The Best Summer Festivals If you want to join the festival scene but fancy something a little more exotic than a muddy field and a few teens with guitars, then Tom Barber, co-founder of award-winning travel company Original Travel and Travel Editor of Esquire Magazine, may have found the solution...
A
fter Glastonbury’s ‘fallow’ 2018, when the festival took a well-earned year off, there are doubtless many OKA customers just itching to sleep in a collapsed tent and develop trench foot whilst standing in thigh high mud for 72 hours this June. If that sounds less than fun (joking aside, Glastonbury is off the charts amazing), then summer sees a number of equally incredible - and less muddy - festivals around the world. There’s no better time to travel somewhere than when the locals are really letting their hair down, so read on for Original Travel’s four favourite global festivals. Inti Raymi, Cusco, Peru, 24th June 2019 The southern hemisphere winter solstice sees Peruvians celebrate this ancient festival dedicated to the Inca Sun god, Inti. Learn how, in less faint-hearted times, up to 200 llamas were offed in an orgy of sacrifice and worship when the head honchos of the Inca Empire would gather and nod approvingly at a parade of cloth-bound mummies recently exhumed from local temples. Thankfully, it has all calmed down a little these days but Inti Raymi is still a truly exceptional and authentic celebration of the sun, complete with coca leaf reading, regal parades and - mercifully - only one poor llama meeting its maker.
Jodhpur RIFF, India, 10th to 14th October 2019 Timed to coincide with Sharad Purnima, the brightest full moon of the year in northern India, Jodhpur RIFF Festival certainly burns bright. For a start, there’s the incomparable setting: the imposing Mehrangarh Fort that towers over the beautiful blue city of Jodhpur in Rajasthan. Then there’s the bewitching blend of melodic styles as hugely talented music makers from around the world show off their skills to an appreciative audience. Expect to see and hear everything from Trinidadian gospel choirs to Spanish flamenco guitarists and then international DJs spinning tunes late into the night. Coolest of all? The king of cool himself, Sir Mick Jagger, is international patron for the festival. Endorsements don’t come much better.
Las Fallas, Valencia, Spain, 15th to 20th March 2020 We had to get a European festival in there, and after auditioning a cast of thousands, we’ve gone for Valencia’s riotous Las Fallas. Bit of a cheat as it’s actually in March so you’ll have to wait until 2020 now, but no festival goes off with as big a bang - quite literally - as Las Fallas. Even by Spanish standards this is a bonkers festival, where giant effigies lampooning politicians and celebrities are paraded through the streets before being set alight, swiftly followed by the mother of all firework displays, bringing the pyromaniac proceedings to an ear-splitting conclusion. This being Spain, the party then goes on all night and as you pass through each barrio (district) of this hugely under-rated city there are local street parties around every corner, each bigger and better than the neighbours’ and to which outsiders are normally invited to join.

Naadam, Mongolia, 11th July 2019 Mongolia does a mean festival, and the Golden Eagle Festival in extremely remote Bayan-Olgii aimag (province) - where owners show off their eagles’ astonishing hunting abilities - is a contender, but more accessible and no less fascinating is Naadam, celebrated each year on 11th July. Each of the country’s 21 aimags holds a Naadam, with the biggest and best in the capital, Ulaanbaatur. This is a fantastic opportunity to see many of the things at which Mongolians excel, from horse riding in high octane races to wrestling bouts and highly competitive archery tournaments, but also with prizes awarded to the best dressed couple and plenty of music and dancing thrown in for good measure. To truly get in the spirit of things, try that most Mongolian of staples: mutton pancakes, washed down with fermented mare’s milk. Mmmm...maybe not. 17

My sitting room is white and airy with classic sofas and armchairs, I added a little drama with the cushions and bar trolley - every home can benefit from a bar trolley. I panelled the hallway in onyx faux shagreen, it looks so classic and the contrast really sets off the rest of the house.”

DO YOU HAVE THE FEVER? Since their launch, Fever-Tree has dominated the mixer market. We sat down with co-founder, Tim Warrillow, to hear about the journey.

Gently pour the gin over the ice, and watch the pearlescent louche forming. Mix with Fever-Tree Indian Tonic Water, to taste.
How did Fever-Tree start? My co-founder Charles Rolls and I launched Fever-Tree in 2005 to change the status quo and put quality, and importantly choice, back into the category. We went back into the history books to find the most authentic and highest quality ingredients we could and then Charles and I went out into the field to track them down. After all, when you think that ¾ of a G&T is tonic – it stands to reason that the quality of the tonic is of equal importance! Why the name ‘Fever -Tree’? When we started to look into the history of tonic, our research took us to the British Library, where we learned that quinine, the core ingredient in tonic water, comes from the bark of the cinchona tree - colloquially referred to as the ‘fever’ tree and it struck us as an apt name. What inspires your flavours? First and foremost it has to complement the spirit it is being designed to mix with - be it gin, whiskey, rum or even tequila. For example, our flavoured tonic range was designed specifically to complement the unique botanicals found in different premium gins. As an example, our Mediterranean Tonic Water contains sweet, floral notes of lemon thyme and rosemary from Provence to pair with citrus gins, whereas our Aromatic Tonic Water uses angostura bark from South America and pimento berries from Jamaica to create a sweet yet spicy flavour, which goes well with juniper-heavy gins. Taking the same expertise applied to the development of our flavoured tonics, our range of ginger mixers, such as our Smoky Ginger Ale and Spiced Orange Ginger Ale, have been carefully crafted with naturally-sourced ingredients to enhance the complex flavour notes of the world’s finest rums, whiskies, and brandies. What advice would you give to entrepreneurs? My advice to any entrepreneur is to do your research, but also listen to your instinct. There were definitely some nay-sayers for us in the early days, and it’s fortunate we did our best not to listen to them. What has been the best Fever-Tree moment? That’s a hard one to answer, there have been so many moments that have made me very proud of our team, our brand and the products we make. I have been hugely proud of the work we have done with Malaria No More in the fight against Malaria, a cause so closely aligned to our roots. Our commitment has helped the charity to persuade 53 global leaders to commit to halving malaria and inspired pledges of over $4 billion. I’m very pleased to say we recently announced a new commitment to Malaria No More of £1 million over the next three years through a number of different initiatives.

ishing” said the American guide as he cast a line over the water in front of me, “isn’t just about catching fish.” I had travelled a long way to hear this wisdom. The pool over which his line was now being drawn was part of the Ponoy River which meanders across the remote Kola Peninsula of north-western Russia. “Fishing is about communing with nature, being in the open, breathing in the air. Often it’s about getting used to your own thoughts and company. Catching a fish is a side issue albeit an exciting one.” I’m no avid fisherman, but I’ve never forgotten that trip. There was a flight to Helsinki, then another to the grim town of Murmansk. Then a long helicopter ride across a vast stretch of barren and empty land. I didn’t know it was possible in the world to travel for so long over land without seeing any sign of life, not a house, not a road. But the camp that we finally came to – Ryabaga – was a haven of wild comfort. Sleeping tents warmed in the morning by wood-burning stoves, a comfortable sitting in the main building, wonderful food. Of the latter fish featured of course. Each day we would go off to the river in small groups, some in boats, others in helicopters. If a fish was caught the guide would get on the radio and see what other catches had been made along the river by other parties. Then a decision would be taken whether to bring the Atlantic salmon home, or release it back into the river.
I was introduced to a man next to a large chest freezer who opened it and brought out what looked like a large frozen block of timber but that was actually once a tuna fish. He positioned it in front of a huge, industrial bandsaw. Dexterously he manoeuvred the fish around the blade and before we knew it he’d produced some little cubes of fish. Then he brought out some little decorative plates, some chopsticks and a saucer of soy. By the time the fish was dipped in the soy and in my mouth, it had melted and gone from industrial product to gastronomic wonder.

There’s ceremony of a Dover sole, taken off the bone at a restaurant like Scott’s in London’s Mayfair and brought with little dishes of sauce and vegetables. But what a treat is the great chippie. I had a perfect example of haddock and chips, the fish cooked to perfection at Lewis’s in Newlyn in Cornwall recently. And when you cook it at home you must just remember that with a great piece of fish you must do it justice by being brave and taking it from the pan or grill earlier than you might think. You can always pop it back and bear in mind that it won’t kill you as we eat it raw anyway. As I did on another journey…in Barbados. I jumped into a little boat with the chef Mark Hix. Once in, he handed me a chopping board, a knife and a lemon. Having caught one, we quickly gutted it and Mark deftly cut it into little pieces. It couldn’t have been fresher if it had been landed straight into my mouth. As the brilliant Jo Pratt shares some of her favourite fish recipes in these pages, it’s good to bear in mind that every time we eat fish, from fishfinger to fillet, it should be a feast.
Back at base the chef would smoke them, hot or cold. Cold smoked they were as I was more used to, deliciously rich and a little oily. But hot smoked and they emerged as if from a very slow cooker. The skin was flaky and smoky flavoured. They were dishes all the tastier for the story that accompanied them and all the more memorable. If those were exquisite salmon-tasting moments, it was a less glamorous but just as extraordinary location where I ate the best tuna. It was early morning in the Tokyo fish market, Tsukiji. The number and variety of fish you see on display here is both a matter of wonder and horror. A dazzling, mesmerising display of colour and range, but you really worry if there could possibly be any fish left after just that day’s catch, let alone day after day… year after year. CATCH OF THE DAY This season, Jo Pratt is kindly sharing a couple of recipes from her new book, ‘The Flexible Pescatarian’. A TV cook, food stylist and author of seven books, Jo is a regular contributor to various magazines and publications. Formerly she was the food editor for both Elle and Glamour magazines and was named one of Waterstones’ ‘Writers of the Future’.
Smashed avocado and tinned sardines on toast I’ve such fond childhood memories of tucking into sardines on toast at my grandparents’ house on a Saturday at ‘tea time’. It was always the tinned variety in tomato sauce, mashed with a splash of malt vinegar and served on top of hot buttered white toast. Now, I’ll often make sardines on toast for a quick lunch when working at home. I’ve pimped mine up by adding a few more toppings to make them into a really satisfying meal – not to mention super-healthy.
Time taken: 15 minutes Serves 2 1 ripe avocado (or 2 if they are particularly small) 1 lime Small handful of coriander, roughly chopped ½ red chilli, deseeded and finely chopped Approx. 200g/7 oz tinned sardines, in tomato sauce or olive oil 1 tsp white or red wine vinegar 2 slices toasted sourdough, soda bread or crusty bread Extra virgin olive oil, for drizzling Handful of rocket or watercress leaves Flaked sea salt and freshly ground black pepper
Peel the avocado, remove the stone and put the flesh into a bowl. Squeeze in the juice of half a lime and add the coriander, chilli, a pinch of salt and some black pepper. Smash with the back of a fork and set aside. In a separate bowl, mash the sardines and add the vinegar, a pinch of salt and a good few twists of black pepper. Lay the toasted bread on plates and drizzle with olive oil. Spoon the smashed avocado on top, then divide the sardines between the pieces of toast.

Put the rocket or watercress leaves in a bowl and toss with a squeeze of lime, and a drizzle of oil, and season with salt. Pile these on top of the sardines and finish with a final twist of pepper.
FOOD
Smoky haddock and clam chowder This is a really hearty chowder that’s packed with flavour. Steaming the clams in white wine creates a fantastic ‘stock’, which is used to make the creamy broth for cooking the smoked haddock, locking in every possible bit of flavour. Even though it’s quick enough for a midweek meal, it is also elegant enough to serve as a dinner party dish.
Time taken: 40 minutes Serves 4 500g/1 lb 2 oz fresh clams 250ml/9 fl oz/1 cup white wine 2 tbsp olive oil 2 banana shallots or 4 standard shallots, finely chopped 1 bay leaf ¼ tsp ground allspice Pinch of cayenne pepper
Wash the clams in cold water, discarding any that don’t show signs of closing when lightly squeezed. Heat a large saucepan with a tight fitting lid over a high heat. When hot, add the wine and clams. Immediately cover with the lid and steam for three minutes until the clam shells open. Drain in a colander set over a bowl to catch the juices, and discard any clams that won’t open. Heat the oil in a large saucepan and add the shallots, bay leaf, allspice and cayenne pepper. Gently sauté for about eight minutes, until the shallots are nicely softened and starting to become golden.
Stir in the flour and cook for about 30 seconds before adding the potatoes, clam juices and milk, stirring so the flour doesn’t form lumps. Bring to a simmer and cover loosely with a lid. Cook for eight minutes, or until the potatoes are almost cooked through. Cut the smoked haddock into bite-sized pieces and add to the pan. Loosely cover with the lid again and gently simmer for four minutes, until the fish is just cooked. Stir through the clams, cream, parsley and chives, and season with salt and pepper. Add a splash more milk if the chowder is too thick, and serve hot.

ounder, Annabel Astor, created a relaxed coastal home in Norfolk. “I wanted the palette to be predominantly subdued but then to add one pastel colour per room.” The home’s interior had to be dictated by the surrounding landscape, so she included plenty of bunches, hung wildlife prints and
introduced natural elements, such as rattan and wood. Wood is a theme that runs throughout the whole home, from the whitewashed panelling on the walls to the floors and furniture. “I wanted the home to feel calm but sophisticated and the wood adds a natural aspect, which works well alongside the relatively neutral colour scheme.”

When did you know you wanted to be an actor? I was a junior associate at The Royal Ballet School from the age of nine and I think I knew I wanted to be involved in Theatre then. I love the team aspect of the stage and collaborating with people to create something beautiful. What have you been working on recently? I have just finished filming an ITV drama directed by Paul Whittington which is out later this year. What’s the best advice you’ve been given? When something goes wrong my mum always tells me “Worse things have happened at sea.” And then I instantly realise how lucky I am to be alive. Who is your inspiration? All the amazing women in my life. What is your favourite room at home? My bedroom – it’s where I can put on a candle and write in my diary. Nothing beats that. When it comes to interiors do you go for contemporary or classic? I like a mixture, the most important thing for me is to make the interiors cosy and warm.
