Saturday, November 26, has officially been designated as Small Business Saturday. Please support your local Small Businesses and our community by shopping local. Every dollar that stays in this area helps to boost local economy and encourage growth! The Okeechobee Community Collaborative Council, which is part of the Shared Services Network, is meeting on Tuesday, November 22 at 10:00 a.m. in the School Board Office. The CCC is in the process of collecting Christmas toys for needy and foster children. Toys may be taken to My Aunt’s House or brought to this meeting. The 5th Annual Okeechobee Family Health and Safety Expo will be held on Saturday, January 28, 2012. Anyone interested in assisting or setting up a booth should contact Sharon Vinson, Shared Services Network, (863) 4625000, ext. 257. A car wash and yard sale will be held on Saturday, November 26 at Tractor Supply to benefit the Humane Society Pet Rescue Animals! This event will start at 8:00 a.m. and volunteers are needed to assist. Volunteers are also needed to walk dogs in the Christmas Parade on Saturday, December 10. THANKSGIVING TURKEY TIPS The secret ingredient is your time and lots of it. Buying, preparing, and roasting a turkey are time-consuming. With careful preparation and attention to timing, you will be rewarded with a beautiful and tasty main course. Your first decision will be selecting between a frozen or fresh turkey. A fresh bird is more expensive, but will save you time and precious refrigerator space. Buy the bird the day before you wish to roast it, but remember to reserve your turkey with the butcher. What a catastrophe to find that the only turkey left for your intimate four-person dinner is a 26-pound glacial beast! A frozen turkey needs to be defrosted. The preferred method is to defrost it in the refrigerator. (Yes, the one filled with the rest of the holiday fare.) Allow one day per 5 pounds. A 15-pound turkey will require three days to defrost thoroughly. An alternate method is to defrost the bird in a cold water bath. Allow 30 minutes per pound. That 15-pound turkey will require only 7 1/2 hours to defrost using this approach. It is also possible to use a combination of these methods. Now you are ready to prepare the turkey for roasting. First remove the giblets. This is a fundamental step not only because you might want to use them to make the gravy, but also because it is disconcerting to find these paper-wrapped lumps when carving. Next, rinse the bird inside and out. Pat dry with paper towels. If you are stuffing the bird, do so now with a freshly prepared dressing. Stuff loosely, allowing about 1/2 to 3/4 cup per pound of bird. Brush the skin with melted butter or oil. Tuck the drumsticks under the folds of skin or tie together with string. Lastly, insert a meat thermometer into the thickest part of the thigh. The thermometer should point towards the body, and should not touch the bone. Place the bird on a rack in a roasting pan, and into a preheated 350 degree F (175 degrees C) oven. Use the following chart to estimate the time required for baking.

The best test for doneness is the temperature of the meat, not the color of the skin. The turkey is done when the thigh meat reaches an internal temperature of 180 degrees F, and when the breast meat reaches an internal temperature of 170 degrees F. If your turkey has been stuffed, it is important to check the temperature of the dressing. The stuffing should be 165 degrees F. When the turkey is done, remove from the oven and allow to stand for 30 minutes.

THANKSGIVING GRAVY TIPS Chop the turkey neck bones and brown them in oil until golden brown. Add water or chicken stock, a medium size onion, and giblets. Bring it all to a boil, reduce heat to simmer. Set aside. If you are boiling broccoli, carrots or string beans, save some of the water after they are done. Set aside. When the turkey is done, add pan drippings to simmering turkey bone / giblet stock. Scrape up the turkey particles remaining in the pan and put them in the gravy as well. While bringing the concoction to a boil, add corn starch to thicken, or the vegetable water to thin the gravy. Stir constantly until you get the consistency right. Strain and serve. Calorie reduction tip: Skim the fat before pouring the drippings into your gravy using a gravy strainer. If you don’t have a stainer, try adding a few ice cubes to quickly cool drippings. This will not adversely affect the gravy flavor.

Corn Casserole 1/2 c melted butter 1 8.5 oz. pkg corn muffin mix 1 16 oz cream corn

Green Onion Dip

4 cups sour cream 2 teas. chili powder Salt 6 chopped green onions

2 eggs, beaten 1 16 oz corn kernels 1 c sour cream

2 teas. ground cumin 1 lime, juiced Black pepper

In a large mixing bowl, mix ingredients together. Top with scallions and serve with Tortilla Chips.

Preheat oven to 375

Creamed Corn 8 ears corn, husks & silk removed 1 Tbl butter 1 small onion, chopped 1/2 c heavy cream 1 tsp sugar coarse salt pepper

Mix well the above ingredients. Pour into 9x9 pan. Bake about 45 minutes. This is a very good vegetable side dish.

Remove kernels: Cut off tip of each cob; stand in a wide shallow bowl. With a sharp knife, slice downward to remove kernels. Stand each cop over another wide shallow bowl. With the edge of a soup spoon, scrape downward to remove pulp. In a medium saucepan, melt butter over medium heat. Add onion and cook, stirring frequently, until softened. 2 to 3 minutes. Add corn kernels, pulp and 3/4 cup water. Bring to a boil. Reduce to a simmer; cover and cook, until corn is tender, 10 to 15 minutes. Add cream and sugar; simmer, uncovered, until cream has thickened, 4 to 6 minutes. Season with salt and pepper. Serve.

Monkey Bread recipe may be doubled depending on the bundt pan.

Flour, for pan 1/2 cup sugar 1 tsp ground cinnamon 30 buttermilk canned refriger. biscuits

1 stick butter + more for pan 1/2 c brown sugar 1 c walnuts

Butter and flour a bundt pan and set aside. Preheat oven to 350º F. Combine sugar and cinnamon. Cut refrigerator biscuits in half and toss in cinnamon and sugar mixture. Melt the 1 stick of butter in a saucepan and add brown sugar and bring to a boil; then add nuts. Line the bundt pan with biscuits and pour butter mixture over them. Bake for about 30 minutes. Remove from the pan when it’s still hot.

Cheesecake Base: 1 pound 8 ounces cream cheese, room temperature 1 1/4 cups sugar

1 vanilla bean, split & 1 tablespoon orange zest scraped 6 eggs 1 cup heavy cream

Caramel: In a heavy metal sauce pot combine the sugar, water, and lemon juice. Over high heat cook the sugar to a deep caramel color and pour out into a round 9-inch cake pan, turning around the perimeter so as to cover the sides and bottom of the pan. Set aside to cool completely while you make the cake. Cheesecake Base: Preheat the oven to 325° F. In mixer fitted with a paddle attachment, on low speed work the cream cheese until smooth. Add the sugar, vanilla, and orange zest. Continue to mix for 2 minutes until smooth. Add the eggs, 1 at a time, and scrape down after each addition. On low speed slowly stream in the heavy cream. Scrape down every 30 seconds. Remove from bowl and pour out into prepared cool caramel pan. Bake in a hot water bath for 1 hour. When finished the cake will be slightly firm to the touch. Remove from the oven and place in the refrigerator. Make sure to cool down for at least 4 hours before flipping over. The cake can be made up to 2 days in advance. Flip over by placing a 12-inch flat plate over the top of the cake pan. Hold with a firm grip and flip cake upside down. Let the pan sit on top for a second. Lift pan off the cake and serve on its own or with berries.

2 1/2 c. whole wheat flour 1/2 c. dry milk 1/2 tsp. salt 1/4 tsp. garlic powder 6 T. meat drippings 1 egg, beaten 1 T. brown sugar 1/2 c. ice water 2 Cups of Fresh carrot peels, pieces of lettuce, and other greens

12 c. oatmeal 4 c. whole wheat flour 8 eggs 3 /4 c. oil 2/3 c. honey 1/2 c. molasses 2 c. milk 1 large can solid pack pumpkin 3 to 4 mashed bananas (optional)

Mix dry ingredients in large bowl. In a processor or blender, mix remaining ingredients (except ice water), until you have a coarse crumb mixture. Add to flour mix and toss to combine. Add ice water bit by bit until it comes together. Roll out on a greased cookie sheet until it is 1/2 inch thick. Cut into cookies. Bake at 350° F for 25 to 30 minutes. Dogs also like these.

Preheat oven to 325° F. Grease 2 cookie sheets .Dump everything into a VERY large bowl. Mix this whole mess together. Pat onto greased cookie sheets bake at 325 degrees for 1 hour. After 1 hour turn oven off, crack oven door and allow cookies to cool in oven. Break into whatever size you want . NOTE: These freeze really well.
