Chilaquiles SERVES 4

INGREDIENTS • 16 corn tortillas (see Pro Tip)

• 2 ripe avocados, diced

• 2 tbsp. chopped cilantro

• ONEHOPE Extra Virgin

• ¼ cup crumbled cotija

• 2 tbsp. sliced radishes

Olive Oil

or queso fresco cheese

• 4 large eggs

• 2 tbsp. diced red onions

• 2 tbsp. sliced fresh jalapeños • 1 lime, halved

• 1 10-ounce can red enchilada sauce (see Pro Tip)

PR E PA R ATI O N 1. Preheat oven to 400°F. Spray two large baking sheets with nonstick cooking spray. 2. Make two large stacks of tortillas and cut each stack into eight wedges. Spread the tortilla wedges in a single layer on the prepared baking sheets, brush with ONEHOPE Extra Virgin Olive Oil, and bake until golden brown and crisp like tortilla chips, 10 to 15 minutes. 3. Heat 1 tbsp. oil in a large skillet over medium heat. Carefully crack the eggs into the hot pan, and cook until the whites are set on top and the yolks are still runny, about 3 minutes. Transfer the eggs to a plate, and set aside. 4. In the same skillet over medium-high heat, warm the enchilada sauce until heated through, about 3 minutes. Remove skillet from the heat. 5. Add the baked tortilla chips to the skillet, and toss to coat with the sauce. Top with the fried eggs, avocado, cheese, onions, cilantro, radishes, and jalapeños. Squeeze the lime juice over top, and serve immediately.

Quiche Lorraine SERVES 8

INGREDIENTS • Pie crust pastry (see Pro Tip)

• 4 eggs, lightly beaten

• 4 strips bacon

• ½ tsp. kosher salt

• 1 onion, thinly sliced

• ¼ tsp. freshly ground

• 2 cups heavy whipping cream • 1 cup Gruyère or

black pepper • ¼ tsp. nutmeg • Tabasco sauce, to taste

Swiss cheese, cubed • ¼ cup grated Parmesan cheese

PR E PA R ATI O N 1. Line a nine-inch pie plate with the pie crust pastry, and flute the edges. Pre-bake the pastry according to recipe or package directions. 2. In a skillet, cook the bacon until crisp. Remove the bacon, and crumble. Pour off all but 1 tbsp. of the fat. Sauté the onion in the fat for 3 to 5 minutes, until transparent. 3. Combine the bacon, onion, whipping cream, cheeses, eggs, salt, nutmeg, pepper, and Tabasco sauce. Pour into the partially baked crust. 4. Place the pie plate on a sheet pan, and bake at 375°F for about 25 minutes, or until a knife inserted one inch from the edge comes out clean. Cool on a wire rack for 5 to 10 minutes before serving.

Monte Cristos SERVES 4

INGREDIENTS • 12 slices white bread

• 6 large eggs

• Powdered sugar

• Mayonnaise, as needed

• ½ cup milk

• Strawberry slices

• 4 slices Gouda cheese

• ½ tsp. ground cinnamon

• Blackberries

• 8 slices turkey, thinly sliced

• ½ cup coconut oil, divided

• Blueberries

• 4 slices Swiss cheese

• ¼ cup unsalted butter,

• 8 slices ham, thinly sliced

PR E PA R ATI O N 1. Spread 2 slices of bread with mayonnaise. Top 1 slice of bread with 1 slice of Gouda and 2 slices of turkey. Top the other slice with 1 slice of Swiss and 2 slices of ham. Put a third slice of bread on top of one of the stacks, and flip onto the other stack to make a triple-decker sandwich. Repeat to create three more sandwiches. 2. Cut the crusts off the sandwiches to help seal the edges, and wrap each tightly in parchment paper or plastic wrap. Refrigerate for at least 30 minutes or overnight (see Pro Tip). In a large mixing bowl, whisk the eggs, milk, and cinnamon. 3. In a skillet over medium-high heat, heat 2 tbsp. oil and 1 tbsp. butter. Unwrap one sandwich and dip it in the egg batter, turning once to coat evenly. Place the sandwich in the skillet and fry until golden brown, about 4 minutes, flipping halfway through. Fry each edge for 20 to 30 seconds. Repeat with the remaining three sandwiches. 4. Cut each Monte Cristo in half on the diagonal, plate, and garnish with powdered sugar and fresh fruit. Spoon some jam over top and serve immediately.
