Food Properties Report RECIPE Aim: • To demonstrate the formation of an emulsion; hollandaise sauce • To demonstrate coagulation of a poached egg • To present eggs benedict using food photography Eggs benedict Ingredients: - 1 slice of sour dough bread - 1 egg - 1 slice of ham - Splash of vinegar - Cherry tomatoes - Baby spinach - Avocado - Smoked salmon - Black pepper Equipment: - Plate - Backdrop - Camera (phone)

Hollandaise sauce Ingredients: - 30g of butter at room temperature - 15ml cream - 1 egg yolk (slightly whisked) - 1⁄4 t dry mustard - 1/8 t salt - Method for Hollandaise sauce: 1.

Turn gas stove onto high heat with a medium sized saucepan that is quarter filled with water and place on top.

Place a glass or metal bowl on top of the saucepan but making sure it is not touching the water. Bring water to a boil and remove bowl.

Turn down the heat and bring water to a low so it is barely simmering.

Place egg yolk in bowl which is back on top of the pan and whisk constantly for 1 minute.

Start adding butter, 1 cube at a time whilst constantly whisking. Add another cube when the last one is fully melted. (should take around 10mins). Don’t cook too long or it may curdle.

Gradually add cream while still whisking constantly.

Remove bowl from heat and place on a heat proof surface.

The sauce should have the consistency of lightly whisked cream. Then whisk in the lemon juice, dry mustard and salt.

Method for eggs benedict: 1. Place a small saucepan to the heat filled with about half of water, and add a splash of vinegar. (vinegar helps it stay together).

2. When the water is simmering, stir with a spoon to make a whirlpool motion. Crack egg into a ladle and lower it into the water.

3. Cook for around 2-3 minutes, remove from water with a ladle and place into a bowl to get the water off it so your bread isn’t soggy.

4. Put all ingredients on your sour dough and place egg on top.

5. Serve with hollandaise and present how you like.

Analysis: Eggs benedict is a nice, fresh, healthy breakfast meal. It ranges in colour from the red tomatoes to green spinach and yellow hollandaise sauce and the flavour and is a good way to start off your day. The different textures and shaped of all the food is a good mix.

This meal can be eaten all year round, whether it’s summer or winter. It is healthy and provides good nutrients for you.
