DIRECTIONS • Add corn and beans to a large pot with enough water to cover. Season with salt and pepper and bring to a boil over medium heat. •R educe heat to low and simmer until cooked through, 8-10 minutes. • I n saucepan, fry tomatoes, potatoes and onion in oil. Then mix with corn and beans and simmer for 5 minutes before serving. Makes 4-5 servings.
