SOUTHWESTERN BEEF STEW Serves 8 • 2 pounds boneless Certified Angus Beef ® chuck roast, cut into 1/2-inch cubes • 1 tablespoon vegetable oil • 2 medium onions, chopped • 1 clove garlic, minced • 2 (14-1/2 ounce) cans stewed tomatoes • 2 (4 ounce) cans mild green chilies, chopped • 1 (15-1/2 ounce) can pinto beans • 1 (15-1/2 ounce) can whole kernel corn • 1/4 teaspoon salt • 1/2 teaspoon pepper Optional Garnish: • Yogurt • Black olives, sliced • Sprig of fresh cilantro 1. Brown meat in oil in heavy pot; drain. Add onion and garlic; cook until onion is transparent (about 5 minutes), stirring frequently. 2. Add stewed tomatoes and green chilies. Bring to a boil; reduce heat; cover and simmer until meat is tender, about 10 minutes. 3. Add beans, corn, salt and pepper; return to boil. Reduce heat and simmer for 15 minutes. 4. Serve in individual bowls and top with a dollop of yogurt, 2-3 slices of black olives and a sprig of fresh cilantro, if desired. Preparation Time: 20 minutes. Cooking Time: 30 minutes. SMOKY PASTA AND BEAN SOUP Serves 8 • 6 slices lean smoked bacon, diced • 1 small onion, finely chopped • 1 rib celery, finely chopped • 1 medium carrot, peeled and grated • 2 cloves garlic, peeled and crushed • 1/8 teaspoon crushed hot red pepper • 2 cups canned crushed tomatoes • 2-1/2 cups drained canned white beans • 6 cups chicken broth • 3/4 cup macaroni or other small pasta shape • Freshly grated Parmesan cheese, optional In a large deep skillet, saute bacon until some fat is rendered; add onion, celery, carrot, garlic and red pepper to skillet and saute until vegetables are softened, about 10 minutes. Stir in tomatoes, cook and stir occasionally for 10 more minutes. Stir in beans; add broth and bring to a gentle boil. Add macaroni and continue cooking until pasta is tender, but still firm, about 15 minutes. Serve immediately with Parmesan cheese if desired; or cover, refrigerate and reheat gently to serving temperature. Prep Time: 20 minutes. Cook Time: 40 minutes. Okmulgee County program honored kmulgee County Farm Bureau was one of only 15 from across the nation selected to present a display of its unique program during the Farm Bureau Showcase at the American Farm Bureau Federation convention in January. Okmulgee County was the Oklahoma winner and a national selection for its “Farm Bureau Week Kickoff” public relations and information program. The program featured a countywide promotion of Farm Bureau through county proclamation signings with media coverage, discussions with county officials, an open house and contribution to local fire safety efforts. “Our mission was to get the greatest exposure about Farm Bureau, getting the maximum mileage from time given by community and organization leaders to promote the work of Farm Bureau. “Our goal was to project to the general public details of the work of Farm Bureau on the local and state level. The objective of ‘Farm Bureau Week Kickoff’ was to incorporate several important meetings, activities and ceremonies into a half-day event concentrating on the strong presence, influence and service of Farm Bureau in Okmulgee County.” As a national winner in the County Activities of Excellence program, Okmulgee County Farm Bureau will be awarded $2,000 by AFBF. The program is designed to celebrate and recognize the innovative and action-oriented programs developed by county Farm Bureaus. It focuses on the priority areas of Farm Bureau, and recognizes those accomplishments and shares successful county programs and activities with other Farm Bureaus across the nation.
