This model shows the four stomach compartments of a ruminent animal: the rumen, the abomasum, the reticulum and the omasum. Accompanying signage includes a description of the various feed types (pasture, hay, silage, grains, minerals etc.) along with labelled jars which can be filled with samples.
Due to the size and fragile nature of the rumen it must be picked up and returned to the BFO office in Guelph. *Rumen and signage available for loan and signage available for purchase

Wheel is accompanied with a 24 inch by 32 inch sign that can be placed on an easel, and beef and cattle-related questions with answers on cardstock. Sticker or tattoo prizes could be distributed for participation or correct answers.

ONE-BITE GREEK MEATBALLS with Tzatziki Dipping Sauce
ONE-BITE GREEK MEATBALLS with Tzatziki Dipping Sauce
Ingredients
1
large English cucumber, grated
1½ cups (375 mL) plain Greek yogurt
2 tbsp (30 mL) lemon juice
2 tbsp (30 mL) fresh chopped dill
1 clove garlic, minced Salt and fresh cracked black pepper, to taste
Directions
MEATBALLS
1. Preheat oven to 400°F (205°C).

2. In a large mixing bowl add beef, spinach, feta, breadcrumbs, garlic, salt and pepper. Mix with spoon or hands until well blended.
3. Shape into 1-inch (2.5 cm) balls and place on a parchment-lined baking sheet. Bake, uncovered, for 20 minutes or until internal temperature reaches 160°F (71°C) and center is no longer pink.
4. Serve with tzatziki dipping sauce as an appetizer or grab them to go as a proteinrich snack.
TZATZIKI
DIPPING SAUCE
1. Place grated cucumber into a bowl lined with a paper towel or cheese cloth. Wrap and gently squeeze out excess moisture. Transfer to a medium mixing bowl.
2. To the cucumber add yogurt, lemon juice, dill, garlic, salt and pepper. Stir until combined. Cover and refrigerate at least 1 hour before serving to allow for flavour to develop.

BEEF SOUVLAKI WITH Grilled Watermelon
& Halloumi
Prep: 25 min | Cook: 10 min | Yield: 4 servings
A little bit of sweet, a little bit of spicy and a whole lot of delicious. Premium Ontario top sirloin steak combines with two unlikely heroes – watermelon and halloumi – in this mouth-watering masterpiece by Susan from Rhubarb & Cod.
Ingredients
400 g (14 oz) Ontario top sirloin steak, cut into large chunks
1 ½ tsp kosher salt, divided ½ mini watermelon, cut into bite-sized chunks
300 g (10.5 oz) halloumi, sliced and cut into thirds
½ red onion, cut into bite-sized chunks
2 cloves garlic, peeled and thinly sliced

½ tsp dried oregano
red onion, diced
cup white vinegar
¼ cup olive oil 2 tbsp red wine vinegar
tbsp sugar
tsp kosher salt
cup honey

Directions
Place the steak in the bowl and add about ½ tsp of the salt. Massage the salt into the beef and set it aside while you prep the rest of your ingredients. Place the watermelon, onion, and halloumi in a separate bowl and set them aside as well.
In a small bowl, whisk to combine the olive oil, vinegar, lemon juice, oregano, and crushed red pepper flakes. Pour half of the marinade over the steak and the other half over the watermelon, halloumi, and onion. Toss to coat. Let marinate for 2 hours.
While the beef is marinating, make the Hot Peppers with Honey. Place the peppers in a medium-sized bowl and add the red onion. Pour in the white vinegar, salt, and sugar. Give it a stir and set it aside to pickle at room temperature for 2 hours.
Thread the steak, watermelon, halloumi, and red onion onto a series of stainless steel skewers or bamboo skewers that have been soaked overnight.
Heat a oiled charcoal or gas grill until smoking. Add the skewers and grill for 2-3 minutes per side or until the steak reaches your desired doneness. Transfer the skewers to a platter and set aside.
Transfer the hot peppers from their vinegar solution and add them to the honey. Give them a quick stir and spoon the mixture over top of the skewers. Garnish with fresh mint and serve immediately. SCAN FOR RECIPES, COOKING TIPS AND MORE!
