Wine Snobs NOT ALLOWED
Meet Moscato—the delicious, unpretentious wine that’s been making mouths water for millenia. That’s right, some wine historians believe that the Romans brought the Muscat grape, from which Moscato is made, to the Mediterranean region more than 3,000 years ago. Not only is Muscat among the world’s oldest grape families, it’s also the only fine winemaking variety that doubles as a table grape. Sometimes scoffed at as “one of those sweet wines,” Moscato actually ranges in finish, from mildly sweet to off-dry. Aromatic and fruit-forward in flavor, this undeniably tasty varietal has a lower alcohol content than many other wines, making it highly drinkable—there’s a reason its sales have been skyrocketing for the past decade. Whether you’re new to this luscious varietal, or you’re an old regular, be sure to try our Napa Valley Moscato. Packed with decadent stone fruit flavor, floral notes, and finished with a nectar-like sweetness, it’s a welcome guest at any spring fling.

Chilaquiles SERVES 4
INGREDIENTS • 16 corn tortillas (see Pro Tip)
• 2 ripe avocados, diced
• 2 tbsp. chopped cilantro
• ONEHOPE Extra Virgin
• ¼ cup crumbled cotija
• 2 tbsp. sliced radishes
Olive Oil
or queso fresco cheese
• 4 large eggs
• 2 tbsp. diced red onions
• 2 tbsp. sliced fresh jalapeños • 1 lime, halved
• 1 10-ounce can red enchilada sauce (see Pro Tip)
PR E PA R ATI O N 1. Preheat oven to 400°F. Spray two large baking sheets with nonstick cooking spray. 2. Make two large stacks of tortillas and cut each stack into eight wedges. Spread the tortilla wedges in a single layer on the prepared baking sheets, brush with ONEHOPE Extra Virgin Olive Oil, and bake until golden brown and crisp like tortilla chips, 10 to 15 minutes. 3. Heat 1 tbsp. oil in a large skillet over medium heat. Carefully crack the eggs into the hot pan, and cook until the whites are set on top and the yolks are still runny, about 3 minutes. Transfer the eggs to a plate, and set aside. 4. In the same skillet over medium-high heat, warm the enchilada sauce until heated through, about 3 minutes. Remove skillet from the heat. 5. Add the baked tortilla chips to the skillet, and toss to coat with the sauce. Top with the fried eggs, avocado, cheese, onions, cilantro, radishes, and jalapeños. Squeeze the lime juice over top, and serve immediately.

Quiche Lorraine SERVES 8
INGREDIENTS • Pie crust pastry (see Pro Tip)
• 4 eggs, lightly beaten
• 4 strips bacon
• ½ tsp. kosher salt
• 1 onion, thinly sliced

Put a third slice of bread on top of one of the stacks, and flip onto the other stack to make a triple-decker sandwich. Repeat to create three more sandwiches. 2. Cut the crusts off the sandwiches to help seal the edges, and wrap each tightly in parchment paper or plastic wrap. Refrigerate for at least 30 minutes or overnight (see Pro Tip). In a large mixing bowl, whisk the eggs, milk, and cinnamon. 3. In a skillet over medium-high heat, heat 2 tbsp. oil and 1 tbsp. butter. Unwrap one sandwich and dip it in the egg batter, turning once to coat evenly. Place the sandwich in the skillet and fry until golden brown, about 4 minutes, flipping halfway through. Fry each edge for 20 to 30 seconds. Repeat with the remaining three sandwiches. 4. Cut each Monte Cristo in half on the diagonal, plate, and garnish with powdered sugar and fresh fruit. Spoon some jam over top and serve immediately.
