EVERY TASTE HAS A STORY TO TELL...

I

n the early 90s, we embarked on a year-long adventure that would be the inspiration for Olives Et Al. Travelling on motorbikes through the mediterranean, the Middle East and North Africa, we fell in love with the food we ate along the way. We couldn’t gather many souvenirs, being on bikes, but we did gather recipes; hoping to recapture the essence of our experiences by recreating at the home the foods we had enjoyed. It is this journey that has inspired our new look, using the bikes we travelled on as the central part of our logo and made up of images taken on the trip. We launched Olives Et Al in 1993 to satisfy our own culinary cravings and to share quality olives with a wider audience. We began producing Marinated Olives using some of our ‘souvenir’ recipes. Over time, the range of products has grown and now includes Oils and Balsamics, Speciality Olives, Sauces, Snacks, Kiln Roasted Nuts and Dressings and Marinades. We still source all the basic ingredients personally. Our aim is to produce food which tastes and looks just the way it should without using artifical colours, flavourings or preservatives. We begin with the finest ingredients, use original recipes (many handed down through generations), add a bucket of passion and finish with minimal and elegant packaging to make some of the best food you are ever likely to taste. One thing you can be sure of is that the quality and authenticity will never be compromised for the sake of production. MARINATED OLIVES

W

e have been marinating olives for the past 20 years, perfecting original flavours and creating new ones. Most are available in both jars and 2.5kg trays for catering. Fully matured and naturally ripened these are all unpasteurised and deliver a really true, authentic flavour. Our jarred olives are marinated in 100% Extra Virgin Olive Oil - please do tell your customers to use the oil once they’ve eaten the olives, it makes a great base for a dressing or dip and is great to cook with in general. Our 2.5kg trays of olives are all marinated in our own, specially created blend of Extra Virgin Olive and Rapeseed Oil, designed not to go solid when chilled. They are also suitable for ambient display if preferred.

DUKKAH SPICED PARTRIDGE with BULGAR SALAD FOR THE PARTRIDGE

FOR THE SALAD

TO SERVE

2 Spatch-Cocked Partridges (ask your butcher to do this)

100g Bulgar Wheat

Chargrilled Veg

1 Carrot, small dice

Handful of Olives Et Al Pitted Kalamata

2 Tbsp of Olives Et Al Spiced Dukkah 3 Tbsp of Olives Et Al Extra Virgin Olive Oil

1 Celery, small dice 1 Cinnamon Stick

Lemon Chutney

1 Star Anise Chicken Stock to cover

METHOD

P

ut the Partidge, Dukkah and Olive Oil into a sandwich ziplock bag and marinade overnight in the fridge. To cook, heat a griddle pan and sear the birds on both sides for 4-5 minutes then finish off in the oven at 180ยบC for 8 minutes. Rest for 5 minutes before serving. To make the Bulgar salad, combine all ingredients and cover with the stock. Bring to the boil and simmer until cooked - usually 14-15mins. To serve; fold chopped Chargrilled Vegetables and a handful of Olives Et Al Pitted Kalamata Olives into the Bulgar Wheat salad, using the resting juices from vegetables and taste to season. Arrange onto the plate and top with the Spatchcock Partridge. Top with a spoonful of the Lemon Chutney. Place a couple of Flatbreads on the side and get stuck in!

We don’t do voicemail or ‘press 1 for this’ - we’ll always endeavour to answer your call in less than four rings and it should always be a proper human with a proper voice. PRICES Prices are always subject to change without notice, although we’ll do our best to make sure this doesn’t happen. Trading with the Euro or other currencies, weather conditions, harvests and the government all effect our buying. Finally, please do be aware that if you choose to order from one of our partner distributors, wholesalers or agents that prices and delivery terms may vary accordignly. ORDERS Orders can be placed by phone, fax, email, homing pigeon or by popping in to see us. So as to avoid errors in order takings, we’ll read your order back to check we’ve taken it down correctly. Orders accepted subject to the availability of goods and on an order-to-order basis. No continuing contractual obligation is implied. Any natural weight loss of products is to be borne by the consignee. Deliveries and receipts of goods must be checked at the time of receipt. Claaims regarding condition or quality can only be accepted if made in writing to us within 2 days. UK DELIVERIES & ORDER TIMES Most of our deliveries are made by FedEx or by pallet and sometimes by Parcelforce. Everything is sent using an overnight courier so as to minimise the time it spends in transit but please do note that this doesn’t necessarily mean you’ll get your order the day after you place it, as we do need time to get it packed and prepared for it’s journey to you. Deliveries are made Monday to Friday although Saturday deliveries are possible in an emergency and with a surcharge of whatever it costs to get it to you. PLEASE NOTE Our friends in the Highlands and Islands of Scotland, all other off-shore islands, Northern and Southern Ireland and other parts of Europe will find their deliveres take a little longer and carriage is charged at cost for all orders. Costs depend on the size of the order and location. Please ask us for details when ordering and we’ll do all we can to make the experience as cost effective as possible.
