Back on the hunt, and as sure as the Fall air is crisp, we once again feature one of the most exceptional elite products on the Oklahoma Cannabis Market. And the extraordinary team that makes it all possible. This month is special because it is the month to be thankful, I wanted to highlight a team that has been doing big things without losing that small batch craft touch. Easy Street Extracts is a staple on many top shelves across Oklahoma. Known for their full spectrum, solventless gummies. These tasty treats produce real medical effects and pack a punch. Making them a crowd favorite among patients. Every November we have featured an infused desert. We could not think of a better crew to prepare for this year’s November review pick. So, we asked Easy Street to come up with something special for The Chronic’s readers for this Thankful issue. Richard, the Lead Chef, stepped away from the gummies and developed a wonderful cannabis-infused Tiramisu recipe that is simply to die for.
The Chronic Magazine was lucky enough to get invited to East Street Extracts new location and got a sneak peek behind the scenes to see how the magic works. We were enthralled by the knowledge this team had and by their perfection-or-nothing work ethic. This hardworking team is definitely indicative of a real family.
The CEO of Easy Street Extracts gave us the best verbal illustration of who his team is, and what makes them hold their spot at the top and told us how important quality is in each step the team makes to assure consistency and the best product you can get in every bag. He explains, “It seems like most of the Oklahoma edibles market is driven by packaging. Step into any sizeable dispensary and you will confront a host of packaging options: flashy, trendy, cute, colorful, and pharmaceutical. Cannabis sells like bottled water; the range in quality is dramatic.. The same is true in the Oklahoma medical cannabis market. The truth is, the most widely distributed edibles are made with the poorest quality concentrates, mostly distillate or BHO. And, in the race to the bottom, many of these products are made with lower quality raw flowers.
It’s a well-known secret that growers offload their inferior harvests, trim, contaminated or unsellable flower and biomass to Oklahoma processors, who distill or blast it to refine into edibles.
That is 95% of the market.” Easy streets CEO goes on to tell us the difference between all those gummies on the market and Easy Streets. He tells us, “Easy Street is very different. They are dedicated to producing the highest quality gummies and edibles in Oklahoma: rosin-based, solventless, and made with high quality flower.”
The answer, it appears is simplicity. Easy Street presses good bud and the extruded oil (rosin) Is decarbed and cooked directly into gummies. Easy Street’s gummies are soft and have a perfect consistency. They are light, fresh, and not sticky in your hands. The discerning patient who likes the nutty taste of cannabis flowers will have found their true love.
The gummies hit hard, and quickly, and the true full-spectrum entourage dose appears to provide effective therapeutics for people with pain. The small Easy Street team is talented. Made up of an engineer, culinary expert, graphics designer, financial expert, attorneys, artists, and educators. The culture at Easy Street is collaborative and encouraging. Every Easy Street team member warrants respect for their specific talents and achievements. One of these very talented members is Shyanne Deshields. Shyanne is the one member that every team must have: a person with diligent attention to consistent quality. She makes sure that every dose of medicine produced meets the Easy Street standard.
According to literally everyone, she deserves enormous credit for the sustained quality of their edibles. Another valuable contributor to the Easy Street team is Richard Brooks. Richard joined the team in May of 2022 to facilitate research and development as well as sharpen recipes. Since Richard joined, Easy Street’s team has increased efficiency in cannabinoid extraction by nearly 50%. In addition to his work at Easy Street, Richard owns and manages a boutique catering company in Oklahoma City.
During busy times of the year, Richard works nearly 80 hours per week preparing, cooking, and catering for his clientele. Richard brings experience in providing artisanal, craft foods to his clients in carefully crafted cooking. According to Richard, this is one of the aspects that attracted him to Easy Street - small batch with high standards, “Just like food, you can’t make a quality product without good ingredients, and if we don’t want to smoke it, we don’t want to cook with it. We do something special here with our edibles, there is nothing like it on the market.” He concludes.

Easy Street Tiramisu

Ingredients
Mascarpone cream
4 egg yolks, coddled
2/3 cup sugar, divided
1 ¼ cup heavy whipping cream
8 oz mascarpone at room temperature
About 28 ladyfingers
Unsweetened cocoa powder
Cannabis-infused
coconut oil with 180 milligrams THC (for 20 mg per serving)
Directions
Espresso mixture 1 ½ cups espresso or very strong, dark roast coffee 2 tablespoons Kahlua 1 tablespoon dark rum ½ cup water
1. In a small saucepan, add Kahlua, dark rum, and water and bring to a boil. Reduce mixture down to 3 tablespoons. Combine with espresso in a shallow dish and bring to room temperature or chill. While not necessary for unmedicated tiramisu, this will cook off most of the alcohol to allow for proper medication.
2. In a small saucepan, bring 1 quart of water to a boil. Add eggs and cook for 1 minute. Remove eggs and transfer to an icewater bath.
3. In a small to medium size mixing bowl, combine egg yolks and 1/3 cup sugar. Using a handheld mixer, whip egg yolks, and sugar until the mixture has tripled in volume and slight ribbons fall from the beaters. Transfer to a larger mixing bowl.
4. In a medium size mixing bowl or stand mixer, whip cream, remaining 1/3 cup sugar, and cannabis oil until you have soft peaks. Add mascarpone and continue until you have a soft, spreadable mixture with medium peaks.
5. Gently fold the mascarpone mixture into egg yolk mixture. Dust the bottom of an 8x8 baking dish with unsweetened cocoa powder.
6. Working with one at a time, quickly dip each ladyfinger in the espresso mixture and allow excess to drip off. Line the bottom of your baking dish with the ladyfingers sugar side up, flat side down. Depending on the shape of your baking dish, you might need to cut or break the ladyfingers to make them fit.
7. Spread half the mascarpone and cannabis mixture on top of the ladyfingers. Repeat process for a second layer.
8. Allow to chill at least 6 hours but overnight is recommended. Before serving, dust the top with cocoa powder and cut into 9 equal serving sizes. thechronicmagazine.com NOVEMBER 2022 48
