The territory The south of Italy, in particular the region of Calabria, was a territory where different cultures settled many years ago and where many people have left their cultural background during their passage. The Greeks and the Romans, later the Visigoths, the Goths and also the Byzantines, the Arabs and the Normans, left to this territory their culture, art and traditions that are unique in their kind. Thanks to them, Calabria is today the cradle of those high-quality products which were maintained over the centuries. Starting from the top of the Italian boot, the province of Reggio Calabria is very famous for the presence of bergamot, which is a product completely exclusive of this area, whose good climatic conditions are particularly advantageous for the plantation of citrus fruits. This is an area where there are a lot of vineyards, olive tree groves, woods and plenty of water that all constitute the perfect conditions to produce an excellent wheat and therefore an excellent pasta. Preparing homemade “macaroni”, “covatelli” and all the other types of pasta is important for us to give satisfaction to the most demanding palates, using a wheat flour of the highest quality honored for its yield and its organoleptic characteristics, it is also worked with the water coming from the plateau of the south of Italy, which is called Sila. This is the secret that we were to look for: an handmade pasta with durum wheat semolina, obtained exclusively from the semolina of the highest quality and from transformation processes that guarantee high quality, flavor and color of the homemade pasta. In this local context, where the great rural tradition is still at the head of the food chain and where the territory expresses all the ideal conditions for the cultivation of a good wheat, handmade pasta takes shape combining tradition with technology. The production is today enriched by following the latest technological methods and in compliance with health regulations and methodologies. Controlled at each instant and production phase, the product is careful examined at each step of processing so as the ensure a product that can guarantee the particular characteristics of the past. Biologic and extra virgin olive oil Biologic and extra virgin olive oil Francesco lives in Crotone, in Southern Italy, and produces extra virgin olive oil using a classic method from 37 years. He still believes that the passion and love are the key ingredients to produce a valuable oil and to provide the authentic Italian experience. The olives are hand-picked at the right time and immediately processed in the mill. Modern technologies allow it to cold working or low temperatures and short time without storing them, in order to preserve all the natural beneficial properties of the fruit. The oil is subjected to natural settling. Highly qualified and experienced workers check all production processes from the mill to the bottle. This are production constraints from which flows the high quality of our product. The production area is located in the High Marquisate of the city of Crotone that is always characterized by the plantation of thousands of hectares of olive groves, at about 600 meters from the sea level. Particularly favorable are the microclimatic factors that give to this oil some excellent characteristics. The intense color, emerald reflections, the flavor and the intense scent are the main characteristics of the extra virgin olive oil of our land.

Pecorino cheese from raw milk Pecorino cheese from raw milk In Southern Italy, in the area of the marquisate of Crotone, farms rearing since the end of the 800 sheep. Pecorino canestrato (whose name derives from the basket which is contained) of Crotone owes its uniqueness to the use of Gentle breed sheep’s milk (one of the most important native sheep breeds in Italy) and kid rennet. Chiefs graze in the wild, in natural pastures, of private ownership and in open country. The production company has maintained intact the original methods of rural herding and craft traditions, managing to integrate them with respect for the rules of production dictated by EU regulations. It is a product obtained from the processing of raw milk with rennet and salt. For the particularities of its proteins it is considered a food full of high bio-nutritious and dietetic values. The cheese is left to mature in a special ventilated natural temperature with low humidity, on woo-
den tables. The cheese changes the flavor with the increase of the seasoning time. During the first few days, the taste of Pecorino Cheese (First Salt) is particularly sweet and delicate, with a soft consistency of the pulp. After 10 days it changes its name in “semi-hard Cheese” and it begins to present a stronger flavor and the paste that becomes creamier. After 30 days it changes its name again in “Seasoned Pecorino” and acquires a strong and pleasantly salty taste. The forms can be classical of about a kilo, but there are also very large forms which also exceed ten kilos. The changing of flavor does not take place only during the seasoning period but also according to the places and the products that we put together with Pecorino Cheese in this period, such as hay, wine, in cave, etc. Then it is possible to obtain a unique Pecorino Cheese in terms of fragrance and intensity of flavor.

Caciocavallo Cheese is one of the oldest pasta filata cheeses of southern Italy. The raw milk, deriving from a maximum of four consecutive milking, is inoculated with a natural whey. In order to coagulate, the milk is brought to a temperature of 36-38° C with the addition of veal rennet or kid. The curd is subjected to a rupture into little pieces and it is left to become acidic. After 4 or 10 hours, it reaches the perfect acidity, the paste is ready to be spun and worked by hand giving the cheese its typical shape, with or without head. The salting is done in brine. Its maturation takes normally place in cellars, where the forms are linked in pairs straddling poles. This phase lasts from a minimum of 30 days to a few months. It presents with a smooth crust, thin, intensive pale yellow. The paste is tough and oily, white or pale yellow, thin, distributed in an irregular way. It is perfect to combine with bread or vegetables. It is a cheese that is suitable to be melted. It is also suitable to white wines with an enveloping perfume and personality. If it is aged, it is best suitable to red wines of medium body.

Cold cuts Cold cuts Going back with memories to past’s perfumes and to traditional food cannot fail to contemplate the remembrance of our grandparents who, in a particular period of the year that often coincided with the winter season, dive into the ritual and into the pleasure of preparing cold cuts. The pleasure of being together and the celebration of traditional flavors are common with the production of these typical products. Each people from Calabria who practices this ritual puts it into his own calendar like a very important recurrence. Meat from pigs guaranteed on average the survival of families all year long. For this reason this animal has become a synonymous of richness and opulence. The ritual, which is associated to it, has become one of the most traditional ways of putting together friends and family. The whole ritual of killing of pigs, the slaughter and the manufacture of meats lasted almost three days. At 4 o’clock a.m. of the first day they used to light a fire under a big boiler in order to prepare hot water. In the meantime, pork was reached into the pigsty and, after being well tied, was conducted towards the
place where it would have been slaughtered. The killing of pigs was enclosed of an atmosphere of sacredness which was maybe inherited from the ancient Greek and Roman culture. The collected blood was immediately given to a woman who mixed it in order not to coagulate. “Sanguinazz” was prepared with that blood, that is to say “Sanguinaccio”, following old recipes. Then pigs were hung upside down on a big beam, it was after cut into pieces and experienced butchers started the working. Breaking into small pieces of the meat for Soppressate and of sausages finished the first one day. The second day began with the procedure of bagging of Soppressate and sausages. The third day was usually dedicated to binge of the boiler. The celebrations of the end of the year ended in this way and thanks to it friends and relatives ,who were usually nearby or faraway, were put together again. Only Good Italy rediscovers the magic of these moments and allows, to consumers all over the world, of meeting again this tradition and this ritual through the taste of cold cuts.

Capocollo is another pride of Calabria. It is prepared using the meat of the upper portion of the loin of pigs, boned and then dry salted or into the brine, with cooking ground salt. The long tomatoes are cultivated in open fields in the month of April and May, and are manually collected in July and August. This is our strong piece in terms of seasonings. Tomato purée can be combined with all typical dishes of the Italian tradition. There are rituals that have been transmitted forward from generation to generation. Sometimes, these rituals, may also concern the simple daily living, as the preparation of a good tomato sauce, whose history begins in fields. It is exclusively prepared with fresh tomatoes of San Marzano that is biologically fertilized, our past will remember us the taste and flavor of summer on your table even when now we hailed this season. Among the specialties based on chili the first one place is due to N’Duja of Spilinga, a devilish cured salami, smoked, as someone has written a “red Nutella”, but instead of nuts there is pork and small amounts of fat obtained from the girth, the shoulder and the thigh of the pig and red chili dried instead of cocoa. It is an ancient, simple and ingenious recipe. It is a real magic that changes poverty into wealth, taste, color and aroma. It is considered as one of the best sausages of Italy. Historically, it was born as the food of poor people who intended for the consumption of less affluent social classes that draws its strength from the need to use the remaining part of the pork that remained after intended to landowners the more valuable parties. The geniality of these social classes has succeeded in giving life, through the wise choice of the ingredients of our territory, to an alchemical recipe, that has created an extraordinary delicacy. The secret of the flavor of the N’duja does not depend only on the choice of raw materials but especially by chili pepper that are of two types and are locally produced. The pipereju is long and thin, red and spicy, another round in shape, whereas tunduliju is sweeter and fleshy. The relationship, skillfully measured, between the two types of chili pepper is not defined but respects the secret of single recipes and modulates the sensorial differences of the various products. It is a tasty gastronomic peculiarity hailing from the Ionian Coast of Calabria that was born from the necessity of the population to search for all the possible measures and systems for preserving foods not only as a supply of the year but especially to cope with invasions. Exactly after the invasion of Arabs in Crucoli, it is possible to attributed to this event this extraordinary invention that becomes the spicier and tastier fish preserves of the Mediterranean area, synthesis between land and sea. Born from the skillful mixture of whitebait, which is a species of fish also called rosamarina or milk pudding, red chili pepper and uncultivated fennel. It is still today necessary to follow the ancient recipes in order to produce it in Crucoli that go back many centuries: the new fresh fledgling, after being washed with fresh water, slightly salted, is placed to dry in canisters. Then it follows the salting in salaturi of clay putting together with uncultivated fennel from Sila. After being sealing underweight it is left to mature for about 6-7 months. The treatment of maturation determines the success of Sardella. The choice of the right time to remove sardella from brine is the best moment to proceed to dough with the very spicy powder of the red chili pepper and uncultivated fennel seeds. It shows itself as a fine and homogeneous cream. Spread on toasted bread with a bottom of butter, it can be considered as a seasoning of the fried egg, sautĂŠed and mixed to spaghetti or even with a cut Cipolla rossa of Tropea.

Sicily is the only Italian region that produces pistachio and the city of Bronte, at the foot of Mount Etna, with over three thousand hectares in specialized cultivation, it expresses the area of main plantation with a production of specific characteristics. The cultivation of pistachio was started in the Sicilian territory by the Arabic conquerors, who recognized in the north-west side of Etna, a fertile lava land able to enrich these fruits of particular minerals and vitamins otherwise not found in other types of pistachios.
