INGREDIENTS • 2 tbsp. butter
• ¼ cup mushrooms
• ½ cup chopped onions
• 1/8 cup broccoli
• ¼ cup chopped carrots
• 3 cups turkey gravy
• ¼ cup chopped potatoes
• Freshly ground black pepper
• Kosher salt
• 1 sheet puff pastry,
• 2 cups cooked, chopped turkey
refrigerated • 1 egg
PR E PA R ATI O N 1. Preheat oven to 400°F. Grease four ramekins or 8-oz. baking dishes. 2. In a large pot melt the butter and then cook the onions over low heat to soften. Add the carrots, potatoes, a pinch of salt, and cook, covered, for about 4 minutes, stirring occasionally. Add the turkey, mushrooms, and broccoli and continue to cook, covered, for another 5 minutes. Add the gravy and bring to a simmer, cooking until the vegetables are tender. Salt and pepper to taste. Set aside. 3. Cut circles out of the cold puff pastry sheet large enough to cover each ramekin, plus ½-inch extra to seal. 4. Ladle the pot pie mixture into the ramekins. Flip one pastry circle on top of each ramekin, being careful not to push down and make contact with the pot pie mixture. Gently press the edges around each ramekin to seal. 5. Lightly brush the pastry surface with egg wash. Place the ramekins on a sheet pan and bake until the pastry is golden brown and slightly puffed, about 30 minutes. 18
6. Allow the pot pies to set for 5 minutes, and then serve immediately.

Molasses Gingerbread Bars with Dried Cherries & Cocoa Nibs MAKES 24 BARS
INGREDIENTS • 2 cups all-purpose flour
• ¼ tsp. ground cloves
• 1 cup dried tart cherries
• 1½ tsp. baking soda
• 1 cup sugar
• ¼ cup cocoa nibs
• 1 tsp. ground cinnamon
• ¾ cup canola oil
• Powdered sugar
• ¾ tsp. ground ginger
• ¼ cup molasses
• ½ tsp. kosher salt
• 1 large egg
PR E PA R ATI O N 1. Preheat the oven to 350°F. Grease a 9x13-inch baking dish and line with parchment paper. 2. In a medium mixing bowl sift the flour, baking soda, cinnamon, ginger, salt, and cloves. 3. In a separate large mixing bowl add the sugar and oil; mix until smooth. Add the molasses and the egg, mixing until smooth. 4. Stir the dry mixture into the wet mixture. Add the cherries and cocoa nibs, mixing until just combined. 5. Spread the mixture evenly into the prepared dish and bake until the center is a little soft and the edges are crispy, about 25 minutes. 6. Place the dish on a rack to cool. Cut into bars, dust with powdered sugar, and enjoy with a glass of ONEHOPE Italian Reserve Brut Millesimato Prosecco or Cranberry and Pinot Noir Mulled Wine (pages 22–23).

INGREDIENTS • 1 bottle of ONEHOPE Vintner Collection California Pinot Noir • 1 cup chopped cranberries,

PR E PA R ATI O N 1. In a pot combine the ONEHOPE Vintner Collection California Pinot Noir, chopped cranberries, sugar, and 3 cinnamon sticks. Bring to a boil, stirring to dissolve the sugar. Reduce the heat and simmer until wine has slightly reduced, about 5 minutes. 2. Strain most of the cranberries from the mixture, allowing some to remain for garnish and added flavor. 3. Pour the mulled wine into four mugs and garnish each with a cinnamon stick, an orange slice, and a few cranberries. 23
