Probiotic-rich fermented foods and beverages have become a popular way to ‘feed your good’, and kombucha is one of the easiest, and tastiest, ways to get your regular dose.

Despite its recent popularity, kombucha, a fermented tea drink usually containing fruit, isn’t new. In China fermented tea has been consumed for more than 2000 years but the west has only recently twigged to the health benefits. Not all commercially produced kombucha is created equal, and this was part of the incentive when Sydney-based brothers Avit and Tushaan started Jiva Kombucha. BREAKFAST BIRCHER MUESLI CUP

Add 260 g organic rolled oats, 160 g Oliver’s Kai-Ora Seed Mix, 1 tbs ground cinnamon, 1 grated apple and 500 ml organic coconut water or milk to a 1 litre jar. Close lid and shake well until mixed thoroughly. Place jar in fridge and leave overnight. Serve with your choice of yoghurt, juice or fresh fruit. Mix will last up to 5 days refrigerated. Serves 4.

LUNCH ZUCCHINI & KAI-ORA SLICE

Preheat oven to 180°C. Beat 5 eggs in a mixing bowl and add 1½ large zucchinis, grated, and 1 grated white onion. Add 130 g of Oliver's Kai-Ora Seed Mix and 10 g of self-raising flour. Mix well. Place mixture into a greased pie dish. Sprinkle Kai Ora Seed Mix and halved cherry tomatoes on top. Bake for 20 to 30 minutes. Let it stand for 10 minutes before serving. Serve hot or chilled with side salad and tomato relish. Serves 4.

DINNER KAI ORA CRUSTED SALMON

Pour Kai-Ora Seed Mix into a tray. Place 4 salmon fillets on top, skin side up. Press gently to coat. Remove salmon from tray and place in a greased frying pan over medium heat, seed covered side down. Cook for 5 minutes, turn and cook for a further 5 minutes. Serve immediately with you choice of seasonal vegetables. Serves 2.

SNACK KAI-ORA MUESLI BAR

Preheat oven to 160°C. In a mixing bowl add 140 g organic rolled oats and 260 g Kai-Ora Seed Mix. Over low heat warm 300 ml honey and 200 ml peanut butter, stirring constantly to avoid burning and to combine thoroughly. Add the honey mixture to the dry ingredients and mix well. Spoon mixture onto a lined tray, spreading evenly and compressing slightly. Bake for 20 minutes at 160°C, then a further 10 minutes at 170°C. Remove from oven and cool completely. Slice as desired. Keep in a cool place for up to 7 days. Makes 8 serves.

An apple a day ... ^

Organic apple farming in Tasmania’s stunning Huon Valley Tasmania, known as the ‘The Apple Isle’, is the undisputed apple capital of Australia. And more than 80% of Tasmania's apples come from the stunning Huon Valley. In the 1950s some two million tonnes of apples left Hobart wharves every year for Britain and Europe. Things changed in the 1960s when Britain joined the Common Market, effectively putting a stop to those apple-jammed export ships. The families who didn’t sell up had to rethink their methodology to survive. One of the survivors was William Smith &

The first trees were planted in 1888 by William Smith, a passionate farmer who recognised the unique qualities of the valley. His son Ron returned from World War II to guide the family orchard through the boom years of apple export but things were tougher for the third generation. Ian Smith took over the farm aged just 21. After bushfires ravaged the property and the export market collapsed, Ian became one of the apple industry’s innovators.


Fourth generation Huon Valley orchardist Andrew Smith and his father Ian. The fourth generation of orchardists, Andrew Smith, joined his father in the business aged 16. He spent four years, from 19 to 22, travelling for half of each year, meeting apple growers from Britain, Europe and America, returning full of ideas and an enthusiasm for organic growing. In 1998 Andrew established the first 15 acres of organic orchard. Today the entire orchard is managed organically.

Grains of gold ...

Bread is in the DNA of Bill Roberts. His first bakery opened in Newcastle in 1977, supplying stores, including David Jones, with a full range of baked goods. A move towards sourdough and organic practices saw the birth of Bill’s Certified Organic Health Bakery in the late 1990s. Whereas regular bread is made using a baker’s yeast – a single variety of yeast

designed to make bread rise rapidly – sourdough ‘cultures’ are a complex ecosystem with multiple species of yeast. The Bill’s team experimented with many cultures before hitting on the perfect starter for their breads. A simple mix of organic flour and water, placed in the pure air of the beautiful Watagan Mountains, produced a culture with outstanding power and superb flavour.

Good Eggs Petar Pirovic came to Australia aged just 16, fleeing post-war chaos in Croatia. Initially he had to work to pay off his passage, after which he slowly managed to bring the rest of the family to Australia. The Pirovics then started a modest egg farming business in 1965. Initially the business supplied locals and a small number of local stores. As keen consumers of their own product, producing high quality eggs was a priority. Six Pirovic sons took over the business in the early ‘80s, expanding and refining the operation, with respect for the family's past.

remedy Remedy Drinks started in the home kitchen of Melbourne's Sarah and Emmet Condon, starting as a hobby and becoming a business. A passion for the benefits of fermenting saw the Condons take the plunge and sell their homemade kombucha comercially. By the 1800s it had become the preferred thirst quencher of farmers at harvest time, hence its popular name "haymaker's punch". To serve, place around half a cup of chia pudding into a bowl, top with three spoonsful of Oliver’s Macadamia Muesli. Add your choice of sliced fresh fruit (we used strawberry and kiwi fruit) and a sprinkle of coconut.

Place chia seeds, coconut flakes and coconut milk in a large jar with a secure lid. Fasten and shake vigorously to ensure all chia seeds are coated with liquid.

Your chia pudding mix will last for 3 to 5 days in the fridge.

Refrigerate the lidded jar for 12 hours. The chia seeds will absorb the liquid and form a thick pudding.

OUR FOUNDER RETURNS

Oliver’s Real Food started in 2005, and then listed on the ASX in June 2017. Jason stepped aside in May 2018 to allow the board of directors to appoint a new CEO to take Oliver’s into the future. After realising that the business had quickly lost its way under the new management, the board asked Jason to return in March 2019. Jason is now back as a director and CEO, with wife Amanda as a fellow director and Operations Manager.
