The label bears the drawing of an artist of Bruges who had designed the first label for the brewery. Originally it was a special brew blond, 6 % alc./vol. for a customer , called “Het Niew Museum” . Today, this pub still exists in Bruges and although linked to Maes Pils serves some other beers from independent breweries. The De Dolle Brouwers discovered these old labels glued manually to old 25cl bottles, a remainder of the former brewery Costenoble. The original De Dulle Teve, meaning ‘Mad Bitch’ was a one time brew and had been forgotten until a couple of years ago when the de Dolle Brewers thought that making a good triple would not be a bad idea. The beer should be served at 46OF , and stored upright in a cool place.

Brewed in the tradition of a Belgian Triple. Its high density stems from large amounts of pale malt increased with pale candy sugar in the brew kettle. Unfiltered, unpasteurized, bottle-conditioned.
De Dulle Teve 20 Plato Blond keeps one year without major changes in taste. Further maturing will cause it to darken a little and lose some of its bitterness. The bittering of about 30 IBU is due to Golding hops in the brew kettle.
Flavor Mild citrus and lemon note with a fruity taste. Flavors are well developed.
Finish Nice dry bitterness in the finish.

Melchior is Davy Spiessens Belgian interpretation of the Barley Wine style. At about 11% alcohol by volume Melchior is true to style by being heavly malt based using pilsner, wheat, munich and cara malts. It is brewed using 2 English hops Challenger, East Keng Goldings and the Czech Saaz. Davy adds the Belgian influence by using mustard seeds to balance out the sweetness in the beer.
Serve Melchior at 45°-50° F in a tulip shaped glass.

The quest of the Morpheus Yeast
Marc (“the yeast whisperer”) has a Master degree in food science engineering with a specialization in dairy. Since years, he is going on holiday in the French Auvergne. This area is the place to be for cheese lovers. It is there where the best French AOC cheeses like Saint Nectaire, Bleu d’Auvergne have their origin. It was in that particular mystic area of France, with its old volcanoes, where Marc found his yeast, or must we say, the yeast found him?
He created his own recipe for a growth medium for yeasts, and trapped his strain in the open nature of the Auvergne. Of course, some “not wanted” yeast strains were growing in the beginning also, and it took him some years to select the interesting ones. This has asked a lot of dedicated patience. What are the criteria for good brewing yeast? First of all, it must be capable of fermenting maltose, the sugar that is found in malt. Further on, it doesn’t produce off flavors and it is alcohol tolerant.
Pilot tests were confirming above properties of the yeast culture and by January 2010, the sour range of Alvinne beers and some selected beers were fermented with the Morpheus yeast culture.
Almost none of the microbreweries around the world have their own unique yeast. Most of them use commercial yeast. Alvinne brewery thanks a big part of her uniqueness to this yeast. For the big traditional breweries that exist for several generations, the yeast is their

Johan Brandt , with a passion for excellent good beer, started this tiny artisanal brewery end of 1995. In the beginning he brewed only once a week with a capacity of 120 liters (1 barrel). By 1999 he started brewing twice a week with an increased capacity of 160 liters (1.5 barrels), meaning non stop brewing, bottling, washing bottles throughout the year. He is now looking for a bigger brewery where he can brew 700 liters (6 barrels) at a time and fill the bottles automatically. Johan Brandt, also a bee-keeper, started out with only one type of beer, a honey beer called ‘t Smisje. He now produces 6 permanent beers. For his fifth anniversary he introduced ‘Vuuve’ (Flemish for ‘five’), a 5% strong wit beer.

The brewing process for Vuuve 5 starts n the morning when John Brandt crushes the malt and mixes it with warm water so the starch turns into sugar. Around Noon he separates the liquid from the wort. He brings this liquid to a boil, adds the hops, coriander, fresh organic orange peel and then lets everything cool down. Now the liquid is being pumped into a cylinderconical tank and the yeast is added. After a few days of primary fermentation Johan removes the yeast and lets the young beer rest for a few days before adding new yeast and candy sugar and filling the beer into bottles by hand. The secondary fermentation takes place in a warm room for one to two weeks and a few weeks later Vuuve is ready for consumption. For Vuuve he uses 60% barley and 40% wheat malt, hops, coriander and fresh organic orange peel. Vuuve is fruity, spicy, citrusy and prickly on the palate with a long lingering finish of coriander and orange peel. Since Johan Brandt is an artisanal brewer and doesn’t use any chemical products, every brew may be slightly different.

Kent Goldings hops is added at the beginning of the boil while Challenger hops, dark candy sugar and the crushed mustard seeds are added after about 50 min. into the boil. The addition of light candy sugar and fresh top-fermenting yeast to the bottle starts the secondary fermentation in the bottle. After three more weeks Wostyntje is ready to become part of your dinner. Wostyntje has a unique bitterish finish, which stems from the use of “Torhout’s” mustard seeds. A small glass of “Torhout Mustard” is attached to each magnum bottle to give everyone an opportunity to compare the notes of mustard in the beer with the original “Torhout Mustard”.

Hanssens Bartholomeus, former major of Dworp, started to brew lambic in 1871, in the previous Sint-Antonius brewery.
Nowadays, Hanssens Artisanaal is directed by Sidy Hanssens, daughter of Jean, the fourth generation in this gamily’s tradition. It has to be noted that Bartholomeus started as a lambic brewer, but after World War I, when the Germans took all the copper brew material to produce war equipment, he, like many others at that time, had to continue as a blender.
The most significant difference between a geuze blender and geuze brewer is that a geuze blender buys wort (lambic wort) of lambic brewers and does not brew the lambic by his own. A geuze brewer only works with its own lambic whereas a blender works with different lambics.

Mead the Gueze

Produced exclusively for B.United International’s Masters Collection through the combined effort of the Lurgashall Winery [UK] and Hanssens of Dworp [BE].
30 % Mead made from fermented honey and 70 % three year old Gueze are blended, matured in the bottle for about 4 months and will be released for Christmas and New Year 2001.
Lurgashall Mead is produced at the Lurgashall Winery, on the ancient Manorial Estate of Windfallwood Common, near Petworth in West- Sussex, where mead, fruit and flower wines and liqueurs have been produced to the highest standards, using old village recipes.
“A primeval, perfect pint. Early mostly brewsters surely made a drink with spontaneously fermented malt and wheat, along with a good measure {30%}mead {honey beverage}.
Here, a super sensual perfume flares one’s nostrils, like those of a wild animal. Complex contrast defines the fruity taste which begs for flavorful food. We served it with mixed organic vegetables and sustainable grown lamb. The balance of acidity and sweetness complemented each dish. Brasserie a Vapeur was originally opened in 1785. It reopened in 1984 by Jean-Louis Dits and his wife, Sittelle. This brewery is the last to still use steam powered equipment which originated in the last century . The steam provides not only the heat but also the power for the brewing operation which uses belt driven equipment that goes back all the way to 1896. Brasserie a Vapeur only brews 33 bottles (approximately 5,333 bottles) once a month on the last Saturday of each month.

Vapeur cochonne is a amber colored saison that is brewed with roasted chicory, coriander, and sweet orange peel, among other ingredients. The brewer describes the flavor of the beer as “Surprising and original.” There are flavors of caramel, spice, and a sourness stemming from the brewer’s unique yeast. There’s a port like complexity to the sweet and sour brew. There’s very little hop flavor, with the interplay of spicy, sour, and sweet creating it’s unique flavor
The Cochonne can be put aside for aging or drank fresh. The sour flavors will present themselves more, and te beer will become more dry as it ages.
The Vapeur Cochonne was originally created as a special brew in 1992, and was brewed on February 29th. Originally it was named “La Bissextile” to reference that it was brewed on a leap year. A friend of the brewer, cartoonist Louis Michel Carpenter, created the label image of a gleeful pig singing a bawdy french drinking song. This led the name change to “Cochonne” or pig. Smaller bottles of the beer are labeled as “Cochonette” or, little pig. The beer comes with two different labels, with both male and female pigs.

Saison de Pipaix has an immense depth of complexity and a superb blend of tastes. Each batch goes through three fermentations (1st at 75OF for 4 days; 2nd fermentation at 34OF for 3 weeks; and 3rd fermentation at 68OF for another 4 weeks) before it is transferred to the cellar. It uses Pilsner and Munich malts, Hallertau hops and six spices (pepper, ginger, curacao, sweet orange peels, coriander, roast chicory).

In the late eighties, two hobby brewers got to know each other professionally. They produced their first mutual beer, brewing experimentally in a small 25 liter wort boiler. Unfortunately, the results were rather disappointing. In 1991, the two signed up to the Brewery School CTL in Gent and over the next three years their weekends were devoted to lessons and studying the art of beer brewing. They graduated in 1994 and the brews got better all the time. In 2001 the two finally decided to open their own brewery. In 2002 a third partner joined the company and this brought new perspectives and possibilities to the young enterprise. Brewery De Glazen Toren officially started on January 1st 2004. The brewing capacity is 5 hl - at the moment. All beers are bottled in 75 cl (25.4 oz.) bottles. The bottles are presented in originally designed paper wraps.
Ondineke Oilsjtersen Tripel

Ondineke derives its name from the main character of the most famous novel of the most renowned author of Aalst (De Kapellekensbaan by Louis Paul Boon, translated into English in the early seventies as “Chapel Road”). A statue of Ondineke can be found at the entrance of the City Hall of Aalst.
Ondineke is a classic tripel, brewed in the ancient way, again with exclusive natural ingredients: artesian water, malt (barley), hops, yeast and liquid candy sugar. As in the Saison no spices are added.
Ondineke is an unfiltered, soft, creamy, golden top fermented beer. It is double hopped with the last real hops available from the region of Aalst (The variety is Hallertau Mittelfrüh).
Just like the Saison, Ondineke is bottled in 25.4 oz. bottles. The self-designed wrapper is white, yellow and red (the city colors of Aalst). Ondineke has a positive taste evolution and the bottles are best kept standing in a cool, dark place. Preferably Ondineke is to be served at a temperature between 42 to 50°C.

Jan De Lichte is the only Glazen Toren beer to which spices are added, following the Belgian tradition of wheat beer brewing. The use of coriander and curaçoa makes for the extremely fresh, citrus-like taste. The rather high alcohol percentage (7.5 %) indicates that it is more than just a thirst quencher. Quite like Jan De Lichte himself some 250 years ago, the beer is not innocuous.

Canaster was a definite choice to avoid any clear reference to Christmas or New Year in the name. On the other hand the name Canaster clearly refers to an ancient brewing tradition of Aalst. Centuries ago Canaster was brewed in the Carmelite convent in Aalst. The archeological site was recently uncovered and is the subject of an historical investigation.
Canaster now relives as a Winter Scotch, a beer for the long, cold winter evenings. Here the same natural ingredients are used as in the two other products of the brewery, including the Hallertau hop from the Aalst area. The “Speciale Belge” beer style was created in 1904 for a brewing contest that was organized by the Universities of Belgium. The goal was to improve the quality of Belgian beer. The winner was a new style, called “Belge”. Due to the success in the contest, a number of brewers decided to brew the style and called it “Speciale Belge”.
A “Speciale Belge” is pale amber in color (slightly darker than a pilsner) as brewers tried to copy the color of pilsner in a top fermenting ale. Later the color became darker as pilsners became very common to prove that the style is something special.
After the second world war, when the quality of life in Belgium increased, several brewers created a “Speciale Belge” with a higher alcohol content, called a “Dubbel Special Belge”.
Today the “Dubbel Speciale Belge” no longer exists, the current higher gravity beer styles are Trappist, abbey ales and so on. Therefore Brouwerij de Glazen Toren decided to recreate this special beer style.

De Dolle Dulle Teve Special Reserva is a special version of Dulle Teve, which has been matured for over 24 months in wooden casks previously used by Etienne Dupont/France to mature his famous Calvados de Normandie.
The over two year maturation in those wooden casks has allowed Dulle Teve to mellow, lose its aggressive carbonation and dryness, and develop a new balance of flavors triggered by the tannin, vanilla and butterscotch flavors of E. Dupont’s Calvados casks..
In addition the “invisible” Calvados hidden in the wood itself has pushed the alcohol of De Dolle Dulle Teve Special Reserva to about 12% to 13%.

Aroma Loads of yeast, apples, citrus notes along with some wood and a hint of sourness.

Orebier means original, from the spring. Orebier is brewed with more than 6 malts. At the brewery, the beer is kept at a constant temperature of 46OF and allowed Oerbier to age at its best.
