They say the world is small, and there are times in our lives that prove that to be true. My mom left her family in Burma to come to the United States to be with my dad. The two of them worked hard to buy a passage for her mother to come and live with them, but sadly, it was never meant to be. Her mother passed from ovarian cancer, and my mom never had the chance to be with her again. She prayed daily for her mom to go to heaven, as she was Catholic her mother was Buddhist. Many years later, in 1967, as a family now with three children, we all went to EXPO 67 - a world fair in Canada. We visited the Burma Hall, and my mother loved seeing all the familiar places from her youth and young adult life. She noticed a Priest and went to speak with him and, as they spoke, she realized he was the Priest from her town in Burma! There in Canada, thousands of miles away, she found the man who was at her mother’s side when she passed, and he confirmed she was given her last rights. To my mom, this meant everything. She was so thankful. I recently had a similar across-the-miles experience. I lived in Manhattan Beach, CA for many years in a very tiny room that basically had a bed, closet and a bathroom. But it was heaven to me with my three French windows that opened up to the sound of the ocean’s waves. I was three blocks from the strand and lived behind my best friend Yasmine whom I shared so many great times with. She met her future husband there and off she went, but I stayed as rent was great and location, location, location!
Over the years, traveling back there many times, I looked her up but had never been able to find her. On our last trip, on the final day before we were to leave, after a bit of internet research, I located a shop owner named Yasmine and called, and it was her! It had been 17 years since we last spoke and a lot had changed. She had three boys, but I was sad to hear that John, her husband, had died three years ago. She was busy working and owned her own business and was very proud of her boys who had graduated from USC and were all happily living their own lives. She had a granddaughter, too! What fun it was catching up. She was in Rancho Palos Verdes and I was in San Diego, Solana Beach area when we spoke, and I was thinking it sure would be nice to see her but, no time this trip. That evening, as we drove up to LA, I remember thinking that seeing her was the only thing I missed doing on our trip. We went to Santa Monica to go shopping and ended up in a surf shop. They were getting ready to close and I was on a mission to find a backpack for my son for school. The manager was super sweet, insisting we take our time, and he started to chat with my daughter. We learned he was also in real estate, and he offered to help find a place for my daughter to live when she was ready. I told him I have a place, the same place I lived in Manhattan Beach, and showed him the video of it I had taken earlier that week. In that video, I was talking about how I lived there and my best friend Yasmine lived over there, and he said, “My moms’ name is Yasmine. Yasmine Ryan.” I was stunned. I gave him the biggest hug and texted Yasmine a picture of the two of us. I quickly called her and she was as cheerful as ever, saying hi to me, then Ian spoke up and said "Hi, Mom." She said, “I'm talking to Nancy...what? I said, “Check the picture!” She kept saying, “What, what?” Then she saw the picture and started to scream and it was just so exciting! I was with her middle son in Santa Monica, in a surf shop, out of the thousands of people I could have been with and the places I could have been. This just made the trip complete. Funny how God works. He knew my thoughts about missing out on seeing my long lost friend and gave Yasmine and I the surprise of a lifetime instead. What a memorable way to end my summer vacation!

Mark and Stacie became vendors in 2009 at Defrance Antiques on a bookshelf and they were hooked. Within months they had two bookshelves and a couple of months later a large booth. Both having stressful day jobs it became like therapy being in the garage together and taking a discarded, forgotten, unloved piece of furniture and giving it new life.
Ben Saltzman is the Marketing Manager for Kitty Hawk Kites, based in the Outer Banks, North Carolina. Having started his marketing career in Philadelphia and New York City, he and his wife Patrice, along with their yellow lab Bert, made their collective dream a reality by relocating to the Outer Banks in 2018, in part so Patrice could grow her wedding cake business, Patty Bakes (pattybakesalot.com). Denise is often asked to be that second set of eyes for us – to read over articles and make sure the Is are dotted and the Ts are crossed. Denise reviews articles and restructures them as necessary to make sure the writer’s message shines through. Writers put their passion down on paper, but we run it by Denise first.

ecember 2, 2013 was a turning point for our family….it was the day we were told that our 2-year-old daughter, Katie, may have cancer. Our normally healthy, full-of-life child had been sick for a couple of weeks, and we were told that she had croup and was being treated specifically for that. We knew this wasn’t the case when on December 2nd, Katie woke up and then fainted into my arms. As we rushed her to the local ER, the thought of cancer was never in our minds….that was something that happened to other families. At that time, I was following several young local girls who were battling cancer, and it was heartbreaking. How their parents were able to get through this was beyond me… thank goodness our daughter just had a really bad cold. I can still see the look on the ER doctor’s face when he came into our room to tell us that her blood and platelet counts were dangerously low and she would need to have a transfusion immediately. Still, no talk of cancer. She may have a bacterial infection, one nurse tried to comfort me….Sacred Heart Children’s Hospital will take good care of her. As we rode in the ambulance from Crestview to Pensacola, I stared at Katie’s pale, limp body. I had never been so scared and helpless in my life. How did this happen? WHAT is going to happen? A couple of hours later, we were told they suspected Katie had Leukemia, and a bone marrow aspiration would need to be done to confirm. The very next day, we were told what no parent wants to hear: “Your child has cancer.” continued on page 10

KATIE continued from page 8 Fast forward five and a half years later, and Katie is healthy and full of life. She is a bright, energetic 8-year-old who just wants to sing, dance and be with her friends. We are thankful to be at this point, but it did not come without lots of bumps in the road. Katie’s treatment for her cancer (Acute Lymphoblastic Leukemia) was two and a half years, and for the first year the hospital was our second home. My child has been given so much chemotherapy (IV and oral) and steroids, I have lost track. She has had over 20 lumbar punctures where chemotherapy was injected into her spine, countless IV injections where some chemotherapies went as long as 24 hours straight, dozens upon dozens of blood, platelet, and IVIG transfusions, months of hospitals stays…along with a very scary time when her liver shut down due to one of the chemotherapies. She developed VOD (Venous Occlusive Disease), and we spent some of the scariest days of our lives in PICU. The treatment that was meant to save her life almost killed her. Did you know that pediatric cancer receives only 4% funding from the National Cancer Institute? There are 12 major types of pediatric cancer and over 100 sub-types. This includes all forms of Leukemia, bone cancer, Retinoblastoma, Rhabdomyosarcoma, Lymphoma (including both Hodgkin and non-Hodgkin), Wilms tumor, Neuroblastoma, Brain and spinal cord cancers, and DIPG - which currently has no cure whatsoever. Cancer is the #1 cause of death by disease for children. Most of these children will suffer long-term effects, develop secondary cancers, and have a shortened life span. Yet for all of these pediatric cancers, with an average age of diagnosis of 8 years, NCI funds only 4%, while adult cancers, with an average age of diagnosis of 66 years, receives more research funding. September is an important month not only for our family, but for many locally and worldwide. It is Childhood Cancer Awareness Month (GO GOLD!), and we honor our children by being a voice and advocate as much as possible. Our children just want to play and be normal, but instead are fighting for their lives. You will never meet a stronger human being than a child fighting a life-threatening disease, and I remember fondly holding Katie’s IV line as she and her fellow friend/ cancer patient, Carolyn, played Twister in the hospital hallway. Both girls were hooked up to IV poles, receiving meds and wearing face masks on their cute little bald heads. They didn’t have time to be sick, they didn’t feel sorry for themselves….they just wanted to have fun. There are so many great organizations that help our children, and one locally is the Pensacola Rally Foundation. Ninety-three cents out of every dollar goes towards research for childhood cancer and towards the children and families. Donating to amazing causes like this helps not only our children here in Northwest Florida, but throughout the country. Foundations like this also focus on the whole picture - what happens to the families and siblings during treatment as well. This September, please show your support for these amazing children by helping bring awareness or researching and donating to charities that help children specifically. We are incredibly thankful that we have Katie with us today and can help be a voice for those currently in treatment or have lost their fight.

or well over 50 years, there was an antique show in Fort Walton Beach, but sadly it ended in 2018. Mark and Stacie Hoard, owners of Defrance Antiques, have taken on the task of starting a new show, A Vintage Street Market. With all the larger shows being held in Mobile, Pensacola and Tallahassee, Fort Walton Beach will have its own once again. A Vintage Street Market will be held at the Northwest Florida Fairgrounds on October 11-13, 2019, and will be similar to the model used for Defrance Antiques. Mark and Stacie will incorporate not just antiques but retro, vintage, farmhouse, shabby chic, coins, jewelry, man items and local artist. Quality vendors will be driving in from all over the southeast, and a whole shipment of antique furniture, art, lighting and accessories are being shipped from France. Annie Omar, owner and founder of Maison Blanche Vintage Paint Company, will be at the show with two painting demonstrations on Saturday and two on Sunday. She will show different techniques and finishes that can be used to refinish furniture pieces, and will hold a Q&A session at the end of each demonstration. Ron Beeman of Fort Walton Beach will be at the show as well, with examples of his work restoring cast iron pieces. He will display pieces in each stage of the restoration process. The possibility of a cooking demonstration is being discussed! Dave Harding will be at the show with his hand-carved wooden spoons and cutting boards. He will be working on several pieces during the show and loves to talk to people about the art of carving. Angela Boudreaux of Antique Restoration Studio by Angela will be at the show all three days doing onsite glass and crystal repair. Angela will also be taking fine porcelain and ceramic pieces to be repaired at her studio later. Donnie Morgan will be performing at the show all three days. Donnie performs a wide variety of music from many genres. Welcome antique shows back to Fort Walton Beach by bringing your friends and family to A Vintage Street Market, October 11-13, 2019, at the Northwest Florida Fairgrounds. There will be an entry fee of $5.00 and food available from the fairgrounds each day. A portion of the proceeds from the show will be donated to Opportunity Place, Inc., a local housing facility helping families and women who are homeless become self-sufficient. all used to be my favorite. So many things to love! The colors, the days that my face doesn’t melt off of my head from humidity and my hair stays nice and calm. Ladies will get what I’m saying. But this year, it’s not my first love. It’s a season of another kind of change and I don’t like it! I will have two instead of three in my home, kids that is. I will have two instead of three to cook breakfast for five days a week…weekends are for sleep-ins and early lunches. And, really, I will have only one left to shop for school supplies and backpacks because the other is “finishing-up” a few classes before he heads off next fall as well. And then there will be one! Yes… I am referring to the old Rite of Passage thing that many moms are walking through now, others have already been through and the rest…well, your time is coming! Technically, this is my first to leave the nest and live away from home. It is my first for spending the entire summer hunting and gathering “dorm life” essentials which I do not remember needing so much of when I was in college! Whew! It’s a lot! But through it all…I have loved it…all the shopping and planning. Why? It still makes me feel like I have purpose in his life. I am still “Mom.” Only those who have been there understand the bittersweet feeling of this kind of “nesting.” It feels really weird, surreal. But it’s surreal in other ways also. For example, my son was out with friends recently for a last hoorah before they all head off to school. It was getting super late on this Friday night, like 10 pm (don’t judge, lol) and, as I was about to go to bed, I caught myself calling to see when he would be home. When he answered, he said without me even asking the question that he was headed home and my response was awkward as I stumbled over my words to reassure him that all was good and there was no hurry and that I was just wondering. As I thought about that brief conversation, it occurred to me what we were both feeling - a transition about to take place. In that moment, it was just instinct, second nature for me to call as I

always have and hover…to the point of forgetting that he is 18 years old and no longer a child. I am actually tearing up thinking about this interaction. He is an adult! A man-child. My son. What mother doesn’t relate to these feelings? Adult or not, I would still jump in front of a bullet for him… for any of my three children! I would still want to maul anything or anybody that hurt him. I would still…but now I have to learn to “be still.” So, the quandary of it all for moms is what do we do with this? How do we navigate these emotions and feelings of loss and yes, even control? It’s overwhelming! I know it’s a Rite of Passage but that doesn’t make it feel better. It is a most difficult transition knowing that I cannot hover and protect or know his every whereabout. Yes, his father and I are still paying the bills for him while in school, but he has a life to live…. a Rite to live…a Rite to pass through. So, what is a mom’s Rite in all of this Passage stuff? Because this side of the ceremony feels more like a funeral. I needed to sort through these emotions. I needed to literally write it out. Things just always make more sense to me that way. It allows me to see what my heart is feeling. So here are my notes to self…my vows or “Rites,” if you will, from the heart of a mother for our children, because I have “Rites” also:

COLD EXPOSURE RECOVERY

W
hile athletes have long known the importance of recovery as a part of their training, it’s recently become a hot topic in the fitness community. Recovery is important for the body to adequately rest, reset and recuperate after intense exercise. It gives the body time to address delayed muscle onset soreness (DOMS), repair and rebuild damaged tissue, and gain the rest time needed to replenish expended energy. Many trainers believe recovery is just as important as the workout. Many of the recovery methods are well-known and you probably do them without giving them a second thought: replace lost fluids, stretch, get a massage. But there are recovery methods you may not have considered, such as taking a nice, freezing cold ice bath. It may not sound relaxing, but cold exposure is an age-old recovery concept used to expedite the body’s natural healing process. Some take cold showers, some immerse into ice baths, and in colder regions some even roll around in the snow. Why? To quickly lower the surface temperature and force the blood to the core. The theory behind this method is that constricting and dilating blood vessels helps remove (or flush out) waste products in the tissues. Afterwards, as the body warms, fresh, re-oxygenated, nutrient- and enzymerich blood rushes back to the extremities. Toxins and lactic acid are flushed out and inflammation is reduced. The process also activates the lymphatic system and sets the metabolism into overdrive, increasing energy and burning calories. In a nutshell, short exposure to extremely low temperatures allows the body to manage inflammation, recover faster and enhance both physical and mental states of well-being. Enter cryotherapy. What’s cool about cryo chamber therapy (pun intended) is it allows for a whole-body experience in a very short period of time! Cyro chambers are simple walk-in chambers that allow your body to be exposed to cold air. After all, rolling around in the snow isn’t exactly an option here On the Coast.

Family Meals Matter F

or busy families, finding time to eat together isn’t always easy, but coming together around the dinner table regularly isn’t just about keeping hungry bellies full. Family meals nourish the spirit, brain and overall health. Children who grow up sharing family meals are also more likely to exhibit prosocial behavior as adults, such as sharing, fairness and respect. Research has also shown that with each additional family meal shared during the week, adolescents are less likely to show symptoms of violence, depression and suicide; less likely to use or abuse drugs or run away; and less likely to engage in risky behavior or delinquent acts. In addition, adults and children who eat at home more regularly are less likely to suffer from obesity, and increased family meals are associated with greater intake of fruits and vegetables. If you struggle to make family meal time happen, try these tips from the experts at the Food Marketing Institute Foundation, creators of the National Family Meals Movement, which aims to help families reap the benefits of enjoying more meals together at home. Or you can find inspiration to make one extra family meal happen each week with recipes like Barbecue St. Louis Ribs, Meatballs or Turkey Pot Pie from the family-focused cookbook “Family Table by Robert Irvine.” Plan ahead. Prepare staples or extras of your favorite recipes that you can refrigerate or freeze to use when you’re rushed for time. Mix and match. Challenge yourself to see how many different ways you can use a grocery item until it’s gone. Embrace convenience. Grocery stores have many time-saving solutions, and frozen and canned produce can be quick additions to many recipes. Incorporate the kids. Involve your children in shopping, meal planning and meal preparation whenever possible. Make nutritional balance easy. Plan your family’s plates by making sure you are getting all the food groups over the course of the day. “By quieting the noise and being truly present with the people around us, simple tasks you might normally take for granted – like putting a good meal on the table – take on a deeper meaning,” Irvine writes in his book. “The meal ceases to be a time for physical nourishment and becomes something that feeds your family’s soul. Recipe courtesy of “Family Table by Robert Irvine” on behalf of the Food Marketing Institute Foundation Serves: 6 1 Spanish white onion 3 cloves garlic, minced 3 cups diced bread (such as baguette) water 2 large eggs 1/2 cup ricotta cheese 1/2 cup Parmesan cheese 1 pound ground pork 1 pound ground veal 2 tablespoons extra-virgin olive oil 1 tablespoon fresh Italian parsley, chopped
1 tablespoon fresh oregano, chopped 2 tablespoons grapeseed oil 3 cups basic tomato sauce In small saucepan over medium heat, sweat onion and garlic. In large bowl, soak bread in water 1-2 minutes. Strain excess liquid. In separate large bowl, add eggs, ricotta cheese, Parmesan cheese and onion-garlic mixture. Combine then add ground meat, soaked bread, extra-virgin olive oil, parsley and oregano. Mix thoroughly. Divide mixture evenly to form 10-12 meatballs and use hands to roll into shape. In large saute pan over high heat, brown meatballs in grapeseed oil on all sides. Place browned meatballs in separate saucepot with basic tomato sauce. I
’m a sucker for a good party. And by “good party” I mean any event, big or small, where cake, cupcakes, ice cream cake, or cookie cake is served. When I go to a kid birthday party, all the other moms pass up the sweets in favor of intermittent fasting. Meanwhile, I’m subtly angling for a corner piece with extra frosting. My daughter, Vivi, is a seven-year-old social butterfly with the worst case of FOMO (fear of missing out) you’ve ever seen. That means we go to A LOT of birthday parties. And since she is an only child and an only grandchild, we’ve been known to throw some epic parties ourselves. My vast experience as a kid birthday party goer and party thrower has equipped me with knowledge that could benefit others. Here are a few party tips I hope you’ll find useful, whether you’re a goer or a thrower.
CAKE
As you’ve probably already guessed, cake is a priority for me. If you are hosting a party, you better have enough cake for everyone in attendance. That means parents too. It’s our reward for spending two hours among a noisy, sticky mass of children. I once attended a kid party where they had exactly the number of cupcakes as children at the party. Say what?! I managed to make it through the party without openly weeping in front of the host mom, but what would’ve happened if one of the kids dropped their cupcake? I guess that’s one of those painful life lessons we all have to learn at some point. If you are a guest, we all know parents have to wait until all the kids are served to get our piece. It’s the right thing to do. Here’s the important part: you better get your own piece. Adults are always trying to watch what we eat and make healthy choices. You think you can just have a bite or two of your kid’s piece. You’re wrong. In the history of the world, no child has ever left anything other than a soggy cupcake with all the icing licked off for their mother.
FOOD
Be sure your food offerings are appropriate for the time of day you throw the party. Breakfast and brunch parties are super fun and yummy. Lunch and dinner parties provide plenty of dining options. Mid-afternoon is the easiest option if you are looking to keep food costs down. If the food you are serving doesn’t match the time of day (i.e. cake only at lunch time or a full buffet at 3 p.m.), let your guests know before the party so they can plan accordingly. Enlist help if you need it. The food at Vivi’s parties is a family affair with my dad smoking a couple of huge pork butts, me washing and cutting piles of fruits and vegetables, and my mom spending a week rounding up everything else we need.
THEME
If you have the time and money to go all out on a party theme, go for it. Otherwise, kids really won’t notice if you keep it simple. The cake can incorporate the theme or just color coordinate. Add in some character plates or napkins and you’re done. Fretting over weaving the theme into every tiny detail makes for one crazy and stressed-out mama. Dressing the birthday girl or boy up is the easiest way to make a big impact on the theme and ensure you get cute, memorable pictures. Having a grandma who is a sewing expert definitely helps! Vivi was transformed into a mermaid for her fourth birthday and became Moana when she turned five thanks to Mammi. Amazon and Party City have plenty of great options if you don’t continued on page 22

The best party idea I have come across in years is the fiver party concept. In lieu of toys, guests put a $5 bill in a card. It’s up to parents to set the rules for how the birthday kid can spend it. Some parents put the money toward one big birthday gift. Others require their kids to save some and donate some. We did this for Vivi’s most recent birthday and allowed her to take part of it on the vacation we were taking a few weeks after her party. That way we didn’t have to tell her “no” every time she wanted something from a museum or amusement park gift shop, and it helped her learn about the value of money and making spending decisions. It can be fun, even for the parents, for the child to receive tons of toys for their birthday. But the older the kids get, you just want less stuff. Now, if anyone asks me what they should buy Vivi for her birthday (assuming they aren’t participating in the fiver), I ask for something consumable – gift cards or crafty kits.
PINATAS
Did you know that more children are killed by pinata sticks each year than car accidents and drownings combined? OK, so that’s not technically true, but it sure feels like it every time you see little kids wildly swinging a stick as they make a frenzied attempt to get at the candy. I beg of you, if you must have a pinata at your party, get the kids in a line that begins very far back from where the swinging action will take place. Another option is a pull-string pinata. It doesn’t pack the same punch as a traditional pinata, but there will be candy nonetheless. Another pro tip: limit how much candy the big kids can get. Redistribute the wealth if you must. I’ve seen so many tears when big kids have big handfuls of candy and little kids have only a piece or two. There should be no crying at birthday parties. You should all be ready to throw a rager now. I’ll be looking for my invitation in the mail. And be sure to save me a piece of cake that no one has licked.

Annual Emerald Coast Duck Regatta Join us for a day of family fun at the 9th Annual Emerald Coast Duck Regatta on Saturday, October 19, 2019, at the Village of Baytowne Wharf and support Sacred Heart Rehab Center. Beginning at 10:00 a.m. we will kick off some fun kid activities including a scavenger hunt and more. At 1:00 p.m. we will race over 3,000 rubber ducks across the Baytowne Wharf Lagoon. Here's how it works! M ake a donation of $10 or more to the Sacred Heart Hospital on the Emerald Coast Guild to adopt a ducks. You will receive an adoption certificate that has a registration number corresponding to your duck number(s). Winners will be determined based on the first qualifying ducks to finish the race and be gathered in the duck trap. Duck adopters need not be present to win. Winners not present at the event will be notified by mail or phone by Oct. 21, 2019. An UNLIMITED number of ducks will be available for "adoption" up until 12:30 p.m. the day of the event. There's Never Been a Better Time To Fly a Kite Than Now! I haven't always been a "wind enthusiast." In fact, I only began flying kites a few years ago. I was visiting the Outer Banks with family on vacation, and my soon-to-be-mother-in-law mentioned that she was heading over to Kitty Hawk Kites to pick up a t-shirt and some toys for the kids in our group. I had seen stunt kites in action only a few times before, but considering the windy conditions of the OBX in late summer, picking up a two-line kite seemed like an excellent idea for an activity I could enjoy the whole week. I settled on a Prism Nexus--a red, orange, and yellow stunner, which is ideally suited for beginner to intermediate flying and is optimallysized for travel. The perfect kite for me! I headed straight to the beach and was flying in no time. I can remember the feeling when the kite first caught a strong gust of wind that sent it streaming skyward. It was exciting to discover how to maneuver the kite in the air, first from side-to-side, then dipping it toward the ground and turning it back toward the sky. The following week, my fiancée and I traveled to Western Ireland for a friend's wedding with our new stunt kite in tow. The coastal conditions were similar to the Outer Banks, and we had a blast flying our kite on a different continent! We have since married and relocated to the Outer Banks where I now work for Kitty Hawk Kites. The company was founded in 1974 by John Harris, first as a hang-gliding school and shop that sold and repaired hang gliders. Over the past 45 years, the company has grown to include more than 25 retail locations along the east coast offering kites, toys, games, apparel, footwear, and more. The mission from the very beginning was simple and clear: "To teach the world to fly." That mission remains our driving force today,

The Fly Into Fall event in Fort Walton Beach is one of the most exciting festivals we hold each year. There are giant inflatable kites coloring the sky including a giant panda, cow, octopus, cat, dog and two giant fish, free stunt kite lessons and demonstrations, free kite-building lessons for the kids, and more, making this is a special event that is fun for the entire family. There is always excitement inside our stores in Fort Walton Beach and Destin. Leonardo Da Vinci said, “For once you have tasted flight you will walk the earth with your eyes turned skywards, for there you have been and there you will long to return.” I can say from personal experience that I will never forget the first time I set a kite into the wind, and it has deeply impacted the course of my life. If flying a kite is something you have always wanted to do, or even if you haven’t considered it until just now…there has never been a better time to take to the sky!

In medium saucepot, melt butter; add onion and sweat 4 minutes. Add celery and carrots; cook 4-5 minutes. Add turkey and cook 4 minutes. Add tarragon, parsley and all-purpose flour; cook 4 minutes. Add stock and bring to simmer. Add potatoes and simmer until fork tender. Pour filling into pie pan and top with pastry. Brush pastry with egg. Bake pie 20-30 minutes, or until crust is golden brown.

4 full racks St. Louis-style ribs To make Barbecue Sauce: In bowl, mix ketchup, vinegar, Dijon mustard, brown sugar, cayenne pepper, salt and black pepper. Transfer to thickbottomed saucepot over medium-low heat. Allow sauce to warm and mix over heat 10-15 minutes, stirring continuously. Remove and cool. To make Spice Rub: In bowl, mix salt, ground mustard, paprika, black pepper, cayenne pepper, white pepper, seafood seasoning and cumin. Keep dry and covered until ready to use. Remove silver skin from bottom side of ribs. Evenly rub each rack with 1/4 cup Spice Rub on top and bottom. Wrap each in plastic wrap and keep overnight in refrigerator or cooler. Heat smoker with pecan or other fruit wood to 165 F and maintain temperature. Remove plastic and place ribs in smoker 4 hours then check doneness. Ribs should be cooked but not falling off bone. Remove ribs from smoker and glaze each rack with 1/2 cup Barbecue Sauce. Return to smoker 30-40 minutes. Remove and glaze again with 1/2 cup sauce for each rack and cook 20 minutes. Remove ribs from smoker. Allow to rest 5 minutes then cut into single or double bone sections and serve.
