s the natural world shakes off winter and begins to welcome spring, we too come out of hibernation and start to think about the year ahead; making plans for ourselves and our homes starts to feel rather exciting again. A New Leaf: Curated Houses Where Plants Meet Design Many progressive academics argue that to combat climate change and survive as a planet, we need to enter the Planthroposcene—an age where we foster and prioritize the interdependence of plants and people. Kelmarsh Hall & Gardens

VISIT

Both true design aficionados and those who can’t resist a peek at a storied country house will relish a trip to Kelmarsh Hall. Nestled in England’s rural Northamptonshire, the nationally registered historic house and gardens date back to the 1730s, living to tell the tales of previous residents. Most notably, Nancy Lancaster, the former owner of famed interior design firm Colefax and Fowler and the American “doyenne of English country house style.” From the Italian pink coloring of the Great Hall to her all-white bedroom— an idea unheard of in the decorator's era —Lancaster certainly made her mark on Kelmarsh, and the nation’s country houses. OKA’s UK-based Interior Design team recently had the pleasure of reimagining this latter room, blending old with new for a liveable space that the tastemaker might have designed today. If you’re lucky enough to visit in person, once you’ve seen the sights, make a stop at the charming tearoom, situated in the stable yard. Otherwise, head to Kelmarsh’s website to get a feel for the space and learn more about its unique history. Open from April 17th, kelmarsh.com

The English Home Revel in all things quintessentially English while pottering around the house with The English Home podcast, a spin-off from the magazine of the same name, hosted by editor Samantha Scott-Jeffries. In episode one, food writer Matthew Fort waxes lyrical about the wonders of growing and picking summer berries, while Farrow & Ball’s color supremo Joa Studholme shares some brilliant insights on how to use color as she talks you through her own home. The following episodes feature a roll call of British design greats: Nina Campbell, Tom Raffield and Kit Kemp. I’ve been known to hang beautiful rugs up just because I love them”

“Wall art can mean such different things to different people. For me, it’s how I add color to a room, while for others, it can be the starting point of a whole look—it’s very personal. I’ve been known to hang beautiful rugs up, just because I love them. Really feeling drawn to a piece is key, but keep an open mind—it’s delightful to be surprised by pieces you didn’t think would work, but do. “Start by deciding what you want to achieve. Are you trying to add character to a blank space? While a single large work can have real impact, you can spend a fortune on one perfect piece to fill a wall. A set of prints or thrifted plates is an easy way to add color and interest in a cohesive way, while getting lots of bang for your buck. If you prefer a less unified look, a selection of other treasures you’ve gathered over the years can be just the thing. “Placement is also very important. I always lay everything out on the floor in front of the wall before hanging. We have lots of texture in our house—exposed stone, wood and plaster—and the different surfaces change how items look. I like positioning things in odd places; the best things don’t have to be in ‘prime’ position. There’s something wonderful about the surprise of finding a beautiful picture in the bathroom. I had a portrait of me painted years ago and I’d rather fly to the moon than hang it right over the fireplace. Wherever you choose to put something, a level is an essential tool, as are good-quality hooks, wire, and, sometimes, a trusty bit of Sticky Tack!” Photographs Alicia Waite | 11

T

here could be no better location to inspire an aesthetic that delicately toes the line between romance and drama than Clerkenwell’s Old Sessions House. Dating back to 1779, the grand former courthouse has played host to many of London’s most notorious ne’er-do-wells, both real and fictional—Charles Dickens’ Oliver Twist even appeared before a judge there, having been caught stealing a pocket watch. The building has been carefully renovated, leaving the patina of its colorful history etched into the plaster and stonework, alongside the original wood floors of its myriad chambers. Soft silhouettes, in delicately hued upholstery that echoes the weathered color palette of the walls, work in tandem with natural elements, carefully placed throughout—from wild foliage to decorative accessories inspired by flora and fauna—to create a dreamlike setting. Sleek black accents and clean lines have a grounding effect and add an all-important edge. All this is reflected, room to room, by mirrors (and mirrored detailing) whose arched designs mimic the huge dome-shaped windows and further draw upon the building’s character. The result is a timeless look with a subtle modern twist; perfectly in keeping with the integrity of the reimagined historical masterpiece that houses it.

T

here’s nothing quite as nice as a weekend spent tucked away in the countryside. This home in South East England's picturesque Sussex, however, has a little extra magic, sitting as it does in the heart of Ashdown Forest— famously the inspiration for some of A. A. Milne’s most iconic literary locations, such as Pooh Bridge and the Hundred Acre Wood. In homage to this fabled landscape, we set about bringing the outside in, to create an inviting space that’s wholly at one with nature. Crisp, white-painted paneled walls and an abundance of natural light—thanks to huge windows surrounding the living space—lend this wooden cottage a bright and breezy air. To complement its setting, plenty of natural textures and nature-led decorative accessories were a must, from the reclaimed wood dining table and rattan-detailed storage to leaf-shaped dishes and botanical prints. Shades of vibrant yellow and blue, with dashes of rich red, weave the space together, adding warmth and character that invite you to disconnect and stay a while; as Winnie-the-Pooh says, “Don’t underestimate the value of Doing Nothing, of just going along, listening to all the things you can’t hear, and not bothering.”

T

o those well-versed in English architecture, the distinctive façade of this townhouse speaks to one location in the South West of England: Bath. Quite literally the building block of the city, the honey-colored stone has become an iconic local feature—it’s been used for centuries to hew everything from homes to landmarks, and even acted as a backdrop for some of Jane Austen’s novels. While the exterior of this house is markedly Georgian, the interior fuses elements from the building’s historic past—intricate molding and grand fireplaces—with contemporary details, such as polished ebony-toned floorboards, to achieve an elegant aesthetic. Paired with a view of lush rolling hills that lead down to the River Avon, the house’s soft palette of grays, blues and eau de nil works wonders for a calming setting. With understated metallic and mirrored finishes, and layer upon layer of luxurious textures, it’s a refined and welcoming space to relax in. Breaking the Mold In her second book, Three, London-based chef Selin Kiazim draws on global influences and her own instinct to inspire people to think outside the box when cooking Words: Clare Finney

I

t seems hard to believe, sitting across from Selin Kiazim in her chef whites, at a table in her critically acclaimed restaurant, but there was a time when this chef and food writer wasn’t sure about cooking professionally. She’d trained at London's Westminster Kingsway College, interned at various restaurant kitchens and “just couldn’t see myself being able to settle into the industry. I felt so nervous all the time—like I just didn’t belong.” Her turning point came in the form of Peter Gordon, the New Zealandborn chef and restaurateur who is widely credited for bringing fusion food to Britain, though his greatest legacy lies—and lives on—in the way he treats people in his kitchen. “From the moment Selin Kiazim I met him, I felt, ‘this is what it’s like to be a great chef, running a successful restaurant—and to be nice to people.’ There was none of that bullying culture that I’d experienced previously,” Kiazim recalls. Not only has the chef’s mentor influenced how she runs her own restaurant, Oklava, but his magpie approach to cooking and ingredients has clearly left its mark on her new cookbook, too. After almost a decade of cooking Turkish-Cypriot flavors, Kiazim has branched out into “food from anywhere and everywhere.” The titular Three refers to acid, texture and contrast, which, the book argues, are the essential foundations for redefining everyday cooking. Three is chock-full of potential, not only to help up your game in the kitchen, but also to see a different side to this preternaturally talented chef. Though her parents are Turkish-Cypriot, Kiazim was born and bred in North London and the book reflects the eclecticism of her influences, with recipes divided simply by type of food. “I have always hated the classification of food; the need to call it ‘British’ or ‘British with Japanese influences,’” she says. “I have been quite pigeon-holed as a ‘Turkish-Cypriot chef.’ It’s exciting to now draw on global ingredients and global influences; to nod to my heritage, but to go beyond that. As a Londoner, I’ve always wanted my food to be inclusive of all my influences. It’s great to be able to say ‘Hey! I can cook something else.’”

How challenging was it to create an entire cookbook during a pandemic? I’d been bouncing some ideas around with my agent before lockdown, but I just never got around to doing the proposal. I was always needed in the kitchen, one way or another. Then, lockdown hit and I thought “this is how I need to use my time.” It was a great opportunity on the one hand, but I would also say that I had to go deep to push through the barrier of being uninspired. Like the rest of us, there were plenty of times when I would just sit and stare blankly at a wall. Where do you recommend people start when first approaching Three? There’s a recipe for slow-cooked leeks with oyster mushrooms that is easy, but full of flavor (see p.62). I give lots of suggestions for using it: you can have it as a side dish or tossed through pasta or noodles. It’s one of my favorites. When Oklava opened in 2015 it challenged many Londoners’ preconceptions about Turkish food. How easy was it to bring people around to the idea of paying more for something they might not immediately recognize as Turkish? I was trying to do something very specific with Oklava, and that was to show people there is more to Turkish food than the lovely kebabs and mezes you get for such good value in East London. When we first opened, I was always defending the prices. The other thing was that my very specific heritage is North Cyprus, which is largely unrecognized. It was really nice to be able to represent that tiny part of the world, and the food I grew up eating, but through the eyes of someone born and brought up in London.

What are you most proud of in your career so far? The fact that Oklava is now seen not just as a great Turkish restaurant, but as a great restaurant, is something I have only come to appreciate in the past year-and-a-half. That reflects the food and drink, but it also reflects everything else that goes into it, including the service and the staff. Watching the kitchen during service is like watching a silent ballet; the team all know how to move around each other, where to be and what to do at different times—it’s amazing to see. From the outset, my business partner Laura [Christie] and I intended to How did you decide on the three of Three? create a happy, inclusive working I didn’t want it to just be another cookbook full of recipes— environment, where staff were I wanted it to be something different. I kept thinking of those paid properly and well looked after, people who have a certain repertoire of recipes that they make and now it’s something we get every day on repeat. I thought “wouldn’t it be great if these people increasingly recognized for. were just able to throw open their cupboards and create something I am proud of achieving that. out of what’s there; to think as we chefs do.” Then I thought about what we look for in a plate of food, and that is where acid, texture Three: Acid, Texture, Contrast— and contrast came in. Slow-Cooked Leeks and Oyster Mushrooms Although the name states oyster mushrooms, this recipe will pretty much take what you throw at it, so you can really use any type you like. Mushroom foragers at markets will often have some really beautiful varieties, such as ceps or chanterelles, which are a little bit older and need to be eaten sooner rather than later—scoop them up for a lower price, they will work beautifully. SERVES 4 2 large or 4 small leeks, green tops cut off Extra virgin olive oil 2 big handfuls of cilantro, with stalks 1 large garlic clove 1 chili 1 lime, zested and juiced 10½oz oyster mushrooms (or variety of choice), torn into pieces 1 tbsp butter Sea salt flakes or kosher salt

Dice the leeks into pieces that are approximately 3¼in each and wash thoroughly. Heat a large, lidded widebased pan over a medium heat and add 5–6 tablespoons of olive oil—it should be enough to cover the bottom of the pan. Add the leeks, season with fine salt and once you hear them starting to fry, turn the heat down a little and place a lid on top. Sweat the leeks gently, stirring occasionally, for 25 minutes or until soft. Roughly chop the cilantro (both leaves and stalks), garlic and chili, then place into a small blender with the lime zest. Add a glug of olive oil; “glug” is one of those words that could mean anything

to anyone, but I reckon it should be about the quantity to escape from the bottle when it takes in its first “glug” of air. More is better than less, in any case. Blend to form a paste and add a little more olive oil if needed. Set aside. Place a large frying pan over a high heat for 1 minute. Add another glug of oil, followed by the mushrooms. Fry for 2–3 minutes, so they get a little color and cook through. Add the butter and season with sea salt flakes. Scoop the mushrooms out of the frying pan and drain on a paper towel. To serve, stir the cilantro paste into the warm leeks along with the lime juice. Spoon onto a plate and top with the mushrooms.

Muhammara A traditional component of a Turkish spread, or meze, this dip originally hails from Syria. Most recipes will include roasted red peppers, but I prefer to make it without. I love it on toast with a sprinkling of chives and sea salt, or in a sandwich with grilled halloumi. Turkish pepper paste is available to buy online and in Middle Eastern supermarkets.

FOR 10½oz 5½oz walnuts, toasted 1½oz Turkish mild pepper paste (tatli biber salçasi) 4fl oz extra virgin olive oil 1 garlic clove, finely grated ½ tsp dried chili (red pepper) flakes or powder (pul biber, preferably) ¼ tsp cumin seeds, toasted and ground ½ lemon, juiced 1oz pomegranate molasses 1 tsp superfine sugar Preheat the oven to 350°F. Spread the walnuts on a baking tray, roast for 8–10 minutes, remove from the oven and set aside to cool. Once cool, place in a food processor and blend to a coarse crumb. Place into a bowl with the rest of the ingredients and mix thoroughly. Season to taste using fine salt. Store in a container in the fridge for up to 3 weeks.

Chermoula Beets, Dates and Pistachios Until the tender age of about 32, beets and I did not get along. My mind was changed after a visit to the Coombeshead Farm, chef Tom Adams’ Cornwall restaurant and hotel where, while he is off chasing his hand-reared Mangalista pigs through the woodland, he quietly lets his food do the talking. As part of a first course at a dinner that went straight to the top of my list of favorite meals that year (and the next too, incidentally), beets grown by a neighboring farm were served. They were the sweetest, earthiest beets I had ever had, with a texture approaching that of fudge. Like any true foodie geek, I ambushed Tom after dinner for tips and tricks. His dish inspired me to give beets another go. Chermoula is a North African condiment and works really well with the flavor of beets. If ever I form an all-girl punk band, I think we will call ourselves the Chermoula Beets. SERVES 4 Chermoula

Heat the oven to 400°F.

1 small handful of flat-leaf parsley, finely chopped

Wrap the beets in a foil envelope and place on to a baking sheet. Place into the oven and cook for 45–90 minutes, depending on the size of the beets—they're ready when a skewer or the top of a knife inserted into them comes out easily. Leave to cool slightly. Using a small knife, peel the beets and then cut into chunks.

Turn the oven down to 275°F. Coat the beets in a little olive oil and salt and scatter across another lined baking sheet. Place in the oven and cook for a further 2–3 hours or until they have shrivelled a little, to look a bit like sun-blushed tomatoes. Remove from the oven and, once cool, coat in a little olive oil, vinegar and salt. To make the chermoula, combine all the ingredients and season to taste. If preferred, you could use a food processor to blend all the ingredients into a rough paste. Spoon the beets across a serving plate and top with the chermoula. Scatter over the dates and pistachios.


Pork, Crackling and Cilantro with a Palm Sugar, Chili and Lime Dressing There really is nothing quite like pork crackling—even the sound of the skin popping as you take it out of the oven makes my mouth water. This must be high-quality, sustainable and ethically reared meat, or otherwise I wouldn’t bother— what was good for the pig will be good for us. To be honest, if I’m going to roast a big hunk of pork shoulder with crispy crackling, I don’t really want much next to it, other than a good salad of some description. I love carbs as much as the next person, but sometimes they do just get in the way of this porky loveliness. That said, noodles or a bowl of rice would work well with this recipe. Before cooking, ensure the skin of the pork is very dry; to achieve this, leave it uncovered in the fridge for at least 24 hours. SERVES 4 4lb 8oz bone-in pork shoulder, skin scored (ask your butcher to score it for you) ¾oz cilantro, shredded 4 scallions, finely sliced Palm Sugar, Chili and Lime Dressing 1¾oz palm sugar ½–1 chili, depending on your taste 1 large or 2 small garlic cloves 4 tbsp fish sauce 2 limes, juiced

Heat the oven to 425°F. Prepare the palm sugar, chili and lime dressing by blending together all the ingredients. Taste and adjust with more sugar or lime if needed.

you should feel little resistance. Take the pork out of the oven and leave to rest in a warm part of your kitchen for at least 30 minutes.

Line a big roasting pan (big enough to fit the pork) with 2 layers of foil. Place a piece of baking paper over the foil and place a rack into the pan.

Turn the oven up to 475°F. Place the pork back in the oven, for 8–15 minutes (depending on how hot your oven is) to crisp up the skin. You will need to turn the pan every 5 minutes or so to achieve even crispiness all over.

Season the pork liberally with fine salt and place into the pan. Pour a cup of water on the bottom of the pan and cover the pork with foil. Place in the oven for 1 hour. Remove the foil and turn the oven down to 350°F and cook the pork for a further 2–3 hours or until tender. You can test this by inserting a small knife into the thickest part of the meat and

Take the pork out of the oven and leave to rest for 20 minutes. Tear the meat on a large board, roughly chop the crackling and scatter over the top. Sprinkle with the cilantro and scallions. You can either dip the pork into the dressing or spoon it over.

The founder of bespoke stationery company Memo Press tells us how she gets things done Tell us what Memo Press is all about, and what inspired you to launch it. Memo Press is a stationery company specializing in handmade notepaper, greeting cards and event stationery. I was previously a journalist, but somewhere in the back of my mind I knew I wanted a change—something more sustainable, both from a green point of view and a personal one. I’ve always loved stationery, so it felt like the perfect fit. Launching a new business in 2020 seems like either an incredibly brave or crazy move. What impact did it have on your plans? Surprisingly, it helped enormously in ways I would never have expected. I had lots of focused time at home—aside from home-schooling two children. I could concentrate on launching the business without the distraction of having to physically see anyone. It also meant I was forced to only work with UK suppliers, which has become a core value of Memo Press. What have you learned along the way? Not to be afraid to ask for help; people are overwhelmingly helpful if you just ask, and if they’re not then I’ve found they’re generally not the right people to be asking. Who is your biggest inspiration? Whitney Bromberg Hawkings, founder of online florist FLOWERBX—she has given me lots of incredible advice and great commissions. She also taught me to have the confidence to say I can do something and then figure out the pieces later! How do you find running a business from your home? I love it; I find it enormously freeing that I can pick up a job when I need to and then go out and do the school run. There are definite drawbacks, and compartmentalizing my time is a weekly juggle; I’ve found that planning ahead is essential. How do you stay productive during your workday? Endless lists—without them I think any number of things would be forgotten. I’m also much more productive in the morning, so I try and have that time at my desk and keep the afternoons free for meetings. What advice would you pass on to any budding entrepreneurs? It would actually be stolen from [Net-a-Porter Founder] Dame Natalie Massenet. I saw a talk where she said: “You may have found a gap in the market, but is there a market in that gap?” That really stayed with me. I knew there was a gap for beautifully made, sustainable stationery, but the rest was a gamble. Thankfully, so far, it’s paid off.
