Sriracha Chex Mix SERVES 10 INGREDIENTS 6 cups Corn Chex Cereal
3 tbsp. butter
3 cups pretzel nuggets
Âź cup Sriracha
3 cups pita chips
3 tbsp. honey
2 cups Harvest Snaps Snapea Crisps (or any freeze-dried pea snacks)
1 tbsp. fresh lime juice
1 cup cashews
1 tsp. fresh grated ginger 2 packages nori snack sheets, shredded
1 cup quartered dried apricots
P R E PA R AT I O N Preheat oven to 350°F, and line a sheet pan with parchment paper. In a large mixing bowl, combine the corn cereal, pretzels, pita chips, freeze-dried pea crisps, cashews, and apricots, and set aside. In a small pot over low heat, melt the butter. Turn off the heat, and stir in the Sriracha, honey, lime juice, and ginger. Pour the butter-Sriracha mixture over the dry cereal mixture in the bowl, and toss to coat. Spread the coated mixture evenly on the prepared sheet pan, and bake for 5 minutes. Allow the mixture to cool, and then toss in the shredded nori and serve.

Ahi Tuna-Cucumber Canapés SERVES 4 INGREDIENTS Dressing
Canapés
¾ cup soy sauce (substitute to make gluten free)
½ pound ahi tuna, chopped
1 tbsp. fresh lime juice 1 tbsp. sesame oil 1 tbsp. minced scallion
Kosher salt 1 English cucumber, sliced ¼-inch thick on the bias 1 bunch scallions, sliced 1 tbsp. black sesame seeds
1 tsp. honey 1 tsp. fresh grated ginger 1 tsp. Sriracha (optional)
P R E PA R AT I O N Combine all the dressing ingredients in a mixing bowl, whisking vigorously. Place the chopped tuna in another mixing bowl, and add the dressing. Mix until fully dressed; cover and refrigerate until just before serving. Lightly salt each cucumber slice, and then place a tablespoon of the tuna mixture onto the center of each. Garnish with the scallions and black sesame seeds.

Turkey Croquettes with Dijon Mustard Sauce SERVES 6 INGREDIENTS Croquettes
Freshly ground black pepper, to taste
1 pound ground turkey or chicken, cooked, drained, and cooled
3 cups panko bread crumbs 2 cups all-purpose flour
3 large russet potatoes, peeled, boiled, mashed, and cooled
Sauce
4 eggs, divided
1 ½ cups mayonnaise
½ cup butter, melted
1 cup Dijon mustard
½ cup sour cream
1 cup whole-grain mustard
¼ cup + 2 tbsp. chopped parsley, divided
½ cup warm water
Kosher salt, to taste
P R E PA R AT I O N To make the croquettes, combine the cooked turkey, mashed potatoes, two of the eggs, the butter, sour cream, ¼ cup of the chopped parsley, and salt and pepper in a mixing bowl. Place the panko, flour, and the remaining two eggs, beaten, in 3 separate mixing bowls. Using the turkey mixture, form the croquettes into balls, each about 1-inch in diameter. Coat each ball first in the flour, then in the egg, and lastly in the panko. Fry each croquette at 350°F, 45 seconds to 1 minute, until golden brown and hot in the center. To make the sauce, combine the mayonnaise, both mustards, water, the remaining parsley, and salt and pepper in a mixing bowl. Chill and serve.

Aussie-Style Mini Meat Pies SERVES 4 INGREDIENTS 1 tbsp. butter
½ cup ONEHOPE Reserve Shiraz
1 tbsp. extra-virgin olive oil
Kosher salt, to taste
3 medium carrots, diced
Freshly ground black pepper, to taste
2 large russet potatoes, diced
½ pound beef (preferably Australian), diced
2 celery stalks, diced
Store-bought puff pastry sheets
1 medium yellow onion, diced
2 eggs, beaten (optional)
1 cup mushrooms, diced and sautéed
P R E PA R AT I O N Preheat oven to 350ºF, and line a sheet pan with parchment paper. In a large saute pan over medium heat, add the butter and oil. Add the carrots, potatoes, celery, and onion, and cook for 4 to 5 minutes, stirring occasionally. Turn the heat to high, add the beef, and cook for 2 to 3 minutes, stirring a few times. Add the mushrooms and the ONEHOPE Reserve Shiraz, and cook for another 2 to 3 minutes, or until 1 tablespoon of liquid remains. Season with salt and pepper, and allow mixture to cool. Roll out the puff pastry sheets, and cut into 1.5-by-1.5-inch squares. Spoon a tablespoon of the beef mixture into the center of each square. Fold one corner of each square into the center, and tap the corner with a dot of water to help the pastry seal. Continue with each corner until the squares are completely closed. Place the mini pies onto the prepared sheet pan, and brush with the egg wash. Bake for 25 to 30 minutes, or until golden brown, and serve.

Winter Freeze Granitas SERVES 2 P R E PA R AT I O N Add the water, sugar, and four of the fresh rosemary sprigs to a pot, and bring to a boil. Turn off the heat, cover, and let cool. Stir in the ONEHOPE California Muscat Canelli and the lemon juice. Freeze in a container for at least 3 hours, stirring often as it solidifies. Scoop the granita into glasses, and serve each garnished with a fresh rosemary sprig.
