Elevated Lime Shrimp Skewers

Preparation Time: 30 minutes + 30 minutes to marinate Cook Time: 10 minutes

Ingredients:

For the Marinade:

1 pound large shrimp, peeled and deveined

2 tablespoons cannabis-infused olive oil (adjust dosage based on your preference and tolerance)

3 tablespoons olive oil

2 tablespoons fresh lime juice

2 teaspoons lime zest

3 garlic cloves, minced

1 tablespoon honey

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

For the Skewers:

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 red onion, cut into wedges

Fresh cilantro, chopped (for garnish)

Instructions:

Once the grill is to temp, place the skewers on and cook for 2-3 minutes per side, or until the shrimp are opaque and the vegetables are slightly charred. Then remove from the grill and let rest for a minute. Transfer the skewers to a serving platter.

Garnish with chopped fresh cilantro and lime wedges and serve immediately, squeezing fresh lime juice over the skewers for an extra burst of flavor.
