President’s Message Hello members and friends of FIA. Well, the year is flying and nearly six months down already! Thank you all for your wonderful support of the Challenge event and a great night was had by all. It is amazing to know that over the last 6 years, we have contributed more than $170,000 dollars plus the FIA has also contributed to some other events with the supply of food and resources. Read the article inside and also see how much we raised this year. You are all to be commended for your support of this FIA initiative to help Challenge. Our longevity of support is very much appreciated by David Rogers, CEO, Challenge who has passed on his sincere thanks to everyone.
As a wonderful organisation, we with over 3o years heritage and I ask you all to continue to support our events like the Café N Chat, Foodservice Forums and make a new industry friends, do some networking and some business together. Don't forget to get your house in order with end of financial year looming right around the corner.

A new initiative this year is our support for the riders who our training hard for the 'Ride To Conquer Cancer' as part of FIA Deb's team. They have a special fundraising event on Tuesday 16 September, where your support would be appreciated and you can enjoy a game of golf.

Foodservice Forum – Hobart Tuesday 30 July at Hobart Function Centre on Elizabeth Pier. Come for breakfast and hear Richard Fader from Tasmanian Shipping Supplies talk on ‘Providoring at Sea’. This is a wonderful opportunity to understand the complexity of supplying to ships that travel the world and head south to Antarctica. The event will run from 7.30 – 9.30 am. More details will follow

The Impact of Financial Trends Globally and Locally on the Foodservice Industry In these challenging times with so much happening both locally and on the global scene. Huw will share his thoughts on the rising Australian dollar and also share what trends that the foodservice industry should be taking into consideration.
Speaker: Huw McKay, Senior International Economist, Westpac Institutional Bank Huw McKay, Executive Director and Senior International Economist, joined Westpac’s Economic Research team in the year 2000. He is the Bank’s spokesperson on pan-Asian economic and market issues. He was formerly a Principal Advisor in the Macroeconomic Group of the Australian Federal Treasury. His views on the state of the global economy are widely sought by governments, corporations and investors around the world. He is a leading expert on exchange rates, international finance, productivity growth, international trade, economic development and the impact of the world economy on Australia. Huw manages the Bank’s world growth and foreign exchange forecasting processes. A recent Bloomberg study showed Westpac’s currency forecasts have been the world’s most accurate in 2012.

Providoring at Sea The challenges of supplying a floating marketplace including the full supply chain of goods and services to the defence force, to ships & oil rigs around Australia and to ships heading south to the Antarctic. Speaker: Richard Fader, Tasmanian Shipping Supplies Richard is the Managing Director of Tasmanian Shipping Supplies, general ship suppliers serving Australian ports in all aspects of ship supply and service. Richard Fader is also the director of Offshore Unlimited, a company which offers a modern fleet of offshore support vessels servicing Australia's oil and gas industry. Richard began his career in the retail sector, owning and operating a marine chandlery in Sandy Bay. He began receiving requests from larger ships for stores and supplies and Tasmanian Shipping Supplies was the logical next step. Offshore Unlimited developed in a similar way. A request from an existing client for a “chase boat” started a company that now owns and operates five vessels supporting Australia’s offshore oil and gas industry.

With months in the planning from the hard-working Charity Committee, everything fell into place when we were given a very special offer, to gain access to the Level 28 Lounge at Crown Metropol. With the amazing talents of Executive Chef, John Lawson heading up the kitchen of Mr Hive Kitchen & Bar, we were in for a treat. John and his wonderful team put together a great selection of food, that was both visually exciting and tasted fabulous. The high quality of the produce used was reflected in the presentation on the night. We also had fantastic support from various sponsors and also our FIA members, including King Salmon from New Zealand, meat from Felices Place, Seafood from Ocean Made and all the vegetables plus micro greens from Flowerdale Farms, the collective group of suppliers made it so much easier for chef to offer the best to our guests. John works very closely with his suppliers and we were very pleased to work with them and thank them so much for their incredible generosity. Not to be outdone, Arran from Nestle helped to create some tempting desserts served with Movenpick ice cream – a sweet finale!
Our speaker Luke gave a heartfelt speech; he has survived more than his fair share of battles. During his association with Challenge when he was going through cancer, he loved it so much that he went to work for them. Luke has achieved many goals – he is now married and has a young family. This is testament to the powers of help, love and support shown by the Challenge family. Special thanks to Luke for sharing his story and inspiring us to reach for the stars, no matter what challenge we face.. A perfect night in Melbourne and a spectacular view over the bright lights, we could see a city full of life. The night was made more special by the large number of guests who came to support, to buy a raffle ticket, to bid on an auction item or to just be there to say you care. Special thanks to your Charity committee who have all worked hard on this event to make it successful. We were again blessed to have the charming Ross Johnston as our auctioneer who got the show rolling and the excitement in the room. As we all know, FIA made a commitment to continue to support Challenge and to let them know that they can count on us to help in some small way, so their team can enrich the lives of those families in need of their support. We raised more this year so a BIG thank you to all the industry for their support. Once again this night is a highlight in the FIA calendar.

Book Review Coffee Encounters – Adventures to Origin published by Smudge Books 2013 As we travel around the world, we are often absorbed with the local food and produce of a country, that opens up the senses and makes us feel like a local, rather than the tourist we are. The journey of the coffee bean has also captured the imagination of many before us and it continues to stimulate baristas, café owners, coffee roasters and everyone who enjoys their daily fix. From Crop to Cup, come on an adventure through the words and pages of this stunning book. In the words of publisher, Jonette George, “To be given the task of co-ordinating a project on such a grand scale – to research the coffee industry throughout the world and discover how it impacts on our coffee experience back home – was initially daunting. I have to admit.” “The sheer scale of coffee production throughout the world is enormous. In fact it is the second largest traded commodity in the world. If we were to do this justice, we needed to get out of our comfort zone and meet the farmers, the pickers, the importers, the port authorities, the equipment manufacturers, the roasters, the baristas.....to capture their stories and bring them home to you.” “And that is exactly what we did.....we travelled to the four corners of the world......” It is not often you can pick up a book and not put it down and this book is definitely one of those that you will want to read from cover to cover and then then sit on the coffee table, so it is not too far from you. The pictures evoke the people, the equipment, the importers, through to the forests and the hills where they are covered with coffee plantations. This dynamic and talented team of writers and photographers followed leading roasters to the farms where they do business to seal the deal and work with the farmers as they trade in this prized crop. Seeing this story unfold
through various Australian coffee aficionados in the industry, is even more special as they strive to find the best beans, to source an incredible variety and complexity with their beans and to become part of the culture, the people and their families - the amazing growers who work so hard. From Crop to Cup, the journey is always inspiring. A coffee is only as good the barista making it so there are also stories from their perspective, including Australian Barista Champion, Matt Perger. “You can grow, source, roast and deliver quality coffee beans, but it is the barista that oversees the final execution of every cup of speciality coffee. As more discerning coffee drinkers learn the journey from crop to cup, more and more are viewing baristas with greater respect, and, in turn, the country’s baristas are training more intensely and providing higher quality coffees.” The Melbourne International Coffee Expo (MICE) held recently, was a clear example of the direction and vitality of the coffee business, with many local and international baristas on show and also competing for the coveted trophies on offer. Australia and especially in Melbourne, enjoys a fantastic lifestyle and culture with food and beverage. With so many food festivals showcasing the best of what is available, the recent 2013 Melbourne Food & Wine Festival featured a world first with the temporary installation, ‘Urban Coffee Farm’. Baristas from various cafes came to the site each day and showcased coffees sourced from many of the coffee growers in the book. We have much to love about this new generation of cafes around Australia, with charismatic and passionate people behind their coffee machines who serve us our daily cup of life . . . Welcome to the world of Coffee!

Savour Tasmania The island serves up treat after treat with its 2013 Savour Tasmania program, including Chef Master Classes with Shane Delia from Maha in Melbourne and other great chefs who visited Tasmania for their culinary showcase, held annually over two weeks. The idea for this culinary expose on Tasmania, comes from the Tasmanian Government, who know how to share their love for Brand Tasmania and Taste Tasmania so well. All those visiting the island could very well set up home there as Tasmania is bountiful with freshness, great produce and an abundance of passion and great people wanting to share their stories. It all culminates in the final extravaganza event, The Long Dinner for 600 guests, hosted at the equally impressive Princess Wharf on a most pleasant Hobart evening. As guests arrived, students from Tasmanian Polytechnic and also Guilford Young College served a delectable array of canapés, prepared by chefs from Tasmania and also guest chefs, test tubes filled with liquid concoctions, scotch eggs filled with a delicately cooked quail egg and so it went on. Dry ice billowed out from some of the displays and everyone was able to sample the best pre dinner food I have seen for some time. This spectacular setting was set up by a team of culinary wizards, with guest chefs; Kobe Desramaults, Giovanni Pilu, Shane Delia, Darren Purchese, Jahan Patterson-Were, Cheryl and Nasser Daci, led by Executive Chef Marcus Moore for all things culinary, together with Ann and Alan from the Tasmanian Government, who created a space where we
dined at four long tables, each resplendent with colourful placemats, adorned with fruit and vegetables and an array of colourful gumboots! So how do you make this magic happen? Marcus Moore, Consultant in the industry is a dab hand at pulling together events. He was the mastermind behind the very successful “Eat St” held at Sofitel Melbourne on Collins each year with many chefs and restaurants involved to raise funds for charity. He also worked on MFWF Worlds Longest Lunch when presiding over the culinary team at Peter Rowland Catering. This man can create events that bring together cooks, volunteers, chefs and others from all over Tasmania. Everyone got on board and helped. Many started their days at the culinary school, Drysdale College where the main preparation was done before being transported to the venue.

Each course was presented by one of the visiting chefs, who were introduced to us on the night, with a ride through the vast crowd on scooters. This spectacular entry set the scene for a special night of food, tastes and visual stimulation that was to be the start of a new love affair with the culinary talents on show. Chefs also plated dishes in front of the guests, while others came direct from the kitchen. Keen to use local talent, the wonderful Daci and Daci Bakery provided beautiful breads to complement the meal, and this is a bakery worth making a detour for. From the original concept back in October 2012, Marcus, Ann and Alan planned to showcase Tasmania; the brief was a dinner that was fun, affordable to the public, making use of Tasmanian produce and ensuring that the food was plentiful and of great quality. Marcus had no real problem with the suppliers as he worked with the season and the suppliers. “I know Tasmanian products well and the suppliers were right behind us on this event, giving full support of their products, Petuna, Spring Bay Mussels, King Island cheeses, Daci and Daci for the bread, Best fresh fruits and vegetables, Tas prime oysters were all behind us. Tasmanian produce is wonderful and the suppliers
are so passionate about their products, Anvers chocolates even making us chocolates from the rarest cocoa bean in the world.” With such creativity on show, they had to hire all the items to make the vision come to life. Chefs helped through their contacts to arrange spare cooks, chefs and students to help with preparation, participation and to meet with the visiting chefs. Logistics are also a challenge and when you are based in Melbourne, you need to think out of the box. The equipment suppliers and other friend and contacts in the industry all assisted to ensure this event was a great success. At the end of the day, Marcus thought “Wow what a team we have put together and how did we pulI these events off so well. I just hope that I am invited back to do something next year”. CONGRATULATIONS to everyone who was involved in the Long Dinner as part of Savour Tasmania. We had many FIA members present with some travelling over from Melbourne to enjoy the event.
