B Beautiful if l People: P l The Boutique in 1960s Counterculture The UK’s “high street” chain stores might currently be in crisis, but this exhibition offers a trip down memory lane—to when fashion retail led the way and Chelsea’s boutiques were the flamboyant and explosive epicenter of London Swinging Sixties cool. Immersive reincarnations of revolutionary shops—including Biba, Granny Takes A Trip and Hung On You—will feature décor, record covers, magazines, posters and more than 60 rare garments that embody the bohemian and psychedelic styles of the day. This rebellious counterculture was often inspired by a misty-eyed nostalgic view of the past—riffing on Art Nouveau, William Morris, Victoriana and Regency dandies. Celebrating Design at LongHouse Reserve To exemplify living life with art: this is the mission of LongHouse Reserve, a 16-acre non-profit sculpture garden and arboretum, and the East Hampton home of late visionary American textile designer, author and collector Jack Lenor Larsen. Earlier this season, it played host to a celebration of the Luxe Interiors + Design annual Hamptons issue, inviting industry VIPs to wander the lush grounds, cocktails in hand, amid works by Buckminster Fuller, Yoko Ono, and Willem de Kooning (not to mention to lounge on furnishings provided by OKA). If this Hamptons dream is an experience you’d like to recreate, hop on the Jitney and pay a visit to LongHouse Reserve. London Craft Week October sees London awash with covetable collectables. For contemporary and 20th-century design buffs, the ever-sublime PAD London marquee pops up in leafy Berkeley Square from om the 11th to the 17th, with more than 60 exhibitors including Gallery FUMI, Rose Uniacke and Dimore Gallery. Plus, London Craft Week takes over the capital between the 4th and 10th. Smythson, Olivia von Halle, Loro oro Piana and Floris are just some of the luxury brands taking part in n this week of events, workshops, talks and exhibitions. Highlightss include “Crafting a Difference”—a group show by contemporary ary artisans curated by Brian Kennedy in Marylebone—and a sustainably focused exhibition at exciting new incubator hub, The Mills Fabrica in Kings Cross. Brodie Neill's bold, sculptural new furniture (right) is conceived from Hydrowood, indigenous timbers salvaged from the lakes of his native Tasmania.

’m convinced that even people who don’t want to give in to fall can’t resist those long, leisurely gatherings where you just have close friends over to indulge and relax. Pick a day where the weather looks truly terrible; you want your afternoon to be completely guilt-free, one where not even the dog wants to go for a walk, and everyone is feeling smug that they’re nestled close to a roaring fire. I always like to put pillows on the floor next to ours, so people can warm up as soon they step inside. “The most important thing is that everyone is warm and comfortable, so keep plenty of throws on hand—there are always blankets on our sofas so the dogs can come up too. The sun is starting to go down earlier now, and mood lighting is coming into its own. There’s nothing less relaxing than stark overhead lighting, so think candles, candles, candles— they provide a lovely twinkly glow, which the season calls for. They’re flattering too; everything, and everyone, looks better by candlelight.
Sue’s guide to the perfect cozy afternoon As the days get shorter and the mercury drops, OKA Co-Founder and Creative Director Sue Jones shares her tips for hunkering down in style
“It’s all about indulging in the warmth and company, but also the food and drink, of course. I don’t tend to put out a big lunch spread for these kinds of occasions, but you do need to have plenty of things to nibble on. For those that want to drink, something classic won’t go amiss; it’s never too early (or late) for a dry Martini or a Cosmopolitan. There’s often a big mix of age groups in my house, so games are a fun way to bring everyone together. Cards, board games, whatever you fancy—I love dice but refuse to play backgammon with my husband Alex because he always wins. It can be nice to have a much-loved film, like Pride and Prejudice, just rolling in the background too—choose something that’s tried and true, and watch who gets their hands on the remote!”

With sleek, statement-making black wooden floors, nonchalantly offset by delicate gray-painted walls, the space exudes effortless elegance. In short, the perfect blank canvas for our new take on luxury: a grown-up aesthetic that’s as rooted in color and texture as it is in detail. Much like its light-meets-dark backdrop, the cool palette is all about balance. Rich charcoals are contrasted with silvery blue hues to ethereal effect, punctuated by mirrored accents alongside pops of brass
and gold, lending the look its low-key glamour. It comes close to being cold, but layers of gently weathered wood and woven furniture, together with jute rugs, bring a little country warmth to the city— as with all sophisticated spaces, the magic is in the minutiae. Her food weaves together memories and experiences—of her children, her marriage and her childhood—with the produce of Cornwall and Provence. It is warmth, nostalgia, love and enthusiasm united on a plate.
In her delicate and simple dishes, Emily Scott captures the essence of Cornwall. Now, through her first cookbook, she’s sharing the secrets of her skill behind the stove.

e enthusiastic. Enthusiasm moves the world,” writes Emily Scott in the introduction of her first cookbook, Sea & Shore. It is just one line in a hefty and beautiful tome; yet it is joyfully characteristic of the cook, whose name has become increasingly familiar on the UK food scene over the past two years. This is not to say she is new. On the contrary, Scott has been serving her simple, elegant, passionately produceled cooking in Cornwall for more than 20 years. Her more recent, more prominent successes—a cookbook, an eponymous restaurant in the area's famed Watergate Bay Hotel, cooking for the G7 summit earlier this year—are, she explains, a culmination of “cooking quietly and consistently throughout that time.” Being in Cornwall, a region with a microclimate that has long drawn chefs and foodies away from London, Scott is not short of competition. Rick Stein, Paul Ainsworth, Michael Caines and Nathan Outlaw are the best known of the many chefs in the vicinity, which currently boasts no less than 41 Michelin stars. “It is very male dominated,” she acknowledges, “but I have made a name for myself here, and Nathan, Rick and Mitch [Tonks] have all been very supportive.” It tracks—one of the most charming features of Cornwall is that it is a small, community-focused world. To say that the area has influenced Scott’s food is almost so obvious as to not be worth stating. Her cookbook ripples with Cornwall: its fish and shellfish, of course, but also its bounty of berries, vegetables, flowers, and herbs. “There is always a sense of place with my food—of place, and 60 | Portrait Kim Lightbody
Your cooking evokes powerful feelings of place and memory— how do you achieve this while using so few ingredients? There is a lot of thought that goes into my dishes—and quality, seasonal ingredients. For example, I have wonderful memories of picking tomatoes as a child, so in my restaurant in summer I serve a panna cotta infused with basil, with tomatoes on top: a savory take on the dessert, which still evokes that sense of place. My cooking style has evolved, but I’ve always had a strong ethos. I’m not about foamy sauces and smears; I’m about bringing people together and creating memories. You’ve been cooking for 20 years—why have you only recently put your name on your restaurant? Maybe it’s an age thing, but at 45 I feel much more confident. I am happy to be in the limelight and get on with it. I’ve always been ambitious, but I never really stepped forward. I’m quite humble about what I do. I don’t think that’s a bad thing— worrying is what makes me do a good job—but now lots of things are happening that are really good for me, and I know that’s because I’ve been working hard for a long time. You took over St. Tudy Inn as a single mother with three young children. How did you manage it? The pub was one of the best things I’ve done, but it was also one of the most challenging and difficult. People feel like they own their local pub; you have to please a great number of very different individuals. I showed up on my own with three kids and a dog, and they must have looked at me and thought, what have we got here? I jumped in with both feet and tried to be everything to everyone—but in the end, I realized you just can’t be. You refer to yourself as a cook rather than a chef—why is that? I am very much a chef—but I can’t bear being labeled. I feel like “chef” evokes more of a butch, knife-wielding person, whereas “cook” is a nicer word: much more human and real. My cooking is chef-led—but for me cooking and hosting guests is not just about the food. The wine is important. The setting of the table is important. The atmosphere is important. I think “cook” covers that sense of having someone want to nourish and look after you, whereas “chef” doesn’t do justice to the romance. What inspired your first book, Sea & Shore? As someone who has always doubted myself, I really wanted to inspire people. My book is very much about that. It’s about getting people to their local butchers, grocers, and fishmongers, and to enjoy that produce. It’s saying, here’s a recipe, have a go and create something you feel proud of.

An Autumn Soup with Pumpkin, Celeriac, and Crispy Sage The soft and gentle flavors of fall days—pumpkins, squash, and beets—all bring a sense of excitement to my kitchen. This soup recipe is quick and simple and really champions the season. I have also added the mighty celeriac—agreed, it’s not much of a looker, but I think it’s so versatile with a wonderful texture that sits in good company with the pumpkin. The deep orange color of this soup will bring warmth and happiness to any table.
SERVES 4 6 tablespoons olive oil 1 medium onion, chopped 4 cups chicken or vegetable stock 1lb 2oz pumpkin, peeled and deseeded, cut into evensized small cubes 1¼ cups celeriac (also called celery root), peeled and cut into even-sized small cubes 8 sage leaves Cornish sea salt and freshly ground black pepper
Heat 2 tablespoons of the olive oil in a large saucepan over a medium heat, add the onion and cook for 5–10 minutes until soft and translucent but not brown (never rush an onion). Add the stock and bring to a simmer, then add the pumpkin and celeriac cubes and cook for 15–20 minutes until soft but still holding their shape. Add a good pinch of salt and a couple of twists of pepper. Transfer the mixture to a blender or food processor and blend until smooth. Heat the remaining 4 tablespoons of olive oil in a shallow frying pan or skillet over a medium heat and gently fry the sage leaves until crisp. Pour the pumpkin soup back into the pan to warm, then taste for seasoning. Serve in your favorite bowls, topped with the crispy sage.

Porthilly Mussels, Leeks, Cider, and Clotted Cream Drowned in cider and cream, what else is there? Porthilly Shellfish, based on the River Camel estuary in Porthilly, are growers of mussels, oysters, clams and other seasonal produce from the area, including the ever-wonderful samphire (a seaweed-like vegetable, also known as glasswort, foraged at the muddy low tide).
SERVES 6 2lb 4oz fresh live mussels (ideally from Porthilly) 2oz unsalted butter 1 medium shallot, finely chopped 1 medium leek, washed and finely sliced 2 garlic cloves, finely sliced 1¼ cups hard cider 4 tablespoons Cornish clotted cream 3 tablespoons fresh flat-leaf parsley, chopped Cornish sea salt and freshly ground black pepper
Wash the mussels under cold running water and pull off and discard any wispy “beards” from the shells. Before cooking, you need to make sure all the mussels are alive, so discard any that have broken or cracked shells and any open ones that don’t close when tapped on a hard surface. Melt the butter in a very large pan with a lid over a medium heat, add the shallot, leek, and garlic and cook for 5 minutes. Pour in the cider, bring to a boil, then add the mussels. Cover and cook for 5–7 minutes, shaking the pan occasionally, until all the mussels have opened. Discard any that are still closed after cooking. Remove the mussels with a slotted spoon and divide among 6 warmed deep bowls. Return the pan to the heat, bring the cooking liquid to a boil and bubble for 2–3 minutes to reduce. Stir in the clotted cream and parsley, then season the sauce and pour over the mussels.

Autumn Cavolo Nero Stew with Chipolatas One-pot suppers are a perfect way to feed your family at this time of year. I love putting a casserole dish in the middle of the table—it immediately becomes a talking point and heightens the anticipation of sharing and eating together. I always think of Roald Dahl's Charlie and the Chocolate Factory when I cook this dish—with cavolo nero, it is definitely more luxurious than the cabbage soup that Charlie Bucket's family lived off, but a little goes a long way. Cabbages are underrated and need to be celebrated, so *hooray* for cabbage stew—I promise you will love it.
SERVES 6 2 tablespoons sunflower oil 1 large white onion, thinly sliced 2 garlic cloves, crushed 18 chipolata sausages, cut in half 14oz can chopped tomatoes 2 cups vegetable stock 1 cavolo nero or Savoy cabbage, shredded Cornish sea salt and freshly ground black pepper To serve: 1 cup crème fraîche 3 ½oz flat-leaf parsley, roughly chopped Heat the oil in a large saucepan over a medium heat, then add the onion and garlic and cook until softened. Add the sausages and cook until golden brown. Add the tomatoes and vegetable stock and season to taste with sea salt and black pepper. Finally, add the cavolo nero or cabbage and simmer slowly, uncovered, over a very low heat for 2 hours. To serve, spoon into bowls and finish with a spoonful of crème fraîche and a sprinkling of parsley. This tastes even better the day after cooking. I have also been known to grate cheese over the top and broil it—particularly satisfying on a very cold day.

Fennel and Parmesan Gratin Often misunderstood, fennel tends to divide people—you either love it or you hate it—but it always has a place in my kitchen. Comforting and delicious, this is a great recipe to try if you are not quite sure about this bulb. Paired with butter, garlic, and nutmeg, it is a lighter dish than a potato gratin, or one that has cream running through it, so give it a try. The delicate anise flavor is a perfect accompaniment to fish and chicken dishes, but it also makes a quick and easy Sunday supper served alone. To me, fennel is as good cooked as it is eaten raw. I simply love it.
SERVES 4 4 large fennel bulbs, fronds trimmed and reserved 3oz butter 2 garlic cloves, thinly sliced 1 whole nutmeg, for grating 2oz Parmesan cheese, grated 2oz sourdough breadcrumbs Cornish sea salt and freshly ground black pepper
Preheat the oven to 200°C (about 390°F). Bring a large saucepan of water to a boil. Trim the fennel, chopping off the bases and pulling away the thicker outer layers, then cut the bulbs into wedges. Add to the pan and boil for about 5 minutes until tender. Drain well. In a separate large pan, melt the butter with the garlic over a low heat. Remove from the heat, add the fennel wedges and stir until coated, then add the reserved fennel fronds and season with grated nutmeg, salt and pepper, to taste. Transfer the fennel mixture to an ovenproof dish. Stir the Parmesan and breadcrumbs together and sprinkle over the top. Bake in the oven for 15–20 minutes until golden.

T h e F a l l Ta b l e INDIA HICKS The designer, entrepreneur, author, and mother of five gives us her take on seasonal entertaining and family fun Where do you begin when thinking about a tablescape?
With the season, then the number of guests. Is it small and intimate or is it bonkers and large? Normally I’ll start in the middle of the table and work my way out. What are your best tips for bringing an autumnal feeling to the table?
Muted colors: they immediately create an atmosphere. Feathers, dried grasses… I really like mixing real flowers with faux—we’re all living in a more sustainably conscious way, but I would miss having something real on the table, so it’s the perfect balance. I also like to add unexpected details; sometimes I’ll mix in children’s toys and people won’t even notice. In my home in the Bahamas, we’ve got this huge wooden bowl made from an extraordinary tree trunk, filled with amazing shells and a tortoise crawling on the shells— then you look closely and realize it’s just a plastic toy, but it’s so realistic. Do you have any must-haves for your table?
Napkins—I don’t want my kids using their jeans! We got back into using fabric napkins during the pandemic, too; we had a big debate about what's more eco-friendly, washing fabric napkins or using paper ones. Napkin rings also make it easy for everyone to know which is theirs. What are your tips for making guests feel welcome?
A mix of characters is interesting. I like to have unexpected guests, people who have come from different walks of life or who have had mad life experiences and can entertain us with fascinating stories. I love a seating plan— always, always have a seating plan. Even if it’s just six of you, think about who is going to sit where and how the conversation will flow— especially for big dinners. Good food matters of course, although funnily enough it’s never terribly high on my list. Lighting, atmosphere, people meeting each other; they can be more important than food, although you want all the senses to have been touched. You just want people to leave with a wonderful feeling about the event. Lastly, good lighting—I’m over 50, it’s essential! Photography Tom Griffiths

It’s about thinking of who will get along well, but good hosts are very aware of the conversations going on around them. If you realize that people are completely stuck, get up and move them or sit in between them, don’t feel that once you’re sitting down you can’t move things around. I love moving my table around too; sometimes I’ll put it outside in the field or on the driveway, or push it into the corner of the kitchen. Entertaining doesn’t have to involve a huge budget; my father [decorator David Hicks] had a saying that good taste and design are by no means dependent on money, and I think the same goes for entertaining. It takes so little for people to leave saying “that was really lovely.” How will you be celebrating Thanksgiving this year?
Four out of five of my children were born in America, so I've really come to appreciate Thanksgiving—especially as we live close
by in the Bahamas. I have no idea how we’ll be celebrating this year, but I love that it’s got nothing to do with gifts—or family arguments! It’s one meal, one very special moment; I’m rather jealous that Americans have that and we don’t in England. What’s your signature winter warmer?
Even in the Bahamas we have a lot of fires in the fireplace; we’ll take any opportunity we can to get the logs in. It just makes everything feel so inviting. How do you make your Bahamian home feel cozy?
It’s filled with a lot of children, a lot of animals, and a lot of madness—it’s fairly chaotic so hopefully that makes it feel unintimidating and welcoming for anyone stopping by. You have last-minute guests arrive, what are your go-to hosting tips?
As soon as someone has a drink in their hand, they feel more comfortable. Any exciting projects coming up?
I’m doing a book with my mother [former lady in waiting and second cousin to the Queen, Lady Pamela Hicks] called My Years with the Queen. She’s had some extraordinary times in her own life, and I think there will be some really valuable lessons for younger generations. Those in their 90s now have such a different outlook on life. It’s so wonderful to be doing this project with her and spending so much time together. The book will be a rich tapestry of stories, with a lot of wit and wisdom sewn in—my mum is pretty captivating.
