress, or even for a wedding. t the very end of May the Villaggio fire claimed 19 lives. You can’t underestimate how this affected every one of us here in Qatar. For a while, life just stopped; it was hard to greet a friend without a mutual outpouring of grief, it was hard to hold a conversation without asking how and why this terrible tragedy happened on our doorsteps; it was hard to hold a conversation full stop. A curtain fell over Doha and for a while darkness prevailed. There’s still a sense of the subdued here even now, an over protectiveness towards our children that is set to remain, but gradually we are trying to come to terms with the tragedy. It will never be forgotten and what we can only hope is that from such a disaster comes change, a long overdue revision of fire standards, so that these terrible events will never ever happen again. I talk to Liz Husain in this month’s ‘The Cause’ about how we can ensure we remember those lost.

Mona Al Ansari, Winner of the W Doha and VCU fashion award 2012, showcased her amazing collection, Edifice. Guests were in awe of her contemporary collection featuring unique designs in bold bright colours. Let’s hope she shares the success of last year’s winner, Selina Farooqui, whose brand has gone from strength to strength. This month we welcome Cirque du Soleil to Doha. Who would have thought this world renowned performance would grace our humble shores? Times are changing and Doha is making its presence known on the Middle Eastern radar as an attractive destination for performers. There’s no colourful big top tent to erect for the Cirque du Soleil team as they are set to light up Aspire Dome with their stunning aerobatics and theatrical performance. Qatar was recently shaken to the core by a tragic fire that claimed 19 lives. Still reeling from shock and grief the community is pulling together to raise funds for those that died. Lisa Travell talks to residents Liz Husain and Khalifa Haroon about the Little Angels Ribbon Appeal. 26

n the morning of May 28 the residents of Qatar started their day as normal. Children were dropped at nurseries; the same routines repeated, just as they had been countless times before. But this day, which started just like any other, was to change the lives of so many forever. Indeed the events of May 28 will change Qatar itself forever. The fallout from this tragedy has also affected other countries in the Gulf, as shocked people and companies now move to take extra measures to ensure that this dreadful event will not be repeated. That day 19 people lost their lives in Villaggio Mall, 13 of those that died were children, with triplets and three siblings among them. What started as a small electrical fire in Nike was to prove fatal to all trapped in the nursery, Gympanzee, on the first floor of the mall. Two of those that lost their lives were brave firefighters attempting to rescue the trapped children. Doha is a small community and we all know someone affected by these tragic events. Even those not directly affected have shared the outpouring of grief that has engulfed Qatar and the surrounding region these past weeks. We have all hugged our own children and realised with a mixture of relief — and a degree of guilt — that could have been us. We have all felt a certain inadequacy, a need and want to help, even in some small way. Liz Husain and her friends Samantha Taylor and Susie Scarlett have done just that. In conjunction with Khalifa Haroon, Founder of iLoveQatar.net (ILQ), they have launched an appeal to raise money by making and selling purple ribbons for the families of those that lost their lives that fateful day. Liz has five children of her own and speaks of the emotions she felt when the news broke. “It was just so heartbreaking. I couldn’t stop thinking about the innocent children, the teachers and firefighters, and your thoughts immediately go to the families as well. Words cannot express the grief and heartbreak they are going through.” It was this tide of emotion that prompted Liz to start the ribbon campaign. “Everyone was just so moved by the tragedy and it was the need to offer love, support and comfort for the families that really started it all. I know money cannot bring their loved ones back but families of people like the teachers and firefighters need the support as their loved ones were often the sole breadwinners. I contacted ILQ and together we planned as to how best to do this.” Khalifa has been key is helping set up the campaign and indeed played a significant part in reporting the tragedy. "I'm proud that iLoveQatar.net can keep giving back and continue to support the community. “When we first heard of the tragic events both iLoveQatar and DohaNews proved that citizen journalism is something that's very important in keeping everyone aware and connected. My role in all of this was to help support community initiatives, and I think that

the Little Angels project is one that shows how big people's hearts can be. “Extra big thank you to Liz for putting this all together and doing all the hard work. I'm glad that we could be a part of that,” says Khalifa, expressing his admiration for Liz. Liz hopes that these ribbons also prove to be a tribute. “By wearing a ribbon we remember them, each one of them. The colour purple was chosen in remembrance of the little boys and girls, and we remember the teachers and firefighters for their dedication and bravery, like the Purple Heart. Purple also symbolises calm and comfort, which is my hope for the families as they face this most difficult time.” Ribbons are available at the majority of schools but with the summer break upon us Liz is now focusing on other organisations. “We hope to reach out to more people, to sell through individuals or companies etc. You can find more details on our Facebook page or on Twitter,” she says. All funds raised will be divided and sent through the relevant embassies or direct to the families. Liz has been amazed at the show of support they have received to date and sums up the community of Doha. “The outpouring of love and support from everyone shows how much we care. ince its launch in 1984, over 100 million spectators have seen a Cirque du Soleil show, and now the performers of Cirque du Soleil are set to wow audiences in Qatar. RJ Owens, Ringmaster and Dan Immel, Band Leader and Bass Player, share their excitement about the impending performance and reveal just what goes into preparing for the extravaganza that is Saltimbanco. RJ already has a list of places to visit in Qatar. “There are two things on my list of ‘must sees’; The Museum of Islamic Art and Aspire Tower, as I’m a huge fan of hyperboloid architecture.” He adds that he’s also eager to perform in Aspire Dome. “I have many Jordanian friends back home in San Francisco who tell me it is the best venue they have ever been in.” Dan jokes lightly that although he’s also looking forward to performing there too, he hopes it has “good air-conditioning!” Cirque du Soleil is so much more than a traditional circus and Dan details the differences. “For me Cirque du Soleil is the big picture, embracing theatre and drama into the usual specialty acts,

strung together by a loose thread as in traditional circus. Cirque puts a frame around this, including all the modern lighting and sound, and invites the audience inward.” For Ringmaster RJ it’s about crossing boundaries. “Cirque du Soleil is unlike anything anyone has ever seen before. There is a phrase ‘think outside of the box’; Cirque goes one-step further, we get rid of the box altogether. Where else can you see 16 performers stacked onto four narrow poles suspended as if by nothing one minute, and the next, see a stunningly beautiful contortionist contrive her body into impossible positions whilst spinning atop a rod and holding on with nothing but her teeth? Only at Cirque du Soleil!” Dan speaks specifically about Saltimbanco, the show they will perform in Doha. “It’s a story of the evolution of society, both collectively and individually, from its most simple and basic structure into its complex modern workings and finally into its divine destiny.” RJ adds that there is so much to wonder at, that seeing just one show may not be enough. “Audiences can expect to be amazed at every single minute. There is so much to observe that people might want to come for a second and third time, as I know they will notice something they didn’t see on their first visit.” It’s evident given the sheer magnitude of this spectacular show how much effort and dedication it requires. “So much goes into the concept, creating the acts that support that concept, and putting it all together with wardrobe and other visual and sound aspects,” explains Dan. RJ adds that the show is a moving beast, "Even when it is ‘show time’ the shows are ever-changing. The Saltimbanco your readers will see has evolved over the last 20 years of performances.” Training is also key to the quality of the performance and RJ tells us that it’s a continual process. “The acrobats have been training all their lives. Heck, we have Olympic and World Champion athletes in Saltimbanco! We train every day even while performing; we never stop bettering ourselves.” Such is the splendour, colour and unbelievable sets of Cirque du Soleil that one cannot help but wonder at the inspiration behind it all. RJ fuels our anticipation of the show to come as he sums up Cirque du Soleil. “The inspiration comes from you and me. From the entire world and its inhabitants. To say there is one thing, or one person, that inspires Cirque du Soleil is like trying to count the stars, you may be able to do it eventually, but wouldn’t you rather let the sheer number of them amaze you?” Tickets are available through Virgin Megastore or online at www.cirquedusoleil.qa

ana Al-Buainain is a busy Qatari woman yet she’s taken time out of her hectic schedule to sit down with Ohlala!. Confident and at ease she talks about how she got to where she is today and who she has become — an educated and inspiring woman. Primarily educated in the UK, she has travelled extensively and believes that this lifestyle has played a part in developing her as a person. “During my life-time I have had several international experiences that have shaped my character, aspirations, and perspective towards life. Travelling around the world for personal and professional purposes prepared me from a young age to be part of the global nation.” Sana is philosophical about how the international community has also shaped Qatar these past few years. “Qatar has become an international spot and now holds a very strategic global position in different areas of life: politics, sports, the economy, and there have also been vast developments in education. “From my point of view these are positive changes, and we are one of the first leading developing countries who have decided to ‘act’ instead of ‘react’. The major changes that are happening in Qatar (with His Highness & Her Highness’s vision) are encouraging us all; as a nation, as citizens, and expats to outreach globally, and at the same time stay rooted to our religion, tradition and beliefs. We are globalising but with a local essence.” Sana has achieved astounding success in her professional life, holding the position of Director of Alumni Affairs at VCU-Qatar and from there becoming Manager of Training and National Development at Qatar Foundation. However, it’s not been easy for Sana, who as a single-mother has also had to juggle raising her daughter Sara. She speaks candidly about the work/life balance. “I think it becomes harder, once a woman takes up both roles; the role of a man, and the role of a woman, either by choice, or through life circumstances. However focusing on what’s important to you, and the important people in your life helps.” Adding her own personal advice on trying to get the balance just right, Sana tells us, “Know what you want, know your values, align with your goals, stick to them, and be passionate about everything you do. You may not be able to do it all of the time, but make sure you do it most of the time, God will take care of the details.” A woman of many talents, Sana explains how becoming a life coach helped her in both a professional and personal capacity. “CoActive Coaching was a training I pursued to enhance my skills in coaching graduates at VCU-Qatar, but it also led me to a deeper selfunderstanding towards my purpose in life. It enriched decisions I made afterwards, with peace and acceptance. It made me look within, before looking outward.” Now Sana wants to reach out to others, and she feels it’s necessary to introduce co-active coaching to Qatar. “To have a life coach might be a new concept in this region but we will always have a friend, or wise member of the family, who can coach us over a cup of coffee. But now life has become too complicated. We need someone to coach us without all the emotions attached to things and people; to help us to seek within what we really want out of life.” One wonders where this inspirational woman finds the time to dedicate herself so passionately to so many pursuits, as she is astoundingly also a certified yoga teacher. “I am just trying my best to do the things I am passionate about, within the time I have. Prioritising and being flexible when the going gets tough,” she says modestly, “I thrive on learning, stretching out of my comfort zone and getting connected to my dreams.” Sana is also a writer and contributed to the recently released book How Women Succeed, which features inspirational essays from women across the region. She tells us her own personal message, applicable she adds to not only the women of Qatar, but to all. “Every human being has come into this world with their own wonderful uniqueness, that has to shine out. Being yourself is the best gift you can give to yourself.” Last year Sana completed her MBA and she’s now in the process of publishing a book of her own. Still this extraordinary woman strives for more and humbly concludes, “I believe that I am a work in progress. There will never be a point in my life where I would say, ‘OK Sana, you are perfect, you are done.’ The more I learn, the more I know that I am ignorant.”

Having just released her fourth album Let It Break, Gemma Hayes talks to Ben Whittaker about the change of direction in her musical career and why TV and cinema have proved to be the way forward for her writing abilities.

Celebrity Scoop ven though she could arguably be cited, as one of the best female singer/ songwriters of her generation, Gemma Hayes has never really gained the commercial success her talent deserves. Now into her second decade of music, this thirty-something artist has lost none of the ability that has made her such a darling with the critics. Unlike so many of her contemporaries there is an unpretentious honesty to her voice that has drawn comparisons with the likes of Joni Mitchell and Beth Orton. With the release of her fourth album — Let It Break — we see a more mature and accomplished artist who has lost none of her desire for her craft as Gemma tells us. “The industry has changed so much since I first started my career and although there are a number of new channels to promote yourself as an artist — such as the Internet, TV and movies — it is no less challenging. “I have always found myself drawn to atmospheric music and although that isn’t the most commercial approach to take, at this stage in my career I want to produce material that is more rewarding to me as an artist. I love cinema and Let It Break was written with cinema in mind.” Her first single, Shock to the System is a well crafted, haunting love song that grows on you and forms one of the many highpoints on the album. Gemma’s passion for words and music shines through as she tells us, “I love the writing process and because a lot of what I compose happens to sit comfortably in the realm of indie movies, I consider each song to be a mini-story, so there is a symmetry to the method.” A lot of Gemma’s music is now heard on TV shows such as Vampire Diaries and Pretty Little Liars and this is becoming a medium that showcases artists who may not take the traditional route to success through radio and music TV. “It’s funny in a way,” she admits, “whilst my songs don’t get played as often on the radio, I hear them so much more now — especially in the States where I’m based at the moment.” Irish by birth, Gemma Hayes was born in Ballporeen, Tipperary, where she grew up in a very musical family as one of eight children. “Dad was a pianist and he used to play to us. In my teens I would also often play the piano as a way to relieve the boredom of life in a small village. “By the time I moved to Dublin I was working part-time during the day and then playing in as many clubs as I could in the evenings to get myself out there,” she adds. “Obviously the Internet wasn’t the proficient tool for circulating your music it has become today,
so catching the eye of a roaming music executive was always the priority.” Gemma looks to return to LA because she believes the city to be the “hub of all that is going on in the business” but it also happens to be the place where her current partner lives, and it has been a struggle being away for so often. “It’s been intense trying to have a long-distance relationship and I am keen to get back to the States on a permanent basis. I seem to spend a great deal of my life in transit — I guess that goes with the job to some degree because of the amount of touring involved. “To be honest I love travelling and touring gives me the opportunity to meet new fans in their own countries as well as experience a little bit of the flavour of their individual cultures. There are still quite a few places in the world I’d like to visit and I’m definitely keen on the Middle East. That’s one place I’d like to do a concert. I’m certainly open to any invitations,” she finishes with a smile. Still passionate about her craft, Gemma concedes that the older she gets the simpler everything becomes for her in the music business. “The industry is a machine and you just need to learn how to manage it. My music has never let me down and I am at my best when I’m composing but the trick to longevity in this business is to do it because you want to. The day I stop loving my art is the day I probably look to switch careers!” Does she have any regrets? “Not so much a regret but I am sure that I would not release an album completely on my own again. That was just too hard and very difficult not to ‘drop the ball’. It takes a lot of energy to write, produce and market your work. The only thing I am certainly sure of is that I will always write — even if nobody listens — as long as I want to.” Outside of her career, is there anything Gemma would like to do? “I would love to finish my degree. I was studying history, sociology and psychology at Dublin University before I dropped out to focus on the music.” And what does she do to relax outside of her work? “Well, I am a bit of a fitness freak,” she confesses. “I have a fascination with nutrition and although I’m not quite as careful as I used to be, I’m still amazed at how food can affect people, and dismayed at how much advice people seem to ignore. California is all about health and beauty but the same can’t be said for the rest of America.” Gemma is currently doing a number of shows in the UK and has a warm affection for England, somewhere her first album did better than anywhere else.

Stretch tight, restrictive muscles that pull your body into unwanted postures that over time will result in pain and discomfort. Ignoring these muscles and continuing to stretch only the muscles that are too long and weak will only serve to exaggerate the imbalances within your body. A highly skilled, qualified Personal Trainer will be able to provide a postural assessment and then create the most appropriate programme to suit your individual needs. Women tend to be tightest across the shoulders and chest, the hip flexors and quadriceps, and the calves, which is down to the stresses of everyday life, the natural design of the pelvis, and by wearing high heels, respectively. The stretches illustrated can help in starting to relieve these problematic areas. Hold It Holding a stretch for a reasonable length of time is absolutely essential, but many people ignore this vital point, stretching for only a few seconds per muscle. Make sure you hold the stretches on tight, restrictive muscles for at least 20 to 30 seconds. You could hold the stretch for longer without problems, but not enough time will do little for your health and fitness levels.
Technique When it comes to fitness, technique is paramount. People tend to neglect the correct form and without knowledge of the anatomy will be stretching the wrong muscles. It is vitally important to know the difference between right and wrong technique. Wrong technique combined with insufficient holding time is wasted energy. Choosing a fabric for your curtains to dress your windows is always a very important final step, which reflects your personality and that of your house, be it with or without the help of a professional.

This could give your windows a very statuesque and majestic look. In modern architecture, bays and windows are often used by architects as statements of their style. If this is the case then it’s advisable to be simple and discreet with the fabric and colour of your curtains. Always value the architecture by adopting the “less is more” philosophy; it’s very important to keep the inside outside equation in symbiosis. Using a heavy print or pattern will lessen the intended statement and could clash with the spirit of the design. If you are a person who gets bored easily it’s also recommended to banish strong colours and heavy patterns and instead to favour light, neutral colours. This way you are unlikely to get as tired as quickly than you would with an overwhelming fabric.

Ramadan
his year, Ramadan begins on the evening of July 19 and ends exactly 30 days after on August 18. Please be aware however that these dates may vary. If you’re not a Muslim, you may not know what the holiday is about, so we’re giving you an easy guide to the do’s and don’ts, plus some extra tips so you’ll understand more about the Holy Month celebrations. Ramadan offers a lot of great principles — from being kind to those less fortunate, to consciously putting a cap on lying, through to purifying the mind, body and spirit throughout the month-long fast; all very inspiring principals — no matter what your religion. First, the basics. Ramadan is the ninth month of the Muslim calendar. The Islamic calendar is lunar not solar, hence, Ramadan begins on a different date each year — whenever the first glimpse of the crescent moon, in the ninth month, appears. Muslims fast during this period for an entire month and devote their time to worship and contemplation, focusing more on their faith and less on the concerns of everyday life. During the Fast of Ramadan, Muslims observe strict restraints on daily living. They are not allowed food or drink during daylight hours; smoking and sexual relations are also forbidden during fasting. At the end of the day the fast is broken with prayer and a meal called the Iftar. In the evening following Iftar, it is customary for Muslims to go and visit family and friends perhaps for a late evening Ghabga. The fast is resumed the next morning after Suhoor, which is the meal before sunrise. 66

Observing Ramadan Do’s Dress appropriately Both men and women must dress appropriately. Do not show too much skin and make sure hemlines and necklines are modest. Exchange Ramadan greetings It is customary to use the greeting “Ramadan Kareem” and at the end of Ramadan, during the Eid celebrations, “Eid Mubarak”. Respect those fasting The fast of Ramadan is a test of one’s patience — within themselves and others, a commitment to an idea or belief. As such, fasting can be an ordeal even for Muslims (but one that they welcome and adhere to out of religious commitment and the sense of umma or global community) and can affect some people’s temperaments; therefore be considerate towards the people around you. Accept Invitations Be gracious and do go along if invited to an Iftar. It’s best not to go empty-handed though and desserts are always a good option to offer the host. Avoid eating or drinking in public places From dawn to dusk, no one is allowed to eat, drink, smoke or chew gum in public places as a sign of respect to those fasting. If you wish to eat or drink you may do so in private places. In some countries in the Gulf, one may face serious legal issues if seen consuming food or beverages in public.
Don’ts Do not play loud music Playing loud music at home or in the car should be avoided. Ramadan is a time for prayer and spiritual reflection therefore such things are considered disrespectful. At the time of Azaan (call to prayer), the sound of music or TV channels should be put on mute. Avoid driving during dusk At sundown people head home to end their fast, therefore if you are not required to be on the road, refrain from doing so and wait for half an hour. Do not swear, shout or get angry in public Swearing or any form of outrage is disrespectful to people as well as to the holiness of the month, as Ramadan is a time of patience and controlling emotions. Do not engage in public displays of affection It is against the customs of the country to engage in displays of affection in public, and even more so during the month of Ramadan. Do not offer food or drink Do not offer a Muslim food or drink during fasting hours, believing it to be an act of hospitality. However, they will understand and appreciate this gesture and not find it offending.
How Can Non-Muslims Enjoy the Spirit of Ramadan? The Holy Month is celebrated as a time for spirituality, reflection,
sharing and helping those in need. There are several ways in which non-Muslims can participate and imbibe the spirit of the month. Be aware of events and activities going on in your community and find out how you can join in. Help the needy Lend a hand to those who need it the most. You can hold a community charity drive to collect clothes, toys or books, etc. The collected items can then be handed over to charities. Remember, even the smallest good deed can go a long way. Hold an Iftar Ever thought of hosting an Iftar for your Muslim friends? Do so and enjoy every step of preparing this end-of-fast meal. Extend the invitation to those who are away from family and who have not eaten a home-cooked meal for a long time. IMPORTANT: Ensure that all food is halal. Try a one-day fast Try fasting for a day. Test yourself and see how you can control your needs and desires. It will also give you an understanding of what your Muslim friends and colleagues go through during Ramadan. Do some reflection The Holy Month is the perfect time to reflect and take stock of what really matters in life. Take a close look at your feelings, thoughts and actions. Focus on what changes you would like to see in your life and resolve to make improvements. How about giving up smoking?

Passionate about his newest endeavor he shares the secrets of his success and his hopes for Sormani Qatar with Ohlala! “The basic concept is good cuisine and good service. All the products are fresh and sourced from Paris and Italy. Guests will come to have great food here and they will come back.” Responsible for the innovative menu, Chef Pascal regards himself as more than just a Chef. “I get a picture in my mind and I create it, I am like an artist,” he says. Indeed the stunning interior of Sormani reflects Chef Pascal’s creative nature, as he was key in designing the modern and chic décor. The overall colour scheme is black and white with contemporary furnishings; the black ‘broom’ backed chairs are particularly noteworthy and surprisingly comfortable. Stars of yesteryear adorn the walls, captured in their glory in black and white canvases. A large curved feature wall with an array of swirling colours provides a stark contrast. Coupled with bright mosaic styled signature plates, designed by Chef Pascal himself, these features add splashes of colour to the otherwise monochrome décor. The design concept is a work of art in itself, a gallery in which to sample Chef Pascal’s culinary creations. There are two menus, one detailing pizzas and pastas, and a fine dining bill of fare. Culinary offerings are innovative blends of French and Italian traditions, with all the customary Italian favourites present and correct. Hard to resist is the scallop carpaccio served with fresh black truffles to kick off proceedings. These uniformly sliced melt-in-the mouth scallops are a seafood lover’s dream, the subtle flavour contrasting perfectly with the strong savoury sensation of the truffle shavings. The lobster salad is equally commendable; the delicate but meaty lobster served atop a bed of fresh rocca and lightly fried al-dente vegetables. There’s a comprehensive selection of fish, veal, and pasta dishes to follow, however the lobster ravioli comes highly recommended. Presented as large handmade ravioli luxuriating in a sea of rich tarragon sauce, it’s bursting with juicy morsels of lobster and is surrounded by additional tender chunks. The sauce is so moreish we are thankful for the overflowing fresh breadbasket to ensure every drop is consumed with relish. The fried scampi and shrimp also demand the diner’s attention and you will not regret ordering this superb dish. A large offering proving inordinately tender, yet perfectly crisp and exhibiting a marvelous depth of flavour, it’s served with a wonderfully creamy tartar sauce. Desserts prove too tempting not to indulge, and given this is fine Italian cuisine, the Tiramisu ‘Sormani’ is a must-try and does not disappoint. Light, fluffy yet rich and creamy, it’s served with sublime caramel ice cream that compliments it absolutely. Chocolate Fantasy is too intriguing not to partake of and takes the form of an array of mini dessert treats. Including some non-chocolate treats it wasn’t quite the chocoholics dream envisaged but still proved delicious. Given Sormani Qatar’s illustrious lineage this eatery has a lot to live up to. With such impeccable cuisine, and an envious location with breathtaking sea views, it might even have the edge on its Parisian sister.

Resting the Steak Once the steak is done let it rest for almost as long as it was cooked for, to allow the juices to return to their natural places. Optionally, you can brush the steak with melted butter to give it that added sheen. Side Orders Be the boss of your own side orders: Green salad, sautéed asparagus — anything goes.
Tips to Remember Use a heavy-based pan and ensure it is piping hot. If it isn't, you’ll end up with a pale grey, watery result. Never season a steak a long time before grilling or barbequing. Salt draws out moisture and natural flavour resulting in tough, dry steaks. To prevent curling when cooking, slice fat with a sharp knife or scissors at short intervals. Pat meat dry before cooking as damp steaks do not brown. Always use tongs to turn over the meat. By using a fork, the outer seal is pierced and flavourful, tenderising juices are lost. SEARED BEEF FILLET WITH THYME
Want a good steak? Buy a good steak! The first step is buying the right kind of meat. Visit your trusted butchery or supermarket and ask important questions, such as the origin of the meat, is it grass or grain-fed and which cut is best for the function you are planning. Try to learn more about steaks to ensure you always get the best cut available. Get the Right Cut Know your cuts. Which one would you prefer? Fillet, Rump, Sirloin, T-Bone, Prime Rib or Rib-Eye? The fat content of the steak and the cut you choose has a direct impact on the flavour and taste.
Imparting the Flavour Various methods can be used to season the steak, such as basting, pepper coating, rubs or you can choose a plain style. Basting requires dipping the steak in a barbeque sauce while pepper coating is the process of rubbing the steak with coarse salt, cracked black pepper and mustard seeds which serves as a taste enhancer. Rubs are spice mixes usually added to meat that is pre-roasted and finished on the grill like beef ribs. Rubs can also be used to add flavour to the steak prior to grilling them on an open flame. You can also opt to make a plain steak. This process only requires dipping the steak in stock to avoid drying out while on the grill. Degree of Cooking Rare: The meat is basically only warmed on the outside, the inside will still be cool, soft and very juicy. The colour at the centre will be blood-red and will become a bright pink towards the surface. Medium-rare: Meat is grey-brown on the outside and pink in the centre with no blood-red areas. Meat is tender, juicy and flavoursome. Medium: Meat is still a little pink in the centre and gradually becomes grey-brown towards the outside. When beef is grilled to medium, the surface is nicely seared. Texture is firm but the meat is still tender. Medium-well: Meat is mostly gravy-brown throughout with a hint of pink in the centre. Texture is firm and the meat has lost much of its juiciness. Well done: Meat is grey-brown throughout with no sign of pink in the centre. Texture is chewy and fairly dry. Turning the Meat Only turn once, two at most. The steak needs to be intact with all the juices and spices when served. Don’t stab the meat with a sharp object like a fork and leave it to cook. Minimal turning produces the best flavour and texture. Is it ‘Done’? Make a small incision in the steak. If the steak secretes natural juices then it is ready.
INGREDIENTS: 200g Tenderloin 15g Peppercorn 10g Sea salt 5g Mustard seed 100ml Extra virgin olive oil
50ml Lemon juice 150g Fresh lemon 50g Mixed greens (watercress, rockets) 20g Fresh thyme sprigs Parmesan cheese slices
METHOD: Grind the peppercorns and mix with the salt and mustard seeds with half quantity of the thyme. Rub the fillet lightly with some of the olive oil and coat it with the mixture of peppercorns. Heat a pan until very hot and sear the beef on all sides. Remove from the pan and leave to cool. Use a long sharp knife to slice the beef as thinly as possible. Place the slices on a board and press along them with the flat side of the knife blade to extend each slice. Place your beef on a serving plate leaving space in the middle. Season with salt and pepper and drizzle over with half the lemon juices. Toss the mixed greens with some olive oil and a little more lemon juice and fresh thyme. Place the mixed leaves on the middle of the plate. Top with the parmesan slices. Drizzle with olive oil and serve with fresh lemon wedges. Note: Parmesan cheese can be replaced by pecorino or crumble goat cheese. Master Butcher Peter Sass Peter Sass is the Master Butcher at The Butcher Shop & Grill. He started his career in 1993 working with several renowned restaurant brands. After a London stint, Peter moved back to South Africa to take up a position at The Butcher Shop & Grill and has been associated with the brand since then. His extensive experience with meat has seen Peter work in South Africa and the Gulf region, and other recognised beef producing countries such as the US, Australia and New Zealand.

Whether it’s Big Ben, The Houses of Parliament, St Paul’s Cathedral, The London Eye or Madame Tussauds, there is something for everyone and more than enough to occupy a long weekend. However, while the sights and sounds might be common knowledge to many and the shopping highlights of Knightsbridge and Harrods or Oxford Street and Selfridges are also familiar, what is often less well-known are the better clubs, restaurants and hotels which make up this busy, eclectic city. Anyone wishing to stay in the heart of London will no doubt be drawn to the likes of The Hilton, The Dorchester or The Mandarin, but those who want a little more intimacy without a compromise on quality or service, would be well advised to check out The Soho Hotel and its sister establishment, The Haymarket Hotel. Both are part of the Firmdale group, a company founded by husband and wife innovators Kit and Tim Kemp in 1985, with all the designs in each hotel created by Kit herself. The Soho Hotel offers guests 91 individually designed bedrooms, suites and apartments, each built around a unique theme and situated in the heart of London’s entertainment neighbourhood. Close to some of the best restaurants and clubs, cafes and exciting theatre and nightlife, this is a place that suits the needs of anyone looking for the perfect retreat and the marriage of luxury and convenience. I was impressed by the wonderful attention to detail and sumptuously decorated rooms. Each has floor-to-ceiling windows and is equipped with high speed wireless internet access, flat screen LCD TVs and DVD/CD Players. Furthermore, the headline suites boast private terraces and views of London’s skyline. There are also four private apartments for rent but anyone interested is advised to book well in advance because their popularity with customers sees them occupied for most of the year. For a memorable dining experience, The Refuel Restaurant offers quality food in a lively, environment with atmosphere and quirkiness combining to excellent effect. Another wonderful feature not-to-be-missed, the Screening Rooms — private cinemas within the hotel, which host regular film events and hold 100 and 45 guests respectively. The sister hotel at the Haymarket is the latest addition to the range with no less than Vanity Fair suggesting that it offered “A whole new definition to glamour.” Situated on the corner of Haymarket and Suffolk Place, in the heart of London’s theatre district, it is next door to the famous Haymarket Theatre Royal and surrounded by some of the capital’s best restaurants and clubs. Boasting the same sumptuous interiors and high attention to detail, the Haymarket Hotel provides perfect access to Trafalgar Square, The National Gallery and Regent Street. It has 50 rooms and suites as well as an exclusive townhouse, each designed along the theme of contemporary England. The Brumus restaurant offers guests the opportunity to sample fine dining in a bright and lavish environment. If you are looking for somewhere different to stay this year I would highly recommend these beautiful hotels.

London has some of the finest and most diverse bars in the country and whatever your personal tastes, there is sure to be one for you. One place of note is The Ice Bar — located in the heart of Mayfair — which provides visitors something a little different on their night out. Known the world over, the Absolut Icebar London is the first permanent bar made entirely of ice and offers visitors the chance to experience extreme temperatures — even in the height of summer — of minus five degrees. Everything — walls, bars, tables and even personal glasses — is made out of the purest ice. Because of the temperature, guests can only stay in the club for a 40-minute time period and everyone is given a designer thermal cape with hood to keep them warm during their visit. Every six months the bar is redesigned so each visit is likely to be a new experience. Just be aware that there is a long waiting list — especially around weekends — so book in advance if you plan to visit. It is sure to be a worthwhile excursion. If your tastes are for the more conservative and geared towards jazz music then there is probably no better known establishment in the world than the legendary Ronnie Scott’s Jazz Club in Soho, along Frith Street. Refurbished in 2008, the club has played host to some of the greatest names in jazz but the ethos to entertain has always remained the same. The restaurant offers a full three-course dining experience, although the menu is limited and tables need to be booked in advance. What it does very well is host live acts and you will nearly always find the place heaving with customers. It all lends to the atmosphere and certainly won’t be a night you’re likely to forget! If dance rather than jazz music is more your scene then why not pay a visit to the renowned Crystal nightclub. Situated close to Oxford Circus and refurbished at huge expense courtesy of Prince William’s friend Jacobi Anstruther-Gough Calthorpe (the lighting scheme alone was said to have cost in excess of £2 million) the venue is regularly associated with the rich and famous in London’s club scene. Entrance is limited and there is always a queue but once you do get inside everyone is treated on an equal footing. Since the club operates a policy of no VIP areas, you could quite easily find yourself rubbing shoulders with any manner of celebrities, so keep your eyes open. Drinks are priced at the top end and vintage Crystal Champagne clocks in at £33,000 a bottle. The Clermont Club has long been associated with the elite of London’s social set. Part of a Grade A listed building, the kitchens serve sumptuous dishes. Having been fortunate to sample some of the food lucky members and non-members alike can look forward to, I can certainly assure anyone planning to visit that they will not be disappointed. 78

Sticking with fine dining, no visit to London would be complete without sampling the delights of one of the capital’s best Italian restaurants. Run and owned by another Michelin Award Winner, Giorgio Locatelli’s Locanda Locatelli just off Marble Arch, a culinary feast awaits and it is well worth a visit, not just for the excellent food, but also to sample a wine list and service that is almost second-to-none. As with most places in this article, be sure to book in advance because last minute tables are a rarity at Locanda Locatelli. Of course, if you are here for the Olympics then the centre of attention will be around three key zones within Greater London — the Olympic Zone, the River Zone and the Central Zone. A huge amount of development has taken place around the capital and the opening ceremony will be taking place in a specially created area called the Isles of Wonder. Without doubt then, London is the place to be this summer. Just one word of warning: if you don’t have a ticket for the games, supply is minimal and advisors are warning against turning up in the hope of getting one. When the greatest sporting event on the planet comes to London town, there’s always going to be losers as well as winners! TRIBUTE TO VILLAGGIO FIRE VICTIMS
Last month saw Doha’s newest music group, The Awakenings Ensemble, dedicate the proceeds of their final concert of the season to the families of the victims of the Villaggio fire. ‘Impressions of Amadeus’ was the fifth, and last, concert of the third season of the musical series, which is annually sponsored by IBQ. Attending the concert were scores of classical music enthusiasts who gathered at the American School of Doha Fine Arts Theatre to revel in a mesmerising performance and pay tribute to the victims. George Nasra, Managing Director at IBQ said, “It was truly one of the most sensational and creative performances we’ve seen this year. We are also humbled by the opportunity to take part in an endeavour that has reached out to the greater community in Qatar in memory of the late victims at Villaggio.”
BMW LAUCHES FOUR-DOOR COUPE
The first ever four-door Coupé in the history of the BMW brand has arrived in Qatar. The brand new BMW 6 Series Gran Coupé is the third model in the BMW 6 Series line up with BMW aiming to couple the aesthetics and dynamics typical of a BMW Coupé, with the functional versatility of a four-door sedan. DOHA FESTIVAL CITY PROJECT WINS AWARD
Doha Festival City recently won the prestigious ‘Best Future Project 2012’ award at the Global RLI Awards 2012. Held at the Natural History Museum in London the awards were judged by a panel of worldwide industry leaders who consider the merits of projects based on architectural excellence, innovation in materials, equipment, new techniques and the impact that the development will have upon the local community. The three other finalists in the same category were Marina Mall — Doha, Copenhagen Designer Outlets — Denmark and National Heart Centre — Singapore. Doha Festival City will offer a mixture of entertainment hospitality, auto showrooms, over 500 shopping and dining outlets plus the long awaited Ikea store. It will cover a total of 260,000 square metres and is currently on target to open early 2013.
VCUQATAR EXHIBiT IN FINLAND
The Assistant Professor of MFA.DESIGN (Master of Fine Arts in Design Studies) at Virginia Commonwealth University in Qatar is proudly participating in a summer design and fashion exhibition entitled ‘Home Sweet Home’ in Finland. Thomas Modeen is presenting three pieces of work, the ‘Cu3o Cabinet’, the ‘Bowls Interrupted’, and ‘Laser Toast’. The exhibition showcases the work of ten designers with roots in Finland, but who now live abroad. It’s organised by the Pro Artibus Foundation and runs from May 25 to October 7. Thomas is also the co-chair of Tasmeem Doha 2013, the largest international design conference in the Middle East, which is hosted biennially by VCUQatar and is due to take place in Doha in March 2013. 88

I
'm sick. Could be a virus. A never-ending cold. A sinus festival ongoing in my T-zone that seems too good to ever come to an end. Who knows. And because I don't believe in man-made drugs when it comes to the "body's purge", here I am... sticking it out with ginger teas and garlic/yoghurt concoctions until it finally goes away. My mother says this is "God's way of forcing people like you to rest." (ha!). My father says I should enjoy the ride, as this is [another divine] means to thoroughly "cleanse yourself". Also quite laughable, but he's a doctor so... can't argue. Perhaps all of the above come together to form a fairly believable diagnosis. I do need to rest. I never allow myself to do that. Colds are, in essence, your body's most natural detox (hence there being no cure), so who are we to interfere with that process? God is always on my side, so maybe He's decided to elongate this process so that I do, in fact, get some rest? Anyhoo. Moving on. As I pen this month's column from the realms of Dubai (while RESTING), let me tell you about my most recent outing: the "Miss India UAE" pageant. My dear friend's sister was a contestant so it was only right I show face and support. As my first full on Bollywood experience the overall show was pretty stunning. The colours, vibrance, music and dance... truly a beautiful thing to see. I also learned that corruption has no cultural barriers whatsoever (laughs out loud). I actually don't know if that's a laughing disappointment or hilariously relieving. It was clear that one of the contestants had no clue what she was doing. I was also told she disrupted rehearsals for the rest of the girls by continuously showing up late. She had no idea how to walk, or pose, and she tripped on her ball gown — twice. Miraculously, this same girl was announced as a sixth finalist. A sixth finalist in what was supposed to be the final five? Does that make any sense? No. Of course not. Corruption never makes sense. Speaking of corrupt things, looks like the "revolt" bug has finally been caught by Sudan. After 23 years of oppression and war mongering, it's kind of about time. I just hope the people have alternative plans in place. It's clear so many across the planet are now presenting (well, protesting) what they don't want, but is there a clarity on what is wanted? Is there a defined blueprint going forward, put together by those who fight for change so courageously? It's an interesting dichotomy. While I realise the privileged (and clearly blessed) among us are nicely distracted by pretty clothes, parties
and the irrelevance of Kim Kardashian, I do believe that sometimes, just now and again, Feath ers: Ju st... st we need to consider the unnin g "change" that so many are crying for, as well as our roles within it.
